an apt connection to Dubai’s own pearling past, the threeact opera by French composer Georges Bizet and set to a libretto by Eugène Cormon and Michel Carré, was first performed in 1863 and tells the story of a friendship tested by love. The highlight of the opera, The Pearl Fishers Duet is among the best-known in Western opera. Turning to ballet, and one of the great romantic pieces in the genre, Giselle, will be re-enacted by The Russian State Ballet and Orchestra of Siberia on September 16. First performed in 1841 and focusing on the love of a peasant girl who dies of a broken heart, the timeless tale is set to enchant Dubai audiences. Another classical highlight is the Mozart Gala on September 23, performed by Vienna Concert Verein. Then, renowned Catalan tenor José Carreras takes to the stage as part of his final world tour, A Life in Music. Adding to the international flavour, Grammy-award nominated sitar player and composer Anoushka Shankar is on the bill alongside Spain’s foremost Flamenco superstar, Sara Baras. A local touch comes from famed Emirati singer Hussain Al Jassmi. There is also a series of thrilling spectacles taking to the Dubai Opera stage, including Impossible, described as the ‘most dangerous show’ the city has ever seen. It features the world’s best illusionists live on stage in a magic spectacular. The Nutcracker on Ice will tell the timeless tale set against a backdrop of colourful scenes and projections, vibrant costumes and special effects. Meanwhile, for the festive season, Slava’s Snowshow will present a dream-like

Finally, in a major coup for the city, Sir Cameron Mackintosh’s legendary musical Les Miserables will have its GCC premiere in November. Sir Cameron Mackintosh says: “I am delighted to be bringing my hugely acclaimed new production of Les Miserables to the stunning new Dubai Opera. “For many years I have lamented that my major musical successes have not been able to play in the Middle East because there was no auditorium with the right scale and facilities able to house them. INDUSTRIAL REVOLUTION ——— Talking Omega’s milestones and movements with Stephen Urquhart

A winning combination of technical excellence and use of novel materials reflects the strength of Omega today, largely thanks to the leadership of former president Stephen Urquhart who retired from his post in June after more than 15 years at the helm and is now succeeded by Raynald Aeschlimann. Urquhart began his career at Omega in 1968 and left to join another maison, only to return to Omega in 1999 – the same year that the famed Co-axial calibre was introduced. “I would say that material innovations and movements go hand in hand. While we haven’t changed the movement per se this year, we’ve continued to develop what we set out to do in 1999 with the Co-axial, by introducing it across the board – not making it just a one-off limited edition piece but making it part of our mission statement,” says Urquhart. From crafting the first minute-repeating wristwatch to the first timepiece on the moon, Omega has always been synonymous with innovation. Founded in 1848, Louis Brandt was just 23 years old when the firm he created, Louis Brandt et Frères, emerged as a key player in watch design. He took the fledgling company from its humble roots assembling key-wound precision pocket watches from parts supplied by local craftsmen to the beginnings of the global brand it is today. A landmark moment came in 1894 with the creation of the now-famous Calibre 19 watch named Omega, which in 1903 inspired the company’s current name. The timepiece was famed for the ingenuity of its mechanisms such as setting time using the winding stem. After an impressive expansion the firm’s progression fell to Paul-Emile Brandt in 1903 who, aged just 24, became the architect of Omega’s evolution, leading the company for half a century. Now owned by the Swatch Group, Omega continues to forge ahead, building on its rich 168-year history.

The Co-axial Escapement, launched in 1999, represented the first practical new mechanical watch escapement to be launched in 250 years, and continues to make waves in the industry. At Baselworld 2016, Omega unveiled six new movements as well as several models that now carry the Master Chronometer rating – the entire collection of new Seamaster Planet Ocean watches, the new Constellation Small Seconds model for ladies and the Speedmaster Moonphase timepiece. Omega has also reiterated plans to certify the majority of its mechanical watches as Master Chronometers, the official certification from the Swiss Federal Institute of Metrology (METAS), by the year 2020. “Now with the Master Chronometer, it’s a new standard for Omega and I think the certification is very meaningful for the consumer. It’s not just Omega saying ‘we are good’ or ‘we’re the best’ but having an outside, independent federal Swiss body certifying quality. People might say who needs this, but the whole idea is to give the consumer who’s buying it a work of art and emotion, that the basic value of the product he’s buying can be maintained for hopefully decades,” says Urquhart. Omega’s deep-rooted connection to space is also celebrated this year with the new Speedmaster Grey Side of the Moon ‘Meteorite’ that houses an incredible meteorite dial made from a solid piece of extra-terrestrial stone. For the dial, slices of the Gibeon meteorite that fell in prehistoric times in Namibia were used and features a striking Widmanstätten pattern of ribbon-like flecks.

