Harry Winston Lily Cluster The Harry Winston Cluster is a definitive design that has signified the brand for more than six decades. Drawing on the Winston archives from the early 1940s, the current design has been re-imagined to capture the geometric elegance of f lowers and leaves. “My wife Rina and I started the company in 2002 in the US. Rina was already in the watch business and my background was in marketing so we put our strengths together. When we were coming up with the name for our company, Rina was pregnant with our son. We planned to call our son Ben Philip but decided to call him Ben leaving Philip for the watch brand – our other baby,” says president and founder of Philip Stein, Will Stein. The couple sold their first watch in Miami, Florida and soon after, were introduced to the technology that would go on to define their collection. Natural frequency technology is incorporated across the Philip Stein range in watches, sleep bracelets and wine wands, which aim to use the frequencies to aerate wine. “We live in a world of technology and are surrounded constantly by both natural and manmade frequencies. The team at Philip Stein has poured much time and effort into researching the effects of the wellbeing products to measure the technology’s success. “Until 2009, we had a lot of anecdotal testimonials which was great but we needed some kind of science. We carried out a stress study on our watches and a sleep study on our sleep bracelets. The participants reported exactly what we anticipated. With the sleep bracelets they fell asleep faster, slept deeper and woke up feeling more refreshed. For the stress test we carried out what is called a heart rate variability study which measures stress symptoms and we saw that the feeling of stress was reduced for people who wore the watch. “With the sleep bracelet, the technology is the same but the recipe is different as it only picks up natural frequencies which are important for sleep, whereas

the watch helps with overall wellbeing. Last year we gave 20 journalists here in Dubai the sleep bracelet to test for 30 days. Afterwards we all shared the results and 19 out of the 20 reported sleeping better, falling asleep faster, not waking up as much at night and waking up feeling more refreshed. It was really amazing,” says Stein. Philip Stein is now repositioned as a lifestyle wellbeing brand and there are ambitious plans for the future which include new sensory boutiques and expansion of the technology across a wide range of products. A first boutique here in the UAE is also high on the company’s agenda. “This is a very exciting time for us. We are very focused on
the UAE market and one of the things I’d like to see is a Philip Stein boutique here where the focus is on luxury but also on internal luxury in terms of your own wellbeing,” says Stein. “We are in the process of creating a new boutique concept that we feel is so unique it will be like a magnet. Visitors will want to walk in. We have boutiques all over the world but they are Philip Stein watch boutiques, what we are creating now is something very different: a sensory experience boutique. We don’t have the concept quite finished yet but will be unveiling it very soon. We want people to be able to easily visualise the concept and understand it straight away,” says Stein.

The Natural Frequency Technology in Philip Stein products is based on the premise that every organ, tissue, cell and molecule in the human body vibrates within a certain range of frequencies and that each has its optimum frequency. With much of its touristic lure reliant on wowing the world, the UAE has become synonymous with superlatives. This is a country where mega-engineering, uninhibited architectural feats and hyper-charged creative innovations are the norm and anything less than the biggest, fastest and most expensive just doesn’t cut it. But while the 103 world records held by the UAE have plenty of novel marketing cachet, they are also a proud testament to a nation’s ever-growing ambition of transforming dreams into reality. Against such an excitable backdrop, it is hardly surprising to learn that Guinness World Records (GWR) recently opened its first Middle Eastern office in Dubai. Since then, the company has been besieged by applications from aspiring record-breakers. “We’ve seen how passionate people are, so we’re expecting growth and lots of it,” notes Talal Omar, who is head of the Middle East office and has been charting the region’s records for the past four years.

Although the UAE is trailing in record-breaking instances compared to countries like the US (5,600) and the UK (2,900), GWR is noting a huge upsurge in applications year on year. The office’s database shows that the UAE is up 300 percent compared to five years ago, while the US saw an increase of just 60 percent. Other Middle Eastern countries in hot pursuit include Egypt and Saudi Arabia, which plans to take Dubai’s place as home to the world’s tallest building when Kingdom Tower in Jeddah surpasses the 830-metre Burj Khalifa. Although Omar describes the late ’90s as the UAE’s record-breaking boom period, the country’s first world record was achieved as far back as 1979. At a height of 41.14 metres, the atrium of the Ramada hotel in Dubai still holds the record for the ‘tallest stained glass window’.

