Second Draft 98 Tung Lo Wan Road, Tai Hang, +852 2468 2010

Don’t let its demure exterior fool you – with two separate kegerators and a cold room to serve their brews on 26 taps at three different recommended temperatures, this may be Hong Kong’s most sophisticated beer bar yet. The brews: Although largely dominated by local brewery Young Master Ales, you’ll also find a sizeable selection of hard-tofind imported beers on rotation, such as Renaissance’s Barrel-Aged Darth Saison ($70 for 330ml) from New Zealand. More adventurous beer drinkers can try some of the real ales on hand pumps – a more traditional method of tapping beer, served at 11 to 13 degrees. We love Young Master’s Bitter Oak ($60 for 330ml). The bites: Curated by May Chow of Little Bao, the menu is a telling reflection of her love of Asian-style dishes with a contemporary twist. With rather aromatic and distinctive appetisers, their house

fries ($68) arrive coated in cumin dust, takana and dried chilli, while their burrata ($138) comes with a spicy mapo twist. Our Shanghai Dip ciabatta ($98) is packed with deliciously braised pork, pickled cucumbers and a remarkable Scotch ale pork jus. Already making waves in the culinary scene, be sure to save a bit of room for their French toast served with creamy foie gras butter ($68). The short: Tai Hang has been long overdue for a proper taproom. Good food and even better beer? Count us in. We hope the arrival and success of Second Draft will herald a flurry of even more beerfocused bars outside of the overcrowded Central district. 別被它的木獨外表矇騙了,Second Draft內裡有 著兩個獨立的冷藏庫儲藏啤酒,還有個冷凍室用 以供應26款佳釀,每款均有3種不同的建議溫度 任君選擇。這裡,可能是香港最高雅的酒吧。

The biggest Beef & Liberty truly shines in a sprawling 4,700sqft Lan Kwai Fong space. With an outdoor terrace, high ceilings, an expanded bar experience, live DJs on the weekends and much more, it’s a wonderful bar option in the heart of Lan Kwai Fong. The brews: Quite reasonably priced for LKF, Beef & Liberty features five excellent beers on draught including the exclusive Moonzen Lemon Saison ($88), as well as others by Young Master, Brooklyn and Estrella Damm, and a range of year-round and seasonal brews in bottles ($65-75). The bar also does 2L growler fills. Intriguingly, there’s a creative range of boilermakers and other beer cocktails, courtesy of bar manager Pawel Mikusek (formerly of Lily & Bloom). The bites: The burgers are the main draw here, with classics including the Bacon Cheese ($125) – but don’t miss out on a new range of bar snacks and other delights courtesy of acclaimed group executive chef Uwe Opocensky (who most recently served

as executive chef at the Mandarin Oriental for nine years) and head chef Marcus Chant. Among the offerings are a delectable chicken liver parfait ($58) with maple syrup, a fairly salty pork crackling ($38) that would be great with beer, a pricey but delicious oxtail slider ($58) and a whimsical flower pot of vegetable crudités ($58). If you can make it through to dessert, the warm skillet cookie & cream ($68) is a must-try, with a delightful mix of white and dark chocolate and a thick cream coating on top. The short: Beer & Liberty has certainly upped its game here – and we’re happy to see a few LKF spots moving beyond the generic tourist-focused haunts into something we can all enjoy.

5 types of drinkers you can spot at a beer festival 5種你會在啤酒節中遇到的人

1. The Beer Newbie 啤酒新手 • Looks overwhelmed by the overload of beer choices 看上去好像被五花八門的啤酒種類弄得頭昏腦脹 • Tends to ask for recommendations based on macrobreweries 詢問推介時通常傾向選擇典型的大酒商 • Says “I want something fruity” but backs away from IPAs 說「想要喝果味較重的啤酒」,但聽到IPA就卻步 • Ends up (probably) going for a cider 最後(可能)選擇了汽酒

If spotted: Give them a hug – because we love people who try to be adventurous – and then recommend a golden ale or a saison. 遇到他們的話: 我們要鼓勵勇於嘗試的人,所以請送上一個擁抱,然後給 他們推介一杯golden ale或saison。

2. Foreign breweries tend to make an appearance at bigger festivals, so be sure to head to their booths first and try a brew you might not be able to get locally! 外國酒廠通常會參加較大型的啤酒節,因此入場後要先到它們的攤位,嚐一嚐在香港喝不到 的啤酒。

My pick: Red IPAs are starting to gain traction worldwide and it has become my go-to style. My favourite so far is the Liquid Mistress by Siren Craft Brew.

