e welcome you to Hong Kong and to CityLife, the monthly magazine for visitors to Asia’s World City. As you know, the COVID-19 coronavirus outbreak is now global, with the World Health Organization formally declaring it a pandemic on 11 March. As a result, already limited global travel was restricted further, affecting Hong Kong and other global cities in equal measure. Hence, we appreciate your coming to our city under these trying circumstances. Understandably, almost all events and activities have been postponed and major attractions such as theme parks are closed until further notice. While Hong Kong was one of the earliest places to see an outbreak of COVID-19, the number of new cases has been modest, thanks to the vigilance of the Hong Kong people and the effective measures taken by the government. As such, as we go to print, the city remains open, including all the hotels, the transportation systems, shopping malls, cinemas, shops and restaurants. The city remains safe and clean and there are still plenty to do here. Still, when making plans, we suggest you check with your concierge for the latest updates on what’s on and any news or advice. While you are here, you may want to take advantage of the pleasant weather this month and explore the Hong Kong cityscape and its geographical and cultural diversity. Why not check out some of the city’s most iconic spots and landmarks and take indelible images that you can share with friends and family? Our cover story on page 4 titled “Postcards from Hong Kong” features a baker’s dozen of spots that you’ll surely not want to miss. Part of what makes Hong Kong such a fascinating city is its east-meet-west culture. Nowhere is this more manifested than the ancient custom of worshipping Chinese deities at the many temples in which they reside. There are over 600 temples in the city, with plenty located in the heart of the city in amongst the gleaming skyscrapers. A few of the deities’ birthdays fall in April, so it’s the perfect time to explore these temples and learn more about the local gods. Please see our feature story on page 12 for more details. With restaurants still open, and every chance of an available table, we recommend you take full advantage of all the culinary delights that Hong Kong has to offer. Check out our food and drink sections sections beginning on page 20 for a review of some of the city’s best restaurants and bars. or centuries, Hong Kong was a sleepy outpost of various Chinese dynasties, the area consisting of a few small fishing villages and rural hamlets. When the British arrived almost 180 years ago and created a thriving entrepôt, nearly everything changed. But superstition and worship of deities and Chinese religions continued to play an integral part of daily life for local people, and Chinese temples were focal points of social and religious activities. Thus, despite the magnitude of the development over the last two centuries, Hong Kong has managed to preserve around 600 temples, shrines and monasteries that worship these deities, many in their original state. With so many deities being called upon to protect the locals from calamities and evil power, it can be confusing to get a sense of who’s who among them. This guide introduces several of the most popular deities and their temples, notable for either their historical or aesthetic appeal. As a bonus, several deities’ birthdays fall in April this year, meaning you may be able to catch a special celebration event during your visit. Do take a tour of Chinese temples where you can observe the rituals and appreciate the colourful architecture and elaborate presentation. Almost all take donations, though these are strictly voluntary. Enjoy your temple hunt.

Tin Hau 天后

The patron Goddess of the Sea who protects fishermen and sailors, Tin Hau is far and away the most common deity worshipped by local Hong Kong people, fishermen or otherwise. Over 100 Tin Hau Temples are still in use. Tin Hau – which means heavenly empress – was Lin Mo, a woman born during the Song Dynasty in Fujian, who was deified after she purportedly performed numerous miracles to protect the local fishermen. Her birthday, which this year falls on 15 April, is celebrated widely by temple goers. Here are two for you to check out: 天后被稱為守護海洋的女神，意在保護漁民和水手，無疑是香港本地人，漁民最崇拜的神。目前香港有100多個天后廟，仍被用來供奉這位宋朝出生在福建的林默，據說她為保護當地漁民做出了許多事情，創造很多奇蹟，逐漸被神化。今年 4月15日是她的生日，寺廟裡會有很多人慶祝。推薦兩個值得參觀的天后廟：

