s chairman of Hong Kong Hotels Association, it is my great pleasure to welcome you to Hong Kong and to CityLife, the monthly magazine for visitors to Asia’s World City. Hong Kong continues to move towards opening our city for international travel. With community cases of Covid-19 practically stopped and our vaccination effort proceeding, the city is poised to ease inbound travel restrictions and quarantine rules. While some social distancing measures remain in place and masks must still be worn in all public places, the city is returning to normal and more events and activities are resuming. For prudence, though, we suggest that you contact your concierge for details of the latest updates and restrictions. As an alternative to a beach visit, the city’s many reservoirs offer tranquil natural surroundings and are a good way to escape the summer heat. The extensive tree cover created around these reservoirs means that shaded walks near or around the reservoirs while appreciating their calm and the sylvan environment is a popular activity all year around. And the history of these reservoir developments is a fascinating tale. Please go to our cover story on page 6 for more about Hong Kong’s reservoirs and the hiking trails around them. For modest size, Hong Kong Island offers amazing geographical diversity, seen vividly in its 65-kilometre coastline. From stunning Victoria Harbour to sandy beaches, sheltered bays, rugged bluffs and rocks, Hong Kong Island has it all. The challenge of walking the complete coastline, as close to the water as possible, requires careful research and planning since there are many man-made and natural obstacles. Recent improved connectivity and enhancement of the harbourfront is making the prospect easier and more enjoyable. CityLife has mapped out an achievable walking route of the island’s coastline in four sections. Please go to page 12 for details on how to walk the first section – along the Victoria Harbourfront. Events and activities are increasingly resuming. This month, the Hong Kong Book Fair, the city’s largest trade show, returns. Expect the crowd to be there as well. The International Arts Festival takes place this month, with scores of performances slated. Please go to the Calendar Section on page 4 for more event details. To make it easier for booklovers to purchase books and products during the pandemic, a brand-new Book Fair Online section has been introduced on the Book Fair website and mobile app, bringing together exhibitors’ online retail platforms in the “Exhibitor Directory” webpage, enabling booklovers to conveniently browse and purchase exhibitors’ literary wares. A Cultural Journey Online page has also been set up on the Book Fair website to showcase the various e-reading resources, museum exhibitions and cultural activities provided by partners, including video footage from some of the most popular seminars held at the fair over the past decade.

Portals, Stories and Other Journeys
Portals, Stories and Other Journeys stems from Asia Art Archive’s research since 2014 into the personal archive of the late Hong Kong-based artist Ha Bik Chuen (1925–2009). The exhibition comprises 10 ‘sets’ that share how Ha’s archive fuels the practices of other artists, with five of these sets presenting new commissions. Each artist brings their own stories relating to Ha’s archive — they respond to various facets of his archival and art practice.

A
walk along the entire coastline of Hong Kong Island is a tempting prospect. Around its meagre 79 square kilometres, the historic island is blessed with a meandering 65 kilometres of coast, endowed with amazing geographical diversity, and a microcosm of Hong Kong’s natural beauty. Whether it is the magnificent harbour, sandy beaches, rugged cliffs, wooded headlands, sea channels, quiet bays or sheltered coves, the island’s coastline has them all. The challenge, though, is to keep close to the water as much of the way as possible, avoiding various natural and man-made obstacles to keep the water at least in sight. Some of the rugged headlands and rocky bluffs have no walkable paths, while buildings and facilities are sometimes built right up to the water or areas are otherwise off-limits. Still, with careful planning, it is possible to plot a circular route that keeps the intrepid hiker pretty close to the coastline, especially along Victoria Harbour on the northern part of the island. Recently, much more of the harbourfront has been made continuously accessible on foot, transformed with various displays and leisure

areas into a vibrant, pedestrian-friendly, living space, framed by one of the world’s most spectacular skylines. In other parts of the island, other waterfront promenades, hiking trails and coastal roads enable a willing hiker to follow most of the island’s coastline and be rewarded with a dizzying variety of sensory treats. So CityLife has prepared just such a walking tour around the whole island, identifying points of interest along the way. We’ve divided the route into four sections, each of which deserves a full day. We’re taking an anticlockwise route, starting from Shau Kei Wan in the east. Each segment offers different scenery, setting and ambience, ranging from the vertically built urban area, to picturesque sea channels and old fishing harbours, to expansive beaches and luxury neighbourhoods, and on to sleepy bays, pristine beaches and rocky shorelines chiselled by the relentless, pounding waves. It’s a healthy excursion that showcases what makes Hong Kong such a fantastic place to live, and visit! This month we start with Section 1: a walk along magnificent Victoria Harbour.

