Mabuhay, ผมไปฟิลิปปินส์ครั้งแรกเมื่อสิบกว่าปีที่แล้วเพื่อตัดสินใจที่จะเริ่มงานใหม่กับ บริษัทอเมริกันแห่งหนึ่ง ซึ่งมีสำนักงานสาขาและโรงงานผลิตเครื่องครัวเชิง พาณิชย์ที่นั่น หลังจากที่เริ่มงานในประเทศไทยอยู่ปีเศษ ผมก็ถูกย้ายไป ดูแลบริษัทที่อยู่ ในช่วงการเปลี่ยนแปลงผู้บริหารแบบฉับพลัน การทำงาน ท่ามกลางความขัดแย้งและความหวาดระแวงกัน ทำให้งานดำเนินไปอย่าง ไม่ราบรื่นโดยเฉพาะในช่วงที่ผ่านวิกฤติเศรษฐกิจครั้งใหญ่ ในเอเชียไปไม่ นาน พวกเราหลายคนคงจะจำกันได้ถึงเหตุการณ์ ในช่วงนั้นที่บริษัทต่างๆ ต้องปรับลดพนักงานลง ส่วนพนักงานที่เหลือก็ต้องทำงานหนักขึ้นอย่างที่ก็ ไม่รู้ว่าจะได้ทำงานต่อไปอีกนานเท่าใด แต่ท่ามกลางความไม่สบายใจนี้ สิ่งที่ผมประทับใจจากการอาศัยอยู่ ในประเทศ 7,000 เกาะแห่งนี้ ก็คือความมี น้ำใจของชาวฟิลิปปินส์ ความเป็นคนอารมณ์ ดี สนุกสนานร่าเริง การร้องรำทำเพลง ดูจะ เป็นเอกลักษณ์ของชาวฟิลิปปินส์ จึงทำให้นัก ร้ อ งและนั ก ดนตรี เ ป็ น สิ น ค้ า ส่ ง ออกที่ ส ร้ า ง ความบั น เทิ ง ให้ กั บ คนทั่ วโลก สร้ า งรายได้ และชื่อเสียงให้กับประเทศไม่แพ้อาชีพอื่นๆ ที่ เราจะได้เห็นชาวตากาล็อกกระจัดกระจายอยู่ เกือบทั่วโลก ความสุขอีกอย่างหนึ่งในช่วงเวลานั้น ของผมก็คืออาหารการกิน ไม่ว่าจะเป็นซุป

สินิกัง อโดโบ ปลงบังงุด จนถึงเครื่องดื่ม อย่างมะม่วงดิบปั่นที่ไม่เหมือนใคร ร้านกาแฟในกรุงมะนิลาก็เป็นสถานที่ ที่เกี่ยวข้องกับชีวิตประจำวันของผมโดยตลอด ตั้งแต่ร้านกาแฟสตาร์บัคส์บนที่พักระหว่าง ทาง (Rest Area) จาก Markati ไป Binyan Laguna ที่ตั้งของบริษัทที่ผมทำงาน หรือร้าน กาแฟ Allegro Coffee ที่ Glorietta ซึ่ง ปั จ จุ บั น ปิ ด ไปแล้ ว ก็ เ ป็ น สถานที่ ที่ ผ มนั ด ประชุ ม พนั ก งานขายและนั ด พบลู ก ค้ า อยู่ บ่อยๆ พูดได้ว่าประสบการณ์ ในการใช้ร้านกาแฟเป็นที่ทำงานของผมเริ่ม

ขึ้นที่นี่ ผมได้มีโอกาสกลับไปกรุงมะนิลาอีกครั้งเมื่อไม่นานมานี้ ทำให้ ได้ เห็นถึงความเปลี่ยนแปลงอย่างเห็นได้ชัด ศูนย์การค้ารูปแบบใหม่ถูกสร้าง ขึ้น ร้านกาแฟแบรนด์ ใหม่ๆ มี ให้เห็นมากมาย นอกจากสตาร์บัคส์ ซึ่งมี จำนวน 150 สาขาในปี พ.ศ.2550 แบรนด์ดังอย่าง Seattle’s Best Coffee และเชนโดนัทชื่อดังอย่าง Krispy Kream Donut & Coffee ก็เข้ามาเปิด ตั ว อย่ า งใหญ่ โ ต สร้ า งความคึ ก คั กให้ กั บ วงการกาแฟที่ นั่ น แบรนด์ ดั ง

ท้องถิ่นอย่าง Figaro Coffee และ Bo’s Coffee ที่มีรสชาติและรูปลักษณ์ ไม่ด้อยไปกว่ากัน ความคึกคักของร้านกาแฟจะเห็นได้จากศูนย์การค้า Bonifacio High Street ซึ่งเปิดได้ไม่นาน มีร้านกาแฟเรียงรายในระนาบ เดียวกันไม่ต่ำกว่า 4-5 ร้าน การได้เห็นชาวเอเชียสร้างแบรนด์แบบที่ฟิกาโร่ คอฟฟี่หรือโบส์

คอฟฟี่ของฟิลิปปินส์ กาแฟ Trung Nguyen ของเวียดนามหรือคอฟฟี่เวิลด์ ในไทยที่เปิดสาขาในต่างประเทศ เพื่อแข่งขันกับแบรนด์ดังข้ามชาติ ถึงแม้ ความสำเร็จจะยังไม่ได้มาแบบที่ Jollie Bee Hamburger ที่สามารถเป็น ผู้นำตลาดแฮมเบอร์เกอร์ ในบ้านของตัวเองเหนือแมคโดนัลด์ แต่เราก็ภูมิใจ และเป็นกำลังใจแก่เขาเหล่านั้นที่นอกจากจะมีความตั้งใจในการทำสิ่งที่ตัว เองรักให้ดีที่สุดแล้ว ยังเป็นการสร้างงานในประเทศตั้งแต่พนักงานบาริสต้า หน้าร้านไปจนถึงเกษตรกรผู้ปลูกกาแฟในประเทศนั้นๆ อีกด้วย

Mabuhay, My first trip to the Philippines was over 10 years ago when I decided to start working with a branch of an American company that had a foodservice equipments factory there. After working in Thailand for a year, I was transferred to the Philippines to be in charge of the company during the sudden change of executives. I worked in the midst of disagreements and suspicions. As a result, everything did not go smoothly, especially at the time of the severe economic crises in Asia.

We can recall that many companies had to lay off their workers and those who remained had to work much harder, even when they had no idea how long they would be able to keep their jobs.

In this 7,000-island country, in the middle of several difficult situations, I was impressed by the remarkable hospitality of the Filipinos. Besides being good-tempered and lively, they loved to sing and dance. The Filipino singers and musicians have been considered the symbols of the Philippines and they have become products in the country’s entertainment industry, delighting people from every part of the world. They have generated income and brought fame to the country just as much as others from different fields of work around the world have.

One more thing that made me happy during those days was the Filipino cuisine, such as Sinigang (tamarind soup), Filipino Adobo, and drinks, like the very unique green mango frappe. Coffee houses in Manila had become a part of my daily life too. I went to Starbucks in the rest area between Makati and Binyan Laguna where my office was situated. I also frequently had sales meetings and appointments with clients at Allegro Coffee at Glorietta, which is no longer there. I can say that was when I began working in coffee houses.

