Arabic coffee Strong, black and bitter, Arabic coffee is definitely not for the faint-hearted. In the UAE, coffee was traditionally prepared in copper pots on beds of coal in the desert. Today, aside from the cooking implements, the method remains largely the same. The ground beans are boiled rather than filtered before cardamom and saffron are added to complete the distinctive flavour of the brew. It is then drunk from small, expresso-style cups and often accompanied by sweet dates to help offset the sharpness of the beverage. Served in many hotels and practically every Arabic restaurant in the city, it’s easy to enjoy this distinctive flavour of the UAE.

Al Ain National Museum The oldest museum in the UAE, Al Ain National Museum offers an overview of the country’s traditions and culture as well as the history of the people who inhabited the region up to 8,000 years ago. The museum is broken into two sections – ethnographical and archaeological. A separate exhibit explains the history and construction of the falaj water irrigation system introduced to the region in the Iron Age and used for transporting and managing water using subterranean channels. The souks A visit to some of Abu Dhabi’s souks is a great way to experience the cultural side of the capital. Particularly popular is the venerable Gold Souk, one of the city’s oldest attractions and an excellent place to purchase gold and other jewellery, or just to soak up the bustling atmosphere of a traditional Arabian marketplace. There’s also the Fish Souk at Mina Zayed and the Al Mina Fruit and Vegetable Market opposite. Outside the city centre, there’s Al Ain Souk, Souk Al Bawadi and Souk Al Zafarana. More recently, a couple of modern souks have sprung up in Abu Dhabi, including the Souk Qaryat Al Beri, which offers a waterfront dining and shopping experience and the Souk at Central Market (pictured), where shoppers can browse stalls selling traditional and regional carpets, jewellery and antiques.

Abu Dhabi is packed with attractions and those on a short visit will be hard-pressed to fit everything in. If you have only set aside a day for sightseeing then I suggest focusing on those places that offer the greatest insight into the city’s culture and history. Begin at the Heritage Village near Marina Mall, which paints a picture of the life lived by local Bedouins in Abu Dhabi before the oil boom brought rapid modernisation. After this head to the Souk at Central Market for an Arabian-style shopping experience based on the traditional Middle Eastern market place. The cultural highlight for most visitors however, is the Sheikh Zayed Grand Mosque, the third-largest mosque in the world and a truly beautiful sight. Then, if there’s still time, I suggest a trip to Manaraat Al Saadiyat, where a fascinating exhibition covers the past and future of the city. Because Abu Dhabi is part of an island group, I often advise visitors to join a boat tour and explore the city from the water. This can be done though Sheraton Abu Dhabi Hotel & Resort, which also runs deep sea fishing, snorkelling and islandhopping tours. One great way to get a different perspective of Abu Dhabi is to join one of the Corniche cruises. The Corniche is a major landmark in the capital and a dhow or yacht cruise along here takes in all the highlights. Alternatively, visitors can borrow a bicyle from The Sheraton and cycle down towards Marina Mall and back, it’s a lovely way to experience the full the eight kilometre stretch in detail.

Abu Dhabi is no stranger to pampering. The UAE capital boasts some of the world’s most luxurious spas with the latest beauty technologies, offering everything from caviar facials to gemstone massages. However, some of the most indulgent therapies are those that have withstood the test of time such as the purifying Rasul Mud Treatment. Available from Zen the Spa at the Beach Rotana, this detoxifying mud treatment is one of the oldest beauty rituals in Arabia. The treatment is carried out in a special Rasul Chamber at the spa. First, four types of Rasual mineral mud are applied to different parts of the body and then the steam is switched on and you are left to relax while the mud soaks the toxins from the skin before the showers come on and rinse them away. INTO THE WILD Spectacular nature reserves, landscaped gardens and mile upon mile of untouched desert makes Abu Dhabi a haven for nature enthusiasts