Our route starts from near the Museum of Coastal Defence (temporarily closed for renovation) and takes us west to the Victoria City Boundary Stone on Sai Ning Street in Kennedy Town.

Shau Kei Wan Typhoon Shelter 筲箕湾避风塘 The journey starts from Tam Kung Temple Road, whose eponymous temple organises a popular and raucous celebration for the deity Tam Kung every year on his birthday. The street runs into the promenade along the typhoon shelter. Spacious Aldrich Bay Park, offering a running track, a children’s playground and nice sitting out areas, is worth a visit. 這條路線從譚公廟道開始，以該市最著名的譚公廟之一命 名，每年在譚公誕辰時都會舉辦慶祝活動。街道沿着避風塘 與長廊相連。愛秩序灣公園是一個大型的公共公園，裡面有 條跑道，兒童遊樂場，和休息區，值得一去。

Sai Wan Ho Waterfront
西湾河海滨
The promenade extends to Sai Wan Ho, passing through Grand Promenade, and on to Soho East, a waterfront street lined with trendy restaurants and bars. The Sai Wan Ho Ferry Pier offers old-style ferry rides to Lei Yue Mun and Kwun Tong. The view of the mountains across Kowloon and the impenetrable wall of buildings is something to behold.

Quarry Bay Park and Quarry Bay Promenade 鲗鱼涌公园及海滨长廊 A long stretch of scenic waterfront overlooking the eastern part of Victoria harbour. The boardwalk is a haven for joggers, tai chi practitioners and folk just enjoying the open air. You can pop onto the Alexander Grantham Fireboat or bring your pet to the dog run at the end of the park. 可俯瞰維多利亞港東部風景優美的海濱。木板路是慢跑者、太極拳 練習者和那些只想享受海濱的人的天堂。您可以登上葛量洪號滅火 輪或將您的寵物帶到公園散散步。

North Point Promenade and Ferry Piers 北角海滨长廊及渡轮码头 After passing under the Island Eastern Corridor expressway, the waterfront is not continuously accessible for pedestrians for about half a kilometre so take a few steps inland and walk along Java Road. Between the buildings, you can see the carriageway’s high supports that will soon carry a boardwalk to create a near-continuous waterfront through the area. Just past the Vehicle Ferry, turn back onto the North Point Promenade, passing another dog park and the ferry piers, serving three Kowloon destinations. After this 400-metre stretch, the waterfront is (for now) impeded by several large residential developments and a small industrial area in Tin Hau. Back on Java Road you walk for almost 1.3 kilometres until you reach Tung Lo Wan Fire Station on Electric Road. 經過東部走廊高速公路下方的海濱長廊後，海濱長廊的盡頭 約有半公里的人行通道，多幢建築物佔用海濱通道。沿渣華 道步行，返回北角海濱長廊及公園，即有渡輪碼頭。海濱 長廊的長度不足400米，位於天后的多個大型住宅發展項目 及工業區縮短了海濱長度。您需要再回到渣華道，走近 1.3 公里，直到電氣道上的銅鑼灣消防局。

Causeway Bay waterfront / Typhoon Shelter 铜锣湾海滨/避风塘
Walking beside the typhoon shelter you’ll see luxurious cruisers moored side by side with ancient floating family homes of a much more humble nature. The famous Noon Day Gun, fired once a day (you can pay to be that person!), is near the end of the typhoon shelter. Continue along the waterfront, passing the illustrious Royal Hong Kong Yacht Club on Hung Hing Road, and you’ll reach the quirky, newly opened Wan Chai Temporary Promenade, fast becoming a local attraction. 避風塘的海濱長廊已初具雛形。避風塘前面的道路是港島最 受歡迎的自行車路線。避風塘的盡頭有每日一響的午時炮， 沿鴻興道會經過香港皇家遊艇會，還可抵達新開張的灣仔臨 時碼頭，目前已成為當地的一個景點。