Recently, I had a chance to visit Manila and I saw significant changes in the city, such as mall with a number of new coffee houses of new brands. Besides Starbucks, which had over 50 outlets in 2007, there were also Seattle’s Best Coffee and donut chain stores, like Krispy Kreme Donut & Coffee who have prominently entered the coffee house business and helped stimulate the industry in the Philippines. The well-known local brands, such as Figaro Coffee and Bo’s Coffee, are also outstanding for their unique tastes and styles. The popularity of the coffeehouse business can be observed in Bonifacio High Street, where more than five coffee houses stand in a row.

We are so proud to see Asian people building their own brands - Figaro Coffee and Bo’s Coffee in the Philippines, Trung Nguyen Coffee in Vietnam, and Coffee World in Thailand - within and without their home countries. Although they have not achieved success like Jollie Bee Hamburger, which has defeated McDonald’s in their country, we are standing by these enterprises and their employees; they are not just doing their best for something they love, but they are also developing their nations’ personnel – from the baristas in the cafés to the farmers on the coffee farms.

Thai Competencies of Hotel and Tourism 2008 On September 27th, 2008, minister of labor, Ms. Uraiwan Tianthong, presided over the launch of the Thai Competencies of Hotel and Tourism 2008 (Thai COHAT 08) exhibition on the 2nd floor of Life Style Hall at Siam Paragon. Organized for the benefit of the public by the Department of Labor Development, the event lasted from 10:30 a.m. - 6:30 p.m., September 27th - 28th. The objective was to demonstrate the high standards and world-class service of the Thai tourism industry. The event showcased a variety of demonstrations by professionals in the hotel industry and competitions on stage. The demonstrations served as models of excellence within the industry to advance the development of Thai personnel.

To implement this project, there were support committees from many tourism and service associations, including the Thai Hotel Association, Thai Restaurant Association, Association of Thai Travel Agents, Housekeeping Management Club, The Front Relation Management Club, and Rajamangala University of Technology Phra Nakhon.

Soon, we might have the chance to drink Starbucks’ coffee more often at company meetings and other gatherings. • Surprisingly, neither coffee nor Chinese tea is a popular drink in Hong Kong. In fact, the bestseller is Gang Shi Nai Cha, Hong Kong milk tea, or Ceylon tea with condensed milk. It tastes like Thai tea, but it has a different sweetness and thicker flavor. • Although Trung Nguyen Coffee has not been successful in Thailand, it has just opened a new coffee house in Singapore Changi International Airport in September. The coffeehouse will be their model for overseas franchise. Their current targets are Singapore and China. • It seems like central Taiwan, or Taizhong, has already become the epicenter of Taiwanese tea culture. Located in a tropical zone, the Philippines grows many agricultural products. One of its famous products is coffee. Four varieties are grown in the Philippines: Robusta, Arabica, Liberica and Excelsa.

Although Robusta and Arabica are well known coffees in the world market, not many know about Liberica, a popular variety in the Philippines and throughout Asia. Liberica, or “Barako” coffee, has become the standard Filipino coffee. Discovered in the provinces of Batangas and Cavite, “Barako” means “big” in local language because of its large bean.

Coffee drinking in the country can be traced back to the 16th century. In those days, after drying the coffee cherries, they were hulled using a mortar and pestle.

The coffee beans were then roasted over an open fire and brewed to extract a fresh decoction. The brew was then filtered through a thin, loosely woven cloth and

served. This tradition still continues in some remote provinces of the country.

In the mid 80s, world prices for the precious commodity crashed. Low farm gate prices and low yields from improper cultivation practices forced the farmers to switch to other, more profitable agricultural ventures. A disease called coffee rust hit most of the coffee farms in Southern Luzon, which made scarce the indigenous Barako coffee. In fact, this disease transformed the Philippine coffee supply so drastically that it went from being a net exporting to a net importing country.

“The country only produces half of its consumption,” says Mr. Escaler, owner of Gourmet Farms, Inc. Thanks to the proliferation of American coffee houses and local players such as Bo’s Coffee, Figaro and Gourmet Farms, “the country is now experiencing tremendous growth in the roast and ground category.” With the largest market share in the roasting and grinding of coffee among local companies, Mr. Escaler believes his company’s success is reflective of the domestic coffee industry.

“The goal is to make the country self – sufficient by 2015. With the help of all the local players and the government, this is not an impossible task”.

The president of the Specialty Coffee Association of the Philippines (SCAP), Mr. Emmanuel U. Terrejon, predicts the coffee industry in the Philippines will increase its roasting by 10 – 15% annually due to the quick and recent changes in consumer behavior to drink coffee that comes from small roasters.

The SCAP is a trade association involved at all levels of the coffee business to support and develop the Philippine coffee industry. The SCAP provides sales & marketing plans, world-class barista training, and coordinates business relationships for coffee entrepreneurs in the Philippines.

“I think in the near future we’ll see greater expansion of the number of roasters in order to meet consumer demand. Meanwhile, the instant coffee business will remain consistent. Coffee venues have become part of the consumer culture and are host to business meetings and parties.”

Many businesses try to incorporate coffee into their product lines. For example, fast-food businesses have tried to market their stores and coffee like coffee shops. For this reason, there is not enough coffee produced domestically to satisfy consumer demand. The Philippines has to import coffee from neighboring countries, such as Indonesia or Vietnam. Green beans are imported and roasted in the Philippines, which sets the country up to become a big importer and roaster of coffee in the future.

Mr. Terrejon believes the important factors for a coffee business are the price of its products and quality of its service. The majority of business owners are concerned primarily with costs, which are expected to become more competitive between Asian countries. He is also concerned with business entrepreneurs failing to properly invest in the training of their baristas, interrupting the Philippine baristas’ progress towards attaining a level of world-class skill.

The SCAP helps open individual coffeehouses and international and local coffee chains. Mr. Torrejon summarizes the advantages of each.

“I think chains will have the advantages of better marketing and lower costs, but the individual coffeehouse will benefit in the long term from its difference in design and concept.”

Now, Figaro is the Philippines’ favorite local coffee brand and is able to compete with international brands by maintaining lower costs of production and operation.

The Corporate Communications Officer of Figaro Coffee, Ms. Rosario Juan, informed us that the coffee economy is continuing to grow at 20% per year. The company targets the new generation - young men, women, and students - because they incorporate coffee consumption into their daily routines.

Previously, people could only drink the best quality coffee in premium hotels at very expensive costs. Currently, consumers can easily find good quality coffee beverages at 50% of previous prices. Moreover, coffee shops have developed as convenient and comfortable venues for enjoying coffee.

“Coffee lovers can enjoy their drinks together as they work because shops offer free Wi-Fi Internet. It is like working in a mobile office without the feeling of being bored.”

If the coffee industry reaches a certain level of maturity, it means competition will also increase. Companies that can operate more stores will reach more customers and have greater success than those operating less. As Ms. Rosario Juan remarked, one disadvantage of Figaro’s compared to Starbucks is the number of stores in operation.

