Given Hong Kong’s high population density, there is no better way to explore its rich heritage and urban history than walking many of the city’s neighbourhoods. And the May weather is still mild enough to explore the city on foot. As the heart of the British colonial development of Hong Kong, the historical areas of Central and adjacent Sheung Wan offer the highest concentration of heritage and cultural landmarks. This area, now called Old Town Central, also encompasses the city’s most famous dining and nightlife districts. The result is one of the world’s most fascinating cultural destinations and a microcosm of Hong Kong where east truly meets west. Please see our cover story on page 10 for recommended walking tours through the enchanting streets of Old Town Central. We promise you will linger and then come back for more. We never tire of promoting Hong Kong’s culinary richness. It is said food culture is in Hong Kong people’s DNA and the locals here dine out perhaps more frequently than anywhere else in the world. As such, the food culture we have developed is open and exploratory, with locals always eager to try out new dishes and cuisines. Not surprisingly then, Hong Kong boasts one of the most diverse culinary scenes in the world, where quality restaurants representing all cuisines abound. Our feature story on page 16 showcases 20 signature dishes comprising local, regional Chinese, Asian and various international cuisines. Be sure to venture out and sample as many cuisines as you can. On a cultural bent, Le French May, a French arts festival, is an ever-important event in the city’s cultural calendar. Now in its 25th edition, Le French May Silver Jubilee will be celebrated with an unprecedented series of programmes, ranging from hip hop dance to jazz music, street art to antiques, cinema to design, and gastronomy. For Chinese music aficionados, the famed Chinese National Traditional Orchestra, one of China’s largest, returns to Hong Kong to perform traditional Chinese folk music and a variety of music works by Chinese composers. For music performance of a different genre, West Side Story, that timeless Broadway musical, which also earned a Best Picture Oscar in its movie adaptation, will visit Hong Kong in mid-May. The Shakespearean inspired musical tale showcases beloved songs like Maira, Tonight, America. May is a wonderful month to visit our city. You can walk to your heart’s delight, exploring Hong Kong’s past, enjoy some of the best cuisines in the world, and take in a wide variety of cultural events and performances. Concert by China National Traditional Orchestra

Famed as one of the largest Chinese orchestras in China, the China National Traditional Orchestra has toured more than 30 countries across the globe. Hong Kong Philharmonic Orchestra: Tango With Piazzolla

The HK Phil is joined by tango dancers moving to Astor Piazzolla’s sultry ‘new tango’. This show is a stunning blend of Chinese music, videography, dance, live calligraphy, Chinese poetry, recitation and installation art with Chinese traditional theatre, Western opera and modern cinematography. The Hong Kong Ballet: Carmen and More

Hong Kong Ballet offers audiences a variety of oneact ballets to showcase their dancers’ talents. Early China traders arriving at the Portuguese enclave of Macau were greeted by the splendid view of the Praya Grande Bay lined with the houses of the rich and powerful. It was one of the most painted views of China. 早期和中國進行貿易的商人到達葡萄牙殖民地澳門時，都被南灣的壯麗景色所折服，加上富人和權貴的房屋點綴，這是當時最常出現在中國風景畫裡的景象之一。

acau was allocated to the Portuguese in the sixteenth century as a place where traders doing business with China could have a secure place to live. This suited the Chinese who did not want foreigners to be in close contact with their own subjects who might be contaminated by western ideas. The Portuguese tried hard to keep a monopoly of the China trade and made it difficult for other nations to share in it. This gradually changed as others -the Dutch and British in particularbecame too powerful to resist. Indeed the British were an ally of Portugal and had helped to protect Portuguese ships from the Dutch. The Chinese allowed foreigners to set up places of business in Canton (Guangzhou) but insisted that they only stayed there during the trading season. Thus there was a demand for somewhere to go in the off season and Macau was the only practical option. Views of Macau became popular in the eighteenth century as Chinese artists began to copy the style of western artists who had started to visit. In an age before photography,

