orazón de Alcachofa is located in Polanco’s most famous avenue. The restaurant is an elegant establishment with a cozy and relaxed atmosphere, where delicious food is served. We can assure you that even the most demanding diner will leave here with a smile. To find out a little more about this place, we had a pleasant chat with chef Francisco Navarro. Chef Paco, as his team calls him, is originally from Mexico City and has extensive experience in the food sector in our country. Although he did not attend culinary school, he worked in different kitchens where he learned to merge flavors. When asked why anyone should visit Corazón de Alcachofa, he said, “This is

the only restaurant in the Polanco area that offers the concept of market cuisine; therefore, it does not have a printed menu, but rather rolling boards where the menu of the day and the number of dishes available are posted. As they are ordered, the dishes get deducted from the board because we only use organic and fresh products.” The artichoke (alcachofa) is a native African product, and the Spanish sailors brought it to America. In Mexico, it is mainly produced in Michoacán, Puebla and Guanajuato; however, the ones used in Corazón de Alcachofa are brought from Texcoco every day. Although this vegetable is known in Mexico, its demand is relatively modest, so we asked Paco why the owners chose the artichoke to be the soul of the restaurant. He replied: “For us it is a very versatile vegetable. We take it as a flagship dish because nobody uses it like
