The à la carte menu is also available and lunch makes way for dinner in the elegant surroundings with the lighted glass skylight back room. Late nights are Friday and Saturday closing at 1am. On alternate Fridays or Saturdays, close-up magic is on the menu from the line-up of great magicians that have become a regular favourite at Carlos. Look out for occasional live music nights and follow social media for upcoming events.

Sundays sees Carlos do what he has always done so well, serving the best Sunday roast around from 12pm through to last orders at 8pm (close at 10pm) with the Sunday lunch menu taking centre stage alongside the à la carte.

What comes to mind when you think of summer? For me, it’s the cute outfits at a BBQ, long evenings in a beer garden and jetting off to sand, sea and some actual sun! Summer is the most inspiring of all seasons, from fashion trends to new interior ideas and playing around with make-up, summer is all about coming out of your comfort zone and trying new styles and colours.

Summer is all about adventure. There’s a sense of promise in those long summer days – a hopefulness and expansiveness that the closed-in nights of winter simply don’t offer. And we have become obsessed with the perfectly curated packaging-up of these experiences. Whether it’s a weekend trip, an authentic experience or a holiday with your friends, we’re not just making Instagram content, we’re making memories. Most of your favourite memorable moments are likely to be in the summer. Possibly including something spontaneous, a fork in the road

or even a splash of disaster that you now look back at and laugh. I like to refer to summer as the glue to all happiness. It’s spontaneous, you feel good in your clothes, you’re excited for an upcoming holiday, and even if you don’t have a holiday booked, you’re excited for the weekend! Summer is all about making things, making changes to your lifestyle, making future plans, making new friends and making more memories.

How the Johannesburg-born artist ascended to international stardom, dominating 2024 with her infectious music.

Fresh off a year of social media virality with her breakout single, a fashion campaign with Gap and her first Grammy win in the inaugural presentation of the best African Music Performance category, Tyla has just released her self-titled debut album. It’s a 14-track stunner that positions the 22-year-old as the African pop star she’s always wanted to see and be.

As a child in Johannesburg, South Africa, Tyla long dreamed of seeing an African pop star become a global phenomenon. When that moment never came, she decided to just do it herself. “Not seeing that while growing up made me want to be that person,” says the 22-year-old singer, who got her start posting videos on YouTube and Instagram before releasing her first song, “Getting Late,” in 2019.

Tyla always knew stardom was within her grasp. “I knew it was going to happen,” “I never used to stress about it. Ever since I was a small child I remember constantly singing, dancing, making videos and entering music competitions. I would always tell people that I’m going to do music and it never felt like a crazy thing to say because it felt right.” And now it’s happening: the Johannesburg native secured her first Grammy Award this year, and is now the most streamed African Female artist on Spotify, off the back of her debut self-titled album, which was released in March this year (it’s currently garnering 34.4 million monthly streams).

We might live in an era when trending songs disappear faster than we can put a face or name to a sound, but Tyla is poised for the kind of stardom and staying power we rarely see from breakout talent these days.

At just 22, Tyla already has the world in her clutches. She’s cultivated fans globally and it was her infectious first single of the album, ‘Water’, that catapulted her into the global spotlight. In 2023, her formula finally got noticed on a global scale thanks to TikTok. After dropping ‘Water’ in July 2023 and noticing it had become a piece of trending audio on the app, Tyla and her choreographer, Litchi, created a dance challenge. Tyla’s performance of the challenge in August really made a splash on the app and introduced her to a wider audience than she ever imagined. “It literally changed my life.”

“The pop and R&B mainly sit in the melody choices, you know, and song structure. And then obviously the beat is where home really shows,” she notes.

It’s a formula that’s working. On her debut, Tyla’s star quality shines. Simmered acoustics on tracks like “On and On” and “Butterflies” let her vocals hypnotise. The signature sound that she developed is flexible enough to allow her to show off next to stars from the Latin, reggae and hip-hop worlds: Features on the album include South African stalwart Kelvin Momo, Latin pop star Becky G, Atlanta rapper Gunna and Jamaican dancehall finesser Skillibeng. One of the most powerful tracks is “No. 1,” featuring Nigerian R&B star Tems. Tyla even pushed back the deadline to turn in the album so she could lock in the collab.

