Every year since 1988 Wine Spectator has published a list of the best 100 wines that reflect the year’s most important industry-wide trends and focus attention on the most successful vintages and regions around the world. In 2014 the celebrated US magazine, which granted our 2010 Don Melchor 95 points in May, ranked it 9th of the 10 best wines in the world, the only Chilean wine among the Top 10. SUCCESSFUL DON MELCHOR 2010 LAUNCH AT VINEXPO HONG KONG

Vinexpo, the international wine world’s most important event of the year, was held on May 27–29, 2014 in Hong Kong. 35 countries showed their finest wines, and of course, Don Melchor was one of the stars. This fair, now in its 33rd edition, is one of the international wine scene most anxiously awaited events, and the Asia-Pacific version has become one of the region’s most important and respected events. More than 16, 500 visitors attended the 2014 event.

During the three days of the fair, the public could also participate in tastings of wines such as the Concha y Toro icon Carmenere, Carmín de Peumo, as well as the Sauvignon Blanc and Cabernet Sauvignon from the Terrunyo line and different varieties of Marques de Casa Concha such as Chardonnay, Merlot, Carmenere, Syrah, and others.

Chile’s most widely recognized and most award-winning Cabernet Sauvignon was present in an exclusive stand with tastings led by Fine Wines Marketing Manager Isabel Guilisasti, who presented the company icon’s 2010 vintage to distributors and specialized press from around the world.

ISABEL GUILISASTI LEADS A TOUR OF ASIAN COUNTRIES AS PART OF THE BRAND’S EXTENSIVE “THREE DECADES OF DON MELCHOR” TOUR, ISABEL GUILISASTI, MARKETING MANAGER FOR THE COMPANY’S FINE WINES, VISITED NUMEROUS ASIAN CITIES TO PRESENT THE ICON CABERNET SAUVIGNON OF CHILE. Cristián López, the Corporate Expor t Manager for the Asian Zone, the marketing team, and Isabel Guilisasti, the Marketing Manager for Fine Wines visited of Korea, Japan, and Hong Kong to present “Three Decades of Don Melchor,” the exclusive collection of six carefully selected vintages—1988, 1993, 1999, 2001, 2005, and 2007—to demonstrate the extraordinary aging potential of the Alto Maipo icon Cabernet Sauvignon and present its 2010 vintage. The tour (May 15–June 13) began in Seoul, Korea with a seminar for collectors to present the six vintages included in the “Three Decades of Don Melchor” collection. During that time Guilisasti was also able to meet with media and give interviews for the local wine press, where she explained the special characteristics that make this Cabernet Sauvignon unique and why Puente Alto is one of the most widely recognized origins for the variety.

In Osaka, Japan, the activities were focused on the major sommeliers in the city’s most exclusive restaurants and included a special dinner for consumers at the Tsurucho Restaurant. Hong Kong, in addition to Don Melchor’s success at Vinexpo, the marketing team also met with local buyers and a select group of collectors for exclusive luncheons. The next stop was Vietnam, where they held tastings with the specialized press, members of the trade, consumers, and collectors. The team wrapped up their tour in Phnom Penh and Siem Reap, Cambodia’s two most important cities, where they led the final activities for wine writers, members of the trade, and collectors, thus concluding a successful tour for Don Melchor in one of the regions with the greatest potential for this brand.

ENRIQUE TIRADO ON TOUR DURING A PROGRAM THAT TOOK HIM TO ASIA’S MOST IMPORTANT CAPITALS, WINEMAKER ENRIQUE TIRADO LED A SERIES OF ACTIVITIES TO PRESENT VARIOUS VINTAGES OF DON MELCHOR.

Winemaker Enrique Tirado began his October 7–18 tour in Taipei, Taiwan, with a press conference to present “Three Decades of Don Melchor” prior to a Master Class in Tainan and a Wine Dinner in Taichung.

He also participated in a press conference and led an exclusive tasting dinner for customers of the Olivia Cassivelaun Fancourt Restaurant located in one of the most elegant buildings in Singapore’s historic center.

