e welcome you to Hong Kong and to CityLife, the monthly magazine for visitors to Asia’s World City. As you are aware, the coronavirus pandemic rages on, but Hong Kong is moving cautiously to the next stage, and is in the process of opening its borders to certain regions without restrictions. As we go to print, it is anticipated that the city will open somewhat in July. Regardless, we very much appreciate your coming to our city in these trying circumstances. Over these last few months, Hong Kong has done an outstanding job in containing the spread of Covid-19, thanks to the vigilance of the Hong Kong people and the effective measures taken by the government. As such, the city remains open, including all the hotels, the city’s transportations systems, shopping malls, cinemas, shops and restaurants. Even more happily, many of the city’s top attractions are now open again, including Ocean Park, Disneyland Hong Kong, and the Ngong Ping 360 Cable Car, with many offering attractive deals to visitors. Do check them out and enjoy yourselves at these wonderful venues. Still, we suggest that you ask your concierge for the latest details before you set off. With July, the summer season is in full swing. And there is no better way to cool from the sweltering heat than a trip to one of Hong Kong’s many beaches. It may surprise you that the city boasts almost 100 beaches within its territory, with almost 40 of them gazetted and managed. Moreover, many of the beaches are in excellent conditions with smooth sands and clean water, and perfect to swim at. Several are only just a few minutes from the heart of the city. Please check out our cover story on Page 4 for all the information. Indulging in Hong Kong’s fabled culinary delights is top of many a visitor’s to-do list. Increasingly, the city’s shopping malls and large retail zones are adding more F&B outlets to their mix, offering ever-fancier and more diversified portfolios of dining options that range from large food courts, cafes and dessert shops, specialty restaurants to award-winning franchises. Our feature story on Page 10 presents some of the best F&B complexes in these malls and retail zones. Please check it out as you contemplate where you will go to enjoy an excellent meal. With the gradual return of larger events, we will continue to list your options as they are announced. Please check out Happenings for some of the details. “Heal We Go” - Celebration of 10th Anniversary of Ponte Orchestra & Singers

Ponte Orchestra & Singers has always served as a local orchestra and choir that brings together the best musical talents to represent voices of the city, promoting and cultivating classical music culture in Hong Kong. After a decade’s endeavour, Ponte proudly announces the launch of “Heal We Go” - 10th Anniversary Concert. The concert aims to cheer up the people of the city with a sincere performance of a wide array of classical pieces and musical favourites, as well as to celebrate the 250th Birthday of Beethoven. Noticeably, the concert will be among the first batch of live performances around the world amid the pandemic. “Heal We Go” - 10th Anniversary Concert unifies musicians on stage, and shares every touching moment with the audience in the upcoming encounter.

Sergei Nakariakov Plays Tchaikovsky

Hong Kong Reportory Theatre brings an excellent show to audiences. In the middle of the night, a husband accompanies his wife to the airport for a business trip to the U.S. The driver triggers an argument between the couple about the future of their offspring and the three of them decide to take a big leap of faith, turning everything on its head along the way.

One of the world’s most sought-after trumpet players, Sergei Nakariakov, will collaborate with Hong Kong Sinfonietta again this summer. Tchaikovsky’s Variations on a Rococo Theme (adapted for flugelhorn) and Arban’s The Carnival of Venice (adapted for trumpet) under the baton of Music Director Emeritus Yip Wing-sie will be performed.

