In what sometimes may feel like unpredictable times, it is important to be curious and allow oneself to travel in body and mind. This is our 28th edition providing editorial at the heart of, and on the periphery of, life at Dorchester Collection properties. It’s endless—the art, fashion, design and cultural conversations happening in and around its destinations.

Throughout this new year, I invite readers to take a closer look around, to venture out for a day, or to say “yes” to services designed to enrich. Learning something new or going somewhere new are always wonderful and instantaneous solutions for liberating curious minds. Enjoy your stay.

As we look forward to a new year ahead, I reflect upon the more than 15 years that I have been CEO of Dorchester Collection; during this time, I have had the privilege of witnessing some incredible evolutions within the collection as well as within the hospitality industry at large. One important evolution is the notion of service itself as a dynamic product offer. This means investing intelligently and consistently in what encourages human connections, personalised care, and meeting—or, better yet, anticipating—the ever-evolving needs and wishes of our guests.

This past year we have had the pleasure of returning focus to our origins: The Dorchester, open since 1931, Dorchester Collection’s founding property. Last December, The Dorchester completed the first stage of a major refurbishment programme. The interior architect Pierre-Yves Rochon has redesigned the hotel entrance, The Promenade, the new Cake & Flowers as well as the guest rooms and suites. These include new signature and junior suites that offer more residential-style accommodation. Martin Brudnizki, meanwhile, has been appointed to redesign the bar, which he did with a clever “roaring thirties” theme, now named Vesper Bar.

I encourage guests visiting The Dorchester to pay particular attention to the selection of contemporary artworks by British artists, featuring an oil painting by Christian Furr based on Hyde Park and a sculpture by Sophie Coryndon inspired by bees, on display in the entrance. They pay tribute to the British designed landscape tradition, its gardens and manor houses that, in the 18th century, enticed travellers to visit England, creating a demand for luxury hotels—our heritage that remains vibrant as ever today.

I also recommend lovers of the British country landscape to visit and enjoy the views from the conservatory adjoining Coworth Park’s new restaurant, Woven by Adam Smith (see more on page 14) opened, this past September. Coworth Park is surrounded by idyllic Berkshire lands, which is reflected in Woven’s restaurant concept and design, as well as the largely locally sourced menu; it notably features many English wines. A read through these pages references the variety and richness of our dining experiences across Dorchester Collection such as those found at Woven. Also, an article on page 36 with rising French chef, Jean Imbert, provides insight into the Parisian culinary scene and the newly opened restaurant, Jean Imbert au Plaza Athenée. We are pleased to announce the restaurant has earned one Michelin-star in just under a year.

In addition to nurturing our roots in Europe, we are looking forward to the highly anticipated opening of The Lana this September, as our first hotel in Dubai. The UK’s award-winning architects, Foster + Partners, has designed two connected towers located on the waterfront: one 30-storey tower housing our 5-star hotel, and the other 32-storey tower housing a collection of 39 residences benefitting from the services of The Lana. This is just one example of service as a product offer going beyond the framework of a traditional hotel environment.

Dorchester Collection considers service to be such a strong and important value that, over the past several years, we have linked our services to choice management partnerships such as this. We started with Mayfair Park Residences next door to 45 Park Lane, then entered into exciting development projects with OMNIYAT in Dubai.

This witnessed the early 2022 opening of One at Palm Jumeirahalso private residences with Dorchester Collection services in place, Ava at Palm Jumeirah which includes 17 Dorchester Collection-serviced private homes, and ORLA situated beachfront at the apex of Palm Jumeirah. The properties in Dubai that we are involved in offer unparalleled views of Dubai and the Arabian Gulf, and provide a level of comfort and service of the highest international standards. Our increasing expansion in Dubai marks an exciting development for Dorchester Collection, building even stronger and broader international connections, taking service beyond heritage hotels and now into private homes.

