e welcome you to Hong Kong and to CityLife, the monthly magazine for visitors to Asia’s World City. We want to first wish all of you a Happy New Year as we welcome in 2018. Tourism is a key sector of Hong Kong’s economy, and as such, the Government and the private sector, including the hotel industry, are all working closely together to ensure that Hong Kong continues to be one of the best destinations in the world for visitors from all market segments. Many initiatives are underway to strengthen our capability to attract and serve our visitors - something which we all enthusiastically look forward to be a part of. In the meantime, the city is busy as ever in January with a myriad of activities and events lined - up. And the cool weather is perfect for exploring the various areas of the city, whether on foot or via our excellent public transport. And it bears repeating that as one the safest cities in the world, exploring Hong Kong is truly worry free. One fine way to appreciate Hong Kong is a trip to one or more of the many impressive Chinese temples that we have. Our cover story on page 10 recommends a list of 10 best temples to visit - the temples chosen for their heritage importance as well as architectural beauty. Be sure to include a temple visit in your itinerary. Our beautiful Victoria Harbour is synonymous with the city itself. You maybe surprised that the harbour was much busier decades ago, and ferries crisscrossing the harbour was an indelible part of the iconic harbour scene. As cross - harbour tunnels and the MTR which were built in the 1970s helped to carry passengers and vehicles much more efficiently, most ferries became relics of the past. However, a few ferries still run between parts of Hong Kong and Kowloon as a nostalgic acknowledgement. Please read our story on p.14 suggesting a few ferry rides worth your visit. Major sporting events Continue to dominate the city's busy calendar. The 2018 Hong Kong Marathon will be held this month, a signature sporting event for Hong Kong, attracting ever - more participants and world-class athletes. And for the first time ever, the prestigious Volvo Ocean Race is coming to Hong Kong. The gruelling around-the-world sailing race will stop in Hong Kong to stage in-port habour and around the island races together with a festival - don’t miss it! And for sheer fun and entertainment, the everpopular Great European Carnival will return offering amusement rides and carnival games for all ages. A world-class family circus is included this year- a prefect treat for the whole family. So, from temples to ferries to fun carnivals or sporting events, Hong Kong will be buzzing as usual this month. So, enjoy being part of all that is happening and, on behalf of all of us, we wish you a wonderful stay in Hong Kong.

THE MODEL OPERAS 樣板戲
In the years after the Communist victory there was much discussion about the role of art and artists in revolutionary China. One tenet of the revolution was that the old was bad and had to be eliminated. But what should replace it? 中國共產黨取得抗日戰爭的勝利後，人們對中 國的文藝和文藝工作者產生了不少討論。改革 的其中一點就是要摒棄舊文化，那麼取而代之 的是什麼呢？

he Communist response was based on Mao’s Yan’an Talks on Art and Literature held in 1942. By the 1950s this had assumed the status of a policy statement on art in China. Their 25th anniversary, in May 1967, was the occasion when Jiang Qing and her allies chose to claim iconic status for the first eight model theatrical works. These comprised the five operas Taking Tiger Mountain by Strategy The Red Lantern Shachiapang (This is the name of the place where the action takes place) On the Docks Raid on the White Tiger Regiment, and two ballets The Red Detachment of Women The White-Haired Girl, with the final one being a symphonic rendering of Shachiapang They told stories from China's recent revolutionary struggles against foreign and class enemies. They glorified the People's Liberation Army and the bravery of the common people, and showed Mao Zedong and his thought as playing the central role in

the victory of socialism in China. Although they originated as live performances, they soon appeared as recordings, in comic books, on posters, postcards and stamps; on plates, teapots, washbasins, cigarette packages, vases and calendars. They were performed or blasted from loudspeakers in schools, factories and fields by special performing troupes. After 1969 several other model operas were produced, including Azalea Mountain, Battle in the Plains, and Bay of Panshi, following the original model in content and form. However it was the original eight plays that were most commonly performed. The following three outlines represent the themes of all the works:

Taking Tiger Mountain by Strategy

The story is based on the novel Lin hai xue yuan by Qu Bo, which in turn, is based on the real-life story of an incident in 1946 during the Chinese Civil War, involving a communist reconnaissance team soldier (Yang Zirong) who disguised himself as a bandit to infiltrate a local gang of bandits, eventually helping the main communist force to destroy the bandits. Unlike other characters depicted in the opera and novel, most of the names of both the protagonists and the bandits are real.