Wan Chai Temporary Promenade 湾仔临时海滨长廊 While most of the waterfront is complete, the eastern end starting from the Yacht Club remains a work in progress. In any case the promenade is now colourfully adorned with anime characters plus nicely landscaped seating areas showcasing well-known landmarks of Wan Chai. Harbourfront Promenade 海滨长廊 The Wan Chai promenade extends to the Harbourfront Promenade, following around the Hong Kong Convention and Exhibition Centre and through Golden Bauhinia Square. The promenade starts with the Ani Com Park, which continues the anime theme of the entire waterfront. The section linking Wan Chai to Central is now fully open, tastefully landscaped with aesthetically pleasing seating areas and fun cartoon characters. The spacious Tamar Park in the background offers a welcome rest opportunity.

Central Harbourfront
中环海滨 This iconic stretch of the waterfront at the heart of Victoria Harbour is a hive of activity. The Observation Wheel looms above the waterfront, the nearby open area now a chaotic but fun haven for buskers of all stripes. Central and Western District Promenade – Sheung wan, Sai Ying Pun and Western Sheung Wan 中西区海滨长廊-上环、 西营盘及西上环 The promenade continues past the ferry piers, through the Hong Kong Macau Ferry Terminal before connecting to the Sun Yat Sen Memorial Park. This wide grassy area is popular with young and old. Further on, the waterfront slips between the Western Wholesale Food Market and its sequence of piers, now converted to rest and recreation areas; the area is usually busy with joggers and strollers. Here the views become more expansive as the harbour widens, with several excellent spots to take in the sunset. The many reservoirs in Hong Kong’s country parks offer ideal hiking for all ages, with plentiful tree cover providing respite from the summer sun. niquely among the world’s global cities, Hong Kong is both densely populated and mostly unbuilt. Almost 70 percent of the territory is considered green and 40 percent of the city’s total area is designated as country parks. These much-loved natural open spaces were created to support our reservoirs, scattered across Hong Kong. The construction of the city’s many reservoirs was central to Hong Kong’s economic growth, but just as vitally, helped ensure that much of the city remained green and protected from development. It’s a tale worth recounting. Although Hong Kong is one of the wettest metropolises in the world, with annual rainfall of around 2.5 metres a year, providing usable water for its denizens has always been a challenge. The reason is simple: Hong Kong’s lack of natural lakes and rivers of any meaningful size plus its hilly terrain meant that all that precipitation rolled straight back into the sea. Traditionally, local villagers relied on

streams or wells for their water needs. But from the early colonial days in the 19th and into the 20th centuries, as the population expanded, the government needed reservoirs to collect rain for freshwater supplies. Spurred by regular droughts, it was perpetually scouting locations for ever-larger reservoirs. To maximise reservoir water inflow, catchment areas were expanded using catchment viaducts, with trees planted to prevent soil pollution of the reservoirs. To minimise contamination of the precious water from human development, catchment areas were protected with country park status. Rising water needs amid the population boom of the 1950s and 60s triggered an innovative approach: selected coastal inlets were dammed, drained of seawater, and filled with fresh water, creating the giant Plover Cove Reservoir and High Island Reservoir. Today, almost a third of the city’s 1,100 square kilometre area is used as reservoirs, a startling statistic. Alas, water supply remained a problem and in 1960, Hong Kong began to import water from China, culminating in a long-term supply agreement in 1989 in which the Pearl River would provide the bulk of the city’s freshwater supply (around 70% annually), augmented by the reservoirs, in an arrangement that finally brought water security.