Since then, the UAE has gone on to collect every title from ‘most people parachute jumping from a balloon’ (40 participants, organised by Skydive Dubai), to ‘largest gathering of people dressed as chefs’ (organised by Dubai’s Department of Tourism and Commerce Marketing and Emirates Culinary Guild at Meydan) and ‘highest sword throw’ as part of a traditional dance (21.275 metres, set by Hazza Sulaiman Al Shehhi at Fujairah’s Al Saif Traditional Sword Competition). “When it comes to world records it’s not about ‘bigger is better’, but showing the world you are the best at something in your field,” says Omar.
“On a personal level, I’ve learned that there are no limits for the human spirit and no boundaries when it comes to generating ideas for new records. The interesting thing about the UAE is that you will see world records from the moment you set foot here,” he adds. In Dubai, this is very literally the case. On landing, visitors encounter the largest airport building by f loor space which is connected to the longest driverless metro in the world. From here, it’s a short ride to The Dubai Mall, the world’s largest shopping centre with a f loor area of 548,127 square metres boasting 1,200 retail outlets.

At 160 metres (35 storeys) tall, it leans a staggering 18 degrees to the west – four degrees more than the Leaning Tower of Pisa – making it the farthest leaning manmade building on earth. Abu Dhabi is also a hot spot for the ecominded and scientifically curious thanks to the Masdar project. When completed, this will be the world’s first zero-waste, zero-carbon city. Over on Yas island, thrill-seekers can let loose at Ferrari World Abu Dhabi, the world’s largest indoor theme park and home to Formula Rossa, which holds the title of ‘fastest roller coaster made of steel’.
With a top speed of 240 kilometres per hour (150 mph), the attraction is designed to mimic the feeling of driving an F1 car and braking at maximum speed. This ties in nicely with neighbouring Yas Marina Circuit, where the longest straight in Formula 1 is located. “There is a great premium placed in the UAE on really doing things differently and raising the bar on each and every project. It is testament to the forward-thinking spirit and appreciation for innovation that drives the country,” says Andy Keeling, park manager at Ferrari World Abu Dhabi. 7

Manmade marvels aside, the UAE also proudly boasts a collection of records for human achievement. In March, Yas Marina Circuit’s Drag Strip was the venue for a new drifting record when Saudi national Mishari Al Turki took part in the Pro Drag Racing motor sport competition on his Super Street Bike. “Super Street Bikes are modified versions of road-going bikes. I have raced in the US and no one believed a man from the Gulf would be able to go as fast as I am at the moment. I have a friend from Canada who decided to ship his bike and come down to Yas Marina Circuit. I hope more racers around the world will do the same and help develop this sport,” says Al Turki. GWR’s Omar will be among the first to welcome them. “We live people’s dreams and see their passion throughout each attempt. One day we’re working with a seven-year-old and the other with a multinational or a charity. When it comes to achievement, I believe we’ve only just scratched the surface of the talent we have in this region,” says Omar.

Top DUBAI records Dubai Aquarium &Underwater Zoo: This stunning attraction holds the Guinness World Record for the world’s largest acrylic panel measuring 32.88 metres wide and 8.3 metres high. The 10-million litre Dubai Aquarium tank is also the largest suspended aquarium in the world. Burj Khalifa: The tallest building in the world measuring 828 metres tall officially opened in Downtown Dubai on January 4 2010. Burj Khalifa also holds Guinness World Records for tallest manmade structure on land and the most floors in a building. The Dubai Fountain: The world’s largest dancing fountain is at the foot of Burj Khalifa. The fountain shoots water jets as high as 150 metres, equivalent to that of a 50-storey building. A fresh drive to revitalise the UAE’s sleepy date farms and transform them into a flourishing industry is underway. Concierge talks to the experts A house without dates is an empty house, or so the Prophet Mohammed (Peace be upon him) is once believed to have said. He may have been speaking many centuries ago, but the ancient maxim still rings true in this region today where dates remain a regular feature at mealtimes and an integral part of UAE culture. This year, as the summer harvest coincides with the holy month of Ramadan, Muslims across the country follow the timeold tradition of breaking their fasts with the nutritious fruit, just as the Prophet (pbuh) did all those years ago. It’s a tradition based on necessity as well as religion. Dates, as Tina Memic, deputy general manager at gourmet date boutique Bateel, says, have a high nutritional profile and provided a vital source of sustenance for early Bedouin surviving against the odds in the arid desert. “Dates are a power fruit and offer all sorts of health benefits. For a long time, the local tribes relied on them for food and their cultivation in this region dates back centuries.”