The Red Lantern The play is based on a movie titled There Will be Followers made in 1963, which is based on a novel titled There Will be Followers of Revolution by Qian Daoyuan first published in 1958. The novel in turn, is based on a true story of communist undercover agents working at a Huicui railway station in Hulin fighting the Japanese. When Li Yuhe, a railroad worker who was engaging in underground work, was taken away by special agents and Grandma Li has a premonition of being arrested, Grandma tells protagonist Li Tiemei the true story of her family. Grandma Li tells Li Tiemei how her parents sacrificed their lives in the revolutionary struggle. Li Yuhe took up the unfulfilled task of the martyrs. After hearing the heroic story about her family, Li Tiemei is determined to follow the example of her father and carry the revolution through to the end. The White-Haired Girl Set on the eve of the Chinese Spring Festival. The peasant girl, Xi'er, in the village, Yanggezhuang, Hebei Province, is waiting for her father to return home. Yang Bailao, Xi'er's father, has been away to avoid a debt collector from the despotic landlord, Huang Shiren. He returns home at dusk, with no gift other than
a red ribbon to tie to the hair of Xi'er for the festivity of the holiday.

The landlord will not let them have a peaceful and happy festival, and the debt collector comes for the farmland rent which Yang has been unable to pay. They kill Yang Bailao, and take away Xi'er by force as his concubine. Her fiancé, Dachun and other villagers come on the scene. Dachun wants to go to the landlord's house to fight for justice but is stopped by Zhao Dashu (Uncle Zhao) who, instead, instructs Dachun and other young people to join the Eighth Route Army.
《智取威虎山》
After much hardship Xi'er escapes to the mountains, and in the following years, she lives in a cave, gathers offerings for food from a nearby temple. She fights attacking wolves and other beasts. In time, her hair turns white. Meanwhile, Wang Dachun, who had joined the Eight Route Army and fought the Japanese, returns with his army to overthrow the rule of the landlord. They distribute his farmland to the peasants and decide to look for Xi'er in the mountains. Wang Dachun finally finds her in the cave with her hair turned white. They reunite and rejoice. All show the triumph of the Red forces over the evils of the old order and bolster the legitimacy of the Communists and Chairman Mao. ■
改編自曲波所寫的長篇小說《林海雪原》， 小說講述的是一個真實故事：1946年國共內戰期 間，共產黨偵察排長楊子榮偽裝成土匪，冒著危 險潛入匪窟，排除萬難，最終全殲匪眾。跟戲劇 和小說中的其它人物不同，故事的主角和土匪的 名字多數是真實的。 《紅燈記》 改編自1963年的電影《自有後來人》，而電 影則是改編自錢道源於 1958 年出版的小說《革 命自有後來人》，講述的是在虎林鐵路上的“輝 崔”小站工作的共產黨員對抗日軍的故事。從事 地下工作的鐵路工人李玉和被特務帶走，李奶奶 預感到自己也會被逮捕，於是將他們的家史告訴 李鐵梅。李奶奶告訴李鐵梅，她的父母親為革命 奉獻了自己的生命，李玉和接下了未完成的革命 任務。李鐵梅得知真相後，下決心仿效父親，肩 負起未完成的革命任務。 《白毛女》 故事發生在除夕之夜的河北楊各莊，農民楊 白勞的女兒喜兒正在等待父親回家。楊白勞向惡 霸地主黃世仁借了錢，之後外出逃債。黃昏時 分，楊白勞回到家，只給喜兒帶了一根紅繩作為 新年禮物。 地主黃世仁知道後，讓討債的人到楊白勞家 收取拖欠的農地租金，楊白勞無力償還。於是他 們殺了楊白勞，將喜兒搶進了黃家。喜兒的未婚 夫大春和其他村民得知事情，大春打算去黃世仁 家討回公道，但被趙大叔攔下來了。趙大叔讓大 春和其他年輕人加入八路軍。 受盡折磨的喜兒躲到了深山中，那幾年她都 在一個山洞中生活，從附近的一個廟宇裡討食 物，還要和狼群和其它野獸搏鬥。慢慢地，她的 頭髮全部變白了。加入了八路軍的王大春和戰友 們回鄉，控訴地主階級的罪惡，他們將農地分發 給農民，並到深山中尋找喜兒。最終王大春在山 洞中找到了白毛女喜兒，他們終於快樂地重聚 了。

art of Hong Kong’s charm is the way its historical heritage nestles so idiosyncratically among the new. Nowhere is that more evident than the Chinese temples that dot the city’s landscape. It is estimated that there are over 600 temples still standing and in use, many with historical significance. A trip to one or more Chinese temples is a must for visitors to Hong Kong. However, deciding which temple you should head for can be a challenge, given their variety in style and the different religions and local deities worshipped.

