And there is much to do in this vibrant city. You will surely want to explore the many facets of our magnificent Victoria Harbour, arguably Hong Kong’s most iconic symbol and unquestionably one of the great harbours in the world. Our cover story on page 12 provides readers with a brief historical perspective and suggests ways to explore and enjoy this treasure. The weather is still cool enough to enjoy one of locals’ favourite comfort foods – hotpot. The range of hotpot styles available in this city is staggering. There is something about friends and family huddled over a simmering hotpot, sharing meat and vegetables together that makes for a perfect social gathering. Please check out our feature story on hotpot restaurants (page 16) and make sure you enjoy at least one hearty hotpot meal before you leave town. On the calendar, the month-long Hong Kong Arts Festival, now in its 45th year, will open in Mid-February with a broad slate of events and activities scheduled. The festival will feature music, opera, drama and dance performances. Hong Kong’s arts scene continues to improve and proliferate – be sure to catch a show or two if you can. Legendary singer Tom Jones, a 60s and 70s heartthrob with songs like Delilah, Green Green Grass of Home and It’s Not Unusual, returns to Hong Kong after an earlier cancelled performance. It promises to be a nostalgia-filled evening for Tom Jones fans of all ages. Of a different vintage, Journey, one of the most popular American rock bands of the 1970s and 80s, will grace Hong Kong for the first time ever. It’s a homecoming for lead singer Arnel Pineda, a Filipino who replaced original lead Steve Perry having plied his trade in Hong Kong’s clubs and bars for many years before being discovered by Journey in storybook fashion – via YouTube! For the sports minded, the Hong Kong Marathon 2017 takes place this month – the event has grown bigger every year and thousands are expected, including top international runners. Be a part of the crowd if you can! And finally, all the glitter and bling you can dream of will be on display at the Hong Kong International Diamond, Gem & Pearl Show, one of the jewellery industry’s main gatherings. Try your luck and maybe purchase a future heirloom for your loved one. A wide array of interesting and worthwhile events and activities awaits visitors to Hong Kong this month – only par for the course for this great city. 28 FEB HKTDC: Hong Kong International Diamond, Gem & Pearl Show Two of the jewellery industry’s leading trade fairs are set to open in Hong Kong in 4 MAR early 2017. The 4th Hong Kong International Diamond, Gem & Pearl Show will take

Shek Kip Mei 石硤尾

Hong Kong's first public housing development in Shek Kip Mei is inextricably tied to China's turbulent past and a celebration of its residents' indomitable spirit for survival! 香港首批公共房屋位於石硤尾，它的誕生與中國過去動盪的政局和石硤尾居民不屈不撓的生存意志密不可分。

e all know Hong Kong is a city of contrasts. The urban areas are a heaving mass of humanity, while in Discovery Bay life is relaxed and friendly. Spacious homes on the Peak fetch the highest prices in the world but many live in public housing at rents subsidised by the Government. After the War Hong Kong’s population ballooned as thousands fled the Civil War in China. The Hong Kong Government thought that once peace arrived most would return to their old homes. It was not to be. Although China was apparently at peace the policies of Mao and the communist party made life difficult. Millions were to die in The Great Leap Forward and The Cultural Revolution and the flow of refugees into Hong Kong continued. The increase in population created a housing problem. There weren’t enough flats in Hong Kong to accommodate everyone so vast squatter areas grew up wherever there was some vacant land. I remember them on the hillsides between Central and Pokfulam; you got a good view of them from the ferries to the outlying islands. The squatters built shacks from whatever they could find; usual timber and tar paper. They were of course highly inflammable and fires were not unknown. The Government put in some water points but the supply was never going to be enough to fight a major fire. In 1953, a fire on Christmas day in Shek Kip Mei's

shanty town destroyed 7,000 homes, leaving 53,000 people homeless. The Government knew they must provide new immigrants with permanent housing, and in 1954, 26 ‘H’ shape resettlement blocks were built at Shek Kip Mei. The space allocation was only 25 square feet per person. Known as the Mark I design, each of these housing blocks featured two wings of domestic cubicles connected by a cross bar, or bridge, for accommodating communal facilities. These blocks were called ‘H’ blocks because of their shape. The domestic cubicles were arranged back to back along the open corridors of the two wings. A family with five or more adults had to cram into a room of about 120 square feet. There was no kitchen or bathroom inside the domestic units. The residents had to use the communal sanitary and washing facilities situated at the bridge connecting the two wings, while they did their cooking and laundry in the common corridors. There could be as many as 18 people from three different families in one such flat. But because of the troubles they had all shared, the families managed to live peacefully and tolerantly together. Schools were formed on the rooftops of many blocks to provide education for the children of the estate. Due to lack of space, residents ate on the walkways of each floor, which were always festooned with washing. There was no lift so some inconsiderate neighbours

