EASY IDEAS FOR HOLIDAY WREATHS Fruitful Wreath Instead of an evergreen wreath, create something festive and edible. Fruit and vegetables in vibrant colors can be used to fashion a wreath. Use picks or wire to attach oranges, lemons, limes, clementines, and any other produce desired to a foam wreath. Use leaves to fill in sparse areas and a thick ribbon to hang the wreath. Holly Vine Wreath Purchase a plain grapevine wreath and decorate it with sprigs of holly leaves and stems with berries. Simple and festive, this wreath should take only a few minutes to make and then hang.

reaths are synonymous with the holiday season, and they can range from intricate to simple to flashy to rustic. Creating festive wreaths does not necessarily require a lot of skill, and wreaths can be fashioned from a variety of different materials. The first step to crafting wreaths is to gather the foundation pieces. This usually involves a sturdy material that will serve as the wreath round. It can be vine, foam, branches, or even wire. You’ll also need decorative items that fit the theme of your wreath. These may be berries, ornaments, ribbons, bows, and other trinkets that will be attached to the wreath. Florist wire and tape can be used to attach the ornaments to the wreath. “Say Cheese” Wreath Purchase a premade evergreen wreath or wrap boughs of pine around a wreath frame to make your own. Glue or tie on small wooden frames with photos of the family to the wreath. Fill in the barren spots with small bows and ornaments.
Metallic Wreath Add a glamorous touch to an evergreen wreath with faux fruit and pine cones that you paint with glimmering metallic colors. Intersperse items in gold, copper and silver for an eye-catching piece that can adorn any spot in your home. Add a few twinkling lights to reflect off of the metallic elements to add even more appeal. Bells or Glass Ornament Wreath Use flexible wire to string a wreath of metal bells or glass ornaments together in a ring shape. Bells not only look nice but also lend a gentle twinkling sound anytime the door is opened. Floral Wreath Make a fresh flower wreath from a florist’s wreath and fresh blooms. Soak the foam wreath in water according to the packaged directions. Trim flower stems (carnations are durable) and insert the stems into the wreath. Attach a bow to the bottom of the wreath and then hang. This is one wreath that is best displayed the day of the festivities because it has a short shelf life. Times-News

Photo ornaments Fun photo ornaments showcase how a family has changed and grown over the years. Experiment with different ways to create these ornaments. You can glue a photo to a ceramic ornament and cover it with decoupage glaze to set it permanently. Try purchasing clear, glass ornaments, then remove the top of the ornament, which is usually spring-loaded, before slipping a photo inside and replacing the top. You also can laminate a photo, punch a hole in the top and affix a ribbon.

