Can you believe it? The first month of 2016 is already history and many of us have started to compare our achievements thus far, with the goals we set ourselves at the start of the New Year. As I welcome you to this edition of Chat Bout, pause with me a while as I say, “Thank you Father for one more year. Thank you for your many blessings, thank you for the successes of our company. Grant us wisdom, understanding, strength of purpose and determination to accomplish greater things this year, to the glory and honour of your name. Amen.” 2016 will be the year we achieve greater milestones for the CB Group. We laid the foundations in 2015 with; record chicken sales, increased square footage for our poultry operation, expansion of our egg farm, export of baby chicks and experimenting with West Indian Sea Island Cotton and Scotch Bonnet

As you delve deeper into the pages, you will read about their awesome work to make the pork side of our business a success. For us to accomplish our goals we must ensure we maintain good health. At this time, ZikV is very much
in the news and the Head of the World Health Organization tells us that the virus is “spreading explosively”. The Zika virus is now in more than 20 countries, including Haiti, one of our closest neighbours. I urge everyone to take all possible precautions to prevent mosquito breeding in and around our surroundings, at home and at work. The question at this time is not whether it will reach Jamaica, but when. Be prepared, be aware, and protect yourselves and your families. God bless you,

Meet Our
Front Runner Champion Wayne DaCosta’s name is synonymous with horse racing in Jamaica, and years of hard work and determination have rewarded him with a real sense of accomplishment.
Most recently, Wayne was the trainer of Seeking My Dreams, the winner of the first ever Diamond Mile and the largest cash prize horse race in the English-Speaking Caribbean.
From riding horses as a teen on the King’s House property, to entering the horse racing industry in 1976 and becoming a champion known today across the Caribbean; He has led by example through success.
DaCosta encourages youth to get involved with raising and racing horses. He has partnered with Front Runner’s winning horse feed’s, produced at Newport Mills, training top class champions that inspire passion among his peers in order to cultivate the industry.

Here’s what you’ll need to make this all-time Jamaican favourite more Jamaican by using our very own locally produced Jerk Sausages Ingredients • 1 ½ cup counter flour • 6-8 ounces Caribbean Passions Jerk Sausage, diced • 1 tablespoon baking powder • 1 medium onion, chopped • 1 stalk escallion, chopped • 1 medium tomato, diced • 1 cup(s) water • 1 teaspoon salt • ½ teaspoon white pepper • 1 teaspoon scotch bonnet pepper finely chopped • ½ cup Vegetable Oil • ½ teaspoon all purpose
Preparation: 1. In a large bowl place counter flour, baking powder, all purpose, jerked sausage, chopped onion, escallion and diced tomatoes and mix well. 2. Add water gradually to make a smooth batter. Batter should be thick and of a dropping consistency. Season with salt, white pepper and scotch bonnet pepper. 3. In a large skillet heat Vegetable Oil, drop tablespoon full of batter into hot oil and fry until brown on one side, turn and continue frying until done. 4. Drain on absorbent paper towel. Serve hot.