Set against the steep mountains and framed by surrounding highrise buildings and luxury estates, Repulse Bay and Deep Water Bay are also good swimming beaches with full amenities. Be sure to visit the large Kwun Yam Temple just next to Repulse Bay, while the scenic promenade connecting the two beaches makes for a delightful and leisurely stroll. Tai Long Wan (Big Wave Bay) beaches – pristine and untamed 大浪湾海滩 —— 質樸而野性 Further up the coast from Long Ke, along Section 2 of the MacLehose Trail, lie the famous four Tai Long Wan beaches, widely acclaimed as the crown jewels of Hong Kong’s beaches. Ham Tin and Sai Wan are the more frequented, both good for surfing and near-shore swimming. Tai Wan is known for its high waves, making it a surfer’s paradise, while Tung Wan is a smaller strip of sand that is sparsely visited. Overnight camping at these beaches is popular. You can also get there by taking a 90-minute hike from Sai Wan Pavilion or hire a boat from the public pier in Sai Kung Town. Hong Kong’s largest island also is home to several beautiful beache s along its southern coastline, facing the South China Sea. A day trip to Lantau combining sightseeing (Tai O fishing village, Ngong Ping) and an afternoon at one of the lovely beaches could be the highlight of your trip to Hong Kong. And you can try your luck digging for clams all along the seashore – you’ll be surprised how many big juicy clams you can find. Watch the setting sun over cool drinks at one of the beachside restaurants – a most relaxing way to cap a sun-soaked afternoon. 上長沙泳灘和下長沙泳灘擁有光滑的沙灘和水面平靜的游泳水域。遊客還可以嘗試在海邊挖蛤蜊，你會發現這裡有很多肥嫩的蛤蜊。在其中一間海濱餐廳一邊喝着冷飲，一邊看着夕陽西下，沐浴着午後的陽光是最放鬆的選擇！

Pui O Beach – golden sands and golden sunset 贝澳海滩 —— 金色的沙滩和的夕阳 Located on a beautiful bay with calm waters and fine smooth sands, the west-facing Pui O Beach is another fabulous vantage point from which to enjoy a gorgeous sunset over a tall drink at one of the beachfront restaurants. The long beach is mostly crowd-free and sleepy Pui O village retains the air of old Hong Kong. 位於美麗的海灣，水面朝西，海水平靜，沙灘細膩，可以在附近的海濱餐廳享用清涼飲品，欣賞美麗日落。長灘大多時候是人流稀少，而貝澳村始終保留着古老的香港氣息。

Tai Long Wan and The Sea Ranch – quiet, clean, and off the beaten path 大浪湾海滩和澄碧村

—— 幽靜、干淨、僻靜 A 9km hike from Mui Wo takes you to Tai Long Wan and nearby The Sea Ranch, a strip of sand in front of a surreal, half-abandoned, resort development from the 1970s. The lovely beaches with nary a visitor are a deserved reward. Cap your visit with a sampan ferry ride to Cheung Chau island from the pier at Sea Ranch for a delicious fresh seafood meal at one of the bustling waterfront restaurants. 大浪灣和海景大牧場——安靜、干淨、僻靜：從梅窩出發，徒步 9 公里就能到達大浪灣和附近的澄碧村。人跡罕至的原生態海邊十分吸引人。您可以乘坐渡輪從澄碧村碼頭前往長洲島，在海濱餐廳享用美味的海鮮大餐。

Tuen Mun Golden Beach 屯门黄金泳滩 This popular beach located in the northwest New Territories is adjacent to Gold Coast – a resort hotel, marina, and shopping complex. The long and wide sandy beach is staffed by lifeguards and has full amenities. After an afternoon on the sand, you may like to stop by one of the local and international restaurants along Castle Peak Road. The story behind the man so often portrayed as the arch-villain of British colonialism in China 在中國，有一個人常被認為是英國殖民主義的大惡棍，Arthur Hacker 告訴我們背後的真相。

efore Hong Kong became a colony, communications between China and the West were hampered by a shortage of interpreters. Chinese-speaking westerners were rare because teaching a foreigner the Chinese language was an offence punishable by death in imperial China. Early Victorian linguists were therefore either missionaries or opium dealers. Karl Gutzlaff, a Pomeranian former saddle maker, effortlessly combined the two professions. Before the Opium War (1839-1842), he was employed by William Jardine as an interpreter aboard the opium smuggling ship Sylphe, preaching Christianity to the Chinese while selling them opium. He also dabbled in espionage. Through his many roles, Gutzlaff was an outsize figure in the West’s involvement in early-19th-century China, and especially Hong Kong. But his impact on the region was perhaps eclipsed by a young man whose arrival in Asia he facilitated. In October 1841, Gutzlaff’s wife, Mary Wanstall, brought out from England her orphaned 13-year-old cousin, Harry Parkes. From Macau, where the Gutzlaffs then lived, he was sent to Hong Kong to learn the Chinese language under JR Morrison, the Chinese secretary to Sir Henry Pottinger, already superintendent of trade and soon to become the first governor of Hong Kong. Parkes then applied his newly developed