Tin Hau Temple at Joss House Bay 大廟灣佛堂門天后古廟

Located on the Clearwater Bay peninsula, this is the oldest and one of the most sacred temples in Hong Kong. Built in 1266 during the Song Dynasty, it includes a nearby rock with a carving dated 1274, the earliest known inscription in Hong Kong. Thousands flock to the temple on Tin Hau’s birthday via a special ferry arrangement from North Point. It is also normally accessible by Public Green Minibus 16 from Po Lam MTR Station. Get off at the entrance of Clearwater Bay Golf Club and it’s a short walk down to the temple by the bay. 位於清水灣半島，是香港最古老，最神聖的廟宇之一。附近有一塊石碑，立於宋朝的1266年，雕刻日期為1274年，是香港已知最早的碑文。數以萬計的人在天后生日當天從北角乘搭特別渡輪前往天后廟。平時可由寶琳港鐵站乘搭16號專線小巴前往。在清水灣高爾夫俱樂部入口下車，沿着海灣走一小段路即可到達。

A popular destination right in the heart of Kowloon, the complex features five buildings, with the oldest the Tin Hau temple itself, constructed around 1864. Known as a god of protection, Che Kung was a general in the Song Dynasty who was honoured by his emperor for supressing a rebellion in southern China and worshipped for his loyalty and bravery. By local custom, the Hong Kong’s top government officials pay tribute to Che Kung during the Chinese New Year.

Che Kung Temple, Sha Tin 沙田車公廟

It was said that the locals built a Che Kung temple in the late Ming Dynasty in the 1600s to quell a disease epidemic. The original temple still stands but has been substantially renovated. A native of Huizhou in Guangdong province during the Yuan Dynasty, Tam Kung possessed supernatural powers at the age of 12. He could command the wind and rain, cure the sick and forecast weather, making him a popular deity among the fishermen. In temple images, he is shown with a boyish face, signifying his deification at a tender age. 原為廣東惠州人，在12歲時擁有超自然力量，能指揮風雨，治病和預測天氣，逐漸成為漁民的神靈。因為他實在年輕時被神化，所以廟宇裡他的雕塑還是張孩子的臉。

Built in 1905 by fishermen who came from Huizhou, the temple celebrates Tam Kung’s birthday – which this year falls on 15 April, replete with a noisy procession and lion and dragon dances. Also known as Supreme Emperor of the Dark Heavens, Pak Tai was a prince in the Shang Dynasty (circa 1900 to 1046 BC) who was appointed by the Jade Emperor to defeat the Demon King and was granted his title following his triumph. This beautiful temple, easily missed a short walk up from the wellknown Blue House in Wanchai, is known for its size and presentation. The temple was built in 1863 but houses a 400-year old statue of Pak Tai in the main hall. Pai Tak Temple, Cheung Chau 長洲北帝廟

During a plague outbreak in 1777, in the Qing Dynasty, the early settlers of Cheung Chau – mostly fishermen from coastal Guangdong province – carried an image of Pak Tai to the island in an attempt to quell the disease. This temple, in honour of Pak Tai, was completed six years later. Today, it is also the site of the quirky and colourful Cheung Chau Bun Festival, which celebrate the containment of the plague and venerates Pak Tai and other popular deities. One of the most popular deities, known for sympathy, compassion and mercy. Kwun Yam is worshipped by both Taoist and Buddhist followers and evolved to be a female deity in the Tang Dynasty. Hung Shing God of Southern Sea

Originally a government official in the Tang Dynasty, Hung Shing died at an early age from his devotion to work and study – astronomy, geography and meteorology – leading to his deification. Even after his death, Hung Shing continued to guard people against natural disasters and was widely worshipped in southern China, including the fishing villages of Hong Kong.