oinsettias can be fickle plants and ones that gardening novices may find challenging to maintain. The plants are comprised of green foliage, colorful (often red) flower bracts, and the actual flowers of the plants, which are the red or green buttonlike parts nestled in the center of the bracts. Because they are a tropical plant, poinsettias can be damaged by exposure to low temperatures, even if they are only exposed for short periods of time. They should be wrapped and protected against the elements when brought home. For maximum plant life, poinsettias need to be placed near a warm, sunny window, or another area that has ample amounts of light. They thrive in temperatures between 60 and 75 F and should be kept away from warm or cold drafts. Water the plant whenever the surface feels dry to the touch. Water until it drains out the bottom, but don’t let the plant sit in water. Over- or under-watering can cause leaves to drop prematurely and wilt. If your home lacks in humidity, you may need to water the
plant more frequently. Poinsettias do not need to be fertilized while the plant is in bloom. Poinsettias are short-day plants, which means they flower about 10 weeks after the daylight shortens to about 12 hours or less. Therefore, to have the plant in full flower by Christmas, it will have to be kept in complete darkness between 5 p.m. and 8 a.m. from the first part of October until Thanksgiving. Many people find the affordability of poinsettias makes it more convenient to buy new ones each year than try to foster regrowth. Contrary to popular belief, poinsettias are not poisonous to humans or animals, but they should not be ingested due to the potential for allergic reactions. Poinsettias can help remove pollutants from indoor air, which is advantageous during the winter months when doors and windows are typically kept closed. Select plants that have dark green foliage and no low or damaged leaves. This ensures the best success for keeping poinsettias looking healthy and vibrant throughout the holiday season.
SAVE TIME ON GIFT WRAPPING
H
oliday shopping may be done, but that enormous pile of presents still needs to be wrapped. People have varying degrees of ability with regard to wrapping gifts. Some excel at those creased corners and perfect bows, while others are less adept at wrapping. The task of wrapping gifts may not be something to look forward to, but wrapping gifts is an essential element of the holiday season. Fortunately, there are a few tricks of the trade wrappers can lean on to make the process of wrapping gifts go as quickly and as smoothly as
possible. Wooden spoons or popsicle sticks can make clever gift tags. Poke a hole in the end and tie onto your gift. Use a piece of fabric to wrap a present if you’re not too skilled with traditional paper. Fabric can be reused and is more durable, and you won’t run the risk of tearing an edge or poking a hole through it. This can be especially useful for oddly shaped gifts. Newsprint tied with natural cord and some pine boughs is an inexpensive, classiclooking gift wrap. Butcher paper or brown
mailing paper can be used in a pinch. Stamp images on the paper to customize the gift wrap and use ribbons and bows to further dress things up. Always work on a hard, flat surface, as working on the floor or a soft surface makes it more difficult to control wrapping paper and you’re more likely to tear the paper. Reuse old boxes to create a greeting card. Use a piece of ribbon and a bow and your newly created card as a thank-you or gift tag for future gifts. This is a great way to recycle during a season when excess is common.

ines, firs and spruces all are conifers, and all will look great in your home. Still, every decorator should know the provenance of their Christmas tree. Here is how to tell the difference (hint: Go straight to the needle).
PINES The needles on pine trees are attached to the branches in clusters of two, three or five needles per cluster. Red pines have two-needle clusters; yellow pines have three-needle clusters; white pines have fiveneedle clusters. (The needles on firs and spruces are attached to the branches individually.) Cones on pine trees have scales that are woody and rigid.
SPRUCE Spruce trees’ needles are sharply pointed, square, and easily can be rolled between your fingers. Spruce needles also are attached to small, woody, stalk-like projections that remain on the branch after the needles are shed. Compared to pine cones, spruce cones have thinner, more flexible scales.
FIRS Fir needles are soft, flat and cannot easily be rolled between your fingers. Firs also do not have the small projections that spruce trees do and, thus, have smoother bark. Buy a Fresh Tree Christmas tree lots may begin to crop up before Thanksgiving, meaning trees will have been cut and shipped weeks before. The tree you put up in your home may be at least two months old by Christmas Day. Also, trees that are open to full sunlight at tree lots can dry out prematurely. When shopping, look for trees that seem freshly cut and have good needle retention. Grab a
branch and see if the needles remain intact. Give the tree trunk a bump on the ground and assess how many needles drop to the ground. Look at the color of the tree and determine if it is wilting. These may be signs that the tree is old and on its last legs. Wrap and Transport Ask the tree seller to freshly cut the bottom of the tree and wrap the entire tree in twine so it will
be easier to move. Place the tree on the roof of your car with the trunk facing the front of the car. This way the wind will not fan out the branches and loosen up needles.

PERFECT HOLIDAY EGGNOG INGREDIENTS
• 8 large eggs, preferably organic • 2 1/4 cups superfine sugar • 8 ounces brandy • 8 ounces rum • 4 ounces bourbon • 1 quart milk • Freshly grated or ground nutmeg (for garnish) Makes 8 servings
PREPARATION
Separate the egg yolks from the egg whites, setting the whites aside for a moment. In a large mixing bowl, beat the yolks with a hand mixer until completely combined. Add the sugar and beat until it reaches a creamy consistency. Add the brandy, rum, and bourbon, and then the milk, beating well. In a medium-size mixing bowl, beat the egg whites with a hand mixer until soft epaks form (be sure before beating the whites that you have cleaned and thoroughly dried the beaters). Fold the egg whites into the alcohol mixture and refridgerate untill well chilled (at least 3 hours). Stir to combine as needed prior to serving.