Over the years, I have always maintained the belief that remaining static and satisfied with former accomplishments is, simply, not an option; we must always find ways to innovate, improve and expand our offer to keep heritage alive, and to accord with the ever-evolving needs of those whom we take under our care. In many ways, Dorchester Collection is its guests. It is beautiful properties and places, indeed, but it is truly the human experience that happens within them - taking care with beauty, ease and kindness, wherever that may be.

The Korean Wave

The first exhibition of its kind, ‘Hallyu! The Korean Wave’, traces Korean pop culture, from its early origins up to its current position as a global force of influence.

From K-pop costumes and a newly revealed interactive K-pop dance challenge, to K-drama and cinema props and posters, alongside photography, sculpture, fashion, video and pop culture ephemera, the exhibition invites visitors to delve into the phenomenon known as ‘hallyu’ – meaning, ‘Korean Wave’. The exhibition features around 200 objects including an immersive re-creation of the bathroom set from the Oscar-winning film, ‘Parasite’.

Brain Forest

Brain Forest Quipu is the seventh annual Hyundai Commission for the Turbine Hall at Tate Modern. Cecilia Vicuña is a Chilean artist and a founding member of Artists for Democracy, an organisation that engages in the arts for political action. Her exhibition at the Tate is a multi-part installation which represents the mourning for the destruction of forests lost in deforestation, the negative effects on global warming, and the atrocities committed against Indigenous people.

AFRICA FASHION

The colours of African fashion shine bright in an exhibition at the V&A: ‘Africa Fashion’. Forty-five designers from over twenty countries showcasing the creativity and innovation of contemporary African fashion are on display. Many of the garments on show are taken from the archives of a selection of iconic mid-twentieth century African designers – Shade Thomas-Fahm, Chris Seydou, Kofi Ansah and Alphadi, the first time their work is shown in a London museum.

One of the best pastry chefs in the world according to his numerous accolades, Angelo Musa, executive pastry chef at Hôtel Plaza Athénée in Paris, has opened his first ‘pâtisserie’ outside of France, at Harrods in London. Customers indulge in signature creations such as 100% Vanilla, one of Musa’s famed desserts and Papilio, a delight made of passion fruit and chocolate which won him the World Pastry Cup.

After Impressionism

The exhibition ‘After Impressionism’ at The National Gallery assembles a hundred of the most important works of European cities from 1886 to 1914, a period that had radical effects on art history. Paintings and sculptures by artists such as Cézanne, Van Gogh, Rodin, Picasso, Matisse, Klimt, Kandinsky and Mondrian are sourced through loans from museums and private collections around the world. Highlights of this wide-ranging international survey include André Derain’s ‘La Danse’; Edgar Degas’s ‘Dancers in the Foyer’; Paul Cézanne’s ‘Les Grandes Baigneuses’; and Edvard Munch’s ‘The Death Bed’.

UK Sommelier of The Year

Need an excuse to taste a well-chosen champagne? Vincenzo Arnese, head sommelier, Alain Ducasse at The Dorchester, was named Taittinger UK Sommelier of the Year 2022. To earn the title, he passed a series of blind taste-tests, a knowledge exam, error-spotting on a wine list, proposing food pairing options and the final test of flawlessly serving a magnum bottle of Taittinger champagne into a large number of glasses within a limited amount of minutes.

Donatello: Sculpting the Renaissance

Donato di Niccolò di Betto Bardi, famously known simply as Donatello was one of the greatest Florentine sculptors of the Renaissance era and arguably one of the greatest sculptors of all time. The artist receives a full spotlight at the V&A with the exhibition that features many of his works, including works in marble, bronze, wood, terracotta and stucco, that have never been on display in the UK.

Sweet Expectations

Michael Kwan joins The Dorchester as executive pastry chef, leading the 25-strong brigade of chefs and bakers responsible for confecting cakes and pastries for the hotel, the new Cake & Flowers boutique as well as the delights served for afternoon tea within The Promenade. Kwan comes with over 14 years of experience, including his role as head pastry chef at Ladurée; he began baking at the age of 15 in Hong Kong, his hometown. Kwan has gone on to make his mark on the UK patisserie scene. Named UK Sugar Champion 2019, he has also represented the UK for the Coup du Monde de la Patisserie in Lyon, France, since 2019. In the 2021 competition, the team finished fourth, the highest UK positioning ever.

