e welcome you to Hong Kong and to CityLife, the monthly magazine for visitors to Asia’s World City. This month, Hong Kong is all about the arts, as several high-profile arts fairs take place in the city, headlined by Art Basel. Tens of thousands of art lovers will descend on the city from all over the world exploring the latest creations from well-known and emerging artists, many of them from China and the rest of Asia. Hong Kong is one of three cities to host Art Basel, the world’s premier art fair, based on its position as Asia’s art hub. The city’s reputation within the creative world has also rubbed off on the local art scene which is thriving and blossoming, with several artists’ enclaves gaining prominent attention. March has been declared ‘Hong Kong Arts Month’. Aim to visit one of the fairs if you happen to be in town or just go explore some of the local galleries and art centres. You’ll find all the details in our cover story on page 10. March is also a pleasant month to visit Hong Kong’s great outdoors. The mild weather and often sunny skies are perfect for a hike to explore Hong Kong’s natural beauty, which includes the harbour, rugged coastlines, islands and beaches, all with fantastic vistas. We’ve put together several outdoor excursions for you to experience fully the best Hong Kong has to offer, showcasing the city’s stunning geographical diversity. Please check out our story on Hong Kong’s outdoors on page 16. The 47th Hong Kong Arts Festival also runs through most of this month, featuring genres including theatre, music, dance and opera. With a smorgasbord of top arts performances on offer, from globally established names as well as up-and-coming talent from around the world, your visit to Hong Kong comes at just the right time. Formula E racing returns to the territory for its third annual instalment. The environmentally clean racing event, which uses only electric race cars, continues to gain global prominence. The race course winds around the Central Harbourfront, framed by soaring skyscrapers and the iconic Victoria Harbour, offering a dramatic setting for spectators to enjoy the high-speed action. What better time to visit a flower show than in spring when the blooms are naturally at their fullest? Hong Kong's Victoria Park hosts the Hong Kong Flower Show this month. Expect to be awed by the array of beautiful local and exotic flora and share your passion with other horticultural lovers. With so many art events filling the calendar you are in for a treat. And the good weather at this time of year means the city has plenty more to offer. So, whether it’s the great outdoors, enjoying great food or just roaming the neighbourhood. IDENTIFYING IRISH INFLUENCES 辨識愛爾蘭的影響
While Hong Kong’s early Scottish associations are widely known, the territory's formative years were governed by the Irish for 26 turbulent years, writes Arthur Hacker. 早期的蘇格蘭組織在香港很有名，但原來，這片殖民地 早期有26個風雨飄搖的年頭，是由愛爾蘭人來統治的。 亞瑟·克赫撰

very red-blooded Irishman gets palpitations at the exaggerated claims that Hong Kong was once effectively a Scottish colony, founded and run by the Scots. As St. Patrick's Day falls on the 17th of this month, it is about time somebody gave the Irish their due credit. It is true that Scottish traders like William Jardine, James Matheson and James Innes, the Laird of Dunkinty, started the Opium War following which Hong Kong was ceded to the British – but it was the Irish who did most of the fighting. Captain Charles Elliot (another Scot) first took possession of Hong Kong but it was left to two great Irishmen, the first governor of Hong Kong, Sir Henry Pottinger, and military globetrotter Major General Sir Hugh Gough to clean up the mess. When Pottinger stepped ashore to sign the Treaty of Nanking, the band played St Patrick's Day, not Scotland for Ever, and it was the 18th (Royal Irish) Regiment who acted as his guard of honour. They had borne the brunt of the fighting, with a little help from the Indian Army and four dozen gunboats.

Sir Henry Pottinger was a man of action. Before he was 21, he had set off on a spying mission through Baluchistan, Afghanistan and Persia disguised as a Tartar horse dealer. At one stage he pretended to be a holy man and got trapped in religious debate. To convince a Baluchi village elder that you are a venerable Tartar Hadji when you speak with a thick Belfast accent requires a measure of self-confidence and more than a little blarney. Another great Irishman, Sir Richard Graves MacDonnell, ruled Hong Kong 'with wholesome terror' as his last posting in a string of senior administrative roles across the British Empire. The historian Ernst Eitel, who knew him well, quoted Shakespeare to comment on the departure of this dreaded autocrat: “Here goes a Caesar! When comes such another?” The now thoroughly cowed citizens of Hong Kong welcomed, with immense relief, the fourth Irish governor of Hong Kong, the kindly old Sir Arthur Kennedy. Sir Arthur’s style of governing was to do as little as possible and to be nice to everybody. He thus established the popular, don’t rock the boat' policy, which remained the cornerstone of Hong Kong’s political philosophy

