A Viennese New Year with the Hong Kong Phil

For our traditional New Year concert, we usher in 2020 with a joyful and exuberant programme of popular waltzes and polkas from the era when Vienna was the City of Dance, and Johann Strauss its undisputed king. THE BIRTH OF THE PENINSULA 半島酒店傳奇

The peninsula Hotel has entertained the military – and the odd monarch 著名的半島酒店曾經招待過軍隊——還有脾氣古怪的國王。

ight-and-a-half years after work had begun on The Peninsula Hotel, it finally opened its doors to guests on 11 December 1928. It had been scheduled to open in 1924, but there had been many delays including the unexpected presence of ground water, and it became necessary to sink 600 piles to prop up the foundations. In 1927, when it was ready for occupation, the hotel was commandeered by the British Army, and the Coldstream Guards and the Devonshire Regiment moved in. There had been riots in Hong Kong the previous year and a civil war was raging in China. These two distinguished British regiments proudly carry the name "Peninsula" as a battle honour on their regimental colours. The honour was awarded to them for their gallantry during the Peninsula War when they helped the Iron Duke smash the armies of Napoleon and not for wrecking the interior of the Peninsula Hotel a century later. Such was the damage they caused that after the army left a complete renovation was needed. The hotel’s chief engineer Clifton Triggs recalled

“We had to rebuild it!” It was in the bathrooms where the most of the damage occurred. Every bathtub had to be replaced. “They must have kept their guns in them!” said Triggs. Nine months after the troops left there was a grand opening ceremony. The South China Morning Post wrote: “The furnishings and interior decorations were exceedingly attractive and it seemed that no effort had been spared to provide guests with everything that might be desired. To speak of one instance alone, there are no fewer than five grand pianos in the building.” About the only person who was not enthusiastic about the opulent splendour of the hotel was the Acting Governor Thomas Southorn who performed the opening ceremony. In his speech he remarked: “Opinions may differ as to the architecture and decoration: some may prefer a Spartan simplicity, some the sumptuousness of an eastern palace - but there can be no two opinions as to the arrangements made for the hygienic cleanliness of the hotel and everything connected with it.” Southern, who had pretensions to culture, was probably afraid of what Virginia Woolf, who

was his wife’s sister-in-law, would say if he lavished praise on the old fashioned decor. Fate has a way of punishing intellectual snobs: the unlovely Southorn Playground in Wanchai is named after the Acting Governor.

The hotel’s splendid plumbing was not however to everybody’s taste even though every bedroom had its own bathroom and lavatory. Distinguished guests, such as the last Emperor of Ethiopia, sometimes made strange demands. His Imperial Majesty Haile Selassie, the Lion of Judah and Emperor of Ethiopia, was a direct descendent of The Queen of Sheba. He stayed at the Peninsula in the 1950s.

擁有文化修養的修頓未敢過度稱讚酒店的古典裝潢，或是因為怕愛妻的好姐妹，英國著名作家伍爾夫會對之有微言。但命運有時真會捉弄文人雅士，位於灣仔毫不起眼的修頓球場，正是以這為署理港督的名字命名。

When an emperor graces your hotel with his imperial presence, his every whim is your command. Leo Gaddi, the manager of the Peninsula, was anxious to please. When he received an imperial command to replace the Western-style lavatories, he was rather surprised, but willingly obliged. With ruthless efficiency the hotel’s contractors ripped out the British flush toilets and replaced them with the Asian variety. Work was completed just in time for the royal visit. As the Emperor had taken the whole of the sixth floor the logistics were horrendous. Even so, “Operation Prester John”, named after the legendary King of Abyssinia, took only two days. It is reported that the Lion of Judah had a comfortable stay.■

After a tenacious inch-by-inch defence of the tiny territory against the land-based attack from the north, the Allied forces – British, local Hong Kong and other Chinese, Indian, Canadian and others – surrendered to the Japanese on Christmas Day, 1941 at the Peninsula Hotel.

It’s always fun to explore Christmas markets and fairs and find interesting gifts and knick-knacks for Christmas. As Asia’s World City with a large Western expatriate community, Hong Kong has loads of them, organised by community groups and churches, often for charitable causes. While most take place in November, a few hold out into December. Catch a tram – lovingly known as the ding ding – on Hong Kong Island, and watch the bustling cityscape at your ease. Take a tram from Sai Ying Pun or Sheung Wan and go eastward to either North Point or Happy Valley, passing through the heart of the city along the way. Central Elevated Walkway System 中區行人天橋系統 Overhead pedestrian connections are found all over the city; one of the most extensive and interesting to explore is the Central Elevated Walkway System, a labyrinth of footbridges and walkways extending from Sheung Wan’s Macau Ferry Terminal to Star Ferry in Central, to the Midlevels Escalator System and to Landmark in the heart of Central and beyond. There are connections to and through major building landmarks along the way. Take in the thronging crowds and enjoy overhead views of traffic, landscape and the city scenes below.

