Jaten Collin Dimsdale—better known as Teddy Swims—isn’t just another name in the music industry; he’s a powerhouse of raw emotion and soul. Born on September 25, 1992, in Conyers, Georgia, Teddy grew up in a small town but always had big dreams. His journey from singing in his bedroom to selling out shows worldwide is nothing short of inspiring. With a voice that effortlessly blends soul, R&B, country, rock, and pop, he’s got a little something for everyone. But what really makes him stand out isn’t just his talent—it’s the way he pours his heart into every note, making listeners feel like they’ve known him forever. In an industry that’s always chasing the next big thing, Teddy Swims has carved out a space that’s all his own—one built on authenticity, passion, and a whole lot of soul.

Growing up in Georgia, Swims was immersed in a diverse musical environment. His grandfather, a Pentecostal pastor, introduced him to gospel music, while his involvement in school musical theatre exposed him to various genres. Reflecting on his upbringing, Swims shared, “I was a football player, a musical theatre student, and the grandson of a Pentecostal pastor. I was exposed to a wider variety of music than most ‘country boys’.” This eclectic background fostered a deep appreciation for multiple musical styles, including metal, pop-punk, soul, funk, country, gospel, and R&B. Swims’ exploration of these genres led him to integrate them into his unique sound, aiming to break barriers and bring people together through music. His early passion for performing, combined with his diverse influences, created the foundation for the artist he would become.

In 2019, Swims began uploading cover songs to his YouTube channel, showcasing his soulful interpretations of popular tracks. His rendition of Michael Jackson’s “Rock with You” garnered significant attention, propelling him into the spotlight. Discussing his viral success, Swims noted, “I was just trying to be myself and put my heart into these songs. I think people connected with that authenticity.” His YouTube success was not accidental—it was the result of a relentless pursuit of excellence and a genuine love for music. Swims’ covers, including hits by Lewis Capaldi, Chris Stapleton, and Shania Twain, demonstrated his remarkable vocal ability and emotional depth. The success of his covers led to a growing fanbase and eventually caught the attention of major record labels. In January 2020, Swims released his first major-label single, marking the transition from internet sensation to professional recording artist.

Swims’ early releases, including the EPs Unlearning and Tough Love, showcased his versatility and commitment to blending genres. Tough Love (2022) became his first entry on the Billboard 200, highlighting his growing influence in the music industry. His ability to transcend genre constraints became evident as he seamlessly moved between soul ballads, country-infused tracks, and pop anthems. In his music, Swims often delves into personal experiences and emotions. He emphasized the importance of vulnerability in his songwriting, stating, “The older I get, the further I move from who I thought I was. Being honest in my music helps me navigate that journey.” This honesty and openness resonate deeply with his audience, making his music more than just entertainment—it becomes a source of solace and connection.

In 2023, Swims released his debut album, I’ve Tried Everything But Therapy (Part 1), a project that delves deep into themes of mental health, personal growth, and self-reflection. The album was well-received, with tracks like “Lose Control” resonating with audiences worldwide. Swims described the project as a promise to himself to be more honest, both in his music and personal life. Building on this momentum, Swims unveiled I’ve Tried Everything But Therapy (Part 2) in January 2025. This follow-up album continued to explore his signature blend of retro soul with modern influences. The Guardian’s review highlighted tracks like “Funeral” and “Your Kind of Crazy,” noting their warm piano melodies and rich backing vocals. However, the review also pointed out a lyrical tendency to portray women as enigmatic and enticing, reflecting a retro lyrical attitude. Discussing the album, Swims said, “I wanted to create something raw, something that people could feel in their bones. Therapy isn’t just sitting on a couch talking to someone—it’s finding yourself in the music, in the moments that make you question everything.”

Throughout his career, Swims has expressed admiration for various artists and a desire to collaborate with them. In an interview, he revealed, “I’d die to work with Adele. Her voice and songwriting are just incredible.” Additionally, Swims has been in talks with music legend Stevie Wonder about a potential collaboration, a prospect he describes as a dream come true. Beyond these aspirations, Swims has collaborated with several high-profile artists, including Meghan Trainor, who praised his ability to convey deep emotion through his vocals. “Teddy has that rare gift—he makes you feel every single word he sings,” Trainor said in an interview. His work with country and soul artists further exemplifies his versatility and ability to adapt his sound while maintaining his signature authenticity.