In Al Ain, Abu Dhabi, large swathes of land are given over to date palm plantations, a number of which, some claim, have been there for several thousand years. It’s only very recently, however, that the fruit has begun to be produced for the mass market. “There isn’t a longstanding tradition of commercial farming in the UAE. Most of the farms around here are small family-run entities that were started about 40 years ago as part of a social welfare programme designed to settle the roaming Bedu people,” explains Ray Moule, technical services director at Abu Dhabi Farmers’ Services Centre (ADFSC). Once established, the farms were used as vehicles to distribute surplus income from oil to the people via government-financed development and support initiatives, most of which have since been dismantled. The result today is that many of Abu Dhabi’s 24,000 date groves are hobby farms and, while some fruit goes to commercial markets, much of the yield is still

consumed by the larger family or used as animal feed if the quality is poor. Now, the UAE capital is looking to develop this natural resource, explains Moule, whose organisation is working to reform the capital’s farming system and encourage local date producers to harness the massive earning power of their product. In Al Ain alone, there are approximately 3.5 million date palm trees. Statistically, the annual yield from this could be around 147,000 tonnes of dried dates a year, but the reality is more like 78,000 tonnes with an approximate value of AED550 million, says Dr Ismaeil Al Hosany, the head of extension services and technical manager of date palm production at ADFSC. This is the imbalance the organisation is working to redress. “In recent years, the government has moved away from the old subsidy model and begun working towards a balance between proper farm production and a reduction in the strain on natural resources, especially water,” says Moule. The heavy use of water is of particular concern to experts at ADFSC who point towards a general misconception among local farmers that the more water lavished on date palms the better. “Many of the farms use water to excess, which
is disastrous for the health of the trees and the quality of the yield. The soil structure here is extremely fragile and, when over-saturated, cannot retain the nutrients necessary for the date palms to thrive,” says Dr Al Hosany. As part of ADFSC’s Date Improvement Program, Dr Al Hosany, Moule and their colleagues travel from farm to farm educating workers and owners about best practices, including proper irrigation techniques, in addition to offering fertiliser and pesticide spraying services. Slowly but surely, ADFSC is making headway as one by one the local farmers begin to appreciate the economic potential of their date palms and consequently take better care of them. “Traditionally, dates were produced just for the family so there was no great concern about quality but now, with the development of a more sophisticated market there is a demand for a consistent standard of fruit,” explains Moule. Larger varieties, such as the glossy Medjool dates, an import from North Africa, fetch the best prices on the market while local tastes tend towards UAE varieties including Khalass, Khenaizi, Fard and Dabas, he explains. Last year, ADFSC introduced the marketing of fresh dates, picking and