Later in Hong Kong, Enrique joined the renowned critic and Master of Wine Ned Goodwin to lead a tasting of the seven vineyard blocks that went into Don Melchor and the 2010 vintage. Par ticipants in the event included sommeliers and winewriters from important media such as HK Tattler, Wine Times, and Decanter magazine.

In Korea Enrique presented the vineyard’s seven blocks plus the 2009 and 2010 vintages to the local press and gave an interview for Wine Review magazine, which devoted its cover ar ticle to this winemaker and the way Chilean Cabernet Sauvignon has been positioned among the wines of excellence in the Asian market.

In Guangzhou and Shanghai, China the program included lunches and interviews with the press during which Enrique presented “Three Decades of Don Melchor,” as well as several activities with the trade, training sessions with the sales team, and exclusive Wine Dinners with consumers.

Enrique concluded his tour in Tokyo, Japan, where he met with major distributors, held training sessions with the sales force, led a Master Class on the seven blocks for members of the press and trade, and participated in an exclusive Wine Dinner for consumers, who were happy to learn more about this Cabernet Sauvignon, the characteristics of its origin, and the qualities that make it unique in the world.

Enrique arrived in Singapore on October 13 to lead a Master Class for distinguished members of the trade with tastings of the seven vineyard blocks and the 2010 vintage of the icon Cabernet Sauvignon from Alto Maipo.

NEW YORK AND BOSTON RECEIVE THE 2010 DON MELCHOR THE 24TH VINTAGE OF THIS HISTORIC CABERNET SAUVIGNON MADE ITS VERY SUCCESSFUL DEBUT BEFORE CUSTOMERS, DISTRIBUTORS, SOMMELIERS, AND THE SPECIALIZED PRESS.

Winemaker Enrique Tirado led a series of tastings in New York and Boston between June 18 and 21 as part of the presentation of the 2010 vintage of Don Melchor. In New York, he held a number of tastings for customers and distributors of the icon Cabernet Sauvignon of Chile as well as training sessions for important local sommeliers.

In Boston Enrique had the opportunity to meet with the specialized press in the celebrated Capital Grille Restaurant to guide a tasting that included the seven blocks of the vineyard that produce the grapes that make up the final blend of Don Melchor. The participants also tasted the 2010 vintage. Also in Boston he was able to share with a select group of consumers who participated in a wine tasting dinner at the prestigious Boston Wine School.

Also in Miami, Enrique met with food and wine writers to taste the 2010 vintage of Don Melchor and its seven vineyard blocks at the well-known The Capital Grille Restaurant in what turned out to be one of the most successful events of the tour.

The following day Enrique met with members of the local press and influential bloggers to taste the 2010 Don Melchor and the seven vineyard blocks in an exclusive event at The Grill on the Alley Restaurant.

Tirado concluded his activities with a tasting of selected vintages with consumers in the exclusive Yacht Club, an event organized in conjunction with the influential wine shop Eden Wines, where winemaker and participants alike shared their opinions about this exceptional Cabernet Sauvignon.

2010 DON MELCHOR EXCELS IN THE FIRST “ICON WINES FROM CHILE” SEMINAR DON MELCHOR WAS THE ONLY CHILEAN CABERNET SAUVIGNON FEATURED IN THE FIRST SEMINAR AND IN-DEPTH TASTING OF WINES FROM FOUR CHILEAN WINERIES.

For the first time in the history of the Wine Experience, a special seminar on “Icon Wines of Chile” was included with an in-depth tasting of Chilean wines led by US wine critic Kim Marcus. Concha y Toro was among the four participating wineries. Fine Wines Marketing Manager Isabel Guilisasti presented Don Melchor, a wine that has appeared on Wine Spectator’s Top 100 list many times. She explained the origin of this wine made with grapes from seven select blocks of the Puente Alto Vineyard at the foot of the Andes Mountains. Guilisasti also acknowledged two French members of the wine community, both of whom have died recently.

Consultant Jacques Boissenot made enormous contributions to Don Melchor, and Baroness Philippine de Rothschild’s work has had great impact on Chilean wines. Concha y Toro and the other three wineries that participated in the seminar placed special emphasis on the importance of showing the world the potential of high-end Chilean wines, and this seminar allowed them to demonstrate the importance of working together to construct the national image, which acknowledges the work the industry is doing to strengthen its place among the great wine producers of the world.