Jadeite forms when continents collide. A meeting and a transformation that resonates within Asprey’s new Imperial Jadeite collection—future heirlooms at the intersection of British artisanal heritage and rich Chinese folklore.

here are two types of jade, this storied material in Chinese ancient culture: nephrite, which has been used to make jewellery, ornamental pieces, tools and weapons for at least five millennia and jadeite, which is rarer and more recent within Chinese culture. Discovered in the 1700s in Burma, modern-day Myanmar, its beguiling and bright emerald green made it the immediate favourite within the Chinese imperial court. During the Qing Dynasty, around the time Britain was going through the Victorian era, Empress Dowager Cixi found it such a seductive material, she utilised it for everything from chopsticks to tea bowls in the Changchun Palace.

Jadeite’s unusually lustrous hue is incredible when it interacts with light; its pure crystal structure converts the light passing through it into an enigmatic glow. It is so high on the Mohs Scale that a hammer blow makes it ring rather than rupture. Asprey, a British institution, a creator of family heirlooms in materials from silver to crystal, porcelain to leather since 1781, debuts a collection made uniquely of this covetable material: Imperial Jadeite.

The collection of bracelets, bangles, pedants, rings, broaches, necklaces and elaborately carved sculptures are replete with symbolic resonance. Unframing Colonialism

The exhibition ‘Unframing Colonialism’ at the Centre Pompidou revisits the emergence of a photographic sentiment in 1931: reacting to the Paris Colonial Exhibition in Vincennes in 1931, which attempted to paint colonialism in a positive light. At the time, artists of France’s Surrealist movement mobilised against France’s imperialist policy. An exhibition at Musée de l’Homme casts a new light on prehistoric artistic practices, connecting them to today.

The 7th floor of Hôtel Plaza Athénée displays a touch of Art Deco flair with its 22 rooms and suites designed by Bruno Moinard and Claire Bétaille. Given a sleek opulence and brighter styles, the woodwork has been lightened, as have the hues in the furnishings, with an added emphasis on angularity and lines overall.

Legendary Artists Trails

Guests at Le Meurice are given the unique experience of following in the footsteps—quite literally—of legendary artists Pablo Picasso and Claude Monet. Picasso (who had his wedding banquet at Le Meurice) had his first Parisian atelier in Montmartre.

The Picasso trail is a two-hour, expert-guided tour of the Parisian neighbourhood, reputed for its bohemian artist lifestyle, featuring the sites and scenes that contributed to making the artist the legend he has become. For Monet, the trail begins right outside Le Meurice at the Tuileries Garden, which was the subject of his 1876 painting ‘Les Tuileries’, and ends at the Museé de l’Orangerie which houses the artist’s ever-iconic water-lily panels.

Giuseppe Penone

Giuseppe Penone is an Italian sculptor, a prominent figure in contemporary art known for his impressive tree sculptures, an avid drawer, and a member of the Arte Povera movement. In 2020, the artist made a major donation to the Musée National d’Art Moderne in Paris of 328 drawings covering fifty years of creation from 1967 to 2019. A current exhibition at Centre Pompidou reveals a large part of the donation to the public. He has a personal approach nourished by philosophical reflection and poetry on the relationship between man and nature. “I draw like I take notes,” explains the artist who always has a piece of paper with him. And drawing, like sculpture, is for Giuseppe Penone a way to transcribe the gesture, to reveal the form.

Following the success of the first edition of Le Prix du Meurice, Le Meurice’s literature prize, the hotel will be launching the second edition in June of 2023. Le Prix du Meurice seeks to recognise literary extravagance—be it in subject matter, writing style or in the personality of the author. The winner of the prize is awarded a cheque of 3,000 euros along with a three night stay at Le Meurice. The first edition’s winner was Louis-Henri de la Rochefoucauld with his novel, ‘Châteaux de Sable’.