Temples, Temples! 种类繁多的 Traditional worship in Hong Kong blends and blurs the veneration of local deities with popular Chinese religions. As Hong Kong consisted mostly of fishing villages, many older temples were dedicated to local deities for protection from calamities and evil powers. The most common is a Tin Hau temple, named after the Goddess of Sea, to seek her protection for the fishermen. There are more than 100 Tin Hau temples still standing, including the oldest temple in the territories, located in Joss House Bay near Clearwater Bay. Other popular deities and historical figures include Che Kung – a heroic general of the Song Dynasty; Kuan Yu or Kwan Tai – a famous general in the Three Kingdoms Period; Pak Tai – a Taoist ‘Great Deity of the Northern Peak’; Hung Sing – a virtuous Government official from the Tang Dynasty, and Lo Pan – the patron deity of builders, along with many others. There are also a few Buddhist temples and monasteries, many built in later years but often much larger and more elaborate and ornate. Some feature Kwun Yam, the much beloved and popular Goddess of Mercy who is worshipped throughout Asia.

Tin Hau Temple at Joss House Bay 佛堂門天后古廟
Located in the Clear Water Bay Peninsula, this is the oldest and one of the most sacred temples in Hong Kong. Built in 1266 during the Song Dynasty, there is a rock nearby with carving dated 1274, the earliest known inscription in Hong Kong. Thousands gather every year on Tin Hau’s birthday on the 23rd day of the third Chinese month. Accessible by Public Green Minibus 16 from Po Lam MTR Station, get off at the entrance of Clear Water Bay Golf Club and it is a short walk down to the temple by the bay. 佛堂門天后古廟（大廟）位於清水灣半島，是香港最古老的天后廟和最神聖的廟宇之一。大廟建於 1266年宋朝時代， 附近有一塊刻於1274年的刻石，是香港最早有紀年的刻石。每年農曆3月23日天后誕當天，前來參拜的信眾絡繹不絕。可 在港鐵寶林站乘坐16號綠色小巴，在清水灣鄉村俱樂部門口下車，稍稍步行一段距離即可到達海灣附近的大廟。

A popular destination right in the heart of Kowloon, the complex features five buildings, centred on the oldest, the Tin Hau temple, from around 1864. Other buildings include a Kwun Yum temple, other deities, and a study hall. Che Kung Temple, Shatin

It was said that the locals built a Che Kung temple in late Ming Dynasty in the 1600s to quell a disease epidemic. The original temple still stands but has been substantially renovated. A new much larger one, including a giant statue of Che Kung, was built in 1994 to accommodate the many worshippers who come for the Che Kung Festival. 7, Che Kung Miu Road, Tai Wai, New Territories. 據說車公廟建於 1600 年代的明朝，目的是保佑民眾免受洪水瘟疫之 患。最初的廟宇依然在此，但已經過大幅改建。新的廟宇建於1994年，廟 內屹立著雄偉的車公像，每年車公誕民眾都會蜂擁到車公廟祈福，因此新 廟宇面積擴大了不少。新界大圍車公廟道7號。

Pak Tai Temple Wanchai 灣仔北帝廟
This beautiful temple tucked away in a back street of bustling Wanchai may be less well known than the older Hung Shing Temple on Queen Road East, but it certainly makes up for it in size and elaborate presentation. The largest of the Pak Tai temples celebrating the God of the North, the temple was built in 1863 but houses a 400-year old statue of Pak Tai in the main hall. Man Mo Temple, Sheung Wan

This beloved local landmark on Hollywood Road is also a favourite among visitors. The temple was built for the worship of Civil God (Man Tai) and Martial God (Mo Tai), from whom many students and scholars sought divine guidance when taking the Civil Examinations during the Ming and Qing Dynasties. 124-126 Hollywood Road, Sheung Wan. 這個著名地標位於荷李活道，是旅遊熱點之一。文武廟供奉的是文昌帝 君（文帝）和關聖帝君（武帝）。明朝和宋朝期間，很多學生和文人參加科 舉考試前都會參拜文昌帝君，祈求考試順利。上環荷李活道124至126號。

