e welcome you to Hong Kong and to CityLife, the monthly magazine for visitors to Asia’s World City. Chinese New Year, the most important holiday in the city, falls in February this year. Hong Kong welcomes the Year of the Pig with great fanfare. Over the three-day holiday period and days preceding it, the city celebrates the lunar new year with gusto. Between pre-New Year flower markets, lantern festivals, spectacular fireworks, temple visits, and taking in sumptuous Chinese feasts and eating like a pig, so to speak, you’ll be immersed in the festive and holiday mood in no time. The centrepiece of the celebration is undoubtedly the Cathay Pacific Chinese Lunar New Year Night Parade, which is held on the first day of the Chinese New Year (5 Feb). Grab a spot on the parade route and enjoy the spectacle. Please visit our cover page on page 10 for all the details on Chinese New Year celebrations. One of Hong Kong’s distinctive aspects is its Cantonese culture, reflected in the use of Cantonese as the city’s dominant spoken language, or dialect. Notwithstanding the increasing popularity of Mandarin (Putonghua), Cantonese remains the city’s lingua franca and will remain so for the foreseeable future. Hong Kong is often described as the last bastion of Cantonese culture and aptly so as the city’s rich culture is embedded in its Cantonese language, food, customs, music, films and festivals. Cantonese also punches above its weight internationally as the dialect is widely used in Chinese communities overseas. We encourage you to explore the city and pick up an appreciation of its Cantonese culture – it’ll be highly rewarding. Check out our feature story on page 14 on Cantonese Culture for details. Horse racing is Hong Kong’s favourite pastime; attending a race at either of the city’s two racecourses is truly a unique experience. The Chinese New Year Race Day is one of the bigger events on the racing calendar, with the racing excitement augmented by performances and door prizes, among much else. Give it a visit if you have time. On the sporting front, the 2019 Standard Chartered Hong Kong Marathon will be held this month, with thousands of amateur runners taking part alongside professional competitors, each at their own pace. Even if you are not one of the participants, you can cheer them on along the race route and soak up the ambience. Finally, the city continues to attract world-class music performances such as Lea Salonga, of Miss Saigon fame, among others. Don’t miss it if you’re a fan of Broadway musicals. It’s another busy month in Hong Kong, chockful of events and celebrations. Hong Kong’s vibrancy and hospitality are never better shown during Chinese New Year. Take the time to be part of the festive occasions and may we wish you a most enjoyable stay in Hong Kong and “Kung Hei Fat Choi”.

This critically acclaimed new play recounts the exploits of Confucius, one of the most influential philosophers in Chinese history, who spent 14 years travelling through China’s warring states to preach his political and moral wisdom to the warlords. THE BIRTH OF COLONIAL HOTELS 殖民地酒店的誕生

Entrepreneurs and adventurers were some of the first guests in the early days of Hong Kong's international inns, writes Arthur Hacker. 企業家和投資者是早年香港國際級酒店的首批住客，亞瑟·克赫撰 1

ong Kong Island’s first hotel opened in 1841, the year the British took control of the island. It was called Lane's Hotel. The doyen of the Lane family was Edward Lane, butler to the East India Company in Canton (Guangzhou). He seems to have had a lot of relatives. The hotel's proprietor was probably William Lane who ran a ship dealing operation in Queen's Road, Central, and was involved in the hotel business for many years. ln 1842 he bought Lap Tap's Tavern which he renamed the Victoria Hotel. William was also connected to Thomas Lane, the partner of Ninian Crawford. ln I850 they founded that great Hong Kong department store, Lane Crawford and Company, which still flourishes today. Reporting on the amazing progress of Hong Kong during its early years, Captain Hall, the commander of the famous Opium War gunboat the Nernesis, noted that: "billiard tables, for instance, were in the colony less than two years after it became British territory and the hotels were said to be quite up to date and comfortable." The names of these Victorian hostelries changed frequently. A popular hotel in Hollywood Road called Connaught House originally got its name from a posh London hotel. Later, to attract