Figaro not only offers quality and service comparable to international brands, but also appeals to Filipinos’ interest in purchasing local coffee and saving 10% on the price they would pay for comparable products at international brands. Figaro has grown quickly within the last five years largely due to the Filipinos’ embrace of this local brand and the kind of culture it fosters.

“As implication, Coffee shops become a meeting and party venue for families, friends and business people. Consumers change their behaviors to drink coffee outside home in order to meet up with people.”

As the business grows, Figaro plans to enter all sectors involved with coffee production and service, from producing syrups to training baristas. In order to stay competitive at a larger scale, it will expand in new directions. About Figaro’s marketing strategy, Ms. Juan said, “to serve our business expansion, we’ve set a target to expand our stores into the tourist destinations. Next year we’ll operate stores at Baguio, Cavite, Cebu, Davao and Iloilo cities.”

Although being a professional barista is a popular occupation for the new generation in the Philippines, there are still problems in the labor market as baristas move between industries and into other countries. Skilled baristas are attracted to other countries because they can get paid nearly three times as much as they would in the Philippines. Although the barista workforce is growing, many baristas staying in the Philippines do not communicate with their customers as much as the amiable and motivated European baristas tend to do.

“Being a great barista doesn’t just mean having skill and knowing how to use the machine, how to brew coffee. Baristas must also have good relationships with customers. It’s not only about concentrating on the work; a barista should impress the customer through great skill and hospitality.”

Given Figaro’s position in the Philippine coffee market, it aspires to establish a large network of faithful consumers who appreciate the sense of individuality Figaro maintains that other brands lack. Ms. Juan mentioned that each Figaro coffeehouse would take advantage of this strength by allowing each shop to be autonomously decorated and designed by managers according to the shops’ particular target audiences.

By devolving the responsibility of design to lower levels of management, it keeps the business moving fluidly and gives each branch its own personality.

Figaro Coffee operates a total of 72 stores in the Philippines, 65 of which are located in metro Manila. There are also two branches operating in Shanghai, China.

Plans to Serve New, Unique and Outstanding Beverage Concoctions to Attract Their Target Audience

Bo’s Coffee Chief Executive Officer, Mr. Steve D. Benitez, said the marketing plan for next year would continue on the quest for excellence by differentiating themselves in the coffee market.

“With a lot of players in the specialty coffee industry, we cannot just be one of the players. We have to stand out and shine and be different in the way we look, the way we act, the way we build our relationships with our customers. We will expand our business beyond our coffee shops by introducing new beverage concoctions -- both coffee and non-coffee. In my opinion, I think the beverage trend in 2009 will be developing iced drinks that are healthy and not fattening, so we expect to see more tea and fruity drinks in the market for tropical countries like the Philippines. Meanwhile, we will come out more aggressively with our customer loyalty program and find more ways of giving back to community, both nationally and locally.”

Bo’s Coffee was established in 1996. It now operates a chain of 35 stores and will have 38 stores by the end of this year. Bo’s Coffee established its franchising arm, Coffee Systems Franchise Corp., in 2001. It now has 18 franchise stores nationwide, from Davao City in the South to Manila in the north. There have been inquiries from countries abroad such as Malaysia, UAE, and Bahrain.

“International expansion is part of the plan of Bo’s Coffee within the next 2 years, but the most important factor is to find the right partner in different countries who can help us develop the brand.”

Mr. Benitez offered an overview of the coffee business in Philippines.

“This year the coffee retail market will see a modest growth in terms of store openings due to economic conditions and availability of locations, especially in metropolitan areas like Manila and Cebu. However, there is still a big untapped market in other areas and cities. The ability to adjust to these different markets and offer something new that the market will accept is important. Rising costs of goods, utilities, fuel, and rent is important for the players of this industry to be able to manage and control costs and to remain competitive without significantly increasing the prices of coffee beverages.”

As part of Bo’s Coffee’s position in the market, Bo’s caters to a niche that is very discriminating about coffee, customers who know coffee well. Bo’s has a standard training program for all staff ranging from basic knowledge to the most intricate aspects about coffee. The training also thoroughly teaches staff to deliver warm and friendly customer service.

“The majority of customers are young professionals and students. Since we believe that our business is sustained on the relationships we build with our customers, our philosophy is to make sure that each individual that walks in our store leaves with a good

experience about us.”

Besides business obstacles, Mr. Benitez said finding good locations is always a challenge.

“Most of the real estate owners prefer international brands as lessees. We have to prove to them that a local brand can be just as good or even better. When we fail to get a spot, we remain patient and wait for the next good spot to come along. This also challenges us to improve and take our brand to the next level in order to compete.”

Although the coffee business is currently very popular in the Philippines, Mr. Benitez believed “there is a limit to the number of coffee houses that can share a particular market, but as for now, the market is not yet fully developed. There still is room to play around with. The increasing number of coffee houses is also expanding the coffee drinking market.”

Opened last spring in the center of Genova, the historical Corvetto Square, Il Guscio, or “The Shell”, is a trendy new restaurant, pizzeria, and aperitif spot, designed and furnished by a collaboration between Costa Group and Studio Archinside. The name, Il Gucio, evokes a precious and cozy ambience. Il Guscio was born from the prior experience of Riccardo and Tatiana Marianini, the owners and administrators, who have opened similar establishments in Sardinia and Genova.

The desire was to bring to Genova something different - a cosmopolitan and elegant space for a medium-high income consumer.

Il Guscio is located in a historical part of Genova, so the impact of its presence is strikingly scenic. An enormous glass door reveals an unusual interior. The space exudes warm tones, working to recreate a familiar space: an apparently aged library, a wine shop made of white lacquered wood, and a graphic displaying the maxim, “RELAX yourself”. The atmosphere is, in fact, relaxed and hospitable thanks to the comfortable sofas with rollè made of old leather, lighted from underneath by a blue light - quite suitable for drinking an aperitif or having a snack. The counter is elegantly fashioned out of Iroko wood on top and black and white ceramic tiles

on the front. Two back lighted false windows are mounted beside the counter. At the end of the aperitif area lies the pizza counter with a black glass front protecting the working area.

This sleek and spacious aperitif area gives way to a great staircase to the upper level. Beside the stairs, the wall is entirely covered by black and white damask wallpaper. Situated in the space underneath the great staircase is a machine to distribute water and a wine showcase. From the upper floor one can look down to the ground floor or admire the plasma ceiling. After ascending the stairs, one can find on the right an office used as a service zone. The dining area consists of two big, white wooden Baroque style tables followed by two other white tables with black seats. Overhanging are refined glass showcases that display water bottles as if they were delicate perfumes. On the right side, after the office, there are brown sofas with rollè, lighted from the bottom by an orange light. On the walls a warm yet intense graphic recalls the rich and opulent houses of ancient Roman aristocracy.

These two parallel spaces are separated from the end of the shop, by a very unique sitting room and open privé. In this area, a modern red sofa is juxtaposed with a wall made by wooden trunks lighted by shining LEDs. The gastronomical spread offered at Il Guscio is varied: there are a lot of first dishes, including 40 different spaghetti dishes. Furthermore you can eat pizza and camicia, a kind of hot sandwich made with the pizza dough, baked and stuffed in many different ways. The menu joins traditional dishes with several creative inventions.