Amid the summer heat, most of the reservoirs offer shaded trails where visitors can enjoy relaxing and invigorating walks, thanks to the abundant tree cover. 大潭四水塘——大潭郊野公园 Tai Tam Upper Reservoir, Tai Tam Byewash Reservoir, Tai Tam Lower Reservoir and Tai Tam Tuk Reservoir comprise the Tai Tam Group of Reservoirs. The country park, which occupies almost a fifth of Hong Kong Island, is one of the most scenic in the territory, with fantastic views of the city and the South China Sea. Hiking trails criss-cross the park including around the four reservoirs. A good route is to start from Hong Kong Parkview, a luxury residential estate at the top of Wong Nai Chung Gap, and follow down to the reservoirs. This delightful walk takes you through wood land framed by green mountains on all sides. You descend first to Tai Tam Reservoir and then reach Tai Tam Tuk Reservoir. Along the way, you can explore architectural, structural and engineering elements of the four reservoirs within the country park, built over 100 years ago. Close to the city, this park offers something different: monkeys! Dubbed Monkey Hill, it is located in western Sha Tin District, north of urban Kowloon. Popular with locals and visitors alike, the park is a sanctuary for macaque monkeys, with hundreds roaming around. Both the Kam Shan Tree Walk and Kam Shan Family Walk are gentle trails suitable for the children and the elderly, with a wide variety of plants and trees to take in.

Also known as Jubilee Reservoir in celebration of King George V’s reign, the reservoir was formed by damming the upper reaches of the Shing Mun River that flows out to Shatin. Plentiful tree cover around the reservoir makes for easy walking. The area is packed with disused waterworks and deserted villages, waiting to be explored. Both Wilson Trail Section 7 and MacLehose Trail Section 7 criss-cross the country park, looking down to the river and Shatin. Try the Shing Mun Reservoir Loop, a moderate circuit of the reservoir.

大榄涌水塘——大榄郊野公园 Arguably Hong Kong’s most picturesque reservoir, Tai Lam Chung Reservoir was constructed after World War II by damming four sides of the valley. The resulting reservoir is dotted with emerald islets that are its residual hilltops. We recommend the Thousand Islands’ Hike, which offers a panoramic view of the reservoir and the country park. Starting from the village of So Kwun Wat Tsuen near Tuen Mun, this is a relatively easy gentle uphill walk from the village. The paved path eventually merges with the MacLehose Trail Section 10. Your destination is the Reservoir Islands Viewpoint.

The third-largest reservoir in Hong Kong offers an open vista of the South China Sea. A popular and easy hike is the Shek Pik Country Trail, which runs between Ngong Ping and Shek Pik Reservoir. Start from Ngong Ping and walk down to the reservoir, enjoying glimpses of the mountains, the reservoirs and the sea along the way.

There is so much to like about this reservoir and its surrounding area: fabulous hiking trails, stunning views of reservoirs, unique geological formations, unspoiled white sandy beaches. The largest in Hong Kong, the reservoir was created by building a dam between High Island and the Sai Kung Peninsula, converting a sea channel into a large freshwater reservoir. The East Dam, home to one of the Hong Kong Global Geopark sites, is where you want to end up. Start at Pak Tam Chung park entrance. Optionally detour to check out Sheung Yiu Folk Museum, a 19th-century fortified Hakka village. Then you can either hike to East Dam on MacLehose Trail Section 1 (a 10km, mostly flat walk on paved roads) or take a taxi from the bus station. There is a water sports centre along the way (check for opening hours) and the views are spectacular as green hills, sheltered coves and the blue sea all merge into picture-postcard scenery. The dam itself is part of the Geopark with its signature volcanic rock columns. Hike further along the trail, which turns into MacLehose Trail Section 2, for 30 minutes, and you reach Long Ke Beach, arguably Hong Kong’s most pristine beach – pollution-free with silky sand and clear waters. 船湾淡水湖——船湾郊野公园 The largest reservoir in Hong Kong, Plover Cove is best known for its splendid scenic views, cycling, rustic villages, and hiking trails to satisfy allcomers. Start at the village of Tai Mei Tuk where you can rent a bike to ride along the two-kilometre dam. Popular Bride’s Pool, fed by waters from several waterfalls, is nearby. The Plover Cove hiking trial will test your fortitude: the 15-kilometre hike includes multiple steep ascents and descents. Despite its difficulty, the trail is popular among experienced hikers for its stunning view over the reservoir. At its end is a breezy relaxing stroll along the main dam, with more splendid views. The northwest end of the dam is a popular barbeque site.

As the belated Tokyo Summer Olympics finally gets underway later this month, Hong Kong is reading to send its delegation there. A delightful surprise entry is Stephanie Norton, who becomes the first female single-handed dinghy sailor to qualify for the Olympics for Hong Kong. CityLife talks to Steph, the 20-year-old Hong Kong native, on her historic achievement and what she hopes to accomplish in Tokyo.

