No, we didn’t go around in red berets, speaking to each other with terrible French accents and throwing le in front of every le word. Who did you hear that from? We’re taking this opportunity to freak out a little that after copious amounts of drinking, and almost half a year of planning, we’ve finally gotten Coaster off the ground. When Mimi, Carlo and Audrey decided to explore the United Kingdom two years ago, they never imagined their impromptu trip would birth one of the Philippines’ most anticipated local craft beer festivals. Rich caramel and a waft of fruitcake on the nose with a lightly carbonated and round body. We can see this pairing well with a big hunk of steak.
Although the scent of roses hit us immediately, it was surprisingly light and refreshing on the palate. We suspect this would be great for converting cocktail lovers to beer drinkers.
A good amount of vanilla and light florals on the nose with a smooth and creamy body. We got a tinge of citrus at the end which helped to balance out the palate.

A lot of citrus notes on the nose but that didn’t really translate onto the palate. Body was smooth and slightly bitter. Would pair well with heavier sandwiches.
This poured a deeper gold than we expected from a cider. Brewed with dedicated cider apple varieties, it was both crisp and tart on the palate. Bonus: it’s gluten-free.
柑橘香氣雖芬芳四溢,味道卻稍為平淡,口感順滑兼 略帶苦味,與較「重口味」的三文治應該相當匹配。

Fermented in champagne bottles for up to 6 months underground, the strong notes of honey and butter round out a smooth and rich body. Very potent but delightfully easy to drink.
Not much on the nose. We can taste the mild grassy and bready notes through the extreme carbonation if we try really hard. It’s not a complex beer by any means, but easy drinking and very accessible.
封存於香檳瓶內,在地底發酵長達6個月,帶出香濃的蜂蜜和 牛油味道,令豐盈順滑的酒體更為圓滿。酒精度較高, 卻十分順口。
香氣並不明顯,綿密的氣泡間隱約透露淡淡的青草及麵包香, 層次未算豐富,勝在易入口,夠普遍。

Which beer style would you recommend to a novice drinker? 您會向新手推薦什麼風格的啤酒?
“I’d recommend a pale ale, probably something from Australia or New Zealand, as they tend to be a bit lighter & fruitier than those from America. Alternatively, if someone wants something a bit different, a lighter wheat beer would be a good starting place.” 「我會推薦淡色愛爾啤酒,部分來自澳洲或紐西蘭的,味道比美式稍淡,果味卻更濃郁。 如想試試不同口味,較為淡口的小麥啤亦是入門首選。」

Priya Acharya I’ve been drinking craft beer for a while now, but one of the very first standout beers I tried was the Camden Hells Lager brewed by Camden Town Brewery in London. I was with my boyfriend enjoying a rare, gloriously sunny day when we stopped to quench our thirst at a small cafe at Somerset House. He recommended the lager as it would be relatively light and easy to drink. I loved the taste; it was crisp and refreshing, perfect to drink on a warm summers day, and not too hoppy!
我鍾情於手工啤酒已經好一段時間,起初最欣賞的 一款啤酒,就是倫敦酒廠Camden Town Brewery 出品的Camden Hells Lager。難得有日陽光明 媚,我和男友出外閒逛,並到Somerset House一 間小店小酌一番,他介紹了這款較淡兼易入口的啤 酒。清爽怡人的味道深得我心,啤酒花味不會太 重,於暖洋洋的夏日來一口確是賞心樂事。 從此我就與手工啤酒結下不解之緣,之後嚐過不同 類型和風味的酒款,從中亦可發掘到最適合自己的 口味及啤酒種類。雖然如此,但我時不時都會喝商 業啤酒,更能夠細味其與手工啤之間的差別。
That was a great starting point into craft beer for me and over time, I have tried a variety of different styles and flavours. I think that’s a great way to figure out your palate and what type of beers you prefer. I still enjoy a commercial beer every now and then, but I can definitely appreciate the quality of taste between craft and commercial!

