September is a great month to visit Hong Kong – the weather is still warm, but with incipient signs of autumn characterised by cooler evenings, making it a pleasant time to either explore the city’s colourful neighbourhoods on foot or enjoy Hong Kong’s great outdoors. One such district is Sham Shui Po in Kowloon – a vibrant working-class, older area undergoing an urban transformation, the kind that can be observed throughout the city in which new buildings and retail outlets crop up next to old ones and the locals’ way of life remains largely unchanged but comingled harmoniously with hip, younger residents and shops. Sham Shui Po is known for its myriad street markets, fashion outlets, down-to-earth eateries, and authentic local culture and atmosphere. Please go to page 14 for more details. One way to enjoy the great outdoors is to capture precious moments such as sunrises and sunsets. Hong Kong offers great vantage points to watch either a beautiful sunrise or a golden sunset, thanks in part of our spectacular cityscape of skyscrapers and stunning geography of mountains, beaches, rugged coastlines and tranquil bays. If that sounds like a plan, we have all the options – please go to page 16 for the best places to enjoy the start and end of the day. This month the city celebrates the Mid-Autumn Festival, an important, centuries-old occasion observed by Chinese communities worldwide. To celebrate, families and friends gather to observe the full autumn moon, share mooncakes while children play with colourfully decorated lanterns. Be sure to buy a box or two of the beautifully wrapped mooncakes as a souvenir to take home. Also, visit one of the lantern festivals, the largest of which is held at Victoria Park in Causeway Bay where you can also watch the traditional Tai Hang Fire Dragon Dance, a spectacular cultural performance not to be missed. September also marks the start of another exciting horse racing season. Hong Kong’s favourite sporting pastime offers a fun-filled experience like no other. We highly recommend getting along to a horse-racing event, either a Wednesday night outing in Happy Valley, or at the Sha Tin Racecourse on the weekend, and get caught up in the thrills of pulsating racing action. Several noted music performances are on offer this month, including by the Killers, Jessie J – she of Price Tag fame, and concert violinist Joshua Bell. Our Calendar section has the low-down on all the shows and events happening in town. You are in Hong Kong at just the right time. Whether it’s walking cool neighbourhoods, snapping a gorgeous sunset or sunrise, or celebrating the Mid-Autumn Festival by munching on mooncakes and watching a humanchain fire dance, the city is your oyster. Tai Hang Fire Dragon Dance

One of the highlights of the Mid-Autumn Festival’s city-wide celebrations, the fire dragon dance, which traces its roots to the 19th century when villagers in Hong Kong warded off an epidemic of maladies and diseases with the help of the dancing fire dragon, is a revered tradition and one of the city’s unique cultural icons. The best known of these is the Tai Hang Fire Dragon Dance, which features nearly three hundred performers manning the 67-metre dancing dragon to form a variety of movements, visually enhanced by the burning of over 24,000 incense sticks per night. The event, which has been named to China’s third national list of intangible cultural heritage takes place from 23 to 25 September in Tai Hang, Causeway Bay (best vantage point – Wun Sha Street) starting around 8:15pm each evening. A second show at 10:45pm on 24 September only winds its way from Tai Hang to the Urban Mid-Autumn Carnival in Victoria Park. Be sure to join the crowd and dance with the dragon to celebrate this beloved tradition.

大坑舞火龍每年中秋節期間，香港都會上演有逾百年曆史的傳統習俗 —— 舞火龍。舞火龍源於 19世紀，當時的居民為求消除瘟疫而起，如今成了香港獨特的風俗。屆時共有近300 人舞動長達67米、每晚插滿2.4萬多支線香的火龍，在街道上穿梭，展現不同形態。大坑舞火龍於 2011 年被列為第三批國家級非物質文化遺產。今年的活動將於 9 月 23日至25日晚上8:15左右在銅鑼灣大坑舉行，最佳觀賞地點是浣紗街。另外，於9月24日晚上約10:45至11:30，鄰近的維多利亞公園亦會舉行舞火龍活動。一起來與火龍共舞，感受百年傳統文化！

