I’ll be drawing up a shortlist for voting during December. Whichever charity or community interest company receives the most Facebook “likes” will receive £100 in lieu of sending out Christmas cards and of course, they will benefit from a years worth of promotion within the magazine and all the benefits that that brings! Please do get in touch; I really want to support the charities that are closest to YOUR hearts. China Trek 2018 Update: We did it - both the trek AND exceeded our target! We met some amazing people including Hayley Gibson from Stortford and her friend Teresa Connolly from Sawbridgeworth such a small world, we did it ladies!! Christmassy Cambridge The new North Station at Cambridge means you can do a great station-tostation walk along the river. Turn left out of Cambridge North station and keep going. Turn right onto Fen Road, left after house 47 onto bank of Cam and right along river. When path ends, keep left along Fen Road and Water Street and cross bridge opposite Green Dragon pub. Turn right and continue beside river for two miles, with water always on right, to Magdalene Bridge. Turn left along Bridge Street (or detour a few steps right to visit marvellous Kettle’s Yard). Keep straight along Sidney Street (or right along Market Street for the Christmas market) and St Andrews Street. Turn left after University Arms onto Parker’s Piece for seasonal ice rink and festival. Go back to St Andrews Street and turn right into Lensfield Road past interesting Polar Museum and left after Snug bar along Brookside to reach Botanic Garden where the first snowdrops are emerging from their winter beds (£6 or turn left then right around fence instead). IT repair is about helping people as much as it is fixing computers. A less desirable part of the job is that I sometimes have to assist people who have been victims of telephone/ PC scams which more often than not has cost them a lot of money as well as pride and also the loss of their cherished photos and documents. There are quite a few variants of these scams but a typical scenario is as follows: The victim will have received a phone call from someone claiming to be representing Microsoft, Virgin, Sky or BT (you name it!) telling them that there are issues with their computer that needs urgent attention. The victim will then be told how to download and install a certain piece of software (TeamViewer and Go To My PC are examples). This software will enable the scammer to remotely access and control the victims PC. Once they have control of the victims PC they will normally keep them talking while they proceed to access and then delete the users data (photos & docs), and in the worst cases they will talk the victim into handing over their online banking credentials. I have received calls from several very distressed customers over the past year, who have checked their bank balance after receiving one of these calls, only to find it empty. One customer had had two thousand pounds stolen. At the end of this “service” the victim will be told that they need to pay a fee for the work carried out. Now the victim has not only lost their precious data but their PC is often rendered unusable.

All Things PC This gives the scammer another chance to extort money from them. They will often contact them a few days later and demand ransom payment for the return of data, or in order to get the PC working again. Even if the victim pays, which they should NEVER do, there will be no return of service, and the scammers will simply disappear. Unfortunately, I don’t have the space available on this page to list all of the tricks that they use but it will give you a good idea of what to look out for. Even if the victim does smell a rat at the point that money is asked for, and hangs up the call, disconnecting the scammer, they have usually had enough time to cause damage. If you feel vulnerable and would like to seek further advice then I would highly recommend you go visit your bank (or visit their website). All of the major banks are doing their best to combat fraud and are more than happy to provide a wealth of information to their customers on what to look out for. In fact, and as an example of how proactive banks are these days, the Bishop’s Stortford branch of NatWest is holding a Scam Awareness Event on the 29th November 2018 from 5pm. On a lighter note, please have a Merry Christmas and scam free New Year!

lights of love Isabel Hospice held the first of their remembrance ceremonies, Lights of Love, on Saturday 17th November at Bakers Walk, Bell Street where those loved and lost, were remembered by family and friends. The next ceremony will be on held Sunday 2nd December here in Bishop’s Stortford in the Market Square with refreshments kindly provided by Rosey Lee Tearoom. Heather West Isabel Hospice Legacy and in Memorium Fundraising Manager said, “We would like to welcome you to join us to celebrate the lives of loved ones by making a dedication in their name. Each dedication will continue to help us care for more local people, earlier in their journey whilst living with a lifeshortening illness. At the ceremony local choirs will perform, there will be readings and poems and members of the public are welcome to write personal messages on small silver stars, which can be put on the tree at the ceremony or taken home for their own Christmas tree. All the names of those remembered at the ceremony, are written in a Book of Love will be on display at local Isabel Hospice shops.