Brews & Bites 飲食攻略

Established in 2007 by James Watt and Martin Dickie, and uh, Bracken, their pup, BrewDog has gone on to become the largest independent brewery in the United Kingdom. Naturally, we were ecstatic to pop in and see what was on offer! The brews: A total of 14 gorgeous taps line the bar. Need we say more? If you’d prefer something from their bottle list, I won’t even mention their refreshing flagship Punk IPA ($60), or the gluten-free Vagabond Pale Ale ($55). I certainly wouldn’t encourage you to try the world’s strongest canned ale, their incredible Black Eyed King Imp ($160) ‘cause it was (how do we put it delicately?) mindblowing. The bites: Their crisp and fluffy fries come with a spray bottle of hop-infused

malt vinegar ($48). The bucket was empty within seconds. Next on the list was the homemade flat bread with red pepper hummus ($48) which we found slightly too dry to enjoy. We couldn’t resist their maple porter house-bacon plate ($108) served with pretzels and beer-made condiments! At this point, though we were struggling to finish the gloriously large portion of pork, we soldiered on and ordered the stout ice cream smores with homemade beer marshmallows ($98). Best decision ever? Yes. The short: Substantial beer list with rare brews on offer, food very decently priced for the area and team is knowledgeable about beer and food pairings.

They’ve declared war against the ‘mainstream industrial beer tyrants’, launching their third venue in the heart of our city’s new dining district – Kennedy Town. A recent marketing campaign urged customers to bring in their industrial beer cans to swap for a proper crafted beer! Meow, claws out. The brews: They’ve pushed the bar higher for their latest branch, boasting 15 gleaming taps of the good stuff instead of their usual 11. We started the night with a flight of their house brews that included a Summer Ale, Kung Fu Lager, Bohemian Pale Ale and Liberty IPA ($150). Although we loved the two hoppier options, we can’t help but feel their lager went down maltier than expected. If the list on the board doesn’t
impress you, Craft Brew & Co also offers a big bottle range and various beer cocktails. The bites: We’re big fans of their Black Forest wurst ($85) which came stuffed with sauerkraut and onions but give their Spanish chorizo ($88) a miss as it was rather dry with a weird, chalky texture. The star of the show was, perhaps unsurprisingly, their juicy and chunky house bacon cheeseburger ($138)! It’s even offered on their lunch menus with a starter and drink for just $68, so definitely try to pop by then! The short: Creatures of habit certainly won’t be disappointed by their expansion. Great value lunch sets, decent beers and a lively location to hang out with colleagues and friends alike.

The local craft beer scene was thrown into a frenzy right before Christmas last year after a news outlet mistakenly reported Moonzen Brewery shutting down. Thankfully, it turned out to be just a big misunderstanding. Coaster: Tell us a bit about your story! Michele: We met 10 years ago in Beijing while studying, though our first ever homebrew only happened 3 years later when we moved back to Hong Kong. Laszlo: Michele loves baking, she makes these amazing sweets and cookies. I wanted to pursue some ‘manly cooking’, so friends from the U.S. or the U.K. would bring over some yeast and hops whenever they visited as shipping was incredibly expensive back then.
《Coaster》:可否分享一下你們 二人的故事? Michele:我十年前在北京讀書時結 識Laszlo,之後一同回港定居, 並於三年後創立自釀啤酒品牌。 Laszlo:Michele最愛焗甜點和餅 乾,而我就醉心於自釀啤酒這種 「男子漢料理」。以前每當有朋友從 英、美國遠道而來,我都會請他們 順便帶來酵母和啤酒花,因為原料 運費實在貴得嚇人。
M: We’ve experienced a few explosions over the years but our first success was a Belgian double with Manuka honey!

C: How did Moonzen come about? M: We were both working and it was stable, so it took us a really long time to make the leap! We especially wanted to do something that was close to our hearts.