until the arrival of Chris Patten, the colony’s last governor. Kennedy was the first governor to have had a statue erected in his honour. However, Kennedy was the lull before the storm. ln 1877, Sir John Pope Hennessy arrived in town. He was an unpredictable maverick who quarrelled with anybody and everybody. The army commander General Donovan, yet another Irishman, so loathed the governor that he refused to provide a military band to play at Government House on the Queen's birthday. It took all the experience and skill of the seventh Irish governor, Sir George Bowen to restore harmony. Happily, Bowen was soon able to report to the prime minister, Lord Derby, that all was well. He added smugly that: "The ordinary work of a civil governor of Hong Kong... is not materially different from the ordinary work of the Mayor of Portsmouth." When Bowen retired in 1885, Hong Kong had been governed by the Irish for 26 consecutive turbulent years. It was during this time that Hong Kong came of age. While, it could be said, the Scots and the English were busy making money for themselves, it was the Irish civil servants who built the infrastructure that made modern Hong Kong possible. The next Irish governor was Sir Henry Blake, who took control of the New Territories. Unfortunately he blemished his reputation when he looted the gates of Kam Tin, to decorate his stately home in Ireland. The Hong Kong flower, Bauhinia Blakeana, a sterile hybrid, is named after this Irish vandal. In a final irony, the flower that bears his name was incorporated into the flag of the new Hong Kong Special Administrative Region under China and can be seen flying outside Government headquarters at Tamar today.■

Top of the bill is of course Art Basel, the international gathering that attracts tens of thousands art lovers from all over the world to Hong Kong. The city calls March ‘Hong Kong Arts Month’. Be sure to be part of the cultural fever, whether it’s attending a festival, browsing the city’s many galleries or visiting some of the artists’ neighbourhoods.

Art 巴 塞爾藝術展 Basel Back for its seventh edition, Art Basel is firmly established as Asia’s most prestigious art show, complementing its sister offerings in Basel and Miami. As host to galleries from Asia Pacific and beyond, and bringing well-known and emerging artists from round the globe, Art Basel is a mega-gathering place for art collectors, enthusiasts and aficionados the world over. It helps that Hong Kong enjoys a stellar reputation as a global leading art hub, especially for Chinese art, which undoubtedly played a prominent role in its selection to stage Art Basel. The fact that as a free port, Hong Kong levies no duties or taxes on art purchases, plus its efficient delivery infrastructure, makes Hong Kong that much more attractive for art sellers and collectors. This year, Art Basel features exhibitions ranging across painting, photography, sculpture, film and video, showcasing Asia’s creative diversity, with substantial exhibition space devoted to Asian-based galleries. Art Central Known as one of the city’s edgier art fairs, Art Central returns to the Central Harbourfront this month for its fifth edition. Featuring over 100 international galleries combining emerging and establishing talents, its programme is complemented by a strong line-up of interactive installations, experimental film and performance, engaging panel discussions, as well as some of Hong Kong’s hottest eateries. Almost 40,000 attendees visited Art Central in 2018, and the 2019 edition promises to be just as enticing.

Hollywood Road and Nearby The world-famous Hollywood Road, which traverses the hillside from Central to Sheung Wan, is the granddaddy of Hong Kong’s commercial art districts, and without doubt a must-visit destination for all art and antiques lovers. Lined with avant-garde galleries featuring Asian and Western artworks and Chinese antique shops, the road has been the catalyst for transforming the area into trendy, hip neighbourhoods. Recently, PMQ along Hollywood Road has established itself as a hub for local designers. You’ll want to check out the plethora of antique shops that line the road, including Oi Ling, which curates pieces ranging from Bronze Age objects to Qing Dynasty furniture. Down the hill in the heart of Central, Chinese Arts and Crafts offers some of the finest jade collections from master artisans in China.