I grew up here; I went to the Australian International School in Kowloon Tong. After my exams, I decided to devote to sailing full time; I am currently studying design at an online university.

I got involved in sailing when I was little. My father liked to sail, as did my older brother. So I naturally took up the sport. I like dinghies. I started with Optimus, then went on to sail the Lasers and the 470s. I’ll be sailing the singlehanded (one person) Laser Radial Class at the Olympics.
我很小的時候就開始航海了。我父親喜歡航海，哥哥也喜歡，所 以我很自然地開始了這項運動。從奧運會開始，然後是 Lasers 和 470s。我將在奧運會上駕駛單人輻射型帆船。
As I sailed more and more, I began to enter competitions. There aren’t that many competitive races in Hong Kong, so I raced in other places a lot. I qualified for the Olympics by placing third at the Mussanah Open Championship in Oman in April. The top two finishers would qualify for the Games for Asia. A guest sailor from Netherlands came in first but she was not eligible for qualification, so I was in! The medal race was a real tight competition. The course was shorter, and anything could happen. I was so happy to qualify! I am looking forward to competing amongst the best at the Olympics. My goal is to learn as much as possible. At this level, the skill differences amongst the sailors are small. I would prefer lighter winds, with flatter waters and lighter sails. The top sailors, say from Europe, tend to be bigger and stronger and have more experience, which are advantages in windier conditions. I have an excellent support system from the Hong Kong Sailing Federation. The Hong Kong Government designates sailing as a development sport, which allows it to receive financial support. From the Head Coach Jamie Boag to my coach Ben Koppelaar, and to all the other support stuff – it’s all world class. I love Hong Kong; it’s my home. There are so many things to do, and everything is so fast paced. You can leave the city and be in the countryside in minutes. It is really difficult to get bored here! I love the outdoors. I love water sports, and hiking. Hong Kong has so many great trails. I also love the local food – char siu fan and milk tea – they are great! ■

iovanni Pina is a prestigious bakery in Bergamo in Italy’s Lombardy Region. The iconic centuryold establishment has decided to expand outside of Italy to Hong Kong, with the goal of offering unmatched Italian coffee and pastries to a city that has long welcomed quality Italian cuisines of all kinds. The famous bakery brand is now run by Giovanni Pina, a third-generation descendant who bears the brand’s name and is widely recognised as a master baker in his own right. Pina, with over four decades of baking experience, has won numerous culinary awards over the years. For his first venture outside of Italy, Giovanni Pina has decided to personally oversee the operations of the two outlets that were recently opened here. To ensure the food maintains the business’s stratospheric standards, Pina uses an original Italian yeast that has been used for over 100 years. The natural yeast is grown and fermented without any chemical additives or artificial preservatives; it is then used in carefully chosen Italian flours that produce the various desired types of dough for baking. Besides bakery items, Giovanni Pina offers a full menu of Italian fare. For our meal, we sampled a nice smattering of the more popular dishes. For appetisers, we had Fresh Mussels Sauteed with Garlic, Tomato & White Wine Sauce served with Toasted Ciabatta Slices ($168) and Homemade Venetian Creamy Halibut Paste served with Toasted Ciabatta Slices ($128). Both are tasty and the wine sauce is perfect for dipping the bread into. The risotto dishes are excellent as well. Seared Scallops, Asparagus and Parmesan Risotto ($188) is rich and savoury. The

Risotto al Nero di Seppia ($168) – black ink squid – is also delicious. But clearly desserts took centre stage, and we had the full measure. We sampled Lemon Meringue Tart and the Sacher all’Italiana. The tart pastries included Cannoncini Crème, a handmade puff pastry meringue cream roll with 144 layers, and a must-try item, Apricot Jam Shortcrust, Mini Shortcrust with Custard and Fresh Fruit, and Cream Bigne. For the gelatos, another specialty of the restaurant, we tried four: Yellow – Custard; White – Double Milk; Pink – Strawberry; and Green – Pistachio. All are refreshing, creamy sweet and delicious. The restaurant also makes Artisan Gelato, a specially concocted chocolate gelato made from the freshest ingredients. In addition to its coffees and teas, Giovanni Pina offers a selected collection of cocktails and wines. We had Friuli Collezione Privata Extra Brut DOC ($68), a dry, light sweet sparkling wine, Friuli Colle Orientali DOC ($58), a refreshing white, Italian Classic Cocktail ($68), Iced Rich Chocolate ($62) which is yummy, and Cafee Milani House Coffee ($42), its signature coffee. Our visit to Giovanni Pina turned out to be a delightful experience. The desserts and cakes certainly live up to their reputation and the restaurant offers so much more. Whether you are in the mood to sate your sweet tooth or just want a relaxing meal with friends, Giovanni Pina has you covered. We highly recommend it. ■