WHAT’S IN A NAME – STANLEY 「赤柱」之名

Arthur Hacker reveals the little-known story of Stanley 亞瑟．克赫細說「赤柱」之名

rom the early days of Hong Kong, British politicians provided the colony with a string of familiar place names: Peel Street, Wellington Street and Aberdeen were all named after British Prime Ministers. However the names and titles of British aristocrats – frequently active in the politics of the day – can be somewhat confusing, even to history buffs. For example, Hong Kong's popular fishing port of Stanley is named after Prime Minister Lord Stanley, who in 1841 – when the colony was founded – served as Colonial Secretary. He was a direct descendent of the Lord Stanley in Shakespeare's play King Richard III, a nobleman who changed sides in the middle of the Battle of Bosworth and, as a result, was made Earl of Derby by the victor, King Henry VII, who just happened to be his stepson. Onward from that famous moment in 1485, English history became littered with politicians called Stanley or Derby, or both. Best known to the general public is the 12th Earl of Derby (named Edward Smith-Stanley) who had a horse race, "The Derby", named after him in the early 19th century. In 1851, this Lord Stanley inherited the title of Earl of Derby, becoming known as Lord Derby.

On becoming an earl, he lost his courtesy title of Lord Stanley, so from now on let us call him simply "Derby". A great sporting man, known to say that he was too busy shooting pheasants to attend to politics, Derby nevertheless served as Prime Minister three times, in short bursts during the 1850s and 60s, through a politically chaotic period that reshaped the British party system. He was a brilliant orator and persuaded many MPs and others to follow him as he broke away from the strong Whig Party of the day. However, his ability to forge a practical and lasting political bloc faltered and it was only by sliding into the emergent Conservative Party that he found a secure base. He went on to lead the new Conservatives for 22 years, a tenure unmatched in any party, and he was hugely influential in the development of the rising party. In spite of his sometimes lackadaisical attitude, his administrations achieved a great deal, notably his Reform Act of 1867, which gave the working class the vote for the first time in Britain. Meanwhile, his foreign policy focused on avoiding getting the country involved in expensive wars. Hong Kong became a British colony as the result of the Opium War (1839-1842), at a time when far-reaching decisions of policy and

diplomacy were necessarily taken in the field – it could take many months for a letter from Hong Kong to reach London. Entire wars could run their course before anybody in Britain even knew about them. When the Tory opposition party found out about the Opium War, they moved a motion of censure against the Whig government, which was only defeated by nine votes, such was the strength of the anti-opium lobby in Great Britain at the time. History repeated itself with the Arrow War (1856-60). This conflict had been sparked by a petty squabble between the Governor of Hong Kong, Sir John Bowring, and the local Viceroy, Yeh, over the arrest by Yeh's officials of the Chinese crew of a lorcha called the Arrow, who they thought were pirates. The real problem was that the boat was flying a Union Jack at the time, and was therefore theoretically under British protection, though it turned out that the craft had no legal right to fly the flag. The Whig government supported this war, but parliament objected. Derby, as leader of the Tory party, successfully achieved the seemingly impossible by uniting various opposing factions for a debate that the ruling Whig government lost. The Prime Minister, Lord Palmerston, and his Whig government resigned. Although the debate appears in the occasional Hong Kong history book, nobody seems to have noticed that the fishing port of Stanley is actually named after the British politician who forced the British government of the day out of office because of its part in the Arrow War, still remembered in China as further humiliation at the hands of Western colonialists.■

hat happens when a superb Cantonese restaurant partners with an exalted Burgundy winery to create a masterful wine-paired meal? An eagerly anticipated and memorable dining experience, for sure. More than that, it defines another milestone in the evolving sophistication of wine-paired Chinese dining, and one that is much talked about. The partners behind this exclusive arrangement are Golden Leaf at the Conrad Hong Kong, one of the city’s finest upscale Cantonese restaurants, and Albert Bichot, a much-acclaimed, sixth-generation winery in Burgundy, France. The subtler and more refined flavours of Cantonese food have long made it the favoured Chinese cuisine for wine-pairing. Over the years, wine-pairing Cantonese dining has gained popularity and sophistication. For this endeavour, Chef Tony Wan Chung-yiu has devised a menu of new dishes tailored to bring out the complexities of Albert Bichot wines. The Wine-pairing Tasting Menu ($1,800 dinner; $2,500 including wine pairing) is a seven-course dinner paired with five wines from Albert Bichot, including three special bottles exclusive to this occasion. We were first treated to a welcome champagne that is light and refreshing. The meal then started with Pan-seared Hokkaido Scallops, Green Asparagus, Garlic Sauce, paired with a glass of 2015 Bichot ‘Vieilles Vignes’ Bourgogne, an excellent Pinot Noir that is dry, balanced and citric, with a hint of cherry flavour that perfectly sets off the scallops. Another delicious and aromatic dish, Sauteed Crab Claw, Scrambled Egg White, Black Truffle, is paired with a 2013 Pommard Clos des Ursulines Pavillon, a smooth, fruity wine with ripe tannins and subtle in its flavours. The