Arguably Hong Kong’s most famous temple and home to three religions (Taoism, Buddhism and Confucianism), this temple was established in 1921 as a tribute to Wong Tai Sin, or Immortal Wong, born in the 4th century and later deified. Known for its beautiful ornamental buildings and popular for its wish-granting ability, this temple is definitely worth a visit. 2 Chuk Yuen Village, Wong Tai Sin, Kowloon. Chi Lin Nunner y, Diamond Hill 鑽石山志蓮淨苑
This aesthetically pleasing temple in the foothills of the Lion Rock in Kowloon close to Wong Tai Sin temple was established in 1934 as a retreat for Buddhist nuns. The current building was erected in the 1990s in the Tang Dynasty style of interlocking wood sections without using any nails, making it the largest handmade wooden structure in the world. The adjacent Nan Lian Garden is a large classical Chinese garden also inspired by Tang Dynasty architecture. 5 Chi Lin Drive, Diamond Hill, Kowloon. Po Lin Monaster y, Lantau Island 寶蓮禪寺
Built in 1906, this Buddhist monastery houses three bronze statues of Buddha representing his past, present and future, plus many Buddhist scriptures. It is also home to the famous Big Buddha statue that sits atop Ngong Ping village. A trip via the Ngong Ping 360 Cable Car to Ngong Ping Village and the Monastery is a favourite for many visitors. Pak Tai Temple, Cheung Chau 長洲北帝廟
Another temple to worship Pak Tai is located in the charming main village on Cheung Chau, on one Hong Kong’s many outlying islands. The temple was originally built in 1783 to thank Pak Tai for the end of a plague outbreak. It also houses several other favourite deities of local fishermen including Guan Yum. The popular Cheung Chau Bun Festival, including the famous race to climb 14-metre towers to collect the attached buns, takes place at the temple every year. This temple in Kennedy Town on Hong Kong Island is a hidden gem. The temple was built in 1884 dedicated to Lo Bun, the patron saint of carpenters and the building trades. he iconic Victoria harbour is probably Hong Kong’s most famous feature. As one of the best-known harbours in the world, it may surprise visitors that, today, Victoria Harbour is quieter than it once was. Gone were the days when the harbour teemed with ships, boats and activity – Chinese junks jostling with fishing vessels and cargo barges for right of way as little sampans zigzagged between them. Indeed, it wasn’t so many years ago that American aircraft carriers on R&R leave docked right in the heart of the harbour, along with their escort ships. Throw in an occasional ocean liner or two, and one can easily visualise the frenetic if not chaotic harbour scene that came to define Hong Kong. Ferries criss-crossing Hong Kong harbour were ubiquitous as late as the late 1970s. Until the Cross-Harbour tunnel was built in 1972, connecting Hong Kong Island to Kowloon, ferries were daily travel between Hong Kong and Kowloon for countless passengers and motor vehicles. Numerous ferry routes, operated by companies large and small, linked up Kowloon, Hong Kong Island, outlying islands, and parts of New Territories, forming an indelible and colourful imprint of Hong Kong’s transport heritage.

Then the MTR, Hong Kong’s mass transit subway system, was built, starting operations in 1979, followed a year later by the first road tunnel under the harbour. The days of the ferries were numbered, as were the junks and cargo boats used to carry goods cross-harbour. When the Hong Kong government built the large container port in Kwai Chung west of Kowloon and diverted most of the large ship movements out of the harbour, the famous waters were no longer the territory’s vital beating heart. The harbour of today is as attractive as ever, but tranquil and even serene, especially at night – a far cry from the bustling harbour scene of the past. While residents of outlying islands still use ferries to commute in to the city, and many visitors go the other way to enjoy these respites from the frenetic city, the vessels used are slick, modern and fast, and no longer hold the sense of intimacy and closeness to the water that their forebears did. Thankfully, the Star Ferry – ever-popular among visitors and locals alike – still operates classic, airy vessels that offer a spectacular view of the harbour, even if the seven-minute ride doesn’t allow a leisurely traveller time to nod off and dream of how the harbour used to be. Still, all is not lost! For the nostalgic visitor, there are still various ferry routes between Hong Kong and Kowloon for foot passengers. Their vessels harken back to the past and allow visitors to discover some cool and lesser-known neighbourhoods as well as see the harbour as the active environment it always was. We’ve lined up a few interesting options for you to enjoy, via some of these ferry rides.