L: When we met in China, we travelled a lot and went to all these little villages where there was a different “Door God” at every door. We really liked the fact that with such a singular cultural image, there can be so many varieties. We found that to be a very good representation of Chinese culture.

M: The symbolism as well! They’re meant to bring good luck, protect the family and ward off evil. They represent integrity, nobility and strength, so we thought it would be something valuable to represent.

C: Tell us more about the concept behind your beers. L: We want to showcase a Chinese identity through our beers. You’ll never see us brew a pumpkin spiced ale – that’s way too American. We recently did a Sichuan porter with real, spicy peppers. Moving forward, no other beer we brew will be just a Pale Ale or just an IPA. M: When it’s so personal, it’s an extension of yourself. C: What were some challenges you faced? L: Initially we made a lot of beers. We tried a ton of different recipes and were just brewing like crazy. In the previous operation, there was not enough room to push the brand outside of the box. Now that we’ve expanded operations, we definitely are going to start looking for human talent. Michele and I are the core unit of the brewery but we still need help. M: One of the best and worst things about the job is working with Laszlo 24/7! Back in the old brewery, it was so small that even with 3 people it was still a bit tight. We’re still in transition now. It’s amazing to work together because accompaniment is very important. It’s hard to run a business without someone by your side. L: Exactly. It doesn’t necessarily have to be your wife, but you definitely need a core team, people that share your values and vision. M: When you’re working together, it’s hard but it’s fun. We like to label and make boxes – we consider this our ‘brewery gym’, but it’s difficult because it’s tough to switch off. Having said that, I think once our roles were defined, it got easier. L: Without Michele to ground me, I’d just be this crazy brewer, brewing lots of wild stuff!

C: What do you think is missing in Hong Kong’s beer scene? L: It’s definitely improved much more compared to what it was 4 years ago. What’s missing is really just cultural education. We need to stop associating craft beer with a certain socio-economical class. M: It’s all about education – learning about how the beer was made and the effort that goes into it. People don’t question it when you pay $40 for a cup of coffee. It’s already a very mature, established product. With beers, it will definitely come with time. L: Restaurants definitely need to learn as well. M: Absolutely. You can go into any restaurant and the wine list is so precise and curated but the beer list will be just the regular commercial bottles. It makes no sense. C:你認為本土啤酒界缺少了什麼元素? L:相比起四年前,本地啤酒界發展已見起色, 惟啤酒文化方面的教育仍然不足,希望大眾 不要把手工啤酒與特定社會階層畫上等號。 M:教育確實是一大關鍵,應讓大眾了解啤酒的 製法,並領略到當中所付出的辛勞和汗水。有 人覺得一杯咖啡要價$40不足為奇,卻不願意 花同樣價錢買一支啤酒。手工啤酒歷史悠久, 發展亦相當成熟,相信假以時日將掀起 全城浪潮。 L:食肆亦需要出一分力。 M:沒錯,不少餐廳皆提供選擇豐富的葡萄酒, 酒單介紹鉅細無遺,但啤酒方面只有寥寥可數 的商業品牌,似乎不太合理。

C: What’s the big dream? M: We would love to explore a form of sustainable farmhouse-style brewing. A closed loop ecosystem that’s a community space where people can grow their own crops. That’s definitely the big, big dream! Incorporating the use of land with our brewing. L: Maybe in Chapter 3 or 4, we’ll be able to incorporate more of this dream into how we operate. For now, we’d love to do some collaboration brews with the other guys. Relationships are so important. Craft beer is supposed to be about the community, it goes hand-inhand with the people. Thomas Lau is a hard man to track down. One week he’s in Scotland training with the BrewDog team, and the next he’s in Japan discussing the reception of Coedo Taproom in Hong Kong. You’ll be lucky to catch Thomas running between bars and clients, as on top of everything, he’s also the President of Craft Beer Association of Hong Kong (cbahk.org). 劉心暉凡事親力親為,這位大忙人經常要穿州過省,有時遠赴蘇格蘭與BrewDog團隊 進行培訓,轉頭又到日本討論香港Coedo Taproom的業務事宜,所以能夠採訪他本人實屬 難得。此外,他亦是香港手工啤酒協會(cbahk.org)的主席。

