jewel in the crown ——— Harry Winston CEO Nayla Hayek discusses the House’s enduring legacy and reveals inspiring plans for the future
Affectionately dubbed ‘Jeweller to the Stars’, for decades it was unimaginable to speak of the glittering world of high-society weddings and red carpet soirées without visions of Harry Winston’s sparkling gems springing to mind. After all, when Marilyn Monroe referred to the jeweller in her famed serenade, Diamonds Are a Girl’s Best Friend, it was clear the sentiment resonated with women across the globe. Fast-forward to present day and this romanticism still rings true with the New York City founded jeweller considered one of the industry’s most adored and respected brands. Established in 1932, the house was created by gem enthusiast Harry Winston, a man revered for his knack of identifying, and then acquiring, rare and precious jewels. Devoted to the ideal that it’s the gemstone rather than the metal or the material that should influence jewellery design, since the brand’s inception his creations have been coveted by some of the most iconic figures in modern day history. Nayla Hayek, Harry Winston CEO and chairwoman of Swatch Group reveals it’s this inimitable appeal that speaks to today’s woman. “Harry Winston is about timelessness. It is a brand with beloved traditions and a renowned aesthetic that has been, and will continue to be, admired by generations of fine jewellery connoisseurs.” Acquired by Swiss holding company Swatch Group in 2013, Hayek took to the helm of the illustrious house as CEO with pride.
“As one of the most prestigious luxury brands in the world today, it was very important that we maintain the integrity of Harry Winston and uphold the core values it was founded upon. With that in mind, over the past three years – since becoming CEO – our main objectives have been to focus on the key segments of the business that will help to further shape the brand’s future. This includes the expansion of our retail distribution network; the opening of new salons in major cities around the world – including the opening of the first salon in Germany, in Dusseldorf; the introduction of new collections that reinforce the brand’s signature aesthetic and high quality standards; an investment in exceptional gemstones; and a continuation of the brand’s high-end timepiece manufacturing practices.” Honouring the house’s steadfast commitment to procuring exceptional stones has been vital to continuing the Harry Winston legacy. With Hayek at the reins, the house purchased the Winston Legacy in 2013, a stone described then by auction house Christie’s as “the most perfect diamond ever offered for sale at auction”. This was soon followed by the purchase of a rare 13.22-carat flawless blue diamond, aptly named the Winston Blue, in 2014. Hayek says: “As the ‘King of Diamonds’, incredible stones have always been integral to the Harry Winston DNA. It was through the acquisition of rare and important diamonds that Harry Winston became a leader within

“For me, fine jewellery is the ultim ate luxury. More than just a r are gem, each piece of jewellery has its own unique story to tell, and symbolises a significant moment in one’s life”
the fine jewellery industry. When we purchased the Winston Legacy and Winston Blue diamonds, it was an incredibly important moment for the brand and its future. The acquisition of important stones, such as these, not only represent our commitment to preserving Mr Winston’s legacy, but also demonstrate our promise to keep incredible diamonds at the heart of our story.” Expanding on the relationship between the house’s heritage and new design concepts, Hayek explains: “When developing new collections, we have a responsibility to preserve the House’s incredible design legacy, while also infusing new and modern touches that will resonate with our new and existing clients alike. In order to do this, we look to the Harry Winston archives and our most iconic motifs, such as the Winston Cluster, as a way to bring new life to the House’s most timeless creations. As with all of our designs, each new collection highlights the innate beauty of the diamonds themselves.” Currently it’s the house’s Sparkling Cluster collection, boasting round brilliant and pear-shaped diamonds, that has caught the attention of high-jewellery aficionados. “With Sparkling Cluster, we wanted to create a collection that celebrated the House’s long-standing commitment to making brilliant celebrations shine even brighter. True to Harry Winston’s signature aesthetic, the diamonds are at the forefront of these designs, as they seemingly float against the wearer, and sparkle with an unparalleled
brilliance. Of all the pieces within the collection, I have an affinity for the Sparkling Cluster earrings. The motif graduates up the ear, which adds a modern touch to a classic style and allows the diamonds to delicately frame and accentuate a woman’s face,” says Hayek. Whether you’re being bestowed a bejewelled creation or purchasing one yourself, for many the art of collecting jewellery is a uniquely intimate experience, as Hayek explains: “For me, fine jewellery is the ultimate luxury. More than just a rare gem, each piece of jewellery has its own unique story to tell, and symbolises a significant moment in one’s life. When looking for personal pieces, I look for those that appeal to my own sense of style. “The Harry Winston woman is someone who seeks fine jewellery and timepieces that have an intrinsic value, both emotionally and practically. She is someone who appreciates the artistry, the craftsmanship and the rarity of incredible jewels, but also wants the versatility to be able to wear them in her own unique way. The Harry Winston woman is timeless.” —— Harry Winston jewellery and timepieces are available at The Dubai Mall, contact: 04 3398972