Definitely go with people who are frequent festival-goers. With the added effect of the alcohol, great fun is guaranteed. Remember, good beers usually run out very quickly, so grab any limited edition specials when you spot them!

If there’s a daytime session, try to attend it, especially for outdoor festivals – there’s nothing better than soaking in the sunshine and trying a bunch of great new brews. Also, the beer scene is full of friendly people, so be sure to chat with some of the brewers and importers. Don’t judge a beer by its label! There are so many wonderful, interesting beers at festivals that aren’t necessarily at the biggest or loudest booths. Ask questions about flavour profiles and the beer itself; you’ll usually end up learning something about the brewer or a funny story.

C: Briefly, can you introduce us to the members of “the world’s most popular boy band”? M: Uwe and I have been in the band since the beginning. He plays trumpet and alpine horn, and sings and acts in the funny parts of the show. He’s a carpenter in his normal life. I play bass guitar and euphonium, and MC on the stage. I run a renovation company in Germany.

C: You’ve been performing around the world for 30 years now. What are some of the most memorable moments? M: There are quite a few – these are some of the highlights for us:

Thomas Specht has been in the band since 1993; he plays guitars and is the lead singer. Aleks Maslakov has been a member since last year; he plays accordion and piano. Christian Zweng has been a temporary bandmate for Hong Kong since 2007, playing clarinet and saxophone. Ralf Bachus is a part-time drummer and technician in the band. And there’s Zoe Morisse, who is a singer in the band on request.

• For the opening of a music school in a historic castle, they had us on a specially made six-person platform at a height of nearly 100 metres and, with a crane, brought us into the inner courtyard while we played a song using wireless equipment.

• In 1992, we were the band for the Oktoberfest-style after-party for David Bowie and Midnight Oil following the last concert of their world tour.

• The opening party of Cathay City in Hong Kong, with about 10,000 people and groups representing all the Cathay Pacific destinations (like a jazz band from New Orleans and a reggae band from Jamaica) was a highlight. • Of course, the first trip to Hong Kong 23 years ago was very impressive for us as well! C: 你們已經在世界各地演出了30年之久, 有甚麼印象深刻的事嗎? M: 印象深刻的事還真不少,稍為說數件吧。 • 1992年,David Bowie和Midnight Oil的世 界巡邏演唱會尾場之後舉行了十月節式慶功 派對,我們獲邀擔任表演嘉賓。 • 有一所建於古堡的音樂學校,他們邀請我們 在開幕禮表演。那時候我們站在100米高的六 人平台內用無線設備表演,中途由起重機把 平台吊至內園。 • 我還記得香港國泰城的開幕典禮,當時有 一萬人分批代表國泰航空的航行目的地, 感覺有點像新愛爾蘭的爵士樂隊,也有點像 雷鬼樂隊。 • 23年前我們第一次來香港的感覺也還 歷歷在目。

C: 能簡單介紹一下「蜚聲國際的男孩樂團」 的成員嗎? M: Uwe和我從一開始便是樂團的成員,他吹奏 的是小號和阿爾卑斯長號,也會負責歡樂表演

C: For someone who hasn’t been to Germany for Oktoberfest, what’s it like? M: Oktoberfest in Munich is a long-standing event, which started in 1810 as a horse race to honour the marriage of King Ludwig of Bavaria and Princess Therese of Sachsen. Step by step, it grew and the breweries built tents to celebrate in. The traditions came back in recent times and people are wearing traditional clothes such as lederhosen and dirndl again. Nowadays, Oktoberfest is the biggest party of this kind in the world. People enjoy music and party in several big tents – some spanning two floors with a capacity of more than 12,000. For a few years, there has also been the historic Wies’n, where the Oktoberfest is held traditionally like it was in the 19th century. C: 可能有朋友從沒到過德國參加十月節,你能為他們介紹一下 這個節日嗎? M: 慕尼黑十月節歷史悠久,起源於1810年一場記念巴伐利亞國 王路德維希和泰瑞莎公主結婚的馬術比賽。後來節日逐漸廣為人 知,吸引一眾啤酒廠於節日場地搭帳篷慶祝。十月節的傳統曾淡 出歷史,但最近又開始復興,參與慶祝的人會穿著如皮革褲和緊 身連衣裙等傳統服飾。現在十月節已是同類型節日裡最盛大的派 對。來派對的人可以在眾多大型帳篷內享受音樂和盡情享樂,有 些兩層帳篷更能容下多達12,000人。曾經有數次十月節以仿古主 題舉行,傳統佈置與活動讓人彷彿置身19世紀的十月節。

