Before launching the first issue of Coaster, we thought we had a pretty good idea of what the beer scene was like, but now we know for sure – our city is ready for beer. What is one faux pas that most bars commit when serving beer? 多 酒 啤酒

“I don’t usually complain about too much head, but many bars go for the European style of serving, which is not appropriate for most beers. In my opinion, most beers should be served up to the brim with a finger of froth.” 「我通常不會抱怨啤酒泡沫太多,不過許多酒吧皆跟隨歐洲的斟酒方式,普遍而言其實不太合適。 大部分啤酒應斟滿至杯邊,酒泡則保持在一隻手指的厚度。」

Ryan Chan What was the first beer you tried? Either Tsing Tao or Blue Girl! Afterwards, I moved on to ciders which my friends introduced to me.

啤酒 款 應該是青島或藍妹之類的啤酒。其後經 朋友介紹下,轉投蘋果酒的懷抱之中。

What is your favourite beer style so far? Stouts! But at the same time, I like lagers and IPAs as well. I am at the end of two extremes!

啤酒 最愛黑啤,不過拉格啤和IPA都深得 我心,口味很極端吧?

How do you see the HK beer scene changing? Well, more and more major media groups are covering craft beer, which leads to more people in town noticing and learning more about craft beer. I am pretty optimistic about its staying power. It will be like coffee. Once you’ve tried a good brew, you can never go back. What I mean is, you will never forget how special and interesting craft beer can be! The community will only stay and grow even larger with time!

Brews & Bites 飲食攻略

With beer bars popping up all around town, it was inevitable that the movement would slowly breach into Kowloon! We venture over to ‘the dark side’ to experience WOFT’s enormous beer and cider menu. The brews: With more than 10 pages of brews to choose from, the manager deftly suggests a few popular pairings. We settle on Coedo’s sweet, caramel Beniaka ($73) to start. Local brew Mak’s Sugarcane Stout ($75) washes down our meaty main perfectly, and we end the night with crowdfavourite Delirium Tremens ($58).

The bites: Their signature cheese fondue with black truffle ($198) came with an assortment of dips including pasta, baguette and broccoli. The fondue arrived a little cold, and although we had to request for it to be reheated, it went down a treat. We loved their chunky Wagyu beef burger ($83), but be sure to check out their fusion pasta with clams and mushroom ($98) as it came with an interesting pickled twist! The short: Service is efficient and they boast some unique beers on their menu. If you’re in the area, it’s a solid place to check out.

啤酒吧在本港乘勢而起,更逐漸入侵九龍各處! 這次於旺角黑夜中探索,赫然發現WOFT備有琳 瑯滿目的啤酒及蘋果酒。 啤酒: 一看十多頁厚的酒單,不免有點花多眼 亂,經理就為小編推介了多個人氣酒食搭配。 首先點選富香甜焦糖味的Coedo Beniaka紅赤啤 ($73),之後來一杯「土炮」麥子甘蔗黑啤($75) ,平衡肉食的飽滯感,最後則以大獲好評的比利 時啤Delirium Tremens($58)為晚餐作結。 美食: 招牌菜為黑松露芝士火鍋 ($198),佐以意 粉、麵包及西蘭花,雖然上菜時稍稍冷掉,但經 加熱後仍然滋味無窮。和牛漢堡 ($83) 啖啖肉夠 惹味,而白汁蘑菇蜆肉狗仔粉 ($98) 配搭新奇有 趣,不得不試! 小結: 酒吧服務出色,供應多款特色啤酒,是區 內聚腳的好地方。

Roughly translated to “pretty damn great”, their punny Chinese name elicits a few giggles from the group. 65 Peel is an airy, inviting gastrobar, complete with cool fluorescent installations and delicious scents wafting over from their open kitchen. The brews: We love walking into a bar and seeing a beverage menu dominated by local brews. There’s a delightful sense of community and pride as the staff enthusiastically recommends beers to suit your palate. We recommend trying a mix of both local and import brews. Draft beers go for $80 for a little under a pint, while their bottle prices vary.

The bites: As the weather’s been heating up, we enjoyed their Hiyayakko chilled tofu ($75) without complaints. Their twist fries ($70) came in a huge serving and were delightfully crisp. For mains, we fell in love with their lobster hotdog ($158) as the typical hotdog bun was substituted by a traditional Chinese fried cruller. Talk about crunch! With our bellies already bulging, their highly recommended Asian-influenced pasta with scallop and lobster sauce ($168) topped off our meal nicely. The short: Great beers and unique dishes with a Chinese twist. If you’re looking for a bar that’s true to our city’s colourful culture, 65 Peel is it.