2010 DON MELCHOR LAUNCH AUGUST 9–12, ENRIQUE TIRADO VISITED THE BRAZILIAN CITIES OF PORTO ALEGRE, SAO PAULO, AND RÍO DE JANEIRO TO PRESENT THE 2010 VINTAGE OF DON MELCHOR.

In Porto Alegre, Enrique Tirado participated in an exclusive luncheon for the specialized press before leading a training session for the sales team at the prestigious Terrunyo wine shop, and later that night launched the 24th vintage of this Cabernet Sauvignon during an exclusive dinner for consumers. In Sao Paulo Enrique presented the 2010 vintage during a press luncheon at the Terraço Itália Restaurant and then joined the consumers in launching the wine at the exclusive Ville du Vin shop. He ended the day with a Wine Dinner for consumers.

In Río de Janeiro Enrique gave interviews with members of the local press, held a training session with the sales team at Cavist, and ended the day with a wellattended dinner with customers at the Cavist de Ipanema Restaurant, where he presented the 2010 Don Melchor, describing it as an outstandingly elegant and complex vintage with a highly attractive palate, soft tannins, fresh evolution, and a highly persistent elegant finish.

LIMA: FIRST OFFICIAL VISIT DURING HIS FIRST VISIT TO THE PERUVIAN CAPITAL JULY 7–10, WINEMAKER ENRIQUE TIRADO LED A SERIES OF TASTINGS TO LAUNCH THE 2009 VINTAGE OF DON MELCHOR.

As part of a long-awaited tour, winemaker Enrique Tirado began his first visit to Lima with an exclusive tasting with customers at the Fiesta Restaurant, followed by a visit to the Imagen del Pozito and Almendariz shops, and then enjoyed a tasting and dinner with Anita Almendariz, owner of this important Peruvian distribution company. The tour also included training sessions for the technical team at Astrid y Gastón, as well as sommeliers from prestigious restaurants such as Rosa Náutica, Cala, Lima 27, and others.

Enrique also led two pairing dinners with exclusive customers at the Hotel Country Club and participated in a luncheon at the Central Restaurant, where he presented the 1989, 1995, and 2009 vintages to numerous members of the specialized press. He also gave interviews with local media such as El Comercio newspaper, Sommelier magazine, and Perú 21.

TAMARA DE BAEREMAECKER, DON MELCHOR 2010 NOVEMBER 10–14, WINEMAKER TAMARA DE BAEREMAECKER PARTICIPATED IN NUMEROUS ACTIVITIES TO CELEBRATE THE LAUNCH OF THE 2010 VINTAGE OF DON MELCHOR. Upon arriving in San José, Tamara de Baeremaecker met with the Vinum Lindora team for some training sessions with the 2009 and 2010 vintages of Don Melchor before going to the Vinum Laureles Restaurant for interviews with the local press, including Ego magazine, and met with some of the brand’s exclusive customers. Later that evening she led an exclusive Wine Dinner for consumers at the Club Puro Vino de la Nación at the Hotel Grano de Oro, where the guests had the opportunity to taste the 1998, 1999, 2007, 2009, and 2010 vintages. The next morning Tamara met with sommeliers and managers of San José’s top restaurants to explain the characteristics that make Don Melchor a unique Cabernet Sauvignon. She later had lunch with Ciro de Angelis, the brand manager in Costa Rica and owner of A&B, gave interviews with journalists from

media such as Financiero, Puro Vino Digital, Nación, and Vivir y Comer, and wrapped up her day as the host of the official launch of the 2010 vintage with members of Costa Rica’s specialized press. The first activity in Panama was lunch with the local Don Melchor brand ambassador, chef Willy Diggelmann at the 1985 Restaurant, where she also met with journalists for interviews. That night she took charge of the exciting official launch of the 2010 vintage of Don Melchor. And before returning to Chile, Tamara spent the morning leading a training session with sommeliers and managers of major shops and had lunch with the chef Mario Castrellón of the Maitio Restaurant and some of the country’s most important on-trade customers.

