When it comes to finding your path, a story quite like no other is the life of this month’s cover star, Maya Jama. Maya’s rising success has flourished and continues to grow. Maya Jama ALL EYES ON
Maya Jama has become a household name thanks to her career in the media and after she was announced the new host of Love Island, her stardom is only set to soar.
Maya’s world is what little girls dream of. A beloved TV presenter, DJ and rising star at BBC Radio 1, she has found fans for her infectious enthusiasm and excitable energy, been plastered across billboards for the likes of Adidas and Maybelline, and launched two iterations of a hotly demanded clothing collaboration with online retailer Pretty Little Thing. She also finds herself at the heart of a pop culture favourite, while her path to success has remained a compelling combination of aspirational and highly relatable. After all, she reflects, “I think part of my character has come from certain things happening to me that just made me realise life’s too short to give a shit… you just have to live it.”
That philosophy has turned Jama into a modern update on the nation’s sweetheart. Born in Bristol to a Swedish mother and Somali father, she spent most of her adolescent weekends visiting her father in prison where he served an endless string of short sentences. But despite this, Jama paints a picture of a loving upbringing. Obsessed with the idea of “being on telly”, she would recruit them all to purchase tickets for her self-staged living-room performances and no doubt dance recitals, while watching women such as June Sarpong and Jameela Jamil on T4 made her realise that girls like her had a place in mainstream media. “We didn’t have much, but we had entertainment, and we had each other,” she recalls.

Maya made the move from Bristol to London aged 16 to pursue her broadcasting career, and set up her own YouTube channel as well as landing a gig as a presenter for JumpOff TV. Maya then became the host of MTV’s The Wrap Up, before moving on to host MTV Essentials and MTV News.
She’s gained more and more popularity over the years, especially when she hosted a travelogue called Copa 90’s Maya’s Fifa World Cup Cities during the 2014 World Cup. In 2019 she became the new host of BBC Three’s Glow Up after taking over from Stacey Dooley, and followed on by hosting the Friday and Saturday 10am - 1pm shows on BBC Radio 1 before leaving in May 2020.

Aftersun proves it. Ever since the 28-year-old Bristolian star was announced as the new Love Island host, excitement has surrounded the new Winter series of the ITV2 dating show, and it’s all thanks to Maya. So much so that more viewers tuned in to Love Island’s spin-off Aftersun on Sunday night than the main show, as admirers of Maya were buzzed to see the new host present the live show for the very first time.
Speaking about her new role, she said: “I’ve always been such a massive Love Island fan and I’m so excited to be hosting one of the nation’s favourite shows!” There’s a reason Maya Jama was the most popular choice to take over as the host of Love Island: there might be no better fit for the format. Boisterous and unfiltered, a celestial beauty with a down-to-earth personality, it’s easy to imagine Jama winning the show as a contestant. But if we can’t watch her cringe her way through challenges or get her grafting boots on, seeing her as host is the next best thing. Jama could not have been more prepared. “I’ve been a fan of the show pretty much since it started,” she says. “I know everything about it.” So much so, it could get in the way of doing the actual job. “My role is to deliver information and facts but, because I love it so much, I just want to be their best mate and be like, ‘Are you sure you really like that guy?’,” she laughs.

