Past and present ——
The summer months are the perfect time to immerse yourself in the UAE’s wealth of cultural sites, many of which are dedicated to preserving its heritage
Since the rule of the late founder Sheikh Zayed bin Sultan Al Nahyan, the UAE has always placed great importance on preserving its traditions, even as it looked towards the future. Today, the emirates are home to some incredible museums, art galleries and heritage areas, with even more on the way. Through vast collections of historic art and artefacts, visitors can immerse themselves in the relics of a bygone era, joining the dots to better understand the UAE’s journey from a Bedouin settlement to global metropolis.

When Louvre Abu Dhabi opened in Saadiyat Cultural District in November 2017, it changed the cultural (and literal) landscape of the UAE forever. From its iconic dome inspired by the region’s traditional palm frond roofs to its collection of 600 artworks and historic relics, it is one of the Middle East’s must-visit attractions. The collection is displayed across 23 galleries in 12 sequences, organised in chronological order to highlight the similarities and parallels between different cultures. The artefacts are truly awe-inspiring, from ancient Egyptian pharaohs to historical figurines that date back as early as 3,000 BCE. Art lovers are sure to marvel at the paintings by legendary masters such as Warhol, Whistler, Da Vinci and Van Gogh. In addition, the display of original religious texts is extraordinary – highlights include items from Islam, Hinduism, Christianity, Buddhism and Judaism – as well as being an astonishing show of diversity and tolerance. Abu Dhabi is also home to several smaller museums with their own unique charms. Al Ain Palace Museum, located on the edge of the Al Ain Oasis, was once the residence of the late Sheikh Zayed bin Sultan Al Nahyan and his family, and today, provides a fascinating insight into times gone by. The many displays aim to educate visitors about Bedouin history.

Perhaps one of the capital’s quirkiest is the Emirates National Auto Museum. Located around 45 kilometres south of the city, it seems to rise like a mirage out of the desert and is home to around 200 cars, the private collection of His Highness Sheikh Hamad bin Hamdan Al Nahyan. An essential visit for any motoring enthusiast, some of the cars have even featured on the British show Top Gear. Other highlights include the world’s largest pickup truck and the sheikh’s flamboyant rainbow Mercedes Benz collection. One of the newest additions to the region’s cultural scene is Etihad Museum. It is built, literally and figuratively, on the foundations of the UAE, right next to Union House in Jumeirah, where the signing of the treaty that united the emirates took place in 1971. The architecture mimics the shape of a manuscript, with seven columns built into the museum as symbols of the pens that were used to sign the declaration. Covering 2.5 hectares, it is divided into eight pavilions that tell the story of the UAE’s history, with extra emphasis on the period between 1968 and 1974. With its streamlined architecture and futuristic displays, Etihad Museum is one of the best places in the region to learn about the UAE’s constitution and the rights, privileges and responsibilities it bestows upon its people. Some of the highlights include local art, memorabilia donated by former and current UAE royalty and a pavilion dedicated to the UAE constitution, which includes the original declaration document. While Dubai Museum, also known as Al Fahidi Fort, is not as futuristic as Etihad Museum, it is still teeming with visitors most weekends, and with good reason. Located on the south side of Dubai Creek, this historical site uses lifesized dioramas to depict the long-forgotten practices of a pre-oil era Dubai, from traditional houses to pearl diving and desert landscapes.

