e welcome you to Hong Kong and to CityLife, the monthly magazine for visitors to Asia’s World City. A s y o u k n o w, t h e C o v i d - 1 9 p a n d e m i c i s ongoing, affecting almost everywhere in the world, including Hong Kong. As we go to print, Hong Kong has instituted several social distancing measures including that masks must be worn in all public areas, among others. (Masks are almost universally worn in public anyway.) While most of the city remains open, including all the hotels, the city’s transportation system, shopping malls, shops and restaurants, albeit with restrictions on dining in. We suggest that you contact your concierge for more details on the latest updates and restrictions. Nevertheless, there is still plenty to do in the city, including exploring Hong Kong’s great outdoors and visiting some of the city’s outlying areas. One destination in particular worth visiting is Lantau, Hong Kong’s largest island, which has undergone tremendous development over the last thirty years. Lantau is now home to Hong Kong International Airport, transport links of bridges and expressways and rail link connecting to it, the new satellite town of Tung Chung, and recently, the local end of the Hong Kong–Zhuhai–Macau Bridge, a world beating engineering marvel. Still, due to Lantau’s hilly terrain, the island is still largely green, and remains a haven for hikers and outdoor explorers. This month, we introduce a delightful day trip that includes riding the Ngong Ping 360 Cable Car; visiting Ngong Ping Village, the Big Buddha and Po Lin Monastery; and embarking on a guided photo tour of the idyllic fishing village of Tai O. Please go to our Cover Story on page 4 for more details. What better way to fend off the summer heat than enjoying delicious cold or chilled desserts and drinks? Well, you’ve come to the right city to indulge in dessert mania. Dance x Literature 'The Last Dance'

The Hong Kong Dance Company invites renowned choreographer Mui Cheuk Yin to stage a new performance inspired by eminent Taiwanese writer Pai Hsien-yung’s short story ‘The Last Night of Madam Chin’, from his Taipei People series. The Last Night is an ending to a past; while glamour and melancholy dance together, Madam Chin makes her final glimpses and murmurs.

ince the opening of Hong Kong International Airport in 1998, Lantau, Hong Kong’s largest island, has undergone an amazing transformation. World-class bridges, expressways and a rail system connect the once-isolated island to the heart of the city. The airport has become one of the world’s best and busiest transport hubs. The satellite town of Tung Chung adjacent to the airport is now a large, thriving residential community and home to Citygate Outlet Mall, one of Asia’s largest and most upscale outlet malls. And with the recent completion of Hong Kong–Zhuhai–Macau Bridge, an engineering marvel in its own right that enters Hong Kong close by the airport, Lantau is lauded as the crown jewel of Hong Kong’s infrastructure works, a city already known for its ultra-efficient built environment. Despite the impressive development, North Lantau remains green, thanks to the rugged mountains and coastline that form the bulk of the island. The varied natural beauty remains largely untouched, making it a favourite getaway for locals and visitors alike. Hiking trails criss-cross the mountains and beaches; long stretches of sandy beaches invite lovers of sun and surf, and hamlet fishing villages harken back to a bygone era. One of the more enjoyable outings on Lantau is a day trip to Ngong Ping via the Ngong Ping 360 Cable Car and a guided tour to Tai O, a fishing village on southwestern Lantau and a popular destination known for its stilted houses over water, local food products, nearby Chinese dolphins, and traditional way of life. The cable car ride is spectacular and aweinspiring; Ngong Ping village is a quaint tourist spot located high in the mountains adjacent to the Big Buddha and Po Lin Monastery, and the visit to Tai O is absolutely enchanting. Best of all, there are so many photogenic spots to satisfy even the most discerning social media glutton. Ngong Ping 360 Cable Car 昂坪 360

Named one of the ten best cable car rides in the world by CNN, the Ngong Ping 360 Cable Car delivers breathtaking views of Lantau Island and the South China Sea. The ride passes over a sea channel before steeply ascending the mountain, with a spectacular view down across the airport. Snaking off into the distance across the mouth of the Pearl River, the 45-km Hong Kong–Zhuhai–Macau Bridge disconcertingly descends into the sea for its tunnel section. The mountains below are sheathed in an endless emerald canopy of trees and more trees. For a real visual treat take the glass-bottom Crystal Cabin ride and enjoy the vertigo sensation and the views directly beneath your feet. Even at 25 minutes, the ride is over too soon, so enchanting are the views. Catch the cable car near the Tung Chung MTR Station. For the physically fit and the intrepid, there is also a footpath directly below the cable car route that follows it all the way to Ngong Ping. The whole hike takes about 3 to 4 hours. We suggest that you try to take the trail coming down from Ngong Ping on the way back as it is slightly easier.