“As soon as I opened the doors and saw that love heart entrance – it was like stepping onto the set of your favourite film.” Would she ever have considered entering as a contestant? “I don’t think I’ve ever been single long enough to go on a dating show…” she ponders. “If they had asked me in my early twenties, I probably would have been like, yeah, why not?”
Born to a Somali father and Swedish mother, Jama will be the first non-white host of Love Island. For a show that has been accused of a tokenistic approach to casting, and in which black women haven’t always had the easiest ride, Maya’s arrival genuinely feels like a big breath of fresh air. “Growing up, I never saw an East African woman host a show, and no black or mixedrace woman hosts such a big primetime TV show, other than June Sarpong. This is definitely a big moment for all of us in that sense, and I hope it just opens way more doors for other people from similar backgrounds and cultures as myself,” says Jama.
The star was initially drawn to presenting because “I didn’t have any other skills than talking”, she jokes. A self-described “proper people person”, Jama says: “I could talk to anyone, at any time of day, from any walk of life, and really enjoy finding out about new people… I’m like, how does that turn into a job?”
Now, Jama’s new gig fronting the Glastonbury of reality TV will take her from Gen Z favourite to household name. “I’m super grateful for all of those people that were screaming my name on Twitter over those years – that is literally the reason I’m here. I just want to be what they want me to be. I hope I do everyone justice.” And what’s left for Maya to dream up next? “God, I don’t even know… I’m just happy to be here.”
Later this year, her first acting role, in a Netflix drama, is due to be aired. “I think it would have been easier if I’d not had any presenting experience. As a presenter you’re being yourself and as an actor you’re being someone completely different. So, it’s hard to snap out of Maya sometimes.”

Sunday Times Best Selling Author Eloise Head gives us an insight on her past relationship with food and exercise transforming a negative
I didn’t always have a balanced relationship with food like I do now. When I was 18 years old, I naively decided that I wanted to lose weight for a girl’s holiday. Knowing nothing about nutrition, I decided to cut out all foods that I decided were ‘bad’. This included most processed foods, such as cakes, crisps, chips and chocolate, but also things such as white bread and white potatoes! During this time, I had many fights with my mum, as she was concerned about my eating habits. I remember telling her that she didn’t need to worry because I was being ‘healthy’ as I was consuming only ‘healthy’ foods. Whilst actually my mindset at this time was very unhealthy and my mental health was suffering as my obsession with exercise, undereating, and restriction with food continued.
About a year later, I enrolled in a personal training course, which is where I started to learn about nutrition for health, fuelling my body for exercise, muscle growth, and how to enjoy all foods in moderation. My obsession with restricting foods turned into an obsession with learning more and more about nutrition. I stumbled across something called ‘flexible dieting’, which helped me to understand that all foods are okay in moderation and that there are no ‘good’ or ‘bad’ foods - Some foods are lower in calories and higher in nutrients, whilst some are higher in calories and lower in nutrients, but neither of them should have a moral value or make you feel guilty for eating them. Even though it was scary at first, I realised that I could enjoy the foods I once restricted and still achieve my goals and live a healthy and much happier lifestyle.
This was my inspiration to start Fitwaffle. The ‘fit’ part of my name stands for fitting all foods into your diet, whilst also encompassing my love for fitness and my role as a personal
trainer. I wanted to share my journey online and share the amazing new foods I was trying at street food markets and restaurants around the UK. Fast forward about 5 years to the start of the pandemic in 2020, I created the Instagram page Fitwaffle Kitchen where I started sharing easy-to-make, accessible, non-intimidating dessert recipes to give people (and myself) something do whilst the UK was in lockdown. Little did I know what was in store for me. 2 years later, I release my first ever book ‘Fitwaffle’s Baking It Easy’ which became a Sunday Times Bestseller and I’m now releasing my second book ‘Fitwaffle’s Baked In One’ to encourage others to bake, to learn and new skill, and to not be afraid to enjoy all foods in moderation.