眾所周知，香港是一個精彩多樣的城市。市區總是車水馬龍、熙熙攘攘，而愉景灣卻充滿悠閒、友好的氣氛。山頂寬敞的豪宅售價冠絕全球，但同時仍有不少人因為貧困而居住在政府的公共房屋中。

國共內戰前後，數千人從中國內地逃到香港，導致戰爭結束後香港的人口迅速膨脹。當時香港政府認為只要等到國內生活恢復和平安定，多數人會回到他們的家鄉。然而事實並非如此，雖然國內已恢復和平，毛澤東和共產黨的一系列政策卻令人們的生活變得更加艱苦。數百萬人在大躍進和文化大革命中失去性命，難民持續從內地湧入香港。持續增加的人口導致住房問題的出現。香港沒有足夠的房屋容納所有人，因此一旦出現空置土地，就會出現大量寮屋。我仍記得在前往離島的渡輪上可清楚地看見中環和薄扶林之間山邊的寮屋。當時人們會利用各種材料建造房屋，常見的有木材和瀝青紙。這些材料都是高度易燃的，火災自然無可避免。雖然政府設置了一些消防栓，但其供水量遠遠不足以撲滅一場大火。1953年的聖誕節，發生在石硤尾寮屋區的一場大火摧毀了7,000間房屋，令 5萬3千人無家可歸。此次火災後，政府意識到必須為新移民提供永久性房屋。1954年，政府在石硤尾興建了26幢H型的徙置大廈，但人均居住面積僅有 25平方尺。這種大廈被稱為「第一型」徙置大廈，每幢分為兩翼，以橫欄或天橋連接，中間是公共設施。由於形狀近似字母H，這種大廈又被稱為H型大廈。每戶單位背靠背地分佈在兩翼間的走廊兩側，五人或以上的家庭擠在 120 平方尺的單位裡，單位內不設廚房和浴室，居民需使用位於兩翼間的公共衛生間和淋浴設施，並在公共走廊煮食和洗衣。在一個這樣的單位裡，可能有多達18個來自三個不同家庭的人。因為大家都面對著共同的困難，

threw rubbish from the higher floors resulting in many an accident. These first blocks had been designed and built in a great hurry and later standards were raised. The space allocation rose and in the mid 1970s the blocks were renovated and living conditions improved slightly. But there could still be two families sharing a flat, which was subdivided with a wooden partition down the centre, with a shared kitchen. By the 1980s Hong Kong’s economy was growing rapidly, and living conditions at Shek Kip Mei were better as now one family could occupy a flat. There was even an indoor toilet and makeshift shower. Typical occupants were parents with several children, the husband working as a clerk and the wife staying at home. Radio and television added light relief, and along with higher salaries, a low rent meant life was much improved. However aspirations kept rising and many young people moved out as the public housing policy changed, and they sought a better living environment. Most flats at Shek Kip Mei were then occupied by the single and the elderly, who sat and reminisced about the past.

To address the community’s increasing aspirations for better living conditions, the Housing Authority further decided in the 1990s to redevelop the old blocks and for a time before it was due to be demolished one block was opened for people to see what life was like. Old residents, busy playing mah-jongg, cast a bemused look as curious visitors peered into the open flats. A flat from the 1970s remained, belonging to Mrs Chan’s family who shared with Mr Lee’s wife and two children. In these cramped conditions, Mrs Chan made ends meet by making plastic flowers while Mrs Lee pedalled her sewing machine in the corner for a garment factory supplying overseas markets. To preserve something of the memory one block, Mei Ho House is preserved, and part of it has been turned into a museum. Four sample units will take visitors back to the 1950s and 1970s. Historical photographs will show how the flats were arranged. Most of them were 120 sq ft. Shek Kip Mei is now a poignant memory of the people who helped Hong Kong become the success it is today. ■