language skills working for Gutzlaff and was with him aboard HMS Queen when the British battle fleet fought its way up the Yangtze River to Nanking (Nanjing), where peace negotiations were opened with the Chinese. During these talks, "Uncle" Gutzlaff decided to visit the Porcelain Tower, taking young Parkes with him. The teenager wrote in his diary: "Upon coming near the tower I ran on first, and was the very first Englishman that ever visited the Porcelain Tower." A few days later he witnessed the signing of the Treaty of Nanking as the Chinese ceded Hong Kong Island to the British. Parkes so impressed Pottinger that he sent him to Chusan (Zhoushan) – still occupied by British forces, with Uncle Gutzlaff as chief magistrate – to join the British Consular Service, setting him on his storied career. The then fifteenyear-old stayed in Chusan for 11 months before transferring to Canton (Guangzhou) to learn "consulate business" under Robert Thom, whose main claim to fame was translating Aesop's Fables into Chinese. At that time, Shanghai was the only one of the five treaty ports to function successfully. Parkes was posted to Amoy (Xiamen) as the consulate interpreter. As the consul spoke no Chinese, Parkes had to conduct most negotiations himself. The terms of the treaty were repugnant to the Chinese officials who adopted a deliberate policy of being obstructive and using delaying

tactics. Parkes was rotated around the five treaty ports because he was equipped with an overbearing personality and had the ability to cut through red tape and get things done. ln 1854, he was promoted and became the British consul in Amoy.

In 1856, Parkes became acting consul in Canton – the only treaty port where foreigners were confined to a small ghetto and not allowed to move around the city freely. With some justification, the Chinese viceroy, Commissioner Yeh, claimed that the streets were unsafe. Yeh was unimpressed by Parkes' bullying tactics. The Englishman retaliated by arresting the Chinese crew of a small ship called The Arrow that was flying a British flag, and hauled down the Union Jack.

The overreaction of Parkes and the governor of Hong Kong, Sir John Bowring, to this incident was largely responsible for sparking the ensuing Arrow War (1856-60). In contemporary China, Sir Harry Parkes is still considered the arch-villain of colonialism. Modern Chinese films portray him leading cavalry charges, firing off cannons and losing sword fights against heroic Manchu mandarins. In reality, he was a non-combatant but, as a leading interpreter and negotiator for the British leader Lord Elgin, he played a prominent part in the war.

During the negotiations outside Peking (Beijing) with the imperial mandarins, Parkes was kidnapped, imprisoned and tortured. Most of his escort was brutally slaughtered, reflecting Chinese disdain for ‘international law’. ln retaliation, Lord Elgin burnt down the Summer Palace, in which Parkes had been imprisoned; a punishment designed specifically to humiliate the emperor and which still reverberates in China’s relations with the West today.■

ince its opening in 2019, the Ocean Terminal Extension (OTE), located at the tip of Ocean Terminal in Harbour City, has attracted a slew of stellar F&B outlets. As such, it has taken just a short while to establish itself as one the city’s hottest dining centres. The latest addition is Harbourside Grill, a contemporary, upscale grill helmed by Chef Armand Sablon, from Brighton in England, with a string of London’s most prestigious restaurants on his résumé. Harbourside Grill combines some of the quintessential elements that make dining in Hong Kong such a delightful, multi-faceted experience – innovative cuisines using quality ingredients from around the world, exotic and creative cocktails, and unparalleled harbour views. The restaurant’s main dining room, which seats 65 guests, is elegantly fitted out and features expansive features floor-to-ceiling windows, for unimpeded views of the harbour. Its large outdoor terrace, for up to 80 guests, offers undoubtedly one of the best spots in the city to view a golden Hong Kong sunset For Harbourside Grill, Chef Sablon has developed a contemporary menu heavy with grilled items, and with a distinctive French twist. The signature dishes centre on grilled quality cuts of meat, especially beef, cooked on a Josper Grill. The cuts range from USDAcertified premium ribeye and sirloin, to Argentinian sirloin, to Japanese A5 Wagyu from Kagoshima, amongst others. Our dinner featured some of the restaurant’s key dishes. We started with Yorkshire Asparagus, Coleman’s Mustard and Shallot Dressing, Cured Egg ($138) and Seared Scallop, Crispy Pork Belly, Curried Cauliflower Puree, Capers, Golden Raisins ($218). We enjoyed both the texture of the asparagus