NEW DATING DISASTER!
Happy New Year to you lovely bunch! I had absolutely no intention of dating so soon into the year, the focus was all on me and kicking off what would be an amazing new project for Big Mouth. More on that another time!
I had taken a break from dating since Mr ‘boyfriend with another girlfriend’, so the content engine was running on low. I had to take some affirmative action to give the people what they wanted… wild dating stories. What better way to do this than to fire up my old dating apps!
I decided to only use Hinge this time, as it’s no fun when you’re speaking to guys who have the personalities of toilet brushes; I think a mandatory requirement for Tinder and POF. This time, I decided to not match my usual type because I don’t want to cry unnecessarily in 2023. I’d rather fall down a bog hole than meet another Mr ‘boyfriend with a girlfriend’. Hear me now… you will not have any heart-wrenching stories from me this year about unrequited or unorthodox love!
This time, we were going for Shoreditch, oat latte, woolly skull cap wearing Lewis Capaldi fans. This time we were going for artists, musicians, charity workers and alike. The type of guys that have their mum as one of their profile pics on Hinge. That was the objective. But I think I have a vendetta against myself. Big Mouth, let’s put a bunch of lovely men in front of you. Do you want to engage in conversation? Absolutely not, because where is the fun in that? What’s content without a cheating narcissist in the equation? But would I get attached… no! Because I. Do. Not. Want. To. Date.
The great thing about knowing you don’t want to date, is that people will see the authentic you. Have you noticed you’re a funny, cool and charismatic person who can flirt at boss level with someone you actually don’t want, but as soon as someone comes along who tickles your pickle, you sound like an idiot?
As in a literal person of low intelligence? This is me, to a tee.
So, we’ve brushed aside pale ale drinking, guitar playing, VANS wearing, mung bean eating guys, and stumbled across the man we have affectionately named… Bebeğim. This will make far more sense as the story goes on.
I took one look at his photos and knew he was trouble.
Forget a red flag, this was a red beacon. Let’s go.
“Just for content” I continuously told myself as I messaged away. I showed my pal the photos and she laughed, a lot. The gym shots, the torso shots, the arched brow side shot, the Range Rover shot, the less than eloquent one-liners on his profile, it was all there. Bingo. We’ve got him. My flirt game was ten out of ten here, I had back ache from carrying the conversation. The flow was like poetry. This time I didn’t really care. I look at my friend and she face palms. She knows already. We laugh like little kids. “I’ll meet you at 9?” I respond. He’s agreed.

I knew from the get-go what he wanted, I just wanted to see how he would play it out. I meet him. He pulls up to the location. I hop in the passenger seat with a seat warmer awaiting me and his Louis Vuitton scarf. “I thought you’d be cold so I warmed the seats up and left you my scarf.” Nice one champ.
I look over at him and I was pleasantly surprised, he surpassed his pictures on Hinge. He was an anti-catfish. I had my friend/ devil/angel on my shoulder flicking the side of my head to shake what I was thinking. Yes, he was attractive, but he was a RED BEACON.
I could tell who he was already. His ¾ zip sweater, shirt underneath, sleeve lifted slightly to catch his watch. Hair curly but well styled, skin looked freshly creamed. He turned on the central light to get a good look, but really, it’s so I could get a better look at his tanned skin, muscles poking slightly through his top and piercing green eyes. There’s that flick in the head again.
We set off to destination unknown (disclaimer: he is not a total stranger, we have mutuals. I would not advise getting into a car with a complete stranger!) He comes across far better in real life than his obnoxious pictures on Hinge. Very gentlemanly, well spoken and seemingly intelligent. Damn it, this is not what I expected or wanted! Suddenly, the scenarios are building momentum in my head.
We are getting on swimmingly, and then I look down. I turn on the console light mid drive and continue to stare. “Are you married?” as I stare intently at what looks like a wedding ring on his finger. I’m not even shocked, men really are that stupid. It only took me three hours to catch this one out. One tenth of the time it took with the last one.
“No, I’m not married” he responds as he LOL’s his way through the sentence. “I like Cartier. It’s my favourite ring.” “Ok but on your wedding finger?” I look perplexed but my eyes had glazed over. Like a robot. No emotions, just words. “Yes, I wear it on that finger.”
I couldn’t be bothered to argue because I didn’t really care. He asked me what I was looking for on Hinge. I also couldn’t be bothered to lie. “I’m a columnist, so I’m looking for content. You’ll probably, well, most definitely, make it in the next issue, so thanks for helping.”
I thought it would put him off but he took it as a challenge. I sigh in sarcasm. We drive back to the drop off location. I’m about to get out of the car and he grabs me and tries to kiss me, whilst whispering sweet ‘Bebeğims’ in my ear.
Now I’m not above a little whisper in my ear from someone I like, but calling me ‘baby’ in Turkish, when in fact, I am not Turkish, and feeling his hot breath in my ear after three hours of knowing him is not my idea of a turn on. We just aren’t there yet, nor will we ever be.
It sent a shudder through my entire body. I got out of the car and started walking away and then I hear “I’m not done with you yet.” I glance back in absolute disbelief and see him getting out of the car. Now, his profile said 6ft, and sitting down, he did look that way, but on closer inspection and him squaring up to me, in what he thought was an alluring act of passion, my short King was a little shorter than me standing at a solid 5ft. 6. Also, he definitely skips every leg day.
He hops out the car like a mini tornado. I hold back the laughter because I don’t want to emasculate him anymore. “Please get back in your car, I’m going home.” I walk off.
After I washed off the catastrophes of the evening, I see notifications come in from said short King as follows: “I’m not in no rush, but you will remind yourself that I told you from the very first day. I want you, I’m not going to deny that, I want to get to know you, make you smile, laugh. I want to read you, and finally… be in you. I’m in no rush baby girl. Take your time, I’ll be putting in the hard work”
I buried my head so far inside my pillow I think I stopped breathing. I don’t need this, today, or any day. What seemed like a quest for content, turned into a pretty aggressive and extremely icky encounter with a small man.
I won’t be doing that again… for a while.