AN EXTRAORDINARY CARMENERE

Twenty years ago French ampelographer Jean-Michel Boursiquot discovered a variety lurking among Chile’s Merlot vines that had long been thought extinct— Carmenere, a variety once grown in Bordeaux, France and that fell out of favor after the irreversible damage caused by phylloxera in the 19th century. It arrived in Chile about the same time, and trying to understand the variety and find the best soils and climate to grow it proved to be a great challenge. 16 · icon y ultra premium segment

The winemaker’s undertaking in Peumo MADE UNDER THE WATCHFUL EYE OF WINEMAKER IGNACIO RECABARREN, CARMÍN DE PEUMO IS THE INDUSTRY’S UNDISPUTED BENCHMARK FOR THE VARIETY’S BEST EXPRESSION IN CHILE.

It wasn’t easy, but winemaker Ignacio Recabarren’s expert and innovative vision is what helped to position Carmenere and led to the international notoriety it receives today—first with Terrunyo Carmenere and later with Carmín de Peumo, Concha y Toro’s Icon Carmenere wine. Considerable work with the variety showed that Peumo, in the Cachapoal Valley, was the best Chilean origin for the variety due to its sub-humid Mediterranean climate and the because influence of the Cachapoal River allows for the cool temperatures of summer nights that encourage the grapes to ripen slowly and evenly.

Carmín de Peumo’s extraordinary quality has been widely celebrated by international critics, and every one of its vintages has been named the Best Carmenere of Chile by media such as Wine&Spirits magazine in the USA and the Descorchados wine guide in Chile. It has also obtained distinguished wine critic Robert Parker’s The Wine Advocate’s highest score for a Chilean wine three times. With exuberant elegance and complexity, this wine represents the best expression of Carmenere and the Peumo terroir, one of Chile’s oldest wine regions, which, along with Pirque, is one of Concha y Toro’s oldest vineyards.

Carmín de Peumo, Chile’s first icon Carmenere, made its debut in 2006. It began in block 32 of the Peumo Vineyard, 170 meters above sea level with deep, clay-loam soils of alluvial origin. icon y ultra premium segment · 17

NEW VINTAGE OF ICON CARMENERE THE 2014 HARVEST OF THE ICON CARMENERE OF CHILE WAS MARKED BY A FAVORABLE YEAR THAT PRODUCED GOOD FRESH FRUIT EXPRESSION AND EXCELLENT RIPENESS IN THE GRAPES. The grapes for the 2014 Carmín de Peumo were picked May 5–8, and in the words of its winemaker, Ignacio Recabarren, they showed exceptional quality with elegant and expressive fruit, solid color, and delicate, refined, and silky tannins that were light and round on the palate, ending with a long finish. 2014 was a favorable year for the Peumo vineyards, with good springtime weather conditions and a few episodes of rain at the last minute that led to excellent final ripeness.

Total rainfall during the season was close to normal and reached 460 mm between May 2013 and April 2014, concentrated in the winter, with a bit of rain in November, which helped the bunches develop completely and normally. The temperatures were higher than normal during the winter and early spring and rose slightly higher in the spring and summer. The grapes showed good expression of fresh, ripe fruit with the classic characteristics of Carmenere from Peumo—excellent concentration on the palate with firm skins and soft, ripe tannins.

THE BEST WHITE WINE OF CHILE DURING THE 12TH AWOCA CONCHA Y TORO’S ULTRA PREMIUM CHARDONNAY BY WINEMAKER IGNACIO RECABARREN WAS NAMED THE BEST PREMIUM WHITE WINE, CHOSEN FROM MORE THAN 640 CHILEAN WINES.

Amelia was Chile’s first Ultra Premium Chardonnay, and its 2013 vintage was named the “Best Premium White” during the 12th Annual Wines of Chile Awards (AWOCA), one of the Chilean wine industry’s most important annual events. Made by winemaker Ignacio Recabarren with grapes from the Las Petras Vineyard in the Casablanca Valley, the 2013 Amelia faithfully reflects the coastal influence of its place of origin and is characterized by its soft and elegant texture, aromas of citrus fruits, apples, and mineral notes.