packaging the fruits in the ‘rotab’ stage when the fruit is just turning from yellow (or red in some varieties) to golden brown rather than the more commonly known ‘tamr’ stage when they have fully dried and gone dark brown. According to Dr Al Hosany, who professes to consume at least one kilo of dates per day, this is how Emiratis like to eat them, a preference partly influenced by Islamic belief that the Prophet Mohammad (pbuh) broke his fast with ripe dates. As a result, during the holy month of Ramadan, Muslims will traditionally consume three fresh dates with a little milk or laban before saying the evening prayer and eating iftar. “Dates are very high in nutrients and contain natural sugars like fructose and glucose that are easily and quickly absorbed by the blood. During the fast, which can last as long as 14 or 15 hours, the blood sugar level plummets and there is a danger of eating too much too rapidly at iftar. Dates stabilise the blood sugar level and make you feel instantly fuller so that when you come back from prayers you are more inclined to eat sensibly and your stomach is better prepared to handle the sudden intake of food,” explains Dr Al Hosany. As the long-standing local enthusiasm for dates begins to take on a more commercial spirit, companies such as Bateel are seeing a positive response from consumers to new date-based foodstuffs that range from date jam and syrup to date salad dressing and mustard. There is still ample room for development though. So far, very little research has been carried out into the improvement of existing date varieties. “No one has really worked on date breeding and selection yet. With all the high-tech approaches to genetics available these days, it’s an area that I think is open for further development,” says Moule. Already, the UAE is one of the world’s major date producers and with plans well underway to revolutionise the country’s date-farming industry, this may be the perfect place to set the next step in motion.

Salsali Private Museum is the first private museum for contemporary art in the region founded in 2011 by Iranian art enthusiast Ramin Salsali. More than 600 works in the museum span genres of painting, photography, video art, sculpture and installation. This month’s exhibition features the work of critically acclaimed Iranian artist Reza Derakshani who is renowned for vibrant, richly textured canvases. A champion of modern Middle Eastern and local artists, The Third Line gallery in Al Quoz offers an exciting monthly exhibition programme. Meanwhile, neighbouring La Galerie Nationale is an elegant space specialising in original art furniture from the 20th century. Among the remarkable pieces on display are classic designs and contemporary work from artist Fadi Sarieddine. The Cessna 208 Caravan seaplane accommodates nine passengers each seated beside a window to offer unobstructed views of the entire journey. Guests board the plane from a pontoon at Dubai Creek Golf & Yacht Club. Heading slightly inland, the architectural wonders of Dubai Marina and Jumeirah Lakes Towers come into view. These ultramodern developments contain residential and business towers, retail outlets, restaurants, cafés and hotels. They centre around a series of lakes and the world’s largest manmade marina and border Dubai’s coastline for five kilometres.
Capital attraction As the journey reaches Abu Dhabi, an unusual disc-shaped building stands out. Aldar HQ, home of Yas Island developer Aldar, is one of Abu Dhabi’s more unique structures. Dubai Heritage and Diving Village Long before the advent of oil, the lucrative pearling industry provided a vital income to the people of the UAE. The Diving Village charts the nation’s pearl-diving past in a series of informative displays. A collection of fascinating black and white photographs portray the various pieces of equipment used from nose clips fashioned from gazelle horns, protective body suits worn to guard against jellyfish and stones attached to ropes which were looped around divers’ toes to speed up their descent. Wander around accurate replicas of the various styles of boat or step inside a fisherman’s humble abode made from traditional wooden materials and furnishings. “Pearl diving here dates back thousands of years and it is a very important part of the UAE’s heritage,” says Nasser Juma bin Sulaiman, director of the Diving Village. Al Ahmadiya School Dubai’s first formal school was established over 100 years ago. Founded in 1912 by rich merchant Sheikh Ahmad bin Dalmouk, Al Ahmadiya School attracted a host of talented teachers from across the region that provided a robust curriculum. By 1963 the school was relocated to a larger building nearby. The beautiful original two-storey courtyard premises was then renovated and transformed into a museum in 1995. Classrooms are still arranged
as they would have been 100 years ago complete with desks, books and rudimentary equipment. Informative displays chart the fascinating history of this beloved institution. Sheikh Mohammed Centre for Cultural Understanding Established in 1998, this important venue is one of the most popular experiences to be had in Dubai. The Dubai Museum Step back in time and enjoy an innovative experience that merges Dubai’s past and present. Dubai Museum tells the story of the emirate before the discovery of oil from the first fishermen who settled on the banks of Dubai Creek to the desert Bedouin who roamed the
dunes. The museum is housed in the grand Al Fahidi Fort built in 1799 and a wonderful example of an authentic desert fort. Bringing Dubai’s history to life are archaeological exhibits from desert excavations and life-sized models of some of the city’s past residents. Start by meandering through the main building which houses the military museum with weapons, costumes and battle scenes. Exhibitions then take visitors inside a busy souk and even behind the door of a traditional Emirati home. A delicious Arabic dessert is a special treat where the ingredient to be savoured most is hospitality
Tafathalo in Arabic means ‘do me the honour’ and is an invitation for guests to come to the dining table and enjoy a range of delicious dishes. Sharing a meal with others is integral to the way of life among local communities in the region and is the ultimate expression of hospitality. This tradition is every bit as important when it comes to dessert, a highlight at any feast and a chance to unwind with guests during what is arguably the most social part of a meal. If invited to share a meal at an Emirati home a selection of sweets will be served as the conversation and freshly brewed Arabic coffee flows. The roots of the word ‘dessert’ come from the French verb ‘desservir’ meaning to clean the table and to remove what has been served. The earliest dessert incarnations came from naturally available ingredients such as dried fruits, honeycomb or nuts.
The advent of sugar in the Middle Ages brought with it a sweeter form of dessert, such as fudge which was presented to deities in India. Marco Polo encountered ice-cream in China and upon his return to Europe saw to it that the taste for the treat developed further. In the UAE, Bedouin who depended on camels for transport across the desert landscapes drank camel milk for a taste of something sweet with added health benefits. Influences from these early choices are today found in many desserts eaten in the region. Popular
dessert ingredients include pomegranates, lemons, dates, apples, figs, oranges, apricots, mangos, almonds and pistachios. During the holy month of Ramadan, which is celebrated annually and often falls in July and August, Muslims break fast at iftar meals when the sun sets and an important part of the offering is an incredible variety of tasty and energising sweets. In addition, this month's Eid al-Fitr celebration to mark the end of Ramdan is another opportunity to explore the mouthwatering range of delicious Emirati desserts available