Perhaps encouraged by the city’s success as an art hub, Hong Kong’s local art scenes have undergone a renaissance, with flourishing art enclaves sprouting up in several neighbourhoods across the city, adding to their colour and vibrancy. The opening of Tai Kwun, the city’s most high-profile art and heritage destination, located in the former Central Police Station, is a much welcome and long-awaited addition. The Tai Kwun Contemporary, part of Tai Kwun, hosts a slate of contemporary art exhibition in its custom-made gallery spaces. Other enclaves are cropping up all over the city. Noteworthy amongst them is Wong Chuk Hang, near Aberdeen, in the south of Hong Kong Island, where over 20 galleries are housed in converted industrial buildings. Hong Kong’s burgeoning street art, which for the most part comprises paintings on building walls, is also well worth checking out. You can find lively street art paintings in several neighbourhoods including Sheung Wan, Kwun Tong and Sham Shui Po.

Dragon's Back and Shek O
龍脊和石澳 The Dragon’s Back is a mountain ridge behind Shek O, an iconic village and beach in the south-east of Hong Kong Island. Known as one of the best urban hiking trails in Asia, the Dragon’s Back offers sweeping views of the South China Sea on one side and a dramatic mountain landscape on the other. There are several options to enjoy this hike. We suggest you take First Bus Number 9 from Shau Kei Wan and get off at the junction between Shek O Road and Cape Collinson Road near Tai Tam Gap Correctional Institution. From there, begin your ascent to the trail – a few kilometres fairly level before the ascent to the small ridge. You’ll be greeted with stunning vistas all round. 石澳是位於香港島東南部的一個舒適海灘，“龍脊”則是石澳後面沿著 山脊的行山徑，被評為『亞洲最佳市區遠足徑』。在“龍脊”行山，一邊可 俯瞰著一覽無余海景，還可以飽覽壯觀的山巒景觀。 有多種交通方式到達這裡。您可以從筲箕灣乘搭9號巴士，然後在石 澳路與歌連臣角道的交匯處下車，也是大潭峽懲教所所在地。從這裡出 發，步行幾公里的路程即可到達山坡，從這裡走到山脊，還可觀賞壯麗的 山巒美景。
Leave the trail at To Tei Wan on Shek O Road and walk to nearby Shek O, to catch some sun on the beautiful white sand beach. This quaint village, with its colourfully painted houses is popular with visitors and locals alike. Optionally, the Shek O Headland a little further along the road offers dramatic scenes of waves crashing against rocks. Sai Wan Ho to Devil’s Peak to Mau Wu Shan Bunker along Wilson Trail Section 3 This moderately strenuous hike offers sweeping views of Victoria Harbour, and visits two abandoned military bunkers from World War II. Start your trip with a relaxing old-style ferry ride from the Sai Wan Ho Ferry Pier in eastern Hong Kong Island, to Lei Yue Mun (Sam Ka Tsuen) – there are two routes, so check you have the right one. From there, walk about 15 minutes to the entrance of the Tsuen Kwan O Chinese Permanent Cemetery, a winding road up the mountain. Look for signs to the Devil’s Peak on the Wilson Trail, where an abandoned fort, Gough Battery, awaits at the top of the hill. The views of the harbour and across to Hong Kong Island are gorgeous. Follow the trail via two more hills, and a ridge ascent brings spectacular views of Kowloon. After the second peak, look for the trail signed for Mau Wu Shan Bunker, another WWII relic, overlooking Tseung Kwan O and Sai Kung beyond. You can now either retrace your steps for a sumptuous seafood dinner at Lei Yu Mun or continue along the Wilson Trail to Po Lam Road, for a bus back to the city.

