e welcome you to Hong Kong and to CityLife, the monthly magazine for visitors to Asia’s World City. In the hot August weather, locals and visitors are once again fanning out across the beaches of Hong Kong in search of sunshine and cool respite. For newcomers to Hong Kong it may come as a surprise that Hong Kong’s coastline is dotted with over 100 beaches, about 40 of them tended to and managed by the Government – with lifeguards and shower facilities as a minimum. Some of the most beautiful though are unattended, attracting the intrepid from far and wide. Whether it’s long white sandy expanses with crystal clear waters or those with surfable waves, and whether it’s popular beach hotspots or secluded hidden gems, you can find them all in Hong Kong. Please check out our cover story on page 10 for the rundown of Hong Kong beaches. Summer activities in Hong Kong continue with a slate of Summer Fun events, the highlight of which this month is the ICBC e-sports and Music Festival Hong Kong. This is the pinnacle event for gaming aficionados as they watch current and past gaming professional compete in various tournaments, plus try their own luck playing against others. The festivities culminate with a rip-roaring music event on site, as well as the accompanied Hong Kong Computer and Communications Festival 2018, showcasing the latest gadgets and electronic products. The other major summer event is Summerfest, when the Central Harbourfront turns into a summer carnival with playgrounds, art installations and games as well as a series of summer activities organised by local civic groups. It guarantees barrels of fun, and best of all it’s free admission. Perhaps you’re on the lookout for Hong Kong souvenirs for family and friends that signal your sophisticated eye without burning a big hole in your pocket? As Hong Kong is a shopping mecca, you can literally shop till you drop. When it comes to souvenirs, there are just so many things to buy and so many places to choose from. This drama tells the legendary life story of a merchant of the late Qing dynasty and his remarkable tactics in the complex power struggles of his day. Bob Dylan and his Band Live in Hong Kong 2018

Bob Dylan, the legendary American singer and cultural icon, returns to Hong Kong for his first performance here since being awarded the Nobel Prize in Literature. It has been seven years since Bob Dylan last played in Hong Kong, and his stop here on the Asian leg of his ‘Never-ending Tour’ is eagerly awaited. The live performance is sure to be a “must-see” evening for the minstrel’s many fans.

A TRADITIONAL HAKKA WEDDING 傳統客家婚禮

hen my wife, Valery, was researching costume in the rural areas she met Mrs Ho and her daughter Ling, who ran a haberdashery shop in Sai Kung market. When they learnt of our interest in Chinese customs and culture, they invited us to attend the wedding of Mrs Ho's nephew, which was to take place (in May 1979) in their village, Ko Tong Ha Yeung, in Sai Kung. We arrived about 10:30am to find a feast already in progress. In front of a row of five Hakka houses, under a canvas awning, wooden tables with benches filled the area normally used for drying rice. Relatives of the bride and groom, and villagers from the surrounding seven villages were eating a hearty meal of beef, pork, tripe and rice, with soft drinks, to the accompaniment of "Grease" played loudly on a cassette player. We had taken care in our choice of clothes, knowing that certain colours are considered unlucky, such as white (the colour of mourning) and blue. The younger generation, however, had not taken notice of this custom as most were dressed in blue jeans, white shirts or T-shirts. Middle-aged women were wearing their best clothes: Mrs Ho had on a brown silk jacquard sam fu (traditional jacket and trousers) and a set of jade earrings, ring and bracelets. The groom's

mother had an artificial red rose and streamers attached to her black sam fu, and the groom’s grandmother wore a purple/black sam fu saved for special occasions like this, with a red badge and streamers. The groom, in his mid-thirties, had lived in Blackpool, England for many years, running the "New World Takeaway" fish and chip shop. He returned six months before with the desire to get married. Three months later a matchmaker had found a suitable mate – a “country girl” from Tai Po. Horoscopes and other credentials were exchanged and the marriage was agreed on. After negotiations between the matchmaker and the families, the dowry was presented to the bride's family by the groom's. The marriage was already registered. In the bygone days, the bride would arrive in a red sedan chair, her face covered with a red veil. The groom would tap on the door of the chair with his fan for her to get out, then raise the veil and see his new bride for the first time. Traditions change and this groom had collected his future wife in a car, leaving his village to the accompaniment of firecrackers. At 11:45am the car, decorated with the customary rosettes, a doll on the bonnet and streamers, returned. The bridegroom, in a tuxedo and white shirt with red-edged