The National Day race meeting will be held at Sha Tin Racecourse on Monday, 1 October. Mid-Autumn Festival

This ancient Chinese festival traces its roots back to a time when farmers rejoiced in bountiful harvests. Traditionally, the festival celebrates three revered customs: gathering – of family and friends, often gazing at the full moon; thanksgiving – to local deities; and praying – wishing for longevity and good fortune. Today, the festival, which falls on the full moon of the eighth month of the lunar calendar, is celebrated across Chinese communities worldwide. The celebrations include the lighting and displaying of colourful lanterns, moon-gazing and eating mooncakes. In Hong Kong, there are several lantern festivals that host celebrations, with the largest and most popular in Victoria Park in Causeway Bay. Be sure to catch a dance performance or visit a lantern festival if you are in town.

中秋節中秋節源於古時農民慶祝秋季豐收。這個節日有三個美好的寓意：和家人或朋友團聚賞月，感恩神明以及祈求幸福長壽。如今，全世界華人都會在農曆八月十五滿月這天舉行慶祝活動，包括逛燈會、賞月和品嚐月餅。香港的中秋慶祝活動眾多，最隆重的要數銅鑼灣維多利亞公園，如果你在香港，一定要去看大坑舞火龍表演或逛一次燈會。

Hong Kong has elevated the making and giving of mooncakes to an art form. Millions of mooncakes are purchased each year, most of them as gifts wrapped in ever-fancier boxes. The variety of mooncakes has also proliferated, from classical lotus seed with egg yolk to ice cream and snow-skin-moon cakes to mini-mooncakes. Many hotels in Hong Kong prepare their own mooncakes, all beautifully packaged. Even the international confectioners are joining in, creating yet more modern recipes for this ancient cake. THE MATILDA AND WAR MEMORIAL HOSPITAL

明德戰爭紀念醫院 The Matilda International Hospital is now the only hospital on the Peak but it used to be linked with the War Memorial Nursing Home. 明德國際醫院現是山頂唯一一家醫院，過去與戰爭紀念護理院息息相關。

he Matilda Hospital is located on Mount Kellett Road and looks down over the South side of Hong Kong Island. It was named after Matilda Sharp, wife of Granville Sharp who provided for its foundation in his will. Granville Sharp was a Hong Kong businessman who made his money in property. Sited on a promontory, benefiting from cooling sea breezes, it is now one of Hong Kong’s top private hospitals. It was opened at the beginning of 1907. The original hospital has been expanded over the years. In about 1922 the adjacent lot was acquired to make way for Sharp House and the Tennis Court. The site across the road was also bought at this time. The Matilda applied to have the road rerouted to consolidate their facilities. This was done and Granville House, the quarters for the matron and sisters, was built on the portion within the hospital compound. It remains today inside the entrance on the right, just past the more modern Lincolne House (Lincolne was Matilda’s maiden name), which is the nurses’ quarters. During World War II the old buildings suffered damage and decay. On Christmas Day 1941 the hospital was hit by a shell barrage. Dr Montgomery (a cousin of Field Marshall Montgomery) was sheltering in the

basement and described it as horrendous. “The bombardment lasted about an hour and did tremendous damage. Parts of the building were toppling down and the noise was earsplitting, for at the same time our soldiers were blowing up their ammunition dumps nearby. We thanked God when darkness came and the guns ceased fire.” A post-war addition was the Grayburn Wing, which is named after Sir Vandeleur Grayburn in honour of his work for the hospital trustees. He was Chief Manager of the Hong Kong & Shanghai Bank at the time of the Japanese occupation and remained in the city to work on liquidating non-Axis assets in the bank. However he was not treated well and died while incarcerated in Stanley Prison in August 1943. Later his friend Mr Haakon J. Wallem donated funds to the hospital in his memory, while the bank paid for the new wing’s equipment. The main block of the original building remains but there are also more modern facilities, reflecting the current needs of the hospital. Inside much has necessarily been transformed to meet modern standards but the original corridor from the front entrance retains its tiled floor and looks much as it always did. Another hospital on the Peak was conceived as a memorial to the fallen of the