Mid-levels Escalators System 半山自動扶梯系統 The world’s longest elevator walkway system is a microcosm of our ultra-chic city. Starting in Queen’s Road Central at Central Market, this series of escalators was constructed to carry commuters from Mid-levels to Central in the morning, and back again at day’s end. But organic transformation along the route has spawned new trendy neighbourhoods, chic dining outlets, and great spots for people-watching. Busking 街頭表演 Hong Kong has a thriving busking culture. Tong Choi Street in Mong Kok was packed with buskers until the street recently reversed its pedestrian-only status; now only a few remain. So your most vibrant busking area is the Central Harbourfront right between the Observation Wheel and the Central Ferry Piers. Dozens of performers – singers, dancers, ‘statues’ and more – gather to show off their talents. You can also count on an impromptu show at the corner of Pedder Street and Queen’s Road Central or the Peking Road pedestrian tunnel in Tsim Sha Tsui. Tip if you enjoy what you see.

The city has a thriving street art culture, helped by the innumerable pavements, building walls and overhead road bridges. The most prominent examples are along Hollywood Road in Central and Sheung Wan its side streets such as Graham Street, Peel Street and Tai Ping Shan Road. Many others abound, so keep your eyes open and you’ll likely be rewarded.

Sunday Afternoon Stroll Through Central 星期日下午在中環漫步 On Sundays and public holidays, closed streets and other corners of Central are adopted by the city’s thousands of foreign domestic helpers, radiating the week’s pent-up social energy. Whether it’s friends catching up in a cardboard ‘room’ on a footbridge, an impromptu religious gathering, a dancing or singing contest or practice, an informal wedding, or an organised event in Stature Square, the scenes offer up a fascinating slice of Hong Kong’s urban vibe.

每逢星期日及公眾假期，中環的許多地方都會變成熱鬧的場所，供數以千計的外籍傭工在此聚會。一小部分社會團體在人行天橋上搭建臨時的紙板棚子裡消磨時光，還有一部分與街頭小販討價還價，還有的在皇后像廣場上跳舞、唱歌或組織活動，每一幀都構成了香港城市氛圍中迷人的片段。

For the kaleidoscopic sight of jumbled neon and LED displays of shops and buildings, head to Nathan Road and make your way from Tsim Sha Tsui to Mongkok. You’ll be more than dazzled. On the way, detour to Temple Street and check out some of the older neon displays still displayed there.

While your stay should certainly take in the classic street markets – like Ladies Market in Mongkok – that are well-known tourist destinations, you may also want to check out a regular local market and see how locals buy their fresh meat and vegetables. These are all over the city, typically in large municipal buildings, so find the one nearest to where you are staying. Arguably the favourite pastime for most Hong Kong residents, the phrase “Han Gai” literally means ‘cruising the streets’. The ideal – that is, busiest – locations are Causeway Bay and Mongkok. Both areas are famed as shopping districts, so you can explore some of the city’s top shopping malls and department stores and maybe sample a local dessert such as egg waffle.

People-watching and Partying at Night 夜間聚會 Hong Kong is a night city: whole areas of town never sleep as bars and clubs stay open till the wee morning hours – or even round the clock. Lan Kwai Fong in Central and the bar district in Wanchai are two famous nightspots. Take a seat at the open front of a busy bar, order your favourite tipple, and watch people go by all night long.