and the succulent scallop that is nicely flavoured. An appetising and refreshing French Beans, Truffle Aioli. Watercress, Parmesan, Roasted Hazelnuts ($138) followed, and was eagerly consumed. Onto the mains: we chose Sea Bass, Crushed Potatoes, Lobster Bisque ($328), with the fish lightly grilled to keep the meat tender. A steak is de rigueur at this establishment, and we opted for the Wet-aged Ribeye 350g (USA) ($388). This ribeye is grilled medium rare and tastes excellent. We especially savoured the full release of the beef’s inner flavours, while the meat remains tender and juicy. For sides, we had the Jalapeno Mashed Potatoes ($78), with the pepper nicely spicing up the creamy potato. We ended our dinner with another French specialty, Apple Tarte Tatin, Crème Fraiche ($158), designated for two but with plenty for more. For drinks, the restaurant offers an exotic collection of cocktails. We tried a fruity Sherry Cobbler ($118) with fino sherry, fresh grapefruit juice, St Germaine, fresh pineapple juice and honey water, and Love in Paris ($138), a light concoction of vodka, passionfruit, lemon, mint and prosecco. The restaurant also offers a nice collection of wines, including several excellent reds to go with the beef. Stunning views, relaxed ambience, and excellent food – whether you are a couple out for a romantic dinner, or just want to enjoy a nice meal with a group of friends, Harbourside Grill offers a memorable dining experience for anyone. Our culinary venture took us atop Shatin’s newest hotel for a memorable Omakase dinner 我們的美食之旅到訪了沙田的最新酒店，品嚐了難忘的廚師發辦日本料理晚餐

hatin’s newest full-service hotel, Alva Hotel by Royal recently opened its doors to much acclaim. A 618-room hotel along Shing Mun River, the hotel offers several dining options that include a Cantonese restaurant, an international all-daydining buffet outlet, and Mizutani, a contemporary Japanese restaurant and bar located on the top floor, with a commanding view of the Shatin area and the mountains beyond. Mizutani’s specialties are Sushi and Robatayaki. Two seasoned Japanese chefs helm the operation, which aims to serve authentic Japanese cuisine with a contemporary flair, using the freshest ingredients flown in from Japan. Mitzutani’s décor is sophisticated. Its ambience is airy and open, aided by the full-height windows and expansive views. The space is divided smartly to create clusters for the sushi bar, the robata grill counter, main dining room and a rooftop bar. For omakase meals, the restaurant offers three options, capped by Chef’s Special Sushi and Seasonal Dishes Course ($1,680 per person), a real gourmet’s treat that includes sushi and sashimi, Kyushu beef and cooked dishes. The other options are Chef’s Recommended Sushi Course ($1,280 per person), our selection, and Chef’s Special Dishes Course, a balanced offering of Japanese delicacies. A full collection of premium sakes and innovative cocktails is available from the bar. Executive Chef Tomiya Yu, a pedigreed sushi and kaiseki chef who hails from Okayama Prefecture, guided us through our Omakase journey. After an Apple Vinegar Champagne Jelly with Japanese Tomato appetiser, we tucked into the sashimi dishes. The Shima Aji (Stripped Jack) Sashimi with Mullet Roe was savoury, and the Slow-cooked Abalone

