The model, influencer, and celebrity offspring captivated the internet with her polished beauty aesthetic and timeless wardrobe earlier last year, singlehandedly catapulting the aspirational “quiet luxury” trend to the forefront of fashion forecasts everywhere.
Sofia Richie Grainge was born in Los Angeles to musician Lionel Richie. She is the younger sister of Nicole Richie and the Goddaughter of Michael Jackson. Richie Grainge grew up with an affinity for music like her father. She learned to sing at age five and play the piano at age seven. She began modelling at age 14 with a feature in Teen Vogue and at 15 she got her first fashion contract with Los Angeles–based swimwear company Mary Grace Swim.
She made her runway debut in February 2016 during New York Fashion Week, and has since walked the runway for Chanel, Jeremy Scott, Philipp Plein, Kanye West’s Yeezy line, Samantha Thavasa and Dolce & Gabbana.
Per her girl-next-door, amateur-esque (yet expertly styled) TikToks, even Richie Grainge seems surprised by her overnight stardom, but that’s not to say she’s not making the best of it. ‘I’m in shock and awe that people love [my style] so much and are so interested. It’s definitely surreal. I didn’t really think people would really connect as much as they have. It’s really, really refreshing and nice for people to be interested.’
That suddenly famous personal style didn’t just appear out of nowhere. “I’ve definitely honed [it] the last few years,” she says. “Naturally, our tastes evolve, but I don’t believe in jumping on a trend just because it’s what everyone else is wearing. I think it’s important to be your own person and recognize when something does or doesn’t feel true to you.” She looks to the archives for timeless style inspiration. “I really enjoy ‘70s and ‘80s style—the way they expressed themselves and had fun with fashion has been a big source of inspiration for me,” she says.
Since her 2023 nuptials and the launch of her TikTok channel, the 25-year-old has become a fashion star firmly in the spotlight. So, it’s of no surprise that she’s secured one of American fashion’s most salubrious positions as the latest ambassador for Tommy Hilfiger. Sofia spoke in an interview about personal style, and working with the Tommy Hilfiger team, ‘It’s evolved a lot over the past five years. I really took a step [towards] finding something I felt comfortable in, and for me that is more classy, more elegant, cool and simple. ‘I’m not trying to do the most. I’m really just trying to tone it down, but still have a classic, elegant twist to it.’
‘I have a lot of first memories with Tommy, just being an American girl, my parents would buy me Tommy clothing when I was much younger. I actually, worked with Tommy when I was about 15 or 16 years old - it was one of the first jobs I really had ever done.’ ‘Tommy Hilfiger is so key to American style. It’s super timeless and classic, and I think that’s what I’m honing in on right now in my personal style.’
When Sofia Richie got married last April, it was the wedding heard round the world. There was the debut of her TikTok just days before she walked down the aisle, her final dress fitting at Chanel, and, of course, the main event: her wedding at Hotel du Cap-Eden-Roc. There, she and record executive Elliot Grainge said their vows in front of friends and family that included her father Lionel Richie, sister Nicole Richie and her husband Joel Madden, as well as Benji Madden, Cameron Diaz, and Paris Hilton.
However, in the nine months since, the bride who undoubtedly launched more than a few private Pinterest boards has been busy. There’s been the David Yurman campaign, the Prada Beauty partnership, and more than a few magazine covers. But perhaps the biggest collaboration to date is the one she’s been keeping under wraps for months: Sofia Richie Grainge is expecting, and she’s over the moon about it.

Richie Grainge exclusively told Vogue. “I was about four weeks pregnant. I was on a trip to Milan for fashion week, and I was going to the Prada show. I was doing a really quick 24-hour turnaround, and I felt terrible but didn’t think much of it. I thought it was jet lag.”
When she got back to Los Angeles, she was initially planning on going to the Ed Sheeran concert with her husband and friends the next day. “I kind of knew it was going to be a boozy night, and I was a few days late on my period, and I wanted to be generally safe, so I took a test,” she remembers. “Elliot was already used to me taking tests randomly.” The two had been casually trying ever since they got married in April. “So, he didn’t really flinch when I said I was checking. I was taking one of those really crappy at-home tests, and there was the faintest
of lines. I was so used to seeing negatives that I knew when something looked even kind of different.”
She promptly told Elliot to get in his car and go to CVS to pick up three more of the best pregnancy tests he could find. “He was so excited,” Richie Grainge recalls. “We spoke the whole way on the phone. And when he came home, he’s such a sweet guy he always wants to protect my emotions and expectations, so he kind of sat me down and said, ‘If these are negative, don’t be upset. Our moment will come.’ When we turned over all three tests at the same time, they were all positive. He was so excited, and we both cried. It was crazy and overwhelming and so hard not to scream it from the rooftops. But knowing I was so early, I was so protective – even with my friends.”