“I recorded it in a bedroom. I never thought, ‘this song is going to blow up’. And then I started performing it and seeing everyone singing every word. And I knew it was something bigger than what we thought. People from everywhere are listening to it and dancing to it, no matter their age. There are babies, there’s old people. I just love that it’s an African sound that is so universal.”

Garth von Glehn (who later became her first manager) contacted Tyla after he came across videos of her singing on her Instagram page, and soon her first recording session was booked. She began work on Tyla, her debut album, the moment she was signed to Epic Records, three years ago –and it’s packed full of brilliant tracks. The Caribbean-tinged ‘Jump’ featuring Gunna and Billibeng, is a highlight, and is quickly amassing a legion of fans (her ‘Tygers’ she calls them).

“I didn’t think it would be the favourite on the album. People just latched on to that song. The reception has been insane!’ ‘Art’, about the object of Tyla’s affection treating her like expensive artwork (with sumptuous visuals to boot), has taken off just as quickly. Quite the feat for the musician who would shy away from an audience when recording. “I would be very private when I would make music, I’d want it to be just me and the producer,” she explains. “Travelling and performing allowed me to learn so much and allowed me to perfect this sound of pop and R&B.”

Years of consistency have honed her sound. ‘This album was me introducing who I am to the world’ she says. ‘It was very important to me to work with people who actually get it and don’t just want to make African music because Afrobeats music is trending right now. It’s a very spiritual sound and it’s a feeling – it’s not something that can be calculated.’

The genre-smashing track now has 161 million views on YouTube, and her accompanying dance became a TikTok viral hit. It also won her the Grammy for Best African Music Performance – the first of its category at the awards show.

Songwriters Hall of Fame writer-producer Jimmy Jam presented her with the prestigious award, and a stunned Tyla said she ‘never thought I’d say I won a Grammy at 22 years old’. What was running through her mind onstage? ‘I was just so happy that I was even nominated. That whole experience was something that I never thought I would experience this early in my career; hearing my name felt like I was in a movie.’

She toasted the win with a close-knit group. “My friends, my team and I all went out, but it wasn’t a big celebration. We were in a big party bus blasting “Water!”. Naturally, the award is back in South Africa. ‘I brought it back to South Africa. It’s engraved and sitting in my parents’ house.”

Her background is a huge part of Tyla’s worldwide acclaim. True to her South African roots, it’s evident in both her sound and live performances. Amapiano, a South African music subgenre with jazzy, pulsing beats has provided the soundtrack to many recent summers, and Tyla’s take merges the sound with her buttery smooth soulful vocals and catchy lyrics.

Because of pandemic lockdowns, it took a year for Tyla and her team to shoot the video for “Getting Late,” with “no backing, no budget.”

But when they finally dropped it in early 2021, labels noticed.

Years after her first video, Tyla’s taken the building blocks of Amapiano and added elements of pop made by stars she grew up idolising like Rihanna and Justin Bieber. Her signature sound has been dubbed “pop-iano.”

A modern popstar doesn’t exist without equally beguiling styling, and Tyla’s signature look involves a blend of Y2K gems, waist-cinching tops and loose trousers, with labels from Di Petsa, and Blumarine to Versace and Area, further boosting her It-girl fashion credentials.

“As a kid, I would make my parents watch me while I tried on outfits and give them a whole runway show,’ she says. “I just love looking effortless. Baggy jeans, small tops, waist out: that’s just me.” Although she still lives in Johannesburg, she feels comfortable in London, and a recent music pop-up in Shoreditch celebrating her album release has cemented the capital as her home away from home. “It’s the place outside of Africa that feels closest to home. I love that African music is so loved in the UK.”

An injury forced Tyla to postpone her North American tour which was due to begin in March but she alludes to a tour being in the works, and her best friend (and her creative director) will be in tow. ‘I’m just looking forward to elevating and evolving for my Tygers. My mission is to take it to the top and bring the world an African pop star.’