不同家庭之間都會盡可能和平、寬容地相處。為了給屋村的小孩提供教育，很多幢樓的居民都在樓頂開辦學校。由於空間不足，居民經常在每層樓的過道上吃飯，因此過道上總是擺滿了洗滌用品。這些大廈均沒有電梯，一些缺乏公德心的居民從高層亂拋垃圾，導致意外的發生。第一批公共房屋的設計和建造均十分匆忙，後來政府提高了標準。人均居住面積有所提高，經過七十年代的大廈翻新，居民的生活條件稍有改善。但兩個家庭共用一個單位的情況仍然存在，兩戶以木板隔開，共用一個廚房。到了八十年代，香港經濟高速增長，石硤尾居民的生活質素得到提升，每個家庭都有獨立的單位，甚至還有室內洗手間和臨時浴室。通常是父母和幾個子女一同居住，丈夫上班，妻子則留在家中。收音機和電視機的出現讓居民有了娛樂消閒的活動，人們的薪金提高了，而房租依然低廉，這意味著人們的生活質素得到了提升。然而隨著公共房屋政策的改變，很多年輕人為了追求更好的生活環境，陸續搬離了公屋。因此石硤尾的居民多數是單身一族或喜歡緬懷往事的長者們。為了滿足人們對更好的生活環境的追求，房屋署在九十年代決定對這些徙置大廈進行重建，並在拆卸之前開放其中一幢給大眾體驗昔日生活。遊客們好奇地窺探單位內部，忙著打麻將的舊街坊則露出一臉茫然的表情。其中七十年代的一個單位被保留了下來，這個單位屬於陳太一家，他們與李太和兩個小朋友一同居住。在這樣的生活環境下，陳太靠製作塑膠花維生，而李太則在角落處為一間製衣廠縫製衣服，供應給海外市場。為了保存昔日生活文化記憶，美荷樓被保留了下來，其中一部分被改建成博物館。四間樣板單位帶遊客們回到五十年代和七十年代，體驗地道草根生活。一系列充滿歷史性的相片為您展示昔日徙置大廈的單位分佈，其中大多數單位的面積都是120平方尺。對於為香港的發展傾盡心力的人來說，石硤尾已成為他們永不磨滅的記憶。■

Hong Kong’s magnificent harbour is the beating heart of the city, inextricably bound to the colony’s illustrious history, and the face of its modern identity too! 璀璨的維多利亞港與香港的殖民地歷史和如今的繁榮昌盛密不可分。

he name Hong Kong means “Fragrant Harbour” in Cantonese, a direct reference to the territory’s greatest physical asset, one of the most spectacular and important harbours in the world. While reasonable people could debate whether Victoria Harbour – its official name – was ever that fragrant, there is little doubt that the iconic harbour is what has made Hong Kong the international financial, trading, and shipping hub that it is today. Geologically, the harbour thought to have been formed from an ancient volcano is uniquely blessed with a confluence of deep water, allowing all but the largest ships in the world to pass through; numerous natural shelters within the harbour protected by narrow openings and prominent headlands; and finally the steep surrounding hills, particularly on Hong Kong Island. This makes the harbour both strategic and stunningly beautiful. Its development potential was clear to the British, who, in 1842 having won the Opium War, secured Hong Kong as a concession, and promptly established the trading port that grew over two centuries into one of the great entrepôts of the world.

These days, while the harbourfront districts of Central, Wanchai, and Tsim Sha Tsui remain the city’s most vibrant commercial centres, the waterborne traffic is a lot less intense than it once was. The bustling harbour of yore was criss-crossed by junks, sampans, ferries of all sorts (the only transportation between Kowloon and Hong Kong Island until the first cross-harbour tunnel was built in 1972), cargo barges, container ships, and passenger liners. In time, the establishment of the main container port at Kwai Chung, coupled with the removal of all the commercial docks from the harbour, and the re-routing of all large cargo ships to bypass the main channel, accompanied Hong Kong’s transformation from manufacturing hub to one of Asia’s key service centres. Perhaps this is just as well since the actual water area has shrunk significantly over the years as land has been reclaimed to meet demand from a growing population. Nevertheless, for most visitors, Victoria Harbour is the image they most identify with Hong Kong. So come explore with us the life and activity on and around the water:

The inner and outer harbour are still busy and, by any reckoning, still offer plenty to captivate both visitors and locals.