Because Richie Grainge has kept the pregnancy a secret up until now, she admits she hasn’t been able to dress the way she’s wanted to, instead opting for trench coats and the like to conceal her growing bump. “Now that we’re announcing it, I have so many ideas,” she says. “I’m not really tapping into maternity wear at all, if anything, I’m just sizing up. I’m also not buying an entirely new wardrobe for this pregnancy. I’ve bought a few pairs of pants in bigger sizes, but I’m wearing my same jackets, and sweaters, and trenches – I’m about to have some fun with it now that I can spread my wings and fly.”
As for her future daughter’s style, like a lot of expectant mothers, she’s turned to Pinterest for inspiration. “From the moment I found out I was pregnant, I have been going crazy online,” she says. “I have so many ideas – just cute and girly.” She’s also saved plenty of wellloved pieces over the years. “I’ve held onto things, and thought, ‘Oh my daughter will have this one day,’” she says. “I have a lot of little bags to pass down. I have a lot in mind.”
“I want to be protective but not too overly protective, and find that balance,” she continues. “I want to be involved, but not too involved. I need to find that balance and groove. I want my child to be a child, I’m not going to publicise my child on Instagram. I don’t plan to take that approach because I want my kid to have the option to do what she wants with her life. If she wants to be a private person, I want her to be able to make that choice, and if she wants to be a public person, she can make that choice for herself.”
That said, it hasn’t been easy for Richie Grainge herself – the influencer with 10.9 million followers on Instagram and 3.5 million followers on TikTok – to hold back during this transformational moment in her life. “My entire platform has been based on this kind of ‘best friend energy’ – just being honest with the people that follow me,” she says. “And if you go on my socials, you’ll notice that I’ve pulled back. I’m definitely not posting as much.
It’s been hard for me to have that connection with my followers when I can’t really be honest.”
As she heads into the final stretch of her pregnancy, she’s been thinking a lot about the advice given to expectant mothers, and what it all means. “I was having a really hard time [one week],” she says. “I was having a cry week. I would cry at the wall paint. I would cry about anything you could cry about. But you just have to sit back and just be in awe, and know that everything you’re going through is completely normal and all of the ups and downs are normal. It’s made me feel better knowing that other people have gone through the emotional ups and downs. That was comforting for me.”

It’s official: getting your nails done counts as healthcare. In a recent study by Frontiers in Psychology, researchers measured the psychological effects of nail care on 500 women in their twenties improved relaxation and vitalisation post-mani. Those who visited a salon reported more significant positive emotions than those who self-applied, but this could be linked to chat with their nail techs, say the study authors.