At first look, Dubai Marina has the appearance of a miniature metropolis. Clusters of sky-high towers line the water’s edge, each more extraordinary than the next. As one of Dubai’s most dynamic neighbourhoods, the marina is a credit to the talent of accomplished international architects. Canadian architectural and design firm HOK brought the manmade marina project to life over the course of five years and, by 2003, the city’s vibrant waterfront community was born. Not just an incredible feat of architectural design, the marina is also a wonderful locale where a sense of the city can be felt. An eclectic mix of visitors flock here to experience the café culture and take in the futuristic vistas. Business and residential towers create a distinctly urban feel along the waterfront promenade and at the heart of it all is Pier 7. The dining tower attracts the city’s gourmands with seven restaurants. Trendy neighbourhood eatery Fumé is one of the most popular and offers fantastic marina panoramas as the perfect backdrop for the excellent food. Back at promenade level, a stroll along the waterfront is the best way to take in the buzz. Restaurants and cafés representing flavours from all corners of the globe are peppered along the walkway and are ideal to pause with some Arabic coffee and shisha. Some of the world’s most luxurious yachts are moored here, while the waters bustle with touring boats and the Dubai Ferry. Saunter a little further along and Dubai Marina Mall offers still more dining options. Among the choices are the restaurants and bars of The Address Dubai Marina, which are not to be missed. Al fresco rooftop lounge Shades is a chic space to enjoy a refreshing cocktail as you watch the sun set over the marina’s gentle waters which flow on out into the Arabian Gulf in the distance.

No visit to the city would be complete without exploring Dubai Parks and Resorts. Overall, the 30.6 million square foot venue, located on Sheikh Zayed Road opposite Palm Jebel Ali, offers almost 100 truly enticing rides and attractions At MOTIONGATE Dubai theme park visitors can experience the magic of three of the most successful motion picture studios in Hollywood – DreamWorks Animation, Columbia Pictures and Lionsgate – with interactive play zones, themed rides and theatrical shows. The Rajmahal Theatre at Bollywood Parks Dubai is another signature highlight at Dubai Parks and Resorts. The 850-seat theatre is famed for hosting the region’s first Broadway-style Bollywoodthemed musical Jaan-e-Jigar. AERIAL ADVENTURE ——— Discover the architectural splendour of Palm Jumeirah
To best appreciate the ambition behind Palm Jumeirah, embark on a seaplane f light with Dubai-based tour operator, Seawings. HH Sheikh Mohammed bin Rashid Al Maktoum first revealed his vision of a manmade island in the 1990s and today Palm Jumeirah is home to a host of retail, entertainment, leisure and F&B attractions that are complemented by a plethora of hotels and resorts in the area.
Seawings fleet consists of Cessna 208 Caravan seaplanes equipped with luxury leather seating in an air-conditioned cabin and large windows for the best views. As the seaplane soars higher, the spectacular islands that make up Palm Jumeirah come into view as a distinctive Arabian palm tree, consisting of a trunk with 17 fronds, encircled by a crescent-shaped island.

THE RIGHT INGREDIENTS ——— Executive chef Stefan Beutler reveals the recipe for success at Desert Palm PER AQUUM
Nestled in the lush green surrounds of one of the city’s most famous polo estates, Desert Palm PER AQUUM is a destination like no other. Visitors to this tranquil hideaway will find a five-star approach to dining. Whether its wood-fired grills at RARE, spirits and cigars at Red Bar or innovative cuisine at Epicure, the food is always on par with the spectacular setting thanks to the creativity and efforts of executive chef Stefan Beutler. “Desert Palm PER AQUUM is about celebrating being different in the industry. Travellers want anything but standardisation and they go out of their way to seek the unique. The retreat is designed to feel like an urban escape, yet it’s located only 15 minutes from Downtown Dubai,” explains Beutler, who joined the property nearly two years ago. With an eclectic range of restaurants, bars and lounges to manage, a typical day at work for Beutler involves dealing with the unexpected. “In the morning, I check all my products as well as any upcoming events. During the day I overlook the entire kitchen operation – whether the hotel has a wedding menu to plan, a menu tasting to prepare for a potential client, team rosters to cater for 1,000 guests at a gala event or simply creating weekly specials. “There are always last minute challenges. For example, an in-villa guest can request a barbecue prepared for them at their villa as part of our Destination Dining experiences. These experiences can also be booked the day ahead, which frequently happen over weekends. We have five secret dining locations within the 160-acre estate, which can be chosen as a setting for a romantic dinner for two or even a small celebration with up to 20 guests. These locations are secluded and come with a private chef for the occasion but, from a
logistics point of view, it also means that all the cooking equipment and food needs to be transported to these hideaway locations.” Beutler decided to pursue the culinary arts after being inspired by his father, who was a baker. As he explains: “I learned to appreciate the value of food at a very early stage in my life. As a young boy I visited my father’s bakery as often as I could and was fascinated with the idea that raw food materials could be combined together to create a range of finished products.” His passion for culinary excellence is evident to every guest that dines at Desert Palm PER AQUUM. Together with his expert team, he crafts a signature menu of dishes that champion fresh ingredients from the best suppliers, with genuine respect for the methods and practices of the craft. “I am proud of all the dishes on our menus but to cook on a real oak wood fire grill presents a different experience. If I had to choose just one of my favourite dishes, it would be the 12-hour double cooked beef short ribs as its flavours are intense, yet not too overpowering. Cooking on a low temperature for a long time is what makes the flavour stand out, along with the homemade seasoning mixture that is used for the dry rub,” Beutler explains, adding that he enjoys experimenting with food. After all, there are no boundaries in crafting new signature dishes and playing with different flavours. “To me, good food is always about change and movement. It is always evolving. One of the most exciting aspects of my profession is that there are always new products introduced to the market. The challenge is sometimes not to find the right product, but to find the right way to prepare it.” —— To make a reservation at Desert Palm PER AQUUM, contact: 04 3238888

