e welcome you to Hong Kong and to CityLife, the monthly magazine for visitors to Asia’s World City. 2019 is shaping up to be a great year to visit Hong Kong. Recently completed transport links – High Speed Rail, and the Hong Kong Zhuhai Macau Bridge – add even more connectivity to the Greater Bay Area and beyond, strengthening Hong Kong’s reputation as one of Asia’s premier tourism hubs. In its totality, the city’s fascinating East-meets-West culture, stunning geography and iconic skyline, key attractions, vibrant food culture and role as a global gathering place – mega-events, tradeshows, fairs, and much more, not to mention reputation as a shopping paradise, give Hong Kong the glamour factor in abundance. More than ever, the city stands ready to extend its warm hospitality to all its visitors. New hotels, many managed by iconic brands, continue to open, catering to ever-expanding numbers of guests and their varied needs. Hong Kong’s hotel industry and its service standards serve as benchmarks for other Asian markets, assuring you of a comfortable and hasslefree stay. Speaking of food culture, January is a great time to try out all the winter foods the city has to offer. The city’s temperatures do dip below the teens in the winter, and that is more than enough to drive residents in search of hot food, whether it is the ubiquitous hot pot, a steaming bowl of soup noodles or congee, a clay pot of rice and condiments, a healthy, hot drink or sweet desserts. Please visit our cover story on page 10 for some of our suggestions. The weather is pleasant to explore the city in full, whether by foot or using public transport. Somewhat overlooked among the skyscrapers and the hustle bustle of the city is Hong Kong’ rich and unique history. Thankfully, many historical sites are preserved, some of which located in scenic and photogenic areas which make for great photo-ops. Check out our article on Page 16 for a photo-journey to the city’s historical sites and get your camera ready. The city’s holiday festivities continue this month as Chinese New Year awaits. The Hong Kong Pulse Light Festival, which runs through January, is showcasing the inaugural International Light Art at the Central Harbourfront. Be sure to make a visit at night and be awed by the city’s nightscape. For sheer family fun, you’ll want to visit the AIA Carnival – now a fixture in the city’s winter attractions. You and your family will be enthralled by all the rides, games, entertainments and daring circus acts on offer. You’ve picked a great month to visit Hong Kong. Whether it’s yummy winter eats, visiting historical sites, checking out the city’s attractions or taking in a show or two, the city is primed to please. International Dragon and Lion Dance Festival 2019
The Dragon and Lion Dance Extravaganza 2019 will be held on 1st January, including The Dragon and Lion Dance Parade and the exciting Lion Dance Competition. The event has set four Guinness World Records over the past eight years. This year, the preparatory committee is creating the third International Dragon and Lion Dance Day, with more than 20 districts around the world invited to be the sub-venues of the festival.

The HKTDC Hong Kong Toys & Games Fair and the concurrent HKTDC Hong Kong Baby Products Fair are set to return with some 2,600 global exhibitors. Hong Kong Pulse Light Festival During the Hong Kong Pulse Light Festival, enjoy wondrous lights irradiating iconic Victoria Harbour and its skyline as never before.
Taking centre stage are the creative light art pieces illuminating the Central Harbourfront at the inaugural International Light Art Display. The exhibition showcases artists from Hong Kong and overseas, including Belgium, France, Hungary, India, Israel, Japan, Singapore and the USA. HOW KOWLOON GOT ITS NAME 九 龍得名的由來

n 1277, the Mongol hordes of Kublai Khan swept through southern China. Legend has it that Yi Wong (Duanzong), the boy Emperor, fled to Lantau Island and set up court at Mui Wo (Silvermine Bay). He died the next year in a shipwreck and was succeeded by his seven-yearold brother, Wei Wong (Bing Di), who became the last emperor of the Sung Dynasty.
bamboo matshed inside. The Emperor moved into this makeshift palace. Next morning, the boy had a look around his new abode. The story goes that as he stood there admiring the view, he was observed muttering to himself and was approached by his chief couftier, Loh So-fu.
Wei Wong and his court abandoned Lantau and landed at a spot near the site of Hong Kong's former airport at Kai Tak. They had a large fleet that was badly damaged and the harbour provided a safe anchorage where the Sung navy could repair their junks. The loyal local village headman, Tam Kung, welcomed the Emperor. Their tiny hamlet was composed of a few mud huts and had little to offer in the way of shelter. The villagers were so poor that they didn't even possess a temple for the Emperor to stay in.
"l have counted eight mountains," said the child, "so there must be eight dragons hereabout."
On a nearby hill, there was a terrace that had a cave of sorts, consisting of three very large stones: two of the stones acted as walls and above them was a gigantic boulder which formed the roof. Tam Kung and his peasants cleaned up the cave and hastily constructed a