The Latest Chapter IN OUR RICH HISTORY
Palmers Green High School (PGHS) was established in 1905 by local resident Alice Hum. She was passionate about providing an excellent education to girls and we are proud of the legacy she gave us. PGHS evolved from 12 pupils in a small house to a thriving throughschool taking girls from Nursery all the way up to GCSEs. Our spectacular results have placed us at the top of the Sunday Times’ league table for Independent Schools with no Sixth Form for the last five years.

believed that Emmeline Pankhurst’s brother and his wife, who were local residents, would have been regular attendees. It was the only school in the area to remain open throughout World War II, even opening its doors to pupils from the local boys’ school, whose building had been requisitioned as a First Aid Post. Their Head recalls:
From September 1939 to March 1944 little boys in black blazers mingled with the green uniforms of PGHS. When an air raid warning sounded, all the children were marched into two shelters built under the playground, and the teachers endeavoured to continue their interrupted lessons.
The current School site would be unrecognisable to many of our Alumni. Always seeking to improve and develop what we can offer, many alterations have taken place over the years. One ‘Old Girl’ recalled the open fires in the classroom to keep them warm in winter, and another being taught in the school hall that would be partitioned so that several classes could take place simultaneously. The sprung ballroom floor of the original dance hall was lowered to allow the building of a new dining room and classrooms above, a new Science block was added in the 1960s and the Elizabeth Smith Hall in the early 2000s. Facilities and resources are constantly changing, most recently with a complete refurbishment of our School Library and Music Suite.

Original teachers
In the 1950s, pupils from Year 7 upwards were expected to walk to local facilities for their PE lessons, which included hockey at Winchmore Hill Cricket Ground, tennis generally at Hazelwood Tennis Club or Grovelands Park and very occasionally – about once a year – to Barrowell Green Swimming Pool (outdoor and unheated). We are lucky that nowadays our pupils have access to the full facilities at The Walker Ground (netball, tennis, hockey, football, rounders, squash, tag rugby and athletics) alongside sole use of Southgate swimming pool. Pupils in Years 10 and 11 also make use of Southbury Leisure Centre, where they can also access gym equipment, trampolining, badminton and aerobics. And most importantly, no one has to walk!
2023 – A New Chapter for PGHS
2023 has seen the beginning of a new chapter for PGHS as we welcomed Ms Sarah Proudlove as our new Head. Ms Proudlove has taught in the UK, France and Italy, working at primary, secondary and university level. Having been involved in the creation and development of Mill Hill International, a day and boarding school, she is excited to bring her breadth of experience to PGHS.
Pupil voice has always been a fundamental part of the School’s way of working. In the 1960s, pupils set up ‘The Conference Club’ who supported Guide Dogs for the Blind. More recently Student Council has allowed pupils to bring their own ideas of improvement for discussion and many fundamental changes have arisen as a result of these meetings. In 2007, the Student Council voted to change the School’s uniform from green back to its original blue and voted again to introduce trousers in 2019. Two very popular decisions.