“Tour is definitely going to come probably late in the year. For now, I want to do more visuals and more interacting with people. I really want to have fun with this rollout. I don’t want to do things that everyone’s doing. I want to play around a bit and do new stuff. And I’m excited to see how the music travels and what people create out of it, because I already know people are going to come up

with whatever they come up with, so I’m looking forward to seeing how they do that.”

“With the platform I have now and how far this music reaches, the art we create together is reaching further. We’re able to do bigger things. Things that we have wanted to do and planned to do but didn’t have the funds or the resources to do. Now we can.”

“We’ve obviously had African artists that have pushed boundaries, but I feel like now is a time when people are actually paying attention to us properly and actually latching on to the music and the culture and showing interest beyond

the trends,” she says. “And we have African artists leading it.”

Thanks to her strong debut, Tyla has proven that she is one of those leaders.

Eating the right foods at the right time can really make a difference to your energy levels throughout the day. As we approach the summer months, and embark on longer days of sunlight, the melatonin onset is impacted, affecting our sleep. Also, the higher temperature of summer makes it harder for the body to maintain a balanced internal temperature. This can leave you feeling more tired and as a result, reduce levels of energy.

BREAKFAST:

Swap sugary, highly processed breakfast cereal to

Overnight oats prepared the night before are a great way to have a healthy start to your day. Oats can be accompanied by many things to make it extra tasty, try adding mixed berries with Greek yogurt, or a sprinkle of chia seeds, or any seeds of your choice! If you can’t resist your morning slice of toast, swap refined grains (white bread) to wholegrain. When whole grains are digested, energy is released slowly into your body so you’ll feel more sustained. Refined grains release energy quickly into the body, and that can lead to feeling lethargic shortly after.

LUNCH:

Swap your usual white bread sandwich to soup or salad with a wholemeal roll

This will ensure you don’t get the mid-afternoon slump. Adding more vegetables and salad throughout the day will encourage a wide spectrum of beneficial bacteria in your gut, which will help you absorb the nutrients

DINNER:

WHAT’S YOUR EQUILIBRIUM?

Welcome to British summertime. Yes, the tropical storms and high pollen counts are ravaging both my sinuses, and my hair!

But none the less; suns out, guns out and bums out!

I’d love to report back on an adventurous hot girl summer but in actuality, I’m thriving, and I’m focused. I’m taking my vitamins, eating well, staying hydrated and I have officially entered my summer glow, summer vacay season. It sounds so easy and trouble-free. Because I planned it that way. But, of course, to no surprise, the universe has got to throw something at me to create discourse. I present, the equilibrium.

Now as I’m sure most of you can relate, I compartmentalise my life into three parts: work, life and health and well-being, also, most commonly known as, the work-life balance. On occasion, the three may collide to cause an existential crisis, however; so long as the two out of three co-exist harmoniously, two can cope with the other having a leaky bucket.

As I’ve evolved into Corporate Boss level 8, it has become more of a realisation that work-life

balance as some of us may be adjusted to, in its traditional form, no longer suits the modern lifestyle.

The traditional idea of a work life balance is that you were able to compartmentalise work and life so that one doesn’t slowly merge into the other. It was the adage that your hours were 9 to 5 and never an extra minute of unpaid overtime should exist. But the reality is, I find great happiness in work, in succeeding at work. A strict 5.30pm switch off doesn’t always equate to work-life success. And I equate a big part of my value as a person to how hard I work and how much I succeed.

As hybrid working has become the new norm, work and life are slowly merging. I remember when I first started working from home, there’d be days when I’d be glued to my desk from 7am to 7pm and others where I felt so lazy I mooched on the sofa watching Desperate Housewives eating snacks and occasionally pressing the space bar so I’d show online. Neither were conducive to a harmonious and successful outcome, but there was balance, right? Wrong! I’d be riddled with guilt because I’d work such late hours, I’d feel guilty for not getting any work done one day and then would overcompensate by working long hours in a high stress environment the next. But I still “loved” it.

I’d end relationships because I was “too busy” and then tell myself I was terrible at my job because I couldn’t focus to get anything completed, so then my mental health would take the beating for it. But as an FYI, work would definitely be an excuse, not the reason for me ending relationships.