Sai Wan Ho to Lei Yue Mun (Sam Ka Tsuen)
The Sai Wan Ho Ferry, located on the Sai Wan Ho promenade right by the trendy Soho East dining area, touts itself as a nostalgic experience. Sure enough, the ferries are from the 1970s or earlier, but they are sturdy and eminently safe. Before embarking, there are several interesting places in Sai Wan Ho worth visiting. The nearby Hong Kong Film Archive houses many of Hong Kong’s classic films; Tai On Building, near the Sai Wan Ho MTR Station, is an old-style commercial complex from the 1970s, where the ground floor has famously been turned into a street food centre, now very popular among locals street foodies. The waterfront extends into Quarry Bay Park, a lengthy promenade with room for families, joggers, strolling, amateur dance groups, fisherman and more, and with a spectacular view of Eastern Kowloon and the hills beyond. A retired fireboat – the Alexander Grantham – is on permanent display, to board and explore. A ten-minute walk east towards Aldrich Bay is the Typhoon Shelter and further along is the Hong Kong Museum of Coastal Defence, which tells the fascinating history of Hong Kong’s past military defence. Lei Yue Mun on the other side of the harbour is a quaint seaside village known for its maze of seafood restaurants. After a walk around the waterfront and its small park, be sure to enjoy a seafood meal, where you choose your live seafood from vendors and have it cooked by any of the restaurants. Then enjoy in traditional local style, sharing all the dishes. It’s best in a larger group, for the chance to sample as many as possible.

The other ferry route is to Kwun Tong where the ferry disembarks at a small terminal inside the new typhoon shelter between Kwun Tong and the old Kai Tak airport. Kwun Tong is an former industrial district that has recently undergone tremendous redevelopment. Features include the nicely landscaped Kwun Tong waterfront promenade, hip co-working spaces, a vibrant up-and-coming art community with alternative art and music outlets converted from old factory buildings, and chic coffee houses. The Kai Tak Cruise Terminal is just across, its rooftop garden offering panoramic views of the city and the perfect place from which to gawk at mammoth cruise ships. APM, a major shopping centre, offers pretty much something for everybody. New World First Ferry, which mainly operates on routes to outlying islands, runs a ferry service between North Point and Whampoa, in Hung Hom. A thriving residential community, Whampoa has also seen transformation, starting with its waterfront. The newly opened Kerry Hotel offers a magnificent view of the harbour from its many terraces – perfect for an afternoon or evening drink. The Dockyard connected to the hotel is a trendy food court serving Southeast Asian cuisines and even has a band performing in the evenings. For a novel shopping experience, visit The Whampoa, a mall in the guise of a cruise ship – solidly land-based, with Japanese department giant Aeon as the major tenant; there are also loads of local restaurants and eateries to explore. Further along is the newly opened Nine Seafood Place, a Japanese seafood market offering restaurants and fresh seafood stalls. The Whampoa promenade connects to Tsim Sha Tsui East, so it’s an easy stroll back – just a couple of kilometres and the view is gorgeous. A
s ardent seafood lovers, a new Japanese fish market would always pique our interest with the delightful thought of large selections of fresh seafood prepared on-site by expert chefs. So, we were excited with an opportunity to visit Nine Seafood Place, a newly opened Japanese fish market located in Whampoa, which is destined to be a new gastronomical gathering place. Our restaurant of choice there is Kaniyen, a trendy Japanese restaurant specializing in live crabs flown in 5 times a week from Japan and North Pacific, plus fresh Japanese sea urchin. Our feature meal is the Seasonal Sea Urchin and Crab Set, and we were psyched. The restaurant is smartly decorated in contemporary Japanese style and features a main dining room, a bar and a few private rooms. Its welcoming and open ambiance is in keeping with that of Nine Seafood Place. Our meal started in earnest with a tasty appetiser, Taraba Crab Meat and Sawagani in Vinegared Miso. Taraba crab is Japanese King Crab, quite similar to the Alaskan King Crab which means it is big, meaty and tasty! Taraba Crab Leg and Sea Urchin Sashimi was next. We were impressed with the large portion of sea urchin served and its fresh, sweet taste. Equally impressive is the succulent meat of the crab leg which looks so inviting and mouth-watering- we are in for a treat! The combination of crab and sea urchin seems to work well, so why not a repeat? And so it is, as Grilled Crab Taraba Crab with Sea Urchin was served. A dab of sea urchin covers the crab leg and

