What was the first beer you tried? Tooheys lager at a bar in Sydney – I remember thinking it was terrible and telling my friends it tasted like regret. Funnily enough, it has become my go-to beer when I’m at bars!

你初次嘗試的啤酒是哪一款? 悉尼一間酒吧的Tooheys拉格啤——當 時覺得味道難以接受,並跟身邊好友說 自己十分後悔。不過現在,這款酒竟然 成為我在酒吧的首選。

When did you start to appreciate the taste of beer? Definitely after I went to the Two Birds Brewing launch event with my sister last year. She gave me a rundown of the differences between each of their core range of beers, and that’s when I began learning to appreciate the various flavours.

何時開始懂得欣賞啤酒? 就是去年跟妹妹/姐姐參加Two Birds Brewing發佈活動之後,當時她給我一 份簡表,上面列有各主打酒款的不同之 處。自此以後,我便學習欣賞不同風味 的啤酒。

What attracts you to a beer? I enjoy trying local beers, as they’re often brewed with something special. I’m still pretty new to the scene, so I generally ask for recommendations. If not, I tend to go for a less bitter, lighter and fruitier style, such as a wheat beer.

啤酒有什麼吸引之處? 我喜歡試本土啤,因為它們通常以 特色原料釀製。自己算是啤酒新手, 所以點酒時會詢問意見,或者點選口感 較清淡、果味較重而不太澀的酒款, 例如小麥啤。

How do you see the HK beer scene changing? As a city, Hong Kong is quick to catch onto new trends – and I think beers are no exception. It’s really tough going back to commercial lagers after trying a locally brewed amber ale.

你認為本港啤酒界會有何轉變? 香港一向緊貼新潮流,相信啤酒亦不例 外。當你試過本地出產的琥珀啤後, 可能很難再對商業啤酒感興趣。

With a handful of beer retailers and specialty beer bars opening over the past couple of years, our neighbouring SAR is also starting to embrace the brew culture that’s been sweeping Hong Kong. We recently popped over to share pints with a few of the city’s most prominent industry figures. 近年來,香港湧現了不少啤酒零售店和特色啤酒吧,而隔個 大海的澳門也開始掀起啤酒潮。今次我們一於「過大海」, 跟當地幾位業界猛人摸摸杯底,順便交流啤酒心得。

Ken Lio Founder, Beer Pro Coaster: Tell us how you got into beer. Ken Lio: I imported and distributed beverages before opening Beer Pro last year. The wine market is really big here, so that’s what I used to study. Then, someone introduced me to craft beers, as they have similar complexity level sin comparison to wines, so I decided to try a bottle. This was about three or four years ago. C: What do you think has influenced the beer culture most in Macau? KL: A lot of young people here follow Hong Kong trends, so that has slowly raised interest in craft beers. I think the beer trend in Macau is just beginning. We’ve recently registered to form the Craft Beer Culture Association of Macau, so we hope that might help raise the profile of good beers as well. C: What’s the homebrewing scene like? KL: There’s not really an active homebrewing scene in Macau yet. We [at Beer Pro] host classes sometimes, combining them with parties or events to generate more interest from the public. C: How do you see things evolving in Macau? KL: From a wholesaler perspective, it’s still tough trying to get traditional bars to serve craft beers, as they consider the price point too high. But they should look at the difference from mass-market beers in a way that’s similar to the contrast between table wine and fine wine. A lot of people here still don’t know that craft beer exists – but it’s slowly improving.

KL:在香港流行的事物,素來受到不少澳門年輕人追 捧,他們對手工啤自然亦興趣漸濃,不過澳門啤酒潮 仍未成氣候。最近我們就成立了澳門精釀啤酒文化協 會,旨在推廣各種好啤酒。 C:澳門自釀啤酒的現況如何? KL:澳門的自釀啤酒發展未見起息,有見及此,Beer Pro不時開班授課,並舉辦啤酒派對和活動,希望藉此 引起大眾的興趣。 C:你認為澳門手工啤界會如何發展? Duarte Silvério Director, Beer Temple Tif Chan Marketing Manager, Beer Temple Coaster: You occupy the entire street! Tell us more about your concept. Duarte Silvério: We have a very varied concept that aims to help promote the creative industry. Next door, we have a creative arts store where we showcase various designers and artists; further down the street, we have a gallery and cafe where we host events and private dining sessions. Finally, in this corner, we launched Beer Temple in December last year. C: How would you compare the drinking cultures in Hong Kong and Macau? DS: Compared to Hong Kong, we’re still a very young market. We have a ways to grow before we can reach the level of interest we see there. Our local beer scene is taking a while to blossom because there aren’t a lot of suppliers. There’s definitely a growing demand for it and quite a few bars have started to adopt craft beers, which is great to see. Tif Chan: In Hong Kong, the expat community and the overall population is much bigger, which means they’re able to drive the trends in drinking a lot faster – and with more variety. C: Have you noticed a difference in customers’ attitudes towards beer in recent months? DS: There are always people who come in just out of curiosity, but there’s also been an influx of beer enthusiasts who are really interested, and love talking to us about the history and origin of the different brews we have on offer. It’s certainly encouraging. TC: The majority of our customers who come in here are still expats in the 25-40 age range. We’re trying to connect a lot of small, local artistic groups together to help promote the creative industry.

C: Moving forward, what plans do you have in terms of expansion?

Kit Sun Co-Founder, Wolfpack Coaster: What’s the story behind Wolfpack? Kit Sun: I’ve been friends with this group of guys for 10 to 20 years – and we love drinking together. One day, we just decided that we should have our own place where we can drink, have good food and enjoy ourselves. C: What are the major differences in Hong Kong and Macaubeer scenes? KS: We don’t have a happy-hour culture here – going for karaoke later at night is more popular. This means that the knowledge and enjoyment of craft beer is growing relatively slowly. C: How have people received Wolfpack’s beer choices so far? KS: We’re still very young, so we constantly change our beer list to suit what’s most popular in the season. Right now, we have about 40 bottled beer choices and a few taps. The locals here don’t have much experience with darker or more bitter beers, so IPAs move quite slowly. Lagers still sell the best, definitely. C: Moving forward, what plans do you have to promote beers? KS: There’s been growing interest in the beer scene here, so we plan to partner up with some breweries in the future to have more beer events. Our recent tap takeover with Taiwanese craft brewery Le Blé d’Or was extremely successful and the bar was full the entire night! Read our review of Wolfpack on p.22.

KS:Wolfpack剛開業不久,因此不時更改酒單,以迎合 當季潮流並保持新鮮感。目前我們大概有40款樽裝啤 和幾款生啤可供選擇。由於本地人仍未習慣喝黑啤或 味道偏苦的啤酒,所以IPA並不暢銷,至於拉格啤固然 是銷量之冠。 C:未來會如何推廣啤酒? C: How do you hope to see the local beer scene improve? P: I hope bars and restaurants will improve the way they store, present and serve beer. Dirty glassware, oxidised beer and unregulated import practices are abundant in this city. Having said that, it’s a learning curve and I’m confident we will see better beer around town with time. C: Tell us about your latest venture, 852Beer. P: After working in the industry for a few years in Hong Kong, I’ve seen that great beers are being brewed in Hong Kong and great beers are being imported. What’s missing is the knowledge, specifically in bars and restaurants. 852Beer (852beer.com) aims to provide training for individuals and outlets on everything related to beer. We offer draught systems training, beer language training, menu design and educational events, all designed with one aim: for F&B outlets to serve their good beer even better. C: 你希望本土業界能如何改進?