Among the exciting array of traditional delicacies to try during a visit here are sweet pancakes and dumplings while contemporary offerings of flavoured camel milk and chocolate make a novel and delicious alternative. Baklava is one of the most popular Arabic desserts. Boasting a rich aroma, the dessert is traditionally served with a small cup of strong, black Arabic coffee perfumed with cardamom and unsweetened. Consisting of a nut filling, usually of pistachios, walnuts or almonds, layers of buttery dough encase the sweet centre. Baklava is also often scented with orange blossom or rose water to enhance the flavour. Legematt is another favourite sweet option among Emiratis. A deep-fried ball of pancake batter, it is rolled in sesame seeds to make the dumpling before it is fried and then drizzled with date syrup for a delicious finish. Khabeesa is a tasty dessert of breadcrumbs
blended with sugar, cardamom and saffron while bethitha consists of semolina blended with crushed dates, cardamom and clarified butter. Umm ali, or bread pudding, is another of the best known desserts in the UAE. Umm ali translates to mean â&#x20AC;&#x2DC;the queen of puddingsâ&#x20AC;&#x2122; and is a favourite among locals, particularly popular during Ramadan. With roots in Egypt, local variants use ingredients more common in this area. This delicious version of bread pudding sees puff pastry combined with nuts, raisins, dates and topped with pistachios. Another stand-out Arabic sweet is undoubtedly kunafe nabulsia, a sticky pastry made with sweet cheese laced between layers of shredded kunafe pastry. This speciality originates from the Palestinian city of Nablus and is prepared in enormous round trays lined with rose-scented syrup. Once baked it is cut into slabs and garnished with chopped pistachios. In this region, kunafe is typically enjoyed out in restaurants or at special occasions. For a more contemporary take on locally sourced sweets, products made from camel milk have increasingly gained popularity. Al

The falcon is not only a national symbol of the UAE but a majestic bird that has played a significant role in the country's development. The impressive predators were crucial to early Bedouin life as they strived to carve out an existence in the harsh desert conditions. Falcons were trained to hunt for food. Teaching the birds was a fascinating process that saw a close bond form between handler and bird. The same is true today although the birds are used purely for sport. Annual falcon championships are hugely popular and sees falcons purchased and trained for the duration of the hunting season before the birds are once again returned to the wild. Today the importance of the falcon to UAE culture and history is seen in many examples as the bird is represented on banknotes, official documents, paintings and architecture.