1. Star Ferry:

A trip on the world-famous ferry from Central to Tsim Sha Tsui is a must for all visitors, with the day time and evening crossings offering contrasting experiences. The seven-minute ride on boats that have been in service for decades evokes all that is grand and vital about Hong Kong.

2. Harbour cruises:

For an enchanting evening of dinner and spectacular views of the harbour, a number of boats offer dinner cruises, some with distinctive old-style rigging. The red-sail Aqualuna being a particular favourite.

3. Cruise ships:

Cruise lines operate out of the harbour, which hosts two cruise terminals, with the Kai Tak International Cruise Terminal one of the world’s largest. There are overnight cruises that depart in the evening for nearby international waters. They make an impressive sight as they depart eastward through Lei Yue Mun, the narrowest point of the harbour.

4. Ferries:

Eight ferry routes operate within the harbour area and services are vital to the outlying islands. A ferry ride to one of Hong Kong's charming islands is on most people’s to-do list. Ferries run to Macau and many port cities in China along the Pearl River, for which terminals are located mostly on the western side of the harbour.

5. Small boats:

You may still spy a small sampan drifting in the water with a lone fishermen trying to catch a fish or two, or operating an ad hoc taxi service. And on a pleasant day, the private yachts and pleasure junks are out in droves. And if you are lucky, a flotilla of sailing boats may dot the harbour on a race day, sponsored by the local yacht club, making for a most iconic sight.

Around the Harbour 維港周邊

In the last two decades, Hong Kong has engaged in an effort to refocus its harbourfront as a world-class leisure environment for locals and visitors. While it is not totally completed, you can stroll along long stretches of the harbour on nicely landscaped promenades with attractions along the way.

1. Central Harbourfront and Central Ferry Piers: The centrepiece of the harbourfront surrounded by skyscrapers and framed by the mountains of Hong Kong Island, this long promenade includes a large event space that hosts events or festivals through the year, beside the Hong Kong Observation Wheel. Also be sure to visit the Hong Kong Maritime Museum to learn more about the territory’s maritime history.

2. Tsim Sha Tsui Promenade to Hung Hom Promenade: The world famous Avenue of Stars, which starts at Tsim Sha’s Tsui’s Star Ferry, is closed for renovation till 2018. Still the initial segment of the iconic promenade, where the Clock Tower, the Cultural Centre and its open plaza, and the Space Museum are located, is still passable and definitely worth a visit. An alternative excursion offering a stunning view across the water to Hong Kong is the Tsim Sha Tsui Promenade which starts in front of The Garden of Stars on Chatham Road and from there it is but a few minutes’ walk to Hung Hom, another vibrant waterfront residential community.

3. Soho East to Quarry Bay Waterfront Promenade: For a different view of the harbour and to see how the locals enjoy it, head along to the Sai Wan Ho waterfront promenade, which starts at the Sai Wan Ho Ferry Pier. Dubbed Soho East, restaurants line the western part of the waterfront. Further along a 1.5 kilometre promenade is the haunt of locals strolling, jogging, fishing and enjoying the sea air and open space. A large fireboat, the Alexander Grantham, welcomes visitors for free. The promenade then turns into a dog run where local residents parade their pooches, especially in the early evening, when you can catch the sun setting majestically beyond the harbour’s western reaches.

Be sure to take in the spectacular sight of the harbour at night when the city is awash in light from thousands of high-rise buildings. It is truly one of the most stunning vistas in the world.

1. The Peak Probably the A1 vantage point for a night view of the harbour. Words can barely describe what your eyes will behold. Especially good after a rain shower, when the harbour lights twinkle magically.

2. Symphony of Lights: Catch the 8pm nightly spectacular sound-and-light show from either the Avenue of Stars or from any of the harbourfront areas near Central and Wanchai. It’s a 14-minute display you won’t forget!