Central to Western waterfront Instagram trail This is an easy walk that satisfies both the eyes and the tummy, taking in numerous landmarks and many excellent photo spots. Start at Tamar Park in Central and walk westward along the waterfront, passing the Observation Wheel, the Star Ferry and the Central Ferry Piers. Pass through the Hong Kong Macau Ferry Terminal and along the waterfront to the pleasant Sun Yat Sen Memorial Park, featuring a spacious lawn, fountain and rest area. Further along, past the produce markets, the Western District Cargo Basin Working Area, or ‘Instagram Pier’, is right on the water’s edge, with cargo containers a cool background for your photos. A little further, and Kennedy Town Praya is a waterfront promenade lined with restaurants and bars. The final Instagram spot, the Sai Wan Swimming Shed, is beyond the main built-up area, accessible from Victoria Road above. Hardly anybody swims there now, but a solitary pier sticking out into the harbour makes for a great photo spot. Return to the praya or the rest of Kennedy Town for your choice of fine food and drink.
從中環一路向西—— Instagram之旅 這條路徑輕鬆易走，景觀無數，美食不斷，還可以上你的相機拍攝不停。由中環 添馬艦公園出發，沿海濱向西漫步，途經摩天輪、天星碼頭及中環碼頭。繞過港澳碼 頭繼續前行，就到了中山紀念公園，這裡草地、噴泉、休息區自成一體，是休息的好 地方。再往前走，穿過農貿市場，就到了西區公共貨物裝卸區，也叫做Instagram碼 頭，因為這裡靠海，岸邊擺有很多集裝箱，顏色各異，很適合作為拍照背景，很多遊 客慕名而來打卡。再向前便是堅尼地城海旁，這條濱海長廊兩側樹木與餐廳林立。最 後一個景點——西環泳棚還需繼續向西，從域多利道走進去，你會發現幾乎沒有人在 這裡游泳，但一個孤零零的碼頭，想必拍出來的照片一定很有意境。最後在這邊的酒 吧和餐廳大吃一頓，喝點飲品，這條觀光之旅就可以圓滿結束嘍。
Lamma Island This beautiful island, Hong Kong’s third largest, is a favourite with locals and visitors alike, noted as the birthplace of superstar actor Chow Yun Fat. The island is blissfully free of motor traffic with Yung Shue Wan and Sok Kwu Wan the best-known villages. Take a ferry from Pier 4 in Central to Yung Shue Wan where you can stroll through the village lined with friendly shops and bars/restaurants. Take the path to Sok Kwu Wan, with perhaps a stop for tofu custard at the stand beside the path. Before the moderate ascent, Hung Shing Ye Beach offers a pleasant respite. The hike up to the ridge has a stunning view of the islands and the sea, while the descent to Sok Kwu Wan passes through a sleepy bay with ducks and other birds foraging in the wetlands, as well as a stately old Tin Hau temple. You’ll then be very ready to enjoy a nice meal at one of the village’s famous seafood restaurants before directly catching a ferry back to Central.

tanding alone at the edge of the still-developing West Kowloon Cultural District on Austin Road, the Xiqu Centre cuts a stunning and imposing architectural figure – audacious building curves, all-white exterior, and seemingly aloof from the hurly burly of the nearby city. Walk inside, and Xiqu’s ascetic but welcoming interiors deliver a visceral visual treat to visitors. It’s hard to conceive that such a modern venue is now the new home – and in time, the keeper – of the city’s Cantonese Opera culture. But that’s exactly what Xiqu, a major component of this long-awaited cultural district, is intended for. As Louis Yu Kwok-lit, Executive Director of Performing Arts for the West Kowloon Cultural Authority, enthuses, “it’s bamboo theatre getting a post-modern home, and with it, a new and younger audience” – alluding to traditional holiday performances of Cantonese opera at temporary open-air venues made of bamboo scaffolding. With Cantonese opera included in 2009 on UNESCO’s Representative List of Intangible Heritage of Humanity, it’s high time and welcome news that Cantonese opera, an operatic form comprising music, singing, dance, acrobatics and movement, is finally getting its due. Yu, who took up his role in 2010, is a veteran of public sector art development. He was formerly Chief Executive of the Hong Kong Arts Development Council, and before that, Chief Executive Officer of the Hong Kong Arts Centre. He wears his passion for Cantonese opera on his sleeve and is over the moon that, finally, Hong Kong has a world-class performance facility to properly pay tribute to this venerable art form.