American customers, it was renamed Astor House after a celebrated New York hostelry. It ended up as the St. Francis Hotel. ln the early days of the industry the words "house", "inn", "tavern" or even "grill room" were often used in preference to "hotel." English pub names like the Crown and Anchor and the White Swan were popular. More creative monikers included Uncle Tom's Cabin and The Land We Live ln. Some were respectable establishments and some were not. I have my suspicions in regard to the Beehive Inn which had a sign outside that read:

Within this hive, we're all alive, and pleasant is our honey, If you are dry, step in and try, we sells for ready money. Another somewhat dubious hostelry was Dick Daly's Owl Grill Rooms in Des Voeux Road which had a few "unpretentious rooms" available. It was "the haunt of the hungry and adventurous," wrote an old China hand, "cravings being satisfied by tremendous steaks and strange females who on occasion were so solicitous of one's health as to persist in drinking to it at one's own expense."

維多利亞時代的酒店經常更換名稱。荷里活道一家頗受歡迎的酒店——「康樂飯店」，原名來白倫敦的一間豪華酒店。後來為了要吸引美國遊客，酒店的名稱跟紐約一家著名酒店一樣，名為「阿斯特飯店」。經過多次改易，酒店最後命名為「聖法蘭西斯酒店」。酒店業發展初期，「飯店」、「旅館」、「旅店」以至「扒房」等詞彙多被選用，「皇冠」、「安格」和「白天鵝」等英式酒吧名稱則多被選用作酒店名稱。富有創意的酒店名稱有「湯姆叔叔的小木屋」和「我們住在這裡」等。當年的酒店毀譽參半。筆者對蜂房旅館的

The original Hongkong Hotel was located in Queen's Road, Central where The Landmark shopping mall is today. It was rebuilt to an international standard in 1892 and was managed by Dorabjee Naorojee, a Parsee entrepreneur who founded the Star Ferry Company. He and his partners also operated the Peak Hotel next to the Upper Peak Tram Station, which boasted spectacular views. Its rival, the Mount Austin Hotel, which was located higher up the mountain, was a failure due to being frequently shrouded in clouds. It was later taken over by the military and turned into a barracks. There were several residential and private hotels. They ranged from cheap boarding houses and dismal doss-houses to the magnificent Kingsclere Hotel in Mid-Levels. There was even a floating hotel called The Marina, which in spite of a splendid opening party, failed to attract guests and went bankrupt. The vessel was sold and ended up as a 'flower boat' (a floating brothel) in Canton. Hong Kong's most famous old hotel, The Peninsula, did not open for business until 1928, during the reign of Queen Victoria's grandson, King George V. The vision of its founders, the eminent Kadoorie family, was always for it to be the “finest hotel east of Suez” and it was grandly placed at the terminus of the Kowloon and Canton Railway, the final stage of the trans-Siberian route. Today, it remains a great hotel, with a sweeping view across Victoria Harbour to Hong Kong Island, even if the railway now passes underground.■

The Observatory recorded early morning temperatures of two degrees centigrade, the second lowest for February since records began in 1885. Ice and frost were reported at The Peak and other hilly areas in the New Territories, with multiple deaths resulting from exposure to the cold.

In many ways, Hong Kong may be considered the “last bastion of Cantonese Culture” as the use of Mandarin, China’s official language, becomes ever more pervasive, even in Guangdong province, home of Cantonese culture. But for visitors, getting a feel for Cantonese culture and experiencing its many facets can be challenging, precisely because it is so ubiquitous. Cantonese, strictly speaking, is a spoken Chinese dialect, as the written language is common across all dialects. It is spoken widely in Guangdong and Guangxi provinces albeit with different accents. Proper Cantonese, or the Prestige Dialect, is spoken by people in Guangzhou (Canton), Hong Kong, Macau and Zhuhai. Around 60 million people speak Cantonese as a first language. Cantonese can be traced back to before the Tang Dynasty; some would argue that its pronunciation bears closer adherence to Middle Chinese, which prevailed during the Tang Dynasty. Because Cantonese is so verbally expressive, it produces words that don’t exist in other dialects and special characters have to be created to convey them. Cantonese is an emotional and vibrant language, don’t be taken back if two people speaking Cantonese seem to be arguing heatedly – they could be talking about anything. And Cantonese is tonal, therefore hard to learn as a dialect – even the locals can’t identify with certainty all the tonal elements, and whether there are six, or seven, or nine of them. Still, why not learn a few Cantonese phrases and give them a try while you are out and about? Given the prevalence of English you don’t need to learn it for survival, but the locals will surely appreciate your effort. We’ve put together 10 phrases to help you get around, and for entertainment value.