Il Guscio can contain 120 people seated. Opening time: from 12:00 p.m. to 12:30 a.m.

Cordillera Coffee

Promotes Local Coffee with Rich Culture Cordillera Coffee was established in 2003 with the mission of helping Filipino farmers promote their rich culture to its consumers. The lovely couple Mr. Frank Young and Mrs. Mary Grace Arboleda Young own and manage this concept art gallery and coffee shop business.

Shops are bathed in earth tone colors and decorated with drawings and art by artists from The North.

Northern traditional music is played inside the shop, relaxing customers as they enjoy sipping premium coffee in a peaceful atmosphere.

Mr. Young explains the concept of Cordillera Coffee: “As an individual coffee business, we can create everything that we want and that makes us different than chains who offer always the same format; and it’s also one of the reasons that we can attract the consumer’s eye.”

Towards the new millennium, Mr. Young saw the influx of big foreign coffee companies that have dominated the market, such as Starbucks and Seattle Best Coffee. It became a popular notion that good coffee had to come from other countries.

“Some Filipinos do not know that the Arabica is grown here in the Philippines - means they lack education on coffee business. That’s why we’re teaching them how to correctly process the coffee on the coffee farms.

Meanwhile, we will lead our local brand from the Cordillera region to compete with foreign brands as costs are economized.”

Mr. Young explained how originally coffee farmers had to sell their coffee to middlemen. But since Cordillera coffee was built, it deals directly with the farmers and they get a much better profit: “We give a better price than the middleman; we can control the quality

from the farmer and create a premium coffee to serve consumers. Our mission is to try to help farmers and the goal is to promote local mountain coffee in order to grow as a nation.”

The way Cordillera helps local coffee farmers is by promoting good coffee culture practices, good harvesting and post-harvesting practices, organic production where applicable, instilling quality in the final product, and giving a fair price for that quality product.

They started a nongovernmental organization called “Coffee Aid” to help the new generation farmers have a better life with better income. Mr. Young believes, “they don’t have to move into the town, just live in their home town and do their own farm.”

Recently, Cordillera opened its doors to franchisees, particularly for social entrepreneurs who have the same mission of promoting the best Filipino coffee and helping marginalized farmers of the Cordillera region. In the near future, if this NGO project is a success in the Philippines, “we’ll do the similar process to other countries in Asia such as Indonesia, Malaysia, China, etc.”

Besides its business goals, Cordillera Coffee goes several steps further to serve coffee from the highlands, roast coffee beans, promote and sell coffee - particularly 100% Arabica from the Cordillera region - to other shops and retail outlets, and actively seek out export opportunities.

They intend to expand their business by opening new branches in prime business areas, not only in metro Manila, but other metropolitan areas in the Philippines, like Davao city and Cebu city. Currently, Cordillera operates a total of seven shops, including six shops in Manila and one in Baguio.

Their market strategy to promote the Cordillera brand is to become a sponsor for some F&B events where people can come taste the coffee. Mr. Young expressed his concern with advertising: “I don’t think advertising is a good strategy to promote our shop because we can’t see any feedback from it.”

However, Mr. Young said a difficult challenge to promoting the coffee shops in the Philippines is that when someone creates a nice concept, it is quickly reproduced in the industry. Thus, Mr. Young had mentioned that an important trick to running Cordillera Coffee is to always maintain the high quality of their coffee; it is the repeating customer more than other factors that allow the business to survive, especially in the Philippines.

Filipinos’ Favorite: Barako Coffee

Late March this year, I set out with another member of the Singapore Coffee Association, Ibrahim Amahd from InterAmerican, to learn more about a coffee famous for not only its size, but its unique taste: the “Barako” (Liberica) coffee in the Philippines. The trip started on March 25th with our arrival to Ninoy Aquino International airport in Manila. Mr. Manny Torrejon, the President of the Philippine Coffee Board, met us and obligingly took time out from his busy schedule to pick us up from the airport and run us around the crammed downtown section of Manila. He showed us the sights, sounds and cafes of downtown Manila before heading to the Shangri La for dinner. Knowing that the Philippines is the 12th most populated country in the world, it was destined to be a slow trip. Now 90 Million people live in Philippines, so the common sight of impoverished kids dirtied from living in the slum streets is a common sight and easy to see from the road while stuck in slow moving traffic. I thought Bangkok and Ho Chi Min were bad, but so far Manila takes the cake.

The next day we had arranged with Melchor “Choy” Basca of Universal Robina Corporation, the largest producer of instant coffee among many other products in the Philippines, to tour the most famous region known for Barako Coffee, the Batangas region, about 100 km south of Manila. Having started out early in the morning to miss the traffic, it turned out another million people had the same idea. So as not to complain on the way down, we picked the brains of Choy who answered all our questions on Philippine history, Barako coffee, and the coffee industry in general.

The Philippines, along with Ethiopia and Malaysia, is one of the few countries in the world that commercially produce all four varieties of coffee. Arabica grows more in the northern region of Luzon, much of the Robusta in the southern region of Mindanao, and Liberica and Excelsa are scattered around the Batangas and Cavite region. The Barako coffee has historically been exported to Saudi Arabia, about 1,200 bags or four containers a year, but now due to lack of replanting and changes in the cash crop, Barako coffee is destined for extinction unless some of the foundations committed to help the coffee industry succeed in creating more awareness for regeneration projects. The Philippines once stood as the fourth largest coffee producer in the world - well, 200 years ago anyway. Now they produce less than one percent of all coffee produced in the world. One reason was that Coffee Leaf Rust hit the country. This devastated the coffee industry as it had done in

Ceylon in 1887. Unlike Ceylon, the industry managed a recovery and continued producing coffee instead of switching to tea. The recovery lasted until 1986 when the Philippines continued to earn 150 million USD in coffee exports. The annual consumption of coffee in the Philippines - approximately 1.5 million bags - outweighs the domestic production of 750 thousand bags. This works out to around 1 kg of coffee consumption per person. One would expect such a low figure to be due to the level of poverty and the fact that the price of a simple cup of coffee is beyond the reach of many.

Barako is famous among the local Filipinos, or Pinoy, as they warmly call themselves. The coffee in the Batangas region is mostly hand picked, sun-dried, and hulled using a dry mill. Actually, the word ‘Barako’ refers to all the coffee grown in the Batangas region, not just the large Liberica cherry. The origin of the word in the native language is a colloquial reference to masculinity and strength, but historically, the meaning in Tagalog is ‘wild boar’, due to the fondness the boar has for the cherries and leaves of the plant.

We arrived at a local processing plant, T. De Los Santos Coffee Mill, in Cavite.

Here we met “Totie”, who is famous locally as his house is used quite often for film shoots for locally produced TV soap operas. His mill serves as a central focal point for the local regions’ cherries to be processed. Being a small plant, it is one of many collection points where the coffee is processed in the Cavite and Batangas regions.