曲線，全白的外觀顏色，給人一種高冷之感。但裡面的 風格卻卓然不同，既是視覺衝擊也是享受。很難想像， 這樣一個現代化建築是粵劇文化的家園，扮演著守護者 的角色。但這正是西九龍文化區成立戲曲中心的目的。
正如西九文化區管理局表演藝術行政總監茹國烈先 生所說，“這是大戲棚的後現代家園，吸引的將是年輕 一代的觀眾”。大戲棚傳統上，是在用竹搭架起來的臨 時露天劇場的粵劇表演。粵劇於 2009 年被聯合國教科文 組織列入“人類非物質文化遺產代表名錄”。現在，粵 劇，這種包含音樂，歌唱，舞蹈，雜技和動作在內的文 化形式，終於迎來的它的春天。 茹先生於2010年加入管理局，擁有多年藝術行政 管理經驗，之前為香港藝術發展局行政總裁，曾在香港 藝術中心任職。他對粵劇的熱愛溢於言表，在他的帶領 下，文化區內各項演藝設施的設計工作及建築工程均進 度理想，也使得粵劇文化得以新生。
To create a well-deserved new home for Cantonese Opera, the Authority engaged the renowned Hong Kong–born architect Bing Wing Thom, whose inspiring design survives him as a tribute to his heritage roots. The large complex encompasses the Atrium; a large public space with areas for exhibitions and public performances; a 1073-seat Grand Theatre with state-ofthe art technical facilities; Tea House Theatre, an elegant and intimate venue designed with flexible seating – up to 200 – for smaller scale performances; a seminar hall; and eight fully equipped high-quality rehearsal studios. Louis Yu emphasises that the theatres were tailor-made for Chinese opera performances. For example, each theatre has large built-in subtitling panels for both Chinese (vertical) and English (horizontal) to guide audiences through the opera content. To handle Cantonese opera’s famously loud percussion instruments, especially the gongs, the theatre uses extra-absorbent acoustic materials to dampen the sound. Finally, the opera is sized to keep audience members close enough to the performers to appreciate their facial expressions and finer body gestures. Yu explains the Tea House Theatre will play a key role in revitalising Cantonese opera, and is his “secret weapon” to help expand the art form to a younger segment of performers and fans – an important mission of Xiqu, passing on the art to the next generation. The Xiqu Centre is also developing its own performance troupe, dubbed Tea House Rising Stars, who can hone their skills with smaller scale performances at the Tea House Theatre.

For example, it offers a “tea and dim sum performance”, in which for $318 guests enjoy an afternoon opera performance while sipping tea and eating dim sum – all the seats accommodate a tea cup and a plate of sim sum – a most enchanting way to enjoy an opera.

Under Head Chef Gareth Packham, a seven-year veteran of the Gordon Ramsay Group, maze Grill serves a combination of its signature dishes from London and dishes created especially for the Hong Kong outlet. The décor of the restaurant is casual, contemporary and warm, creating an ambience that contrasts nicely with the floor-to-ceiling windows, the better to allow unimpeded views of the harbour. A generous outdoor drinks terrace conjures up a gorgeous view across to Hong Kong Island. The restaurant specialty is, of course, a collection of quality British Butchers Cut dry-aged steaks, cooked over a charcoal-fired Josper grill, plus Gordon Ramsay’s world-renowned signature Beef Wellington. For the Hong Kong outlet, maze Grill has created several exclusive dishes. They include the Sliced Snapper, a crunchy Prawn and Chorizo Toast and a Traditional Ploughman’s Pork Pie – Carved Table Side.

Amid the fanfare about this restaurant, our expectations ran high, and maze Grill delivered in style. We started our dinner by sharing two appetisers: Grilled Diver Scallops ($158), jalapeno, green apple, coriander and Special Confit Duck & Watermelon Salad, with Watercress and Lotus Chips ($148). The scallops are large, fresh and tender, with just the right amount of seasoning. The salad comes with a generous helping of shredded slowed-cooked duck packed with zesty taste. For the mains, we succumbed to the Cow and Cut, a choice of three cuts at 100g each. Ours were Sirloin (300g for $388), Rib-eye (400g for $488) and Fillet on the Bone (300g, $588). Each steak was perfectly grilled to medium-rare and the meat was excellent. The other main we ordered was Hot Smoked Miso Salmon, with Sesame Cucumbers ($218), providing a welcome contrast to the steaks, with the salmon meat grilled just so to remain tender and moist. We managed somehow to find room for two sides: French Fries ($48), and Seared Foie Gras ($88) which is a delicious sauce that goes well with the steaks. Our dessert was the signature Coconut & Dark Chocolate Cremaux with passionfruit sorbet, candied walnuts and a brandy snap, rounding out a highly enjoyable meal. Between its signature dishes, excellent cuts of steak and a fantastic view, maze Grill is the perfect place for either a casual or romantic gathering. We highly recommend it, and, book early!■