obu InterContinental Hong Kong has long been a landmark for Japanese cuisine in the city. Its collaboration with famed chef and restaurateur Nobu Matsuhisa is widely praised. Through 2019, Nobu has been offering a Gourmet Series of a “Roku-Wareki” Japanese dining experience comprising six chapters. Wareki refers to the ancient Japanese calendar whose six solar terms reflect the changes in the seasons and the variation in core ingredients used in the preparation of local cuisine. Nobu’s Wareki series offers six (Roku) distinct set lunch and dinner menus for the year, taking inspiration from key dates in the Wareki calendar and incorporating seasonal seafood. The winter menu is the creation of Executive Chef Rhys Cattermoul and Executive Sushi Chef Satoru Hashimoto. We know we are in for a treat. But first, we should introduce Nobu’s founder and his inspirational life story. Nobuyuki Matsuhisa, known to all as Nobu, was hooked on a career in Japanese cuisine on his first experience to a sushi restaurant. After working in Japan, Nobu went to Lima, Peru to open a Japanese restaurant where he began introducing Peruvian influences into his menu, which has had a lasting influence on his culinary style. A move to open a restaurant in Alaska was thwarted when it burned to the ground before it could open. Nobu worked in Los Angeles to pay off the debt and subsequently opened Matsuhisa in Beverly Hills, attracting a slew of celebrities. Eventually, Nobu partnered with legendary actor Robert De Niro and went on to expand his operation worldwide. Today Nobu

operates 40 Nobu restaurants, nine Matsuhisa outlets and nine Nobu Hotels in 44 cities around the world. We had the 6-course Premium Set Lunch Menu ($888 per person). An 8-course Dinner Menu ($1,488 per person) is also available in the evenings. The lunch set starts with Kinmeidai Sashimi Karashi Su Miso, which is Kinmeidai, a type of red fish, seasoned with karashi mustard and miso, and served with seasonal winter vegetables. Then comes Sayori Sashimi, Dried Miso and Seared Toro, Yuzo Miso. The white fish is seasoned with yuzu-infused olive oil and dried miso while the tender seared toro has a light yuzu miso. The Aka Tai Kara-age Tomato Miso is a nice concoction by Chef Rhys. The tomato miso perfectly highlights the taste of the snapper meat and is served with grilled fish skin. Then comes AS Wagyu Sukiyaki – Kagoshima beef served with enoki mushroom, asparagus and other vegetables, cooked sukiyaki style. The rich marbled beef blends nicely with the green veggies. Another treat is the Exclusive Sushi Selection, four exquisitely prepared sushi pieces including a uni sushi cup, Isake and Katsuo. We finished the lunch set with Caramel Cream Mousse, Apple Compote, Caramelized Walnut, Green Apple Sorbet. It was more than a fitting ending to this delightful meal. With impeccable service, a gorgeous harbour view, and painstakingly prepared dishes, a dining outing at Nobu is an experience to treasure indeed. We highly recommend it.■

he recently rebranded Hyatt Centric Victoria, a real gem of a hotel located in North Point with a panoramic waterfront view of Victoria Harbour, is offering a sumptuous buffet at The Farmhouse over the winter with a special Christmas edition for the Christmas and New Year holiday period. Hong Kong people love to eat buffet, and many restaurants oblige, particularly at almost any of the city’s main hotels. So it takes something special to stand out, which The Farmhouse manages to do, in our view, combining a wide and interesting selection of quality dishes with friendly ambience and reasonable prices. The spacious restaurant, located on the second floor of the hotel, fulfils the promise of its name, evoking the wholesome goodness of the countryside with decorations and furnishings in warm earth colours. An outside terrace plus fullheight windows brighten the airy dining area while the several large buffet serving stations create a friendly and welcome feel. Billed as “Farm Fresh Buffet”, The Farmhouse adopts a variety of healthy ingredients in its dishes, including organic vegetables and sustainable seafood. A wall-to-wall produce refrigeration cabinet showcases the various healthy ingredients used. T h e F a r m h o u s e ’s b u ff e t s e r v e s a w i d e variety of regional and local cuisines. The regular International Dinner Buffet is $598 per person ($299 per child/senior) from Monday to Thursday and $668 ($334 child/senior) from Friday to Sunday plus public holidays and eves of public holidays. Its International Lunch Buffet is an excellent bargain at $258 per person from Monday to Friday and

The chef team under Executive Chef Ryan Dunn has whipped up a wide selection of classic Christmas dishes including Slow Roasted Turkey, Roasted Lamb Rack, Honey Glazed Ham and Salt Crusted Norwegian Salmon. For health-conscious and vegetarian guests, many buffet dishes use organic produce, including Heirloom Tomato Salad, Lyonnaise Potato, Honey-glazed Vegetables and Grilled Vegetable. A wide range of fresh seafood is served at the dinner buffet. In addition to fresh boiled shrimp and mussels, The Farmhouse serves Canadian Lobster, Alaskan King Crab, and a variety of Sashimi and Sushi made to order as well as Grilled Oysters and Shrimp. The Farmhouse also serves a rich selection of Chinese and Asian regional dishes. These include Cantonese BBQ meats such as Char Siu, Roasted Chicken and Roasted Duck; Wok-Fried Chicken, Sweet and Sour Prawns, and Nasi Goreng as well as Assorted Soup Noodles made to order. One of the special features of the buffet is its large selection of XTC Gelato Ice Creams with twelve flavours on offer, including coconut, ginger, sesame, and chocolate. We are impressed with the buffet’s selection of dishes and their uniform quality at The Farmhouse. If you are looking for a hearty gourmet buffet experience during the holidays, give The Farmhouse a try, for sure.■