Alongside his processing plant are pineapple plantations as well as a small Robusta plantation. We had to take a walk down a track behind the plant to get to the area where the Barako was growing. We were a little over 400 m above sea level where the plant survives and has no problem producing at low altitude.

The cherry of the plant is almost as big as a lychee, nearly two to three times the size of a normal coffee cherry, or about 20 to 25 mm in diameter. The cherry can produce up to four beans; sometimes called “Elephant Coffee”, once roasted, the beans take on a similar appearance to the ears of an elephant.

There was no cupping lab, so we used a fully automatic Saeco machine to try the local roasted Barako beans. After the button was hit a few times, we were all savoring the unique taste of the bean. The beans typically display a pungent aroma, which can be described as medicinal and wild. I don’t expect the coffee to win any awards quickly, but it is unique to Barako. Though it was delivered a little on the stale side and through an automatic machine, the coffee still managed to deliver a fruity, velvety sensation on the palate, not at all unpleasant, with notes of jackfruit. It expressed a body towards the fuller side for the type of extraction. The taste was not what I expected at all. I was expecting an intense and, to be honest, horrid experience, but I can say I was pleasantly surprised by its characteristics, as unique as they were to this coffee. Totie said that he sells a few tons each year to Japan at prices up to 9 USD per kg. It is not any wonder why he is looking further afield to get a hold of more Barako for export.

After wading back through the grass, avoiding masses of spider webs and snakes, we found ourselves ready for lunch, overlooking the famous crater lake of Batangas, Taal Lake. This is a popular local getaway for the weekend and the tip of the volcano can be seen in the middle of the lake. Its last major eruption was in 1965, killing about 100 people. From the beautiful lookout restaurant, we traveled back towards Manila to Laguna to tour the Instant Coffee Plant of United Robina.

Again, as in Vietnam’s decaffeination plant late last year, we were asked not to take photos. Obligingly we were kitted up with the overalls and boots, and went through the disinfection process required to enter into the plant. I must say it was a sight with all the protective clothing required.

The plant consisted of what looked like a 500 kg Probat that works 24/7. After roasting, the coffee is ground into a fine powder, liquefied, run through a myriad of various machines and an extraction processes before being spray-dried in the evaporation silo with an aroma recovery system. Then it is ferried off for weighing, packaging, boxing and exporting in either prepacked 3 in 1 (3 in 1 is a coffee, sugar, and creamer sachet hugely popular in South East Asia), or by itself into sachets for single serves. It is an extremely complex process, which left me happy to go back to my GP 60 Probat drum roaster lifer and destoner in Singapore and roast the traditional way. After an extremely interesting visit to the instant coffee plant, we made our way back to Manila, some the wiser for our day in Batangas.

Caffé D’Oro

The Family Coffeehouse “Caffé D’Oro is an Italian style coffee house, first opened in 2000. We focus on the quality of our products and pay great attention to our customers’ pleasure in order to be number one in customer’s heart.” Mr. Veradech Somboonvechakarn, a managing director of VPP Progressive Ltd., initially described the concept of Caffé D’Oro.

Branches and Customers

Our customers can find Caffé D’Oro in over 60 Shell gas stations. We have planned on locating our coffeehouses mainly at gas stations situated on main streets. In addition, we also have many branches in office buildings, government buildings, etc. Therefore, our customers are primarily middle-class people with steady incomes, namely those who have cars and work in the office.

Products and Services

We care deeply about our customers’ happiness and want our products and services to be able to satisfy the desires of everybody in the family. Therefore, we offer Italian style coffee, tea, smoothies, fruit juice, health drinks and a variety of baked goods, so that all members of the family can enjoy their favorites. Our bestsellers are, of course, our coffee and baked goods, however, other drinks also sell well.

To Win Customer’s Heart

We pay great attention to the quality of our products, and we never stop creating and developing new menus in order to serve our customers with products of the best quality. We work systematically and try to update ourselves. For example, we have just launched Slim Latte, a sugar free latte, and offer healthy bakery products. The whole production process is under close supervision, so it is possible for us to maintain high standards. Most of our customers are the same groups of people, and each visits us four days a week on average.

We have been continually providing our customers with opportunities in which they can meet and talk to each other and us. For example, we just conducted a watercolor-painting workshop with Mr. Pe Seenam and a photography workshop for our customers. In addition, we are planning to take more than a hundred families who are Caffé D’Oro customers to our coffee farms.

Problems and Solutions

As I have mentioned earlier, we care so much about the quality of our products and have many branches to operate, so the difficulty is found in the attempt to maintain the standards of both products and services. Every branch is supposed to achieve the same standards, but it is difficult for all chain coffeehouses to complete this goal. We cannot say that we have 100% control over every branch in terms of the quality of our products and services; however, we are trying our best and will keep up good work. We provide our staff with various training sessions so that they can effectively bring satisfaction and pleasure to the customers.

Of course, economic crises have always had great effects on business, and Caffé D’Oro is no exception.

That said, we are not thinking about raising our prices.

Instead, we are trying to carefully operate within the costs. Because consumption of our old customers has been reduced, we are trying to broaden our customer base to carry on our business well.

Consumer Behaviors

Consumer behaviors have dramatically changed. In the past, consumers did not pay attention to the quality of coffee, or if they did, they were still unable to clearly distinguish quality coffee from others. However, today, consumers understand and know more about coffee.

People used to say that good coffee needed to taste bitter. Nowadays, people are talking about its aroma, its body, the process of espresso brewing, and the techniques for steaming milk. It shows that now they are able to tell the difference between good and bad coffee.

Coffee Market in Thailand

When Thailand faced an economic crisis about 10 years ago, the government had encouraged people to start small businesses of their own. Unsurprisingly, the coffeehouse business was one of the most popular choices.

Ten years later, most coffeehouses that have survived are big and well-known brands.

The coffeehouse business will continue to grow about seven percent each year even though Thai people tend not to drink coffee as much as other peoples in the region, like people from Hong Kong, Vietnam and Singapore. The new generation drinks coffee more and more; today, it is very common to see university students in coffee houses. I am confident that the growth of the coffeehouse industry will continue.

In this issue, the products in Iced-Aid might look different from what we usually bring to you. mad about juice is a premium smoothie and juice bar founded by Thai people. Through Ms. Naraporn Pakdeevutitam and Mr. Victor Liew’s story, you will learn that in fact “Thai people are able to compete with foreigners.” “mad about juice originated with a drive to have our own business. After Victor graduated in food science, we used to work for a food and beverage company. Even though we knew how to take care of our health, our work and daily routine did not allow us to do so, and trying to change our routine was not an easy task. Therefore, we came up with the idea for creating food and drinks that made it so we would not have to change our routine entirely. That was the original concept of mad about juice.”

After Ms. Pakdeevutitam and Mr. Liew decided to start this business, they developed a plan for their products via customer survey.

“According to our survey, Thai people, both male and female, want to be healthy and wish to be able to take good care of themselves. Since the digestive system is their primary concern, we have decided to add fiber into every drink. We guarantee that our drinks have as much fiber as 5 green apples and surpass the recommendations of the World Health Organization.”