Q To some, the amount of greenery adorning the Abu Dhabi landscape may come as a surprise. It certainly is impressive that a city, which sprang out of barren desert only 41 years ago, should contain so many parks, gardens and wildlife reserves. In addition to this, the collection of islands just off the coast opens up another realm of natural beauties to explore. Simply hire a speed boat or join an island-hopping tour to discover a whole new dimension to the emirate. Back on land, give in to the call of the wild and head out to Al Ain Zoo, home to more than 4,000 animals including many rare and endangered species. Also in Al Ain is the Paradise Hanging Gardens, which hold the Guinness World Record for the most hanging baskets, with some 2,968 in total. Central Abu Dhabi is almost as colourful with several parks and gardens scattered throughout the city, including Khalifa Park, the Old Airport Garden, Al Khubeirah Garden, Al Ghaf Park and the picturesque Capital Gardens. Al Ain Zoo Spread across 900 hectares of stunning landscape in the foothills of Jebel Hafeet, Al Ain Zoo is one of the largest animal conservation centres in the UAE. It was founded in 1968 by the late Sheikh Zayed bin Sultan Al Nahyan to provide a place where a number of species could live freely in their natural habitat. Since then, the centre has made a name for itself as a regional pioneer in conservation, most notably with the successful breeding of desert antelopes and gazelles, including the endangered Arabian oryx. Among the other creatures that can be observed here are big cats, including lions, pumas, leopards and jaguars. There is also a reptile house, where visitors can admire some of the most hair-raising snakes from around the world, among them the local Diadem Snake, the Red-Tailed Boa of South America and the sly UAE Sand Boa which buries itself beneath the sand before pouncing on its unsuspecting prey. More approachable animals can be found in Elezba petting zoo, with goats, ponies, sheep, ducks and rabbits all keen to be stroked and fed. This is one of many interactive exhibitions at the zoo, which places great emphasis on educating visitors and forging connections with other zoos around the world to spread the conservation message. Paradise Hanging Gardens Prepare to be blinded by colour and intoxicated by scent (in a good way) at the aptly named Paradise Hanging Gardens. One of Al Ainâ&#x20AC;&#x2122;s most famous attractions, these beautiful gardens welcome around 1,000 people a day and are a must-see for any visitor, whether flowers are your thing or not. The sheer array of colours in the displays is breathtaking. At the entry gate, the Guinness World Record notice proudly states the following: The largest display of hanging baskets consisting of 2,968 arrangements was achieved by Akar Landscaping Services Agriculture (UAE) in the Zakher area in Al Ain, UAE, on February 28, 2011. Since then the park has undergone an expansion in an effort to break its own record and is now more than ever one of the most wondrous sights in the UAE. City parks If the hustle and bustle of the city gets too much then head to one of the many parks scattered throughout Abu Dhabi island to enjoy some peace and quiet. Just off the Eastern Ring Road around the Al Matar and Al Madina areas is the grand and impressive Khalifa Park, one of the city’s major landmarks. The design of the park was inspired by the world’s great gardens and features canals, fountains, lakes and waterfalls. Arabian Wildlife Park Easily one of t he most beaut iful and impressive wildlife reserves in the region, this vast park sprawls over 4,100 hectares. The reserve is situated on Sir Bani Yas Island, one of the UAE’s largest natural islands and named after the tribe that first inhabited Abu Dhabi 250 years ago. Human habitation on this island dates back much further to the Bronze Age, with the last settlement departing around 110 to 120 years ago. The discovery to date of some 36 archaeological sites on the island makes Sir Bani Yas of equal interest from an historical perspective, with the oldest dating back to 600CE. Today, while humans are welcome, the emphasis is on the 10,000 animals here and the island is largely dedicated

to providing an authentic environment for them to live in. A particular focus is placed on the breeding and rehabilitation of animals indigenous to the Arabian Peninsula, including the critically endangered Arabian oryx, which was classified as extinct in the 1960s. Today, Sir Bani Yas Island is home to a herd of over 500. Manarat Al Sa adiyat Get to grips with the Saadiyat story, told through a series of interactive displays and multimedia exhibitions at the island’s visitor centre. Wander through the nine chapters, each of which focuses on a different aspect of the development and learn about the past, present and future of this ground-breaking project. In one chapter, a scale project gives viewers a real sense of what the island will look like on completion, while another offers insight into the conservation programmes, one of which is designed to protect the island’s indigenous population of Hawksbill turtles. The final chapter features a real-time video feed from the major construction sites so visitors can see how work is progressing for themselves.