ruffles down the front, alighted first, followed by relatives, and then the bride. She wore the traditional red hung kwa – a matching jacket and skirt made of satin and elaborately sequined and embroidered with dragon and phoenix, hired from a shop in Tai Po. On her feet were red wood-soled clogs, in her hair red ornaments, and she carried a pink feather fan. Before stepping out of the car, two old women met her, one carrying a pair of black fu in a bamboo sieve over the bride's head as she progressed to the house. Some say this indicates the bride has older unmarried b ro t h e r s o r s i s t e r s , o r p e r h a p s , m a l e dominance. The other woman placed two bamboo sieves, with red painted circles, one after the other on the ground so that the bride did not touch the ground until she entered the house. The bride followed the procession to the groom's home, stepping over hot cinders in the doorway and going to the bedroom in the back. There she sat with female relatives and friends while other guests queued up to peer through the window and doorway to catch a first glimpse of the newcomer to the village. At 12:45pm men went into the chi tong to light candles and incense in preparation for the ancestor worship ritual, which forms an important part of the marriage ceremony. On

the altar was a large selection of edible items, including cooked chickens, pieces of pork, bowls containing sweetmeats, and a pig's head with the tail attached, signifying a good start and finish to the marriage. The groom and his elder brother – who took the place of their deceased father – held three sticks of incense as they knelt in front of the altar and bowed three times as the master of ceremonies, a village elder, chanted. They also drank a cup of Chinese wine. The bride then knelt next to the groom, and the bowing, drinking wine and burning incense continued. The village elder read out a message to the bride, reminding her to be kind to her mother-in-law, look after the house well, and be good and obedient to her husband. The groom said nothing! At the chi tong the bride offered her new parents-in-law and the village elders a cup of tea, symbolizing her new status in their home and village. Outside another huge feast had been prepared and everyone sat down to eat, while red lai see packets were distributed to those who helped or gave money to the bride and groom. By 3:30pm, the guests were going home, leaving the new bride and groom to settle down to married life before returning the following month to the "New World Takeaway" in Blackpool. ■

Long Ke – visual treasure 浪茄湾——自然瑰宝

Sai Kung beaches 西贡海滩 Sai Kung Peninsula and its neighbouring islands, long considered Hong Kong ‘s emerald playground, are home to the territory’s best and most scenic beaches. With powdery white sand and clear blue waters, these are easily Hong Kong’s more beautiful and pristine beaches. The beaches require some legwork to reach, but that only adds to the enjoyment of their sheer, unspoiled beauty. 西貢半島及其附近島嶼一直被視為香港的綠色後花園，也是香港最美麗和最原始的海灘。細柔的白沙，蔚藍的海水都匯聚於此。這些海灘位於西貢半島，因此要花一番功夫到達，但也因此保留了海灘最原始的美態。

A beautiful secluded beach framed by spectacular geological formations and sparkling waters, Long Ke is accessible by a moderate hike from the east dam of the High Island Reservoir – bring your own food and water as there are no provisions and it’s not tended to – but you’ll have all the privacy you could wish for. Ham Tin and Sai Wan are the more frequented, both good for surfing and near-shore swimming. Tai Wan is known for its high waves and is a surfer’s paradise, and Tung Wan is a smaller strip of sand that is sparsely visited. Overnight camping at these beaches is popular. You can also get there by taking a 90-minute hike from Sai Wan Pavilion or hire a boat form the public pier in Sai Kung Town. Particularly popular with Mainland China tourists, some yummy Hong Kong snacks will be a sure-fire winner with anyone back home. Jenny’s Bakery’s cookies are much sought after. Our gourmet journey takes us to a contemporary European steakhouse and a Cantonese restaurant with unmatched harbour views. 本月《東方之珠》美食之旅造訪了一家現代歐式牛排餐廳及一間可以享受海港美景的粵菜餐廳。

e finally had a chance to try out Beefbar, the much-touted contemporary steakhouse located in Central. Beefbar is the creation of Monacobased Giraudi Group, a trader of top-grade meats that opened its first outlet in Monaco in 2005, and which has since has expanded globally, carving out an enviable niche in high-end steakhouse dining. It opened in Hong Kong in late 2015 and has quickly established itself as a dining hotspot, earning a Michelin star under acclaimed Italian Executive Chef Andrea Spagoni.