“We have introduced new products into Thailand’s market. For example, four years ago, when we started our business, we introduced wheat grass juice, a drink full of antioxidants, to Thai people. Two years ago, we brought Goji Berry, which was very popular in Hollywood, to Thailand. Compared with other fruits, Goji Berry contains a higher level of antioxidants for the body. Our decisions about the products we offer are not based on their popularity alone; they need to undergo a number of tests in the laboratory, and the results must prove the products have beneficial impacts on human health.”

Their passion for their business drives them to pay close attention to every detail. Four years since they opened their first branch, mad about juice now has seven branches and new branches will be opened in the near future.

“Opening seven branches in four years might appear to be slow progress, however, the number of branches does not mean so much to us. Our focus is on quality. I do not wish to be the biggest giant in the area.

I only want to offer quality products to our customers.

This is our main goal.”

Besides putting an emphasis on healthy products, mad about juice also realizes the importance of living with the concept, “mad about juice, mad about life.”

“Good health is only one of our objectives. It is a means to happiness. People are happy because they

are able to do what they want; however, they have to be healthy to be able to do so. That is the other goal beyond the good health of our customers.”

“We also pay attention to the environment. We plan to create environmentally friendly stores where all the cleaning materials and furniture are biodegradable or compostable.”

Nowadays, diseases such as heart diseases, diabetes, and cancer are common. Therefore, people are aware of the health risks involved with diet, and begin to pay more attention to their lifestyle choices. For mad about juice, this has widened the range of its target groups.

“At the beginning, our target group was people 25-45 years old who seemed to realize the importance of a healthy diet. However, as people became more sensitive to health issues, our customer base expanded.

Consequently, our target group has changed according to customers’ desires, which can be divided into 3 groups: those who focus on health, those who care about body-shape and beauty, and those who like the tastes.”

“A few years ago, most of our customers were foreigners because they were familiar with the kinds of products we offered. Today, Thai people have begun to understand and to pay more attention to their health.

This change also makes us proud.”

“Four years ago, Thai people did not pay as much attention to their health as they do today. We had to explain to them about the advantages of our products.

Our business made progress glass by glass. This is the reason why we always tell our staff that they have to be patient with the customers. They need to explain each drink with real knowledge. Therefore, we conduct several sessions to educate the staff about the products they are selling so they are able to effectively pass on this information to our customers.”

The popularity of foreign brands in Thailand may have negative effects on the popularity of Thai brands, but mad about juice proves that Thai brands are not inferior.

“When we first opened mad about juice, most customers who visited our store thought that it was a foreign brand. When they found out that it belonged to Thai owners, they were a little surprised. This is what we are so proud of. We would like everybody to know and accept that Thai people or Asian people, like Mr. Liew, are also capable of building their our own brands with quality products comparable to those of European and American brands. We are not saying that their products are not of high quality, but we trying to convince people that we can also produce products of high quality.”

Shop Design and Target Customers

Ten Ren When people think about tea, besides English afternoon tea, many people think of Chinese and Taiwanese tea, such as Longjing Tea and Oolong Tea. In this issue, it has been our pleasure to have the chance to listen to the history of Ten Ren Tea as told by Mr. Lee Rie-ho, owner for more than 50 years of this giant tea company.

Ten Ren Tea at the Starting Point Mr. Lee Rie-ho, the father of the present owner of the company, founded Ten Ren Tea. He started off by working on a tea farm in Nantou Minjian, a mountainous area in Taiwan where tea farming was very common.

However, since the tea business in those days was not thriving, he did not have enough money to take care of his family. He reached a turning point in his career, deciding to sell all the tea he had at the time and buy tea from other places, he became a tea trader.

In 1953, he started his business in Gangshan, Gaoxiong because Taiwanese people were not familiar with tea drinking culture at the time. He decided to open his first tea shop and named it Mingfeng Cha. Those who drank tea were soldiers from Mainland China, and most of them lived in Gangshan. Later, in 1956, he began a term of military service. Whereupon completion in 1961, he opened a teahouse in Taiwan, the first for Ten Ren Tea and the first in Taiwan.

Branches Mr. Lee invited his friends and relatives to come and help him open the teahouse. When they were knowledgeable enough to be independent, each of them de-

cided to open their own Ten Ren Tea shops. Besides friends and family members, other staff members in the teahouse had opportunities to start their own businesses as well - if they worked hard enough, they could do it. Following the traditional way of expanding one’s business, this was how he increased the number of Ten Ren Tea branches. It was a good strategy because everybody felt that they were a part of the business, and there was a unity among them.

The business has since been developing continuously. Ten Ren Tea shops have opened in America, Canada, Japan, Malaysia, Singapore and Mainland China.

Today, there are more than 850 branches of Ten Ren Tea. Because of the high financial status of people in America, Canada and Japan, he was not concerned about the profitability of opening new tea shops in these countries: “Although we were affected by economic crises sometimes, we could adjust ourselves very well, and today, the business is making good progress.”

Business in Mainland China The branches of Ten Ren Tea are in Taiwan and other countries, while the tea shops in Mainland China belong to a separate company, Ten Fu’s Tea. It means that even though Ten Ren Tea and Ten Fu’s Tea have the same owner, the two companies are independent of each other. They share neither cost, nor shareholders, nor management. They are still fellows in his business; if Ten Fu’s Tea wants tea from Taiwan, they can order the products from Ten Ren Tea, and at the same time if Ten Ren wants anything from Mainland China, they can talk to Ten Fu’s.

Opening new branches in Mainland China was one of the missions that Mr. Lee had planned. They entered the tea business in Mainland China in 1993 by starting tea farms and establishing the company there. He started off with a factory and opened his first tea shop in Fujian. This is where the name Ten Fu’s came about. Nowadays, Ten Fu’s Tea shops are everywhere in Mainland China, such as Heilongjiang, Xinjiang and even Tibet.

Popular types of tea from Mainland China produced in Ten Fu’s Tea’s factory are Longjing and Pu-erh. In Taiwan, people like other types of tea, such as Oolong, Tung Ting Ooling and Alishan Oolong. While the two companies always exchange products with one another, only Pu-erh Tea can be imported to Mainland China be-

Each Ten Ren Tea shop is bright, comfortable, clean and unique. Five-colored ceramics are arranged in rows, though the main colors in the shops representing the company are white and green. The ambiance of every shop reflects the healthy and natural products offered at Ten Ren Tea, unifying the shops’ design, products, and ethos.

Besides Ten Ren Tea, Mr. Lee also created a combination restaurant-tea shop, Cha for Tea, in order to serve various groups of customers. Because Ten Ren Tea started more than 50 years ago, many of its customers are about 30-40 years old. Cha for Tea, on the other hand, is a more modern establishment, focusing on teenagers and serving Chinese-styled food. Customers are able to have their meals and at the same time enjoy the atmosphere of a tea house. This shop aims at customers who are between 20-35 years old, and it has proven to be a success. It is interesting to note that Ten Ren Tea receives more male customers than female, while Cha for Tea has more female customers than male. Cha for Tea attracts those people who do not know about Ten Ren Tea, increasing the number of potential customers.

Ten Ren Tea’s Uniqueness Although the company’s products are expensive compared to others’, its customers are happy.

