Explore our lovely countryside and local pubs and cafés for a perfect day...
Frost in the Forest Stroll through ancient, deer-filled Hatfield Forest and then warm up with coffee or mulled wine by the lake. Really cold days turn the lakes to ice, fringe trees with frost and freeze the forest tracks that can otherwise be impossibly muddy. Start with your back to the National Trust café. Turn left through car park and right along tarmac track. Immediately after gravel drive with “No Vehicular Access” sign, take path on left of road. Follow yellow-topped marker posts across open country towards trees and walk, through some bushes, to one end of a broad woodland ride. Turn left along this to the end and eventually right along edge of forest. Turn left though wooden gate by buildings and go on between beech hedges. Turn left along edge of field, left again over footbridge and then right on path beside lake. Keep going in this general direction, along small path and then track, to emerge near picturesque Street Farm Cottage, with thatched roof and diamond-leaded windows. Turn left along lane and keep straight on along tree-lined track, following it left. Go through wooden gate back into Hatfield Forest and walk straight ahead. Keep Forest Lodge on left and pine trees on right and follow winding gravel track, which bends left through open area. After about 200m, turn right along wide, grassy path to return to café. RECIPE OF THE MONTH
LOOK WHAT’S COOKING MARMALADE & MUSTARD GLAZED GAMMON 2.5kg smoked gammon joint 1 onion, peeled and quartered 1 large carrot, peeled and chopped 2 fresh bay leaves, plus extra to garnish Few black peppercorns 1 tbsp whole cloves 3 tbsp shredless orange marmalade, warmed 2 tbsp runny honey 1 tbsp Dijon mustard 3 tbsp light soft brown sugar Orange wedges, to garnish
GLAZED GAMMON IS A CHRISTMAS FAVOURITE – DELICIOUS HOT FROM THE OVEN AS A FESTIVE SUPPER OR SERVED COLD AS PART OF THE
BOXING DAY OR NEW YEAR BUFFET!
1. Place the gammon joint in a large deep pan with the onion, carrot, bay leaves and peppercorns. Pour over enough cold water to cover the joint. 2. Bring to the boil then skim off any scum from the surface using a slotted spoon. Reduce the heat, cover and leave to simmer for 1½ hours, topping up the water level as needed. 3. Preheat the oven to 180°C, fan 160°C, gas 4. Lift out the gammon from the pan and place in a foil-lined roasting tin (discard the cooking liquid). Leave to cool for 10 minutes. Cut away the skin from the gammon, leaving a thin layer of fat and score the fat into diamonds. Stud the scored fat with the cloves in an even pattern. 4. Mix together the marmalade, honey, mustard and sugar and spoon all over the gammon fat. Roast in the oven for 40-45 minutes, basting regularly with the glaze and pan juices until the fat is golden. Serve hot or cold garnished with fresh bay leaves and orange wedges.
TIP: Add 1 tsp each ground cumin and ground coriander or a splash of Tabasco sauce to the glaze for a bit of extra spice, if liked.

LOCAL CHARITIES Hertfordshire Alzheimer’s Society By Gayl Staines, Operations Manager
If you have a small local charity, non-funded or not-for-profit organisation you feel deserves some exposure contact us and we’ll see what we can do.
We all need to be dementia aware... Like many medical conditions, there are a number of commonly held misunderstandings around dementia. There over 14,000 people with the condition in Hertfordshire and that number continues to rise so we think it is essential that everyone learns more about the condition. A common misunderstanding is that dementia only affects older people and is a natural part of aging. In fact, dementia affects many people under 65 and is caused by diseases of the brain. Also, there are things that we can all do to dramatically reduce our risk of developing the condition – such as exercising regularly, not smoking and not drinking heavily. Many people don’t realise that whilst there is not yet a cure for dementia, many of the symptoms that can accompany the condition can be treated. Alzheimer’s Society invests millions of pounds into research every year which helps develop news ways to make life more manageable and enjoyable for people living with dementia. Of course, much of this support is only available to those people who have been formally diagnosed with dementia so that they can be pointed in the right direction. We estimate that there are thousands of people in Hertfordshire who have dementia but don’t have a diagnosis. If you are worried about your memory – or perhaps you are worried about a family member or friend – then the first step is to speak to your GP or to Alzheimer’s Society. Occasional forgetfulness or confusion is something that we all experience but we encourage people to seek advice when it starts
to interfere with daily life. For example, we all lose the car keys from time to time, but if you find that are frequently forgetting recent events, appointments and people’s names then it is important to get it checked out. Other symptoms might include mood swings or frustration at memory loss. It’s important to realise that a diagnosis of dementia is not something that you need to deal with alone. Alzheimer’s Society offers a range of local support such as Dementia Cafes, Singing for the Brain groups and Dementia Support Workers who can offer information to people with the condition, carers and professionals. Stort Valley rotary
Confirm that Santa is coming to town! Stort Valley Rotary Club (SVRC) are delighted that Santa has replied positively to their letters imploring him to again visit Bishop’s Stortford in the run up to Christmas this year. He hopes that many of the town’s children will whisper their Christmas hopes to him at his various appearances, and that parents will allow the youngsters to indulge in a chocolate or two! The Club have been told that amongst the locations chosen by Santa for his appearances will be the town’s Market Square, outside supermarkets such as Tesco, Aldi and Sainsbury, Stansted’s Christmas Market, Forest Hall Park and Thorn Grove School. The very generous public support at Christmas 2014 enabled the SVRC to raise £3924 for distribution to local projects, and other causes, awards varying from tens of pounds to a couple of thousand pounds. The Club has attached particular priority to continuing to support the Life Education Project which has now been taken up by 11 local primary schools, and the Portland Child Contact Centre. The Club looks forward to meeting as many local people as possible, hopefully in sparkling December sunshine, in the run up to Christmas 2015.