"What is Your Majesty saying?" asked Loh So-fu.
"ln reality there are nine dragons in this locality, Your Majesty," replied Loh So-fu, grovelling at his feet. "l don't understand. I have counted eight mountains over and over again and there are only eight dragons in this locality, " squealed the indignant child. "Is that correct? Where is the ninth dragon?" "Your Majesty's sacred person is the ninth dragon," explained Loh So-fu. The conversation was overheard by Tam Kung, the village elder. Kowloon means "nine dragons" in Chinese, and that, according to legend, is how Kowloon got its name.

The Emperor lived for a short time under the giant rock in Kowloon. The great boulder was later known as the Sung Emperor Terrace, after the child. Much later, in 1848 – during the Ching Dynasty, shortly after the Opium War, Kowloon Walled City was built nearby and included a fort, a magistrate and a garrison of 150 soldiers. When the British took over the New Territories after the Convention of Peking, under the terms of the lease they were required to preserve this sacred site. The Hong Kong Government built a splendid granite balustrade around the boulder and it became a holy place for pilgrims. However, during World War Two, the rock, the hill and Kowloon City walls were all demolished by the Japanese and the granite used to enlarge Kai Tak Airport. Poor little Wei Wong's forces were no match for the Mongols. After a series of defeats, he was cornered by Kublal Khan's fleet and his navy destroyed in a ferocious sea battle in the Pearl River Delta. The boy emperor drowned trying to escape. For the next century China was ruled by the Mongols in a period known as the Yuan Dynasty. In 1962, the Hong Kong government created a Sung Wong Toi Garden containing a stone tablet made from a part of the Sung Emperor's Terrace that had somehow survived the Japanese occupation. It was carved with the name ‘Sung Wong Toi’ in three large Chinese characters.■

Cantonese Style Hot pot 粵式火鍋 Arguably the most popular winter eat in the city, you must try out a hot pot meal while here. The city has hundreds of hot pot restaurants. It’s best to go as a group which allows you to sample more ingredients. Pick out your base stock – typically a clear soup or a spicy soup or better yet, both. Order whatever ingredients you want, usually a combination of meats, seafood, and vegetables. Beef and seafood tend to cost more, but make sure you don’t over cook them.

Chong Qing Spicy Chicken Hot Pot 重慶雞煲 Spicy chicken hot pot is highly popular now in Hong Kong. Unlike regular hot pot, this one comes in two acts. You first order a pot of diced chicken marinated in spicy and chili sauces and cooked over an LPG stove. The spices dictate the flavour with different restaurants bidding to outdo each other through their secret recipes. The leftover condiments are then filled with clear soup as a soup base into which you can dip regular hot pot ingredients.

Snake Soup 蛇羹
Snake soup is still considered a real treat and much sought by the city’s old timers. Snake is thought to provide “yang energy” that will keep you warm in the dead of winter. Several places specialise in snake soup, so go grab a bowl when the mercury drops. She Wong Lam in Sheung is one of the oldest snake soup shops in the city and has been prominently featured in the media for its old-style set-up.

