While grilling is usually associated with more Americans are summer, recognizing its year-round potential. In fact, 80 percent of North American households own a grill or smoker and 60 percent use it year-round, according to recent statistics from the Hearth, Patio & Barbecue Association. It’s no surprise that many Thanksgiving recipes can be reinvented outdoors. “Grilling your bird over lump charcoal creates a succulent, flavorful entrée,” says Don Crace, President of Cowboy Charcoal, a brand that caters to grilling purists of the charcoal variety. For a uniquely smoky flavor sure to impress the crowd, try this recipe for Cowboy’s Perfect Bourbon-Maple Smoked Turkey:
Ingredients • 1 thawed or fresh turkey • 1 onion • 2-3 garlic cloves • 3 sprigs rosemary • 3 sprigs thyme • 1 bay leaf • Olive oil • Salt (at least 2 cups) • Pepper • Cowboy All Natural Lump Charcoal • Hickory wood chips • 1 cup bourbon • 1/2 cup real maple syrup
Directions • Remove neck, giblets and excess fat from turkey. Make gravy from giblets and neck, if desired. • Completely rinse turkey inside and out. • Place turkey in large brining bag that will fit in your refrigerator. • Create brine with 2 gallons water (or enough to cover turkey), 2 cups salt, 1 cup bourbon and 1/2 cup maple syrup. • Refrigerate at least four hours. • Remove turkey from brine, rinse and thoroughly pat dry. • Add onion (sliced in half), garlic cloves, rosemary, thyme and bay leaf to inside of turkey. Season the inside with salt and pepper. • Tie legs together with cooking string and twist wing tips under the back or cover with foil to prevent burning.

• Brush outside of turkey with olive oil and sprinkle with salt and pepper. • Soak a full package of Cowboy’s Hickory Wood Chips in a large bowl for 30 minutes. • Place a foil pan below the grate on one side of grill to catch drippings. To prevent excess smoke, fill it halfway with water. • On the other side of grill, add two pounds charcoal and light it. • Drain water from wood chips. • When lump charcoal is ash gray, add about one cup of wood chips to the fire. Place grate back on grill. Let preheat for about 10 minutes. • Arrange turkey on the grate, above the pan. • Place lid on grill and cook turkey for approximately 15 to 20 minutes per pound, until internal temperature reaches 180 degrees. • Add additional wood chips and charcoal every 30 minutes or as needed. • When done, transfer turkey to serving platter, cover with foil and let stand 15 to 20 minutes before carving.

In the original TV version of the show, Rudolph, Hermie the elf and Yukon Cornelius visit the Island of Misfit Toys and promise to help them, but the Misfits are never mentioned again. Enjoy the Holidays without the Weight Gain
(StatePoint) On average, Americans gain weight during the holiday season. While the weight gain may not be dramatic, research shows it tends to stick and accumulate over the years. But you don’t have to succumb to this progression, say experts. “There are strategic steps to avoid holiday weight gain while still enjoying friends, family and holiday feasts,” says Sonya Angelone, registered dietitian nutritionist and Academy of Nutrition and Dietetics spokesperson. In preparation for a big holiday party or feast, do not skip meals throughout the day. This may result in overeating later. “It is especially important to eat breakfast,” says Angelone. “High-fiber and high-protein foods like oatmeal and milk with fruit, an egg and spinach on whole wheat toast, Greek yogurt with nuts, or nut butter on a whole-wheat English muffin will satisfy hunger without a lot of calories.” Holiday meals tend to be large or buffet-style and include second and third helpings. While most people wouldn’t consider eating an entire cake, a common mistake is eating large portions of foods that are perceived as healthful. To avoid overeating, use a smaller
plate. It will encourage proper portion sizes. Also, start by filling your plate with vegetables and salad before going to the entrees and desserts. Research shows eating a salad before your meal can help you eat fewer calories overall. Eat slowly and savor every bite. Before you go back for seconds, wait 10 minutes to see if you really are still hungry. Including nutrient-rich foods in your diet is great, just remember that these foods have calories too, which should be taken into consideration with your whole eating plan. “And be mindful of alcohol consumption. Drink more water throughout a party to quench your thirst and help keep the cocktails to one or two,” says Angelone. Lighting a Christmas tree may seem like child's play, but time and again people struggle with the task. Untangling wires and wrapping them around boughs can be nerve wracking, but lighting a tree doesn't have to be a chore when you follow some tips from the professionals. First, keep in mind that wrapping lights around the tree horizontally is more work and often doesn't produce a multidimensional effect. Rather, string the lights from the trunk up to the top, working vertically. This is actually how the tree decorators at Rockefeller Center in New York City do the famous tree year after year. This method helps eliminate tangled wires and empty spots. Remember to plug in the strands of lights before you begin to check for burnt-out bulbs and to adjust the spacing of lights to prevent dark spots. Think about varying light bulb sizes to add more dimension. String an inner layer of small LED white lights to produce an inner glow on the tree before
adding larger, colored lights on top to increase visual appeal. Just be sure to match the same wattage of the lights so that you do not have power surges and can prolong the life of the bulbs.