It will be a global hub for culture and learning with a series of high-profile institutions, including some of the world’s most respected names in art and education, set to open here over coming years Last month, one of the region’s largest art fairs, Abu Dhabi Art took place in Saadiyat Cultural District at Manarat Al Saadiyat, the island’s visitor and exhibition centre. The event, which has been held here every year since its inception in 2009, provides a taste of the extraordinary opportunities this place will afford when the international museums, galleries and universities arrive. It will be a global hub for culture and learning, with a series of high-profile institutions, including some of the world’s most respected names in art and education, set to open here over coming years. First up will be the Louvre Abu Dhabi, due for completion in 2014. Projections of the building, designed by Pritzker prize-winning architect, Jean Nouvel, show a beautiful, white structure called the Rain of Light that will allow natural sunlight to form constantly changing patterns on the floor and walls of the museum thanks to the geometric lace effect of the domed roof. It will be the first universal museum in the Arab world, housing artwork that reaches across countries and centuries. Next to open will be the Zayed National Museum in 2016. With a Pritzker prizewinning name behind the design again, this time Foster + Partners, hopes are high for another iconic structure. Plans show a dramatic

design inspired by the wings of the Falcon, the national bird of the UAE. Inside, visitors will find the story of the country conveyed through a series of sophisticated exhibitions focusing on the history of the region and its cultural connections across the world. The third major museum to arrive will be the Guggenheim Abu Dhabi, expected to open in 2017. Pritzker prize-winning architect Frank Gehry is behind this vast structure, which will feature 13,000 square metres of gallery space and a further 18,000 square metres of exhibition space in spectacular cones. There will also be a 350-seat theatre, an on-site conservation lab and classrooms where workshops, discussions and exhibitions will focus on contemporary art and culture from all over the world. The second phase of development will bring a Maritime Museum and a Performing Arts Centre to the Island, which will be located in Saadiyat Marina, destined to be a glitzy waterfront destination complete with boutique shops and chic cafés. For now, though, visitors must be content with the already substantial offerings of this up-and-coming place, which so far includes two five-star hotels, The St. Regis Saadiyat Island Resort and Park Hyatt Abu Dhabi, numerous restaurants, bars and cafés, Saadiyat Beach Golf Club, Monte Carlo Beach Club and miles of untouched beach.

CELEBRATION OF A NATION As the UAE gears up to celebrate its 41st birthday on December 2, Concierge looks at the incredible achievements of this young country

Q If you want to learn about the history of the UAE youâ&#x20AC;&#x2122;ll need to dig a lot deeper than 41 years, because the earliest known habitation in this area stretches as far back as 5500 BCE. However, it was a historic day on December 2, 1971, when Sheikh Zayed bin Sultan Al Nahyan (Abu Dhabiâ&#x20AC;&#x2122;s ruler from 1966 to 2004) and Sheikh Rashid bin Saeed Al Maktoum (the ruler of Dubai from 1958 to 1990) formed a union between their two emirates and the neighbouring sheikhdoms of Sharjah, Umm Al Quwain, Fujairah and Ajman (Ras Al Khaimah joined in 1972). Prior to the agreement, the seven emirates had lived in relative harmony, united for many years through a treaty with Great Britain, which earned them the name of the Trucial States. Under the agreement, which was signed in 1892, the sheikhs agreed not to enter into any relationships with foreign governments or to dispose of any of their territories, except to Great Britain. In return, the UK offered protection to the Trucial States in the event of attacks by land or sea. It was a successful partnership, but in 1968 the UK announced that it would be ending its protectorate, which left the area open to attack. In order to maintain security, Sheikh Zayed and Sheikh Rashid reached out to their neighbours and, in 1971, they signed an agreement that signified the creation of the UAE.

Rich history

The combined union brought together thousands of years of history and heritage and, even at the time of the formation, the UAE was regarded as a rich country. Traditionally, the economy was rooted in pearl diving. Fishing and trading also supported the financial system, while further inland, money was made though date farming and camel herding. However, the First World War had a severe impact on the pearl industry and that, combined with the economic depression of the 1930s and the Japanese invention of the cultured pearl, resulted in a few very difficult decades. Fortunately, in the early 1960s things began to look up when the first oil company teams arrived on these shores and carried out preliminary surveys. The first cargo of crude oil was exported from Abu Dhabi in 1962 and Dubai followed in 1969. Two years later, the UAE was formed and revenues were ploughed back into the country.