For the first time ever, the 2014 Awards which took place November 25–28, were held in another country as a means of strengthening the presence of Chilean wines in a market as important as Brazil’s. The expert jury consisted of Brazilian journalists and sommeliers such as Jorge Lucki, Marcelo Copello, Carlos Cabral, Manoel Beato, and Didú Russo as well as Chilean sommelier Héctor Riquelme. The group tasted more than 640 wines from all over Chile in search of the country’s finest examples in each category. This important award reaffirms Amelia’s place among the great white wines of the world and positions Chile in a place of honor in the international wine world.

PHILOSOPHY OF TERROIR THE TERRUNYO LINE BY IGNACIO RECABARREN, FIRST RELEASED IN 2000, SEEKS TO DELIVER WINES THAT EXPRESS THE UNIQUE AND COMPLEX CHARACTER OF EACH OF ITS VARIETIES.

With the objective of finding the block of the vineyard that best expresses the typicity of the variety planted, in 2000, the Terrunyo line by winemaker Ignacio Recabarren was released to market. Clearly a benchmark in the Chilean industry’s Ultra Premium category of wines, Terrunyo seeks to develop a new enological concept in Chile based on the philosophy of terroir in which each variety is located in a specific block of the vineyard that has been especially chosen to express the unique and complex character of each selected variety. As a result, Terrunyo’s Cabernet Sauvignon comes from the Las Terrazas block of the Pirque Viejo Vineyard in the “Andes” zone of the Maipo Valley. The line’s Carmenere comes from Block 27 of the Peumo Vineyard in the “Entre Cordilleras” sector of the Cachapoal Valley. Three Terrunyo wines come from specific blocks of the Los Boldos Vineyard in the “Costa” sector of the Casablanca Valley—the Riesling grows Block 6, the Sauvignon Blanc in Block 5, and the Syrah from Block 3.

In 2014 the Terrunyo line received extraordinary attention from the international press. The 2011 Terrunyo Carmenere received 95 points in Wine&Spirits magazine, which also named it the Best Carmenere of Chile and added it to its list of 100 best wines of the year. It was also named the Best Carmenere of Chile in the 2014 Descorchados wine guide. The 2010 Carmenere earned a Gold Medal in the 8th Sommelier Wine Awards, the United Kingdom’s most important On-Trade competition, which has celebrated the best wines available in restaurants, bars, and hotels in the UK since 2007. More than 2,200 wines from around the world were evaluated by a jury composed exclusively of sommeliers and members of the On Trade. The 2013 Terrunyo Riesling and 2011 Terrunyo Carmenere established a clear place for itself among New World wines when it earned the highest awards in the Six Nation Wine Challenge in which the best wines from Argentina, Australia, Chile, New Zealand, South Africa, and United States competed in Sydney, Australia in August 2014.

Winemaker Marcio Ramírez presented the 2013 Terrunyo Carmenere Lot Nº1 during the “Mediterranean Reds” tasting. This limited edition wine (just 2,400 bottles made), shows tremendous freshness and balance while maintaining the hallmark characteristics of the Carmeneres of the Terrunyo line. He also presented the 2011 Terrunyo Sauvignon Blanc in the “Cool-Climate Whites” tasting.

Thematic tastings such as the “Best Cabernet Sauvignons of Chile,” in which Marcelo Papa presented the 2013 Marques de Casa Concha Cabernet Sauvignon, allowed the journalists to appreciate the great virtues that make this wine one of the country’s best examples of the varieties. The tour began in Vancouver and included a variety of events such as training sessions with the sales team, trade meetings, tastings with customers—including Cabernet Sauvignon, Carmenere, Merlot, Pinot Noir and Chardonnay—and presentations for the specialized press, including a radio interview with wellknown journalist Anthony Gismondi.