PREPARATION Cut the zucchini in half and steam them till they’re quite tender, about 15 minutes. Scrape the seed part off, and add it to a bowl. Don’t scrape too much – the zucchini should look like little boats for the filling. Lay them on a baking tray lined with a piece of oiled baking paper. Lightly oil each zucchini half with the olive oil and sprinkle on some salt and pepper. To make the filling, add the ricotta to the bowl with the inside of the zucchini and mash well with a fork. Add all the other ingredients, leaving the egg last, so you can taste the mixture and add more spices to your liking before adding the egg. Preheat the oven to 350 degrees F. Stuff each zucchini half with the mixture. Sprinkle on the bread crumbs and the pistachios, and some extra cheese if you like, and top with another drizzle of extra virgin olive oil. Bake the zucchini for 10 minutes, or until they start to get golden brown on top. You can finish them off under the broiler for a minute, for some extra crispiness. They are best enjoyed fresh out of the oven, but they also make a

PARSLEY FLATBREAD INGREDIENTS
• 2 cups bread flour • 3/4 tsp salt • 2 tsp quick-rise yeast • 2 tbsp minced Italian (flatleaf) parsley
• 1 to 1 1/4 cup hot water • 2 tsp honey • 2 tbsp olive oil, divided • 2 tbsp cornmeal • Coarse sea salt Makes 8 flatbreads
PREPARATION
Stir together flour, salt, yeast and parsley in large bowl. Stir together 1 cup hot water and honey in small bowl. Pour into flour mixture. Add 1 tbsp olive oil. Stir well. If dough is dry, add additional water by the tablespoon to form sticky dough. Cover bowl with cloth and set aside in warm place for 1 hour. Line baking sheet with parchment paper. Spread on cornmeal. Do not punch down dough. Drop by onto parchment paper to form eight flatbreads at least 1 inch apart. Brush flatbreads with remaining olive oil and gently pat to 4-inch ovals, about 1/3-inch thick. Very lightly sprinkle with coarse salt. Bake at 400 degree F for 18 to 22 minutes, or until flatbreads are lightly browned on tops and bottoms. Remove to wire rack to cool. Note: Quick-rise yeast doesn’t need to be proofed in warm or hot water before using.

SWEET POTATO HUMMUS INGREDIENTS
• 1 8 oz. orange-fleshed sweet potato, scrubbed • 2 medium garlic cloves, unpeeled • 1 15 oz. can chickpeas, rinsed and drained • 3 tbsp tahini • 3 tbsp freshly squeezed lemon juice • 1 tbsp water • 3/4 tsp smoked paprika, plus more for garnish
• 3/8 tsp ground cumin • Fine sea salt • 1/4 cup olive oil, plus more for drizzling Makes about 2 1/2 cups

PREPARATION Preheat the oven to 375 degrees F. Line a small baking sheet with aluminum foil. Pierce the sweet potato a few times with the tip of a paring knife and set it on the prepared baking sheet. Drop the garlic cloves onto the baking sheet. Roast for 15 minutes, then remove the garlic cloves and set aside. Continue to roast the sweet potato until a skewer inserted into the thickest part meets no resistance, about 1 hour. Let cool completely on the baking sheet. Peel the garlic cloves and the sweet potato. Cut the sweet potato into large chunks. In a food processor, combine the chickpeas, sweet potato chunks, roasted garlic, tahini, lemon juice, water, smoked paprika, cumin, and 1 tsp salt. Pulse about 10 times, until the chickpeas are coarsely chopped. Scrape down the bowl and process to a thick puree, about 1 minute. Scrape down the bowl once again. With the machine running, stream in the olive oil and continue to process until the mixture is as smooth as it can be, about 1 minute, scraping down the bowl once or twice. Taste and adjust the seasoning with more salt, if needed.

Brine turkey 12 to 24 hours ahead of time for optimal flavor. According to Ryan, brining – soaking your bird in a salt-water solution – tenderizes the meat, draws impurities out of your bird and makes a huge difference in taste. He recommends a quarter of a cup of kosher salt to a gallon of water. Use enough water to cover your bird.