1. How long have you been a member of the CB Group? This year makes 12 years. I started October 24, 2004. 2. So far, what’s the best part about working here? The company is on a path of continuous improvement and has had tremendous growth over the years. I have been blessed to be afforded the opportunity to grow with the company and to be contributing to its success. 3. Describe what a typical work day is like for you. Some days are pretty unpredictable as it does not necessarily go the way I plan. But on average, I provide day-to-day supervision and organization of the work of the business units from our Nucleus farm at Bodles, St. Catherine producing F1’s and Pooled Duroc semen for our Integrated pork operations and commercial customers. I also oversee scheduling and coordinating the procurement of market hogs from the open market and Integrated Finishing farms into the processing plant. I monitor and review the performance of the hogs at all stages of production at the different locations to ensure the biological and financial performance targets for the company and customers are met. Providing new technical information and initiatives to our staff and contracted pork producers is a priority for me. I do methodological work with key personnel in the operating and support units and develop with the other members of the team, plans aimed at creating value with customers through Newport Genetics products, technology and services. 4. What gets you through a hectic work day? We always have in at the front of our minds the desire to maximize the genetic potential of our pigs, and the desire to do that really keeps you going. I am motivated by an excellent TEAM of committed and dedicated people that works very well every day to get the job done, whether at Boldes, Hill Run or at the integrated operations. My Divisional Manager, Mr. Barrett is very encouraging and supportive as well. My wife Andrea and my two children are a tower of strength – much of what I accomplish is for them! 5. Which product is your favourite at CB? Caribbean Passion Picnic Ham – you can find it in my freezer all year round! 6. If you could switch departments for a day, where would you go and why? I’m open-minded and believe I can add value to any department. But for a day, I would love to experience feed milling as it is a major input in pork production. I would also love to experience our poultry operations to widen my knowledge across the livestock sector. 7. Any embarrassing moments at work? No, I wouldn’t consider them as embarrassing. I believe in every difficulty is an opportunity to learn and grow and it’s the challenging moments of life that help us to grow. 8. Any favourite chicken, pork or egg dishes? Pork! The Arnold Road family recently said farewell to a beloved team member, Dwight Howell. There was good food, big smiles, and more than a few teary eyes at Dwight’s send off. Mr Howell worked with CB for over 20 years, joining us in November 1995, as Assistant Storekeeper, before moving to Trainee Production Foreman and eventually Production Supervisor. He was a pleasure to work with and did whatever it took to execute his duties. The entire CBG Family is sad to see him go, but none will miss Dwight more than his close team at Arnold Road. We always hear that pork is the other white meat, and that the Pork Division at CBG is just the ‘other guys’, but don’t watch that! The time has come- ‘you cyaan chat to the Pork team, they’re bringing their A-game!’ Big ups are in order to the Pork Division! our community — pork team success
When CBG went into pork, we saw the need to create a sustainable pork industry, which would increase the pie for all its players. But this was no easy feat. Over the years, we’ve faced challenges with an inconsistent supply and poor genetics, which was simply not enough to generate sufficient revenue to make a profit. We were also heavily reliant on openmarket pigs, so we had no control over the quality and as a result did not always get the best stock.
You can only imagine the pressure then, to position Copperwood Pork as the premium Jamaican pork, considering all these factors. Fast forward a few years and we have seen significant improvements; a testament that hard work and dedication truly pay off. Our team at Bodles worked passionately to help achieve our recent successes. With support from our nutritionists and vets they wholeheartedly took on the 17
tasks of improving the performances of the animals under their care. They designed and implemented nutritional packages for the different production stages, increased staff complement - “a man to a barn”, revisited and improved sanitation practices with regularly scheduled maintenance and ensured more responsible medication management. With the development and expansion of genetics, we’ve achieved historical accomplishments in live productions as well as F1 and semen sales. The solid work ethics and determination that our Lucea processing team has shown must also be highlighted. Always ready to adapt to changes, new technologies and methodologies, they give new meaning to going ‘above and beyond’. They have embraced increased volumes, new operating structures and methods, and have learnt to master new machines, all in a relatively short time span. During the 14 weeks of our hectic ham season, the team remained motivated and performed commendably. Despite the many issues faced, including major construction, installation of a new smoke house, as well as the PriceSmart Shelf-Ready program being rolled out, the team delivered.

Chicken Carbonara with Basil and Vegetables Ingredients: • 12 oz cooked and drained spaghetti • 8 thick slices of Caribbean • • • • • • • • • •
Passion bacon, diced 8ounces of CB Chicken breast, diced 4 Chippenham Eggs 4oz Parmesan cheese 4 oz heavy cream 2 onions chopped 1 medium red pepper, diced 1 medium yellow pepper, diced Basil leaves 1 small red onion, diced 2 minced cloves of garlic
Method: 1. SIn a large skillet, cook the bacon and remove to paper towel-lined plate 2. Add the onion and chicken and cook fully in the bacon drippings. 3. Add all the vegatbles and sauté seasoning with black pepper and salt if necessary. 4. Add the spaghetti and bacon nd mix well. Then add egg and cheese and stir until cheese melts , finish with cream. YIELDS: 8 portions.

Tiger’s Milk Ingredients: • 1 ½ measures of your favourite Brandy • 150 ml fresh Milk • 1 tsp Sugar Syrup* • Some Cinnamon • 2 measures of your favourite Red Rum
Method: 1. Blend the rum, brandy, sugar syrup and milk with crushed ice until all the ingredients are properly combined. 2. Pour directly into a chilled cocktail glass. 3. Add whipped cream (option) 4. Sprinkle over the top some ground cinnamon 5. Garnish with a cinnamon stick.
*Note: Sugar Syrup is made by stirring granulated sugar into hot water in a saucepan until the sugar is dissolved and then cooling the solution.

1. Curb that sweet tooth Got a late-night sugar craving that just won't quit? Think 'fruit first”. Resist that chocolate cake whisper, and instead enjoy a sliced apple or banana with a tablespoon of peanut butter, or some plain yoghurt.
2. Find a ‘fitness friend’ A workout buddy is great for staying motivated; someone who will inspire— not discourage. So make a list of all your exercise-loving friends: Can they meet to exercise on a regular basis? Are they supportive of your goals? And last, will your bud be able to keep up with you or even push your limits? If yes to all three- what are you waiting on? Make that phone call!
3. Buy the right sneaker What you wear on your feet can make you faster, stronger, and more coordinated. Everyone has different fitness goals, but it’s so important to choose the right sneaker. There are

6. Police your portions To lose weight, you need to burn more calories than you consume, which unavoidably means one thing: portion control. Try drinking a glass of water before each meal, and cut the amount of rice and dumplings, and instead top up with more steamed veggies. Remember, everything in moderation.
7. Turn your cheat day around Feeling guilty about that giant ice cream sundae you enjoyed on the weekend? Don't beat yourself up! It takes a lot of calories—3,500—to gain a pound of body fat. So really, that one off day doesn't usually result in any significant weight gain. It's about what you the next day and the day after that’s really important do. So make up for it, preferably by boosting exercise rather than eating too little. Starvation is not the healthy answer!