from lima with love ——— Fun, fresh and full of flavour, discover the delights of Peruvian cuisine in Dubai
What began as a slow burning fascination for Peruvian gastronomy almost a decade ago has really taken off, becoming one of today’s most talked about culinary trends. A host of high-end restaurants dedicated to the cuisine are springing up in major capitals all over the globe, Dubai included. With an eclectic range of tastes and crafty dishes designed for sharing, it’s easy to see why the world has become enamoured with this wonderful style of cooking. While its simple staples make up many of the region’s signature dishes – think rustic root vegetables and an abundance of corn and fiery chillis – thanks to centuries of immigration shaping its culinary influences, there’s an unmistakably vibrant hit of flavour that sings from each dish. Perhaps most familiar to diners is the country’s selection of ceviche, which is a refreshing dish of fresh fish or seafood cured in a zesty marinade of citrus, red onion and aji amarillo peppers. Another favourite is the incredibly flavoursome causas, a seasoned mashed potato cake, while juicy marinated meat skewers (anticuchos) are often to be found at the heart of Peruvian menus. Concierge presents Dubai’s best Peruvian restaurants for a meal to remember.

INKA
—— Split into two areas, an intimate dining area to the left and a lively lounge to the right, Inka, located in Sofitel Dubai Downtown, instantly impresses with its cool art deco interiors and spectacular sweeping views of Burj Khalifa and Downtown Dubai. The menu on the other hand is packed with Peruvian flair. Eager to keep things as authentic as possible, the culinary concept has been carefully crafted by head chef Christian Motte. Raised in Peru, Motte puts a modern spin on signature dishes. Think lobster and black truffle gnocchi with aji amarillo sauce and tuna tiradito with avocado purée. While the eclectic mains certainly prove tempting, the menu also offers several smaller dishes that highlight the brilliance of Peruvian cooking. There’s freshly prepared ceviche cured in an authentic citrus marinade, stuffed plantain with burnt feta cheese and pomegranate, deep fried calamari with a peppery aji amarillo mayo, and succulent anticuchos skewers of chicken, beef and grilled octopus. After dinner, saunter over to the lounge area which regularly hosts feature nights including salsa evenings.

Eager to keep things as authentic as possible, the culinary concept has been carefully cr afted
In a city that consistently serves up a fine menu of culinary surprises, Mayta by Jaime Pesaque at Capital Club in Dubai International Financial Centre is an exciting addition. Acclaimed chef Pesaque opened the first Mayta restaurant in Lima in 2009 and has now brought his signature artisanal flair to Dubai with sharing-style classics in a wholly welcoming setting – think refined dark woods and colourful Peruvian patchwork designs. Every dish is exquisitely authentic in both its approach and ingredients, from melt-in-the-mouth sea bass ceviche with fiery ginger and salmon with tamarind and crispy wonton, to ‘small shares’ of hearty beef empanadas with chimichurri and chicken croquetas with parmesan cream and a distinctly unique kalamata olive emulsion. Pair these with refreshing signature cocktails, including creations using pisco brandy before ending your meal on a high note with the Peruvian-style dulce de leche or the ‘chocolate volcano’ – an indulgent fondant made with Amazonian organic chocolate and banana ice cream. Sweet dreams are made of this.