Beyond his musical endeavours, Swims’ personal life has also garnered public interest. In early 2024, he began a relationship with fellow singer-songwriter Raiche Wright. The couple announced in January 2025 that they are expecting their first child, with the baby due in June. Swims and Wright have shared their journey openly, often posting updates and expressing their excitement about becoming parents. “Music is

my life, but family is everything,” Swims remarked in a heartfelt post. “I can’t wait to be a dad. It’s the biggest blessing.” His personal experiences, including the upcoming arrival of his child, will likely influence his future music, adding new layers of depth and emotion to his work.

Congratulations on becoming a Love Island All Stars runner up! What motivated you to come back for All Stars?

It was such an amazing experience the first time so to be asked a second time I just thought why not!! A second chance at finding love in the villa and it worked out perfectly for me.

Your relationship with Luca Bish has been a focal point this season. What drew you to him, and how do you see your future together?

“A SECOND CHANCE AT FINDING LOVE IN THE VILLA AND it worked out perfectly for me.”

I’d say his energy, his kindness, he’s a genuine person with such amazing intentions whether to me or to a friend. I absolutely see a future together, I wouldn’t put such strong energy into someone I didn’t – I’m very picking lol! But he’s amazing and I can’t wait for our future together.

What was your favourite moment in the villa this season?

Heart rate challenge is always up there – we didn’t stop laughing! There were so many fun moments in there.

As a co-owner of a social media marketing agency and events company, how do you balance your professional life with the dynamics of the villa?

Being organised! And having amazing people that I do business with which just make it so much easier for me to handle everything! Splitting my time equally between it all can be hard but so rewarding.

Reflecting on your journey from the 2024 season to now, in what ways do you think you’ve grown?

I’m definitely more mature and serious about my future, 2024 I had so much fun! Partied, travelled, winged life really, but towards the end of 2024 I felt a change in myself which I really wanted to stick to! Even in finding love, being more disciplined, hitting the goals I knew I could.

Given your extensive travel and vibrant lifestyle, how do you envision integrating a potential partner into your world outside the villa?

Luca also lives a very similar lifestyle so we’ll be doing it together now.

After all the drama, romance, and surprises in the villa, what’s next for Grace Jackson? Are we talking world domination, a power couple era, or something totally unexpected?

I’ll be working on myself, my relationship and pushing myself to my highest goals. I’m really excited about the future and what it holds.

It’s official: getting your nails done counts as healthcare. In a recent study by Frontiers in Psychology, researchers measured the psychological effects of nail care on 500 women in their twenties improved relaxation and vitalisation post-mani. Those who visited a salon reported more significant positive emotions than those who self-applied, but this could be linked to chat with their nail techs, say the study authors.

Not eating a mineral-rich diet? Get on that. Spanish research in the journal Nutrients examined individuals from their forties to early eighties at high risk of developing dementia. They found that cognitive impairment risk was reduced in women who increased their iron and manganese intake.

CAUGHT A COLD?

Contrary to what your grandma may have told you, no, you haven’t ‘caught’ a cold. Colds occur when the weather is cold, not because the body is cold. The mistaken belief likely comes from the fact that dry winter air (through which viruses can be transmitted more easily) and cold temperatures drive people indoors, giving them free reign to cough, sneeze and splutter all over their loved ones and co-workers.

SNOOZE, DON’T LOSE

If your morning alarm makes you groan with dread, take comfort. A new Swedish study found that snoozing every nine to 10 minutes for half an hour before getting up made no difference to sleepiness, mood or sleep quality and may improve cognitive performance compared with getting up immediately.

DULL WINTER SKIN

The good news is the days are getting longer and the air is gradually warming. On a crisp, sunny day, you can almost smell spring. Months of cold weather may leave your skin looking as dull as a dishwasher. First, rethink your skincare. Switch to a gentle cleanser without any stripping agents. What is Hayfever?

Hayfever, or allergic rhinitis, is the body’s overreaction to airborne pollen. In the UK, it typically strikes during spring and summer when trees, grasses, and weeds are in full bloom. Symptoms range from mild to severe and can include sneezing, a blocked or runny nose, itchy eyes, and even fatigue. For some, it’s a mere annoyance; for others, it can feel downright debilitating.

Timing Matters: Understanding the pollen season is key to managing your hayfever. Here’s how it usually breaks down: Tree pollen (March to May): Common culprits include birch, oak, and ash trees. Grass pollen (late May to July): This is the most common trigger for hayfever sufferers. Weed pollen (June to September): Ragweed and nettles are the main offenders during this period. Knowing which type of pollen affects you most can help you prepare and take preventative measures.