From my first visit, I was struck by the warmth of the relationship between staff and pupils, reflected in the welcome I received. On visiting lessons, I was impressed by the girls’ curiosity, creativity, and their obvious love of learning, all of which I will strive to foster.

Just like that the slowest month of the year is over, and the months will now come rolling in full force. I feel like every year (apart from the year that must not be named) always seems to fly by. We start in January, we blink it’s summer and before you know it we’re back to carving pumpkins and building up major anxieties about the elves. This year in particular though really did fly for me. Jamie proposed to me last February on my birthday, and I can honestly say I don’t know where the time has gone, but we’re back in February. A year older, a year wiser (I hope) and another year as a fiance, mum and fulltime busy bee (just how I like it).
I have always loved February, obviously because it’s my birthday and I love birthdays, but also because it’s the month of love AND of course there’s a lovely half term week to rest, recoupe and have some fun. I thought I would include some fun activities, places to visit, things to eat, read, watch and do in this month’s column to give some inspiration to fellow mums who are looking for things to do with their children as well as some well needed ‘me time’ suggestions.
Where to go and what to do
1. Visiting London
Whether this is something you do alone, with friends or loved ones or with the kids, visiting London is always something fun to do. I don’t know about you, but the breathtaking landscapes of our capital city never fails me and always seems to make me fall in love with it all over again. If you’re looking for a fancy shmancy lunch date, Novikov, Ivy Asia and The Brasserie of Light are always a hit, but visiting London doesn’t always have to break the bank. Going for a walk up the river bank is free, along with many amazing museums and exhibits that don’t cost a penny, bring a packed lunch with you and all you have to worry about is how you’ll get there. I don’t think we fully appreciate the beauty of our city, so tiring the kids out on a day on the trains and taking in the beauty of where we live is always a great half term idea.
What to read
We all need a little escape (or a big one at times) from the world, the way the cost of living is at the moment it’s not always possible to just jump on a plane and escape or even a cheeky staycay. But the best and very cheap way to escape reality this February is through a good book!
Here are a couple of reccomendations for books I have read or that I am reading, and some that Rico really enjoys too. I have yet to finish Prince Harry’s book (Spare), but I will include it in my list, because who doesn’t want an insight into royal life, if we’re really being honest?

2. Pets at Home animal workshops
I’m sure we’ve all had a little wonder around a Pets at Home store with our little ones, treating it like a free animal experience at times, showing them the bunnies and seeing if they can spot the Guinea pigs? (Or is that just me?) Well anyway, did you know that Pets at Home offer winter workshops for children where they can feed the wild birds as well as learn about a cats body language. They also receive activity sheets, stickers and a certificate as well as meeting some amazing animals… all for FREE! These sessions are 45 mins, so don’t expect to fill a whole day with this, but perfect if you wanted to get your little ones out for a bit to do something enjoyable, before returning home to watch a lovely animal movie with some popcorn, bliss!
What to watch
Whether you’re watching with your partner, alone, or with the girls, everyone loves a GOOD rom-com right?
For me, the perfect night would be a night in with the girls, pyjamas, a take-away and a good film (and if the girls can’t make it – I’m happy to do this alone).