Hôtel Plaza Athénée welcomed chef Jean Imbert in 2021, placing him at the helm of the hotel’s culinary icon and haven for ‘haute gastronomie’, Jean Imbert au Plaza Athénée; in under a year, it earned a Michelin star. Chef Imbert entered boldly, and with a radically simple concept: return to the classics.

o paraphrase Oscar Wilde, sometimes being too modern can appear old-fashioned. The talk of the town, French chef Jean Imbert, flips the coin by making the old-fashioned appear incredibly modern.

Whilst also overseeing the Le Relais Plaza restaurant at Hôtel Plaza Athénée, a Parisian institution with its original 1936 art deco interior, it is at Jean Imbert au Plaza Athénée that the chef is pushing creativity through the happy constraints of tradition. Each dish on the menu is inspired by an iconic recipe taken from France’s most storied culinary heritage.

“With tremendous humility, I had this desire, ingrained in me since childhood, to pay tribute to classical French cuisine, which is both sumptuous and fascinating, and which transcends trends throughout the centuries, while remaining deeply modern,” he explains. The dish ‘Langouste en Bellevue’, for example, served with mixed vegetables, arrives majestically in the dining room with a cascade of jelly medallions adorning its back. Other dishes, such as the ‘Vol-au-Vent’, ‘Veal Orloff’ or ‘Canard à la Bigarade’ (duck with orange sauce, topped with citrus fruits before being roasted) are veritable French legends.

“I would like our guests to be instantly transported to a world beyond time when they pass through the door of the restaurant, as I would have dreamed of dining at the tables of Auguste Escoffier, François Vatel or Antonin Carême in a bygone era.” Sources of direct inspiration for chef Imbert, they are also authors of some of his first cookbooks.

With pastry chefs Angelo Musa and Elisabeth Hot presenting equally iconic desserts, such as the ‘Ambassadeur’, individually hand-decorated with rose petals, and an evening’s choreography perfected by maître d’ and restaurant director Denis Courtiade, a diner’s experience is what Escoffier posited as the ideal of cooking when he wrote at the turn of the 19th century, into the 20th: “Good food is the foundation of genuine happiness.” In France, certainly at Hôtel Plaza Athénée at least, this is very much still believed to be so.

Often referred to as ‘the most Parisian of Japanese designers’, the fashion industry veteran Junko Shimada has been designing from her adopted home of Paris for over 50 years, to the delight of both French and Japanese clients. The result is a refined and unexpected fusion of moods and cultures that is fresh and full of freedom.

lways new, never nostalgic. In fact, fashion designer Junko Shimada does not like nostalgia; she likes her next collection. This attitude manifests throughout the years—a diverse sampling of her extensive archive can be found on her eponymous brand’s website. Looks are always of their time but outside it: fun but not silly, energetic without being trendy, refined without feeling stifled.

Perhaps it is the lighter vibe from her hometown origins in Tateyama, Chiba, Japan, renowned as a popular beach and surf town outside of Tokyo. Or, perhaps it is her senses, forever marked by her maiden arrival to Paris in 1966, at age 25, in an era when French fashion was going through incredible evolutions of attitude, production and style. Nevertheless, Junko Shimada maintains a notion of freedom before all, throughout her many years of creation.

Having graduated from Sugino Gakuen Dressmaker’s College in Japan, upon her arrival in Paris, she began working with the department store Printemps and, later, for the brand Cacharel, before launching her own designs in 1981. She opened her first boutique in the Marais three years later.

Junko Shimada’s extravagant style is more akin to an ultra-refined version of Tokyo street-style than it is to the extremely sober, minimalist looks of Japanese designers who influenced Parisian fashion in early 1990s such as Issey Miyake, Kenzo Takada, Comme des Garçons, and Junya Watanabe. She arrived in Paris before them, and has outlasted them; in fact, her designs were never part of a collective movement; they were always, and still are, distinctively Junko Shimada.