While we can’t banish pollen entirely, there are plenty of ways to reduce its impact:

Plan Your Day Wisely

Pollen levels are typically highest in the early morning and late evening. Keep windows closed during these times and consider staying indoors if the pollen count is particularly high.

Gear Up

Sunglasses aren’t just for summer holidays; they’re a great way to shield your eyes from airborne pollen. A wide-brimmed hat can also prevent pollen from settling in your hair.

Shower and Change

After spending time outdoors, take a shower and change your clothes to remove any pollen that may have clung to you. This is especially important before bedtime to avoid transferring pollen to your bedding.

Invest in a Good Air Purifier

Keeping the air in your home pollen-free can make a huge difference. Look for a purifier with a HEPA filter, and remember to clean it regularly.

Try Over-the-Counter Remedies

Antihistamines, nasal sprays, and eye drops can provide relief from hayfever symptoms. Speak to your pharmacist about which products might work best for you.

Natural Remedies

If you’re keen to avoid medication, you might want to try some natural approaches. Local honey is often touted as a remedy, with the idea that it can help build immunity to local pollen. While scientific evidence is limited, many swear by it. Other natural options include drinking nettle tea or using saline nasal sprays to flush out pollen.

Hello you lovely bunch and welcome to the first month of Spring! How glorious! If you remember last months column, we were talking about the great declutter of 2025 and how a tidy environment creates a tidy brain and opens the doors to new beginnings. I not only talk the talk, but I walk the walk and whilst I urged you all to declutter your minds, I did the same. I remember I sat down after I’d finished and felt such a sense of accomplishment, mostly because I had decluttered with intention. I genuinely felt that I was making space for something new to come into my life... and honestly, like a bullet from a gun, Pow. Wow. It did.

So, you know me, I go on and off the boil with dating all the time. Sometimes I have a full depot of busses and I just need to decide my route (often picking the wrong one) and then, nothing. Tumble weed. Like a scene from an apocalyptic movie. I’m obviously the zombie on the sofa watching the Real Housewives franchise whilst working myself to the bone. Well, this time, it was, dare I say it...

different. (You can’t laugh at me if this goes tits up in a few months! At least I felt something… ok?!)

After years of disappointment, dating fatigue and watching my friends settle down whilst my own love life felt like a string of false starts, I reached a point where I stopped expecting anything real or fulfilling, and just when I least expected it, he appeared. I felt like I had known him forever. Our conversations were so open and honest, there was no space for games. Our laughter intwined like we had shared lifetimes together. Everything just fit.

We still laugh about the first time we met. I saw him coming through the turnstiles at Chalk Farm tube station and I visibly had a sigh of relief and he bound towards me, equally as enamoured and hugged me, held me and kissed me. Oh, I know, get your sick buckets out, you’re in for a ride. I never really understood what people had meant when they said it would feel different, but it just does, doesn’t it? Like your stresses just wash away, and there’s a wave of calm which comes over you, like a tangible feeling that says everything will be ok. Yasssss, you go on and live, laugh, love, that’s my life now. But as I should’ve known by now, love, if that’s what we want to call it, is never that simple.

Of course, at my age, still gripping onto my thirties as long as I can, the men in my age bracket would have typically had a life before me. And I don’t mind that, a bit of a hero origin story or cool back story sets us up for an exciting new adventure. In this instance, we have a single dad of two adult kids who is not sure if he wants anymore. And I am a single career woman who has always imagined having my own. For me, it’s not just about wanting to be a mother, if that was the case I would’ve chosen a different path in life and done things a lot differently. For me, the most important part is sharing that experience with someone I love, creating and building something together which is uniquely ours; a blended family is even better in my opinion.

Now here I am, once again, standing at the crossroads between the type of love everyone dreams of, or the future I always envisioned for myself. Now based on my previous decision-making abilities, I’m actually pretty scared to make any type of decision because its typically the wrong one. Do I make a decision and then pick the opposite? Do I run a poll? Do I ask all of my friends and take a mean average result? I have no idea.

On one hand, my heart is screaming (and I promise you it is) “This is it!” but reality is whispering “But is this enough?” So, what do I do? I’ve put my big girl pants on, treat this like a critical thinking exercise and break this down into three areas.