Also worth a visit is the nearby Coffee Museum. In the Arab world coffee is more than just a hot beverage. It is associated with hospitality, socialising and the exchange of ideas, so it’s fitting that the UAE has its own museum dedicated to it. Located in Al Fahidi Historical Neighbourhood, it’s a fascinating destination for anyone with even a passing interest in the history of this humble drink. Owned by Khalid Al Mulla, the collection of coffee-related memorabilia is truly mind-boggling – highlights include 18th-century textbooks, centuries-old coffee pots from Egypt, Ethiopia and Yemen and coffee grinders that date back to World War I. Be sure to visit the museum’s own café for a freshly brewed cup. Like the Coffee Museum, the History of Cinema Museum is a hidden gem, tucked away in Barsha Heights among the high rise buildings. Unlike the majority of UAE museums, which focus on the development of the region, it traces the history of moving images, from prehistoric cave drawings to shadow puppets and the evolution of cinema. Located in the MCN Hive Building, the museum houses the private collection of MCN chairman Akram Miknas, who has amassed an incredible array of memorabilia over more than 25 years, hoping to inspire visitors with his enthusiasm for the art.
The emirates are home to some incredible museums, art galleries and heritage areas Some items date back as early as the 1730s and the display includes an 18th-century Dutch peep box viewer and a 20th-century mutoscope. Sharjah was named the Cultural Capital of the Arab World in 1998 and is well worth a visit. The emirate is known for championing the preservation of its customs and traditions and boasts a wealth of historical attractions, many of which are located in its heritage area, the Heart of Sharjah. Among these is the Sharjah Museum of Islamic Civilization, home to an incredible display of more than 5,000

In 2020, Dubai will welcome the Museum of the Future. Currently under construction, the immense structure is set to function as ‘an incubator for new ideas’ and a facilitator for futuristic innovation and design. It will be the largest of its kind in the world, building on five years of temporary exhibitions held at the World Government Summit.
Sharjah was named the Cultural Capital of the Arab World in 1998 and is well worth a visit objects of historical significance to Islam. These revolve not only around religion but also discoveries in science, literature and technology. Just a short stroll away is Sharjah Art Museum, one of the UAE’s best-loved cultural destinations, which boasts more than 500 artworks. The permanent collection of paintings by local artists traces the history of the region and the museum also hosts a number of temporary exhibitions showcasing regional and international artists throughout the year. It’s a must-visit during the Sharjah Biennial, a world-class celebration of contemporary art that takes place once every two years, with the current edition underway until June 10. Dubai Museum

Concierge meets Tara Young, the resident artistic director of La Perle by Dragone, to talk about the visionary show
Watching La Perle by Dragone is a visual feast, an experience that almost defies explanation – even if you’re running the show from behind the scenes like resident artistic director Tara Young. When the bubbly Broadway alum is asked how she would describe Dubai’s first resident show, she says: “The best way I can put it into words is not to describe the story, but to describe how it makes me feel. I experience huge amounts of joy. I experience sadness and a sense of loss. I feel quite a bit of fear and excitement, too. In the end, what I ultimately feel is a huge sense of celebration, love and unity with all.” It’s a big statement to make but La Perle by Dragone is a big show in every way. The creation of Franco Dragone, the man credited with the meteoric success of Cirque du Soleil, the performance takes place in a striking purpose-built theatre in Al Habtoor City. It’s an impressive 10-storey-high space with a special aqua stage that fills and empties with an estimated 2.7 million litres of water throughout the show, into a pool that forms the centrepiece of the theatre and the basis for some
The theatre is designed to offer each person an unobstructed view of the action on stage jaw-dropping stunts. The theatre seats 1,300 people and is designed to offer each person an unobstructed view of the action on stage. “What’s really interesting is that when you watch the show from a different seat, you’ll actually experience it differently,” says Young. “The seating arrangements of the theatre really offer a wealth of different perspectives, both literally and figuratively. That’s really a gift to the audience member. Because with a lot of shows, once you’ve seen them, there’s not really a need to see them again, but La Perle by Dragone is so unique, every time you watch the show, you get something new. “I feel like this show is alive and it’s magical, it has a heartbeat and it’s always changing like heartbeats do. That’s what you get with live theatre and it’s wonderful.”