Another highlight of the year from Omega is the Speedmaster ‘CK2998’ Limited Edition that is set to be a new collector’s edition. Inspired by the original Speedmaster CK2998 that was released in 1959, which remains one of the most sought-after vintage Speedmasters in the world, only 2,998 of this new edition have been produced. It’s already caused a stir among discerning clientele reflecting the fact that, at the heart of it, emotion is what sets a luxury timepiece apart from other technical devices today. “That’s the beauty of the product we sell. In the world we live in, everything else can become obsolete or weak, or better in some respects. Maybe the cars of the future don’t need to be driven by us and that’s great, but it’s so different from our job. Omega’s vocation from day one is to make a movement and a watch that could really be rare. We’re not a workshop brand, we don’t have a little atelier up in the mountains, we’re the first really industrial brand there was,” explains Urquhart. “Our mission has always been to make the best movements. That’s why NASA chose us to go to the moon and why the International Olympic Committee chose us for the Olympics. I think that’s also why the Co-axial is so important for Omega, to continue on that road.”

Dates have been consumed in this part of the world for thousands of years and were a vital lifeline for Bedouin tribes surviving in the harsh, arid desert environment. Still revered in the region today, the fruit remains a regular feature at mealtimes and have become symbolic with UAE culture. It’s a tradition that is based on necessity as well as religion. Dates, as Tina Memic, general manager – retail & operations at gourmet date boutique Bateel, says, have a high nutritional profile that provided an essential source of sustenance for early Bedouins surviving against the odds in the desert. “Dates are a power fruit and offer all sorts of health benefits. For a long time, the local tribes relied on them for food and their cultivation in this region dates back centuries.”

In Al Ain and Abu Dhabi, large swathes of land are given over to date palm plantations, a number of which, some claim, have been there for several thousand years. It’s only very recently, however, that the fruit has begun to be produced for the mass market. There isn’t a long standing tradition of commercial farming in the UAE. Most of the farms here are small family-run entities that were started about 40 years ago as part of a social welfare programme designed to settle the roaming Bedu people. Once established, the farms were used as vehicles to distribute surplus income from oil to the people via government-financed development and support initiatives, most of which have since been dismantled. The result today is that many of

the country’s nearly 25,000 date groves are hobby farms and, while some fruit goes to commercial markets, much of the yield is still consumed by the larger family or used as animal feed if the quality is poor. Now, the UAE capital is looking to develop this natural resource and the Abu Dhabi Farmers’ Services Centre (ADFSC) is working to reform the capital’s farming system with the aim of encouraging local date producers to harness the massive earning power of their product. The heavy use of water is of particular concern to experts at ADFSC who point to a general misconception among local farmers that the more water lavished on date palms the better. Many of the farms use water to excess, which is disastrous for the health of the trees and the quality of the yield.

The soil structure here is extremely fragile and, when over-saturated, cannot retain the nutrients necessary for the date palms to thrive. As part of ADFSC’s Date Improvement Program, a team of dedicated experts travel from farm to farm educating workers and owners about best practices, including proper irrigation techniques, in addition to offering fertiliser and pesticide spraying services. Slowly but surely, ADFSC is making headway, as one by one the local farmers begin to appreciate the economic potential of their date palms and consequently take better care of them. Larger varieties, such as the glossy Medjool dates, an import from North Africa, fetch the best prices on the market while local tastes tend towards UAE varieties including Khalass, Khenaizi, Fard and Dabas.