We then dived into street food dishes – tacos, specifically. Some of these are only available at its Hong Kong outlet, for example, the Bacon Slider ($100), which is Black Angus mini burger with bacon and lemon sauce, and Tostado con Atun ($220) – three crunchy tuna and avocado tacos. Another house specialty, Tacos Con Kobe ($220) – three soft Kobe tacos with sriracha sauce, completed this segment of our feast. The tacos are uniformly good, as we would expect given the highquality ingredients used.

The restaurant’s modern décor – earthy colours and light-coloured wood panelling, with white marble and brass accents, including the marble Raw Bar serving made-to-order dishes – exudes casual luxury, and is a distinct departure from a stereotypical European or American steakhouse. Beefbar serves top-grade beef sourced from the United States, Australia, Japan and Korea as well as fresh seafood dishes, it offers different cooking styles, drawing on Chef Spagoni’s experience in European and Japanese cooking, including street food style dishes – which suits us fine as we are always game for innovative cooking endeavours.

More is yet to come. We took a breather with Kale Salad with Avocado ($160) before embarking on the real beef offerings. But first, we devoured a Homemade Sea Urchin Tagliolini ($480) which was delicious. Then we chose two American prime Black Angus cuts to share – the Ribeye Cap ($580/200g) and Filet Mignon ($560/200g). We are happy to say, as the main act, they certainly lived up to the billing. Both meats were tender, flavourful, perfectly grilled, and just the way we like our beef – call it mission accomplished.

We started our dinner with sharing plates. From the Raw Bar, we ordered Amberjack & Sea Urchin ($300), Sea Bass Ceviche, Edamame, Tosazu and Quail Eggs ($220) and Milk-fed Veal Tarate, Praline, Tarragon ($240). Both seafood dishes were refreshing and tasty – we noted their respective Japanese and South Ameirican culinary influences.

We finished our sumptuous meal with Cherry Doughnuts and Pistachio Ice Cream ($120) and “Irish Coffee” Soufflé and Chocolate Ice Cream ($120), which are yummy and sated our sweet tooth. We should mention that Beefbar has a nice collection of white and red wines to go with both seafood and beef dishes. Dining at Beefbar was an enlightening experience; we liked sharing such a diverse range of dishes while still chomping at the bit for quality beef – a real treat indeed. EXA, the new Chinese restaurant located at the end of OTE, Ocean Terminal’s new extension, is destined to be the city’s next culinary hotspot. The restaurant’s artful moniker pays tribute to a private residential salon on Bonham Road back in the 1960s. established by six gentlemen who shared a love of tea, wine and the finer things in life. HEXA, thus named, is aiming to recreate the essence of that salon, and more. HEXA’s design was led by notable local designer Steven Leung, known for his striking and stark colourful contrasts. Arriving guests are greeted with a unique 270-degree panoramic view of the harbour and the city. The entrance divides the elongated restaurant into two wings – dubbed “Love” – serving drinks, food and music, and “Passion” – the main dining area. Beyond the French windows of both wings lies a large lawn literally on water’s edge, which is ideal for evening cocktails, large parties and the perfect place to enjoy a gorgeous Hong Kong sunset. The restaurant’s décor is contemporary: airy, chic and sleek, supported by a cacophony of colours, lines and geometric shapes that, in combination, create a sense of modern elegance and luxury. HEXA serves primarily refined Cantonese food employing innovative cooking skills. It also has a dim sum lunch offering.