Lei Cheng Uk Han Tomb Museum 李鄭屋漢墓博物館
Hong Kong’s oldest historical monument was discovered during a Government housing project in 1955. The tomb was dated to the Eastern Han Dynasty (AD 25-220). Visitors to the museum housing the tomb can see it through a glass panel. The tranquil Chinesestyle park alongside offers respite for the locals, and the photo exhibition in the museum documents the development history of Sham Shui Po. Sung Wong Tai 宋王台
An important relic from the Song Dynasty, Sung Wong Tai (Terrace of the Sung Dynasty emperors) was originally a large boulder overlooking a hill in what is now Kowloon City. It was erected as a memorial to the last two boy emperors of the Sung Dynasty who temporarily lived in Hong Kong from 1277 to 1299. A piece of the boulder was carved out of it and moved to a park nearby. Be sure to visit the adjacent Kowloon Wall City Park for a glimpse of a colourful and lawless part of the city from the early 1900s. Tin Hau Temple Joss House Bay 佛堂門天后古廟
The city’s oldest and largest temple to the popular god of seafarers, Tin Hau, is hidden away in the picturesque Clear Water Bay Peninsula. Located at the water’s edge, the temple is believed to have been built in 1266 during the Song Dynasty. A rock carving on the way down bears the oldest known inscription in Hong Kong. Check out the beautiful Sai Kung countryside including the Clear Water Bay beaches nearby. Joss House Bay, Clear Water Bay. Take Green Minibus 16 from Po Lam MTR Station and get off at the entrance of Clear Water Bay Golf and Country Club and walk 10 minutes down a flight of steps. 香港最古老且最大的天后廟就位於風景如畫的清水灣半島。這座寺廟臨水而建，據 信落成於1266年的宋朝年間。下行路上的岩石刻有香港已知最古老的碑文。還可以欣 賞美麗的西貢郊野、附近的清水灣泳灘、大廟灣、清水灣等等。由寶琳地鐵站乘16號小 巴，於清水灣鄉村俱樂部入口處下車，沿樓梯步行10分鐘，便可抵達。

This cluster of ancient villages dating back up to 700 years is now a tourist landmark thanks to its iconic Wishing Trees near the Tin Hau Temple, where visitors throw their wishes, written on joss paper tied to an orange, over the tree branches. The practice is now confined to a plastic replacement tree due to overuse of the real trees. Still the village itself is worth visiting as it well represents the area's many ancient villages. The famous Wishing Tree Festival, during Chinese New Year, attracts thousands of participants and onlookers.

Waterfall Bay Park 瀑布灣公園
A real hidden gem, this local park tucked away below a Government estate (Wah Fu) on the south side of Hong Kong Island contains a real waterfall by the coast on the East Lamma Channel. The falling water was purportedly the only fresh supply along the South China Coast for foreign merchant ships in the 1700 and 1800s. Murray House, a majestic Victorian building erected in 1844 as officers’ quarters in Central, was dismantled, preserved and rebuilt stone - by - stone on the Stanley waterfront. It now houses shops and restaurants. The adjacent Blake Pier was also moved and rebuilt from its former role as a public pier on the waterfront of Central. Look for a sign and path next to Murray House that leads to an ancient Tin Hau temple featuring a “thousand-year-old well”. You’ll want to visit Stanley Market and waterfront promenade close by as well as the Stanley beaches. Plenty of photo-op spots to explore. Blue House 藍屋
The Blue House is part of a cluster of brightly coloured four-storey buildings from the late 19th Century, known as ‘tong lau’ in Southern China. Noted for their balconies and East-West architectural influence, only a few still remain. The Blue House is found alongside the Yellow House and Orange House. They have been preserved as heritage buildings and you can visit the Hong Kong House of Stories on the ground floor which tells of Hong Kong’s past. Our dinner outing was taken care of by a superfriendly, knowledgeable and attentive staff – an excellent sign for a new restaurant. The outlet is spacious, its bar evoking a speakeasy ambience, and the dining area’s décor is warm and opulent with leather chairs, understated art pieces and brick motifs, which together create a quite luxurious setting. Under Executive Chef Jason R. Loyd, a meat expert who bridges the US and Hong Kong, Prohibition offers a quality selection of prime beef cuts and fresh seafood items, complemented by an excellent fine wine cellar and a range of creative cocktails.
We started our dinner with a selection of premium raw oysters: Blue Point ($58/piece), Normandy ($48), Kumamoto ($58), and Irish Rock ($48), all slurpy good and each with a distinct texture and flavour. A light, fruity Pinot Grigio, Prendo, Alto Adige, Italy, Wilhelm Walch 2017 ($110/glass; $530/bottle) went nicely with the oysters. We also really liked our two cocktails: Red Cup ($148) in which a leather pouch is filled with smoked oak and berries bourbon, cranberry and elderflower liqueur