claw meat is sweet and tender, its flavour tantalisingly enhanced by the black truffle aroma. Wok-fried Kagoshima A5 Wagyu followed, paired with a 2017 Bichot ‘Vieilles Vignes’ Bourgogne, a top-notch Pinot Noir that superbly complements the beef’s rich flavour. We liked the new wrinkle of wok-frying the Wagyu, which keeps the beef tender while retaining its marbled texture. The same wine is paired with the next dish, Duo of Iberico Pork, Mushroom, Black Pepper, Osmanthus Sauce, the flavour of the dish enhanced by a secret sauce concocted by Chef Wan. A real treat came next, Braised Whole South African Abalone, Supreme Sauce, paired with a 2014 Clos Frantin Nuits-St-Georges, from the heart of Burgundy. The rich fruity wine offers a robust, balanced palate and an intense finish that blends well with the rich and savoury sauce and the succulent abalone meat. The sumptuous meal ends with the savoury Golden Leaf Crab Meat Fried Rice, Homemade X.O. Sauce. And capped off by Bichot Crème de Cassis Delight, Blackcurrants, Coconut Milk, paired with the same Bichot Crème de Cassis, a light, sweet wine perfect for the fruity flavoured cake and Chinese petits fours. The wine-paired dinner at Golden Leaf was an immensely pleasurable experience and sets a lofty standard for others to follow. e were ready for a quality western dining experience: excellent food, relaxed and aesthetically appealing setting, and attentive service. The Continental – located on the podium floor of the upmarket Pacific Place complex – came quickly to mind, as it has been a few years since our last visit there. The Continental is spacious. It comprises a generous main area with towering windows all around, where you’ll find the main dining room and an open bar, together with an expansive garden terrace tucked between the skyscrapers – both are perfect for drinks and gatherings. The modern décor is framed by a high, stylistically textured ceiling, offering an airy and bright ambience, complemented by the rich and warm hues of its interiors. The Continental serves sophisticated contemporary European food using quality ingredients from Europe and other regions. Its large bar offers a wide selection of classic and signature cocktails as well as an extensive wine list. The restaurant is open for lunch, dinner, evening drinks, afternoon tea and weekend brunch, and is a great venue for events and banquets. For our tasting dinner, we sampled an array of the hotel’s signature dishes and cocktails, plus several wines. For cocktails, we chose from the Bartender’s Choice ($90 each), curated to offer the five taste flavours of spice, bitter, sour, sweet and umami. Our picks were: Rum & Jerry, a refreshing citrus drink; Wild Rose, a sweet and tasty gin concoction; and Umami Apple, a vodka drink that derives its umami flavour from the mushroominfused Ketal One vodka. Our food got off to a great start – Magnifica No.2 Raw Oysters ($320/6 pieces) from the Brittany coast are delicious and flavourful. Next was Foie Gras & Chicken Liver Parfait ($185) with a cucumber, pickled cauliflower and turmeric reduction. The combination of goose and chicken liver makes for firmer texture and an interesting taste. succulent scallops from Hokkaido never disappoint. For wines, we chose a 2017 De Martino Viejas Tinajas Muscat, ($110/glass or $550 per bottle), an aromatic, flowery white wine from Chile’s Itata Valley wine region. We shared three mains. First was Lobster & Red Prawn Spaghetti ($325): red pepper, bisque, rocket and chili. We’ve become quite partial to red prawn lately and it and the lobster meat together are a real delight. Whole Grilled Sea Bream ($335), with asparagus, tomato & ginger sauce is also tasty – we liked the texture of the meat, which was grilled just enough. The final main was 13oz Black Angus Rib-Eye ($395), an always-reliable steak cut with its stronger flavour and texture, and served with house salad, truffle pomme puree or French fries, and bearnaise, peppercorn or jus. The red wine served with the main was a pleasantly fruity, medium-bodied 2017 La Pieve Sangiovese Chianti from Tuscany ($95/glass, 450/bottle). For desserts, we had a trio of Chocolate Soufflé raspberry ice cream ($120), The Continental Fruit Crumble ($95) with Vanilla Ice-Cream and Earl Grey Crème Brulee ($80), which wrapped up the meal perfectly – we were sated and our palate happily stimulated. The Continental is a superb choice when you’re looking for excellent food, a relaxed ambience and friendly service. Do give it a try.■