Coya
—— With its London counterpart receiving some pretty hefty plaudits, news that Coya was to land on our sandy shores had the city bubbling with excitement a couple of years ago. Fortunately the restaurant has more than lived up to the fanfare with Dubai diners singing the praises of its faultless food, excellent service and hip, contemporary interiors – think a palette of intense hues, funky artwork and industrial metalwork. The venue, located Four Seasons Resort Dubai at Jumeirah Beach, undoubtedly makes for a superb dinner spot although we think the Friday brunch is one of the best ways to experience Coya’s famed fare and vibrant South American spirit. With up-tempo tunes, Champagne and plenty of Pisco Sour at the ready, from the moment you walk into the buzzing bar area you know you’re in for a great afternoon. Over five exceptional courses, including several trips to the popular ceviche and ensalada counters, you’ll be treated to a selection of some of Coya’s best hits. Of particular note is the delicately cured seabass ceviche, grilled anticuchos selection and a truly photoworthy dessert platter to end a sensational meal.

What do you get when you mix star Peruvian chef Virgilio Martínez with lofty expectations, the hottest address in town and Dubai’s penchant for all things extraordinary? The answer is culinary magic. Martínez’s LIMA Fitzrovia restaurant in London was the first and only Peruvian restaurant to win and retain a Michelin star and that recipe for excellence is now evident at LIMA Dubai – the latest Peruvian restaurant to open in the emirate. Located at City Walk’s Fine Dining Courtyard, the restaurant’s colourful take on rustic chic is warm and inviting – a theme that continues through to the menu. You can’t really go wrong when deciding as every dish is a masterpiece in its own right, executed to perfection by head chef Diego Sanchez and his team. Start off with the delicious lobster tiradito and perfectly balanced cod fish anticuchos before moving on to signature mains such as the seared lomo steak Huancaína with aji amarillo sauce. With expert cocktails and irresistible desserts to match, LIMA reflects the best of Peruvian cuisine, in its many exciting forms.

ASK THE CONCIERGE
Ajith Hettiarachi, concierge at Radisson Blu Hotel, Dubai Deira Creek, highlights the best attractions and experiences
1
Dubai has grown over the years to become one of the world’s most impressive and popular tourist destinations. This ‘must visit’ place is renowned for its superlatives, with attractions including the world’s biggest skyscraper Burj Khalifa and the biggest shopping mall, The Dubai Mall. Yet I believe the city still manages to mix a cosmopolitan lifestyle with local culture. Dubai Creek remains one the emirate’s most charming places and stands out for its traditional ambience. This natural seawater creek reflects the true identity of the city and remains a symbol of the UAE’s established trading tradition and seafaring heritage. Its waterways have now been extended thanks to the Dubai Water Canal, which was unveiled late last year. The 3.2-kilometre canal now links Business Bay with the Arabian Gulf, and has turned historic locales in the city including Satwa, Downtown, Oud Metha, Karama and Bur Dubai into an island. The multi-million dollar Dubai Creek Harbour project is also set to bring more vibrancy to the emirate’s thriving historic district and is expected to be larger than Downtown Dubai.
“I’d also recommend dining at Aseel ah, our signature Emir ati restaur ant that presents a menu of authentic fare, representing a true taste of the UAE”

There’s a lot of excitement surrounding the recent opening of new theme parks, including IMG Worlds of Adventure, which offers more than 20 signature rides and attractions, and Dubai Parks and Resorts that houses three theme parks and a waterpark. World-class shopping is another highlight, and if visitors are looking for a serious ‘shop till you drop’ experience, they should head to The Dubai Mall for an enviable collection of luxury labels and designer fashion. Other leading malls in the city include Mall of the Emirates and outdoor retail and entertainment district City Walk at Downtown Dubai. Meanwhile, away from the city’s bigger shopping destinations, the emirate’s colourful and lively souks in Deira and Bur Dubai are also worth a visit for interesting souvenirs, luxurious textiles, exotic spices and handmade gifts. If guests are in town only for a weekend, I’d recommend spending an afternoon walking along Dubai Creek, visiting the popular Kite Beach in Jumeirah or taking the family to Wild Wadi waterpark. For something beyond the usual, book a hot air balloon adventure and take in sweeping early morning vistas of the desert, swim with dolphins at Dubai Dolphinarium in Creek Park or simply enjoy an afternoon safari amidst the dunes. After a long day out exploring, dine at Al Mansour Dhow – Radisson Blu Hotel, Dubai Deira Creek’s floating restaurant. The relaxing two-hour cruise offers great food and iconic views. Alternatively, I’d also recommend dining at Aseelah, our signature Emirati restaurant that presents a menu of authentic fare, representing a true taste of the UAE. You can also take in memorable sunset views from its stunning terrace.