Big steps

Fast forward to today and it’s clear that the rewards have been reaped. Billions of dollars have been spent on improving the infrastructure and the last decade in particular has seen the completion of various high-flying projects, including the 2010 unveiling of the world’s tallest tower – Burj Khalifa (measuring 828 metres), the development of Palm Jumeirah and the Dubai Marina, the largest manmade marina in the world. Abu Dhabi has also been busy setting records with the world’s thirdlargest mosque, the world’s fastest roller coaster and, until recently, its most expensive hotel, the opulent Emirates Palace.

Other economy-boosting projects include the Dubai International Financial Exchange, and Dubai Media City, and in the capital, Yas Island and Khalifa City, all of which have provided a wealth of opportunity for Emiratis and expatriates alike. The UAE is also home to two of the fastest-growing airlines in the world – Emirates, the flag carrier of Dubai and Etihad Airways, the national carrier of the UAE. Between them the airlines cover the globe and operate, on average, around 3,500 flights a week.

Let’s celebrate With all this in mind, it’s not surprising that for the last month UAE communities have been abuzz with a variety of events, including poetry nights, art exhibitions and traditional band performances. In Abu Dhabi the highlight will be the Corniche Parade, which will include a convoy of 200 Hell’s Angels on their motorbikes, followed by anyone with a vehicle who cares to join in. The Corniche road will be transformed into a Carnival with others following on foot. Expect a sea of black, white, green and red with flags, cars and even faces painted in UAE colours. Don’t miss the spectacular fireworks displays, which will take place at 8.30pm on the Corniche every night from November 30 to December 2.

AROUND ABU DHABI From the cosmopolitan Tourist Club Area with its vibrant restaurant scene to the quiet, leafy district of Al Mushriff, Abu Dhabi packs a surprising amount of variety into a relatively small space

Q Although the largest of the emirates by a long way, with almost 87 percent of UAE land to its name, Abu Dhabi city is relatively small. Perched on an island jutting off the coast, it first attracted settlers in 1760 with the promise of fresh water. From then on, the town expanded steadily until the discovery of oil in the 1950s accelerated development, bringing a rapid influx of hotels, shopping malls and residential buildings. The pace has only increased since then as, with empty space on Abu Dhabi Island growing scarce, developers look to both the mainland and other islands to house further expansion. New developments such as Yas and Saadiyat Islands, soon to be followed by Reem and Maryah Islands, will boast some of the capitalâ&#x20AC;&#x2122;s most enticing attractions. Nevertheless, the hub of activity and the centre of the city remains on Abu Dhabi Island, where a charming blend of old and new awaits in the different neighbourhoods and districts.

Al Khalidiyah

One of the city’s most upmarket areas, Al Khalidiyah comes complete with high-rise towers, neat suburban streets, manicured parks, shops and cafés. The most popular attraction here is probably Al Khalidiya Mall, which offers everything from furniture to fashion. More shopping can be found in the area between 7th Street and 9 th Street, where local confectionary shops, Arabic cafés and grocery stores offer an insight into daily life in this affluent area. The neighbourhood is also home to some of the capital’s most significant historical sites, including the 18th century Qasr Al Hosn, Abu Dhabi’s oldest building and Abu Dhabi Cultural Foundation. There are also two large public parks in the area, Khalidiyah Garden and Khalidiyah Children’s Garden (for ladies and children only) offering ample opportunity for pleasant strolls, picnics and snoozes in the shade. Al Maqtaa, Al Matar and the bit between the bridges