a painting was the only visual representation you could show family and friends back home. The town in Macau was a mess of narrow streets crisscrossing the area between the Inner Harbour and the Praya Grande Bay. The one delightful exception was the Avenida da Praia Grande; the road that ran along the shore. It was lined with grand buildings and living there was the aim of everyone although only the chosen few could do so. A t t h e c e n t re o f t h e b a y w a s t h e Governor’s residence with the small S. Pedro fort in front of it jutting out into the bay. Initially Governors had resided at the Monte Fort, but as the threat of invasion declined a more salubrious site was sought. In 1769 a new building was erected on the Praya Grande. It is easily identified on early pictures as it had on the south side a large, elaborate gateway. The façade of the building facing the Praia Grande was itself quite plain. In 1859 work began on a new building on the site. This was to serve as a residence for the Governor and also as government offices. The result is a building with an impressive façade. The façade was altered in 1872 by the addition of an arched porte cochere, which extended the full height of the building. The Governor, in around 1875, moved his residence to the Governor’s Palace further south on the Ave. da Praia Grande. The building then became purely Government offices. Rebuilt in 1951, it provided space for the main court as well as other Government departments. After the handover of Macau to China, the only department remaining was the

The building that the Governor moved to was itself rather grand and was afterwards referred to as the Governor’s Palace. It had been built by Baron de Cercal, otherwise known as Alexandrino Antonio de Mello, for his own use. However his fortunes faded and in 1881 he sold the property to the government for 20,080 patacas. The property continued to be used as the official residence of the Governor until 1926 when it was moved to Santa Sancha Palace, which had coincidently been built by Baron de Cercal’s father. When the Gover nor moved the building became the seat of the Legislative Assembly and of the Governor’s Consultative Council. It was further renovated and expanded by the SAR government. Today it is the Macau Government Headquarters. As mentioned, it was further south on the Praya Grande and it was close to here that there was a residence used by a firm of American traders. And now to the House. It is new and in fine order in every respect. It is situated on the “Praya Grande”, with a pretty garden in front, a yard at the sides and in the rear, with fine trees, and the whole surrounded by a high wall – over which creep in many places luxuriant vines. To give you some idea of its size, the house is 120 feet front, with a veranda 18 feet wide, supported by massive columns, running the whole length, it extends back 70 feet, exclusive of the veranda.

Clearly living space was not cramped and these and other grand structures combined to make the view of the Praya Grande a delight that could impress the folks back home. Sadly reclamation has destroyed the Bay but there remain many old buildings to remind us of the past. ■

Hong Kong’s colonial history started when the British raised the Union Jack in Hong Kong in 1841 at what is now Possession Street in Sheung Wan. Subsequently, in the 1840s, immigrants from China began to settle, first in the Tai Ping Shan area, as the city’s development began in earnest. Start at Possession Street and meander up to Tai Ping Shan Street to get a sense of what the earlier streets were like. Visit Man Mo Temple nearby, one of Hong Kong’s largest and oldest temples located right on Hollywood Road, or the Hong Kong Museum of Medical Science, the city’s first bacteriology laboratory, or the history-laden stone-slabbed steps of Pottinger Street built in those earliest years.

e French May, the ever-popular French culture festival held in Hong Kong since 1993, continues to reflect the homeland of the city’s burgeoning French expatriate population and its fondness for all things French. We celebrate the rich culture of France with a visit to an elegant French restaurant serving authentic Gallic cuisine with passion that ardent Francophiles will appreciate. ÉPURE, a one–Michelin starred French restaurant located on the fourth floor of the giant Harbour City shopping mall in Tsim Sha Tsui, is our choice for this gastronomic treat. The spacious restaurant – which includes an outdoor terrace café overlooking the harbour, a French bakery, DALLOYAU, and a luxuriantly and elegantly decorated fine dining section – is all you would expect of a top-end French establishment. Everything from the wine cellar, lighting, furnishings, table and silverware have been lovingly thought through to provide a comfortable and exclusive ambience for a special dining experience. Under Executive Chef Nicolas Boutin, who honed his culinary prowess in several Michelinstarred restaurants in France, ÉPURE emphasizes the use of healthy, seasonal French ingredients infused with contemporary cooking style; both are amply demonstrated in our delightful dinner. After some tasty canapes and amuse bouches, our Spring Tasting Dinner began with two appetisers for sharing: Alexandre Polmard Beef Carpaccio, Palm Heart, Watercress, Sorrel and Pika Gorri; and Vaucluse Asparagus, Grilled Cuttlefish, Black Morel Vinaigrette. We upgraded our beef carpaccio with a helping of caviar, a smart choice. The fresh and light ingredients of both dishes allow the flavour of the meat and cuttlefish to come through cleanly, not always an easy feat.