he prospect of an Omakase Japanese dinner engagement generates a uniquely heightened anticipation. The promise of a fine sushi chef lovingly creating artistic pieces of sushi, right in front of the dining guests, is surely one of the most pleasant feelings in dining. So, naturally, we looked forward to our dinner at Sushi Sase, a neat and cosy Japanese restaurant tucked away on a side street in Central. Named after its head chef, Sushi Sase draws on Chef Sase’s belief that simplicity is the highest form of culinary mastery. It does so by sourcing fresh ingredients daily from Hokkaido and delivering the food artfully and honestly. The décor of Sushi Sase is traditionally Japanese – elegant, simple and aesthetically pleasing. The sushi bar sits 16 guests, and a private room provides space for 12 more. We chose the Aoi Chef Omakase Course ($1,600 per person), essentially the full works. You can also choose a 15-piece sushi Sakura Omakase Course for $1,380 per person. Serving us that evening was Hirano Miki, a lady sushi chef from Japan who’s been in Hong Kong for nine years and apprenticed under Chef Sase in Hokkaido. It didn’t take us long to figure out Sushi Sase’s philosophy: quality, fresh seafood and fish, food simply prepared but individually tailored, especially with respect to seasoning and sauce. Rather than just wasabi and soy sauce, each piece is thoughtfully paired with subtle seasoning aimed to accent its flavour.

We began the meal with a starter Rape Blossom with Kelp, Jelly with White Fish, Japanese Anchovy, with a side dish of Miso Vinaigrette with Yuzu, followed by a tasty, delicately tender Fried Whitebait Fish. A parade of sashimi dishes came next: Flounder Sashimi
Wrap with Spicy Daikon and Spring Onion with Pozu Vinaigrette Sauce; Hokkaido Hairy Crab with Crab Miso – which tasted sweet and refreshing; Marinated Spanish Mackerel Sashimi; Jack Mackerel little handroll; Marinated Monk Fish Liver with Yuzu; Marinated Hokkaido King Salmon with garlic oil and spring onion soy sauces; Wild Caught Medium Fatty Tuna; and Squid Head with Roe. The small individual portions add up after a while. Sampling the different fresh fish skilfully prepared was a real treat. We continued our meal. A Cooked Shrimp Cake with Seaweed and Bamboo, Sansho Pepper Leaf was followed with sushi items that include Cuttlefish Sushi, Horse Mackerel Sushi (Pickled Rice and Onion), Seared Bonito Sushi, the delicious Hokkaido Sea Urchin Sushi, generously portioned, Hokkaido Salmon Roe Sushi, Baby Snapper Sushi, Otoro Sushi (Garlic and Daikon), and Sea Eel Sushi. We ended our meal with Roast Egg with Shrimp, Clams Broth and for desserts Green Tea Panna Cotta with Yuzu Ice Cream. All of our party were fully sated and happy. There is something comforting about being served, passively but full of expectancy. Our dinner at Sushi Sase was chockfull of delightful surprises, and considering the amount of quality seafood we consumed, its price is eminently reasonable. Founded on the owner’s love and passion for steak and premium wine, Nice Yakiniku & Fine Wines serves the very finest cuts of beef from all over the world including award-winning Australian M9+ Wagyu, available in ribeye and fillet, Japanese Wagyu from Tamba known for its flavour, tenderness and marbling, plus other rare cuts including tritip, flat iron and blade steaks. All the meat plus other à la carte entrees are prepared and presented Japanese style, with the orders grilled on a Japanese white charcoal (Binchotan) grill reaching up to 1,000 degrees Celsius. SHÈ 舍
Shè, a chic Chinese restaurant recently opened inside Lane Crawford at ifc mall in Central, serves contemporary Cantonese fusion cuisine, including dim sum, emphasising healthy cooking methods and ingredients. The name Shè, translated from Chinese, denotes a place of rest or hospitality, which is apt as the outlet provides a gourmet sanctuary for weary shoppers after a day in the stores. The restaurant, replete in a stylistic modern décor, opens to an alfresco terrace overlooking Victoria Harbour and the waterfront below, providing the perfect setting for a relaxed and refreshing meal. Shè serves a wide range of traditional Chinese dishes, albeit injected with a modern flair; it also offers a wide selection of bespoke cocktails inspired by Shanghai’s golden age, which in turn drew heavily on French, British and American culture. For our meal, we started with a trio of appetisers – Chilled Abalone ($168), Crispy Bombay Duck Fish with Salt & Pepper ($88), a local favourite, and Pan-fried Vegetarian Bean Curd Skin ($88). The sharing mains included Wok-fried M5 Wagyu Beef with Shishito Peppers ($268), Sauteed Fish Maw with Shrimp, Chinese Kale and Cashew Nut ($238) and Pan-fried Tiger Prawns ($238). Our final entrée at Shè was their signature Wok-fried Supreme Lobster Noodles ($388), in which the succulent lobster meat tastes that much better when wok-fried. We closed by sampling several desserts: Goji Chrysanthemum Crystal Cake ($52), Sweet Mango Pomelo Sago Dessert ($52) and Stewed Bird Nest with Sweet Papaya ($128). Whether you are hungry from shopping or just want to enjoy a nice Chinese meal, do give Shè a try!