ucked away at the expansive patio next to JW Marriott Hong Kong’s swimming pool is Fish Bar, the hotel’s well known seafood restaurant that offers fresh catch and sustainable seafood in a relaxing alfresco setting. We were delighted to have the opportunity to dine at the restaurant and check out its offerings and ambience.
Crab and Lobster Cake ($280) and Mussels & Fries ($310) were next. The crab cake is unusual in that it is minced with lobster meat, adding just that extra, tasty flavour to the baked patty. The yummy New Zealand Ikana mussels were stewed in white wine, garlic, fresh thyme and cream.
No strangers to the hotel, we are always struck by the somewhat incongruous sight of a swimming pool and its large deck in the heart of the city, amidst the surrounding skyscrapers and the bustling crowds therein. Still, we appreciate it as a relaxing and tranquil urban oasis.
More to come – Lobster Linguine ($410) is quite a treat. The whole Boston lobster, cooked with mild mushroom and lobster sauce, is succulent and tender and is perfect with the linguine. We had to try the fish, and we were recommended Glacier 51 Toothfish (market price), a premium sustainable fish, with choice of creamy mashed potato, fat chips or loaded potato and choice of sauce and served with seasonal vegetables. The grilled fish is delicious.
Fish Bar’s outdoor décor is casual and relaxing. Spaciously placed table settings around the patio offer a close view of the pool. Kitchen staff in the open kitchen busily prepare the various seafood items; the service is friendly and attentive, and the ambience oozes relaxed comfort from the get-go. Fish Bar’s menu offers a wide selection of high-quality seafood, including jet-fresh seasonal oysters, lobsters, crabs, mussels, other seafood items and sea-caught fish. While the green salads, sandwiches and burgers are enticing, it’s the seafood that is clearly the culinary highlight. We were already in the mood to relax, have fun and enjoy the food. We started with Chilled Seafood Tower ($1080), which consists of a large collection of fresh oysters, king crab legs, Boston lobster, pink prawns, cherry stone clams, mussels and more clams. There is a lot of food there, and it is a perfect sharing dish for 2 to 4 persons.

What is a hearty meal without desserts and drinks? We went all out with Triple Chocolate Mousse ($110), dark chocolate, milk chocolate, white chocolate crisp, and Pina Colada ($110), coconut and rum cremeux, passion fruit curd, pineapple compote, coconut butter – both are light and refreshing. The food went well with a variety of drinks that included Watermelon Cocktail, Passion Fruit Cocktail, White Wine and Beers. Fish Bar offers a most relaxing setting for a filling meal of fresh seafood, cool desserts and icy drinks. The cooling poolside dining experience is a sure winner in the heat of summer, and perfect for a happy gathering with friends. We can’t recommend it enough.■