As a special part of the Father’s Day celebrations, Marcelo led a tasting for specialized press at the Sanagan’s Meat Locker Restaurant in Toronto with the varieties Chardonnay, Merlot, and Cabernet Sauvignon accompanied by dishes Ruth Van Waerebeek prepared especially of the occasion. Finally, a select group of customers and journalists in Montreal were invited to the penthouse of the Hotel Crystal to enjoy an evening with Marcelo Papa and different varieties of Marques de Casa Concha wines in a relaxed and casual setting in which the wines stole the show.

Marcelo Papa went to the United States June 9–12 to take part in a number of activities in New York and Miami, again accompanied by the winery’s distinguished chef Ruth Van Waerebeek. They hosted several events for the trade and specialized press as well as an exclusive tasting for an important group of sommeliers from Wine&Spirits magazine, along with its editors Joshua Green and Patricio Tapia. Marcelo also visited the Puro Chile shop in New York, one of the city’s most popular Chilean wine shops for a training session with the sales staff. Marcelo Papa wrapped up his activities with a casual dinner with Kim Marcus, Wine Spectator’s critic for Chilean wines. MARCELO PAPA IN LONDON THE WINEMAKER PARTICIPATED IN SEVERAL ACTIVITIES INCLUDING AN EXCLUSIVE MEETING WITH SPECIALIZED ENGLISH WINE WRITER, JAMIE GOODE. September 22–26, the Marques de Casa Concha winemaker visited this English capital to engage in several activities to promote the brand, including tastings with clients, training the sales force, and a successful meeting with the press. On the first day, Marcelo led a tasting for 12 members of the Tesco community at Hawksmoor Restaurant. The featured wines were Marques de Casa Concha Cabernet Sauvignon and Chardonnay, giving Marcelo the opportunity to talk about these wines from the Maipo and Limarí Valleys, respectively.

On the evening of September 24, Marcelo med with London bloggers at Strand Dining Rooms to taste the line’s Chardonnay, Syrah, and Cabernet Sauvignon, and on Friday the 26th, he met with the renowned journalist Jamie Goode to show him the line’s latest vintages, projects, and limited editions, such as the 2014 Marques de Casa Concha País Cinsault. Winemaker Marcelo Papa visited Brazil October 20–24 to initiate the “Corte Marques” program, an exclusive club created for a select group of journalists and bloggers who will have special access to the brand’s latest news, vintages, and presentations of limited editions. On this occasion Marcelo was in charge of kicking off the initiative in the Zena Caffe Restaurant owned by the renowned chef and brand ambassador Carlos Bertolazzi, with an exclusive presentation of the 2014 Marques de Casa Concha País Cinsault, a limited edition wine made with 85% País grapes and 15% Cinsault. It will be available in the Brazilian market in 2015.

The next day Papa focused his activities on training the staff of major wine shops and then participated in an exclusive reception with customers during which he signed bottles and shared impressions with the public. W i n e m a k e r M a r c e l o Pa p a p r e s e n t e d t h e Marques de Casa Concha País Cinsault, a wine that represents the tradition and identity of the Chilean countryside through two varieties of ancient vines grown by generation after generation of small producers. The Marques de Casa Concha Limited Edition País Cinsault is made with grapes from the Secano Interior.The País grapes come from a vineyard located west of the city of Cauquenes in the Maule Valley, and the Cinsault grows near the mouth of the Itata River in the Trehuaco zone of the Itata Valley. Both vineyards are planted on hills with red clay and a slightly northern exposure, which imprints a distinctive and unique character on the wine.

THE BEST EXPRESSION OF THE RIVERS 2014 WAS A GREAT YEAR FOR THE BRAND WITH HIGH PRAISE IN IMPORTANT INTERNATIONAL WINE MAGAZINES AND AS A NOTEWORTHY PRESENCE IN THE 2015 DESCORCHADOS WINE GUIDE. The constant flow of water from the Andes Mountains to the Pacific Ocean generates river basins that cross Chile from east to west, and these virtual corridors allow sea breezes to penetrate deep into the valleys and cool the vineyards. The search for fresher wines led producers to explore the zones close to the riverbanks of Chile’s major wine valleys, where Concha y Toro decided to take a stand with the Gran Reserva Serie Riberas line with wines from the banks of the Rapel, Cachapoal, Tinguiririca and Loncomilla Rivers.