SANTA SAYS THE (StatePoint) One of the most important aspects of holiday entertaining is sometimes overlooked -- proper pairing of the food and wine. Even if you have a bottle of top quality wine and an amazing chef-inspired dish, without considering how the food and drink combine, you can ruin the taste of both, say experts. One commonly mismatched wine is Cabernet Sauvignon. “I have a simple goal with food and wine pairings: don’t mess with the taste of the wine,” says Dean Busquaert, a wine educator at Sequoia Grove Winery, a pioneering Cabernet Sauvignon producer in the heart of Rutherford in Napa Valley. Bold, full-flavored reds like Cabernet Sauvignon will overpower light dishes, but are excellent when served with rich meats like a roast, making them perfect for the holidays. Busquaert, who often shares his pairing wisdom at the Sequoia Grove tasting room, offers some invaluable pairing tips for home cooks planning to serve a Cabernet Sauvignon at their festivities. • The number one thing to avoid pairing with Cabernet Sauvignon is sugar, which will throw off the tannin balance of the wine and make it seem astringent and bitter. For example, many people think chocolates pair well with red wine however, they don`t -- unless it is a port which has residual sugar. Sugar content, whether it comes from fruits like grapes or apples, or honey and chocolate, is simply not a good choice for Cabernet Sauvignon. • To make a Cabernet Sauvignon taste more velvety, pair it to dishes high in acidity. For example, adding a splash of lemon to a dish can smooth out a big and structured Cabernet Sauvignon. • Don’t be fooled by conventional wisdom. The holiday season has arrived, and millions of people across the globe will be celebrating Christmas with their families and friends. The following are some interesting tidbits to share with your loved ones this holiday season.
• Each year, more than three billion Christmas cards are sent in the United States alone.
• In 350 AD, Pope Julius I, bishop of Rome, proclaimed December 25 the official celebration date for the birth of Jesus Christ. Many historians and theologians have surmised that Christ really wasn’t born this time of year, thanks to imagery and information from the Bible. • Christmas carols began as an English custom called “wassailing.” Individuals toasted neighbors to a long and healthy life.
• Despite the common tale that three wise men paid homage to baby Jesus, the Bible never specifically calls out a number. Similarly, there’s no specific indication that they visited the infant Jesus. Their visit may have occurred when Jesus was older. • Santa Claus’ modern look was inspired by writings from The Knickerbockers of New York and imagery from Clement Clarke Moore’s “A Visit from St. Nicholas.” Moore denied authoring the famous poem for 15 years after it was published anonymously, feeling the poem was beneath his talents. • Santa has his own official postal code. It’s H0 H0 H0.
• The song “Jingle Bells” was originally written for Thanksgiving and not Christmas. People loved it so much that the lyrics were changed to fit Christmas. • Christmas trees typically grow for 15 years before they’re cut and sold. This means the trees sold today were likely planted in 1999. • Christmas was not declared an official holiday in the United States until June 26, 1870.
• Before turkey, the traditional Christmas meal served in England was a pig’s head and mustard.
• Male reindeer tend to shed their antlers in the winter. This means Santa’s reindeer are likely female.
• Christ may have been born in a cave rather than a manger. According to the gospel of Luke, the shepherds that helped find shelter for Mary to give birth kept their flock in a cave. The Church of the Nativity in Bethlehem is built over a cave called the Grotto of the Nativity, where Jesus is believed to have been born.
• Many people may be less inclined to stand under mistletoe waiting for a kiss if they knew what “mistletoe” means in the ancient Germanic language. It literally means “dung on a twig,” for the bird who eats the berries and then leaves seeds in droppings to propagate new plants.
• Each holiday season, PNC Wealth Management calculates the costs of the gifts in the song, “The 12 Days of Christmas.” The price index for the gifts went from $12,673 in 1984 to more than $24,000 in 2011. The most expensive gift is the swimming swans.