However, the public subscriptions were insufficient and it was only when the Matilda Trustees agreed to provide additional funding that construction could start. It took the form of a nursing home and opened in 1931. The foundation stone is preserved at the Matilda Hospital and the inscription reads

THE OFFICER ADMINISTERING THE GOVERNMENT ON 24TH APRIL 1930 AT THE GOING DOWN OF THE SUN AND IN THE MORNING WE SHALL REMEMBER THEM Despite the inscription its construction had been largely funded by the Matilda Hospital with which it operated as a joint facility.

Neglected during WWII it was sold in 1947 to the Admiralty who converted it into a Royal Naval Hospital. This was commemorated on the Foundation Stone by the addition of the following inscription:

THIS BUILDING WAS ACQUIRED AS A ROYAL NAVAL HOSPITAL ON THE CONCLUSION OF WORLD WAR II AND WAS OPENED AS SUCH ON 12TH JANUARY 1949 The War Memorial status of the Nursing Home was transferred to the Matilda and, although now publicly called the Matilda International Hospital, its statutory title is still the Matilda and War Memorial Hospital. As Hong Kong’s garrison was reduced the need for the Naval Hospital declined. The Government acquired it from the War Department in 1967 with a view to converting it into an infectious diseases convalescent hospital. The costs of renovation were found to be too high and so the Government sold the site. The site was developed as a small estate of luxury houses, which are No. 14 Mount Kellett Road. Although there were other hospitals on the Peak, today the Matilda remains the sole survivor continuing a tradition spanning more than a century. The parts of its old building serve to remind us of life on the Peak in the ‘Good Old Days’. ■

he 2018 Sun Hung Kai Properties Hong Kong Cyclothon, now in its fourth edition and firmly establishing itself as one of the major sporting events in Hong Kong, will be held on 14 October on the waterfront of Tsim Sha Tsui and beyond. This day-long cycling fest combines the opportunity for cycling enthusiasts of all ages to ride through the streets and iconic landmarks of Hong Kong with the spectacle of action-packed racing by the world’s top professional cyclists. Starting off near the waterfront of Tsim Sha Tsui in Kowloon, Hong Kong’s popular tourist district, this year’s Cyclothon comprises three races and five cycling events. The popular 30km and 50km rides will anchor the morning’s activities as riders speed along some of Hong Kong’s stunning landmarks including iconic bridges and tunnels, with the famed Victoria Harbour as the backdrop. Rides for families and children as well as the CEO Charity and Celebrity Ride will round out the morning events as participants ride gently through the streets of Tsim Sha Tsui in a true display of community spirit and fun. In the afternoon, the serious racing gets underway, starting with the Women’s Open Race, followed by the Elite Partners Men’s Open Race, the latter event taking place on the 4.3-kilometre closed circuit that stretches from Salisbury Road in Tsim Sha Tsui to nearby Hung Hom. Then, Hammer Hong Kong – the marquee event – takes centre stage for the first time ever in Hong Kong. Eleven UCI WorldTour teams and three Pro Continental teams, plus the Hong Kong National Team, will compete for the event title as well as the overall championship of the season-long series, of which the Hong Kong stop serves as the finale. Between good-spirited rides and intense, pulsating action, the 2018 Sun Hung Kai Properties Cyclothon promises to be a fantastic event for riders and spectators alike. The Hammer series, which began in Europe in 2017, adopts an innovative team format. The event was developed around a city hub concept with the vision of bringing professional road cycling into the hearts of the best cities in the world. Since its inception, it has caught the attention of the professional cycling world with its all-out sprinting pace and tactical challenge. Hammer Hong Kong, sanctioned as a UCI Asia Tour Class 1.1 Road Race, will be the final event for the 2018 Hammer Series. The competition features two races. First is the Hammer Sprint, in which each team’s five riders go flat out over 10 laps with points up for grabs for each team, based on the first 10 riders in the sprint at the end of each lap. Then comes the penultimate race, the Hammer Chase, a five-lap chase in which teams set off at time intervals (their order based on accumulated points from the Hammer Sprint race), as riders chase and battle to get ahead of each other. There will be two groups competing: the runners-up group go first, followed by the finalist group from which the Hammer Hong Kong winning team will be crowned, with the first team whose fourth rider crosses the finish line first declared the winner. Take Bus 15 from Central to the Peak, then follow the Peak Circle Walk next to the Peak Tower.