3. Dining with a view: Nothing is more relaxing or romantic than dining with a spectacular view of the harbour. Try Nanhai No.1 on top of the iSQUARE or the Hutong on One Peking Road, both in Tsim Sha Tsui, or ToTT’s and Roof Terrace on top of The Excelsior Hotel. There are many other spots, and wherever you choose, it’s an experience not to be missed.

hile Hong Kong’s winters do not bring to mind frigid temperatures, thermal underwear and snow-clad landscapes, the occasional cold front from the North gives residents just the excuse to act “cold”. Any time the temperature dips toward the mid-teens Celsius you’ll see the locals dressed up in winter gear and heading out for warm food, with few more popular options than a hotpot dinner shared with friends or family at a favourite restaurant. Paradoxically, while hotpot clearly isn’t a native Hong Kong dish, the city is nonetheless home to a wide variety of hotpot cuisines from around the region, and could reasonably claim the title of hotpot capital of Asia, at least in terms of its diversity. Whether it’s seafood or meat, homely simple or spicy chili, the city has it all. So why not choose hotpot for at least one of your meals during your visit, and take away the inviting aroma of a hotpot as a lingering memory of Hong Kong?

The Basics: Going to a hotpot restaurant is simple enough, the city has hundreds of them from all regions of China and Asia. It’s best to go with a group: three and above allows you to try out different ingredients. Choose your base stock – typically a clear soup or a spicy soup or better yet, both – and pick a few condiment flavourings from among the soy sauces, minced ginger or garlic and chili sauce, then dip what you want to eat in a hotpot scooper and you are all set. ong Kong’s ability to attract international chefs of all stripes to set up shop in Hong Kong speaks to its reputation as Asia’s culinary capital and, in the process, enriches the city’s dining scene. That extends to successful chefs and restaurateurs from Mainland China with a flair for creating innovative and unique dining experiences. Such is the case with Howard’s Gourmet, a swanky restaurant located on the 5th floor of a prestigious office building in Central, serving innovative Cantonese cuisine and a full complement of quality wines, whiskies and Cognac. Howard Cai, the Chef-in-chief, so to speak, made his name in Guangzhou where his first restaurant venture quickly gained a reputation as one of the go-to places for the rich and famous. A chemistry graduate, Cai applied his discipline to food composition with fervour and designed many of his dishes to achieve the optimal balance in flavour and taste. The restaurant is lushly decorated in a classical French feel with embroidered upholstery and elegant tables; the place is partitioned into several private rooms which enhances its exclusivity. A fully stocked bar with Chef Cai’s own branded whiskies and vintage wines is luxuriantly decorated, adding the last piece to a classy environment. Both lunch and dinner offer set menus from the chef, for which they procure fresh items from the markets and food suppliers each day in limited quantities – so it’s best to book ahead. Our set lunch (HK$1,000 per person) started with two small radish dishes, amuse bouche Chinese style, plus a tasty welcome soup that ‘warmed up’ our appetite, we were told. Our first

appetizer was Golden Bite, a delicately deepfried piece of kau fish that practically melts in the mouth. Next is Chef Cai’s Signature Sea Cucumber which is lightly marinated, then braised and flamed before it is served. This ensures the sea cucumber tastes rich and chewy and lingers long in the mouth. Another appetizer, the Pan-fried Sausage Roll topped with Cheese, came next – the dishes are served in the order that best enhances each other’s tastes. The Chinese sausage tastes exquisite and blends surprisingly well with the cheese. We then went back to another main course, the Double-boiled Sea-Whelk Soup with Olive. The soup base is superb, its rich taste redolent of the effort and ingredients put into it. And the combination of tender sea-whelk meat and olives is imaginative and works well. We are beginning to appreciate the chef’s obsession with matching ingredients. Two more small dishes followed, the Deepfried Fish Fillet with Light Soy Sauce – a really delicious and light fried fish fillet, and Wok-fried Mustard Green with egg-white which looks and tastes healthy. We ended the meal with a most delightful Hot and Sour Noodles cooked just right that reveal a subtle uniqueness. A Pistachio Mousse, more French than Chinese, but well prepared all the same, completed our meal. It would be remiss not to mention that our meal was accompanied with several outstanding wines from Burgundy plus a trio of private-label Scotch whiskies, all of which enhanced what can only be called a memorable dining experience. ■