BEHAVIOUR MANAGEMENT
Behaviour management has been written about and reported on for as long as I can remember. There are many scholars who recommend different strategies and practices and other scholars who completely differ in approaches. It is also a very sensitive topic as each parent, carer, educator or school have their own personal approach and expectation.
What is evident (due to various reasons including the effect of lockdown on children) is that there has been a stark increase in those asking for support or help with children’s behaviour and more than ever parents are reaching out through different avenues to ask for support. Some parents are finding that some behaviour strategies are successful whilst others are not so effective and due to this they change their approach each time and essentially face a new challenge.
Behaviour is usually a device to communicate a feeling, emotion or need from a child and although it may be impossible to control or understand, the first step in managing behaviour is trying to uncover what the child is expressing. It is important to note behaviour management isn’t an easy fix and will take time and practice, so please do not put too much pressure on yourselves.
At the beginning of an academic year, the most important part of settling in to a new class is to set a president by introducing routines and boundaries to enable a more successful learning environment. These routines may be reflected visually or repeated verbally, they may also be modelled by others. Nevertheless, the most important practice is ensuring that we are consistent in our expectations. As mentioned in previous articles every child is unique and may respond to different types of strategies better and as a parent or carer it will be easier for you to know what works best.
This practise can be adapted to suit the home environment and of course the earlier and younger the better. Ensure your expectations and boundaries are set and be consistent. Communication and understanding is also key so keep this in mind when introducing and reiterating boundaries.
Positive praise is also a crucial part of managing emotions and behaviour, children really respond well to adults praising them despite their age group. Some children like to see their rewards through use of charts whilst others would like a more private comment. Getting to know the child is the key to understanding what will work well and what will not. Observe the child and notice what they do and try to be specific about what they have done and focus on the positives.
Following through on consequences is the final piece to the puzzle, always be clear in what the consequence will be and give warning. This also supports the consistent approach. You will find as time goes on children will also get to know your expectations and in different scenarios too despite who you are to them.
Remember behaviour is not fixed, behaviour is learned and can be changed.

Since releasing her first autobiography Beautiful back in 2011, Katie has been inspiring the nation with her story. She has since set up her own charity the Katie Piper Foundation, dedicated to helping burns survivors, which she went on to receive an OBE for. Katie is now sharing her own story and helping other survivors tell their stories by launching a new imprint, The Unseen, with Christian publisher SPCK, “shedding light on untold stories of hope that deserve to be heard”.

When challenging beauty norms by posting a picture without her prosthetic eye, Livi when viral, eventually ending up on Katie’s For You page.
The UnSeen aims to bring even more diversity to society, by giving a platform to those who have previously been unheard and creating a space where every person feels seen. Having been in the public eye for over a decade, Katie has been using her own platform to create change and improvements when it comes to inclusion and representation, ensuring everyone is seen and not UnSeen.

Ingredients
2 x 220g The Northern Dough Co Pizza Dough, defrosted (1 pack)
• Plain flour, for dusting
• 120g Essential Tomato and Basil Sauce
• 200g drained mozzarella, cut into 1cm cubes
Ingredients Spicy Italian Pepperoni
• 100g Cooks’
• 1 red chilli, finely sliced
Cook’s tip
Save any leftover sauce for cooked pasta, dot over any remaining mozzarella and grill until bubbling.
Method
Bring the dough to room temperature (leave in the bags). Remove one ball of dough from the bag, then roll out on a lightly floured work surface to a rough 25cm circle.
Preheat the grill to high. Heat a heavy-based skillet or ovenproof frying pan over a high heat. Once hot, transfer one pizza base into the pan and cook for 2 minutes. Reduce the heat and spoon over ½ the tomato sauce, then dot over ½ the mozzarella, pepperoni, and red chilli. Transfer the skillet to the grill and cook for 3-5 minutes or until bubbling. Keep a close eye on it so it doesn’t burn. Slice and serve immediately. Repeat to make a second pizza.

BOLOGNESE
Martha Collison’s Bolognese recipe has a twist. She was told about someone who used a double espresso as the secret ingredient to the perfect Bolognese sauce and was extremely sceptical. But on testing many variations, is now blown away by the depth of flavour it brings and how harmoniously it works with the beef.