Here in the UAE, Khalass dates are the most planted and popular as the warm, dry conditions are ideal for cultivation. The date farming cycle begins in January when the palms begin to produce flowers and are ready for pollination. In March, when the fruit starts to appear, farmers thin the stalks by hand to ensure a quality yield. At different times of year the crop is at risk from a variety of pests and diseases and must be sprayed regularly. After this the fruit is covered with protective nets until harvest time in August when farmers deftly scale the palms using only a rope for leverage. Date palms in the UAE grow up to around 30 feet in height and, if properly cared for, carry on producing dates for up to 150 years. One of the most significant changes in date farming since Bedouin

times has been the introduction of modern drip irrigation to avoid over-saturating the soil, which creates ideal conditions for diseases and washes away nutrients resulting in a weaker crop. With over 100 varieties of dates grown in the country alone, there’s a lot for visitors to discover. The Fruit and Vegetable Market at Mina Zayed often sells seasonal varieties or, alternatively, visitors can purchase beautifully packaged boxes of luxury dates from specialised boutiques such as Bateel and enjoy them dipped in chocolate, sprinkled with nuts or stuffed with candied orange. A growing number of date-themed products, such as date mustard and date jam offer multiple ways to enjoy this delicious fruit and provide the ideal gift to take home for a taste of Arabia.

At first look, Dubai Marina has the appearance of a miniature metropolis. Clusters of sky-high towers line the water’s edge, each one more extraordinary than the next. As one of Dubai’s most dynamic neighbourhoods, the marina is a credit to the talent of accomplished international architects. Canadian architectural and design firm HOK brought the manmade marina project to life over the course of five years and, by 2003, the city’s vibrant waterfront community was born. Not just an incredible feat of architectural design, the marina is also a wonderful locale where a sense of the city can be felt. An eclectic mixture of visitors flocks here to experience the café culture and take in the futuristic vistas. Business and residential towers create a distinctly urban feel along the waterfront promenade and at the heart of it all is Pier 7. The dining tower attracts the city’s gourmands, all vying for a table at any one of the chic restaurants to be found here. Trendy neighbourhood eatery Fumé is one of the most popular and offers fantastic marina panoramas as the perfect backdrop for the excellent food. Back at promenade level, a stroll along the waterfront is the best way to take in the buzz. Restaurants and cafés representing flavours from all corners of the globe are peppered along the walkway and are ideal to pause with some Arabic coffee and shisha. Some of the world’s most luxurious yachts are moored here, while the waters bustle with touring boats and the Dubai Ferry. Saunter a little further along and Dubai Marina Mall offers still more dining options. Among the choices are the restaurants and bars of The Address Dubai Marina, which are not to be missed. READY TO ROLL ——— The first in a series of incredible upcoming projects, mega theme park IMG Worlds of Adventure is set to open its doors in August

An exciting roster of leisure attractions is poised to open over the next few years, that not only promises to change the face of tourism in the UAE, but will also offer a fantastic array of fun-filled activities for all the family. From sprawling theme park DXB Entertainments due to open in October, to Dubai Safari, Dubai Ferris Wheel on Bluewaters Island and the AED2 billion Warner Bros. theme park planned for Yas Island in 2018, the UAE’s fun factor is set for a major boost. First up is colossal theme park IMG Worlds of Adventure. Sure to wow visitors when it opens in August, the 1.5 million square foot park in Dubailand is divided into four zones – Marvel, Cartoon Network, Lost Valley – Dinosaur Adventure and IMG Boulevard. An exciting array of adrenalinepumping rollercoasters and rides will be based on popular Cartoon Network characters, Marvel superheroes and dinosaurs. The mega park is also home to 25 stores featuring Marvel merchandise, 28 restaurants, a haunted hotel experience and a 12-screen Novo cinema. Ilyas Galadari and Mustafa Galadari, executive co-chairmen and owners of the park say of the venue: “We have designed an entire world of entertainment for our guests. By offering a fully immersive indoor theme park in a temperature controlled environment, IMG Worlds of Adventure will be open all year round. With the capacity to welcome more than 30,000 people a day, we anticipate 4.5 million guests in our first full year of operation alone.”