Not eating a mineral-rich diet? Get on that. Spanish research in the journal Nutrients examined individuals from their forties to early eighties at high risk of developing dementia. They found that cognitive impairment risk was reduced in women who increased their iron and manganese intake.
CAUGHT A COLD?
Contrary to what your grandma may have told you, no, you haven’t ‘caught’ a cold. Colds occur when the weather is cold, not because the body is cold. The mistaken belief likely comes from the fact that dry winter air (through which viruses can be transmitted more easily) and cold temperatures drive people indoors, giving them free reign to cough, sneeze and splutter all over their loved ones and co-workers.
SNOOZE, DON’T LOSE
If your morning alarm makes you groan with dread, take comfort. A new Swedish study found that snoozing every nine to 10 minutes for half an hour before getting up made no difference to sleepiness, mood or sleep quality and may improve cognitive performance compared with getting up immediately.
DULL WINTER SKIN
The good news is the days are getting longer and the air is gradually warming. On a crisp, sunny day, you can almost smell spring. Months of cold weather may leave your skin looking as dull as a dishwasher. First, rethink your skincare. Switch to a gentle cleanser without any stripping agents. Next, aim to boost hydration with a serum, after your serum, choose a moisturiser containing ceramides, and finally, now’s a good time to treat yourself to a facial!
CHAPPED LIPS
As well as the most common cause of chapped lips, which is dehydration, friction from talking, eating, drinking and facial expressions can contribute to skin damage and chapping, especially if they’re already vulnerable. Pop a little pot of Carmex in your pocket to save lips from a dry, chapped fate. You just know your lips are happy from that tingly feeling.
Stay one step ahead of hayfever
For many the warmer weather will come as welcome relief, but if you’re one of the 20% of people in the UK affected by hayfever, you won’t want to hang up your hanky just yet.
Generally speaking, allergy can be described as an excessive immune response to an otherwise harmless substance. With hayfever we are of course talking pollen. The immune system identifies pollen as dangerous, and produces an antibody called IgE, which triggers the production of histamine. Histamine is an inflammatory chemical that causes an array of unpleasant symptoms: running nose and eyes, itching and burning in the throat, nose and eyes, puffiness, swelling and excess mucus.
Hayfever can strike as early as February or as late as September, but there are a number of measures you can take to stay one step ahead of your pollen-shaped foe.
Reduce your toxic load
Ditch the junk food, eat fresh instead, incorporating lots of fruit and veg, nuts, seeds and wholegrains, and drink plenty of water to keep your bowel moving daily; keep your caffeine and alcohol intake low and avoid nicotine. If you live in a trafficheavy area, regular detoxes to keep your system clear will help.
Say no to the sweet stuff
If you suffer with any type of allergy, hayfever included, you’re more likely to have wobbly blood sugar and be sensitive to refined sugar. Sugar can trigger surges and drops in blood sugar levels that cause adrenalin production to kick in, which involves the production of histamine - just what you don’t want.
Sleep well
Whilst scientists are still trying to figure out the exact relationship between sleep and the immune system, studies show that sleep helps to shift the balance of anti-inflammatory proteins so that the immune system can recognise and respond better to bugs and allergens, which may help to reduce the severity of hayfever symptoms.

Congratulations on the success of your book, Evergreen! Can you share a bit about the experience of writing and publishing your book?
Evergreen is my proudest accomplishment to date and I think a lot of that boils down to the fact that the timing felt right from the moment my amazing publisher reached out to see whether writing a book would be of interest all the way through to when we eventually released it last October. You often hear about author’s getting ‘writers’ block’ but after a decade of being in this industry and experiencing my fair share of highs and lows in that time, I knew exactly what I wanted to say and how I wanted to say it!
Your book offers a more in-depth look into your life and experiences. How do you think the book has strengthened your connection with your audience?
It’s funny, I think my core audience weren’t surprised by Evergreen, just ready for it. They’ve seen me evolve over the years and in the past couple of years specifically, had been asking me to write a book. So when I eventually did, they’ve been nothing but supportive which I’m so grateful for. Beyond that, I think a lot of assumptions are made about people in my industry so I’m glad that it’s allowed anyone who’s interested in my story to understand who I am.
What key messages or lessons do you hope readers take away from your book?
If I can encourage just one person to rethink their relationship with nature for the better or look inwards for the answer first before they look to others, I’ll be happy.
Can you share a bit about your journey into the world of lifestyle and fashion blogging? What inspired you to start your own platform?
I was studying at the University of Northampton and like school, didn’t feel inspired by my lectures. A friend suggested that I set up a ‘blog’ (an alien concept at the time!), so I started documenting my outfits on a basic website that I learnt to code myself. It took ages before I got my first 100 followers but I stuck at it because I was passionate about it. I was getting dressed every day so never ran out of content ideas and thankfully, I held my nerve when people said the industry didn’t have legs. Fast forward 13 years and here we are!
How do you come up with ideas for your content?
Whether it’s lighting a candle, putting a pair of wellington boots on for a walk through the countryside with my dogs or packing a suitcase full of in-flight essentials if I’m heading on a trip, I love the brands that I work with because they blend seamlessly into my everyday life. For that reason, content ideas come easily as I’m just doing what I’d be doing on a typical day anyway! Admittedly, it helps that I’m married to a man who is a bit of a whiz with a camera so we can get really creative with the shots but in general, I’m guided by ‘what do I love doing and what would I want to see?’
You’ve collaborated with various brands. How do you choose which brands to work with, and what criteria do you consider before entering into a collaboration?
More often than not, I’ve been a customer of the brands that I’ve since gone on to collaborate with before working with them so for the most part, have put my money where my mouth is first! I only work with brands that I truly love so there’s an authenticity to the partnerships that underpins each collaboration.
When I haven’t been a customer of the brand first, I can say with confidence that I’ve made sure I’ve tried the products before sharing them with my audience and it’s only the ones that I love and can stand by that will make it onto my channels. My team have been known to send products back to brands that I’ve tried and didn’t get on with. Though I’m always so grateful that so many great brands reach out, we also politely decline a lot of partnership offers at the email stage too because I know from first glance that they’re not the right brands for me.
How would you describe your personal style, and how has it evolved over the years? Are there any fashion icons or trends that influence your choices?
I’ve dedicated a chapter in Evergreen to my style evolution because I’ve been on quite a journey! When I look back though, I can hand on heart say that I felt like the bees knees at each stage so have zero regrets! Whereas I used to let whatever was ‘in fashion’ guide my style, these days, I’d say that I’m guided by the following questions. Is it good quality? Will it outlive trends?
And – the most important question – do I feel good in it? If the answer is yes, yes and ABSOLUTELY then it’s mine! For individuals aspiring to enter the world of lifestyle and fashion blogging, what advice would you give them?
I think it’s quite simply to be yourself. It’s no secret that the industry is saturated and the people that stand out are the ones that aren’t trying to be anyone else. The gap in the market, it’s what makes you, YOU.
Of all the projects and collaborations you’ve been a part of, do you have a favourite or most memorable one?
I’d have to say that launching my own range with Karen Millen in 2021 and bringing out collection after collection in the seasons that followed owing to their popularity has been a career highlight and an ongoing project that I never tire of. I’ve lost count of the number of times I’ve bumped into women when I’m out and about who are wearing dresses that I’ve designed – it never gets old!
When brands invest in me on a long-term basis, it allows me to get really creative and have more fun with the campaigns because there’s more time to commit to and build on them. For that reason, I really value my relationship with brands like Holland Cooper and Fairfax & Favor too.
Are there any new and exciting projects you’re currently working on that your audience can look forward to?
I’m very excited that I will finally be allowed to share a beauty collaboration that I’ve been teasing for months very soon! So much work has gone into it, I LOVE the product and I’ve had so many messages about the product so I can’t wait to announce that when it’s ready. I’ve also got some really exciting long-term design collaborations in the pipeline where I’m branching into accessories and higher end fabric pieces.