Museums
History in the making The earliest known habitation in this part of the world dates back as far as 5500 BCE. However, it was in 1971, when Sheikh Zayed bin Sultan Al Nahyan, Abu Dhabi's ruler from 1966 to 2004, and Sheikh Rashid bin Saeed Al Maktoum, the ruler of Dubai from 1958 to 1990, set the wheels in motion with their neighbouring sheikhdoms, Sharjah, Umm Al Quwain, Fujairah and Ajman (Ras Al Khaimah joined in 1972) to form an alliance. Prior to this, the seven emirates had lived in relative harmony, united through a protectorate treaty with Great Britain, which earned them the name the Trucial States. It was a successful partnership, but in 1968 the United Kingdom ended the treaty. In order to maintain security, Sheikh Zayed and Sheikh Rashid reached out to their neighbours and in 1971 they signed an agreement, which signified the creation of the United Arab Emirates.

SHEIKH ZAYED ROAD As Dubai's main artery, this is one of the busiest roads along with Al Khail and Emirates Road.
DUBAI CREEK, SOUKS AND DUBAI MUSEUM The heart of the city, the Creek is a stunning spot to catch a glimpse of authentic Dubai. See dhows (traditional boats) ply their trade along the waters while early morning visitors will see fishermen at work on the river banks. Also in this part of the city is Dubai Museum which makes for a fascinating day out with interactive displays and exhibits charting the emirate’s history from its pearl diving days. Stop by the gold, spice and perfume souks for some traditional treasures before leaving this vibrant area.

1 Madinat Jumeirah 2 Dubai World Cup
I am originally from Edinburgh in Scotland but have been living in Dubai for over a decade. My favourite time of year in Dubai is the end of October to early November as amazing weather is just around the corner. I look forward to the countdown to Christmas when there are lots of outdoor events in the city which I just love. For a cultural fix I love visiting Art Dubai, held annually in March, where I try to take in as many of the exhibits as possible. I think it is an amazing annual showcase for contemporary artists from all over the Gulf region. Given my field of work, I also try to attend plenty of fashion shows and product launches. The fashion scene here is so up-and-coming with lots of new Arab talent combined with the best from the global catwalks. Saturdays are my busiest days so my weekends are usually Thursdays and Fridays. Thursday is my ‘doing’ day when I catch up on work and take a pilates class. Once a month I meet up with my best friend over lunch at one of our favourite venues such as La Petite Maison at Dubai International

Financial Centre. Fridays are all about getting balance back into my life. After an intense week, I enjoy spending quality time with my family and invest in a little ‘me time’ by reading an inspiring book. There are so many incredible events throughout the year but my favourite is Dubai World Cup in March. It is one of our busiest times of year styling clients for the event. I get to Meydan Grandstand early to check out the race-day fashion as it’s always interesting to see how people interpret the season’s trends. When friends and family come to stay, I take them for dinner in Downtown Dubai at one of the fantastic restaurants there with views overlooking The Dubai Fountain. I also highly recommend chartering a boat with friends as it’s a great way to see the city from a completely different perspective.
Dubai is brimming with wonderful places to enjoy fine food. For a laid-back vibe I love Bussola at The Westin Dubai Mina Seyahi Beach Resort & Marina. I’m a huge pizza fan and it does the best in Dubai. Bahri Bar in Madinat Jumeirah Hotel–Mina A’ Salam is another firm favourite. We often meet friends for a pre-dinner drink while taking in stunning views of Burj Al Arab. I also love The Observatory at Dubai Marriott Harbour Hotel & Suites. It has speculator night views of Palm Jumeirah. I have been privileged to have many precious moments with family and friends in Dubai. To choose one that encompasses all would be my wedding last year. We had a very small private affair. We married in the desert, had one long table for dinner and a pool-party in a villa afterwards. It was just magical.