chips on the side. Both appetisers were presented nicely and tasted delicious.
For the main course, we were definitely going for the beef – it was just a matter of which cuts. In the end, we could not resist the lure of Prohibition’s signature cut, a 44-ounce USDA Prime Bone-in Ribeye ($1988). The beef is flown in from the US, then dry-aged for 28 days with bourbon and oolong tea. The steak is grilled and cut into thick juicy slices that taste succulent and tender. For a fine steak, only a nice bottle of full-bodied red will do. Our 2003 Kay Brothers Amery Vineyards Cabernet Sauvignon from Australia was just that. For dessert, we had the classic Flamed Alaska ($248) in which the vanilla, strawberry and pistachio ice-cream layer cake is set aflame with Grand Mariner, delivering a satisfying wrap to our sumptuous meal. Prohibition is destined to be a hotspot on Hong Kong’s fine-dining scene, especially on the southside of the island. Whether it’s a special occasion or when you simply want an enjoyable and relaxed meal, Prohibition is highly recommended.■

2 Place is a trendy venue in a commercial complex in Lai Chi Kok, in West Kowloon, offering upscale retail and dining outlets that cater to locals and visitors alike. One of its flagship dining establishments is the Greater China Club, an opulent club-style dining outlet offering refined Cantonese and French cuisines, complemented by live jazz, fine wine and cigars. The club is open to both members and nonmembers, with members enjoying booking priority privileges and discounts. Word of mouth pulls in plenty of visitors, largely for the quality of its food and its exclusive ambience. The spacious club has two outlets: the 8000-sqft Man Hing, which serves refined Cantonese food, and Cadenza, a smaller bistro offering contemporary French fare. For functions, there are seven musically themed private rooms, available in various combinations, as well as a spacious roof garden. As expected, the club is luxuriantly decorated – Man Hing in a smart, contemporary Chinese décor, and Cadenza, which is warm and stately. We chose Man Hing, the Chinese restaurant, as our dining destination. We started with Chilled Abalones with Pomelo ($188/4 pieces). We liked the flavour of the pomelobased sauce which adds a refreshing citrus taste to the succulent abalone. Assorted Dried Seafood Soup with Saffron ($148 per person) was next, a tasty savoury Chinese soup that is perfect for the cooler weather. Dried seafood – especially dried scallop, fish maw and shrimp – are staples in regional soups, as the liquid softens the dried seafood and liberates its flavour into the soup.

appreciated the fine, tender texture of this meat as well as the subtly sweetened sauce used. A signature dish came next – Deep-fried Boneless Chicken Stuffed with Glutinous Rice, Dried Shrimps and Preserved Sausage ($788/ whole chicken). This dish is a labour of love for the kitchen team. The chicken skin is roasted golden brown and crispy, but the meat remains tender and juicy. The stuffing is what makes the dish special – delicious rice infused with the flavours of the dried shrimps and diced Chinese sausage, kept moist inside the chicken. We ate just about the whole chicken and devoured the rice. A nice vegetable dish helped wind up the meal and Poached Seasonal Vegetables with Iberico Ham in Soup ($188) did the job nicely. The Tientsin cabbage is tender and sweet, with the savoury ham providing a nicely balance on the palate. Our dessert was Sweetened Black Sesame Rolls ($52), a light jelly treat that nicely satisfied our sweet tooth. The neighbourhoods of West Kowloon – including Lai Chi Kok, Cheung Sha Wan and Sham Shui Po – are gaining a reputation among visitors as they provide an authentic and colourful look at Hong Kong local life, and are convenient to hotels and downtown. Do visit the area and be sure to try out a nice gourmet meal at the Greater China Club as part of your visit. Book early.■