The birchanger wood trust What’s happening in the woods in the Festive Season... by Trust Secretary Daphne Wallace-Jarvis
Well there are no Christmas trees in Birchanger Wood, however there are a few evergreens which have crept in over the years, and the most obvious one being the Holly. The Holly tree, or more often, a bush provides dense cover and good nesting opportunities for birds, and its deep, dry leaf litter can be used by hedgehogs and small mammals for hibernation. The flowers provide nectar and pollen for bees and other pollinating insects during the spring and summer and the leaves are food for caterpillars of the holly blue butterfly and various moths. In autumn and winter the berries are a vital source of food for birds in winter, and are eaten by small mammals such as wood mice and dormice. I am not aware of any dormice in Birchanger Wood. The smooth young leaves found at the tip of holly tree branches are a winter source of food for deer. Holly wood is the whitest of all woods, and is heavy, hard and fine grained. It can be stained and polished and is used to make furniture or in engraving work. It is commonly used to make walking sticks. Holly wood also

makes good firewood and burns with a strong heat. Holly branches are still used to decorate homes and make wreaths at Christmas. The rest of our ancient woodland trees will be dormant winter of course being the season of bare trees and hibernating animals, but woods are still full of life. This is a great time to watch and listen for our resident woodland birds such as jays, blackbirds, wrens and groups of long-tailed tits amongst others. Don’t forget to look down at your feet where there are muddy patches around the pond or simply on the paths if it has snowed, and notice the prints of bird feet, squirrels, muntjac deer, dog or cats. Who has been creeping around before you? Have a lovely Christmas and a Happy New Year! Buy your firewood from the Compound most Saturdays between 9-10am and 2-3pm. The cut wood costs £10 per wheelbarrow load, or £70 per cubic metre.

Trading Standards Happy Shopping during Christmas & New Year Trading Standards advice for happy shopping leading up to the holiday period is to just remember CHRISTMAS.
C is for Counterfeits - don’t buy them! They can be dangerous, are poor quality and the person you are buying for will be disappointed
H is for Hallmark - a mark to look for on Gold, Silver, Platinum and Palladium articles to prove the quality of the metal. If there is no hallmark, the item may not be made of the precious metal you wanted.
R is for Receipts - keep them. If you find out that the items you have purchased are faulty you will need proof of purchase when you go back to the shop.
I is for Increasing your protection - when you buy expensive goods. If you buy goods over £100 it can be useful to use your credit card – that way if the company goes bust or the trader won’t help you with a problem you can go to your credit card company for help. S is for Safe goods - look for the CE Mark on things like toys and electrical goods – this is the symbol used to show the goods have met the required safety standards.
T is for Time to change your mind - you now have 14 days to change your mind about many goods you buy on-line, so order in good time and you will still have the chance to send them back and order something else if you don’t like what you receive.
M is for Manufacturer’s warranty - some goods come with a manufacturer’s warranty which you can use if the goods become faulty so keep hold of them. Remember though that your contract is with the shop where the goods were purchased so you can still go back to the seller even if you do have a warranty. A is for Advice - if you need pre-shopping advice (or help after Christmas) call Citizens Advice Consumer Helpline on 03454 040506.
S is for Scams - Christmas is an expensive time of year and a letter telling you that you have won a lottery may seem like a gift. Just remember, if you have not bought a ticket how can you be a winner? As with all scams, if it sounds too good to be true it probably is!