REIGN the Abalone House

Reign the Abalone House, a high-end retail shop cum restaurant, opened recently at K11 Musea, Hong Kong’s latest luxury shopping mall, in Tsim Sha Tsui. The outlet sells fresh-farmed abalone from South Africa and premium Russian caviar. In addition, Reign serves a special light meal menu designed by Jean-Marc Soldati, a Swiss Michelin-star chef, that includes abalone, caviar, lobster and bird’s nest. Reign’s signature abalone is caught in the waters of Walker Bay in South Africa and slow-cooked to retain collagen. It is then vacuum-packed and shipped by air to Hong Kong, ready to eat. The Russian caviar comes from Russian sturgeon raised in Astrakhan on the Caspian Sea. Reign also offers a variety of gelato and sorbetto topped with rich bird’s nest. Dishes we sampled included Reign Abalone Dark Rye Mille-Feuille with White Truffle Cream ($148) which is small slices of rye bread with a layer of diced slow-cooked abalone garnished with thick grilled egg in Italian white truffle cream, and Reign Abalone and Lobster Mille-Feuille ($148), which is diced abalone and lobster in honey mustard sauce, as first courses.

Tragacanth ($68), both drinks infused with bird’s nest collagen. Reign is the perfect place to stop by for a relaxing and healthy light meal as you take a break from your shopping. Don’t forget to purchase some abalone and caviar while you are there.

Censers were popular in the Han dynasty. This goose-shaped censer is life-like. The back of the goose body is latticed, allowing smoke to rise from it. The censer is similar in function to the more well-known boshanlu-style censers from the Han period, but its form is very different. Incense was burned not just for the aroma, but also for practical reasons, such as acting as an insect repellent, and to purify the air. Liang Yi Museum

The Beauty of Ladies’ Ornaments from Asia and Europe 17 Sept 2019 – 27 Feb 2020 Liang Yi Museum is delighted to present Crowning Glory: The Beauty of Ladies’ Ornaments from Asia and Europe, a landmark exhibition exploring the role women’s clothing and accessories played in the social construction of gender and identity from the late imperial era in China and Japan to the early modern period. The heart of the exhibition sees a display of selected artefacts including wooden objects, textiles and hair ornaments, used and worn by traditional Chinese and Japanese women from the 17th to the 19th century. The last section of Crowning Glory features a selection of European vanities from the Museum’s permanent collection, with a particular focus on objects influenced by Chinoiserie and Japonism from the 1920s to 1930s.

Originally the home of the commander-in-chief of the British forces, the museum houses a huge collection of tea ware in Hong Kong's oldest surviving colonial building. Tai Kwun

Centre for Heritage and Arts The revitalised Central Police Station compound, the largest heritage project in Hong Kong, has opened its doors to the public as Tai Kwun – Centre for Heritage and Arts. The CPS compound comprises 16 historic buildings, including three declared monuments (Central Police Station, Central Magistracy and Victoria Prison), on a 13,600-square-metre site in the heart of Central. An international-grade art gallery and an auditorium have been added to contribute to the adaptive reuse of the site. The heritage site includes new art galleries and the Parade Ground and Prison Yard. We picked out the “Spa and Dine” package (priced at HK$888 per person), which includes a 60-minute body massage – a choice of Chuan Harmony or Chuan Balancing treatment methods, followed by a business set lunch at Ming Court, the hotel’s highly touted Michelinstarred Cantonese restaurant. The appetising lunch includes a trio of Dim Sum, Chicken Consommé, Garoupa Fillet, Cubed Abalone Fried Rice and dessert. Guests may also use the gym, fitness studio and rooftop swimming pool. For that special occasion – a social “girls gathering” perhaps, Chuan also has a four-person private room. Advance booking is required. At Chuan Spa, you get a highly relaxing spa session plus an excellent meal at an acclaimed restaurant, all for a very reasonable price – a deal that is hard to turn down.