“We have to accept that you get what you pay for. Our ingredients are of high quality and they are expensive, so our prices have to be higher. Our customers understand us very well and they are willing to pay for it. Overall our highlights are consistent quality, safety and positive image.”

At the beginning, it was attacked by other companies. For example, it was accused of taking advantage of its customers: “They commented that our prices were too high and they even said that we lied to our customers. However, we could explain everything and when the truth was revealed, our customers understood us. Sometimes, others tried to discredit us, but they finally became losers.

We try to maintain the quality of our products and this is how we are still in this business today.”

Marketing Strategy Ten Ren Tea’s marketing strategy changes according to the market. At the beginning, it stressed the quality of its tea products. Later, when people knew and trusted the business, Mr. Lee made use of the products’ popularity. He tried to make Ten Ren Tea become a part of its customers’ lives, and this concept worked very effectively. The result was the establishment of Lu-Yu Tea Culture Institute, open free of charge to the public so people can experience the art of tea making and learn about tea drinking culture. People can learn while enjoying a cup of tea. With this, he believes, “little by little tea will become a part of their daily lives.”

จุดเริ่มต้นของเทียนเหยินหมิงฉา

เทียนเหยินหมิงฉามีจุดเริ่มต้นมาจากคุณหลี่ยุ่ยเหอ บิดาของ ประธานบริษัทคนปัจจุบัน เขาเริ่มต้นจากการทำไร่ชาในเขต หนานโถวหมินเจียนซึ่งเป็นเขตภูเขาที่ปลูกชากันเยอะ แต่ ตอนนั้นธุรกิจชาไม่ค่อยดี จึงไม่มีเงิน มาเลี้ยงดูครอบครัว เขาจึงตัดสินใจขายใบชาที่ปลูกในไร่ทั้งหมด แล้วนำเงินที่ได้ ไปซื้อใบชาจากแหล่งอื่นแล้วนำมาขายต่อแทน ดังนั้นจึง เปลี่ยนจากการทำไร่ชามาเป็นพ่อค้าชา ปี 1953 เขาเริ่มธุรกิจในเขตกังซานเมืองเกาสง เหตุ ที่เขาเลือกทำธุรกิจที่นั่นเนื่องจากสมัยนั้นชาวไต้หวันยังไม่ คุ้ น เคยกั บ วั ฒ นธรรมการดื่ ม ชา คนส่ ว นใหญ่ ที่ ดื่ ม ชาคื อ ทหารจากจีนแผ่นดินใหญ่ ซึ่งทหารส่วนใหญ่จะอยู่ ในเขตกัง ซาน เขาจึงตัดสินใจเปิดร้านแห่งแรกที่นั่น โดยใช้ชื่อว่า

ธุรกิจในจีนแผ่นดินใหญ่

อันดับแรกขออธิบายผมต้องขออธิบายถึงลักษณะธุรกิจของ เราให้ชัดเจนก่อนคือ ร้านสาขาของเราทุกแห่งที่กระจายอยู่ ในไต้หวันและประเทศต่างๆ จะใช้ชื่อว่าเทียนเหยินหมิงฉา แต่ ในจีนแผ่นดินใหญ่เราตั้งบริษัทแยกออกไปและใช้ชื่อว่า เทียนฝูหมิงฉา ดังนั้นเทียนเหยินหมิงฉาและเทียนฝูหมิงฉา 42 •

การออกแบบตกแต่งร้านและกลุ่มเป้าหมาย ร้านเทียนเหยินหมิงฉาแต่ละแห่งจะมีการออกแบบเป็นของ ตัวเองแตกต่างกันไปตามแต่ละสาขา แต่โดยภาพรวมเราจะ เน้ น ความสว่ า ง ปลอดโปร่ ง ดู ส ะอาดตา มี เ ครื่ อ งชา เบญจรงค์ ว างเรี ย งเป็ น แนว และใช้ สี ข าวสลั บ เขี ย วเป็ น เอกลักษณ์ของบริษัท นอกจากนี้ผลิตภัณฑ์และการบริการ ภายในร้านจะต้องดูเป็นธรรมชาติ มีประโยชน์ต่อสุขภาพ และตอบสนองความต้ อ งการของลู ก ค้ า เนื่ อ งจากเที ย น เหยินหมิงฉาเปิดกิจการมานานกว่า 50 ปีแล้ว ดังนั้นกลุ่ม ลูกค้าส่วนใหญ่จึงเป็นกลุ่มผู้ ใหญ่ช่วงอายุ 30-40 ปี แต่ ปัจจุบันเทียนเหยิน หมิงฉาบางสาขาจะมีเคาน์เตอร์บาร์จำ หน่ายชานมไข่มุกอยู่หน้าร้าน ซึ่งช่วยให้ฐานลูกค้าของเรา

กว้างมากขึ้นและประสบความสำเร็จเป็นอย่างมาก นอกจากร้ า นน้ ำ ชาเที ย นเหยิ น หมิ ง ฉาแล้ ว เรายั ง เปิ ด กิ จ การอี ก อย่างหนึ่งซึ่งมี ลักษณะคล้ายร้านอาหารที่ตั้งอยู่ ในร้านน้ำชาเพื่อขยายฐานลูกค้าให้กว้างขึ้น โดยใช้ชื่อร้าน ว่า ชือฉาชวี่ สำหรับร้านนี้เราจะเน้นความเป็นวัยรุ่น ทันสมัยและอาหารสไตล์จีน และเราก็ นำแนวคิดนี้มาออกแบบร้านเช่นกัน โดยเราเน้นกลุ่มเป้าหมายไปที่กลุ่มอายุ 20-35 ปี ซึ่งก็ นับว่าประสบความสำเร็จ เพราะนอกจากฐานลูกค้าที่เพิ่มมากขึ้นแล้ว หากแบ่งตามเพศที่ ปกติเทียนเหยินหมิงฉาจะมีลูกค้าผู้ชายมากกว่าผู้หญิง แต่สำหรับร้าน ชือฉาชวี่นี้มีลูกค้าผู้ หญิงมากกว่าผู้ชาย ผลพลอยได้จากกิจการนี้คือเราสามารถดึงดูดกลุ่มคนที่ ไม่รู้จักร้าน เทียนเหยินหมิงฉาให้เข้ามาสัมผัสกับบรรยากาศของร้านน้ำชาเก่าแก่แห่งนี้ได้ เพราะร้าน ชือฉาชวี่เป็นกิจการร้านอาหารที่เปิดอยู่ ในพื้นที่เดียวกันกับร้านน้ำชาเทียนเหยินหมิงฉา ลูกค้าที่เข้ามาทานอาหารก็จะได้สัมผัสกับบรรยากาศของร้านน้ำชาไปพร้อมกัน