Ingredients
24 Rhodes™ Dinner Rolls, thawed to room temperature 2 tablespoons butter, melted 2 cups grated sharp cheddar cheese 2 cans diced green chilies, drained 1/2 teaspoon garlic salt Grated Parmesan cheese Preparation
Spray counter lightly with non-stick cooking spray. Combine 12 rolls together and roll into 18-inch-by-12-inch rectangle. Repeat with remaining 12 rolls. Brush both dough rectangles with butter. Combine cheddar cheese, green chilies and garlic salt and sprinkle over one dough rectangle. Top with remaining dough rectangle, butter side down. Cut into twelve 1 1/2-inch strips.
Twist each strip several times and turn one end to resemble a candy cane or shepherd's hook.
Place at least 1 inch apart on large sprayed baking sheets. Sprinkle with Parmesan cheese. Bake at 350°F for 15-20 minutes or until golden brown. Serves 12

ounces dark chocolate (60 to 70% cocoa solids), grated teaspoons ground ginger
ounces whole pieces preserved stem ginger, drained and roughly chopped stick (8 tablespoons) unsalted butter, softened
cup plus 2 tablespoons dark brown sugar, sifted (to remove lumps) medium eggs, beaten
teaspoon baking soda
tablespoons milk, warmed A pinch of salt
Extra-large crystallized ginger pieces, to scatter (optional)
A deep 8-inch square cake pan or 8 x 6 x 3-inch oval cake pan
Preheat the oven to 325 F. Grease and line the base and sides of the cake pan with nonstick parchment paper.
Put the molasses in a pan and heat gently until hot, but do not allow it to boil. Remove the pan from the heat and add the chocolate. Stir until melted. Sift the flour, ground ginger and salt together in a bowl. Add the stem ginger and toss it around in the flour until every piece is coated. Using an electric mixer, cream the butter and sugar in a large bowl. Beat in the eggs, then the molasses and chocolate mixture and finally the flour mixture. Dissolve the baking soda in the milk and gradually beat this into the batter.
Pour into the prepared cake pan, scatter with the crystallized ginger, if using, and bake for 45 minutes. Reduce the oven temperature to 300 F and bake for another 30 minutes. (If using the oval pan, cook for about 45 minutes at the higher temperature, then about 1 hour at the lower temperature, as it will be deeper.) A metal skewer inserted into the center should come out clean. Let cool for 5 minutes in the pan, then turn out onto a wire rack and let cool completely. When cold, store in an airtight container for at least a couple of days to mature and become sticky. Don’t worry if it sinks a bit in the middle — this is normal.