gourmet dinner with gorgeous rooftop views of Victoria Harbour should be a highlight of any trip to Hong Kong. One of the top choices is SKYE, the much-touted French restaurant and rooftop bar at the historic Park Lane Hong Kong in Causeway Bay, the city’s famed shopping district.

Upon entering the spacious restaurant, one is immediately drawn to panoramic views of the city, framed by the mountains behind and Victoria Park below. The restaurant’s decor is airy, bright and sleek, effecting a vibrant and welcoming ambience. What blew us away though was the rooftop bar adjoining the restaurant. The large bar area occupies the outside deck and features an illuminated bar and a DJ pumping out lively music. SKYE serves contemporary French; its chef, Lee Adams, who learned his culinary skills at several Michelin-starred restaurants, has created an innovative menu incorporating fresh ingredients from both West and East, particularly seafood, and augmented it with a nice collection of wines and creatively concocted cocktails. We tried the special Degustation Menu ($890 per person), paired with selected wines ($500 person extra). After some tasty amuse bouche, we started the dinner with Raw French Coastal Oyster, with Kaviari Oscietra Prestige Caviar, Pickled Oyster Mayonnaise, Ice Leaf, Iberico Chorizo Oil, an interesting way to prepare raw oysters. Next came Duck Foie Gras & Australian Abalone with Pickled Granny Smith Apples, Burnt Apple Puree, Daikon, Crisp Quinoa – the combination

of foie gras and abalone works tantalisingly well. Braised Baby Octopus with Samphire, Preserved Lemon, “XO Sauce” was served next, ahead of the entrée. The octopus meat tastes superb, its texture chewy but tender, and the XO sauce adds an understated spiciness. Our main course was Sirloin at Stockyard Black Label MB 8+ Beef, which is wagyu beef with cavolo nero, romanesco, black garlic, crisp kale, smoked and sweet mustard. The tender sirloin was grilled just right – tender, juicy and flavourful. The meal ended with two desserts plus petite fours – Summer Peach Sorbet, white peaches sous-vide in tea-puffed rice, and Ethiopian Coffee Baba, Dulce de Leche Ice Cream, Blackberries, Pecans which was a real hit at our table. We would be remiss not to mention the pairing wines, of which there were a generous six selected from five countries, a testament to Hong Kong’s reputation as one the world’s foremost wine hubs. Our selection included two Spanish whites: Doniene Gorrondona Bizkaiko Txakolina 2016 and Ximénez-Spínola PX Vintage 2015; a very nice (sweet) Schloss Proschwitz Weissburgunder Grosses Gewächs 2013; an excellent California 2015 Sobon Estate “Rocky Top” Zinfandel, from the Sierra Nevada foothills; and a sweet Piedmont La Morandina, Muscato d’Asti 2017, plus a Campbells Rutherglen Muscat NV (dessert wine) to complement the afters. SKYE serves up international dining of the highest standard – excellent food and wine, a stylish and elegant setting, and unparalleled views to match. Cockatoo on the Rocks