It was only recently that I had been on an amazing holiday where I hadn’t even thought of work for once; but on either side of those 5 days away, I had worked nearly 18 hours a day and as a result, ended up in A&E because my body decided that I was exhausted and I needed to force rest. And for a week I did just that. I still worked but worked within my capacity, I still saw friends and family because they’re the light of my

life and of course, I slept… a lot. It wasn’t the reset I wanted, but it was definitely the reset that I needed.

I realised in that week that I can indeed do everything I need and want to do, but with a mindset shift and my health and wellness being paramount. We always take our health for granted and when we get sick, all we care about is getting better. So, like a real adult (I forget I am one sometimes), I want to talk about some of the ways I’ve switched mindset from work-life compartmentalisation to harmonious work life success.

1. Firstly, define what you want to achieve from a good work-life balance.

Everyones balance is so different. A lot of my joy comes from my work environment, in challenging myself and succeeding. I don’t see work as a dirty word and I don’t think I could ever not work (but I could work a little less). A harmonious work-life balance should provide you a healthy balance between personal life and work expectations. You should aim to have a reduced amount of stress and a heightened sense of well-being.

Perfecting the balance should result in this. My personal objective is to find ways to work smarter, not harder. To reduce the time I spend in the weeds and build engines to help me achieve my desired outcomes. To constantly develop skills I can always utilise and continually learn through the process.

3. Choose your hard.

We do not control everything that happens to us, but we do choose how we deal with it.

It’s hard to complete a challenging piece of work, it’s just as hard to deal with the consequences of not doing it. It’s hard to breakup with someone you love, it’s hard to stay in an abusive relationship. It’s hard to be disciplined in health and wellbeing, it’s hard when you get sick as a result of not taking care of yourself. Everything is challenging, but its up to us to make the decision on which “hard” we want to pick.

2. To level up on work-life success, be the change you want to see.

Nurture good relationships in the workplace where you positively reinforce one another. When I had to make the switch to working back in the office, it didn’t bother me. I have always made a strong effort to get to know the people I work with and build a trusting and open work relationship with them. I’m well aware that not everyone you work with are your people but I wouldn’t actively try and avoid building relationships at work. Why? You spend 9 hours of your day with people who you must work with, why make it insufferable? I started a new role last December. I was told that the culture was toxic and demotivating. I walked into that role with the intention to change the culture and inspire people, to make it a positive place for everyone to work. You see a genuine switch up in stress levels when you work in an uplifting environment daily. Yes, your job may be stressful by nature, so build positivity and a support system around it. Be the change you want to see.

4. Your balance is your own – don’t let anyone tell you otherwise.

You’re damned if you do, damned if you don’t. People get called out for not putting enough into their work and I’ve been called out for putting too much. Although there’s periods of time where I do spend too much time working and not enough time taking care of myself, overall, my balance works for me. Sometimes, people project because they feel they aren’t doing enough. I always say comparison is the thief of joy, whatever works for you and your well-being, do that. I will always make time for the things which are important to me and to those around me. I’ve never missed an important event, or something which is important to me because of my balance. Make sure you’re getting what you need out of every part of your balance.

5. Do more of the things you love and don’t feel guilty for it.

If I want to sit on TikTok for four hours or watch re-runs on the tv, I will. If I want to ruthlessly prioritise my alone time over time with others, I will do that. I will take holidays but I won’t cut off work completely. I will check in enough to stay ahead because that is what puts my mind at ease. I prioritise the things which are most urgent and I don’t beat myself up about the rest.

If we learn that instead of compartmentalising work, people and well-being, we learn to harmoniously meld the three, we will be better equipped to live a fulfilling and happy balanced life. Stay Balanced.

My brother in law Ritchie once said to Jamie that women always want more, that nothing’s ever enough, and even when they’ve got what it is they long for, soon enough there will be something else that they find that they want. I know this conversation, not because I was part of it, or were there when they had it, but because Jamie reminds me of it every single time I prove Ritchie’s theory right.

I don’t often like to admit that a statement like that is true – but actually, it kind of is. Apart from the woman part – I think as humans and definitely as a generation we always seem to live in the future – when we get to where we want to be, or obtain what it is we want to get, the “what’s next?” seems to creep up in our subconscious.