with Ginger Bud Abalone Liver Sauce presented with perfectly textured abalone meat. Fresh Aomori Oyster with Sour Jelly, Myoga and Perilla Flower was also a real treat and slurpy good, while the prized Nagasaki Bluefin Tuna Sashimi and Seared Chutoro tasted excellent. The sushi dishes were next. Hokkaido Peony Shrimp Sushi with Shrimp Tomalley, Chiba Kinmedai Sushi, Tottori Crab Sushi with Crab Paste Miso and Sesame and Fukuoka Aji (Jack Mackerel) Sushi were the first batch – all good, all yummy. We were then served Kagoshima Wagyu Sushi with Hokkaido Nemuro Uni (Urchin), which practically melts in the mouth, the beef is so marbled and tender. Then we tried Fukuoka Squid Sushi with Seasoned Fresh Seaweed, Myoga and Perila Flower. The final batch included Whole Purple Sea Uni (Urchin) Sushi with Soy Sauce Marinated Salmon Roe, Rock Salt Seared Chutoro Sushi, Soy Sauce Marinated Tuna Sushi with Scallion, Teriyaki Kobe Sea Eel Sushi and Tuna Minced Temaki (Hand Rolled Sushi) with Scallion. We ended this sumptuous meal with Peony Shrimp Head Miso Soup, rounding out a full umami flavour, and the Homemade Red Bean Tofu Pudding as dessert. To accompany the meal we chose the house saki – Mizutani Junmai Ginjo ($580/ 720 ml), which is very fit for purpose. Our Omakase dining experience at Mizutani was splendid. And given the amount and quality of dishes served, the meal represented good value. So, if you are in the mood for an excellent omakase outing in a relaxed and expansive setting, we highly recommend Mizutani.■

Bizou American Brasserie

Bizou American Brasserie, located in upscale Pacific Place mall, is a welcome addition to the city’s already impressive line-up of American eateries. Still, this new kid on the block has managed to impress. Under Head Chef Juan Velazquez, Bizou has crafted a distinctive menu that combines classic and traditional American cuisines with a touch of Cali-Mex influence, reflective of Chef Juan’s own culinary experience while working in California. Bizou also serves an excellent collection of beers, wines and cocktails. The outlet’s alfresco setting opens up to the lobby entrance of the mall, while indoors, the outlet is outfitted with a pleasing brasserie ambience. Bizou serves a broad menu but we chose its Set Dinner ($398/person) plus Wine Pairing ($168/person for 3 glasses). The dinner started with a choice of Organic Tomato Salad, Buffalo Mozzarella and Honey Balsamic Dressing or Beef Tartare, Homemade Pickle, Onion Marmalade, Egg, and Honey Mustard. Both portions are generous, and both are excellent. A light Stoneburn Sauvignon Blanc 2017 from Marlborough in New Zealand pairs nicely with the dishes. We ordered an extra dish that turned out to be a real hit – Steamed Mussels, Roasted Leeks with White Wine and Parsley Butter ($158) – we really liked the sauce and happily lapped it up with bread. For the mains, we had a choice of 48-hour Slow-cooked Short Ribs with Potato Emulsion and Rosemary Sauce or Homemade Malfatti, Spinach, Ricotta, and Mushroom Truffle Sauce. Both dishes are winners. The meat off the short ribs is tender and practically falls off the bones. And the malfatti dough is densely kneaded and infused with truffle and spinach flavour, and quite filling, A dry and fruity Stellenbosch Spier Pinotage 2016 from South Africa goes well with the short ribs.

Our desserts were Oreo Caramel Cheesecake with chocolate sauce or Seasonal Fruit Plate with homemade strawberry jam and mango foam, which we paired with a refreshing Sparkling Slated Caramel Cocktail. Bizou is ideal for anyone looking for hearty and quality American fare with a touch of novelty flavours. Do check it out.