he Murray Hong Kong, the new luxury hotel in the heart of Central, has been the talk of the town of late. Popinjays, its recently opened rooftop bar and restaurant, is certain to add to the hotel’s burgeoning reputation as an upscale hotspot. Popinjays features a stunning layout – a spacious open terrace dotted with couches, lounges and high tables encircling the large, all-glassenclosed restaurant. The terrace provides sweeping 360-degree views of Hong Kong Park, the Botanical Gardens, and the magnificent cityscape – making it an ideal spot for evening drinks and cocktails. Popinjays, which means parrots, takes its inspiration from the Cockatoos still found in the area. Its airy interior décor features a palette of grey, gold and blue with artfully adorned walls, creating a sense of contemporary luxury and elegance. Birds also inspire Popinjay’s cocktail range, dubbed the Aviary Collection. We chose Popinjays Punch ($130), a blend of Hennessey VSOP, Michter’s Bourbon, Darjeeling, baby pineapple, clove, coriander seeds and clarified milk and Cockatoo on the Rocks ($130), which is Johnnie Walker Black, elderflower, yuzu, finger lime, Manuka honey and Angostura bitters. The refreshing and citric cocktails were very welcome. Under Chef Didier Quennouelle, Popinjays offers a modern European-inspired menu drawing on traditions of French cuisines with the chef’s own distinctive Gallic influence. In addition to its à la carte menu, Popinjays offers a four- and six-course degustation menu from Tuesdays to Thursdays, new each week, while every Friday and Saturday a “Birds of a Feather menu” features a selection of shared dishes and free-flow cocktails. Quality champagne and wines from a well-stocked cellar complement the menu.

For our dinner, we chose à la carte. Following the customary amuse bouche and a basket of excellent assorted breads, we shared two appetisers – Tomatoes and Philibon Melon ($220) – almond, mozzarella di buffala snow, vanilla oil and Hokkaido Scallop and Sea Urchin Carpaccio ($260) – yuzu yoghurt, nashi pear, wakame emulsion. Both appetisers tasted light and delicious and were immaculately prepared. Our entrees of choice were Seared John Dory ($420) – quinoa risotto, clams, fennel, aioli and Roast Challans Chicken ($420) – carrot, baby corn, turnip, truffle gribiche sauce. It is clear to us that Chef Didier’s emphasis on a healthy menu underpins his selection of ingredients, even as he ensures they remain packed with flavour, which we appreciated. That was certainly the case with the fish and chicken – both tasted tender, and the meats’ flavours were fully brought out by their complements. Two desserts, Caramelized Golden Apple Cheese Cake ($130) – calvado’s agar, vanilla gelato with the apple brandy nicely flavouring the cake; and Guanaja Chocolate Affogato ($160)– raspberry compote, coffee, coconut – a nice creamy dessert – rounded out our meal. Several excellent wines accompanied our dinner – a 2017 Dominique Portet Fontaine Chardonnay from the Australia’s Yarra Valley; 2015 Domaine Jean Fournier Bourgogne Pinot Noir from Burgundy, and Antico Podere Le Miccine Riserva Chianti Classico from Tuscany – each nicely complemented the food. Popinjays, with its combination of refined cooking and stunning ambience, is destined to garner a cult following as word spreads. An early visit would be a high point of your gourmet agenda. ■