昂坪 360 纜車被 CNN 評為世界十大最佳纜車之一，可欣賞大嶼山和中國南海的壯麗景色。乘坐飛機經過海道，然後陡然升上山峰，整個機場都一覽無餘。45公里長的港珠澳大橋蜿蜒穿過珠江口，不知不覺地下降到海中變成隧道。下面的山脈被無盡的翡翠樹冠和樹木覆蓋。乘坐玻璃底的水晶車廂，獲得真正的視覺享受，享受眩暈感和腳下美景。即使旅程僅有25分鐘，景色依舊令人着迷。纜車站位於東湧地鐵站附近，相當方便。體能足夠又想挑戰一下的話，可考慮在纜車路線的正下方亦有一條步行徑，可直達昂坪。整個徒步旅行大約需要 3 到 4 個小時。我們建議您在回程時盡量沿昂坪下山的小路走，這樣會比較容易一些。

Ngong Ping Village, Big Buddha and Po Lin Monastery 昂坪市集、天坛大佛、宝莲禅寺

The cable car brings you to the enchanting Ngong Ping Village, where you can stroll through the culturally themed hamlet, its main street lined with souvenir shops, arts and crafts outlets, and a variety of eateries. Three mini-theatres offer multimedia presentations and live performances. For a cool photo experience, check out the long wall mural just a short distance from the cable car station. The mural is bursting with illustrations of iconic Hong Kong symbols, and there are several spots ideal to grab a stylish photograph. The iconic Big Buddha is just adjacent. At 34 metres high, it is one of the largest Buddha statues in the world. Climb the 286 steps for a close-up encounter with the imposing statue. The Po Lin Monastery is an active and important Buddhist centre, as well as a visitor attraction. Take a stroll through its pleasant garden, and pay a visit to the Grand Hall, which houses over 10,000 Buddha statues, and perhaps enjoy a vegetarian meal there.

Among local dessert favourites that draw universal acclaim, chilled mango pomelo sago is high on the list. Created by Lei Garden, a wellknown Cantonese restaurant in Hong Kong, in the 1980s, this delightful dessert is ubiquitous, served in many Chinese restaurants and dessert shops across the city. It is everything you can ask for a summer treat – refreshing, fruity, light and thirst quenching. And it is yummy! Grass Jelly (Leung Fan) 涼粉

A low-calorie dessert that has a devoted following, grass jelly is made by boiling and cooling a liquid made from leaves and stalks of a local plant until it turns translucent, black and jelly-like. The jelly is diced into cubes and flavoured with syrup or fruits and other sweet condiments. Once upon a time it was everybody’s favourite, and freshly squeezed sugarcane juice is still an excellent drink for the summer. The Chinese ascribe a strong cooling property to the drink that helps counter the hot, humid weather. Arthur Hacker recalls a particular Victorian lady with a thirst for travel 亞瑟．克赫帶我們看看維多利亞女郎的遊歷故事。

sabella Bird was one of those indomitable middle-aged Victorian lady-travellers who bravely tramped around some of the most disease-ridden places in the Far East in order, she explained, "to recruit my health." For years she had suffered from bouts of nervous exhaustion. Eventually her doctors got fed up with her and suggested that a very long sea voyage would do her good. So, in 1872 she set off on a long expedition. She found Australia and New Zealand depressing. But on her return voyage aboard a dilapidated steamer, when the ship ran into a typhoon in the Pacific Ocean and almost sank, her neurosis vanished in the excitement of the storm and she changed from depressed hypochondriac into an enthusiastic adventuress. Isabella was on a high when she arrived at Hawaii and she spent six glorious months exploring the islands, living rough, riding horses, sleeping out in the open, climbing mountains and peering down craters of smouldering volcanoes. After her return to Scotland she published a book, with the snappy little title The Hawaiian Archipelago: Six Months Among the Palm Groves, Coral Reefs, and Volcanoes of the Sandwich Islands. This book became very popular with her generation, which had been brought up on the