Last year Justine Knight from Bishop’s Stortford and her family attended the Market Square ceremony to remember Justine’s uncle, Richard Cofield who lived in Sawbridgeworth. east herts community car scheme We’re looking for volunteer drivers, do you have any spare time? East Herts Community Car Scheme is a project of the CVS for Broxbourne and East Herts, aiming to facilitate community transport in our district, which includes a Community Car Scheme. The Community Car Scheme takes local people to essential health and medical appointments; they have been organising lifts for the past 7 years. If you have any community transport needs, don’t know how to get to essential appointments or would like to organise a trip for your community group, this service is for you. Could you be a volunteer driver? • Do you have a couple of hours, a morning, an afternoon or a whole day free? • Are you friendly, reliable and have your own car? • Volunteer drivers receive 45p a mile. If you are looking for something to do without too much commitment, that is fulfilling and enjoyable, the car scheme is ideal and rewarding. Meet John... John is a volunteer driver based in Bishop’s Stortford; read his testimony on being a volunteer driver: “When I retired l was looking for something to do with my spare time and my previous job involved meeting people which l enjoyed. Joining the car scheme involved meeting people of all ages and different disabilities who need taking to appointments at different places but mainly hospitals. Most of the people I take have told me it is reassuring that there will be someone waiting to take them home after their treatment; this is where I get a good feeling that l am actually helping someone. I also get support and training from Paula and her fantastic team in the office. I usually do about one or two trips a week, each trip is about one to two hours in total which suits me, parking has never been an issue as I always find somewhere to get a coffee whilst waiting for a client. I enjoy talking to the clients and some of them have had very interesting careers and there is always something to talk about plus I have learned a few new jokes!”

Charity of the year Don your favourite jolly jumper in aid of St clare Hospice Hastingwood-based charity, St Clare Hospice, is inviting everyone in their local community to don a jolly jumper for their annual Christmas Jumper Day on Thursday 13th December 2018. St Clare is encouraging groups of all ages to support the festive fundraiser, including local businesses, schools and organisations, by wearing their favourite Nordic knitwear and making a donation to the hospice charity. Whether you encourage your child’s nursery, playschool or primary school to take part, or organise a dress down day in your office, shop or workplace, it is one of the simplest and cosiest ways to support St Clare at this special time of year. Last year, the event raised almost £2,000 in vital funding for St Clare Hospice, which is enough to pay for over two weeks’ worth of physiotherapy for patients either at the hospice or in their own homes. St Clare Hospice’s Community Fundraising Lead, Dani De’ath, said: “St Clare’s Christmas Jumper Day is the perfect way to bring people together at school or in an organisation to start feeling warm

St Clare Hospice hospice launches new community Big brew initiative Community Big Brew is a regular series of coffee mornings that take place monthly across four St Clare sites, offering a welcoming space for local people to gather, share news, and feel connected. The initiative is part of the Hospice’s wider community engagement strategy and is integral to their vision to become a ‘hospice without walls’. Community Big Brew is about welcoming local people to come together in their community to meet, feel connected, and engage with their local hospice. Community Big Brew coffee mornings take place monthly across four different St Clare sites: the main hospice in Hastingwood, their Dunmow shop, Debden shop and Loughton shop. The events are open to all – shoppers, supporters, and local people. Attendees have the chance for a cup of tea and a chat, to meet new people, to share local news, and to find out how they could get more involved with St Clare or other support services in the local community; whether as a volunteer or supporter, or by accessing their varied services. The Community Big Brew events are run by St Clare’s Community Engagement team. St Clare’s Community Engagement Manager, Sally Muylders, said: “Community Big Brew is all about bringing local people together and helping them to feel connected, and part of their community. Our charity shops are already thriving community hubs – with shoppers, donators and volunteers often saying how their local St Clare shop is like a ‘family’. Our shops therefore are the perfect place to hold a monthly coffee morning, enabling those current