จุดต่างของเทียนเหยินหมิงฉา

ปัจจุบันชานมไข่มุกได้รับความนิยมเป็นอย่างมากในไต้หวัน และถึงแม้ราคาสินค้าของเรา จะสูงกว่าร้านอื่น แต่ลูกค้าของเราก็ยอมรับได้ เราต้องยอมรับในข้อเท็จจริงที่ว่า หาก อยากได้ของที่มีคุณภาพ เราก็ต้องยอมจ่ายเงินมากขึ้น เนื่องจากวัตถุดิบที่เราเลือกใช้ล้วน มีคุณภาพสูง ดังนั้นต้นทุนของเราจึงสูง ราคาของเราจึงสูงกว่าที่อื่น ซึ่งลูกค้าของเราก็ เข้าใจและยอมรับได้ โดยรวมแล้วจุดเด่นของผลิตภัณฑ์ของเราจะเน้นเรื่องคุณภาพที่คงที่ ความปลอดภัยและภาพลักษณ์ของสินค้า

ปัญหาและอุปสรรค

การทำธุ ร กิ จ แน่ น อนว่ า ต้ อ งมี ปั ญ หาไม่ ว่ า จะเป็ น ปั ญ หาเล็ ก ปั ญ หาใหญ่ จากภายใน ภายนอกหรือจากธุรกิจแขนงอื่น เทียนเหยินหมิงฉาเองก็เผชิญกับปัญหาต่างๆ มาโดย ตลอด ในช่วงแรกเราโดนโจมตีจากบริษัทชาแห่งอื่นเช่นว่า ค้ากำไรเกินควร ราคาสินค้าสูง เกินไป หลอกลวงผู้บริโภค เป็นต้น แต่เราก็อธิบายข้อเท็จจริงและสภาพที่แท้จริงให้ลูกค้า เข้าใจ ในบางครั้งอาจมีการโจมตีด้านราคาสินค้าบ้าง แต่บริษัทเหล่านั้นก็ต้องยอมแพ้ไป เอง เพราะเราพยายามรักษาคุณภาพให้คงที่เราจึงยืนหยัดมาถึงทุกวันนี้ได้

Asia Food Expo 2008

Asia Food Expo 2008 was held at World Trade Center in Manila, Philippines taking place during September 3rd – 6th, 2008. The exhibition opened with approximately 500 local and foreign exhibiting companies coming from 28 countries, attracting 50,000 visitors from around the world.

AFEX 2008 featured a wide array of machines for packaging, food processing, high-tech food service equipment, sources of kitchen and baking equipment, manufacturers and distributors of food ingredients and food related items. There were specialized technical productions, food presentations, culinary activities, and displays of imported food & beverages. Moreover, several seminars and food franchising opportunities were organized.

Asia Food Expo 2008, the 17th International Exposition on Food Processing, Packaging, Handling Machinery, Equipment and Technology, was held with three events including the 12th International Exposition on Specialty Foods, Delicatessen, Confectionery, Beverages, Beers, Wines & Spirits, The 12th International Food Franchising and Business Systems Expositions, and the 8th International Expo on Foodservice, Catering Systems, Supplies, Equipment and Technology.

AFEX industry partners, the Agricultural Trade Office, U.S. Department of Agriculture, Le Club-French Chamber of Commerce in the Philippines, Malaysian External Development Corp. (MATRADE), and Asia Media-Taiwan Group organized country pavilions at the event.

Organized by Trade Information Marketing & Exhibitions Inc., this exciting event for the food and beverage industry painted a picture for the industry’s growth in food and beverage trends for the coming years.

Restaurant & Bar Hong Kong September 9th – 11th, 2008, the Hong Kong Convention & Exhibition Centre received more than 8,000 visitors for the 5th Restaurant & Bar Hong Kong (R&BHK) trade show. Unlike other trade shows, the target audience of the event was not contributors or wholesalers, but the end-user community of F&B management working in their restaurants, bars and clubs.

Besides chef master classes, tutored wine tastings, coffee seminars, and the Hong Kong Young Chefs Competition, two new zones were devoted to coffee culture and the world of wine. Supported by a number of leading suppliers, these additions were significant to the event’s success.

The first R&BHK was held in 2002 with a focus audience from Hong Kong, Macau and Guangdong. With its gigantic size and full program of demonstrations and seminars, R&BHK has become the leading gourmet trade show in The AsiaPacific.

The R&BHK will be back in September next year with the same fundamental formula, but plenty of additional surprises.

BARISTA•CHALLENGE

การแข่งขันแกรนด์บาริสต้าครั้งที่ 2 ในงาน AFEX 2008 The 2nd Grand Barista Cup 2008 on Stage at AFEX The Second Grand Barista Cup 2008 was held at the Asia Food Expo 2008 in Metro Manila, Philippines. The competition was separated into two rounds: a semi final round with six competitors on September 4th, 2008 and the final round with four competitors following on September 6th. All competitors were champions of their respective regions.

One could observe a clear difference between this competition and Thai barista competitions. There was a general atmosphere of fun and events with prize giveaways from sponsors to keep the spectators laughing and entertained while waiting for judges results.

The champion was Mr. Alvin Clapano, Luzon Champion from Cravings. He received a cash prize of PHP 10,000, a trophy, gift pack, certificate of participation and a free trip to Hong Kong to watch the HOFEX 2009. The 1st Runner-Up, Mr. Ronstadt Flores, Visayas Champion from Bo’s Coffee, received PHP 3,000 while the 2nd Runner-Up, Ms. Crisdel Joy Punzalan, National Capital Region (NCR) from San Francisco Coffee, received PHP 1,000. In addition to their cash prizes, they were awarded trophies, gift packs, and certificates of participation. The 3rd Runner-Up, Mr. Ferienyl Ypil, Mindanao Champion from Faggioli Coffee Club, received a trophy, gift pack, and certificate of participation.

The Champion and the runners-up happily took photos together and congratulated each other for their winning performances.

Battle of the Barista Cebu Philippines

On July 11th, 2008, The Waterfront Cebu City Hotel and Casino hosted the first Battle of the Baristas in conjunction with the Cebu Goes Culinary Fair. The competition was conducted in accordance with the current WBC rules and regulations.

Again we see the coffee industry making headway into the culinary gourmet sector, giving much deserved recognition to the coffee industry. After a primary elimination round, the top six finalists were selected to go through to the following day’s competition. After a grueling morning, the results were announced.

DaVinci Trans Tasman Barista Challenge 2008 On September 2nd, 2008, The ASB show grounds in Auckland, New Zealand played host to the 2008 DaVinci Trans Tasman Barista Challenge 2008 as part of the Hospitality NZ trade show. At the DaVinci Trans Tasman Barista Championship baristas race to prepare a large number of drinks without compromising great artistry and taste; with only 15 minutes to create 10 Piccolo Lattes, 10 regular café lattes, and 10 designed lattes, the teams must work together to create coffees that are randomly sampled and evaluated by the judges.

The Black Cups from New Zealand were lightning fast to get their first round of coffees to the table, followed closely by the Australian Baristaroos who made up time over the second round of lattes. In the end, the consistency and speed of the NZ team overcame the Aussies, and they finished in their best time ever of 6 minutes and 50 seconds for 30 coffees.

After tallying the two rounds, with only 3 points the difference, the Black Cups won the 2008 DaVinci Trans Tasman Barista Challenge for the first time in two years. Congratulations NZ! Aus Team: Con Haralambopoulos, Dave Makin, Zoe Delany and Justin Metcalf.