Situated at the southern tip of the island, furthest from the busy Corniche, this area forms the gateway to Abu Dhabi. A couple of the city’s major landmarks can be found in and around this area, including the aweinspiring Sheikh Zayed Grand Mosque, one of the largest and most beautiful mosques in the world. Nearby is the 200-year-old Al Maqtaa Fort and, forming a dramatic contrast to this is the sleek and modern Sheikh Zayed Bridge, which was designed by world famous architect, Zaha Hadid. A little way along the slim channel that divides the city from the mainland is an up-and-coming area referred to as ‘between the bridges’. Several five-star hotels have opened their doors along here, all with excellent bars and restaurants. Also here is Souk Qaryat Al Beri, a contemporary take on the traditional Arabian marketplace with smart souvenir shops and boutique stores where fish vendors and spice stalls might once have been. The Corniche Running the full length of the island’s northern face, the Corniche is the beating heart of the city. Simply put, Abu Dhabi would not be the same without it. The beach here is often used by the city as a venue for events, with world music festival, WOMAD, the Red Bull Air Race, the international wake-boarding festival, Wakestock and big name concerts among the many that have been held here over recent years. During the day the eight-kilometre promenade is populated by cyclists, joggers and people out for a stroll. Cafés and parks are dotted along the stretch, which affords stunning views of the ocean, particularly at sunrise and sunset. Another great way to enjoy the Corniche is to board a boat and cruise along the length. THE DAWN OF TIME Concierge joins Breguet in Capri, Italy to celebrate the 200th anniversary of the wrist watch

Like many of historyâ&#x20AC;&#x2122;s wealthy and indulged royals, Queen Caroline of Naples was accustomed to fine things. She had an eye for beauty and was not afraid to spend vast sums of money in the pursuit of lovely possessions. It was this, no doubt, that drove the young Queen to commission a landmark item in the early 19 th century, one that still characterises the way we capture time today. Queen Caroline is not a dominant figure in European history, but she does have several claims to fame that keep her in modern memory. Not least of these was her relation to one of the most powerful men of the period, Napoleon Bonaparte. She was his youngest sister and, though no match against the charms of her elder sibling, Pauline, she was said to have possessed the most beautiful complexion in France.

Commentators described her skin as resembling white satin when viewed through pink glass, but otherwise they reserved their compliments for Pauline, who also enjoyed the distinction of being her brother, the Emperor’s, favourite sibling. Unlike Pauline, Caroline’s colouring did not suit heavy brocades, sections and other fashionable adornments of the time and she seldom wore them. Perhaps this is why Caroline turned her attention to a new form of ornament that would unite her passion for extravagance with the innovative spirit of the era. One of the most eminent clock makers of the day was Abraham Louis-Breguet, whose reputation as one of the world’s greatest horologists and founder of the prestigious brand, Breguet, lives on. Caroline was a fervent admirer of Breguet, whose talent for combining technical brilliance with exquisite design had already made him a favourite in aristocratic circles. Over the course of their association, Caroline placed no less than 34 orders with Breguet, but in 1810 she had a slightly different request. Whether it was her idea or his suggestion will never be known, but between them Breguet and

Queen Caroline came up with a new kind of timepiece that would revolutionise timekeeping from that day forward. In the original order book which survives today in the Breguet archives, the entry details a “repeater in oblong form for a bracelet” quoted at a sum of 5,000 francs, an enormous amount of money at the time. It took Breguet two years to design and make the intricate piece, which was delivered to Caroline in 1812 with a bill for 4,800 francs, 200 francs below budget. Sadly, the landmark piece, a wrist watch widely believed to be the world’s first, is now lost. Records tells us that the watch was returned to the company twice for repairs, once in 1849 and then again in 1855. After this, the trail ends. By this point, Queen Caroline had been dead some 16 years, but the maintenance of the watch after her demise, presumably by one of her heirs, suggests that it retained more than usual value.

Breguet’s death also precedes the loss of the watch, but by the time he passed away on September 17, 1823 he had established a legacy that would last forever. Among his many contributions to the world of horology, Breguet provided automatic winding mechanisms, vital improvements to the balance spring and, most famously, the tourbillon, which has changed remarkably little from Breguet’s original designs and remains a highly sought-after feature in premium and collectors’ watches to this day. His remarkable designs earned him a great many honours, not least an extremely distinguished client list, which reads like a who’s who of the day. Louis XVI and Louis XVIII of France, George IV of England, Alexander I of Russia, Napoleon Bonaparte and the first Duke of Wellington are among the many well-known, public figures who commissioned a timepiece from the talented clock-maker.