works of (Mrs) Favell Lee Mortimer, an armchair travel writer, who had only been out of England twice and then for only a few days. Consequently Mortimer wrote about places that she had never visited. Her books are notoriously inaccurate and bigoted. Today, ironically, they are relished by cynical collectors of the politically incorrect. They are littered with offensive statements about foreigners, such as: "the Portuguese are only slightly less lazy than the Spanish." lsabella had caught the travel bug and was soon off on another around-the-world trip that produced two books: Unbeaten Tracks of Japan and The Golden Chersonese (referring to the name of the Malay Peninsula in ancient Greek scholarship). When she arrived in Hong Kong, the city was in the grip of a fast-spreading fire. She bullied the captain of a mail boat to take her ashore, commandeered a sedan chair and demanded to be taken to the "palace of the English bishop." She was carried through the frantic crowds to the bishop's house, which had been turned into an improvised refugee camp. The city was in chaos. She wrote: "lt was a sight of lurid grandeur in the darkness, the tongues of flame leaping up house after house." This was far more exciting than the smouldering volcanoes of Hawaii. Her early books were published in the form

However her original unedited letters (Letters to Henrietta , edited by Kay Chubbuck, John Murray, London 2002) that she wrote from the colony to her sister Henrietta are far more exciting than the watered-down version that appeared in The Golden Chersonese . lsabella loved Hong Kong and its people, with the notable exception of the unpopular Governor Sir John Pope Hennessy – an iconoclastic Irishman who was particularly proud of his prison reforms. Against strong local opposition, he had forbidden flogging and branding, and improved the living condition of convicts. Writing to her sister in Edinburgh, she explained that: "The accommodation, food, etc are as much superior to the house and manner of living of the poorer Chinese as our rooms and way of living in Atholl Crescent are superior to that of the dwellers of Cowgate." She added: "lt strikes me that he is posing as a humanitarian... The prison pleased me, but Governor Hennessy obviously has a diseased sympathy with criminals." Following Hennessy's reforms, a rise in crime led almost the entire European population to stage a protest on the cricket ground demanding his recall. His ability to divide a community was legendary. His policies caused riots and unrest in almost every colony he governed. lsabella's scathing attacks on the governor that were left out of The Golden Chersonese are particularly damning. Isabella continued to travel throughout her life, and was the first woman to be admitted as a member of the Royal Geographical Society. Her interest in the Far East never left her, and one of last voyages, at the age of 66, was back to China and up the length of the Yangtze.■

For our visit, Oscar Luzon, Zuma’s Corporate Chef for Asia, who hails from Barcelona, was kind enough to prepare some of Zuma’s popular seasonal offerings as well as their signature dishes. So, we knew we were in good hands. The meal tripped off with Sliced Yellowtail, Green Chili Relish, Ponzu and Pickled

Garlic ($120), a light and tasty dish and ideal for a starter. Next came the Salmon and Tuna Tartare with Rice Crackers ($210), which is excellent. The tartare combo, exquisitely presented in a charming little wooden box and meticulously prepared and seasoned, tastes excellent. Another popular Zuma dish that we tried was Seared Toro Nigiri with Wafu Sauce ($320) a sushi offering in which succulent slices of premium grade tuna are lightly flamed at the table and seasoned with a citrus sauce – perfect for the summer. Two main courses came next. First was Eye Steak with Wafu Sauce and Garlic Crisps ($320), in which cubes of the juicy steak were grilled to perfection. Then came Zuma’s signature Miso Marinated Black Cod Wrapped in Hoba Leaf ($330). The fish fillet, enhanced by the sweet soya sauce, is tender and melts in the mouth. We were told preparation of this dish follows strict protocol and is uniform across all the Zuma outlets worldwide. Two desserts wrapped up this delicious affair: Special Chocolate, Caramel and Almond Praline with Tahitian Vanilla Ice Cream ($138) and Green Tea and Banana Cake with Coconut Ice Cream and Peanut Toffee Sauce ($112). Both are yummy and delivered a fitting end to a delightful meal. With its spacious and welcoming venue, stylish ambience, excellent Japanese dishes and refreshing cocktails, dining at Zuma is always a pleasant experience and a culinary treat. We highly recommend giving it a visit.■