Peking Garden in Star House, one of Hong Kong’s best known restaurants, is celebrating its 40th anniversary with a complete revamp of its interiors and offerings. Famous for its roasted Peking Duck and live demonstration of “la mian” (hand-made noodles), Peking Garden’s new facelift offers a contemporary look with its chic interiors based on the inspiration of the traditional hutong, the Beijing courtyard house. The outlet also features five new luxury, themed private rooms. The revamped menu is inspired by the cuisine of Imperial Beijing with emphasis on each dish’s elaborate presentation and craftsmanship – perfect for our era in which your camera gets the first bite. Signature dishes include Cucumber in Lime, Pomelo & Chilli Sauce ($88), Shredded Chicken, Cucumber, Red Cabbage and Purple Turnip in Sesame Sauce ($108), Sautéed Prawn with Scallop & Sea Whelk in Chilli Sauce ($780, order in advance); Deep-Fried Mandarin Fish in Sweet and Vinegar Sauce ($298) and the famous Barbecued Peking Duck ($460 /whole and $240/half). The sautéed prawn is a real tour de force as the dish is served on a hand-carved dragon, the mythical beast that gives Kowloon its name. For sheer panache, the Beggars Chicken ($580, order in advance)
steals the show. The carved chicken is filled with abalone, whelk and mushroom and baked inside a hard shell. A guest is invited to break open the shell with a golden hammer and is then presented with a mini-golden hammer and a polaroid photo as souvenirs. Other notable dishes include Braised Pork Belly ($158), Sautéed Shredded Bamboo Shoot in Chicken Broth ($118), Peking Fried Noodles with Shredded Pork ($118), Deep-Fried Glutinous Puff with Water Chestnut ($72 for six pieces) and Baked Mashed Apple Pastry ($45 for 3 pieces). Peking Garden has always been popular with visitors; it appears that it just gets better with age. The menu consists of a simple three-course meal priced at a reasonable $318 per person: an organic mixed green salad with zesty mustard vinaigrette together served with house-baked baguette; a juicy trimmed USDA prime ribeye steak together with all the French fries you can eat, and a dessert cart bearing traditional French pastries such as Paris-Brest, a choux pastry ring filled with hazelnut cream and Mille Feuille, layers of puff pastry and cream, among others. Steaks are served with a special béarnaise sauce and unlimited skinny fries.

The Den We came here for the steaks and opted for two cuts: Wagyu Ribeye M5 ($398/10oz) which is tender and juicy, and fully flavoured and marbled; and Wagyu Tenderloin M5 ($488/10oz) which is lean and succulent, yet practically melts in your mouth. We were impressed with the quality of steaks, especially at this price level. A big helping of dessert, Chocolate Brownie ($88) totally sated our appetites and was a fitting end to a pleasant and filling meal. If you are looking for quality wagyu steaks and hearty grub at reasonable prices, The Den is an excellent choice.
Sai Yin Pun is an older neighbourhood on Hong Kong Island rapidly undergoing gentrification, thanks largely to an influx of younger, hip expatriate community. Most visibly, many trendy western restaurants are cropping up around the area. One such, tucked away on a side street in Mid-levels, is The Den, serving quality western fare including its specialty Australian Wagyu steaks. The newly opened restaurant is cosy and unassuming, with functional and welcoming décor and a menu that is familiar and appetising. For our dinner we chose a few sharing plates, including The Den Platter for 2 ($138) – onion rings, fish bites, fried oysters and chicken bites; Clams ($118) with a pesto butter garlic wine sauce served with garlic bread; and Fresh Steamed Mussels ($118) in Saffron and white wine cream sauce served with garlic bread – all very yummy.

Censers were popular in the Han dynasty. This goose-shaped censer is life-like. The back of the goose body is latticed, allowing smoke to rise from it. The censer is similar in function to the more well-known boshanlu-style censers from the Han period, but its form is very different. Incense was burned not just for the aroma, but also for practical reasons, such as acting as an insect repellent, and to purify the air. Combining aesthetics, practicality, and philosophy, censers are of high artistic and historical value. Gilded Glory: Chaozhou Woodcarving 8 Nov 2018 – 25 Feb 2019 Chaozhou woodcarving is a well-known school of woodcarving in China. Displaying distinct regional features, the style was popular across ancient Chaozhou prefecture in Guangdong province. As lacquer and gold foil are often applied to Chaozhou woodcarving, it is also known as "gilt wood". Ingenious openwork carving techniques yield exquisite works of art which underscore the three-dimensional nature of carving, while creating a multi-dimensional space of overlapping layers that is akin to a drawing depicting intricate plots. Centre for Heritage and Arts The revitalised Central Police Station compound, the largest heritage project in Hong Kong, has opened its doors to the public as Tai Kwun – Centre for Heritage and Arts. The CPS compound comprises 16 historic buildings, including three declared monuments (Central Police Station, Central Magistracy and Victoria Prison), on a 13,600-square-metre site in the heart of Central. An international-grade art gallery and an auditorium have been added to contribute to the adaptive reuse of the site. The heritage site includes new art galleries and the Parade Ground and Prison Yard.