relationships to develop, and for people to meet others. Many people see the ‘hospice’ as just one building near Harlow – but we believe a hospice is also a very special way of caring, and connecting with people, which reaches far beyond the four walls of our centre in Hastingwood. We want St Clare to be a place which is supporting people, and connecting with them, wherever they are – and whatever stage of life they are at, not just at the end of their life. We hope that by providing a place for people to simply pop in for some company and a cup of tea, will help them to feel more connected to their local community. We hope lots of people will come along for our Community Big Brews throughout December and January to see what it’s all about!” Sally Muylders continued: “The Hospice, and all our shops, are an integral part of our local communities and we want to always be seen to have an ‘open door’, welcoming everyone from across our catchment area. We know we have more work to do to engage with our communities, and to develop that sense of openness, and the Community Big Brew project is just one step on that road. tips for a crime free Christmas shop The tips for a crime free Christmas shop start before you leave your house, after all you don’t want to come home to find the house broken into.

275g honey roast salmon flakes 250g smoked salmon slices, chopped 100g unsalted butter, softened 125g full-fat soft cheese 2 tsp creamed horseradish 1 tbsp lemon juice Salt and freshly ground black pepper

1. Reserve about 25g of the salmon flakes for garnish (cover and chill in the fridge until required). 2. Place the rest of the salmon flakes in a food processor with the smoked salmon, butter, soft cheese, horseradish and lemon juice. Process until smooth and creamy. Season to taste with salt and freshly ground black pepper and process for a further few seconds. 3. Divide the mixture between 6 small ramekin dishes and level the surface. Cover and chill in the fridge until required. Garnish with the rest of the salmon flakes, dill sprigs and green peppercorns. Serve with toasted brown or granary bread.

TIPs: Most supermarkets sell packs of ready-flaked honey roast salmon but if unavailable just buy ready-cooked smoked salmon fillets and roughly flake the fish, discarding any skin and fine bones.

COOKING CHRISTMAS MINCEMEAT SLICE 225g plain flour 165g unsalted butter, chilled and diced 1 egg yolk blended with 1 tbsp cold water 75g caster sugar 300g good quality mincemeat 50g ground almonds 2 tbsp flaked almonds

This

delicious festive slice can be served warm as a pud with custard, thick cream or brandy butter or simply cool completely and serve instead of mince pies.

1. Sift the flour into a large bowl and rub in the butter with your fingertips until the mixture resembles very fine breadcrumbs (alternatively pulse in a food processor until fine breadcrumbs). 2. Remove 100g of the breadcrumb mixture and cover and chill in the fridge. Stir 25g of the sugar into the remaining mixture, then stir in the egg and water and mix to a firm dough (adding a little more water if needed). Knead lightly then wrap in cling film and chill for 30 minutes. 3. Preheat the oven to 200C/180C fan/gas mark 6. Roll out the dough on a lightly floured surface and use to line a 23cm square tart tin. Prick the pastry all over with a fork. Line the pastry case with baking paper and baking beans and bake for 10 minutes. Remove the lining paper and beans and bake for a further 5-7 minutes until the pastry is crisp and pale golden. Cool slightly. Reduce the oven temperature to 180C/160C fan/gas mark 4. 4. Spread the mincemeat in the pastry case. Mix the rest of the sugar and the ground almonds into the reserved pastry crumb mixture and scatter over the mincemeat to cover completely. 5. Return the tin to the oven and bake for a further 25-30 minutes or until the crumble topping is pale golden. Scatter over the flaked almonds and leave to cool before removing from the tin and cutting into 12-14 thin slices. TIP: Add some finely chopped toasted hazelnuts or walnuts to the crumble topping for an extra nutty flavour.