The middle course was John Dory, Noir de Bigorre “Ventreche”, Seaweed Butter and Plankton Powder. The fish tasted tender but kept its texture firm, and the sauce provided just enough flavour to accent the fish’s natural taste. We were beginning to get the hang of the chef’s cooking philosophy. The two main courses to choose from are Wagyu Beef, Rainbow Swiss Chard, ‘Grenaille’ Potato with Ravigote Jus; and Sucking Pig, Poached & Roast, Pointed Cabbage and Espelette Chili. We consumed both with gusto. While each meat offers its own distinctive flavour, both are tender and bite easily, a real treat for our palates. We finished the meal with a plateful of excellent seasonal artisan cheeses from ÉPURE’s own cellar with homemade preserves, and poached rhubarb, ‘petit pois’, lemon & olive oil mousseline, basil sorbet. We are partial to the more strongly flavoured cheeses and the ÉPURE selection more than matched our craving. The light, sweet dessert rounded out this exquisite dining experience. It would be remiss not to mention the excellent French wines that are paired with the meal. It is clear from a cursory review of the impressive wine list that just as much care goes into the selections as everything else. ÉPURE’s commitment to the highest quality of French cuisine is plainly evident. If you want to enjoy a memorable dining experience for a special occasion, ÉPURE is absolutely a worthy choice. The 4-course and 6-course dinners are $1,088 and $1,388 per person respectively, with extra charge for selected dishes. 3 or 4-glass wine pairing are $438 and $538 respectively. ■

ong Kong’s reputation as a gourmet paradise for seafood is rooted in the traditions of Cantonese cooking. But the city’s international outlook has long attracted purveyors of other seafood cuisines to showcase their culinary prowess here too. Having the right ingredients to hand is at least half of the battle in creating great dishes, and Hong Kong's culinary richness is supported by an abundant and varied supply of fresh seafood from waters near and far. The Bostonian Seafood and Grill, located at the stately Langham, Hong Kong hotel, is a fine example of seafood cuisine served international style. Amid décor of a shipyard-inspired theme that blends a reclaimed style with an industrial but friendly vibe, the Bostonian seems just the place for friends or visitors to gather for drinks and to share an appetising meal Under Executive Chef Pedro Samper, the Bostonian serves innovative fresh seafood and meat dishes, many as sharing plates. Our lunch started with a bang: Two oysters dishes in two distinctive and innovative styles. The Bruce Lee ($258), which is tempura fried hot oysters with XO sauce, chili and spring onion, certainly grabbed our attention, with the warm oysters lightly battered and tender tasting. The Soba Oyster ($258), topped with Soba noodles, “mentsuyu” sauce, wasabi and pea dressing offers a quite different palate sensation, somewhat akin to eating raw oysters but seasoned to surprise, and nicely complemented by the soba noodle. In a change of pace we turned to the Black Angus Tenderloin Beef Tartare ($278), with sour creamy egg yolk, shallot crisps and mustard leaves. The generous portion is perfect for sharing, and the

beef tartare texture and flavour is nicely enhanced by the seasonings and condiments. Returning to seafood, our next two entrees were big hits at our table. The Tiger Balm Mussels ($248), with spicy coconut milk broth, kaffir lime, peanuts and coriander, served with housemade fries is yum-yum delicious. The concoction of ingredients that make up the sauce tastes pleasantly tangy and zesty, and the mussels are tender to the bite. This sharing plate disappeared in a hurry. The other hit was the Golden Seafood Pot Pie ($358) which is puff pastry oven-crusted pot pie with turbot, oysters, ginger, fennel, chestnut, Thai eggplant and lemon grass. We were blown away by both the taste and the look of it. It’s a big pie, for sure, and the shiny golden baked skin is most inviting. We enjoyed the mix of oysters and turbot in the hot broth, with the pie crust adding just the right texture. We were approaching our limit, but the d e s s e r t s p ro v e d i r re s i s t i b l e , a n d v i s u a l l y spectacular. The Naranja De Valencia ($108) – orange confit, light citrus mousse, orange blossom and white chocolate – is soothingly refreshing. And the Chocolate Galaxy ($128), which is Li Chu 64-percent Vietnamese chocolate, sesame praline, black sesame ice cream and sake, is a spectacle to behold, as the we watched the ice-cream melt gracefully into bite-sized pieces of chocolate and ice cream chunks as the sake is poured over it – a fitting end to an enjoyable lunch. In a city where fresh and tasty seafood is common, it takes something special to win attention, and the Bostonian stood up to that challenge and delivered. You’ll need to go a long way to experience seafood and more presented in such a creative and tasty manner! ■