Want to serve the classic dishes but avoid preparing them in a clichéd way? “Even though a holiday like Thanksgiving is purely American, your plate needn’t be,” says Molly Schemper, co-owner of Chicago-based FIG Catering. She recommends adding intrigue to a traditional meal by using ingredients inspired by ethnic cuisines. For example, serve the turkey with a Mexican mole sauce made with chiles, tomatillos, dried fruit, nuts and chocolate. Or, go all out with an Indian-spiced turkey that’s been brined in yogurt and roasted with turmeric, coriander seeds and fenugreek.
THE GOOD KIND OF SMOKE
Thinking about smoking your bird? Steve Raichlen, author of “The Barbecue Bible” and “How to Grill” (Workman Publishing) prefers natural lump charcoal, not briquettes, which can have a chemical taste if not properly lit. Soak wood chips before placing them on the charcoal once the ash is well formed. Raichlen likes to use poultry smoking chips. Other good options include fruitwood, such as apple, peach or apricot, which gives the turkey a mild smoky flavor. “Most of the barbecue flavor comes not from the wood, not from the charcoal, but the fact that fat drips from the bird onto the hot coals or wood, which interacts with the smoke and rises to coat the bird,” adds Dave DeWitt, cookbook author and editor of Fiery-Foods.com.
THAW (AND THAW EARLY!)
If you’ve purchased a frozen turkey, thaw it in the refrigerator. Allow at least one day of thawing for every 4 pounds of turkey. If it’s Thanksgiving morning and you have a frozen turkey on your hands, place the turkey, breast side down, in a container of
cold water (enough to cover turkey completely). Change the water every 30 minutes to keep the turkey nice and chilly. Allow 30 minutes for every pound of turkey.
THE SIMPLE ROASTING PLAN
Place your turkey, breast side up, on a flat rack in an open roasting pan about 2 inches deep. Brush the skin with butter or oil to prevent skin from drying. You also can place pats of butter under the breast’s skin. Further basting is optional. Note that the regularly opening the oven door to baste your turkey can lower the temperature and possibly lengthen roasting time. When the skin is light golden, about twothirds done, cover the turkey breast loosely with foil to prevent overcooking. You also can cover the tips of the drumsticks with foil to prevent drying out. Leave a space so that you can easily see the pop-up timer. Start checking your bird 30 minutes before you expect it to be done. The turkey is fully cooked when the pop-up timer’s buttonhead pops up. Let the turkey cool for 15 to 25 minutes before carving.

ORANGE AND MAPLE ROASTED TURKEY
For the brine: • 1/2 cup sugar • 1/4 cup salt • 10 black peppercorns • 1 medium orange, peeled and juiced • 1 gallon cold water • 12-pound whole turkey (fresh or thawed) For turkey cavity: • 2 bay leaves • 2 sprigs fresh rosemary • 4 sprigs fresh thyme • 2 celery ribs, peeled and cut into 2-inch pieces • 2 medium carrots, peeled and cut into 2-inch pieces • 2 medium white onions, peeled and cut into 2-inch pieces For turkey: • 1 pound unsalted butter, softened • 2 medium oranges, juiced • 1 1/2 tsp salt • 1/4 tsp pepper • 1/2 cup maple syrup • 1 tbsp fresh rosemary, chopped • 1/2 tbsp fresh thyme, chopped • 2 cloves garlic, finely chopped
PREPARATION
Brine: 1. Combine all ingredients except turkey in large pot and simmer over low heat for 1 to 1 1/2 hours. 2. Chill brine in ice bath until cold. 3. Place whole turkey into foodservice-safe grade container. 4. Pour chilled brine over top to submerge. Close bag and cover. 5. Marinate for 24 hours in the refrigerator. 6. Remove turkey from brine, drain excess liquid. 7. Place herbs and vegetables in body cavity and secure.