Communication – the deep and meaningfuls.

First, we need to communicate, the hard, raw and vulnerable kind of communication that may leave you feeling exhausted, challenged and weary after. This is the proper ‘let’s have a one to one meaningful open, difficult and honest conversation where both have to be vulnerable’. We both need to understand where one another is coming from. What is it about having more kids that he does not want? The financial burden, the idea of what early childhood represents? Sleepless nights, the responsibility, the challenges as a couple to raise a child or maybe how a new baby would impact the children and dynamic he already has? Would he consider if he realised how much this meant to me?

I have to decide this on my own. Can I be fulfilled with a life where I do not have children of my own? Would love be enough? Or would I look back in 10 years and regret it? I have of course frozen my eggs, but the options in 10 years would look very different to what they look like now.

If we do have children, if he agrees, will that change our dynamic and would he be fully present?

The reality of blended families

Luckily, his children are adults now and so far, they have been amazing in supporting their dad on this journey. I would be remiss to think that it would be all plain sailing and as easy as it is to romanticise the situation, the reality can look a lot different. They are their own people with their own dynamics, routines and expectations that have been there far longer than I have.

As much as I would absolutely take on a step-motherly role to his children if I were permitted to, there is a part of me that wants to also feel chosen, by creating something fresh and new, just for us, not just stepping into someone else’s world.

Compromise vs. Sacrifice

Compromise is essential in relationships, but where is the line between compromise and sacrifice?

My concern is that, yes, I have met a man who I believe can love me deeply, who would never leave my side and would protect me at all costs and this is potentially the type of love we hold out and dream for, but is that enough? I don’t want to be all negative here, but shit happens, men leave, women leave, the love changes, so is it really enough to go through life with someone and override the deep-rooted dreams I have of having my own family? Would this plant the seed for future resentment?

Do they even want someone else in the mix? Would they ever accept me, would they want to see me as a parental figure or just “Dad’s girlfriend, that silly little sex wench” a bit dramatic but you understand where I’m coming from.

I personally think that blended families are some of the most beautiful I’ve witnessed, but there’s a lot that goes into creating that safe and loving space and typically, the outside partner required a lot of patience and selflessness to embrace a role that isn’t always clearly defined.

Love doesn’t always arrive when we expect it or how we expect it and, in these cases, it forces us to question what we actually want and need. I have spent years holding out for a love like this after countless bad experiences and years of focussing on myself to undo everything I once thought love was. I have always known that love on its own is not enough and love comes with its own set of questions and considerations.

If I walk away because of this, would I regret it forever? If I stay, will I resent the life I have chosen? Maybe the question is “What can we live with and cannot live without when love is on the line?”

We caught up with Love Island All Stars finalist Catherine Agbaje to discuss love and life after the villa.

Congratulations on becoming a Love Island All Stars finalist! What made you want to return for Love Island All Stars, and how does this experience compare to your first time in the villa?

Thank you! I would have never imagined that walking in on the first day I would then be in the final. You never know what way your journey will go and I’m super grateful that I actually found someone that I connected with this time round.

I just thought why not, why not give Love Island a second chance because, I didn’t end up with anything solid on the outside last time so I thought why not go back in and try again! It’s been crazy really.

It was such a different experience compared to last time too, I went through so many emotions and had so many different situations to deal with last time whereas I’m so happy that this time around I left the villa exactly how I would have wanted to. I found someone I really liked and connected with and it was just a smoother journey in general overall which made it all worth it.

What lessons did you take from the your previous experience into All Stars?

I think in general just to be more understanding. My last time in the villa I relied heavily on the other islanders as they were the only people going through the same experience as me so whatever they said I took it as 100% and battled what my head was thinking. This time I definitely trusted my gut more and just wanted to be more open to everything and everyone, I really just wanted to enjoy my self.

Your energy and smile are infectious! How do you stay so positive, even in the midst of villa drama?

Oh that’s just me as a person I’ve always been smiley and try and keep the energy all the time. Especially in the villa, we’re in there for a long time so some times if someone is having a bit of a down day or the mood is low I love to be the one to get the energy back up, make people laugh and just be positive! I feel like I have so much love to give in a relationship and friendships and I live life having a positive outlook on everything.