then lightly grilled, the salt seasoning helps to accent the fresh taste of the meat. More crabs were to come: Steamed Horsehair Crab was next. We were each served with a whole horsehair crab, which is a bit similar to Chinese Hairy Crab but not as yolky. It tastes delicious all the same, with plenty of yellow egg and crab meat to chew on. For a change of pace, Taraba Crab and Sea Urchin Tempura was served. The tempura is superbly prepared, the batter is light but crispy and the meat tastes tender. The finale was yet to come. The Taraba Crab Shabu Shabu served with Vegetables was next, prepared and served at the table. The crab legs are large, as King Crabs are wont to be, and our portion is generous. The soup base is nicely flavoured; its flavour becoming more aromatic and rich as the crabs and vegetables were dipped in the soup. After the food was consumed the soup base was used to prepare our final dish, Japanese Porridge with Sea Urchin, the porridge simmers slowly in the soup which together with the sea urchin produces a creamy golden porridge that begs to be consumed. We rounded out our sumptuous meal with a Japanese Fruity Sorbet which just hits the spot. At $1,480 per person, the special set represents great value for money considering the amount of quality king crab and sea urchin we had. 作為海鮮的狂熱愛好者，我們一向對日式水產市場頗有興趣，購買品 種豐富的新鮮海產，讓專業廚師現場烹調，實在是令人難以抗拒。 因此，我們非常期待到訪位於黃埔的日式水產市場九號水產，絕對是城中 最新美食熱點。這次我們選擇了九號水產內的一間主打活蟹料理的日式餐 廳，每星期五天均有活蟹和日本海膽從日本和太平洋北部直送抵港。本次 的嚐味菜單是北海道海膽活蟹盛宴，我們準備好了！
餐廳採用現代日式裝潢，設有主餐區、壽司吧台座位和幾間貴賓房。 餐廳舒適開放的氛圍和九號水產的風格頗為一致。為這頓午餐揭幕的是一 道美味前菜——鱈場蟹、沢蟹酢味噌。鱈場蟹實際上是日本的帝王蟹，和 阿拉斯加帝王蟹一樣，鱈場蟹體積較大、肉質飽滿、鮮甜美味！ 下一道菜是海膽鱈場蟹腳刺身。海膽非常新鮮，份量十足，味道鮮 甜。鱈場蟹腳肉質十分飽滿，令人垂涎欲滴！接下來出場的是燒海膽鱈場 蟹腳，在鱈場蟹腳上放上一抹海膽，然後燒至表面微焦，隨碟附上的海鹽 令鮮甜味更加突出。 接下來依然是一系列活蟹料理：蒸北海道毛蟹登場！北海道毛蟹有點 像中國的大閘蟹，但蟹膏沒有那麼濃稠，肉質結實，兩者同樣美味。 尊貴天婦羅盛合猶如這趟嚐味之旅的小插曲，薄薄的炸粉十分香脆， 肉質卻依然嫩滑。 緊接著的是席前烹調的鱈場蟹野菜鍋。鱈場蟹腳體積頗大，而且數量 很多。野菜鍋的湯底非常鮮美，隨著加入的蟹腳和蔬菜越來越多，味道也 越發濃郁。 吃完野菜鍋裡面的食物之後，湯底用來烹調我們的最後一道菜式—— 海膽蟹膏味噌蟹粥。侍應將米加入湯底慢煮成粥，然後加入雞蛋和海膽， 金黃色的粥底綿滑美味，很快就被我們一掃而光。 這頓蟹宴以清新香甜的日本水果雪葩作結，我們感到無比滿足。 北海道海膽活蟹盛宴的價格為每位 $1,480，以這個價格品嚐到大量高 質素鱈場蟹和海膽，實在是物超所值。 到蟹筵品嚐活蟹料理的同時別忘了逛逛九號水產，令這趟黃埔之行更 加難忘。■ JANUARY 2018