Turkey: 1. Combine butter, orange juice, salt, pepper, maple syrup, rosemary, thyme and garlic in a large bowl. 2. With fingers, slowly massage the compound butter into the skin of the turkey until well absorbed. 3. Fold wings under the back of the turkey and return legs to the tucked position. Turkey may be cooked in a 325 degree F oven or on a rotisserie. 4. If roasting in a thermal oven, cook on a rack for approximately 3 hours or until the internal temperature of the turkey reaches 170 degrees F in the breast and 180 degrees F in the thigh. 5. If cooking by the rotisserie method, thread turkey evenly on the rotisserie-spit fork using a counterweight to achieve an even balance. Place a drip pan in the center of the grill beneath the area where the turkey juices will drip. Cook the turkey over indirect medium heat in a covered rotisserie. 6. If cooking with charcoal, replenish briquettes with about 15 briquettes every hour, as needed, to maintain medium heat. Cook until the internal temperature of the turkey reaches 170 degrees F in the breast and 180 degrees F in the thigh (about 3 hours). 7. Allow turkey to rest for about 15 minutes. Remove vegetables and herbs from the cavity prior to carving. Place slices on a platter and garnish with oranges.

INGREDIENTS
• 3 to 4 loaves challah or brioche bread from a local bakery • 3 links Italian sausage • 1 pound crimini or white button mushrooms • 1 bunch celery, including leaves • 1 onion • 1 stick butter • 2 to 3 large cans turkey stock (or use homemade) • Fresh sage, dried (leave out for four to five days, till crunchy) Makes about “two big casserole dishes, sometimes a small third”
PREPARATION
Cube bread and place on cookie sheets to dry in the oven at 200 to 250 degrees F for 15 min or so. (Be careful not to brown or toast it.) Cook and crumble sausage, set aside. Dice celery, mushrooms and onion, and sauté in butter. In a large bowl, mix bread chunks with sausage and sautéed veggies. Add heated stock gradually, tossing to distribute and form a “goo.” Add sage and salt and pepper to taste, adjust other ingredients as necessary, and when it tastes good, transfer to casserole dishes. When the turkey comes out, put the stuffing in the oven (at 350 or 375) for about 30 minutes, just long enough to heat it through and crisp the top. If it’s in longer than that, cover with foil and maybe add a little extra stock to keep it from getting too dry.

HOMEMADE ROLLS White bread may be out-of-favor with the daily eater, but come holiday meal time, dinner rolls are part of every meal plan.

INGREDIENTS
• 4 tablespoons active dry yeast • 2 cups plus 2 tablespoons of warm water (110 to 120 degrees F) • 1/3 cup vegetable shortening, melted • 1/3 cup butter, melted • 1/2 cup sugar • 2 eggs • 2 teaspoons salt • 6 to 7 cups flour • 1 stick of butter
PREPARATION In a large mixing bowl, completely dissolve yeast in warm water. Add vegetable shortening, butter and sugar. Allow to stand for five minutes. Add the eggs, salt and 6 cups of the flour – enough to form a soft dough. Allow to rise until doubled in size, and then punch the dough down five to six times to remove all the air. Turn out the dough onto a heavily floured surface. Knead for 3 to 5 minutes until a non-sticky, elastic dough forms. Divide into 24 pieces and roll them into the shape of a ball. Place 2 to 3 inches apart on greased jelly roll pans. Cover with a towel and allow to rise again, about 15 to 20 minutes. Bake uncovered at 425 degrees F until golden brown, about 10 minutes. Roll a stick of butter over the tops of the buns, coating each bun once. Allow to rest for 5 minutes, then remove from the pan and place on wire racks to cool.