Yi’s Kitchen – Twin Hidden Gems 頤膳房——隱世瑰寶 Our visit to Yi’s Kitchen turned out to be delightful, one in which we discovered two hidden gems: the restaurant itself and Jao Tsung-I Academy, the cultural landmark-cum-hotel where Yi’s Kitchen is located. Nestled on a hillside in Lai Chi Kok in Kowloon, Jao Tsung-I Academy is a cultural project in which a cluster of buildings over 100 years old has been converted into a hotel and facilities to promote traditional Chinese culture. Built originally as a customs station during the Qing Dynasty, the building went through multiple uses including a quarantine station, prison, infectious diseases hospital and psychiatric rehabilitation centre before it was preserved and converted for its present use. The Academy organises guided tours, thematic exhibitions, festive events, seminars and workshops, among other activities, to promote the location's cultural inheritance. Yi’s Kitchen, itself located in a two-storey historic building, serves a comprehensive menu of Western and Chinese dishes amidst a spacious, comfortable setting. Its facilities, which include a nice bar, flexible dining spaces and small stage for music, are ideal for hosting private parties, weddings and corporate functions. For our lunch, we sampled an impressive array of deliciously prepared dishes. They include one of Yi’s signature offerings, Baked German Pork Knuckle with Sauerkraut ($245), which is prepared just the way it should be – crispy fried skin around oh-so-tender meat, and the cabbage sour but not bitingly so. For a nice contrast, we had the Stir-fried Salted Beef with Dried Shrimp & Chinese Chives ($98), a local favourite, followed by Stir-fried Crab Meat & Egg White with Crab Roe ($128), another popular Cantonese dish that was done nicely. Braised Fuzzy Melon with Wild Mushroom & Bamboo Fungus ($68), a refreshing vegetarian dish and Signature Yi’s Chicken ($198/half, $338/whole), a savoury dish rounded off a most enjoyable meal. We were truly impressed with the quality of the food and their reasonable prices – a hidden gem indeed. Why not take a trip to Jao Tsang-I Academy and end your visit with a pleasant meal at Yi’s Kitchen? We highly recommend it.

ith the opening of each new five-star hotel in Macau, the city’s burgeoning culinary reputation takes another leap forward. The city now boasts numerous award-winning restaurants, driving ever-higher standards of fine dining in the enclave. Lai Heen, at The Ritz Carlton, Macau serves refined Cantonese cuisine and is a notable addition to the city’s gourmet dining scene. It’s clear that no expense was spared in fitting out the outlet. Conceived by admired Japanese designer Izumi Hasegawa, Lai Heen’s décor is nothing short of awe-inspiring. Located in the Ritz Carlton on the 51st floor of the Galaxy Macau and commanding a panoramic view of Cotai, the restaurant’s avant garde interior displays immaculate design and craftsmanship – corridors lined with intricate motifs; beautifully made ceramic vases; an expansive wine storage glass structure, and thoughtful semi-private dining areas adorned with dark wood panelling and dizzying lighting fixtures suspended from the high ceiling. What amazed us is the glorious detail of the décor and the amount of care and effort that has gone into creating the desired dining ambience – you can call us unreservedly impressed. We chose dishes from a special Michelin Desgustation Dinner Menu (MOP $2,088 for 10 courses, including a glass of red wine, and MOP $550 additional for wine pairing upgrade or MOP $500 additional for tea pairing) to commemorate the hotel’s third anniversary. Our dinner started with a trio of delightful appetisers: Organic Cauliflower with Truffle, Crispy Alaskan Crabmeat with Egg Yolk, and Braised Pork Belly with Hawthorn and Dried Plum – all delicately prepared. Next was Simmered Garoupa Fillet with Wintermelon in Sichuan Sour Soup – we liked the zesty flavour that the spicy sour soup brings to the fish fillet. Then came a real treat, Wok Fried French Blue Lobster, Scampi with Egg White in Crispy Nest – the quality ingredients speak for themselves. We closed our dinner with Deep-fried Prawns with Tangerine Sauce, which were tender and savoury

and Simmered Seasonal Vegetables with Yu Fungus in Superior Chicken Broth Soup – a healthy and tasty dish, before wrapping up with Chilled Almond Tofu with Taiwanese Mango as dessert. Lai Heen offers an excellent collection of wines, which we highly recommend pairing with your dishes. The knowledgeable staff can make suggestions.

