As the New Year kicks off, the fragrant harbour continues to shine as one of the world’s most popular travel destinations, with a diverse array of international and local events set to deliver loads of fun and excitement alongside the dazzling skyline and a wealth of unique attractions in the city. The Hong Kong Velodrome, the state-of-theart arena in Tseung Kwan O in the New Territories, is hosting the 2015/16 UCI Track Cycling World Cup from 16 to 17 January, the biggest trackcycling tournament in the city’s history. With 250 cyclists from 39 countries and regions competing for not only prestigious trophies but also qualification points for the 2016 Olympic Games, this competition is sure to be one of most enthralling sports events of the year. Meanwhile, the Hong Kong music scene goes from strength to strength, offering a cornucopia of stellar concerts from big names and up-andcoming talent. Five-time Grammy Award-winning jazz artist Diana Krall will take over the AsiaWorldExpo on 24 January, melting fans' hearts with her evocative and seemingly effortless singing, while the Hong Kong International Chamber Music Festival, launched in 2009, appears in its seventh edition from 20 to 27 January at various venues across the territory, showcasing a host of international and local musicians alongside the world-famous violinist Cho-Liang Lin. This month also sees the festive spirit live on, as the Tung Wah Charity Carnival – conceived by the eponymous charity organization – transforms the former Kai Tak Airport runway into an enormous playground for all ages, boasting the latest amusement rides, games of skill, and several entertainment zones. As part of the proceeds will go to the Tung Wah Group of Hospitals in support of its services for children, adolescents and lowincome families, you can have a blast for a good cause. 1894 Hong Kong Plague a Musical

The Oldest House on the Peak? 太平山頂上最古老的房屋？
Which house can claim to be the oldest on the Peak? 到底哪一幢房屋稱得上是山頂上最古老的房屋？
T
he Peak is Hong Kong’s top residential district. Like most of the older areas it has been extensively rebuilt as people’s needs have evolved. The original houses built in the late 1860s and 1870s were summer retreats that offered a little respite from heat in town. The slightly lower temperatures made all the difference in an age before electric fans and air conditioning. At first few took advantage of it as access was difficult. The road up, today’s Old Peak Road, was steep and although an old Directory called it a bridle path, few if any used a horse. You either walked up, an exhausting trek in the summer, or you were carried up in a sedan chair. You can try the climb today and find for yourself how hard it is. The first house was a sanatorium for sick soldiers but soon closed as the poor sanitation didn’t make them any better. The house was then rented for several years by noted architect and local philanthropist Granville Sharp until the Government took it back as a summer house for the Governor. This first house was built of wood and it didn’t last long. By then the Governor was hooked on the Peak and a new structure was soon in place. Access improved in 1888 when the Peak Tram opened for business. New roads were

built out from the terminal to access more building sites and there was a mini building boom. The normal style of property was called an upstairs bungalow. The family’s living quarters were arranged on a single floor raised above ground level. Below it were the servant’s quarters and store rooms. Usually there were verandas so that direct sunlight was kept away from the windows. The veranda also provided a space for Hong Kong's elite to lie out and enjoy the breeze and a gin and tonic. Of course the weather was not always fine. The Peak suffers from frequent low cloud that raises the humidity to 100 percent. It’s like being in thick fog. Nowadays there are dehumidifiers to keep the inside dry but in the past water would run down the walls and mould would grow on just about everything. The Rev. E.J. Hardy in 1905 put it succinctly saying “If you live on the Peak your clothes rot; if you live below, you rot.” The houses were sturdily built to weather the typhoon winds and most of the houses built around the turn of the century were still going strong in the years before World War II. The Japanese occupation had a big effect on the Peak. As soon as they had marched the residents off to internment in Stanley, Chinese