hildhood family meals varied slightly from night to night and far less so from week to week, but the one constant at every meal was a loaf of white bread and a stick of butter nestled in a white and gold Pyrex dish. Meals began only after Dad untwisted the bread tie and removed two pieces (he always took the heel/end piece if available), and then the bag was passed around our circular table until every person had a slice or two. Perhaps it was my dad’s predilection for carb-loading or my mom’s unflinching desire to make sure every living soul has everything they could possible need, but bread was always there, without fail – be it spaghetti with corn and salad, meatloaf with mashed potatoes and green beans;, pancakes with sausages and bacon – bread and butter were the dependable friends at our modest table. As a child I didn’t question this tradition, but as an adult it remains unclear why bread was a featured guest at every single meal. I asked my mom, and even she’s not sure how it all began but she still to this day prefers meals that have some bread as a side feature. According to History of Bread, a website devoted to all things doughy, Americans consume, on average, 53 pounds of bread each year. In my house, at least 20 pounds of that must’ve been consumed during the months of November and December. Mom’s homemade dinner rolls, which were more akin to an elegant hamburger bun, were the hottest item at the family table. My sisters
and I would crowd around the warm oven, sniffing the air with abandon until mom removed the jelly roll pans overflowing with yellow, billowy rolls. A small finger burn was well worth the decision to grab a still-hot fresh roll and fill it with peanut butter. Mom knew to make far more than would be needed for the holiday meal because by the time family dinner rolled around, at least half of them had been devoured by the five people who lived under our 900-square-foot roof. Despite the rise in gluten-free living and the findings of 2014 survey from Packaged Facts that revealed 56 percent of U.S. shoppers say they are cutting back on white bread, the holidays are a delicious beast all of their own making. For goodness’ sakes, I spend 363 days a year eating the Paleo diet and even I demand traditional rolls for Thanksgiving and Christmas. So, while whole grain or no grain has become the way of daily life, white flour dinner rolls are a holidaydinner must. No matter what is being served as the main course or side dishes, and no matter how average of a cook you might be, if you make the effort to make homemade rolls, every holiday eater in your home will walk away stuffed and happy. Not to mention the fact that your leftovers will have a delicious destiny for days to come. The following is an adapted version of my mom’s dinner rolls, which I still make to this day. Try these, or give a shout out to your own mom or grandma and make her recipe instead. Whatever you do, just make them already, OK?
EASY HOMEMADE CRANBERRY SAUCE
INGREDIENTS
• 12 oz. fresh cranberries (about 3 cups) • 1/2 cup pure maple syrup • Zest and juice of 1 orange Makes about 1 1/2 cups
PREPARATION
Combine all ingredients in a medium pot. Bring mixture to a boil over medium-high heat. Reduce heat to medium-low and continue to cook, stirring occasionally, until the cranberries have popped and the sauce has thickened, about 7 to 10 minutes. Can be made ahead and stored in the fridge.

hether leaving cookies out for Santa or simply spreading some holiday cheer among family and friends, the following recipe from Elizabeth M. Prueitt is sure to please this holiday season. INGREDIENTS
• 3 3/4 cups all-purpose flour • 1 tablespoon cocoa powder • 4 teaspoons ground ginger • 1 1/2 teaspoons ground cloves • 2 teaspoons ground cinammon • 1/2 teaspoon baking soda • 1 1/4 teaspoons ground black pepper • 1 cup unsalted butter, softened
• 3/4 cup plus 2 tablespoons granulated sugar • 1 large egg • 1/2 cup blackstrap or other dark molasses • 2 tablespoons light corn syrup For Glaze: • 1 cup confectioner’s sugar • 2 tablespoons water
INGREDIENTS
• 1 1/2 cups whole wheat flour • 1 1/2 teaspoons cinnamon • 1 teaspoon ground ginger • 1/8 teaspoon nutmeg • 1/4 teaspoon ground cloves • 1 teaspoon baking soda • 1/4 teaspoon baking powder • 1/2 teaspoon salt • 2 eggs • 1/2 cup extra virgin olive oil • 1/2 cup clover honey • 1/2 teaspoon vanilla • 1 can pumpkin puree • 1/2 cup walnuts, chopped
To make the dough, stir together the flour, cocoa powder, ginger, cloves, cinnamon, baking soda, salt, and pepper in a mixing bowl. Set aside. using a mixer, beat the butter on mediumhigh speed until creamy. Slowly add the granulated sugar and mix on medium speed until the mixture is completely smooth and soft. Add the egg and mix well. Add the molasses and corn syrup and beat until incorporated. Add the flour mixture and beat on low speed until a dough forms. Remove the dough from the bowl, flatten it on a large piece of plastic wrap into a rectangle about 1 inch thick, cover the dough with plastic wrap, and refrigerate overnight.
MIx dry ingredients (excluding walnuts) in a large bowl and wet ingredients in a second medium bowl, mixing both well. Slowly pour wet mixture in to dry, stirring until combined. Fold in walnuts last.
Preheat the oven to 350 F. Line a baking sheet with parchment paper or a nonstick liner. Unwrap the dough and place on a floured work surface. Roll out the dough 1/3-inch thick, lightly dust the top with flour, press your cookie molds or a round drinking glass over the dough, and then cut the shapes with a small knife and place on the prepared baking sheet, spacing them about 1 inch apart. Bake the cookies until lightly golden along the sides but still soft to the touch in the centers, 7 to 15 minutes. Yields 12-20 cookies.
Pour batter into prepared pan and bake at 350 F until cooked through, about 1 hour. Allow bread to cool completely before serving. Serves 10 to 12