The billion dirham project, scheduled for opening on August 15, is fully indoors and offers more than 20 signature rides and attractions, including live shows and a 5D cinema experience. At the 350,000 square foot Marvel zone guests can come face to face with their favourite superheroes, whether that’s on the 3D multimedia Avengers: Battle of Ultron ride or at any one of the attractions themed around favourite characters including Spider-Man, Iron Man, The Hulk, Thor and Captain America. Take to the skies in the Quinjet to battle evil villain Ultron, or join The Hulk as he clashes with The Leader on a 100-seater ride system that propels guests through an immersive battle experience. Spider-Man Doc Ock’s Revenge is a 400-metre spinning coaster ride through the New York skyline with Marvel’s famous web-slinger, while for the adventurous, Thor Thunder Spin will pin guests to their seats as the mythical hero attempts to rescue them from the clutches of Loki. Journey back in time and deep into the jungle in an attraction unique to IMG Worlds of Adventure, The Lost Valley – Dinosaur Adventure. Allow yourself to be transported to another world and walk among prehistoric creatures as 70 state-ofthe-art animatronic dinosaurs set the scene. Take the thrills further with a ride on external rollercoaster The Velociraptor, which propels guests to 100 kilometres per hour in just 2.5 seconds and is set to be the tallest and fastest rollercoaster in Dubai. The zone’s Predator ride is another one for the adrenaline seekers with the sharpest drop

track in the region and a heart-stopping vertical plummet back down to earth. Over at the Cartoon Network zone, there’s plenty for kids to enjoy with the first ever Ben 10 5D cinema, as well as popular Cartoon Network brands LazyTown, Adventure Time, The Powerpuff Girls and The Amazing World of Gumball. Meanwhile, a change of pace awaits at IMG Boulevard with plenty of retail and dining options, live entertainment and interactive experiences. Among the 28 food and beverage outlets here are Arabic, European, American and Pan-Asian cuisines to choose from. Considered a culinary institution by many, Grand Hyatt Dubai’s Peppercrab has been drawing in the crowds since it first opened in 2003. Revered for its exotic mix of Singaporean flavours, the tried and tested venue is a must for fans of Asian-inspired seafood. Taking charge of the restaurant’s vibrant offerings is David Soh. Originally from Malaysia, Soh joined the Peppercrab team last year as sous chef, but quickly impressed with his skills and it wasn’t long before he was promoted to chef de cuisine. “It’s been a year now since I joined the team, and what a year it’s been,” beams Soh. “Peppercrab is one of Grand Hyatt’s most iconic restaurants and, please allow me to say, one of Dubai’s too. Most of our guests associate their first dining experience in Dubai with Peppercrab and this makes me very proud.” Describing his culinary career, Soh reveals how his mother played a pivotal role in his success, in terms of both inspiration and encouragement. “It may sound like a cliché, but my mother has always supported me in following my dream to become a chef. My passion for cooking comes from my early childhood. When I was a kid, I used to spend a lot of time with her in the kitchen. The pans were my favourite toys.” Having now realised those youthful aspirations, Soh explains that there’s much more to the job than playful afternoons in the kitchen. “Handling a five-star hotel restaurant involves an ongoing process of improving and innovating – starting with the menu and continuing through to the whole dining experience. A luxury hotel might be an idyllic place to work, but it takes a lot of focus and dedication. “Generally my responsibilities are to ensure the smooth running of all daily operations, maintaining the highest food quality standards, and, of course, keeping my team updated with all the latest trends in the industry.

“Overall, guest satisfaction is extremely important to us and as such, is the parameter by which we measure our success.” With the city’s restaurant scene enjoying a continuous surge in competition, just what is it about Peppercrab that keeps guests coming back for more? “It’s a lively experience,” says Soh. “The ingredients are always fresh and colourful. The dishes are not only a delight to eat but also to look at. Really it would be a pleasure for anybody to spend time in Peppercrab’s kitchen, there’s so many flavours, spices and sauces to discover.” Considering Dubai’s crowded culinary landscape, Soh adds: “With several new restaurants opening each week, the market has become very competitive. There are lots of new stand-alone restaurants with excellent dining concepts. It is a challenge for us, but we are ready for it. We continuously challenge ourselves in the kitchen. Creating new dishes is not something that happens overnight. It involves a lot of hard work. Mixing ingredients, trying different cooking methods, sharing the results with the team and getting their feedback. It is a meticulous process that we go through every day. Amazing our guests all the time with new tastes and dishes is our mission.” As the name suggests, the restaurant’s pepper crab dishes are among the most coveted choices for new and returning guests. Revealing his menu recommendations, Soh says: “For sure our signature black pepper crab is the most popular. But there are many more you must try, including the wasabi prawns, salt and pepper calamari and the Singaporean roasted duck. As well as these signature dishes, personally, I also love the wok fried fresh tiger prawns and our mixed satay with peanut sauce. They are some of my favourite dishes because they bring a big smile to our guests’ faces. A TASTE OF PERU ——— Fun, fresh and full of flavour, discover the delights of Peruvian cuisine in Dubai