Hong Kong Tsukiji– Yamataka Seafood Market, located at the relocated Wanchai Ferry Pier by the Victoria Harbour is an impressive, 11,000 sq. ft. seafood market destined to be a culinary landmark. In addition to serving fresh seafood and sashimi from Tsukiji, Tokyo’s famous fish market, Yamataka also imports seasonal ingredients from around the world to provide a unique offering of dishes and merchandise. Yamataka offers several dining sections: the standing sushi and seafood bar, which comes with a stunning harbour view, offers various sushi sets (from $98) and the Seafood Platter ($398) with fresh oysters, jade whelk and abalone, and whole lobster which comes with extra charge. The Donburi (Sashimi Bowl Rice) and Hamayaki (barbecue) area offers delicious sashimi bowl rice (from $98) plus Sea Urchin Donburi ($298), and the Delicate Yamataka Donburi ($188), served covered with a crab claw, lobster meat, salmon roe and various cubed sashimi. Finally, Lobster Roll, Japan’s hottest street food, is also available at a third area operated by Ms Icy Wong and her team. The Whole Lobster Roll ($168) is a must try, among others.

Sushi Man 鮨文 Sushi Man, which garnered wide praise when it first opened in 2015 in Yuen Long, in the New Territories, has just launched its second outlet in the heart of Whampoa Garden, a large urban complex in Kowloon. Known for serving sophisticated Japanese Cuisine to discerning diners, Sushi Man prepares each dish meticulously, adhering to traditional Japanese techniques and using Japanese sourced utensils. Sushi Man specialises in dinners or lunches omakase style, with dinners ranging from $1,000 to $2,000 per person and $300 to $1,200 for lunch. Under Executive Chef Cupid Leung, only the freshest and finest seafood is served. Our Omakase dinner ($1,500) starts with Foie Gras Chanwanmushi (Steamed Egg), followed by four kinds of sashimi, each lovingly sliced with expert care by the chef. Next is a sushi fest with seven kinds of sushi, each with a different flavour and seasoning, but the meat quality is uniformly superb. The Toro (Fatty Tuna) Sushi and Botan Shrimp Sushi with Crab Roe are particularly noteworthy. The coup de grace is Cup of Sea Urchin, a large portion of sea urchin pieces that is richly filling. A tuna hand roll, a delicious fish soup broth cooked from the fish used for the day, and fruits, complete our delicious meal. Watching the sushi chef plying his trade so artistically only adds to the enjoyment, and we certainly trust his choice of the best seafood served to his loyal patrons.

For over a century, trams on Hong Kong Island have been an inexpensive mode of transportation. I grew up in Austria’s countryside where members of my family had owned a hotel for 300 years. The hotel was located in a popular holiday getaway destination during the AustroHungarian Empire. I enrolled in a four-year apprenticeship programme at one of the best hotels in Vienna so I could take over managing my parents’ hotel, as was their wish. My first duty was delivering newspapers to the general manager, whose role awed me and inspired me to set the goal to one day be the GM at a 5-star hotel. So when I graduated I sold the family hotel but stayed in the hotel business. I enjoy working in Hong Kong because you cannot find any better people to work with – they are efficient, friendly and helpful. My favourite part of the job is meeting many different people and experience interesting and sometimes challenging situations. A person whom I respect highly told me that a hotel general manager requires only two traits: take good care of the guests and the colleagues, everything else will happen automatically. I take that to heart and regard that as my motto. Our hotel is renowned for its high quality of services and facilities catering to a variety of market segments including leisure, business and conference. We have eight excellent restaurants and bars, including the two Michelin-starred Summer Palace and the highly acclaimed Lobster Bar. The ambience of our hotel is uniquely warm and yet elegant. And of course, our location in Admiralty, a key transportation hub and just minutes away from Central, is highly convenient. Our biggest advantage though is our people, with every one of our colleagues committed to providing the best service and going the extra mile with one mission in mind – to demonstrate Shangri-La hospitality straight from the heart. Hong Kong has so much to offer that we might take it for granted including the safety which is an important consideration in choosing a travel destination. Our city is incredibly safe in so many aspects. We are famous not only for its shopping, but also our stunning vistas and outdoors: our magnificent Victoria Harbour, the Peak, Big Buddha, our outlying islands and beautiful temples. Our night life in places like Lan Kwai Fong and Soho is incredibly vibrant. There are just so many things to see and do here! I find the beautiful scenery of Hong Kong’s hiking trails fascinating. Most people don’t realize Hong Kong is two-thirds green. I hike regularly – I walk from home to the office once a week; I just completed a 50 km Green Power walk and plan to participate in the 100 km Trailwalker this year. My recommendations for visitors: Enjoy our food paradise: Cantonese cuisine is a must, including the dim sum. Other Asian cuisines are well represented here. Café Malacca at the Hotel Jen has the best authentic Malaysian food. I strongly recommend going on a hiking trail. The Dragon’s Back is famous but there are many other beautiful trails of various difficulties for visitors to try. And shopping, of course, from bargain buys to high-end shopping malls like Pacific Place. Take home with you some of the popular souvenirs including Chinese tea, Chinese art, name seals, Hong Kong snacks and custom-tailored clothing. ■