In 2014 Gran Reserva Serie Riberas received high praise from the international press and great scores in Wine Spectator for its 2012 Cabernet Sauvignon, which earned 91 points, and its Malbec with 90 points. These are added to the scores Patricio Tapia published in his 2015 Descorchados Guide, including 91 points for the 2014 Sauvignon Blanc and 90 points for the 2013 Malbec. This highly respected guide is Chile’s most important wine publication and ratifies the winemakers’ work and helps position the Marques de Casa Concha among the brands with the greatest potential for 2015.

WHEN DID YOU BEGIN WORKING AT THE WINERY?

HOW WAS THE 2014 HARVEST SEASON?

My first harvest at Concha y Toro was at the Los Castaños cellar in 1996. After the crush I became an assistant winemaker at the Lontué plant. A year later I was made head winemaker here, in charge of the white wines.

In general terms, the 2014 season at the Fundo Ucúquer (estate) had a frostfree spring with moderate temperatures and no rain.The summer was a bit hot, which resulted in harvesting a couple days ahead of schedule, but the grapes were in excellent condition.

WHAT WAS IT LIKE TO WORK CRUSH SEASONS IN OTHER COUNTRIES? WHAT DID YOU LEARN FROM THOSE EXPERIENCES? I have been fortunate to visit many wine producing countries, and all have been very good experiences—I not only learn about making wine, but about tastes and customs as well.

HOW DID YOU COME TO SPECIALIZE IN WHITE VARIETIES? In mid-1996 I started working as an assistant winemaker at the Lontué cellar, which had specialized in making white wines with grapes from valleys from Limarí to Bío-Bío. Today we work with close to 26 million kg of Chardonnay, Sauvignon Blanc, Viognier, Riesling, Chenin Blanc, Gewürztraminer, and Pinot Grigio.

WHAT SPECIFIC CHARACTERISTICS DOES UCÚQUER LEND GRAN RESERVA SERIE RIBERAS SAUVIGNON BLANC AND CHARDONNAY? The property is located on the southern bank of the Rapel River, about 15 km from the Pacific Ocean, and receives the coastal influence through the mouth of the Rapel River. The weather is characterized by moderate high temperatures and is primarily influenced by the winds that blow in from the coast. Sunny, cloudless days allow for a slow ripening period that lead to the perfect development of aromas and flavors and pronounced and persistent acidity. The granitic soil with weak fertility and loam to clay-loam texture lend structure to the wine. 34 · super premium segment

HOW ARE THE 2014 WINES COMING ALONG? I’d say the 2014 vintage has great aromatic expression and flavor-packed palates with good volume.

HOW WOULD YOU DESCRIBE THE GRAN RESERVA SERIE RIBERAS SAUVIGNON BLANC AND WHAT WOULD YOU PAIR IT WITH? It’s an intensely fruity wine with citrusy aromas such as lime and grapefruit as well as herbal and mineral notes. The palate is fresh and long with bright acidity. I recommend serving it with oysters or ceviche.

HOW WOULD YOU DESCRIBE THE GRAN RESERVA SERIE RIBERAS CHARDONNAY AND WHAT WOULD YOU RECOMMEND SERVING WITH IT? Because of its marine influence, its ripe fruit flavors, freshness, enticing acidity, and delicious sweetness, I like to pair it with shellfish au gratin or fish.

THE REINVENTION OF A CLASSIC WINEMAKER MARCELO PAPA CHOSE THE LIMARÍ VALLEY AS THE PERFECT SITE TO MAKE TWO NEW SPARKLING WINES FOR THE SUBERCASEAUX LINE: EXTRA BRUT AND GRANDE CUVÉE. As a tribute to Emiliana Subercaseaux, who owned the land where Viña Concha y Toro began, the company decided to expand into the sparkling wine market and launched two superb quality products. Subercaseaux Grande Cuvée is made by the traditional champenoise method, and the Extra Brut is produced via the charmat method, whose second fermentation to produce the bubbles takes place in large stainless steel tanks. Subercaseaux Grande Cuvée is a blend of 65% Chardonnay and 35% Pinot Noir, both from the Limarí Valley. The Pinot Noir comes from a vineyard in San Julián planted on alluvial terraces on the south bank of the Limarí River. The Chardonnay grows in Quebrada Seca vineyard. These special soils contain calcium carbonate and contribute the perfect amount of nutrients for both varieties to ripen well with good balance and low sugar contents.