I’M SINGLE IN MY 30’S. Does that mean there’s something wrong with me?
It’s the start of Spring, my favourite season of the year. The days are a little bit longer, we are in full swing into the new year. We have either seen our resolutions through, tweaked them or, like me, you’ve spun yourself in and out of chaos for the first three months of the year and now you’re longing for normality. I’m not really into horoscopes but every time I go onto social media, Capricorns are moving out of, what can only be described as a life changing, gut wrenching person, shaping fifteen years and kicking off “our season.” To my fellow star signs who have been teed up for unprecedented wealth and great advances in love and relationships this year, let’s embrace it as I am in total agreement that the last 15 years have been a bit of a shit show.
However, halfway through writing this column, I’ve realised that it’s a load of toff and now the tarot messages are telling me “HE regrets his decisions and he’s coming back.” Well firstly, which one? Secondly, I don’t want any of them back and thirdly, the last one’s blocked so unless he’s sending a carrier pigeon, there ain’t no way.
Also, another note to self, let’s not talk about these ‘men’ so early into the journey, they’re on a three-week rotation and this comes out every month, so they barely make it to next issue. Next time, I’ll wait three months before mentioning anyone and even then, I’m sure they’ll disappoint. And this leads nicely on to the interesting conversation I had with my friend’s little brother. In a tongue and cheek conversation, I laughed and asked if he knew any old men who were single? 30’s and 40’s are old to a boy in his early 20’s and it pains me that I’m now in this bracket. His response: “if they’re still single at that age, there must be something wrong with them.” I didn’t take it personally I also thought life was over after 30 and now I would be branded as ‘weird’ by the same generation who would affectionately call me ‘Auntie’.

I still don’t know what I want. Every year, my ‘empire’ continues to grow. I’ve chased my dreams and I’ve persevered to see them come to fruition. My life is full of love. My family is amazing, my friendship group has some of the most amazing humans I’ve ever met, and I continue to have the freedom to meet even more amazing people from all walks of life.
I sit sometimes in the home I’ve built and feel so complete and content. There’re some days I feel lonely and often think it would be good to share this life with someone. I fall asleep contemplating the possibilities of what could be… and then I wake up and forget all that emotional stuff and crack on with gym and work.