Breguet also proved himself indispensable in scientific and military circles. In 1815, he was appointed as official chronometer-maker to the French Navy and the following year he became a member of the French Academy of Sciences before being presented with the Chevalier of the Legion of Honour by Louis XVIII. In addition, his name is one of just 72 inscribed on the Eiffel Tower. Impressive as these and his many other accolades are, to most people Breguet’s most resounding achievement remains the invention of the wrist watch. Before this, watches were large, cumbersome devices, worn first around the neck as pendants and then carried in pockets or special containers. This year marks the 200 th anniversary of the wrist watch Breguet designed for Queen Caroline and the brand has been celebrating the milestone with a travelling exhibition around the world. In October, a gala dinner was held in the luxurious Capri Palace Hotel on the Italian island of Capri to toast the bicentennial of the famed first wrist watch. Concierge was among guests invited by the brand to visit the majestic former residence of Queen Caroline, the Reggia di Capodimonte in Naples. In this grand setting, surrounded by banners emblazoned with the famous Breguet logo, we gathered to see the new Queen of Naples Collection and raise our glasses to the memory of Abraham Louis Breguet and his revolutionary contribution to horology.

The Queen of Naples’ collection Ten years ago, Breguet unveiled the Queen of Naples’ collection – a series of luxurious timepieces inspired by the original design of the watch Abraham Louis Breguet created for Caroline. The launch of the prize piece, however, was saved for the anniversary celebrations this year, when the breathtaking Reine de Naples special anniversary model was unveiled during a press conference held in Queen Caroline’s palace. Not content to stop with the watch, Breguet has developed an entire jewellery set to honour the occasion with necklace, tiara, earrings and ring to match, priced at a total of 750,000 Swiss francs. Purchased individually, the Reine de Naples special anniversary watch costs 200,000 Swiss francs, a price that reflects the intricacy of the mechanism and design. Some 233 brilliant-cut diamonds and 303 blue sapphires, each hand-picked to create the perfect colour gradation, illuminate the dial and more diamonds adorn the case, bezel and clasp. The selfwinding mechanical movement features a silicon balance spring and a handoscillating weight in 18-karat gold.

Sontaya: Southeast Asian Good food tastes even better when eaten in a stunning setting and this perfectly situated Southeast Asian eaterie is proof of that. Appropriately named Sontaya, which means sunset in Thai, the restaurant sits on a deck facing out to sea and offers terrace seating accompanied by uninterrupted views of the ocean. Even inside, the vista, clearly visible through floor-toceiling windows, is magnificent. Tori No Su: Japanese There may be an abundance of Japanese restaurants in Abu Dhabi, but real Japanese food, cooked in the traditional style using authentic ingredients, is harder to come by. Those who want a true taste of the country’s famed cuisine should book a table at Tori No Su, where kaiseki-trained Chef Ando can transport diners to Toyko with one bite of his king crab sushi roll. The black cod (gindara teriyaki donburi), always a reliable gauge of a quality Japanese cuisine, is simply sublime, while the scallop tamamotoyaki melts in the mouth. Pachaylen: Thai Itâ&#x20AC;&#x2122;s clear from the first bite that you are in for a treat at Pachaylen when, to whet your appetite for the delights to come, the waiter brings over Miang Kham, a traditional Thai street snack. This combination of chopped chilli, lime, shallots, peanuts, dried shrimps and toasted coconut shavings served in separate bowls with sweet dipping sauce on the side, looks too simple to taste so good. The idea is to take one of the betel leaves provided and make a bite-size parcel with all the fresh ingredients, then enjoy the explosion of flavour. Difficult though it is to stop eating this devilishly moreish snack, save some room for the meal

proper, where Chef Aphithak Withojit has more delicious novelties in store. Competition on the Abu Dhabi dining scene is stiff and it takes more than a knack for preparing good food for chefs to get the attention of diners