Winemaker Marcelo Papa is in charge of the project, consulting with French winemaker Christophe Gerland, who studied in Reims, France. He worked for many years in the Champagne region, where he acquired in-depth understanding of the microbiological aspects of the wines and worked especially during the pressing process to obtain the highest quality product. Subercaseaux Grande Cuvée is one of the few Chilean sparkling wines made with the traditional method, known as champenoise, in which the second fermentation takes place in the bottle. The process is slower and results in a more complex and elegant wine with fine, persistent bubbles.The Subercaseaux Extra Brut, on the other hand, is a lighter, fresher, fruitier sparkling and ideal for any occasion.

WITH AN EYE ON LIMARÍ

HOW DID THE SUBERCASEAUX SPARKLING WINE PROJECT COME ABOUT? This is a new project that began about four years ago during a visit to the north with Eduardo Guilisasti, General Manager of Viña Concha y Toro. As we were on our way to visit the vineyards in Limarí we were talking about the possibility of taking better advantage of the valley, either by introducing new varieties or creating new products. Considering the area’s remarkable soil and climate conditions and the stupendous wines that we already make with the Chardonnay and Pinot Noir grown there, it occurred to me that we could also make sparkling wines there.

WHY TWO DIFFERENT PRODUCTS? We think the sparkling wine market is growing and that the consumers are increasingly able to clearly differentiate between different occasions for consumption. Sparkling wine made by the traditional method is naturally more complex and therefore it expresses more notes of bread and yeast.The charmat method produces fresher, fruitier wines that are ideal for drinking anytime.

DOES THE CHARMAT METHOD AFFECT THE QUALITY OF THE SPARKLING WINE?

It was an interesting idea and the company accepted it immediately, so we got to work, exploring every angle, and after talking with the commercial and marketing departments we came to the conclusion that in almost all of the important wineries, the sparkling brands are different from the wines. And that led us to the idea of using the Subercaseaux brand and dedicating it exclusively to high-quality dry and serious sparkling wines. We already owned the brand and it had a long history in sparkling wines, so it made for a good start.

I think it’s important to understand that the two methods for making sparkling wines produce different types of wine for different types of consumption. Although there may have been abuses or poor production practices in making sparkling wines with the charmat method in the past, today there is no justification for that at all. They are wines that can reach the market with lower prices because they are made in larger volumes. They’re ready sooner than the traditional sparkling wines (whose second fermentation takes place in the bottle) and they take less work. And while they don’t have the complexity of the others that spend more time on their lees, they are good and easy to drink on any occasion.

WHEN DID THE SUBERCASEAUX GRANDE CUVÉE PROJECT BEGIN?

WHAT MAKES LIMARÍ SO SPECIAL FOR PRODUCING the varieties that you use for subercaseaux?

Once the sparkling project got underway, we made the first vintage in 2010. It was a small production of just 200 cases. The idea was to experiment to see what we could obtain, so it was all very artisanal. That sparkling wine was made with 90% Pinot Noir from the San Julián Vineyard on the south bank of the Limarí River and 10% Chardonnay from the same zone.

There are two things that work together. On one side, the soil is very special, with calcium carbonate and plenty of nutrients that are perfect for vine growth. On the other side, there’s the climate, and to that effect, the number of cloudy days is more important than the temperature. Clouds allow us to obtain bunches that take less of a beating by the sun and that are more generous in fresh aromas without that tropical side.

HOW DID THE IDEA TAKE SHAPE?

WHAT HAS IT BEEN LIKE TO WORK WITH THESE SPARKLING WINES THROUGH THE SUBERCASEAUX BRAND? All of the equipment but the aging tanks has all been completely renovated. For now the idea is to make just two versions, one by the traditional (champenoise) method with the second fermentation in the bottle, and the other by the charmat method, which is fermented in large tanks. subercaseaux · 37