Where the beer flows… 啤酒的「必經之路」...
Coaster: As one of Hong Kong’s most influential individuals in the beer industry, we’re curious... what does a typical day in your life look like? Thomas: “I wake up at around 7.30am to help get my kids ready for school. I don’t see them a lot at night because my hours are pretty crazy so I try to catch up with them in the morning. I get to the office around 10am where I just catch up on emails, conduct sales meetings and liaise with clients. Usually around 2pm I’ll be out in my bars, meeting bar managers and tasting beers. On any given day, I’ll have about 30 different beers in the fridge waited to be tasted! By 8pm I’ll either be rushing home for dinner or dining on location. I try to go behind the bar as much as I can so that I can engage with customers and try to see what they appreciate. I still enjoy serving customers!”
《Coaster》:作為本土啤酒界最具影響力的人士 之一,可否跟大家分享你一天的生活? 劉:我每朝大約7:30醒來替孩子準備上學,由於 工作關係,夜晚較少機會陪他們,所以我每朝盡量 抽時間與他們相處。 早上大約10點回到辦公室後,便開始回覆電郵、 開會討論銷售事宜以及聯絡客戶。通常到了下午 2點左右,我會親身到自己的酒吧,與經理開會並 試飲啤酒,有時更需要試飲差不多30款啤酒! 直至晚上8點,我會趕回家中或者在外用餐。 我會盡量留在酒吧與客人打打交道,探聽他們的 評價,從中亦發掘到不少樂趣。

C: What’s the most important element of running a beer bar? T: “I want my team to be conversation starters about beer, so I try to talk to them a lot and give them a lot of beer training. One of the most important ways to be successful is to be a good brand ambassador. C: How do you think the beer scene in Hong Kong will develop? T: “I think beer is here to stay. We’re maybe 2 to 3 years behind the boom in the States but we’re going to keep seeing more and more craft beers in bars. I think to really progress, we first need people to know that craft beer exists. Everyone knows the difference between table wines and fine wines and are willing to pay thousands of dollars for a single bottle. With beers, people still have this old-fashioned idea that it shouldn’t be worth more than $30. I don’t expect everybody to like craft beers, but at least they should understand the difference and know that it’s really nothing new! Tipple Trail: Tong Chong Street 覓酒遊蹤:糖廠街 Spring is around the corner, and everyone’s favourite outdoor market, Tong Chong Street Market (TCSM), is returning! We took a little day trip to Quarry Bay, scouting the often-times-neglected foodie scene and their brews on offer before this quaint little street starts to get crowded.

Coming directly out of Exit A, it’s a short minute walk straight ahead to our destination. We wander all the way to the end of the street before deciding to slowly eat our way out.

It took us a mere 15 minutes to reach Quarry Bay from Central via the MTR. I’m starting to wonder why we used to shudder in distaste at the thought of travelling ‘so far from the city’ when the trip really just flew by. Man, we have it so easy in Hong Kong in terms of public transportation.
正值春暖時節,位於鰂魚涌的糖廠街市集矚目登場。趁人流湧至之前,我們先到 此人氣戶外市集尋寶,為大家發掘平常可能擦身而過的美食及佳釀。 我們由中環乘搭港鐵到鰂魚涌,只需15分鐘。鰂魚涌在不少人心目中是個偏遠 地方,但其實香港交通四通八達,彈指之間即可到達。 由港鐵站A出口徒步僅數分鐘,便抵達糖廠街。我們展開地毯式搜索走到街邊盡頭 後,就正式展開今次覓酒之旅

