COTTESMORE REWILDING

Cottesmore has quietly been beavering away at a new rewilding programme this term. In partnership with Lesley Malpas, author of "Rewilding for Schools," work has begun on creating environments which encourage biodiversity and habitat regeneration. The pupils and adult team have already started building the butterfly walk and the night garden, which will provide muchneeded habitats for moths.

The ambitious master plan is includes projects like The Nuthatch Orchard (a fruit and nut wood), The Woodland Glade by the lake, augmentation of existing Spring Meadows, the planting of several wildflower meadows, and the development of pockets of species-rich grasslands.

The school is also working on a rewilding summit called "Rewilding Schools" in the autumn term this year Talks will include: “Why Rewilding? A noholds-barred debate”; “Rewilding the City”; “Wild Women Do” (Cottesmore is celebrating 50 years of Girls at Cottesmore this year); “Wild ChildGrounding Young People in Nature”; and a “Rewilding Practical Masterclass and Q&A ”

FOOD FOR THOUGHT WITH ZERO WASTE PLAN

A purge on food waste at an independent school in Liphook is already reaping environmental rewards

Highfield & Brookham School in Liphook has cut meal waste by a fifth since it began a pupil-initiated crackdown in October, reducing the amount of food thrown away by an incredible 1,260kg and lowering its carbon footprint in the process.

The drive began as pupils challenged the school’s catering department to produce a zero-waste meal per week, with excess food and ingredients repurposed for tasty and nutritious alternatives, including using pork from a lunchtime roast in a healthy evening stir fry, turning ripe bananas which were left over from our inter-school cross-country event in February into smoothies and banana bread, using the flesh of carved Hallowe’en pumpkins for soup and the seeds for homemade bread, and turning soup into pasta sauce

TASIS ENGLAND WINS EXCELLENCE IN EDUCATION AWARD

TASIS England, based in Thorpe has been awarded the Excellence in Education –Schools or Education Consultancy award. This accolade recognises the outstanding quality of education provided to mobile families, reflecting the school's commitment to successful, timely, and stress-free relocations that support talent retention, enhance employer branding, and promote employee engagement

In their commendation, the judges highlighted TASIS England's comprehensive and inclusive approach to relocation and mobility.

When the Wild Calls author, Nicola Penfold, shares her recommendations for climate warriors

Greta Thunberg is here of course, but also lesser-known figures such as Autumn Peltier, from Wiikwemkoong First Nation on Manitoulin Island, Canada, who speaks up for Indigenous Rights; and Edgar Tarimo, from Tanzania, who launched a recycling company

Zucchini alla Poverella

Poor man’s courgettes

Tired of serving the same old veggies, take a look at this quick and easy recipe from Terre Di San Vito to bring some joy to the table. Courgettes are in season now so grab some green goodness

Serves 4 or more

This recipe of golden discs of deliciousness will be one of the easiest, traditional Apulian dishes you will find With only four ingredients, it is quick to make and is one of the tastiest side dishes you’ll find anywhere

Terre Di San Vito extra virgin olive oil for pouring and cooking

1 kg Courgettes sliced (about a quarter of a centimetre thick)

2 cloves garlic

1 tablespoon chopped fresh mint (optional) Heat the 4 tablespoons of olive oil in a large frying pan (medium heat)

Add the peeled whole garlic cloves

When the garlic begins to colour, add the sliced courgettes

4 Turn the courgettes every few minutes until all cooked (some should be golden, some more cooked – all will be delicious!)

Fry the courgettes until golden (we like some to be a little caramelised).

5 Cook for approx 20 – 30 min – until all cooked.

To serve:

Serve the courgettes hot and add the chopped mint (if using) and drizzle some Terre Di San Vito extra virgin olive oil over the top

Excellent as a side dish to fish and meat Buon appetito!

Top tips:

You can store your zucchini alla Poverina covered with plastic wrap in the fridge for a couple of days

Not suitable for freezing

Delicious on little crostini

Can be eaten hot or cold.