Of course I’ve been in a place where sometimes the negative takes over. It’s easy to bring your mind in a bad place and I think I’ve just learned how to deal with it and find another way to think positively about a situation. Naturally when people around you are upset and angry (which can happen a lot in there!) it can affect you and the overall vibe anyway. I just try and get a different outlook, I try to stay positive. I try to show people like there is light at the end of the tunnel and obviously the drama can be difficult because your friends are involved but I feel like what was important for me was reminding people of the love we had for each other. Every conflict as always has a resolution!

What’s one moment from your Love Island journey that you’ll never forget?

Definitely me and Omar! I feel like going through so much at the beginning and just being upset and being up and down in situations and then when you finally meet someone it just brings back that spark the glow back into my life! And that was definitely the highlight for me.

Also Jason Derulo was such a high oh my god, I was having the time of my life. And then sorry the heart challenge that was just hilarious, I think my reaction showed it all!

Who in the villa gives the best advice, and what’s the best piece of advice you’ve received?

Hmm, other than me haha! I think Ekin, I feel like she is so kind and encourages everyone else to throw themselves out there as well. She was the one who encouraged me to follow my heart the most and kept me positive. It was just nice to hear someone tell you what you need to hear.

Love Island has had some iconic friendships—who’s been your ride-or-die in the villa?

Elma and Ekin. Elma is amazing she’s just an amazing, caring, lovely person me and her got on so well, we laughed so much, we both had the same sense of humour. With Ekin I feel like a lot of people have a preconception of her but it was so nice to just see the real her, be herself, fun, goofy and really just bring out her personality. They were definitely the girls I was closest to and made my journey easier.

Grace too, me and her really got on and had the same interests, she was my girl. And Harriet, I loved her she was so fun and so funny so easy to talk to she was honestly great.

I’ll definitely stay close with the girls they were all so great and an amazing part of my journey.

What’s been your biggest ‘pinch me’ moment since first appearing on Love Island?

I would have to say I feel like obviously Love Island in the UK naturally you may get spotted here, people asking for pictures etc. But going to countries like Thailand and America and getting recognised is crazy. It’s those moments that are really like wow. And being Irish the love in Ireland I get is insane.

What’s next for you?

I have such big plans. Big visions and I feel like I really want to focus in on make up and skin care, which I love. I love taking care of my skin. Love make up. I feel like make up is a girl’s best friend, isnt it? I love the expression that make up allows for everyone.

I definitely want to do TV. I feel like I want to show more of me and who knows what the future has to hold!

Ingredients

100g essential Waitrose Salted Dairy Butter, at room temperature • 200g Waitrose Golden Granulated Sugar, plus 2 tbsp for sprinkling • 1 British Free Range large Egg • 120ml essential Waitrose semi skimmed milk • 1 tsp vanilla extract • 200g essential Waitrose self-raising flour • 600g essential Waitrose Strawberries, halved • 50g icing sugar

Method

Preheat the oven to 180 o C, gas mark 4. Grease and base-line a 23cm spring-form cake tin with parchment paper.

Beat the butter and sugar together until pale and fluffy then add the egg and milk and whisk again. Beat in the vanilla and flour then spoon into the prepared tin. Set aside 6 of the halved strawberries and arrange the remainder, cut-side down, on top of the cake. Sprinkle over the reserved 2 tbsp granulated sugar. Bake for 50–55 minutes until golden and set.

Meanwhile, chop the reserved strawberries, sprinkle with 1 tsp of the icing sugar then set aside for 15 minutes. Press through a fine sieve to extract the strawberry juice.

Leave the cake to rest in the tin for 5 minutes, then lift out and cool on a wire rack.

Mix together 1 tbsp of the strawberry juice and the rest of the icing sugar until smooth and thick. Drizzle over the cake and leave for a few minutes to set. Slice and serve with softly whipped cream.

STRAWBERRY MALLOW MOUSSE

with milk chocolate mendiants

Serves 4

Ingredients

230g pack strawberries •

20g caster sugar • 1 tsp vanilla extract • 125g pink & white marshmallows • 150ml pot double cream

For the mendiants

100g Cooks’ Ingredients Milk Chocolate, roughly chopped • 1 tbsp pistachios kernels, slivered, or 1 tbsp white chocolate drops or both • 2 tsp mixed Cooks’ Ingredients sprinkles such as Sugar Hearts and Bronze Crunch

Method

As the chocolate has been quickly melted (rather than tempered, which is a more involved process), you may find a cocoa butter ‘bloom’ appear on the mendiants over time. Best to give them as a gift on the same day as making, or soon after.