hen exploring a city carpeted with skyscrapers, it’s easy to overlook the many rooftop restaurants that offer interesting and often spectacular vantage points. A case in point is Moon Yue, a fine-dining Cantonese restaurant located on the top floor of Cubus , an iconic commercial building in Causeway Bay.

Honey Sauce, in which wheat gluten is painstakingly handcrafted to mimic real barbecued pork. The soup – a staple of refined Cantonese meals – is Braised Sea Conch with Porcini and Fish Maw, which is smooth and clearly made from quality ingredients, as well as being low-calorie and packed with proteins and collagen.

Upon entering the restaurant, which occupies the entire top floor plus the roof terrace above, one is greeted by 360-degree panoramic views of the city, the harbour, and the mountains behind.

Seafood came next and we had Stir-fried Hokkaido Jumbo Scallops and Morels with Homemade XO Sauce, which is a real treat. The succulent scallop flavour is enhanced by the specially made XO sauce that we tucked into with gusto.

The décor of recently opened Moon Yue is contemporary, featuring a jet-black 2,000-squarefoot interior of dark wood panels with rose gold touches, as a cocktail bar runs an entire side of the floor. The all-glass windows and tall ceilings lift the ambience and connect the spectacular views of the city to the venue itself. Exquisitely, each dining table is constructed to be lowered into a comfortable cocktail table for after-dinner drinks. Moon Yue’s executive chef spent a lengthy part of his career in Japan and the skills he honed there are palpable in Moon Yue’s culinary style, its selection of ingredients and its menu. We were there to try Moon Yue’s tasting menu, which consists of an eight-course dinner priced at $588 per person. Two other tasting menus are priced at $388 and $888 respectively. You might also opt for the free-flow Moet & Chandon Imperial Brut Champagne at $288 per person for four hours. Our meal started with two appetisers. For the meat entrée, there is a choice of Stirfried Wagyu Beef Cubes with Wasabi & Gravy Sauce or Deep-fried Spare Ribs with “The Amazing Mayonnaise Sauce”. The wagyu beef cubes are, as expected, tender and nicely marbled, with the wasabi sauce adding a zesty twist for our palate. The spare ribs are also excellent, and go well with the secret mayonnaise sauce. We wrapped up the meal with a generous portion of Baby Chinese Cabbage & Goji Berries in Beancurd Soup and Stewed Pearl Rice with Matsutaki Mushroom and Abalone Sauce. Clearly, a lot of effort and fine ingredients go into enriching the Japanese rice with aromatic flavours. For dessert, we had Stewed Snow Pear with Osmanthus Sweet Soup, which is light and hits the spot perfectly. Moon Yue is a hidden gem of a venue that delivers a pleasant and quality meal; the spectacular views of the city cap an outstanding dining experience. We highly recommend you give it a try.■

GāGǐNāng 飯館

The recent opening of GaGiNang, an upscale Chiu Chow restaurant located at Ocean Terminal in the giant shopping complex of Harbour City, signals the arrival of a new culinary concept – authentic Chiu Chow cuisine imbued with innovative use of new ingredients and novel cooking methods. GaGiNang, a common Chiu Chow phrase meaning ‘our own clan’, occupies a waterfront venue that offers excellent and unimpeded views of Victoria Harbour and Hong Kong Island. The restaurant’s décor, developed by famed local designer Steve Leung, is elegant and contemporary, and maximises the full effect of its large open windows. For our tasting expedition, we were treated to a generous selection of dishes from the menu, which is broad and enticing. To start, we chose Marinated Tasting Platter ($128) a staple of Chiu Chow cuisine and Ma You ($468), a specialty Chiu Chow cold dish in which the fish is steamed and chilled before serving. For soup, we had Double-boiled Fish Maw Soup with Almond Jus ($168), which is both tasty and nutritious. For main dishes we opted for Baked King Prawn with Preserved Olive ($298). Next served was Sichuan Boiled Grouper Fillet in Chili Oil ($468), a departure from Chiu Chow food but with a milder soup base that sits well with Chiu Chow style cooking. Smoked Soya Chicken in Pu-erh Tea Leaves ($288) was next and was delicious – the smoke infusion and tea leaves greatly enhancing the flavour of the chicken. For vegetables, we enjoyed the Wok-fried Romance Lettuce with Soya Bean and Chili ($178), another original dish that is refreshing and helps cleanse the palate.