Our meal started with dim sum: Steam Shrimp Dumplings in Bamboo Charcoal Wrapping ($78) – we were intrigued by its dark golden skin; Baked BBQ Pork Bun Topped with Buttered Crust ($58) and Wagyu Beef with Black Pepper in Puff Pastry ($80), which is rapidly gaining a fan following.

A tender cha-siu, Roasted Iberico Pork with Honey Sauce ($288) was next, followed by Taraba Crab Leg Meat with Pomelo ($188) – a cool, refreshing dish that was new to us; Pan-seared Dried Golden Oysters with Longan Honey ($218) – savoury and rich, and the nicely deep-fried Golden Brick Silky Beancurd ($118). Silky Fowl Soup with Fish Maw and Sea Conch ($238), a slow-boiled soup popular with locals, was next. Three more dishes rounded the meal out – King Prawn Dual Tossed in Mango Puree and Golden Salty Egg Yolk ($298), Smoked Chicken with LongJing Tea Leaves ($288/half), another first for us, and Sautéed Geoduck with Morel and Asparagus ($398), which was nicely stirred fried. A light dessert, Jasmine Tea Flavoured Panna Cotta with Hazelnut Puff ($148) completed this most enjoyable meal. And – even as locals – we still couldn’t get over the stunning harbour views. You won’t find a better combination of gourmet excellence and mesmerising visual spectacle than HEXA – a worthy choice for a truly memorable dining experience.■ Wagyu Beef with Black Pepper in Puff Pastry 和牛黑椒酥

Kailash Parbat

Kailash Parbat, a recent addition to Hong Kong’s vibrant dining scene, offers double pleasure – quality Indian food and vegetarian, no less. Who knew eating vegetarian could be this much fun! Kailash Parbat, which is family owned and operated, is a familiar name among Indian food aficionados. Founded in Mumbai and known for serving authentic, traditional Mumbai street food, Kailash now operate outlets in India, the United States, the UK, Australia and Singapore, with Hong Kong its newest addition. The restaurant is bright and airy, the décor’s earth tone colours and props exude warmth and harmony, and the service was friendly and attentive. We sampled a large selection of Mumbai street food, including Pani Puri ($75) – tasty fried potato pastry balls; Samosa Chaat ($80); Crispy Corn Basket ($75); Aamchi Mumbai Sandwich ($75), a grilled sandwich of mashed potato, cucumber, onion, tomato and cheese with spicy chutney, which was scrumptious; and Chinese Bhel – made in Bombay ($65), sort of a ChineseIndian fusion crispy noodles dish that was also excellent. We also tried a number of other house specialties: Paneer Tika Lababar ($85), which is clay oven baked cottage cheese; Veg Dum Biryani ($75), a basmati rice and cheese dish, Dal Makhani ($75); and Veg Fried Rice ($75). We finished our meal with desserts: Falooda Kulfi ($75) – an Indian icecream sundae float and the always popular Gulab Jamun ($50). We would be remiss not to mention Kailash Parbat offers a wide selection of refreshing cool drinks to go with the meal. Kailash Parbat is a pleasant find for us. We are sure it will soon be drawing in the Hong Kong crowds – so we suggest you book a table before the queue forms.

Censers were popular in the Han dynasty. This goose-shaped censer is life-like. The back of the goose body is latticed, allowing smoke to rise from it. The censer is similar in function to the more well-known boshanlu-style censers from the Han period, but its form is very different. Incense was burned not just for the aroma, but also for practical reasons, such as acting as an insect repellent, and to purify the air. Since 2009, a group of teachers and students at the Hong Kong Institute of Vocational Education (IVE) have been developing a series of solar cars named SOPHIE in Hong Kong. Their aim is to develop a greener vehicle that can convert renewable solar energy into electricity more efficiently for use. The SOPHIE team and their fourth-generation solar car, SOPHIE IV, participated in the "World Solar Challenge" in 2013 for the first time and was the third runner-up in the 3,000-kilometre race from Darwin in the Northern Territory of Australia to Adelaide in South Australia. In 2015, SOPHIE IV became the first solar car to run on a highway in Hong Kong. In addition to displaying the fourth-generation SOPHIE, through video programmes, physical parts and interactive exhibits, this exhibition provides a comprehensive overview of the applications of various technologies in solar cars and car body design. 2/F Exhibition Hall, Hong Kong