“WHEN IT’S HARD TO BE THANKFUL”
“Be joyful always; pray continually; give thanks in all circumstances, for this is God’s will for you in Christ Jesus” – I Thessalonians 5:16-18
According to the above verse, it is the will of God that we be thankful in all circumstances. But we must all admit there are times when it is hard to be thankful. The key to understanding is the preposition in. Apostle Paul does not say, “Give thanks for all circumstances. He says to be thankful in them. We are not thankful for such things as human suffering and loss but we can be thankful in them. Why? • Come what may, God is with us. (Matthew 28:20) • Come what may, God is for us. (Romans 8:31) • Come what may, nothing can separate us from His love (Romans 8:38,39) Notable Examples: • Jesus Christ (Suffering Servant) • Apostle Paul (Christian martyr) • St. Francis of Assisi (who was voluntarily poor) • Pilgrims at Plymouth Rock (cold, hungry, afraid) • Dr. Martin Luther King, Jr. (Christian martyr) Gratitude is a true sign of the presence of Jesus Christ in our lives. So…when it’s hard to be thankful … keep on believing … keep on trusting … keep on loving and God will see you through. Prayer: Lord, give me a grateful heart. In Jesus’ name. I cherish the memories we made together over our 35 years. I reflect back with smiles, some laughter, but still many a tear I shed. I look at your empty chair & wish I could see you there. I love you with all my heart & someday will be with you.
Barbara Sweet passed away Sunday, November 16, 2014 in Kalamazoo. Barb was born June 10, 1914 in Kalamazoo to Harry and Cora Belle (Hart) Baird and was raised by her mother and step-father, Sidney Maple. She was a 1932 graduate of Kalamazoo Central High School and was baptized in the First Presbyterian Church of Kalamazoo. Barb was a devoted homemaker and in her leisure time enjoyed gardening, knitting and exercising, especially walking. She maintained a good sense of humor and always took a personal interest in every person she met. Barb lived independently until age 99 at which time she moved into assisted living at Park Village Pines. She received much love and care from the staff there. Her 100th birthday celebration with family and friends was a very special day for her. It was a happy celebration that she spoke about often. Surviving are her daughter, Sue (Bill) Binning of Kalamazoo; four grandchildren, Brian (Susan) Binning, Jeff (Kate) Binning, Trent (Timberlie) Yanz and Deborah (Loli) Alharthi; eight great-grandchildren; a niece Carol Messner; and several cousins. In 1965 through an exchange program Janke Loenen Brans, from the Netherlands, has been like a daughter, and they have maintained a close contact since. Barb was preceded in death by her husband of 60 years, Robert Sweet in 2001; her daughter, Joan Marie Yanz in 1987; and her sister, Charlotte Hoft. Cremation has taken place and a private graveside service at Alamo Center Cemetery will be held on Tuesday, November 25, 2014, at 11:00 A.M., Chaplain Esther Sapp officiating. Contributions in memory of Barb may be made to the Kalamazoo Area Christian Retirement Association, Inc. (Park Village Pines Resident Fund) or the Kalamazoo Humane Society. Arrangements by Winkel Funeral Home Messages of condolence may be posted at www.WinkelFuneralHome.com

If a family is homeless, they share with us if they are living with friends/family or if their situation would be considered inhabitable, such as living out of their car or perhaps sleeping outside. Of the two situations, we might think that some situations are better, and given the opportunity, living with friends or family would be preferred. Unfortunately, when I met Tanya that was not the case.
Tanya had served in the military since she graduated from high school. Many budget cuts were being made throughout the government and with that, the military had started downsizing. After 11 years of service, her job was cut. She had been out to sea when her husband was deployed with the reserves and their 4 children were living with her parents here in Michigan. With 10 days to pack up her family and find them somewhere to live (most of that time spent on the boat back to land), she chose to live in the same area as her sister. The cost of living was lower and they thought they would be able to find jobs quickly. The situation was not what she had expected at all. Her sister gave her a walk-in closet for her and her family to live in. Shortly after they settled into the closet they were given, her husband returned from deployment. He wasn’t back very long when they were told they needed to find other arrangements. Desperate to get out of their living situation, they tried to find an apartment to rent. They had their stipends from the time they had served, but without jobs and a steady income, they were unable to find someone willing to rent to them.
They invested part of their money into a mobile home and lived there until they eventually got jobs. Until they were back on their feet, they frequently had to make use of food pantries and soup kitchens to get by. After 3 years they have established stable careers and were recently able to purchase a home of their own.
Every story is different. Families that are homeless are unemployed and employed. They are active military or veterans, businessmen, high school graduates, and people with disabilities. They are seniors. They are children.
Since the first of the year, Christian Neighbors has served 70 homeless individuals or families (169 people) with a variety of services. We have taken some of these precious people through our food pantry, helped to complete and file homeless verification forms for one of our local subsidized housing units, paid back utility bills, or helped with first month rent into a local apartment. Without your help we would not be able to help families like Tanya’s.