In the 1970s and 80s, Hong Kong enjoyed a reputation as a prominent base of film and TV production, with an extensive following throughout Asia and world-wide. Early trailblazers like Bruce Lee helped put Hong Kong on the map, followed by movie icons such as Jacky Chan and Chow Yun Fat as well as famed movie directors like John Woo. Many of these films have become classics, even as late as 2002 when the movie Infernal Affairs starring Andy Lau and Tony Leung was made. Hong Kong movie production has since waned considerably, but the large body of work remains a critical part of Cantonese heritage. Visit the Hong Kong Film Archive in Sai Wan Ho for a tour of Hong Kong’s film history. It also offers daily screenings of old classics.

Cantonese Opera is major form of Chinese Opera, thought to have originated during the Song Dynasty in the 13th century. The opera is a combination of music, dance, movements and acrobatics. It was popular in the Pearl River Delta area, Hong Kong, Macau and Southeast Asia. Cantonese Opera enjoyed a renaissance in the 1950s and 60s in Hong Kong with many opera performers becoming household names. A few places still perform Cantonese opera today, including the Sunbeam Theatre in North Point. The recent opening of Xiqu Centre in West Kowloon Cultural District, a major theatre for opera performances, should help its revival. Catch a performance there if you can. Even if you don’t understand the dialect, just soaking up the vibes can be an interesting experience. Before there was K-pop, Cantopop was all the rage in Asia. Cantopop is uniquely Hong Kong, combining Cantonese lyrics with western pop music style and instruments. Even today, superstars of Chinese pop music such as Jackie Cheung, Andy Lau and the late Leslie Cheung made their initial mark in Cantopop. Cantopop is still highly popular today, and these singers regularly sell out venues throughout Asia and even in North America. You can always download some of these singers’ Cantopop songs and better yet, catch them in live concerts in Hong Kong, usually at the Hong Kong Colosseum in Hung Hom, Kowloon.

Perhaps the most influential element of Cantonese culture is Cantonese food, which enjoys a worldwide following. To borrow a phrase – the sun never sets on a Chinese restaurant – Cantonese food is served everywhere. And there is no place better to experience the rich variety of Cantonese cuisine than in Hong Kong, often considered the centre of Cantonese food. Among Chinese cuisines, the refined style of Cantonese is considered the best of fine dining. In Hong Kong, of course, you can sample excellent Cantonese food on any type of budget. You must try a dim sum lunch, a Cantonese mainstay. A seafood dinner at a Cantonese restaurant is also a must; often featuring live fish tanks where you can pick out your dishes eye to eye. Many of the city’s restaurants also offer the famous Cantonese double-boiled soup – it’s healthy, nutritious and warms your body. But there is much more yet for you to sample.

Cantonese culture also is superstitious, and many traditional customs and festivals meant to please the gods and deities have been continued. In Hong Kong, Tin Hau, Goddess of the Sea, is the most revered and worshipped deity. The city has over 700 temples and many are dedicated to Tin Hau. Check out the Tin Hau Temples in Yau Ma Tei and Hung Hom for some fine intricate displays. During Chinese New Year, see if you can catch a lion dance performance, which are performed when a business reopens after the Chinese New Year Holiday.