Set aside 1-2 strawberries to decorate, then quarter the rest and put into a pan with the sugar, vanilla and 100ml water. Simmer for 5 minutes until pulpy, then purée with a stick blender. Add the marshmallows to the pan of strawberry purée and gently heat, stirring until melted, then remove from the heat and leave to cool to room temperature.

Whip the cream in a large bowl until it holds its shape, then fold into the cooled strawberry mixture. Spoon into 4 small glasses, about 250ml, cover and chill for at least 3 hours, or overnight, until set.

To make the mendiants, gently melt the chocolate in a heatproof bowl set over a pan of simmering water. Line a tray or baking sheet with baking parchment. Drop teaspoons of chocolate onto the paper to form 12 round discs (they don’t need to be perfectly circular). Decorate with the pistachios or chocolate drops (or both). Finish with some sprinkles, then leave to set until firm.

Slice the reserved strawberries and use to decorate the mousse. Carefully peel the mendiants from the paper and serve alongside.

Post pregnancy can sometimes feel like after a breakup. You want a drastic change, something to make you feel alive again, a new, improved and hot you. Not being able to get some injectables, treatments and even facials during pregnancy and then after (if you chose to breastfeed) can feel like you’re aging quicker than a banana that got lost in the pantry. Having Rico at 26 and Demi at 33 seven years apart felt like a lifetime. My body had changed, wrinkles were wrinkling more than ever and my skin was for sure not as glowy as my younger self. My go to skin specialist - Piril Sideras - is one of those people who genuinely just GLOW. Even after her two beautiful babies her skin looked as young and as healthy as ever. Whilst in the post partum trenches of “Omg is this really what I look like?” I knew she was the lady I had to reach out to to help me get my glow back. Here are some of the treatments that Piril suggested that I had to share with any lovely ladies who are looking for that refresh!

JAM

ROLY POLY & custard

Half a packet of suet languishing in your cupboard? If you’re in need of comfort food, jam roly poly is the reigning monarch.

Serves 4

Ingredients

1 tbsp softened butter or vegetable oil, for greasing • 150g self-raising flour, plus more for dusting • 1 tbsp caster sugar • 75g shredded beef suet (or you can use vegetable suet if you prefer) • 100ml milk • 4 tbsp jam, plus 2 tbsp for plating

For the custard

200ml whole milk (or single cream, see tips) • 3 tbsp caster sugar • 1 tsp cornflour • ½ tsp vanilla extract • 1 eggs

Method

Preheat the oven to 200 o C, gas mark 6. Grease a piece of baking parchment, about 30x40cm with the butter or oil. In a large bowl combine the flour, sugar, suet and a small pinch of salt. Slowly and gently mix in the milk until just combined – you don’t want to break down the suet too much. Gently knead on a lightly floured surface to make a soft and delicate dough.

Roll the dough to roughly to 20x30cm, then evenly spread with 4 tbsp jam, leaving a 1cm border all around the edge. Roll this up from the short end, as compact as possible, trying not to squeeze the jam out.

Transfer onto the greased paper, seam-side down. Loosely wrap the dough in the paper, leaving room for the roll to expand. Twist the ends like a Christmas cracker and secure with kitchen string.

In a similar style, wrap the log in a sheet of kitchen foil approx 50cm long, making sure there is space for the roll to expand, and tightly twist the ends to seal.

Place the roly poly into a small metal dish that fits inside a larger roasting tin. Pour boiling water into the large tin, to around half the height of the smaller one. Wrap with a tent of foil, bake for 30 minutes, then remove the outer foil and carefully turn the roly poly over so the underside is now the top. Bake, without the tent of foil, for 20 minute mores.

Make the custard while you wait. Pour the milk into a small pan and bring to a gentle simmer, stirring to ensure it doesn’t catch. In a heatproof bowl, beat together the remaining ingredients with a pinch of salt until combined.

In a steady and gentle stream, pour the hot milk into the beaten egg mixture and whisk continuously, leaving a splash of the milk in the pan. Return the mix to the pan with the reserved milk, mixing continuously.

Using a rubber spatula, gently stir the custard over a medium heat, making sure you get the bottom and edges of the pan. Cook until thickened and smooth, around 5-6 minutes.

Remove the roly poly from the oven and carefully remove the foil and parchment. For more of a golden crust, place it back in the oven, unwrapped, for 10 minutes.