應有盡有。其中當然也有來自中國內地的大廚，他們對炮製創新美食和營造獨特用餐體驗充滿熱誠。以下我們介紹的好酒好蔡正是如此，這間奢華的高級餐廳位於中環一幢高級辦公樓的五樓，為食客提供新派粵菜和一系列上等紅白酒、威士忌和白蘭地。首間“好酒好蔡”是由主廚蔡昊先生在廣州開設的，聲名鵲起後立即成為城中富豪名人的聚腳點。蔡先生大學修讀化學系，他將所學知識應用於食物成分和結構的研究，並投入無盡的熱情，創作出一道道味道均衡的上等佳餚。餐廳裝潢極盡奢華，繡花裝飾和優雅的餐桌充滿古典法國風情。餐廳內設數間房間，營造出獨立、私人的氛圍。另設有氣派非凡的酒吧，擺放著蔡昊先生自家品牌的威士忌和一系列上等洋酒，更增添了一分高貴優雅。大廚會為您提前設計好午餐和晚餐套餐，然後前往菜市場或向供應商購買最新鮮的食材。為保證食材的新鮮度，購買的食材數量不多，因此請記得提前預約。我們的午餐套餐（每位HK$1000）以時令兩小碟和特色暖胃湯揭開帷幕。第一道頭盤則是一口鮮，將嫩滑的九肚魚炸至金黃色，入口即化。主角是脆皮婆參，豬婆參浸泡時間不宜過長，經過燉煮和燒，外皮香脆美味，味道豐富有嚼勁，餘香在口中縈繞。這裡的上菜順序是廚師根據菜式口味精心設計的，我們的下一道菜是另一道頭盤—芝士黑臘腸，出乎我們意料之外，臘腸的味道和芝士竟配合得恰到好處。接下來的青欖燉螺頭，湯底味道一流，可看出廚師精心挑選了上等的食材，花費了不少工夫才能熬製出如此濃郁的味道。選擇螺頭和青欖已彰顯出廚師搭配食材的功力。接下來是兩道小菜。頭抽浸海上鮮的魚肉稍稍煎香，嫩滑美味。蛋白炒芥菜無論是賣相或味道都讓人感覺清新健康。主食酸辣麵的麵條煮得剛剛好，味道妙不可言。雖然是在中餐廳，但最後的開心果慕絲更像是一道法式甜品，為我們這頓午餐畫上圓滿的句號。餐廳還為我們精心挑選了勃艮第葡萄酒和自家品牌的蘇格蘭威士忌，美酒配佳餚，又是一次難忘的用餐體驗。■

he latest hot addition to Hong Kong’s dining scene is straight out of panda country, the trendy Deng G Classic Sichuan and Baijiu Bar, serving authentic dishes from Chengdu, capital of Sichuan province, and a full complement of cocktails concocted from various Chinese liquors, or “Bai Jiu”. On a mission to sate our taste buds with authentic spicy food from Sichuan, Deng G is just the place to be. Chef Deng, considered one of the most talented Sichuan chefs in China and owner of a highly successful Sichuan restaurant in Shanghai, is the mastermind behind Deng G, seeking to bring authentic Sichuan dishes and cooking styles to discerning foodies in Hong Kong. The restaurants adopt a contemporary, bamboo theme throughout in recognition of the panda and its natural habitat. The geometric screen, discreet warm lighting and leather furniture make for a clean, comfortable setting to enjoy a quality meal. We quickly got down to business with three familiar and popular starters: Sliced Pork with Garlic and Chili ($75), Ox Tongue and Tripe Medley ($75), one of our favourite spicy dishes, and Roasted Egg Plant with Red Chili ($60). All the dishes are spicy but not overly so and are subtly different due to the types of chili peppers and other condiments used. It’s certainly a stimulating way to get the meal started.