BEDU Aptly self-described as a hidden neighbourhood gem, Bedu lies in the labyrinth of alleys and streets just west of Soho, above Central. The restaurant, which opened about three years ago, is known for serving Middle Eastern food, inspired by the Bedouins of North Africa, as the name suggests. Bedu’s food is characterised by the use of spices, smoky flavoured dishes from the grill, and its roots in Middle Eastern street fare – in other words, hearty, zesty, appetising food. We were there to try some of Bedu’s signature dishes. We began with two classic starters, accompanied with Homemade Flatbread ($55), which is light and tasty, and perfect for dipping. The first was Smoky Hummus ($60), a creamy hummus, slightly smoked. Then we tucked into the Honey Baked Feta ($115) with black pepper–infused honey, which has unique flavour that splendidly brings together its disparate ingredients, to make quite a treat. For the main, Garlic Prawns ($190), fennel, chilli, lemon is excellent. The prawns are large and succulent, its flavour and aroma accented by the spices used. Rack of Lamb ($210), garlic labneh, za’atar oil is also a treat; the grilled New Zealand lamb bites tender, and the spices work their magic again. We tired another signature Bedu dish – Charred Broccoli ($120), kale, chilli, zhoug, which is visually appealing, lovingly prepared, and tastes as good as it looks – the broccoli is mixed with the garnishes and charred to a crispy skin – definitely a masterpiece from the chef. Our meal ended with Turkish Kisses ($90) – whipped marshmallow, strawberry, watermelon and dill – a sweet but light smorgasbord of fruity and sweet delights. Bedu also offers a wide selection of exotic Middle Eastern cocktails, mocktails, beers and wines. We went for two: The Princess ($105), strawberryinfused Absolute Vodka, blackberry and walnut syrup, lemon juice and The Mellow King ($95), which is vanilla-infused three-year-old rum, roasted marshmallow syrup, espresso, fresh cream and chocolate bitters.

Mama’s Kitchen Mama’s Kitchen is best described as labour of love by a diverse community of caring mothers in Hong Kong who hail from various countries across the world, and who contributed their home cooking menus to make dining at Mama’s kitchen a happy dining experience. The founder of Mama’s Kitchen is Mel Balik, a high-energy, vivacious Filipina entrepreneur who made her career running high-profile F&B outlets in Hong Kong and elsewhere. The concept was conceived during the Covid-19 pandemic when dining out and travelling were restricted, and a group of friends (well, mamas) wanted to be able to get together and share their yummy home-cooking recipes. Almost 20 mamas contributed to the initial menu, which was subsequently pared down. The restaurant now serves principally Filipino cuisine, augmented with Indonesian, German, Chinese, and Turkish dishes. Still, any of the mamas is available to cook for private events or functions using her special recipes.

From the lunch set menu we chose Mie Goreng ($78), the classic Indonesian fried noodles served with chicken, and Sizzling Pork Sisig ($128), a popular Filipino dish of chopped pork cubes, sauteed onions, citrus juice & chilli peppers served on a sizzling plate – both taste delicious.

From the Filipino Feast, we chose two popular dishes. Tapsilog, which is beef tapa, garlic, fried rice, and egg, and Lechon Kawali, deep-fried crispy pork belly, served with fried rice and egg. Both are appetising and hit the spot. To round out the meal our desserts and drinks which include Halo Halo ($68) and Leche Flan ($68), a fruity pudding, Salabat ($40), Filipino-style ginger and lemon tea and Lemongrass & Ginger Tea ($40).

Arthur Hacker reveals Hong Kong's first-ever flying machine 亞瑟·克赫回顧香港第一架飛機的歷史故事

ust inside the entrance to Hong Kong International Airport, suspended from the ceiling, is a replica of Charles Van Den Born’s Farman ll biplane, the first airplane to fly in Hong Kong. The idea of building the replica emerged over a few beers in the bar of the Volunteer Officers' Mess in Central. It was a stirring idea, but turning this alcoholic pipedream into reality took five long years. The Hong Kong Historical Aircraft Association was formed to provide support for the project. Finally, on 15 November 1997, American pilot Roger Freeman took to the skies at Chek Lap Kok – where the new airport is today – in the replica plane. The craft cost $1.5 million to build, with sponsorship from the local office of oil giant Shell covering much of the production cost. Belgian aviator Charles Van Den Born was a man who liked to win. The former champion cyclist was granted a pilot's licence in 1910, a year after Louis Bleriot's inaugural flight across the English Channel. ln Europe, competition in aviation was stiff and records were being broken almost every day by intrepid birdmen. So Van Den Born travelled east in his quest for glory.