The censer is similar in function to the more well-known boshanlu-style censers from the Han period, but its form is very different. Tai Kwun
Centre for Heritage and Arts The revitalised Central Police Station compound, the largest heritage project in Hong Kong, has opened its doors to the public as Tai Kwun - Centre for Heritage and Arts. The CPS compound comprises 16 historic buildings, including three declared monuments (Central Police Station, Central Magistracy and Victoria Prison), on a 13,600-square-metre site in the heart of Central. An international-grade art gallery and an auditorium have been added to contribute to the adaptive reuse of the site. The first phase of opening includes 11 heritage buildings, the new art galleries and auditorium, and the Parade Ground and Prison Yard. Beginning 10 May 2018, online booking will be accepted for the Tai Kwun Pass, which will provide access to the site from 29 May 2018 onwards. Pass-holders will be guaranteed entry to Tai Kwun. Joseph W. Y. Chong, Area Vice President and Managing Director at The Peninsula Hong Kong and The Peninsula Shanghai, shares his interesting career in the hotel industry. 香港半島酒店及上海半島酒店地區副總裁兼常務董事張榮耀先生 與我們分享了他在酒店業工作多年的經驗。 My involvement with the hospitality industry was totally accidental. I grew up in Ipoh, Malaysia. After Form 5, I went to a military college intending to be a pilot. I passed every test in the rigorous assessment but found out I was colour blind, which knocked me out of consideration. Dejected, my father sent me to the Regent in Kuala Lumpur to check it out. I liked the set-up: neatly trimmed uniforms, English-speaking and so cosmopolitan. I went to a hotel management college and got my diploma and eventually got a job with the Regent, starting out as an airport representative, before moving up. The Regent was acquired by the Four Seasons. So, I spent the latter part of my career there opening several Four Seasons hotels in Bali, Singapore, Jakarta, and KL. Then I was recruited to the Peninsula Beijing and stayed there for seven years, helping to oversee its redevelopment before moving to Peninsula Shanghai and then coming to Hong Kong where I now managed one of the world’s iconic hotels. The Peninsula has been a part of Hong Kong for 90 years, as home from home to esteemed guests from all over the world. For us, hospitality means remaining true and original, delivering exceptional service at the right time, in the right tone, and of course, most discreetly. Given our history and heritage though, I humbly think that the Peninsula is beyond just luxury. Our combination of service, tradition and mystique should serve us well even as more ultra-luxury hotels enter the market here in Hong Kong. Not surprisingly, Chinese visitors are some of the most aspiring luxury travellers; they are real students of luxury brands. That means they want to enjoy the traditional service standards of the Peninsula. In that sense, we don’t need to change our service standards. Of course, we make them feel at home by providing comfort they are used to such as Chinese tea and Chinese breakfast, with bilingual staff who treat everybody from anywhere equally and consistently. I am very proud to say that we are the only group in the world with all its (ten) hotels accorded five stars by Forbes Travel Guide, becoming its first-ever all five-star hotel brand. It’s a reflection of our commitment to deliver the highest service across all our hotels. The fact that we own all our hotels helps drive that consistent delivery. My favourite part of the job is walking by the Pastry Shop every morning and enjoying the wonderful aroma. Seriously, I love talking to our staff, even our daily greeting. It’s supremely important to have a genuine connection to everyone on the team, recognising that each role is so important. My top three recommendations for visitors are: 1. Explore the south side of Hong Kong Island with its lovely beaches and easy access. 2. Visit Yuen Long in the New Territories and its old villages; so very different from the city itself. 3. Walk along Hollywood Road and its neighbourhood and check out the galleries, antique shops and trendy restaurants.