The Boathouse

The Boathouse is located on the waterfront of picturesque Stanley on Hong Kong Island. You can’t miss the building’s bright yellow façade, which dominates the promenade. Due to its location and food quality, the Boathouse has long been a popular destination for locals and visitors looking for a relaxed dining experience and fresh air. Run by well-known restaurant operator Café Deco Group, the Boathouse is fresh from an extensive interior redecoration. It now offers a new à la carte menu featuring delectable seafood dishes, appetisers, mains and desserts plus lunch and dinner specials. The Boathouse’s three-storey building includes enclosed dining areas, open-air balconies, and terrace spaces, which afford diners an unimpeded view of the waterfront, the sea and the islands beyond, making it an charming dining spot and weekend destination. For our meal, we sampled several of the new dishes on offer, taking an especial interest in the seafood, which is always good here. The Smoked Salmon Carpaccio ($118) easily passed muster, as did the signature and loaded Chilled Seafood Platter ($388), which includes crab legs, prawns, crayfish, mussels, clams, sea whelks and scallops – all of them taste fresh and sweet. Finally, Gambas ($298) is tasty baked king prawn with fermented chile butter and Thai basil. Other entrees included the delicious Hokkaido Scallop and Prawn Fried Organic Brown Rice ($238); Baby Back Pork Ribs ($258) – savoury and tender; Spanner Crab Spaghetti ($198), with garlic, chili, fennel, lemon, olive oil and chive; and African Chicken ($198), another yummy treat. The desserts are excellent too: Fresh Mixed Berries and Mascarpone Mousse ($62), Coconut Sorbet with White Chocolate Foam ($62) and Gelato ($30/one scoop) are all refreshing. The Boathouse also serves a variety of cool cocktails and mocktails such as Frozen Margarita ($88), Sangria Boathouse Style ($88) and Second Breeze ($70), a citrus mocktail made with grapefruit, passionfruit and red bull.

To enjoy a hearty, delicious seafood meal while enjoying enchanting views of Stanley and beyond, we highly recommend a visit to the Boathouse.

A noted addition to Hong Kong’s burgeoning vegetarian dining scene is Miss Lee, a modern Chinese vegetarian restaurant offering fresh, home-made vegetarian dishes in an all-day dining format. Located in Sheung Wan, Miss Lee is the latest addition to the popular “Lee” family of restaurants operated by local ZS Hospitality Group. Miss Lee’s dishes cater to a range of vegetarian leanings from Buddhistfriendly (no five-seasoning), to dairy-, egg-, or gluten-free, to vegan. Its philosophy is to serve healthy, freshly prepared veggie dishes to a wide range of diners. We were there to try its popular lunch set themed Taste of Hong Kong which includes daily soup, choice of one main or more, and rice or noodles. The lunch set is priced at $118 with one main and $10 for each extra main ordered up to three in total. You can also order extra sides for $20 each. Miss Lee’s decor is clean, bright and neat. Its ambience offers a comfortable setting for a pleasant meal. For the lunch set, the items included Creamy Cauliflowers, a mildly spicy Mapo Eggplant, Stir-fried Jade Melon with Celery, Carrot, Water Chestnut and Black Fungus, Chinese Vegetable Frittata, Sweet & Sour Pineapple with Fresh Bean Curd, and Chinese Cabbage and Mushroom Glass Noodles. We appreciate that all the dishes are unabashedly vegetarian, made with fresh ingredients, rather than imitation meat dishes. The rice and noodle selection proffers: Steamed Brown Rice, Kale with Rice, Cauliflower Couscous and Truffle and Mixed Mushroom Yam Noodles. Several side dishes are offered. We chose Pearls on Lotus and Flower Bouquet, which is pickled cucumber, beetroot shiitake mushroom, julienne carrot and cabbage. For drinks, Miss Lee offers a Squeeze the Day ($25) or several juices ($25 each) such as Can’t Beet, Tropic Passion and The Green Ranger, a lime green apple, spinach and cucumber beverage. Whether it’s lunch, afternoon tea or dinner, Miss Lee is an excellent choice for anyone looking for yummy vegetarian food at reasonable prices. Check it out.