The Wu La Spicy Mandarin Fish ($388), one of Chef Deng’s signature dishes, is next as the first entrée, and it fully deserves its accolades. Wu La is not like Ma La but has sort of a sizzled chili flavour as the chili peppers and peppercorns are fried in intense heat to bring out the aroma and taste. The fish pieces are super-tender but firm in texture perfect for the hot, spicy soup base. The next dish, Braised Beef Rib with Mild Red Oil ($398) is another signature dish that we have been eagerly anticipating. The morsels from the braised beef ribs fall easily off the bones and taste so meltingly tender, but it is the red oil sauce that gives that distinctive flavour. Two more dishes followed: La Zui Chicken ($188) which is nice-sized chicken chunks deep fried in red chili peppers to give that crispy yet tender taste, and Dry Pot Stirred-fried Sliced Cabbage ($108) in which a special paste helps brings out the sweetness in the cabbage. We conclude our dinner with Fermented Glutinous Rice in Ice Powder ($30) which, as expected, provides a welcome and cooling relief on our chili spicy palates. To mine all of China’s best cuisines and dishes could take a lifetime. Thankfully, Hong Kong’s fortunate ability to attract the best China has to offer allows us to just stay put in the city and partake in superb dining adventures, among which Deng G is a shining example. ■

食客盡享不同味覺體驗。本期《東方之珠》的任務是尋找正宗川式麻辣美饌，而鄧記正是我們的首選。鄧華東師傅被譽為中國最具代表性的川菜名廚，他在上海開設了一間餐廳，生意做得有聲有色。這次鄧師傅和他的團隊將傳統川菜的味道和烹飪手法帶到香港，務求讓挑剔的食客們大飽口福。鄧記的室內設計靈感源自四川成都的國寶熊貓，因此餐廳以竹林為主題。幾何圖案設計、溫暖而精緻的燈飾及皮革傢俬營造出清新自然的美感，讓食客可舒適地享用美食。一坐下我們就迫不及待地開始品嚐美食。首先是三道熟悉而受歡迎的前菜：名廚蒜泥白肉 ($75)、我們最喜歡的夫妻肺片 ($75) 以及燒椒茄子 ($60) 三道前菜辣味適中，由於用的辣椒和調味料不同，各有風味，令我們胃口大開。下一道糊辣桂魚 ($388) 是鄧師傅的招牌菜，果然名不虛傳。糊辣和麻辣的不同之處在於糊辣是辣椒和花椒經過高油溫的激發而散發出來的香氣。桂魚肉嫩滑而結實，配上熱騰騰的糊辣湯底，令人回味無窮。香烤牛肋骨 ($398) 是鄧記的另一道招牌菜。牛肉烤至可輕易從骨頭上分離，口感細嫩，紅油更為牛肋骨增添了獨特的香味。接下來的歌樂山辣子雞 ($188) 分量控制得剛剛好，用紅辣椒爆炒過的雞肉外皮香脆，肉質依然嫩滑。手撕包菜 ($108) 使用的特製醬汁將包菜的甜味帶出。吃過那麼多麻辣的菜式後，我們以醪糟水果冰粉 ($30) 作結。冰涼微甜的冰粉為我們帶來清新舒適的口感。中式美食多不勝數，要逐一發掘並非易事。幸好香港良好的餐飲環境不斷吸引許多內地餐飲人才來港創業或投資，讓我們足不出戶即可體驗博大精深的中華飲食文化。■

The Drunken Pot 酒鍋 The Drunken Pot is a fashionable hotpot restaurant serving quality meats and seafood amidst modern décor, comfortable setting and a panorama view of the harbour and the city. Its copper hotpot has multiple compartments that can accommodate as many as five soup base flavours: Tomato, Sichuan Style Numbingly Spicy Soup, Bak Ku Teh Pot, Satay, and Fish Maw and Chicken Pot. The Ultimate Drunken Pot ($328) includes the four soup bases plus a separate Flame-stirred Lobster in Black Truffle and Cheese Pot, all of which are worth trying. The restaurant offers an extensive menu of both popular and innovative ingredients for the hotpot. The Hanging Premium Beef Sliced Angus ($238 large or $188 small) is a favourite, as is the Koroba Pork Slices ($158), which cooks surprisingly quickly. Seafood is always prized; there is a wide range of fresh seafood including oysters and giant clams to choose from. Other items of note include the Six-colour Soup Dumplings ($78), the Handmade Seven-colour Cuttlefish Balls ($88), and the Vegetable Platter ($58). The Drunken Pot is promoting two inauspicious items during the Chinese New Year until 13 February: Lucky Pockets ($98) and Golden Ingots ($88). Andy's Hot Pot 十二味熱辣火鍋莊 Andy’s Hot Pot is a newly opened restaurant that specialises in Chongqing hotpot and offers its own secret “12 flavour” spicy ingredients for its hotpot soup base. The restaurant is decked out in a panda theme in recognition of its Sichuan origins, and the aprons offered as protection from spillage are designed to mimic the royal attire of a king or queen. A digestive tea is served first to prepare the body for the food to come. For the soup base, most customers choose the signature Chongqing Numbing Spicy Pot with Beef Tallow, balanced by the Pig Boned Soup Pot ($128). The beef butter together with the chili and pepper ingredients emanate a most inviting aroma. We chose a combination of meats and fresh seafood including Beef Tripes ($118), Omasum ($48), Beef Slices ($268 large and $188 small), and Ox Tongue Slices ($88). The meats all cook quickly in the hotpot and are best eaten piping hot. From the sea we chose: Shrimp ($78), U.S. Oysters ($128) and Crisp Grass Carp Slices ($68), which were all very fresh and also easily cooked. For vegetable sides we opted for Fried Beancurd Sticks Roll ($38), Chinese Lettuce ($28), Frozen Beancurd ($28), and Oyster Mushroom ($32), all of which soak up the flavour of the soup and the meat ingredients. Cold beer is a must to soothe the burning palate, and the sour plum sauce has a similar role. For the ultimate Chongqing experience on a winter’s day, Andy’s Hot Pot will not disappoint.