The Spa at Base Camp, Kerry Hotel Hong Kong 香港嘉里酒店水療中心 The Kerry Hotel Hong Kong’s The Spa at Base Camp is one of the city’s newest luxury spas. The hotel itself is rapidly gaining a reputation as an urban resort, and its spa certainly offers the touch and feel of one. Tastefully decorated in natural earthen colours, the spa, with its theme “Back to Basics”, aims to provide guests with refined massage and beauty treatments to remove stress and tension and improve well-being. Our therapist was highly professional and attentive, her demeanour warm and friendly and she quickly made us feel at home. We opted for the Signature Asian Blend Massage ($850/$1150 for 60/90 minutes respectively) which combines various traditional techniques including Thai pressure points, Balinese and Malaysian strokes and Chinese energy flows, to relax the body and restore its energy balance. The spa offers a rare, special Oolong from ZENTS aromatic oil for its treatment – a blend of lavender, lime and oolong tea which is highly recommended. The massage was applied at just the right pressure for us – medium to firm, and it wasn’t long before our body began to relax and respond to the skilful strokes of the therapist. Censers were popular in the Han dynasty. This goose-shaped example is life like with the back of the goose body is latticed, allowing smoke to rise from it. Centre for Heritage and Arts The revitalised Central Police Station compound, the largest heritage project in Hong Kong, has opened its doors to the public as Tai Kwun – Centre for Heritage and Arts. The CPS compound comprises 16 historic buildings, including three declared monuments (Central Police Station, Central Magistracy and Victoria Prison), on a 13,600-square-metre site in the heart of Central. An international-grade art gallery and an auditorium have been added to contribute to the adaptive reuse of the site. The heritage site includes new art galleries and the Parade Ground and Prison Yard. GENERAL MANAGER Mr Rauf Malik, Vice President of Operations at the JW Marriott Hotel Macau and The Ritz Carlton, Macau, shares with us his many years of experience in the hotel industry. 澳門 JW 萬豪酒店及澳門麗思卡爾頓酒店營運副總裁馬立祺先生與我們分享他在酒店業工作多年的經歷。 I grew up in a diplomatic family. As the son of an ambassador travelling to different parts of the world, I appreciated the style and luxury of a nice hotel. Being from a big family, after my father died when I was young, my mother assigned us responsibilities, and I was in charge of housekeeping, which inspired my passion for work. My first job was as a bell boy in a downtown Chicago hotel. My attitude though was to take ownership of everything that went on in the lobby, from cleaning ashtrays to delivering luggage – I was the GM of the lobby. I also worked hard to pick up other hotel functions and be helpful to my colleagues there – sort of fast-tracking myself. I think the passion and that attitude were helpful to me as I moved on in my career. I’ve really enjoyed living in Macau and managing these two great but different hotels. At the Ritz Carlton, we aim to provide a legendary hotel experience; our motto is “ladies and gentlemen taking care of ladies and gentlemen”; that’s why we call our colleagues ladies and gentlemen. Ritz Carlton ranks number one in the world for guest satisfaction, so our job is to deliver the expected standards and keep the brand reputation intact. JW Marriott is a hotel of crafted luxury and our associates there aim to provide the same high standard of services expected as well. And to have two of the best hotels in the world located together in a fantastic integrated resort like the Galaxy Macau, with a water park and over 110 restaurants, is quite special. There are so many favourite parts of my job. I love meeting and working with people; I love the challenges of stretching myself to deliver more than I was asked to. I love cuisines; I love getting dressed up for work like it was my first day in the office. For me, being a good general manager means understanding your market well, maintaining the brands, meeting the owner’s expectations and being a strong bridge between the owner and Marriott, delivering the guests’ voice as valuable feedback and giving back to the community – which we do through various initiatives. I think Macau’s future is bright. The city will continue to evolve as a top destination for both MICE and for families, offering top-notch entertainment, food and resort activities. We are still only drawing a small percentage of our target markets in Asia, not to mention other long-haul markets – so the growth prospects are excellent. For visitors to Hong Kong, I highly recommend that they take a day or overnight trip to Macau as part of their journey. There are so many things to do here, and the new bridge connecting Hong Kong with Macau is going to make it that much more convenient. My top recommendations for tourists: enjoy the many cuisines, from fine dining to local foods like egg tarts; go sightseeing, especially some of the local hidden gems – Macau has a rich culture and heritage; and enjoy family time in a resort like ours, having fun together!