hic and cool are the words that came to mind when Foxglove, a bar and restaurant outlet in Central that has been the talk of the town among foodies, cocktail connoisseurs, bar hoppers, and jazz lovers alike, was to be our destination for our never-ending culinary quest. Touted as a sophisticated speakeasy hidden behind an umbrella storefront, Foxglove’s décor theme - that of an airplane cabin interior, is inspired by an age when air travel was still seen as glamorous adventure. The whole set-up harkens back to the golden era of fancy cocktails, soothing jazz music and suave conversations, and the ambiance is, well, chic and cool. Foxglove serves continental cuisine. While the food is what we came here for, it’s the many creative cocktail concoctions that have become its calling card – something that we just couldn’t resist. The cocktails we chose were New York Sour (Michter’s Bourbon, lemon, sugar, pasteurized egg white, claret, $140 ) and Jasmine Paloma (Don Julio Blanco, Elderflower Liqueur, Jasmine Syrup, lime juice, grapefruit tonic, salt, $140). The drinks taste refreshing and are a pleasant way to start our meal. Quinoa Pomegranate Salad ($108) is served; the salad is garnished with pomelo, radish, fennel, watercress, walnut dressing. It looks wholesome and tastes light and sweet – a healthy start indeed. The Ginger Shrimp Ravioli ($168) is next. The pasta is filled with fresh shrimp, garnished with ginger, Chinese coriander, and cooked in reduced lobster red wine for a richly flavoured and succulent dish.

Two main courses were shared: Te Mana Lamb Rump ($280), prepared in green pea puree and lamb gravy, and Pan-fried King Salmon, a New Zealand King Salmon ($220) with creamy kale, potato gnocchi, in a lemon butter dill sauce. The highly acclaimed Te Mana lamb, New Zealand’s finest, lives up to its billing, as each bite of the meat is succulent and juicy and was eagerly consumed. The King salmon is nicely done too, the fish pan-fried just enough to keep the meat moist and tender to the bite. A plate of Parmesan Fries ($108) accompanied the mains, and the aged parmesan helps provide an extra zesty flavour that we enjoyed – definitely a house specialty. We rounded off our meal with Lemon & Chocolate Tart ($80), a two-piece combo of Gianduja chocolate and almond crumble tart and Earl Grey Tart ($80) which is Earl Grey Tea, orange jam and lemon crumble tart. We liked the unusual combination of ingredients as they make for a good complement to the dishes consumed. As our dinner was finished, Foxglove was still teeming with new dining guests arriving, some to get a late evening bite with their drinks, while others were settling in for some serious cocktail tasting. Make no mistake, this is one of Central’s hottest gathering places for the hip and sophisticated business crowd. Whether you are a pairs or with a larger group, Foxglove is the perfect place for an evening of drinks and good food, to the tune of soothing music. Don’t miss it.■

美食情報 PUTIEN 莆田
Putien, named after a coastal city in Fujian Province, China, is a popular restaurant chain specializing primarily in Fujian Cuisine with a dab of Singaporean fusion cuisine included. It first opened in Singapore and quickly gained a large following, garnering accolades and awards along the way, including the coveted oneMichelin Star recognition. Putien now operates in seven markets in Southeast Asia and China, including 8 outlets in Hong Kong alone.
Si Simply Italian Owned and run by a proud Italian, Si Simply Italian at D2 Place in Lai Chi Kok serves quality authentic Italian cuisine at reasonable prices. For the winter season, Si Simply Italian has introduced a series of hearty new dishes : Codfish Chowder ($108) – a soup made with imported cod seasoned in Sicily and desalted in water for 24 hours and cooked with various ingredients; Mussels Pot ($138) –prepared with white wine, garlic, Pomodorini cherries and basil with the mussels brought to a simmer with extra virgin olive oil; and Lobster Spaghetti ($138) – Gragnano spaghetti tossed in fresh Boston lobster (half), garlic, cherry tomatoes and fresh basil. The chef uses lobster carapace to create the Italian seafood stock for the dish, together with Italian basil and lobster meat. Also included is Pan Fried US Rib Eye Steak (8oz / $258, 12oz / $368) – USDA primegrade ribeye prepared with extra virgin olive oil from Italy, rosemary, salt and pepper. The highlight of the newlylaunched dishes is undoubtedly Simply Tiramisu ($128), created personally by the owner. The rum goes perfectly with cooled espresso brewed with Italian coffee beans. The restaurant is promoting “ first harvested seaweed” dishes and we were highly impressed with the many ways seaweed can be incorporated into yummy dishes. What stood out for us is that almost all the dishes are unique, not easily found elsewhere. Our selections included Seaweed and Minishrimp dressed with Sauce ($52), Crispy Deepfried Seaweed ($48), Braised Pig Intestine ($79), Stirred-Fried Yam ($89), “100 second” Stewed yellow Croaker ($69/pax), Stewed Pork Trotter with Seaweed ($98), Seaweed Omelette ($68), Putien Lor Mee ($82), Claypot Rice with Seaweed ($78), Deepfried Seaweed with Oyster ($78), and for desert, Deep-Fried Durian Puree ($42/pax). The food is uniformly excellent and better yet, Putien has managed to keep the prices of its dishes very reasonably- no wonder the outlet we went to in Causeway Bay was packed. For tasty, unique authentic dishes at great prices, Putien meets the standard and more- we highly recommend it- book early!