But how important is it to just be present, grateful and content in the moment? Ambition and striving for more isn’t always a negative thing, but not having gratitude is and actually, always having something else to achieve or to want can steal the joy of our now.

It can sometimes go like this –

You start dating – you want to get engaged. You get engaged – you want the big wedding. You get the big wedding – you want to move in. You get the flat – you want the house.

You get the house – you want the extension. You get the extension – you want a house with a bigger garden. You get the house with the bigger garden – you want to start a family.

You have a child – you want another child

You have another child – now you need a bigger car.

You get the bigger car – now you need a bigger house with the drive which is in the catchment area for the best schools.

You get the jist? Now this might not be everyone’s story, but I’m sure we can relate to some of these points, if we’re being honest with ourselves. I saw a post the other day that inspired this column, and it said “Remember the days you used to pray for the things you have now” and it really made me stop and think. The world, society, social media and our own mind tends to condition itself for more, more and more when actually, I think we could all benefit more from living in the moment, cherishing where we’re at, what we have achieved and be faithful that God will take us exactly where we need to be at the right time and we should be grateful for that.

MISO & CLOTTED CREAM MUSSELS with

spinach and chilli oil

The deep umami savouriness of miso, onion and garlic balances this mussel dish from Elly Curshen using leftover clotted cream.

Ingredients

1 tbsp olive oil • 1 echalion shallot, finely chopped •

2 cloves garlic, finely sliced • 10g piece ginger, finely grated • 1 tbsp white miso paste • 1 tsp vegetable bouillon powder • 2 x 200g Waitrose Scottish Mussels • 120g pack baby spinach • 3 tbsp Clotted cream • 1 tbsp Lee Kum Kee Chiu Chow Chilli Oil, or to taste • ¼ lemon or lime, cut into 2 wedges

Method

Heat the oil in a large pan over a medium heat. Add the shallot, garlic and ginger and cook for 3 minutes until soft and fragrant. Add the miso and cook for 1 minute more, stirring regularly.

Meanwhile, dissolve the bouillon in 250ml boiling water from the kettle. Pour into the pan and bring to the boil. Add the mussels (including all the liquid from the pouches), discarding any with broken shells. Cover and simmer over a medium heat for 3 minutes, until the mussels are piping hot. Add the spinach, stir, cover, then simmer for 2 minutes more.

Turn off the heat, add the clotted cream to the pan, cover again and leave to rest for 1 minute so the cream melts into the sauce.

Divide the mussels, spinach and sauce between 2 bowls (remove any broken shells or unopened mussels) and drizzle with the chilli oil. Serve with a lemon or lime wedge to squeeze over the top.

Herby lamb & aubergine FLATBREADS

Ingredients

454g pack British lamb burgers • 280g can Parilla Greek-Style Eggplants in Onion & Tomato Sauce • 1 pack The Levantine Table 2 Hand stretched Flatbreads • 100g pack baby leaf & herb salad

Method

Preheat the grill. Break the burgers into a large preheated frying pan. Sizzle and break into mince for about 6-7 minutes, or until the lamb changes colour. Drain any excess fat, then season well.

Spread the eggplants over both flatbreads to the edges, then top with the lamb and combine a little. Grill on a baking tray for 8 minutes, or until the lamb is sizzling and thoroughly cooked and the breads are crisping.

Pick out the herbs from the salad, then chop, if liked, and scatter over the bread. Slice and serve with the salad, dressed with a little vinegar or lemon juice, oil and seasoning, if liked.

Cook’s tip

Add even more flavour to this salad by scattering some manchego cheese shavings over the top.

Chorizo & sweet piquante pepper pasta SALAD

Juicy, refreshing and popping with colour, this Spanish-inspired summer salad is the main event at both dinners and lunches –and it’s ready in under 30 minutes.

Ingredients

250g Essential Fusilli • 400g jar Peppadew Mild Whole

Sweet Piquanté Peppers • 1 tbsp olive oil • ½ tbsp

Essential Red Wine Vinegar • 1 tsp clear honey • 2 tsp

nonpareille capers, drained and chopped • 100g Essential

Pitted Black Olives, drained and halved • 100g Waitrose

Spanish Chorizo Ring, thinly sliced • 235g pack readywashed spinach • ½ x 25g pack basil, leaves roughly torn

Method

Bring a large saucepan of water to the boil, add the fusilli and boil for 9 minutes.