HYC Bar & Lounge

HYC Bar & Lounge is surely one of the most delightful hidden gems in the city. HYC, which serves a wide selection of gin-based cocktails and doubles as a shisha lounge, is perched atop a tucked-away highrise building in Tsim Sha Tsui. HYC’s spacious and comfortable interior is decked out in cool tiffany blue. The balcony outside is large and inviting. Both the balcony and the rooftop terrace above offer dazzling and unimpeded night views of Hong Kong from all vantage points. HYC serves an extensive list of gin cocktails plus selected other alcohol drinks. However it’s definitely the unmatched gin offerings that caught our fancy. With the help of HYC’s friendly and knowledgeable manager, we first tried several classic gin cocktails: a Pick & Mix Gin & Tonic with your choice of gin, tonic and a smoke to infuse it. We chose the Masahiro Okinawa Craft Gin, East Imperial Yuzu Tonic plus hickory-infused smoke flavour ($180). And it was something special! We also tried Ted Collins ($118), which is Beefeater London Dry, elderflower, cucumber, basil, lemon grass, lemon, yuzu tonic – a refreshing little number. Others included Negroni ($138) – Beefeater London Dry Gin, Mancino Rosso vermouth, Campari; HYC Bang ($148) – Beefeater 24 Gin, Yakult, orange, double cream, yuzu tonic, which is intriguingly sour and creamy; and Purple Haze, a citrus cocktail made with flower-infused Tanqueray Gin. Other cocktails included Chocolate Rain ($128) a Wild Turkey bourbon mix and a special delightful winebased Four Pillar Bloody Shiraz ($180). All the drinks were so tasty, and between the ambience and the views, they disappeared fast. For shisha fans, HYC offers several smoking packages, ranging from reasonable to exclusive. It also offers a Sunset Hour from 5 to 8 pm, when drinks are offered at discounted prices.

Putting together the drinks and the gorgeous views, our visit to HYC was a delightful and fun experience. We are sure to go back, and we highly recommend that you check it out too.

Censers were popular in the Han dynasty. This goose-shaped censer is life-like. The back of the goose body is latticed, allowing smoke to rise from it. The censer is similar in function to the more well-known boshanlu-style censers from the Han period, but its form is very different. Incense was burned not just for the aroma, but also for practical reasons, such as acting as an insect repellent, and to purify the air. Centre for Heritage and Arts The revitalised Central Police Station compound, the largest heritage project in Hong Kong, has opened its doors to the public as Tai Kwun – Centre for Heritage and Arts. The CPS compound comprises 16 historic buildings, including three declared monuments (Central Police Station, Central Magistracy and Victoria Prison), on a 13,600-square-metre site in the heart of Central. An international-grade art gallery and an auditorium have been added to contribute to the adaptive reuse of the site. The heritage site includes new art galleries and the Parade Ground and Prison Yard. Tap Mun, or Grass Island in English, is a small island off the Sai Kung Peninsula, a bit out of the way to get to but well worth it. You can easily walk around the island in an hour. A traditional fishing village near the ferry pier still maintains the old way of life and there are a few stores and restaurants. Be sure to try the fried rice with local sea urchin roe. To get there, take either a ferry from Ma Liu Shui or a bus from Sai Kung town to Wong Shek Pier, and then it’s a 30-minute kaito ferry ride.