looters moved in and stripped the houses bare. Everything was taken including plumbing and wiring as well as any wood. The Japanese appear not to have cared and they did not aspire to living on the Peak. It must have been pretty bleak. After the War some houses were restored, but many were redeveloped. Some, like La Hacienda and Eridine, were replaced by blocks of flats. Others were just rebuilt with more modern materials and with better facilities. This was partly dictated by the growing practice of providing expatriate staff with company flats. Of course most wanted to live on the Peak and there was much competition for the available sites. Government itself had been an early entrant and had a large number of quarters spread around the area. Towards the end of the 20th century not only was the British military moving out but also the number of expatriate civil servants was in decline. They vacated a number of properties which were then redeveloped to suit wealthy buyers. Everyone aspires to living on the Peak and prices have risen dramatically. Today you look around and just about every building appears to be modern. There have been calls for more of the old to be preserved but it is difficult to stop redevelopment. known as Ho Tung Gardens, was slated for demolition, there was a huge public outcry but this didn't save it. One house that has been kept is at the lower end of Coombe Road at Wanchai Gap. Here the Government was able to reach an agreement with the owner and took possession of it. The house is the old-style upstairs bungalow albeit that the verandas have been enclosed. The site was originally sold by the Government in 1886 and the house was probably built soon after. The original owner John Joseph Francis named it after his school; Stonyhurst College in Lancashire, England. He was a leading light of Hong Kong’s legal profession and was prominent in civic affairs. There has as yet been no sign of any renovation or restoration of the house. In fact there has been no indication of what it might be used for. One would hope that it can be fitted out as a Peak home would have been prewar and opened up as a museum to remind everyone of what life on The Peak used to be like. Is it the oldest house on the Peak? Certainly there are few other old houses left and it must be a prime contender for that accolade. Let us hope that it can become a celebration of the past splendour of Peak living. ■

outhern District, widely known as Island South, is blessed with a rare combination of scenic nature and cultural history. Covering the southern part of Hong Kong Island and overlooking the South China Sea, it encompasses picturesque reservoirs, green mountains, and sandy beaches, along with fastdeveloping commercial and residential communities in Wong Chuk Hang and Ap Lei Chau. Aberdeen, which literally means “Little Hong Kong” in Cantonese and where the British first set foot in the territory, still thrives as a fishing village, home to the few remaining indigenous Tanka fishermen as well as the grandiose floating restaurants much loved by visitors. While only half an hour from the heart of town, it won’t be long before you feel viscerally removed from the city’s bustling side. To make the most of your visit, arrive early, and immerse yourself in the stunning scenery along with the vibrant, multifaceted culture that has grown from the earliest days of the city. Start at the western end of Aberdeen and work your way eastward towards Shek O, and you will be rewarded with a varied experience well worth the time.

Take a trip down memory lane to Hong Kong’s humble origins as a fishing village at Aberdeen Harbour, where clusters of junks, sampans and boat houses conjure up a quaint and lively ambience. This idyllic village is the quintessential tourist destination, offering history, scenery and shopping. Stop by the historic Murray House to catch a glimpse of colonial architecture – this threestorey, 160-year-old structure is one of the oldest surviving public buildings in the territory. Dismantled at its original site in Central in 1982, it has been ensconced on the Stanley foreshore since it was rebuilt in the new millennium. ituated at the Pulse, the burgeoning dining hub in Repulse Bay featuring some of the most breathtaking views the city has to offer, the Ocean has utilised its privileged location to the hilt, delivering a blissfully tranquil ambience as the ocean-themed interior design riffs off the lovely beach backdrop. Floor-to-ceiling windows provide stunning panoramic views of the sea, while the curving, coral-reef-inspired booths and tables conjure up a sense of movement for the interior. Most eyecatching, though, are the opulent built-in aquarium walls where hundreds of jellyfish perform serenely for guests. As expected, the menu features a good range of seafood dishes from fish to octopus to shellfish, with three-course (HK$488), five-course (HK$888), eight-course (HK$1188) and 10-course (HK$1488) sets on offer. The portions are generous, and alongside the extravagant sterling silver Hermès cutlery, the dishes are served with organic, marinestyled adornments such as rocks, shells and seaweed on the side. We kicked things off with the Seaview Spritz (HK$108), a light, refreshing cocktail, and the Sea Breeze, a Japanese-styled appetiser interwoven with the flavours and textures of homemade tofu, uni, walnut and ponzu. The intricate layers contrast against each other wonderfully, making it an early

winner for our meal. Next came the Tiger Prawns – sourced from Japan, the shellfish is fresh, going well with the creaminess and mild acidity of the burrata, as well as the fruity notes from the tomatoes and berries. The Scallop, on the other hand, has bolder flavours. Alongside the miso, orange and fennel, the corn puree is a touch overpowering, but we enjoyed the sea catch itself, which is seared beautifully on the outside while tender, moist on the inside. As for the main course, the Sous-vide Turbot is also cooked beautifully, with a delicate, moist texture rendered from the meticulous slow-cook process. The nori butter sauce is quite light, however the roasted cauliflower makes up for it with a pleasant hint of smokiness. Finally, for dessert we opted for the Chocolate Pearl, which features a yummy dollop of yogurt icecream nestling inside an exquisitely crafted hollow chocolate ball accompanied by pickled cherries, wrapping up our meal in a sweet and refreshing manner. With the impressive atmosphere and spankingfresh sea catches on offer, the Ocean is a solid addition to the increasingly competitive dining community in Repulse Bay. Looking for a place to spend a romantic evening with your loved one after a gentle stroll on the beach? This restaurant is sure to put a smile on their face. ■