The most recent guy was blocked after he stepped one foot out of line. I felt strong and empowered, like a shining beacon of hope for all womankind; proud I had not wasted time on a red flag. A couple of weeks later, my mindset has changed.
I spent a lot of time after my previous relationship healing old wounds, going through therapy to come to terms with some lingering childhood trauma which affected my decision making in my past relationships. I didn’t want to rush into another relationship because I wanted to focus on me, my needs and my self love. Whilst this was true at the start of my healing journey, I don’t quite think that’s my reasoning now. I do think that fear of relapsing into past emotions and traumas has stopped me from getting into a deeper relationship with anyone I have met, and I have set expectations so high that I’m unwavering in cutting someone off at the first hurdle.
I was on the verge of being married in my 20’s but I walked away. I spent my twenties making very bad decisions repeatedly. I then made my worst decision for six years which has brought me to present day. Do I regret any of those decisions? Absolutely not. Have they all, in their own weird, sad, heart-breaking ways made me the person I am today? Absolutely. Do I love who I am today? Yes, I do, but do I now want to open myself up to someone who is potentially going to take me back to step one of self-loathing? Not a chance. So
Last month, I had a man I would probably describe as perfect on paper making grandiose declarations that he wants to build a life with me. He wants to prove that he is worthy of me. He treated me in a way I had dreamed of for years and our relationship was already built on a great friendship. He stepped incorrectly once, and I blocked him. In the moment, I absolutely did the right thing for me. I had told him that daily consistency was the bare minimum I needed; whether it was a single text or a quick phone call, that was the least I expected as we both have such busy lives. As soon as he did not do that, he was gone.
I’ve realised that I thought I’d healed, but in fact, I have not given myself to a relationship for long enough to determine if I was or not. It’s easy to assume you’re healed from years of having trust issues with someone you’ve given all of yourself to, when you refuse to give yourself to anyone else. It’s easy to mask your unhealed wounds as newfound strength by cutting someone off at the drop of a hat. I am, indeed, triggered often when I do start to get feelings for a new person. I look for every imperfection in that person, I make up random icks to make myself believe that they are not good enough for me so when I leave, I convince myself I am making the right choice.
So, to refer to little brothers’ sentiment of, there’s something wrong with us if we are still single in our 30’s, I wouldn’t say that we are weird, or inherently shit people, but he’s right, you don’t get to being 30 plus and being single without carrying some past trauma.

The reality is, you can’t heal relational wounds unless you’re in a relationship. I spent over a year working on old wounds whilst being alone, which I believe was the right thing to do, but you don’t really know if you have healed until you’re faced with new challenges in a new relationship.
I felt like I was fully healed from abandonment and neglect issues until I was faced with a situation where I felt abandoned again. When he didn’t text back for a couple of days, I was out immediately. This was a guy I would have loved to build a life with, someone who I had a special bond with, and a connection with more so than anyone else I have dated, and with a name, block, delete action, he’s gone. And there’s no looking back.
Throwing yourself into work, the gym, spending all your time with your friends, these are all amazing things to do with your life but maybe when you look at the reasons why you do it, maybe it’s because you’re running from something deeper to protect yourself.
There’s nothing wrong with you. Let’s not carry the stigma of being single in your 30’s and 40’s and beyond. Every single person has a story which makes everyone beautiful and unique. But don’t let your past challenges dictate your future happiness.
As a tell as old as time, humans yearn for companionship, but maybe we are scared to jump in and have it. Maybe we fear being hurt, or being failures if it doesn’t work out.
Be strong, be bold, be unapologetic, be mindful. You’re all special.

How are we already a quarter of the way through 2024?
As promised, in this month’s column I will continue to discuss all things wedding related - talking about some wonderful businesses and suppliers I worked with during our planning process that I would recommend to anyone getting married!
Before I start, I will say it’s important you do your research. When you get engaged, you’ll be flooded with all these different companies and recommendations and it can get quite overwhelming (especially if you don’t have a wedding planner to help you keep track). I would recommend using a google drive (we created our own email address specifically for the wedding) and used the drive to keep all our email trails and spreadsheets separate to general emails. Just because someone has recommended a supplier or business that might have been right for them, it doesn’t mean they’ll be right for you, so arrange meetings, get samples and have a conversation before committing to anything.