Ingredients
1 tbsp olive oil • 77g pack Cooks’ Ingredients Beechwood Smoked Pancetta
• 1 large onion, chopped • 1 stick celery, chopped • 1 carrot, grated • 200g chestnut mushrooms • 500g pack Essential 10% Fat British Beef Mince • 1 beef stock cube
• 400g can chopped tomatoes • 75ml strong-brewed coffee (such as espresso)
• 150ml whole milk • 1 bay leaf • 2 x 350g fresh pappardelle, to serve • Parmigiano Reggiano, grated, to serve
Cook’s tip
Meat sauces such as Bolognese benefit from an overnight stay in the fridge before reheating the next day, to allow the flavours to deepen and develop further. Try making the day before for the best results.
Method
Warm the olive oil in a large saucepan over a high heat, then add the pancetta. Cook for 2-3 minutes, until crisp and the fat has rendered down. Add the onion, celery and carrot. Sauté for 10-15 minutes, or until softened and reduced down.
Finely chop or blitz the mushrooms briefly in a food processor to break them down into small pieces. Add to the pan, then crumble in the mince, and stir, breaking up any large chunks using the spoon, until browned all over.
Add the stock cube, tomatoes, coffee, milk and bay leaf. Stir well, cover with a lid and simmer on the lowest heat setting for at least 1 hour. The longer you simmer, the more intense and complex the flavour becomes. Continue to simmer until the liquid has reduced down almost completely. Season to taste and remove the bay leaf.
When ready to serve, cook the pappardelle according to pack instructions. Drain, reserving a small amount of cooking water in a mug, then add the pasta to the sauce and mix well. Add a splash of the starchy pasta water to loosen the sauce so it coats each piece of pasta well. Divide between shallow bowls and serve with lots of freshly grated cheese.

120g unsalted butter, cold, plus extra for greasing • 375g caster sugar • 300g plain flour • 1 tbsp baking powder • ½ tsp salt • 250ml whole milk • 3 British Blacktail Free Range Medium Eggs • 1 tsp vanilla extract
For the meringue

Medium Egg whites • 275g caster sugar • 325g unsalted butter, cubed and softened

Peppermint Extract • 19g
tube Cooks’ Ingredients Red Gel Colouring • 5 candy canes (preferably red and white), to decorate
Method
Preheat the oven to 170oC, gas mark 3. Grease and line 3 x 18cm round sandwich tins with baking parchment.
Place the butter, sugar, flour, baking powder and salt into the bowl of a stand mixer with a paddle attachment. Mix on low, until all the butter is rubbed into the dry mixture and it has a sandy texture. You could do this by hand, rubbing the butter into the dry ingredients, as if making pastry.
In a jug, beat together the milk, eggs and vanilla. Gradually, with the mixer running, pour the mixture down the side of the dry ingredients bowl and beat until everything is mixed together. When all the liquid has been added, beat on a high speed for 2 minutes, until well combined and smooth. If doing this by hand, use an electric hand mixer. Divide the batter between the prepared tins and bake in the preheated oven for 25-30 minutes, until golden brown, risen and a skewer inserted into the middle of the cake comes out clean.
For the buttercream, place the egg whites into a large bowl, or the cleaned bowl of the stand mixer. Combine the sugar and 125ml water in a small saucepan and set over a low heat. Stir until the sugar dissolves, then bring the syrup up to a simmer. Use a sugar thermometer to monitor the temperature.
When the sugar syrup reaches 110oC, start whisking the egg whites at speed so they form stiff peaks. When the syrup reaches 118oC (the soft ball stage), remove from the heat and slowly pour into the egg whites, whisking all the time.
Continue to whisk for 5 minutes, beating until the meringue is glossy and the outside of the bowl feels cool to the touch.
Add the butter, chunk by chunk, whisking between each addition until incorporated and the buttercream is smooth. It is likely to look curdled at some point, but persist with whisking and it will come together. Add the peppermint extract and beat well.
Spoon 1/3 of the icing into a small bowl and add enough red food colouring to turn it a bold crimson colour. Put a plain 0.5-1cm piping nozzle into 2 piping bags. Transfer the red buttercream into one bag, and spoon the white into the other.
Place the first sponge onto a serving plate or cake board, then pipe a spiral of red buttercream, starting at the centre and leaving an equal-sized gap in the spiral to fill with white buttercream. Fill the gaps with white buttercream, then stack the second sponge on top and repeat. Top with the final cake.
Cover the cake with a thin layer of buttercream to trap any crumbs, then chill for 30 minutes. Meanwhile, roughly crush the candy canes in a mini food processor, or place into a food bag and bash with a rolling pin.
Use a palette knife and a scraper to cover and smooth over the entire cake with the remaining buttercream. Pipe pea-sized dots of buttercream around the bottom of the cake where it meets the plate, and around the top edge too. Sprinkle a border of crushed candy around the top or the base of the cake (or both), leaving the piped dots and the middle area clear, to finish.