estling on the third floor of popular mall The Mira in Tsim Sha Tsui, Kowloon, Cuisine Cuisine is the younger, more creative version of its sister restaurant of the same name at International Finance Centre (ifc) in Central, touting an original menu inspired by Chinese culinary traditions with a contemporary twist. Its all-new Deluxe Dim Sum Platter (HK$198) was recently rolled out, and we were lucky enough to be among the first to sample it, along with some other delicacies on offer. As its name suggests, the platter is a luxurious set of dim sum crafted with lavish ingredients such as garoupa, lobster and abalone. Of the five extravagant pieces, our top vote went to the Steamed Scallop Dumpling with Black Truffle – the scallop is fresh and tender, while the lush black truffle brings the flavours to the fore alongside the nice crunch of the vegetables. We also liked the Stir-fried Spicy Chicken Bun, whose spot-on, Sichuan-style seasoning pleasantly numbs the palate. Moving on, we tried another interesting dish, the Crispy Glutinous Rice Dumplings (HK$46). The rich fermented beancurd sauce, typically served with pig’s trotters, fits in perfectly here with the diced chicken and the crusty, crunchy pastry. But what surprised us the most was the Tripes in Tom Yum Paste (HK$58), which borrows the authentic soup base from Thailand. While the idea seems a bit wild, we were glad we tried what turned out to be a fragrant and delicious dish. Next our palate was refreshed by the Poached Pea Shoots (HK$220), whose pure and creamy rice broth was perfectly complemented by the sweet wolfberries and fresh pea shoots, making for a pleasant transition before the desserts arrived. Satisfying our sweet tooth was the Steamed Red Date Pudding (HK$58), marked by its sweet and aromatic notes, along with the Cantonese-style Steamed Black Sugar Sponge Cake (HK$58), which boasts a light and fluffy texture. This enjoyable lunch was packed with pleasant surprises and impressed with its solid cooking technique and twists that intrigued but didn’t go over the top. This creative approach, rare among Chinese restaurants in Hong Kong, has placed Cuisine Cuisine firmly on the city’s culinary map, and we will certainly be back. ■

Allan: A few years ago an American guest, who was a big fan of the Hong Kong comedian Stephen Chow, asked if we could get him a VHS copy of the movie “All’s Well, Ends Well” from 1992. It was hugely challenging given the obsolete status of the format, but after visiting over 20 shops all over the city in my spare time I eventually found it. He was ecstatic when I

I decided to develop a career in the field of hospitality at an early age. I started an apprenticeship as a waiter in my home country Switzerland at 16, and gradually worked my way up, completing a degree with an honor from the Lausanne Hotel School along the way. I also made concerted efforts at learning languages, and now speak English, German and French, and can communicate in several others. I first arrived in Hong Kong in 1990 and can honestly say that it’s one of the best places to work and live in the world. Its fast, dynamic and competitive atmosphere drives us to be at our best every single day, and It’s also a beautiful, modern and well-connected city. I just love Hong Kong and its people. I have worked in some countries fraught with war, riots and bomb attacks as well as in world-class cities in Europe and North America. From these experiences, I have learned that in any difficult situation, it’s always best to stay calm and positive. It’s crucial to show your guests and staff that panic is not going to help the situation, and keeping your composure will allow clearer thinking. I am a very goal-driven person with high standards, especially when it comes to delivering the ultimate guest service experience, achieving top financial results, and keeping the staff happy and healthy. I would describe my management style as approachable, self-driven and selfmotivated and holistic. The Ritz-Carlton, Hong Kong is the highest hotel in the world, located at an altitude of 490 metres in the International Commerce Centre (ICC). It’s an incredible feeling working here, and we always strive to deliver the most personalised service possible and memorable experiences for our guests. When we achieve this, we truly feel we are on top of the world! Nowadays, social media is vital in promoting our brand.