’Atelier de Joël Robuchon Hong Kong, which has consistently maintained a three-Michelinstar rating since 2012, is one of the flagship outlets of the late celebrity chef and restaurateur Joël Robuchon. With over a dozen restaurants bearing his name all around the world, L’Atelier de Joël Robuchon offers postnouvelle French food, with an emphasis on accenting each ingredient’s flavour individually.

The highlight of our meal came next – La Truffle Noire ($1180), which is L’Atelier’s signature black truffle tart with pearl onion confit and smoked bacon. Two layers of thick black truffle slices generously cover the tart. The truffle’s aroma is distinct and alluring and its texture soft and moist. We appreciated both the preparation and presentation and devoured the food with gusto.

The restaurant is divided into two areas – L’Atelier and Le Jardin. The distinctive L’Atelier concept, inspired by Japanese-style dining, is designed with a three-sided bar encircling an open kitchen in which all the dishes are meticulously prepared and presented. Le Jardin, which offers several plush booths and private rooms, delivers a more contemporary dining experience of gourmet French cuisine.

Two entrees were sampled: Le Black Cod ($240), which is prepared with Malabar black pepper sauce and coconut foam, with a dab of vegetable. The cod is lightly grilled and tastes uber tender, and the black pepper sauce is nicely accented by the light coconut foam.

We were there at lunchtime to sample some of L’Atelier’s seasonal dishes, as the restaurant always endeavours to source quality seasonal ingredients from around the world, including black truffles. L’Atelier offers a regular set lunch menu ranging from $498 person (three courses including dessert) to $758 per person for a five-course sumptuous meal, which, considering the restaurant pedigree, is quite reasonably priced.

Le Caviar Imperial De Sologne 經典魚子醬配龍蝦果凍及椰菜花忌廉

Our tasting lunch started with a delightful amuse bouche and L’Atelier’s signature breadbasket with a variety of breads that we nibbled on throughout the meal. Our starter was Le Caviar Imperial De Sologne ($390), the highly regarded Sologne caviar from France in lobster jelly with cauliflower cream. The caviar portion is generous, with a slight iodine edge to the taste, salty but nicely and subtly balanced.

Next was Le Boeuf ($800), slow-cooked chateaubriand beef and foie gras with vintage port. The beef and foie gras are bound together, the meats peppered and seasoned with the port wine sauce. The succulent, brightly-coloured beef contrasts nicely with the foie gras aesthetically, as do the accompanying freshly made fluffy potato chips. Our dessert of choice was L’Andoa ($170), which is Andoa chocolate mousse with coffee ice cream, and is equally pleasing to the eye as it is to the palate and a fitting end to an exquisite meal. A visit to L’Atelier de Joël Robuchon is always a treasured dining occasion that satiates both the palate and the eyes, and one that we enjoy thoroughly. Whether it’s a special occasion like Valentine’s Day or Chinese New Year, or simply to enjoy a truly special dining experience, L’Atelier de Joël Robuchon should be near the top of your list. ven the most indulged foodie treasures a holistic dining occasion: enchanting ambience; elegant thematic décor; superb food and drinks; stunning views and learning something new and enlightening about culinary art. That is a lot to pack into a lunch, but that is precisely how we would best describe our visit to Tan Toh Heen, the highly acclaimed Cantonese restaurant at the Intercontinental Hong Kong. This is our first visit since Yan Toh Heen reopened recently after its relocation – moving down the building for a panoramic waterfront view of the harbour – and redesign. The restaurant’s décor is opulent but elegant, and imaginative. Connoisseurs of Chinese culture will really appreciate the new look – that of a beautiful jade jewellery box, using copious amounts of jade throughout, including a jade gate, jade resin screens with inlaid mother-of-pearl and layers of etching, collectibles lining a jade corridor and a welcoming dining area framed by handmade 3-D silk screens with custom-designed Suzhou embroidery of seasonal flowers. Yan Toh Heen offers a set lunch menu, which ranges from $488 to $578 per person depending on the soup chosen. The dishes included are selected seasonally and rotated every four days. Under Executive Chef Lau You Fai, who has been with the restaurant since it opened in 1984, Yan Toh Heen serves refined, innovative Cantonese cuisine based on authentic Chinese cooking methods and combines finest seasonal ingredients with a creative touch. Tea drinking is an integral part of a Chinese meal, and Yan Toh Heen offers a most enlightening tea experience, guided by the city’s first tea sommelier, Kevin Ng, whose passion for tea is palpable as we were treated to a lesson on tea making. We learned that the most prized teas are aged Pu’Er (picked from trees well over a hundred years old) and Oolong, but that the water used to make tea is essential as well.