Ingredients
1 fennel bulb, fronds trimmed, bulb halved and tough core cut out
• 1 tbsp olive oil • 1 echalion shallot, halved and finely sliced lengthways
Method
Finely slice the fennel bulb lengthways and put in a large frying or saut pan along with the oil, shallot, garlic, chorizo crumb and a pinch of salt. Set over a medium-high heat, cover with a lid and cook for 8 minutes, stirring regularly until tender. Uncover and cook for another 5 minutes until nicely caramelised and turning golden.
Cook’s tip
Ready-to-eat prawns make all kinds of dishes a doddle. Stir through pasta until piping hot, enjoy in a sandwich or toss through your favourite salad.

Created by Frédéric Baron and Claire Kito this artwork consists of an entire wall of enamelled lava stone with ‘I love you’ written 311 times in 250 different languages. Following a big-money renovation, Park Lane’s historic 1930s Dorchester hotel has opened a brand new cocktail spot, the Vesper Bar.
The newly reopened ground floor of the luxe Mayfair landmark includes the brand new Artist’s Bar –complete with Liberace’s legendary mirrored piano – and a swanked-up Promenade area, but The Vesper Bar is one for the real spy heads.
Head bartender Lucia Montanelli will be on hand to whip up classics and house specialities, including, of course, the Vesper Martini – popularised by James Bond author Ian Fleming in his 1953 novel ‘Casino Royale’. And what is a Vesper Martini, we hear you ask? We’ll leave that to Bond himself. ‘Three measures of Gordon’s, one of vodka, half a measure of Kina Lillet [a bitters containing quinine]. Shake it very well until it’s ice-cold, then add a large thin slice of lemon peel. Got it?’ We have!
The bar itself is inspired by the 1930s, the era when the Dorchester was built and its revamp also includes a new dedicated entrance direct from Park Lane, as well as an outdoor terrace with views over nearby Hyde Park.

Huge news. Sephora, the cult French make-up store, will return to London after 17 years this spring.
The make-up and skincare palace will open a bricks-and-mortar store in Westfield White City in a couple of months! OF DISNEY
Take a trip through Disney history as the animation/theme park/kids’ entertainment behemoth celebrates 100 years of mice, belles and snowmen with a major new exhibition. And not just any exhibition, but an immersive one, because it wouldn’t be 2023 if you couldn’t immerse yourself in something at some point. ‘Wonder of Friendship: The Experience’ will be a journey through the friendships of Disney’s best-loved characters, taking place in the surprising environs of brutalist former office block 180 The Strand.
Best known for trippy, high-production-value, ultra-cuttingedge video art exhibitions, this is 180 getting a little more family-friendly. The show will feature 1,000 square metres of installations all themed around ‘Alice in Wonderland’, Lilo & Stitch, ‘The Lion King’ and Mickey and Friends. Visitors will be able to trip down Alice’s rabbit hole, smell the scents of Lilo & Stitch’s Ohana Bay, and dance with Donald and Goofy. The whole thing is aimed at young adults and visitors will be able to use QR codes to bring characters to life in augmented reality.