Meanwhile add 2 tbsp of the liquid from the jar of peppers to a large mixing bowl with the oil, vinegar, honey and capers. Whisk together and season. Drain off the remaining liquid from the jar, then tip the peppers into the bowl along with the olives.

Heat a frying pan over a medium-high heat and add the chorizo, cooking for 5 minutes or until golden and crispy.

Drain the fusilli and add to the mixing bowl, along with the chorizo and any spicy oil released during frying. Toss everything together and leave to cool for 5 minutes. Toss through the spinach and basil and serve immediately.

No-bake mango milk CAKE

Dina Begum’s recipe means in a matter of minutes, you can put together a deliciously dreamy dessert of milk-soaked cake with two textures of mango.

Serves 8

Ingredients

2 x 250g Waitrose Madeira Loaf Cake • 200g condensed milk • 200ml evaporated milk • 200ml whole milk • 600g mango fingers • 300ml double cream • Mint leaves, to decorate (optional)

Method

Cut each Madeira loaf into 4cm wedges and lay flat to make an even, single layer in the bottom of a deep glass or ceramic baking dish, about 22x17cm (1.4L volume), ensuring there are no gaps. You may need to break a slice into smaller pieces to fit. Pierce the cake all over with a fork.

Whisk together all the milks and pour on top of the cake layer to coat evenly. The excess milk will soak in once rested. Cover and place in the fridge overnight, or for at least 6 hours.

When ready to serve, blitz 300g mango in a small blender or smoothie maker until it comes together in a smooth purée. Be careful not to overblend to avoid a juice-like texture. Spread the mixture evenly over the soaked cake, then set aside.

Using an electric hand mixer, whip the cream to medium peaks, then pipe or spread it on top of the mango purée layer. Scatter the remaining mango fingers (or cut into bite sized pieces, if liked) over the cream. Add a few mint leaves, if using. Mark it into squares, ready to spoon onto plates or bowls.

Raspberry & orange CHEESECAKE

This elegant dessert by Itamar Srulovich and Sarit Packer (owners of Honey & Co restaurants in London) can be a day in advance to get the best texture. The homemade raspberry jelly is a game changer.

Ingredients

2 x 280g packs full-fat soft cheese • 350g condensed milk • 2 oranges (scrubbed), zest of 2, juice of 1 (about 80ml juice) • 150ml double cream • 12g sachet gelatine powder

Base

50g unsalted butter, melted, plus extra for greasing • 200g digestive biscuits, crushed • 50g condensed milk

Jelly topping

150g pack raspberries • 2 tbsp lemon juice • 2 tbsp caster sugar • ½ x 12g sachet gelatine powder (1 tsp)

Method

Grease and base-line a 22cm round springform cake tin with baking parchment. Mix all the base ingredients and press into the tin. Chill. In the bowl of a freestanding mixer with a paddle attachment (or in a bowl using an electric hand mixer), beat the soft cheese, condensed milk, ½ the orange zest and the cream, starting on a medium speed.

Meanwhile, put the orange juice in a small pan with the gelatine powder and heat until the gelatine is fully dissolved; remove from the heat. While the filling is being beaten, slowly pour over the orange juice mixture until well combined. Pour onto the chilled base, flatten with a spatula and chill to set for at least 1 hour.

For the jelly topping, bring a kettle to the boil. Set aside 10-12 raspberries, then put the remaining berries, the lemon juice and caster sugar in a small pan with 250ml just-boiled water. Bring to the boil and crush the raspberries lightly. Remove from the heat and strain through a fine sieve over a bowl, pushing the fruit through with the back of a spoon. Discard the seeds, then stir in the gelatine until dissolved. Set aside to cool (not in the fridge, so it doesn’t set) and stir occasionally. After an hour, carefully pour it over the back of a spoon all over the top of the cheesecake and return to the fridge to set for at least 2 hours. To serve, decorate with the reserved raspberries and orange zest.