The Los Angeles-based artist divides her practice between studios in California and in KwaZulu-Natal in South Africa, where she established a studio with a team of 30 Zulu artisans in 2005. Octopus Card 八達通卡 Stored-value cards for travel on the MTR, buses, minibuses, trams, and ferries. Available at service counters at the Airport Express and MTR stations. For over a century, trams on Hong Kong Island have been an inexpensive mode of transportation. You can ride the full length of the 15-kilometre track at $2.30 per adult, $1.20 per child and $1.10 for a senior. GENERAL MANAGER Michel Cottray, General Manager at The Holiday Inn Golden Mile Hong Kong, shares with us his 30-plus years in the hospitality industry the world over. 香港金域假日酒店總經理高君浩曾在世界各地的酒店工作逾30年，我們很高興能和他深入交談。 I grew up in Paris. My father owned a delicatessen selling fine foods. I was asked to help out on weekends and I opted to work at the front counter selling and cashiering, basically interacting with customers which was something I really enjoyed and still do. My father then encouraged me to go to hotel school in Paris to further my interest in this area. The very first hotel I worked at was actually a Holiday Inn, for one year. Subsequently I joined ITT Sheraton, the predecessor of Starwood, the group I stayed with for most of my career. I've worked in hotels all over the world. I met my wife while working in Germany; went to Phuket before it became a well-known vacation haven; and spent quite a few years in Australia, then Saudi Arabia, Bali, Frankfurt, Monaco, Greece and finally Paris. You can say I’ve seen it all. I am very happy to be in Hong Kong both for the dynamism of the city and because here, the personal touch still matters. I can go to one of our restaurants and talk to customers and they will acknowledge and respond. In fact to me, being connecting to people and so making a contribution to the success of the hotel is something I really enjoy as part of my job. In the same vein, I think the key to being a good general manager is to keep your feet to the floor, so to speak. The hospitality business is all about people and being able to connect with them and serve their needs. I am very proud of the Holiday Inn Golden Mile. This is one of Hong Kong’s iconic hotels, with its illustrious history and tradition. Its location in the heart of Tsim Sha Tsui is simply A plus. Our rooms are big by Hong Kong standards and in this city, space is luxury. So this is unlike any Holiday Inn in the world: we are in effect a four-star hotel with the full range of services that you’d expect of one. Our hotel is going through an extensive renovation programme which will make the place more modern and up-to-date. Our lobby has been extensively refurbished with lighter colours and is less cluttered; our new pods for the reception helps to break down the barrier between our staff and the guests. While I am new to Hong Kong, I really appreciate the diversity and the contrast the city offers between modern and old. The Star Ferry ride, for example, which lasts all of seven minutes in a boat used for decades, sort of disconnects you from the present, at least during that moment. The same goes for riding the tram. I enjoy the Dragon’s Back hike which is truly scenic and spectacular. I also enjoy trying out new restaurants and new cuisines – there are so many of them. I am really looking forward to discovering more about Hong Kong. ■