The exhibition will survey a selection of works from the 40s to the very end of his life in the 80s. As early as 1945 Hans Hartung was regarded as one of the most important abstract expressionists. He was invited to the first Documenta at Kassel, in 1955, was awarded the International Prize at the Venice Biennale in 1960 and had a major exhibition of his paintings in 1975 at the Metropolitan Museum of Art in New York. Traditional Chinese scholars were accomplished in painting, poetry, chess and qin. They would enrich their study rooms with a range of objects important to the pursuit of these activities. These objects embodied the highest degree of technical precision and finely honed aesthetic sensibilities. 29 Nov 2017-5 March 2018 The focus of this exhibition is on the Routes Network of Chang'an-Tianshan Corridor of the Silk Road which spans four mainland provinces (Shaanxi, Henan, Gansu and Xinjiang), Kyrgyzstan and Kazakhstan. Showcasing the cultural relics from China, Kyrgyzstan and Kazakhstan, the exhibition aims at illustrating the historical and cultural significance of this Routes Network. Some 160 invaluable artefacts have been selected from the four mainland provinces for display, over 50% of which are Grade-I National Treasures, while over 50 artefacts come from Kazakhstan and Kyrgyzstan. These exhibits include jadeware, textiles, sancai figurines, gold and silverware, bronze ware and large-scale murals. 我在蘇格蘭長大，11歲就到海外讀書。我有幸到訪了一些很美的酒店和餐 廳，喜歡到國外旅遊這一點也推動了我加入酒店業。我從青少年時期就在香港 生活了，一開始我在新世界酒店的廚房做暑期工，當時的薪金是每天$27.5港 幣，但是我真的很喜歡這份工作。
I grew up in Scotland but went overseas at 11 years old. I was lucky to be taken to nice hotels and restaurants which made a great impression on me. That and my desire to travel abroad drove my interest to join the hospitality industry. I lived in Hong Kong as a teenager and I got a summer job in the kitchen of the New World Hotel, paying me all of $27.5 a day – but I loved it. I went on a hotel management programme at University of Strathclyde at Glasgow. I then joined a corporate trainee programme offered by the Mandarin Oriental Hotel and started my hotel career. I went into club management for a few years, ran my own business for a while, then re-joined the industry working for the Shangri-la Group where I have been for the last 12 years, working in properties in Hong Kong, Malaysia and China. Working at the Kowloon Shangri-la has been a real treat. This hotel is such an iconic institution. It’s wonderful to work with such a great group of colleagues; some of them have been here from day one – they are so knowledgeable about their jobs. We have a fantastic location, right in the heart of everything: MTR, shopping, landmarks. In fact, I call our Kowloon Shangri-la the “Hotel with a heart”- it’s a totally inspiring environment to be part of. We have a diverse and loyal customer base which is a real strength of ours – we’ve businessmen, leisure travellers, young honeymoon couples, families with children ... And they come from all over the world. We have a strong respect for our customer base and we focus on executing the fundamentals of hospitality to anticipate and serve their needs – something we are proud of. Social media and the internet have affected our industry – it’s a challenge but also opportunity. The business is more last-minute in nature and our responses need to be more timely. It’s an opportunity since we also learn much more about our guests which we can use in a positive and respectful way to better serve their needs. My favourite part of the job is the sheer diversity of what I do. I still enjoy talking to our guests and colleagues in the lobby – you really need to like people in this job. But being involved in everything from social media and marketing campaigns to F&B – it’s like running so many different businesses, which I love. Hong Kong is a fantastic city. What impresses is its diversity in such a small footprint. We have world-class food, shopping from A to Z, rich heritage and diverse countryside – and you can experience all of them within 15 or 20 minutes of the city. Perhaps the challenge is to communicate all that we offer most effectively. My three recommendations for visitors to Hong Kong: Try the excellent Crispy Chicken at our Shang Palace, but also check out the street food like egg waffles or curry fishballs; explore the countryside whether it’s Sai Kung or a beach; and visit a seafood restaurant, say in Sai Kung or Lamma island, as part of your visit.