What began as a slow burning fascination for Peruvian gastronomy almost a decade ago has really taken off, becoming one of today’s most talked about culinary trends. A host of high-end restaurants dedicated to the cuisine are springing up in major capitals all over the globe, Dubai included. With an eclectic range of tastes and crafty dishes designed for sharing, it’s easy to see why the world has become enamoured with this wonderful style of cooking. While its simple staples make up many of the region’s signature dishes – think rustic root vegetables and an abundance of corn and fiery chillis – thanks to centuries of immigration shaping its culinary influences there’s an unmistakably vibrant hit of flavour that sings from each dish. Perhaps most familiar to diners is the country’s selection of ceviche, which is a refreshing dish of fresh fish or seafood cured in a zesty marinade of citrus, red onion and aji Amarillo peppers. Another favourite is the hearty and incredibly flavoursome causas, which is a lightly seasoned mashed potato cake, while juicy marinated meat skewers (anticuchos) are often to be found at the heart of Peruvian menus. With its London counterpart receiving some pretty hefty plaudits, not least of which was its inclusion in The Times’ 20 coolest restaurants in Britain, news that Coya was to land on our sandy shores had the city bubbling with excitement. Fortunately the restaurant has more than lived up to the fanfare with Dubai’s foodie scene quickly singing the praises of its faultless food, excellent service and hip, contemporary interiors – think a palette of intense hues, funky artwork and industrial metalwork. The venue undoubtedly makes for a superb dinner spot although we think the Friday brunch is one of the best ways to experience Coya’s famed fare and vibrant South American spirit. With up-tempo tunes, Champagne and plenty of Pisco Sour at the ready, from the moment you walk into the buzzing bar area you know you’re in for a great afternoon. Over five courses, including several trips to the ceviche and ensalada counter, you’ll be treated to a selection of some of Coya’s best hits. Of particular note is the delicately cured seabass ceviche, grilled anticuchos selection and a truly photoworthy dessert platter to end a sensational meal.

Split into two areas, an intimate dining area to the left and a lively lounge to the right, Inka, located in Sofitel Dubai Downtown, instantly impresses with its cool art deco interiors and spectacular sweeping views of Burj Khalifa and Downtown Dubai. The menu on the other hand is packed with Peruvian flair. Eager to keep things as authentic as possible, the culinary concept has been carefully crafted by head chef Christian Motte. Raised in Peru, Motte puts a modern spin on signature dishes. Think lobster and black truffle gnocchi with aji Amarillo sauce and tuna tiradito with avocado purée. While the eclectic mains certainly prove tempting, the menu also offers several smaller dishes that highlight the brilliance of Peruvian cooking. There’s freshly prepared ceviche cured in an authentic citrus marinade, stuffed plantain with burnt feta cheese and pomegranate, deep fried calamari with a peppery aji Amarillo mayo, and succulent anticuchos skewers of chicken, beef and grilled octopus. After dinner, saunter over to the lounge area which regularly hosts feature nights including salsa evenings. 3

In a city that consistently serves up a fine menu of culinary surprises, Mayta by Jaime Pesaque at Capital Club in Dubai International Financial Centre is an exciting new addition. Chef Pesaque opened the first Mayta restaurant in Lima in 2009 and has now brought his signature artisanal flair to Dubai with sharing-style classics in a wholly welcoming setting – think refined dark woods and colourful Peruvian patchwork designs. Every dish is exquisitely authentic in both its approach and ingredients, from melt-in-the-mouth sea bass ceviche with fiery ginger and salmon with tamarind and crispy wonton, to ‘small shares’ of hearty beef empanadas with chimichurri and chicken croquetas with parmesan cream and a distinctly unique kalamata olive emulsion. Pair these with refreshing signature cocktails, including creations using pisco brandy before ending your meal on a high note with the Peruvian-style dulce de leche or the ‘chocolate volcano’ – an indulgent fondant made with Amazonian organic chocolate and banana ice cream.