Slice the roly poly into thick slices. Add a dollop of jam to each serving plate or wide bowl, then top with a slice of roly poly. Fill the plates with a generous amount of custard.

Ingredients

For the Genoise sponge

4 Waitrose British Blacktail Free Range Eggs

large • 100g caster sugar • 50g unsalted butter, melted, plus extra for greasing • 100g self-raising flour • 25g ground almonds

For the crème mousseline

550ml whole milk • 1 vanilla pod, split lengthways (or 1 tsp vanilla bean paste) •

4 Waitrose British Blacktail Free Range Eggs

large • 150g caster sugar • 30g cornflour • 30g plain flour • 250g unsalted butter, cut into small cubes, at room temperature

For the almond syrup

75g caster sugar • ½ tsp almond extract

To assemble & decorate

400g strawberries • ½ tbsp icing sugar, for rolling and to dust • 50g white marzipan

Method

For the sponge, preheat the oven to 180°C, gas mark 4. Butter the sides and line the base of a deep, 20cm round loose-bottomed or springform cake tin with baking parchment. In a large heatproof mixing bowl, combine the eggs and sugar briefly using an electric hand mixer.

2 Bring a pan of water to the simmer and place the bowl over it (make sure the water doesn’t touch the bowl, or the heat will be too intense). Whisk continuously with the hand mixer until pale, thick and tripled in volume. Remove from the heat and whisk for a few minutes more. It’s ready when you lift the whisk out and it leaves a trail that holds for 3 seconds.

Pour the melted butter around the edges of the bowl. Swap to a balloon whisk and use a figure of 8 motion to fold the butter into the egg mixture without knocking out too much air. Sift the flour over the mixture and sprinkle over the ground almonds, then gently fold together until just combined.

Pour the mixture into the prepared tin and bake for 25-30 minutes, or until the sponge is golden brown and a skewer inserted in the centre comes out clean. Leave to cool in the tin for 5 minutes, then turn onto a wire rack to cool completely.

To make the crème mousseline, add the milk and vanilla pod or paste to a medium-sized saucepan and heat until almost simmering (don’t let it boil). If you’ve used a pod, remove it, scrape out the seeds using the back of a knife and add them back into the milk to infuse.

Whisk the eggs, sugar and flours in a separate large bowl until smooth. Carefully add the hot milk, whisking continuously, until incorporated, then return the mousseline to the saucepan.

Set the mousseline over a medium heat, whisking continuously for 5-10 minutes until thick, glossy and the streaks made by the whisk hold their shape. Remove from the heat and add the butter a little at a time, whisking in between each addition, until it melts into the custard. Pour into a large bowl, cover, cool, then chill until ready to use.

For the almond syrup, combine the sugar with 75ml water in a small saucepan and bring to the boil. Stir until the sugar has dissolved, then remove from the heat and stir in the almond extract. Set aside.

To assemble the cake, choose approximately 10 strawberries similar in size, then hull and halve them. Trim the bottom of each to ensure they are the same height. Set aside 3 whole strawberries for the top, then cut the remaining ones into small cubes.

Using a serrated knife, slice the Genoise sponge into 2 thin layers. Brush the cut side of each generously with almond syrup. Grease and line the same 20cm cake tin used earlier with a strip of baking parchment or acetate around the edge, then place the bottom layer of sponge into the tin.

Take the mousseline out of the fridge and, using an electric hand mixer, beat for 3-4 minutes until fluffy and light, then scoop into a piping bag. Pipe a thin layer of mousseline over the bottom of the sponge and spread out using a palette knife.

Arrange the strawberry halves around the edge of the tin, cutsides facing the parchment or acetate. Press down firmly into the sponge, then use the piping bag to fill the gaps with crème mousseline. Top with a layer of chopped strawberries, then all but 1 tbsp of the remaining mousseline, until both are used up. Press the top layer of the cake firmly on top, cover loosely, then refrigerate for at least 3 hours to firm up. Using a little of the icing sugar, roll out the marzipan, then cut out 3-4 small hearts (about 5cm) or other shapes. Leave to harden on a plate or tray lined with baking parchment.

Just before serving, dust the top of the cake with the remaining icing sugar. Remove from the tin and peel away the parchment or acetate to reveal the strawberries around the edge. Spoon the 1 tbsp reserved crème mousseline onto the middle of the cake, then use as a base for positioning the 3 reserved whole strawberries (some halved if wished) and marzipan shapes just before serving.