C: What do you remember from your first trip to Hong Kong for the Marco Polo German Bierfest? M: It was a very impressive trip for all of us. Everything was new, and so big and light-filled. On the plane, we had already drunk a bit too much. The hotel picked us up in a stretch limousine and served some drinks as well. After arriving at the hotel, we had an interview with a newspaper and they asked us about the history of Oktoberfest. We were a bit drunk, so we made up a story for the reporter and it was printed for quite a few years in the newspaper – very funny to read this story several times! C: 你第一次來香港參與馬哥孛羅德國啤酒節的時候,有甚麼 特別讓你印象深刻? M: 那次旅程對我們全團都非常震撼。映入眼裡的都是新奇玩意, 還有五光十色的摩天大廈。在機上已經喝得半醉的我們,在酒店 接送的轎車裡也喝了不少。去到酒店就有報社員工採訪,問及 十月節的歷史。或許是酒精作祟,我們亂編了一個故事,然後在 接下來數年的報章上都刊登了,我們看見一次就會笑一次。

C: Have you seen the Hong Kong crowds change over the years? M: In the beginning, we had about 100 people every night – mostly foreigners, sitting on little chairs at round tables in front of the hotel entrance, which served as the stage. With time, the party grew and the mixture changed to include more locals. At the moment, it’s about 50/50. Also, at first there were only people in black suits, but now you can see more and more Bavarian dress such as lederhosen and dirndl. The party has a very distinct mood, somewhere between the traditional Bavarian style and an international style – pretty unique in the world. C: 這麼多年來,香港的群眾有改變嗎? M: 一開始的時候,每晚大概有100人吧, 大多都不是本地人。他們坐在圓桌旁的小椅 子,看著當時的舞台——酒店大堂。隨著時間 過去,慶祝派對的規模變得越來越大,觀眾也 開始多了些本地人,當時的比例大概是一半一 半吧。以前來派對的人都穿黑色西裝,但是現 在越來越多人會穿巴伐利亞服飾慶祝。十月節 有種特別的氣氛,在傳統的巴伐利亞風格當中 混合著國際節日的感覺,在世界眾多節日中 別具一格。

C: Audiences here really love your Cantonese-language cover songs. Were they hard to learn? M: It’s quite easy to sing – you just have to follow the melody and don’t need to worry as much about the different sounds of the words. Playing that kind of music was a bit difficult, though, because we weren’t used to that, but we had a good teacher in the former resident manager of the hotel, Charles So.

C: 觀眾都很喜歡你翻唱粵語歌呢,學習演唱粵 語歌會很難嗎? M: 其實挺容易的,只要跟好旋律就不用擔心字 的聲調會錯。但是因為我們不習慣粵語歌的曲 風,所以演奏方面倒是比較困難,幸得前駐酒 店經理Charles So悉心教導我們。

C: What are some of your favourite beers? M: For wheat beers, I like Erdinger Weißbier and Paulaner – it’s even nice to mix with Coke, which is called Colaweizen or, in our dialect, Häfele. For normal lager, it’s Augustiner Helles, Augustiner Edelstoff and Paulaner. C: 你有特別喜歡哪些啤酒嗎? M: 小麥啤酒有Erdinger Weißbier和 Paulaner,這兩種啤酒跟可樂混在一起也很好 喝,混出來的飲品稱為Colaweizen,我們方言 則叫它做Häfele。至於我喜歡的拉格啤酒就有 Augustiner Helles、Augustiner Edelstoff和 Paulaner。

C: Your enthusiasm for the stage is infectious – how do you keep that up night after night? M: All we have to say is one word: fun! Love what you do and you won’t lose the energy to do it. C: 你在台上展現的熱情能讓觀眾也沸騰起來, 但是連續數個晚上都要表演,你是如何保持 熱情的? M: 享受!只要喜愛你做的事,熱情自然就不會 減退。

C: Any surprises in store for this year’s festival? M: Let’s see… if I told you, it wouldn’t be a surprise! C: 今年十月節有準備甚麼驚喜給觀眾嗎? M: 嗯……說出來就不是驚喜了!