ln January 1911, pioneering American aviator Captain Thomas Baldwin sought to arrange a flying exhibition in Hong Kong. ln 1891 he had made the first balloon ascent and also the first descent by parachute over the territory, so it was not expected that he would be refused permission by the Hong Kong Government to stage the event, but he was. A French attempt was also frustrated. The official line was: "Government, however well disposed towards airmen, cannot allow promiscuous flying about the Island and the Territory." The authorities finally relented and allowed Charles Van Den Born to attempt a flight at Shatin. Why a Belgian should be considered more trustworthy than a Frenchman or an American is not clear. On 18 March 1911, the Governor, Sir Frederick Lugard, and thousands of spectators travelled to Shatin on a special train to witness the colony's first flight. The cost of tickets ranged from 50 cents to five dollars, with a ride available in the plane – a Farman biplane named ‘Wanda’ – for the sum of 75 bucks. Unfortunately, strong winds prevented Wanda from taking off. Most of the disappointed

spectators caught the 5.10pm train back to Kowloon. However, after the Governor and the multitudes had departed, the wind dropped and Van Den Born did indeed take to the skies, watched by a few despondent water buffaloes, a handful of elderly Hakka peasants and an intrepid reporter from the Hong Kong Daily Press, who wrote: "Like a bird the biplane rose in less than 100 yards, soaring upwards to a height of 300 feet. At this level it encircled the aerodrome, then shot upwards. After sailing around at the greater altitude for some time the flaps were adjusted and the machine dived until within a hundred feet or so of the ground. With the quickness and certainty of a bird its downward motion was changed and it sailed along at this height for some time and then alighted easily near the garage." A week later, there was another demonstration at Shatin. The aviation buffs that went along witnessed Hong Kong's first plane crash. With a sickening thud, Van Den Born's machine bit the dust while trying to avoid a crowd of schoolboys from Queen's College, who were playing football on the landing strip. The Winged Walloon was unhurt and lived to fly another day. He moved on to Canton (now Guangzhou) where he put on a flying show for the Manchu General, Fu Chi, known as the Guardian of the Cantonese. Unfortunately, just after the show, a republican gunman shot General Fu dead. Further aviation displays in China were cancelled. The replica of Wanda, which now hangs in Hong Kong's International Airport, was named The Spirit of Shatin in honour of that first Hong Kong flight, by a birdman from Belgium.■

Censers were popular in the Han dynasty. This goose-shaped censer is life-like. The back of the goose body is latticed, allowing smoke to rise from it. The censer is similar in function to the more well-known boshanlu-style censers from the Han period, but its form is very different. Incense was burned not just for the aroma, but also for practical reasons, such as acting as an insect repellent, and to purify the air. Combining aesthetics, practicality, and philosophy, censers are of high artistic and historical value. ‘Chu Teh-Chun’s Symphony & Film Premier’ at Alisan Fine Arts Until 31 July Alisan Fine Arts is holding a solo exhibition for the renowned Chinese-French abstract artist Chu Teh-Chun under the French May Arts Festival, its fifth for the artist since 1997. Chu studied watercolour and oil painting at the National Academy of Art under Lin Fengmian, alongside two other important artists Zao Wou-ki and Wu Guanzhong. Chu’s signature abstract style coalesced in 1956, after he moved to Paris and he attended a major exhibition of works by French artist Nicolas de Staël, known for his abstract landscapes. Originally the home of the commander-in-chief of the British forces, the museum houses a huge collection of tea ware in Hong Kong's oldest surviving colonial building. Centre for Heritage and Arts The revitalised Central Police Station compound, the largest heritage project in Hong Kong, has opened its doors to the public as Tai Kwun – Centre for Heritage and Arts. The CPS compound comprises 16 historic buildings, including three declared monuments (Central Police Station, Central Magistracy and Victoria Prison), on a 13,600-square-metre site in the heart of Central. An international-grade art gallery and an auditorium have been added to contribute to the adaptive reuse of the site. The heritage site includes new art galleries and the Parade Ground and Prison Yard. Hall of the Cosmos and Space Exploration Covering a total area of 1,600 square metres, the "Hall of the Cosmos" and "Hall of Space Exploration" house a hundred new exhibits, of which about 70 percent are interactive. While not complete, West Kowloon already has much to offer. The Art Park is great, as is the Free Space. The Xiqu Centre, which is located at Austin Station, attracts many international visitors. There is now a driverless people mover that takes visitors around the Free Space; the waterfront and park spaces are also nice; there are street performances, and you can rent a bicycle to ride around too. And it’s pet friendly. There is a lot to do there.