Shaheen Budhrani: What is the situation with glass recycling at the moment? April Lai: Glass occupies around 3% of the landfill. At the moment, only around 10% of glass is being recycled. In Soho, Green Glass Green provides glass bags, and in Wan Chai we provide glass bins. Some bars are very proactive and participatory, they sort their rubbish and put them in separate bins. Some businesses, however, will say, “Oh, it’s not my problem!”, as there is no legislation in Hong Kong that demands restaurant and bar owners recycle glass bottles. Toby Cooper: I think a big issue is that a lot of R&B just throw everything in a pile and say they just don’t care. We have a drop-off system at The Globe, as there’s no glass bins in the Soho area. If anyone wants to drop off their glass bottles here, we put it in with our recycling. Maybe that’s something retailers can implement. Daniel Gallie: We do collect and reuse some of our bottles, but it’s obviously very labourintensive. We clean them all by hand and peel off the labels ourselves. Tracy Gan: Our main store is located in Sai Kung, so it’s always been more of a logistics issue. A lot of our customers have definitely enquired about recycling, and they’ve been pushing us to do it.

AL: Transportation is very costly, and our funding is not enough to cover anywhere more than the main bar districts. TC: There needs to be a bigger movement to convince more funding to come down. There’s going to be a levy imposed on bottles that are imported. How that levy is then used is the most important question. Is it really going to be effective if the importers are the ones being charged? Adam Brough: What concerns me is that, with plastic bags, the cost was directly on the consumer, so they were very aware. With the glass bottles, is it really in the consumer’s best interest to return bottles if they don’t get anything back for it?

SB: How about cans? Are they a solution? AB: They’re certainly easier to recycle than bottles. Transport-wise, they take up less space, and you can get more of them into fridges. A lot of wasted energy goes into cooling a bottle downwards whereas with cans, it goes straight into the liquid to cool them down. We’re very pro-cans. DG: We would have loved to go into cans but the costs for ordering was way too high. It was about half a million cans minimum per design! The other issue was the equipment that you’d need. There’s a lot more options available now since we started looking as micro-canning has really exploded in the United States. TG: Some breweries are really pushing the frontier now where they’re just producing in cans, and they put a lot of effort into the designs and marketing, and because the packaging is beautiful, it catches people’s attention, and then that gives our consumers incentive to try the beer. AB: In bars, the beer is poured out into a glass anyway. With craft beer, the consumers want to see and smell the flavours, as opposed to standard macrobeers where you can drink straight from the bottle and you don’t really miss much. TC: Cans have always had a bad name because they used to flavour the beer. However, developments in cans have changed that, and they absolutely don’t anymore. It’s now a much superior product as they’re easier to recycle and there’s no oxidation or light contact, but for consumers to understand that, well, that will just take some education.

Coaster: Tell us about AmeriCraft Imports! Laurie: I founded AmeriCraft Imports in December 2011- a few months after I moved to Hong Kong. I don’t have any co-founders, but my husband has been incredibly helpful and supportive of the business. The craft beer scene had been taking off all over the world, so I thought craft beers were bound to take off in Hong Kong as well. C: What were some of the major challenges you encountered initially when trying to introduce craft beer to bars and restaurants? L: When I started the business, not many people had heard of craft beer and many had a negative perception of American beers, having only been exposed to mass produced American lagers. Things have changed dramatically since then. Not only are people familiar with American craft beers now, but many are requesting specific American brands from us! Coaster

C: What does a typical day in your life look like? L: Since I had a baby in November, my typical day has changed a little! I wake up at 6:30, and between 6:30 and 12, I am home alternating between taking care of my baby and responding to work emails and texts. After lunch, I usually go to the office or have meetings with customers or others in the industry. We have team meetings every other week where we all catch up and taste new beers. After my baby goes to bed at 7pm, I try to go out to any beer events if I have the energy! Socializing and sharing beers with others in the industry is my favorite part of the job. C: What’s your prediction for our local beer scene? L: I think the craft beer scene is going to continue to grow and we are going to see a lot more local breweries opening up. I definitely think it’s here to stay! C

Tipple Trail: Stanley 覓酒遊蹤:赤柱 Every so often, it’s nice to escape the skyscrapers. Come summer, one of our favourite locations to head to is down south in Stanley. It’s an easy 20-minute ride with Minibus 40 from Causeway Bay - a much better option than the 1-hour bus journey from Central. Wandering through the colourful markets is always a pleasant, if not slightly hectic, experience. It’s easy to see the growth in the craft beer community when you look at the overwhelming number of growlers and bottles laid around the space during this year’s 4th Annual Homebrew Competition! Hosted by our very own Hong Kong Homebrewers Association, a little over 140 homebrews were entered this year – double the number from last year.