I used Sarah for all things personalised in our wedding, including my gorgeous mirror name places and all of the personalised bridal party gifts. This included personalised PJ’s, hangers and gift bags for the bridesmaids and hip flasks for the groomsmen. It’s normal to have one or two errors when you’re trying to organise 260 name cards to sort and pack to take abroad, but honestly there was not ONE mistake, not ONE spelling error, not ONE missed name. Sarah is a perfectionist, so we went back and forth a few times for her to make sure that I had the exact font and style I wanted, which was very reassuring. She was able to order samples, make mock designs and work with whatever I sent her. Her prices are fantastic and the quality and service she offers are phenomenal. So, funny story, it got to about 10 days before I was due to fly out to Cyprus for the wedding and it dawned on me that I hadn’t sorted out a headpiece for the day. I spoke to my friend Melly, who was getting married 2 months after me and is way more decisive and organised as a person, who was equally as shocked that I’d left it that late without securing something. She recommended Atelier Boutique, and with a phone call and an exchange of DM’s, the lovely owner Sinem had made time for me at her showroom to have a look around after hours. So much of her stock is handmade and you can see the passion that she had towards every bride and what she is selling. I thought I knew what I wanted, but she handpicked my dream band that really made me feel like a bride. Her prices are super reasonable considering the effort and detail that goes into making one headband, and our “no rush” appointment meant that I really had time to think, try on, walk around, FaceTime my friends and even find matching earrings. For the brides who are not last minute, Sinem encourages you to bring your veil and even your dress when choosing your accessories to really get a true feel of how you will look.

Mail Invitations: Wedding invitations are typically sent out 6 to 8 weeks prior to the wedding.
Write or Decide on Vows/Ceremony: Choose something personal to you and your future husband.
Purchase Day Of Accessories: Your shoes, jewellery, hairpieces, veil, etc. Don’t forget “Something old, something new, something borrowed, and something blue!”
Transportation: Horse drawn carriage? Ferrari? Make it personal to you and your day.
6 Weeks Before
Apply for Marriage License: Rather important, www.adviceguide.org.uk, provides useful information on the legalities.
1 Month Before
Hen & Stag Parties: Find a date that works for you. We suggest not having it the day before the wedding though!
2 Weeks Before
Final Dress Fitting: Test out your accessories with your dress. Also, it’s wise to start breaking in your wedding shoes at this point.
Give Shot List to Photographer: Put together a list of important shots you would like taken for your photographer.
Review Music with DJ/Band: Touch base with your band or DJ to finalize the playlist and confirm special request songs.
1 Week Before
Final Headcount: Confirm the numbers with the hotel and planner, if you have one.
Finalize Seating Chart: Now you know who’s coming, you can decide who can and can’t sit near each other!

Finalise the Look: Man’s, pedi’s, and tans.