Le Soleil 越南餐廳

Le Soleil, a popular upscale Vietnamese restaurant at the Royal Garden Hotel, is presenting an exciting early summer menu prepared by its Vietnamese chef Do Thi Thuy Linh. The menu bears strong Northern Vietnamese influences, which tend to be rich in taste with more spicy-sour notes than its southern counterpart. The menu features popular appetisers such as Rice Paper Rolls with Vietnamese Sausage and Shrimps ($178), Crispy-fried Saigon Spring Roll ($178) and Steamed Rice Flour Pouches with Minced Pork & Dried Shrimp ($178). For lighter fare, the Baby Lotus Root and Mixed Fruits Salad ($138), which is crunchy and refreshing, and Stir-fried Minced Pork with Herbs Served with Lettuce ($168) are both excellent choices. One of our pleasantest surprises was Crispy Soft-Shell Crab with Curry Sauce in Farm Bread ($208), in which a delicious mild curry sauce brings out the taste and texture of the crunchy crab. Next came A4 Miyazaki Wagyu Beef Noodles in Soup ($298), which was a smash hit among all our party. Between the savoury soup base and the well-marbled beef, we consumed the noodles with alacrity. The Braised Pork Belly and Rice Noodle in Soup ($178) is also tasty; with the lime-based sour soup adding a welcome tangy flavour. For desserts, we had Baked Alaska ($108) and Butterfly Pea and Coconut Jelly ($78) which were mutually complementary. Be sure to indulge in Le Soleil’s list of refreshing drinks. We tried several, including Salted Plum with Lime-Lemonade ($65), Ice Tricolor Coconut Milk ($65), and Fresh Thailand Young Coconut ($68), plus Ca Phe Phin ($70), house speciality Vietnamese-style coffee that retains a distinctive French lineage. Le Soleil also serves an Afternoon Tea Set of a platter filled with savouries, sweet items, scones, cakes and other delights. It’s a leisurely way to pass a summer’s afternoon.

For a light and refreshing summertime meal, a visit to Le Soleil to check out its summer menu ticks all the boxes. Fu Rong 映水芙蓉

Trying out upscale Sichuan cuisine is always an experience. It takes real culinary prowess to create delicate dishes that are not drowned out by the spicy Sichuan flavours. Fu Rong, a newly opened restaurant in the blossoming Ocean Terminal Extension (OTE) wing, fits the bill nicely. Fu Rong occupies an impressive space at OTE, with panoramic views of the harbour. The restaurant serves refined Chengdu cuisine that is gentler on the palate than the more overpowering hot and spicy Chongqing-style cooking. Fu Rong aims to recreate a Chengdu royal banquet, and their dishes pack all the sophistication and refinement you would expect. Our tasting menu certainly lived up to its billing. We started with two canapes: Chong Zhou Vegetables Rolls, Crab Leg, Shrimp ($128) and Assorted Sichuan Skewers, Vegetables ($148). The appetisers included Abalone, Green Sichuan Peppercorn Sauce ($168), Onsen Quail Egg, Crispy Shredded Potato ($108), and the classic Thinly Sliced Pork Belly, Cucumber, Garlic Marmalade ($148).

Fu Rong has managed to fill an enviable niche, serving highend Sichuan cuisine with refined flavours. The whole experience is impressive. To enjoy a spicy meal in a classy setting, we strongly recommend Fu Rong.

One of Fu Rong’s specialties came next – Hot & Sour Soup ($88 per person), which has a moreish sweet-and-sour taste. The main dishes included Oil-Poached Chinese Perch, Fried Chili, Sichuan Pepper ($498) that had us begging for more – the tender fish fillet soaked in hot oil and pepper is pleasantly numbing. Poached Lobster, Sichuan Pepper Sauce ($568) was fresh and tender and another winner.

We finished this sumptuous tasting experience with Stewed Cabbage, Golden Soup ($148), Chongqing Noodles, Wagyu Beef (488/person), which is delicious, Rice Porridge, Shrimps, Green Asparagus ($88 per person) and for dessert Fried Rice Cake, Crispy Rice, Sichuan Raw Sugar ($128).

Tai Kwun

Centre for Heritage and Arts The revitalised Central Police Station compound, the largest heritage project in Hong Kong, has opened its doors to the public as Tai Kwun – Centre for Heritage and Arts. The CPS compound comprises 16 historic buildings, including three declared monuments (Central Police Station, Central Magistracy and Victoria Prison), on a 13,600-square-metre site in the heart of Central. An international-grade art gallery and an auditorium have been added to contribute to the adaptive reuse of the site. The heritage site includes new art galleries and the Parade Ground and Prison Yard.