INGREDIENTS
• 8 oz. cream cheese, room temperature • 3/4 cup confectioner's sugar • 1/2 cup crunchy peanut butter • 2 tbsp milk • 1/2 cup roasted peanuts, chopped • 2 cups heavy cream, whipped till thick • 9-inch graham cracker crust • 1 cup chocolate sauce • Candy toppings (favorite candy bars, chopped) Serves 8
PREPARATION
Using a stand mixer with whip attachment, beat the cream cheese and sugar until smooth. Add peanut butter, milk and roasted peanuts and beat well. Fold 2 cups of the whipped heavy cream into the mixture. Pour the filling into the prepared crust. Cover the top of the pie with chocolate sauce and your choice of candy toppings. Freeze for at least 4 hours.

• 2 1/2 cups unbleached all-purpose flour • 3/4 tsp salt • 1/3 cup vegetable shortening • 1/2 cup cold unsalted butter • 1/2 cup plus 1 to 2 tbsp ice water Makes enough for a top and bottom crust
PREPARATION
In a medium bowl, whisk together flour and salt. Cut in the shortening (with a pastry cutter) until it’s in lumps the size of small peas. Dice the butter into 1/2inch pieces, and cut into the mixture until you have flakes of butter the size of your fingernail. (Says King Arthur Flour’s Susan Reid: “This is the step people have the most trouble with. Anything that you’re nervous about tends to be overstirred, overmanipulated, or overhandled. More is NOT better here.”) Add the water, 2 tbsp at a time, mixing with a fork as you sprinkle the water into the dough. (Err on the dry side; too much water means a tough crust.) When the
dough is just barely moist enough to hold together when you gently squeeze it, transfer it to a piece of parchment paper. Spread the dough out in a band, and look for dry spots. Use a spray bottle to lightly spritz any places that need it without adding too much water. Using the paper, fold dough over on itself three or four times to bring it together. Divide dough in half. Pat it into two 3/4-inchthick disks. Roll the disk on its edge, like a wheel, to smooth. Wrap the dough in plastic and refrigerate for 30 minutes before rolling. Unwrap and place it on a piece of parchment. Cut a clean, clear plastic bag into a sheet and place over dough before rolling into a flat circle the
size you need. (A 9-inch pie pan needs a 13-inch circle of dough for the bottom.) Spray your pie pan lightly; this will make getting out the slices of pie a little easier. Peel off the parchment and drape the plastic-topped dough over your hand. Lay it into the pan, and peel off the plastic. Make sure the dough is fitted down into the pan, not stretched or hanging in midair before you add the filling. Put in filling of your choice, cover with top-crust circle. Trim overhang of bottom crust to one inch around, then bring bottom crust up over the top one and crimp together to form fluted edges. Add vents with a knife. Bake according to instructions for the filling.

The Annual Turkey Trot run/ walk will start at 8 a.m. at the Jerome Recreation District, 2032 S. Lincoln. The course is a 3.64 mile run or walk along the bike path and finishes at the Jerome Recreation District. T-shirts and refreshments will be available after the event. Pre-register at the recreation center’s office. The entry fee is five cans of food or nonperishable items, or a gently used coat. All donations go to Martha and Mary Food Pantry.