Cook’s tip
This recipe celebrates red wine, so choose a good one!
Don’t use your best bottle (save that to drink alongside) – but go for something full bodied that you enjoy, as you can really taste it. I keep it classic by choosing a French wine – Waitrose Reserve Claret or Côtes du Rhône Villages are both top choices.
The best BEEF BOURGUIGNON
Martha Collison has streamlined a classic dish for modern kitchens (with less washing up!), but it is as rich and flavoursome
as you’d expect beef stewed in a whole bottle of red wine to be.
Serves 6
Prep 30 mins
Cook 4 hrs 30 mins
Ingredients
1 tbsp olive oil, plus ½ tbsp more, if needed • 200g No.1 Free Range Beech Smoked Bacon Lardons • 800g ox cheek or beef brisket, cut into 3cm cubes • 2 carrots, peeled • 1 large onion • 4 cloves garlic, finely chopped • 2 tbsp plain flour • 2 tbsp tomato purée • 1 bottle red wine • 500ml beef stock • ½ x 20g pack thyme • 3 sprig/s rosemary • 3 bay leaves
For the garnish 50g butter • ½ x 500g bag small onions, peeled • 200g pack button mushrooms • 1 clove garlic, finely chopped • ½ x 25g pack flat leaf parsley, leaves chopped
Method
Place a large cast-iron casserole dish (one with a lid) over a medium heat on the hob. Add 1 tbsp oil, then the lardons. Cook for 5-10 minutes until crisp, then remove to a bowl using a slotted spoon, leaving the fat in the pan.
Sear 1/3 of the beef on each side until deeply caramelised, as the browning process creates flavour. Be careful not to overcrowd the pan and keep the temperature high – you want the beef to sizzle in the fat rather than release juices and boil. Remove once seared and add to the bowl with the bacon. Repeat with the remaining 2 batches.
As the beef browns, cut the carrots into bitesized chunks and finely chop the onion. When all the beef is browned and set aside, add the vegetables to the pan with ½ tbsp oil, if needed, and fry gently for 8 minutes, until softened. Add the garlic and fry for 1 minute more, then stir in the flour and tomato purée.
Pour in 1/3 of the wine and bring to the boil. Using a wooden spoon, scrape the bottom and sides of the pan to deglaze it and release the charred bits of beef and bacon into the sauce. Add the beef and bacon pieces, then The Best cover with the remaining wine and beef stock. Season with black pepper and a pinch of salt. Tie the thyme and rosemary together in a bundle using string, then add to the stew with the bay leaves. Preheat the oven to 180oC, gas mark 4.
Cover the dish with its lid, then cook in the oven for 4 hours, stirring every hour or so. Add a little water if the beef looks dry. When the meat falls apart when pushed with a fork, turn the oven off but leave the dish inside.
Meanwhile, for the garnish, melt the butter in a deep frying pan. Cut any larger onions or mushrooms in ½, then add to the pan with the garlic. Fry over a medium heat for 10 minutes, stirring often to coat in the butter, until gently caramelised and cooked through. Season with pepper and add the chopped parsley, then tip into the stew and stir gently to combine. Put the lid back on to keep warm until ready to serve, with buttery potatoes and steamed greens, if liked.
The best STICKY TOFFEE PUDDING
The backbone of this Martha Collison recipe is naturally toffee-like medjool dates, which create a sticky texture and deep caramel flavour. Many people are surprised that this pudding conceals dates within it, but mash them small enough and even the date-adverse won’t spot them!

Ingredients
1 chai teabag • 165g pack medjool dates, without stones • 1 tsp bicarbonate of soda • 1 tsp vanilla extract • 100g butter, softened, plus extra for greasing • 150g dark brown muscovado sugar • 2 British Blacktail Free Range Large Eggs • 2 tbsp golden syrup • 175g self-raising flour • 75ml whole milk • Hot custard or vanilla ice cream, to serve (optional)
For the toffee sauce
225g dark brown muscovado sugar • 100g unsalted butter • 200ml double cream • 1 tbsp golden syrup
Method
Put the tea bag into a medium bowl, cover with 165ml boiling water, then leave to brew for a few minutes. Chop the dates into small pieces and add to the bowl (leave the teabag in), with the bicarbonate of soda and vanilla extract. Stir to combine, then leave to soak for 20 minutes. Preheat the oven to 200oC, gas mark 6 and grease a 20x32cm (2L) ovenproof dish.
Beat the butter and sugar together, using a wooden spoon or electric hand mixer, in a large bowl for a few minutes until light and fluffy. Add the eggs one at a time, beating well between each addition. Add the golden syrup. Stir in the flour until well incorporated, then pour in the milk and beat well.
Remove the tea bag from the date mixture, and squeeze it against the side of the bowl to extract maximum flavour. Using a fork, mash the dates into a chunky paste, then fold into the pudding batter.
Spread the batter evenly into the buttered dish and bake for 30-35 minutes until risen, golden and firm.
While the pudding cooks, make the sauce. Put all the ingredients into a medium saucepan. Bring to the boil over a medium heat, stirring continuously, until the sugar has dissolved. Turn up the heat slightly and let the mixture bubble for 2-3 minutes until it is a rich toffee colour.
Once the pudding is cooked and a skewer inserted into the centre comes out clean, pierce the top in several places with the skewer, then pour ½ the sauce over the top of the pudding. Return to the oven for 5 minutes to allow it to absorb and make the pudding extra sticky.
Let the pudding stand out of the oven for 5 minutes, then serve with the remaining toffee sauce and some hot custard or vanilla ice cream, if liked.
Mother’s Day cardamom & blood orange BUNDT CAKE
Nothing says ‘I love you’ like freshly baked cake, says Martha Collison! And the joy of using a Bundt tin is they do much of the hard decorating work for you.