We finished the meal with a trio of yummy desserts: Bailey’s Pudding on the Top with Sugar Cane ($98), Coconut Rolls Topped with Caramel Sauce ($98) and Sweetened Taro Paste with Ginkgo Nuts and Pumpkin ($108), all of which complemented a sumptuous meal. GaGiNang offers a relaxed setting where you and your guests can enjoy both excellent Chiu Chow food and mesmerising harbour views. Mr. Ming’s 名潮食館

Among the more popular regional cuisines in southern China is Chiu Chow, an area in northeast Guangdong province that borders Fujian province. Chiu Chow food is known for its marinated meats and oyster congees, among much else, and is a firm favourite among Hongkongers. While the city sports a number of upscale Chiu Chow restaurants, new additions are always welcome. Hence the recent opening of Mr. Ming’s Chinese Dining at the swanky K11 Musea Mall has been greeted with enthusiasm. Helmed by Executive Chef Hui Mei Tak, one of the most respected Chinese chefs in Asia, Mr. Ming’s offers premium Chiu Chow fare made from quality and natural ingredients.

Mr. Ming’s Chinese Dining delivers refined Chiu Chow food in a comfortable and elegant setting. For an appetising and comfortable dining experience, Mr. Ming’s is well worth your time.

The spacious venue of Mr. Ming’s is tastefully and luxuriously decorated in rich hues, fitted out with upholstered chairs and sofas and sprinkled with artworks and collection items. There is also an extra entrance directly from the Avenue of Stars along the waterfront.

For our outing, we were able to sample some of Chef Hui’s personal favourites. For dim sum, we tried Deep-fried Abalone Pastry ($148 for 2 pieces), which is a special creation by Chef Hui, and Pan-fried Chinese Chives Dumpling ($52/3 pieces), a Chiu Chow classic.

For marinated meats – a must-have in any Chiu Chow meal, we had the Chiu Chow Soyed Goose Meat Platter ($198), which is excellent. Our treat of the day was surely the Steamed Whole Crab with Pork Patty & Canopy ($680), in which a whole juicy crab was steamed atop a richly flavoured pork patty. The combined juices of this dish exquisitely infuse the plain rice. This crab-and-meat combo defines comfort food deluxe for sure.

For dessert, we had Deep-fried Taro Chips Coated with Crispy Sugar ($120), a traditional Chiu Chow dessert that is filling but not too heavy, and quite delicious.

Censers were popular in the Han dynasty. This goose-shaped censer is life-like. The back of the goose body is latticed, allowing smoke to rise from it. The censer is similar in function to the more well-known boshanlu-style censers from the Han period, but its form is very different. Originally the home of the commander-in-chief of the British forces, the museum houses a huge collection of tea ware in Hong Kong's oldest surviving colonial building. Tai Kwun

Centre for Heritage and Arts The revitalised Central Police Station compound, the largest heritage project in Hong Kong, has opened its doors to the public as Tai Kwun – Centre for Heritage and Arts. The CPS compound comprises 16 historic buildings, including three declared monuments (Central Police Station, Central Magistracy and Victoria Prison), on a 13,600-square-metre site in the heart of Central. An international-grade art gallery and an auditorium have been added to contribute to the adaptive reuse of the site. The heritage site includes new art galleries and the Parade Ground and Prison Yard. Entry is free of charge, however places are limited, especially during peak times, and visitors are encouraged to get a Tai Kwun Pass, which guarantees access. 10 Hollywood Road, Central. 11am – 11pm. http://taikwun.hk