Yan Toh Heen uses Tibet 5100 for its tea, the water being bottled from a source 5100 metres above sea level in the Himalayas and acclaimed as China’s most prestigious water. Most importantly the water provides the right alkalinity to make excellent teas – what a treat! Still, the food remains the centrepiece. Our lunch was lovingly presented and immaculately served. The excellent Chef’s Dim Sum Selection includes Braised Whole Abalone and Seafood on Crispy Taro Net, Steamed Shrimp, Pear and Vegetable Dumpling, and Steamed Fungus and Water Chestnut Dumpling, with all the steamed items fresh and tasty. Our Soup of the Day is a flavourful pork bone based double-boiled soup. That is followed by an aromatic Wok-fried Prawns with Black Garlic and Herbs, its shrimp cooked to a nice firm texture. Then we had the Stewed Iberico Pork with Preserved Vegetables, with the tender meat practically melting in the mouth. The Fried Rice Wrapped and Steamed in Lotus Leaf is a favourite of ours and an excellent way to enjoy rice, while the Sweetened Walnut Cream with Glutinous Rice Dumpling and Chilled Red Date Pudding rounded off our superb lunch. Hong Kong’s burgeoning Cantonese fusion dining scene gained a notable addition with the recent opening of John Anthony, a Chinese restaurant whose dining theme is inspired by the Silk Route and where the food is anchored in Cantonese cuisine, with strong influences from Shanghai, Shandong and Sichuan. The spacious 7000-sq-ft restaurant is operated by the Mott Group, of Mott 32 fame, another upscale contemporary Cantonese restaurant that has garnered accolades. Three custom-built BBQs, each using a different BBQ technique, dominate the layout of the restaurant, along with a large bar area with gin tubes offering special cocktails infused with spices from the Silk Route. The décor is designed for sustainability and incorporates a myriad of features to effect that. During lunch, the restaurant serves dim sum as well as an array of regional dishes. The dim sum we sampled included Black Squid Ink Seafood Dumplings ($65) and Black Truffle Vegetarian Siu Mai ($45). The BBQ roast meat Iberico Pork Char Siu ($225) is highly popular, as is Fried Farmed Giant Garoupa, Golden garlic, Dried Chilies