Q At Gourmet Abu Dhabi earlier this year, the emirate hosted a glittering line-up of world class chefs who boasted an impressive 26 Michelin stars between them. It was testament to the city’s emerging status as a major culinary capital, with all the necessary ingredients to attract the best chefs from around the world to come and work their magic in its ever-growing number of gourmet restaurants. According to Chef Mohammed Raess, it won’t be long before the UAE capital can hold it’s own next to gourmet heavyweights like London and New York. “Abu Dhabi is going to be a very popular destination for great food and I am extremely happy to be a part of this scene,” he says. “With new generations of chefs from all over the world coming to work in the city, the scope for real culinary excellence is expanding all the time,” says Raess, who beat off stiff competition to win the 2012 Young Chef of the Year title last June. “In particular, we’re seeing more creativity with the use of unique cooking techniques such as sous vide and molecular gastronomy in several restaurants.” One man who has certainly raised the stakes for Abu Dhabi’s competing chefs is Juan Amador, who opened his restaurant at Park Rotana Abu Dhabi in February this year. A champion of avant-garde cuisine, Amador has accumulated an impressive three Michelin stars for his culinary talents, which he honed under the tutelage of Ferran Adria, who is widely considered to be one of the best chefs in the world. Amador uses a complex series of techniques to create food that is intended to ‘stay in people’s minds’. On the menu at Amador Restaurant and Cellar in Abu Dhabi are intriguing-sounding dishes including Virtual Oyster and Mineral Pigeon with purple curry, each designed to create a perfect harmony of flavour and texture from the ingredients and methods employed in their preparation.

Increasingly, distinctive culinary styles like Amador’s are needed to attract the attention of diners in Abu Dhabi where the growing number of talented chefs is making it harder to differentiate themselves in the culinary crowd. “The dining scene here is evolving rapidly and it is growing increasingly competitive. With so many new restaurants opening at the moment, it will get more so over the next two to three years,” he says. Over at the Westin Abu Dhabi Golf Resort & Spa, executive chef David Contreras has found a niche in the market with his nutrient-packed brunches, which have a large section dedication to superfoods. The healthy wave, as Contreras describes it, is one of the current culinary trends alongside sustainable cooking, which is increasingly coming to characterise this generation of chefs, he says. While some chefs might attract diners with their alternative techniques and exotic dishes, Contreras prefers to lure them with his less is more philosophy. “I like to keep things simple and focus on selecting the very best ingredients and then treating them with the love they merit. I respect the ancient food marriages, (like tomato, garlic and olive oil) and avoid overwhelming the flavours with too many spices or excessive stirring.”

His aim is to give guests a lifetime culinary experience, something that discerning diners are increasingly coming to expect from gourmet restaurants in the capital. “Customers here know about quality and expect it, it’s not a surprise factor anymore. As the culinary scene gets ever more competitive, consistently well executed food is the base-level standard requirement,” Contreras adds. These days, to really earn recognition in Abu Dhabi, a chef and his restaurant must work together to create the experience effect with a meal that, as Amador puts it, stays in people’s minds. From the booking stage right through to the farewell, with the unexpected twist on the plate in the middle, the whole meal must be an experience that stands out from all the others. That note of distinction is what’s required to attract diners in the capital, where it takes more than good food to stand out from the crowd.

I was born in the UK but grew up in Melborne, Australia before moving to the UAE in 2000. During my time in Abu Dhabi the art scene has grown considerably. Those who want a taste of the city’s cultural offerings should head to Manarat Al Saadiyat, which runs great exhibitions throughout the year and also holds free workshops for people who want to come and try out different forms of art. Anyone interested in seeing works by Emirati artists can visit Ghaf Gallery, which displays a lot of local talent. Several of the hotels and cafés will also run exhibits throughout the year, including Emirates Palace, Fairmont Bab Al Bahr, Yas Viceroy, Café Arabia and Nolu’s Café. One of the best things about living in Abu Dhabi is that everything is so accessible, which is great when there’s so much to do. You can go from afternoon tea at Emirates Palace on the tip of the Corniche to a concert on Yas Island on the outskirts of the city in just half an

hour by taxi. I also love that it is sunny most days here as you can take advantage of all the outdoor activities. At the weekend, we tend to take advantage of this with camping trips in the desert, boat tours around the islands or even just a peaceful stroll along the Corniche followed by pizza on the beach. Otherwise, we might head to Le Beaujolais restaurant at Mercure Centre Hotel for a causal dinner. It has a warm, cosy feel and serves excellent French food. I also like the café at The One, which has an extensive menu and the added advantage of a lovely home depar tment to browse while you wait for the food. When we want to go somewhere fancy, it has to be Hakkasan at Emirates Palace, where the food tastes even more delicious under the seductive lighting, which adds to the atmospheric setting. Otherwise it’s Cipriani on Yas Island – I love its white, linen table cloths and delicious Italian pasta.