Her style and aesthetic is, arguably, more Parisian than it is typically Japanese, or aimed at deconstructing traditional cultural hegemonies—an element, notably, that seems to please the Japanese consumer, given she has over 20 boutiques in the country. To the French, on the other hand, she is Parisian—but not totally. To both, the conversation happening through design always presents something new.

As the designer is now into her early 80s, the Junko Shimada Spring-Summer 2023 collection expresses a visual and tactile sentiment of purification. All white, full-length linen looks, some in breezy cotton, are layered with airiness and elegance. Or, a full-length nude sequin backless dress, with an integrated hood that falls, just so, upon the shoulders. Unexpected. Elegant, and free. Junko Shimada.

Rising culinary star, chef Connor McVay, has perfected his skills with the Wolfgang Puck team and now oversees Wolfgang Puck at Hotel Bel-Air restaurant. McVay has been working at Hotel Bel-Air since 2016, forging his way from sous-chef to his current role as executive chef. His signature dish? Understanding the Fabric of a Nation

‘Fabric of a Nation: American Quilt Stories’ at Skirball Cultural Center delves into the stories behind 300 years of American quilts. The exhibition features works by more than 40 artists including Harriet Powers, Bisa Butler, and Sandord Biggers, celebrating the artistry and vision of a diverse and largely underrecognised group of creators. It brings light to stories that enrich, deepen and complicate our understanding of the American experience. The Skirball’s presentation will feature additional works by Los Angeles artists Sabrina Gschwandtner, Ramsess, and Sula Bermúdez-Silverman, as well as a quilt from its own collection highlighting key moments in American Jewish history.

J. Paul Getty Life and Legacy

A permanent exhibition at the J. Paul Getty Museum tells the story of the man behind the institution’s name. The art collector, philanthropist and business mogul donated much of his wealth to create the arts institution. Renowned as the richest man in the world in the 1950s and 60s, Getty made his fortune in the oil business. Getty’s estate was given to his small namesake museum, along with a remarkably broad directive.

Alphonzo Bell was the real estate magnate who founded the L.A. neighbourhood, Bel-Air, named after him. Now the tycoon gets his own namesake at Hotel Bel-Air with the Bell Suite. The suite was Bell’s estate office in the 20s and features the original engraved wooden ceiling. The suite is glamorous and modern whilst steeped in founding history.

A Bright Idea

s regulars at the celebrated Milan Furniture Fair, and amongst those Americans who consider Paris a second home, Marcus and Monica Tremonto’s passion for light-as-artistic-medium began with a poorly lit New York loft. Marcus studied physics and mathematics before going on to get his Masters in Fine Arts from the Art Institute of Chicago, then founding the New York-based Treluce Studios with his wife and partner Monica Tremonto in 2002. They began experimenting with man-made light sources as a means to express an idea, an emotion or a visual harmony. It is now “a complete, insane fascination,” explains Marcus. The work straddles that of interior design and contemporary art, placing the creations of Treluce Studios in line with the likes of artists Dan Flavin and James Turrell. Former projects include a cascading ribbon light fixture made of carbon fiber as well as the design of a little Lightbotz for Kidrobot, a company making limited edition art toys, and a playful collaboration with Nike.

Treluce Studio’s latest creative work is something akin to “light scribbles”, using custom-made seamless LEDs for an incredibly thin, lightweight line of white light. Other designs add a light source to a supporting structure, yet their innovation has the light be the structure in one fluid self-contained line. Meticulously hand-formed, these ribbons are Marcus Tremonto’s drawn sketches, illuminated into three dimensions. Speaking of the new series, Tremonto explains the spark behind the process: “What I love most is that I have found the harmony of being able to draw the work in completion...to turn what is on the page into the actual object by my hand; it is incredibly beautiful to me.”

A process that goes to the essential, reducing steps so the mind is expressed through matter ever so cleanly. And it is beautiful, too, to those looking for more light in their lives, a source of interior light that says something with no words at all.

Marcus and Monica Tremonto of Treluce Studios are doing the fundamental creative work shaping the future of lighting design. The duo’s latest project goes straight to the essential, a veritable artist’s sketch made of light.