Ingredients
For the lining paste
50g vegetable shortening or softened butter • 2 tbsp plain flour • 2 tbsp Vegetable oil
For the cake
175ml Vegetable oil • 3 eggs • 300g Greek-style natural yogurt • 375g caster sugar • 300g plain flour • ½ tsp fine salt • 2½ tsp baking powder • 10 cardamom pods, seeds finely crushed • 1 orange (blood, blush or regular), scrubbed, zest
For the icing
175g icing sugar • 1 orange (blood, blush or regular), scrubbed, pared, plus 2 tbsp juice (or use orange zest, plus 2 tbsp No.1 Sicilian Blood Orange Juice, for colour), to decorate • Cooks’ Ingredients Aromatic Rose Petals, to decorate

Cook’s tip
The biggest challenge you’ll face when baking a Bundt cake is lining the tin. I’ve had countless cakes ruined by getting them stuck in the tin, but no more. The lining paste in this recipe will ensure that your cake slides out more easily.
If you don’t have a Bundt tin, you can make this using 2 less ornate 20cm round sandwich tins. Reduce the cooking time, baking until golden and risen. Test to see if it’s ready as in step 3. Sandwich with a simple orange cream made with 150ml double cream flavoured with orange zest and a little icing sugar.
Preheat the oven to 180oC, gas mark 4. To make the lining paste, stir together all the ingredients in a small, sealable jar until smooth. It can be stored in the fridge for up to 10 days, or frozen for up to 1 month –bring back to room temperature before use. Using a pastry brush, apply a little lining paste around the inside of a 2.4L Bundt tin (available at John Lewis).
In a large mixing bowl, beat together the oil, eggs, yogurt and caster sugar until they form a smooth paste. In a separate bowl, combine the flour, salt and baking powder. Sieve the crushed cardamom into the flour mixture, discarding any bits left in the sieve. Mix into the wet ingredients. Fold through the orange zest and pour into the prepared tin.
Bake for 45-50 minutes, or until golden and risen and a skewer inserted into the centre of the cake comes out clean. Allow to cool for 10 minutes in the tin, then turn out onto a rack and allow to cool completely
To make the icing, sift the icing sugar into a small bowl. Add the orange juice, a little at a time, until you have a thick paste. When the cake is completely cool, use a palette knife to spread the icing onto the top, teasing it down the grooves in the cake. Decorate with pared orange and rose petals. This cake will keep for up to 4 days stored in an airtight container.
Millionaire’s Easter egg CHEESECAKE
Grab a spoon and dig into this amazing Easter egg cheesecake topped with crunchy-shelled mini eggs. This recipe can be adapted to any medium-sized Easter egg, but a 193.5g boxed Cadbury Mini Eggs Easter Egg works well.

Ingredients
155g hollow Easter egg • 4 digestive biscuits, crushed into fine crumbs (to give 60g) • 30g butter, melted • 150ml carton Waitrose Double Cream • 60g Belgian dark chocolate • 100g essential Waitrose soft cheese • 1 tbsp icing sugar • 120g small chocolate eggs, to decorate • 4 tbsp No.1
Salted Caramel Sauce
Cook’s tip
If you don’t have a microwave, put the chocolate into a small heatproof bowl. Put the cream into a small saucepan and bring to a simmer. Pour the hot cream over the chocolate and stir until smooth and silky. Cutting into portions is easiest if you use a warmed knife, as in step 1.
Method
Dip a knife in hot water, wipe it dry, then carefully cut the Easter egg open along the seam to give 2 half shells. Stir together the biscuit crumbs and butter, then divide between the chocolate shells, pressing down lightly with the back of a spoon. Set on a plate, cover and chill while you prepare the filling.
Pour ½ the cream into a microwave-safe bowl and add the chocolate. Microwave on medium power for 1 minute, then leave to stand for 2 minutes. Stir gently until smooth and shiny, then set aside to cool.
Using an electric hand mixer, beat the soft cheese, icing sugar and remaining 75ml cream together until thick enough to hold its shape. Fold in the cooled chocolate mixture until smooth and silky. Spoon the filling over the biscuit layer, then cover and chill for at least 2 hours, or until set.
Gently crack or lightly crush some of the small chocolate eggs with a rolling pin. Spread the caramel sauce over the cheesecake layer (no need to completely cover it), then decorate with the cracked (or crushed) and whole small chocolate eggs.