Tai Kwun

Centre for Heritage and Arts The revitalised Central Police Station compound, the largest heritage project in Hong Kong, has opened its doors to the public as Tai Kwun - Centre for Heritage and Arts. The CPS compound comprises 16 historic buildings, including three declared monuments (Central Police Station, Central Magistracy and Victoria Prison), on a 13,600-square-metre site in the heart of Central. An international-grade art gallery and an auditorium have been added to contribute to the adaptive reuse of the site. The first phase of opening includes 11 heritage buildings, the new art galleries and auditorium, and the Parade Ground and Prison Yard. Beginning 10 May 2018, online booking will be accepted for the Tai Kwun Pass, which will provide access to the site from 29 May 2018 onwards. Pass-holders will be guaranteed entry to Tai Kwun. MEET THE

GENERAL MANAGER Mr Patrick Kwok, Executive Director of the Hong Kong Hotels Association, shares with us his many years of experience in the tourism and hospitality industry. 香港酒店業協會執行總幹事郭志傑先生與我們分享他在旅遊業和酒店業的多年經驗。 I spent most of my working career with the Hong Kong Tourist Board and its predecessor. I was there for 34 years before I retired from HKTB. I had been involved in business development and liaison with the hospitality sector, and the HKHA specifically. This enabled me to become familiar with the association and its executive committee members, which proved helpful when I was appointed Executive Director of HKHA a year ago. The HKHA represents the hotel industry of Hong Kong. Our members are hotels themselves, represented by the general managers. The Association’s objectives are to protect the lawful interests of hoteliers in Hong Kong and promote greater industry unity and cooperation. By providing useful information and data to members on industry matters, we support professionalism in the industry. One of the main functions of the Association is to offer educational programmes to members through training courses and seminars. Another key objective is to ensure and uphold consistency in service and quality standards, as well as promote greater internationalism of our industry through the introduction of new technology and management techniques. My first year on the job has gone by quickly. Initially, my immediate priority was to address some internal issues, which we did successfully. Now we can channel our energy and resources to focus on business plans and new initiatives that are in line with Association’s mandate. Major initiatives include website enhancement, the HKHA hospitality counter at West Kowloon Station, smart hotel projects and stepping up collaboration with stakeholders. I am excited about our smart hotel project. We collaborate with the Hong Kong Science and Technology Park, who help to line up local incubators and service providers of smart hotel apps. This is also supported by master’s degree students at the PolyU School of Hotel & Tourism Management, who conduct research assignments to support the development of smart hotel projects. In addition, Hotel ICON offers three designated experimental hotel rooms for actual testing. This allows us to put in smart tools and devices to be used by guests, and to solicit their feedback. We then showcase the results to our member hotels, especially our independently managed hotel members, matching them with local service providers. I am looking forward to the opening of our information counter at the new HighSpeed Rail station in West Kowloon. We will deploy an AI “Chatbot” application to provide voice and text responses to queries by tourists, providing them with useful information about our member hotels. My favourite thing about Hong Kong is its people: their professionalism; the Hong Kong spirit which means a can-do mentality, grabbing every opportunity, and being knowledgeable and well-rounded because of their broad exposure. I feel privileged to be a “Hong Kong person”. My three recommendations for tourists: 1. Food: Enjoy a good seafood meal, it’s the best in the world in terms of cooking styles, skills, freshness and variety. Also try local food like congee, wonton noodles and dim sum. 2. For attractions, it must be the harbour, unquestionably our most valuable natural asset. To best enjoy, stroll along the Tsim Sha Tsui waterfront and look across to Hong Kong Island and its skyscrapers and mountains; or take a Star ferry, which is cheap, enjoyable and relaxing. 3. Also enjoy our islands and hiking trails, which are popular with both visitors and locals. They are safe, with a great variety of trails and scenery. My final thought is that we should value Hong Kong as an international city. Its thriving hotel industry, where the best international and local hotels provide excellent guest experience side-by-side, amply reflects its global city status.