The beer menu, though rather large, lacked anything local which was a bit of a letdown. Their silver lining came in the form of Happy Hour. Bottled specialty beer prices ranging between $38-$59 – very decent indeed! Their pricing on bar snacks, on the other hand, took us a couple more beers to accept. We personally found it outrageous to pay $138 for a couple of pita slices and dips. 啤酒選擇多不勝數,卻獨欠本土出品,稍有遺憾。幸而Happy Hour時段重燃起我們的激情,特色樽裝啤售價介乎港幣38元至 59元,相當實惠。佐酒小食定價偏高,單是扁麵餅配蘸醬就索 價港幣138元,多點一兩支啤酒可能更划算。

We grabbed a pint of Asahi for $54 at Happy Hour price, which was refreshing, if not boring. A bit surprising that a location claiming to be a ‘typical American diner’ doesn’t serve any decent American beers. An IPA would have been fantastic here to go with our Dirty Mexican Hotdawg ($70).

As our chow-fest drew to an end, we slowly made our way to our last beer-stop on the list. The set menus looked delightfully tempting, though they also offer various à la carte dishes. We’ve had a long day of eating, so we opt for their Wagyu Steak Sliders($135) along with a pitcher of Young Master’s Pale Ale($150) to share.

Chris Wong (aka “Beer Dumpster”) is a co-founder of HK Brewcraft – the homebrew supplies headquarters in Hong Kong. When not binge drinking, he is a BJCP recognised beer judge. He is also involved in several other beer-related projects in town including TAP – The Ale Project, Beer & Fish, and Hitachino HK Brewery. 醉心鑽研啤酒的Chris Wong黃思偉,有「Beer Dumpster」之稱,是HK Brewcraft創始人之一,於香港打造出自釀啤酒的大本營。Chris不單是權威機 構BJCP認可的啤酒評審員,亦在港主理TAP – The Ale Project、Beer & Fish及 Hitachino HK Brewery(常陸野貓頭鷹啤酒)等多個啤酒界項目。

Water makes up 90% of a beer. Minerals in water can directly and indirectly affect the flavor, aroma, mouthfeel, color and clarity. Water manipulation can open a whole can of worms for a beginner home brewer. The bottom line is to start brewing with clean water that is drinkable.

Famous Water Profiles: • Pilsen – low hardness and alkalinity - suitable for beers with mellow malt flavors and hop bitterness. • Burton-on-Trent – high in calcium and sulphate - suitable for pale but hoppy beers. • Dublin – high in bicarbonate suitable for dark and malty beers.

The brewer must select the best strain and handling procedures to guide the yeast to create the desired beer aroma, flavor, mouthfeel, clarity and alcohol level.

After all the drinking we had to endure while putting together this issue, we decided to inject some healthiness into our lives by enlisting the help of fitness extraordinaire Daniel Strange. 探索五光十色的啤酒世界同時,偶爾亦需要抽離一下,放下酒杯動動筋骨。 今期特地徵詢健身專家Daniel Strange的專業意見,向大家傳授健康秘訣。
PERSONAL PROFILE 個人簡介
A couple of years ago, Daniel pushed away his love of sport in pursuit of a life in the business world. Ultimately, this made him accept that he wasn’t cut out for the corporate office environment and so bounced quickly back into his personal training career. Coming from a background in team sports, he’d taught himself how to train and recover while minimizing injuries, and he uses those same techniques to help his clients today. Of course, he’s also added a plethora of accolades and certifications to his portfolio including the NASM, CPT, CES, CAFS and NSCA. 幾年前Daniel棄武從商,忙於工作而忽略心愛的運動。不過, 他始終對辦公室環境無所適從,於是不久後便從事私人健體教 練。Daniel曾參與多項團體運動,深明如何從訓練及康復過程中 減輕受傷機會,現藉著自身經驗幫助客戶。他獲得多項業界殊 榮與認證,包括NASM、CPT、CES、CAFS及NSCA, 實力毋庸置疑。