(Cantonese Style) ($380). Regional dishes include Slow-cooked & Brined Sliced Goose Breast ($180), Mini Lion’s Head ($110), Cold Free-range Chicken, Szechuan Peppercorns, Chili Sauce ($110), Dan Dan Beef Noodle, Chili Oil ($95), and the innovative SlowCooked Australian Wagyu Beef Cheek, Watermelon, Chili Sauce ($135). Be sure to try out the desserts, which include Fried Banana Bao ($65) and of course the house cocktails such as Lavender & Elderflower Gin and Tonic ($85). The newly opened Ocean Park Marriott Hotel is fast becoming a popular dining destination on the south side of Hong Kong Island. In addition to Prohibition, an American Steakhouse restaurant, we now have Canton Bistro, a Cantonese restaurant featuring Shunde cuisine, one of the mainstays of Cantonese food, known for river fish dishes including carp and catfish. The restaurant joins the city’s ranks of increasingly eco-conscious operators with its emphasis on using sustainable ingredients such as farmed fish and its adoption of green initiatives such as using biodegradable takeaway containers and straws, waste reduction, recycling and separation. The food is excellent too. We tried the outlet’s dim sum menu for our lunch outing and augmented them with a few of Canton Bistro’s signature dishes. Soothing music in the background helps to relax the body as the professional therapist works on the massage. A cleansing cream is applied to the face before applying the Cha Ling mask and massage cream. The Pu’Er leaves are said to help detoxify and regenerate the skin while adding no artificial chemical ingredients. Our massage treatment helped relax tension and we could feel the stimulative effect of the Pu’Er ingredients. Gilded Glory: Chaozhou Woodcarving 8 Nov 2018 – 25 Feb 2019 Chaozhou woodcarving is a well-known school of woodcarving in China. Displaying distinct regional features, the style was popular across ancient Chaozhou prefecture in Guangdong province. As lacquer and gold foil are often applied to Chaozhou woodcarving, it is also known as "gilt wood". Ingenious openwork carving techniques yield exquisite works of art which underscore the three-dimensional nature of carving, while creating a multi-dimensional space of overlapping layers that is akin to a drawing depicting intricate plots. We bid a fond farewell to The Excelsior Hong Kong, the 46-year old iconic hotel in Causeway Bay, which will close for redevelopment at the end of March 2019. 我們懷著美好祝愿，告別有著 46 年曆史的銅鑼灣標誌性酒店—— 怡東酒店。怡東酒店將於 2019 年 3 月底關閉，重整待修。

One might call it the passing of an era, or perhaps just another hotel closure in Hong Kong’s ultra-pricy property market in which perfectly good properties being torn down for redevelopment is par for the course. Still, the impending closure of The Excelsior Hong Kong does tug an emotional heartstring for those old enough to remember the “good old days” when the hotel was a prominent gathering place for locals and a welcoming home-away-from-home for loyal guests from all over the world. When Jardine Matheson and Company, arguably Hong Kong’s most august trading company, announced the construction of a large hotel in Causeway Bay, it caused quite a stir since, heretofore, most decent hotels of any size were still centred in Central and Tsim Sha Tsui, not in an “outskirt” location like Causeway Bay. Of course, over time Jardines’ foresight was rewarded as the city grew and Causeway Bay became one of the Hong Kong and Asia’s famed shopping districts. The Excelsior was erected on “Lot Number 1”, a site owned by Jardines and the very first plot of land auctioned by the British Government after Hong Kong’s establishment as a colony in 1841. The site was used as a godown for Jardines’ trading business. It was located at East Point, so called because the site jutted out from the island’s coastline. Since then, repeated reclamations have expanded and levelled the coastline, but the Excelsior remains unusual among its neighbours for being built on solid ground. The 34-storey hotel opened in 1973 and features 1003 rooms and 1804 beds. It was the largest hotel in Hong Kong when opened and remains the largest on Hong Kong Island. The Chinese name “Yee Tung” means “Jardines East”, an allusion to its owner and its location. The hotel was originally managed by Hotel Trust Forte International and charged an initial room rate of 66 dollars. In time, the hotel was converted to 869 rooms and Mandarin Oriental Hotel Group, a sister company, took over management of the hotel.

The hotel has provided well for its community, thanks in large part to the continuity if its long-serving staff, many of whom have stayed for more than 20 years. Also, the Excelsior’s many dining outlets have served as the city’s social gathering place for generations. The F&B outlets went through different configurations, though several have become landmarks, particularly TOTT’s or Talk of the Town, its rooftop bar and restaurant which enjoys a stunning, unimpeded view of Victoria Harbour. It has become a go-to spot for romantic and special occasions. Dickens Bar, a British-style pub, now located in the basement, also enjoys an illustrious history as a watering hole for expats and locals alike. The hotel’s Chinese restaurant, Yee Tung Heen, opened since 1993, has garnered numerous awards with its excellent dim sum lunch and dinners. The hotel is hosting a series of F&B and other events during the last few days in March before it closes. Please check with the hotel for details.