我在奧地利的鄉村地區長大，家族在那里经營一间有300 年歷史的酒店。酒店位於奧匈帝國時代的一個熱門假期旅遊勝地。我在維也納最好的酒店之一參加了一個實習項目，為期四年，希望能按照父母的意願接管他們的生意。我的第一項職責是為總經理送報紙，當時我的夢想就是成為一間五星級酒店的總經理。畢業後我將家族酒店出售，但仍留在酒店業工作。我很喜歡在香港工作，因為和這裡的同事合作十分愉快。他們的辦事效率很高，態度友好，總是能及時提供有用的幫助。對於這份工作，我最喜歡的是可以結識不同的人，經常能遇到有趣的事，有時還會面對充滿挑戰性的任務。一位我很尊敬的人告訴我要成為一名出色的酒店總經理只需要做到兩點：給予顧客和同事足夠的關心和照顧，其他的事情自然而然就會發生。我一直謹記於心並將它作為我的座右銘。我們的酒店以高質素的服務和設施聞名，適合休閒、商務和會議等各種不同市場。我們有八間出色的餐廳和酒吧，包括米其林二星餐廳夏宮和有名的龍蝦吧餐廳。酒店為顧客提供溫暖、雅緻的氛圍，這是我們的獨特之處。酒店位於交通中心點金鐘，距離中環只有數分鐘路程，交通十分便利。我們最大的優勢是酒店的員工，每一位同事都致力於為顧客提供最好的服務，我們都秉持同一個信念：用心對待每位顧客，讓他們感受到香格里拉大酒店的待客之道。香港是一個精彩無限的城市，我們可能會認為這裡的安全是理所當然的，其實安全性是選擇旅遊目的地重要因素之一。香港的安全性體現在多個方面，除了擁有購物天堂的美譽之外，香港還擁有醉人的景色和豐富的戶外活動：維多利亞港、太平山頂、天壇大佛、離島和美麗的廟宇，應有盡有。蘭桂坊和SoHo荷南美食區讓遊客體驗精彩的夜生活。在香港，精彩永不停歇！香港的遠足徑景色均十分漂亮。很多人不知道香港有三分之二的面積是綠地。我每週都會選一天從家步行至辦公室。我剛剛完成了一次50公里的綠色力量環島行，計劃今年參加100公里的毅行者活動。我給遊客們的建議是好好享受這裡豐富多樣的美食。廣東菜是必試的，點心是不錯的選擇。其他亞洲美食也可在這裡找到，今旅酒店的馬來一菜館為食客提供最正宗的馬來西亞美食。我強烈推薦遊客們來香港遠足，龍脊的確十分著名，但除此之外還有許多美麗的遠足徑，適合不同程度的遊客。訪港行程當然少不了購物，您可以在市集討價還價，也可以在太古廣場等高級購物商場盡情血拼。不妨買一些熱門紀念品，例如中國茶葉、中式藝術品、印章、港式小吃和度身定做的衣服。■