“I feel like this show is alive, it has a heartbeat and it’s always changing” Young knows a thing or two about live theatre, having been in the performing arts for most of her life. By the time she was 30, she had already worked on almost a dozen Broadway shows including a stint with Liza Minnelli in Radio City Music Hall in New York. She later moved to more of a directorial role, eventually working with Franco Dragone in 2014 on a show in China. When it came time for Dragone to bring his vision of Dubai’s unique resident theatre show to life, Young was a natural fit. Today, she oversees a cast of 65 of the world’s best artists from 23 countries and is in awe of their skills and dedication. During the course of the show, you’ll see them perform some unbelievable stunts, from aerial tricks on harnesses to gravity-defying acrobatics with performers even diving into the stage pool from 25 metres high. The show also involves plenty of dance, theatre and even comedy. “These performers work so hard and they are always trying to improve and get better every day,” says Young. She adds: “It’s impossible for me to pick a favourite part of the show because it changes every day. Sometimes it’s watching someone learn a new trick. Sometimes it’s seeing an audience member react to a scene in a new way.” Ultimately, Young loves to see the effect that La Perle by Dragone has on its audience. “Every day is a surprise and I never get tired of that. I could never say that I’m bored at my job.” To learn more about La Perle by Dragone laperle.com

Braving the current, remembering the past —— Together with Panerai, Concierge explores the UAE’s ocean faring heritage and learns all about the inspiration that comes from the depths
For luxury watch brand Panerai, the sea serves as a constant source of inspiration. Numerous collections evoke the magnificence of the ocean and various elements in each timepiece draw from marine treasures. Recently, freediving world champion Guillaume Néry was named brand ambassador for one of Panerai’s latest novelties – the Panerai Submersible Chrono Guillaume Néry Edition – which also bears his name. And as is the norm with several Panerai timepieces, the world beneath the waters serves as the perfect setting to this new edition. Common threads are woven into the fabric of Panerai’s history and the heritage of the UAE. Visitors to the country can discover how a thriving marine ecosystem meant that life was able to flourish on sandier pastures decades and centuries ago. In the past, freediving was a skill that allowed the UAE population to survive economically, as the ablest men that lived in the fishing villages dotting the coastline, harvested pearls from the ocean floor – a skill Néry now proudly showcases with his many adventures beneath the water’s surface. Known for his impressive roster of achievements, the renowned freediver was crowned world champion twice, has broken four constant weight free-diving records and can hold his breath underwater for more than seven minutes. In September 2015, the diver surpassed his own personal best, setting a record for the second deepest dive in history of 126 metres in one breath, only two metres shy of the world record. During the late 18th and early 19th centuries, Panerai was the official supplier of technical and precision tools to the Royal Italian Navy. Panerai watches were also used exclusively by Italian commandos in their underwater operations and it is this DNA that drives the brand to align with modern ocean faring heroes such as Néry.

Abu Dhabi Pearl Journey
Here in the UAE, life was once very hard and the men took to the seas for survival, earning a living from fishing or pearling. And it is inspiring when you think of how people made their living searching the ocean bed for oysters. Before the discovery of oil changed the course of the region’s fate forever, the humble pearl was a true symbol of the UAE. Many Emiratis relied on pearl fishing for their livelihood but obtaining these ocean gems was no easy feat. Pearl diving would see the men away at sea, living on boats for months at a time, surviving on the strictest rations of food and water. When they arrived at their destinations, they would be tasked with diving the water’s depths, armed with only the most rudimentary equipment – a nose clip made from goat or gazelle horns to help them hold their breath, a woven bag hung around their neck for collecting oysters and a rope attached to the boat that was their precious lifeline back to the surface. Many divers would reach depths of up to 10 metres facing risks of shark attacks and their own failing lung capacity. Needless to say, it was a dangerous pursuit that required immense bravery. And by the time they were ready to return to shore, the boats would be groaning under the weight of the harvested oysters.
These days, technical equipment used with modern methods means divers no longer need to risk life and limb to bring home these fruits of the ocean. But this rich heritage of the nation is kept alive by pearl farms in the region who take cues from modern Japanese pearl fishing methods. Ras Al Khaimah is home to Suwaidi Pearls, a cultured pearl farm founded in 2004 by the Al Suwaidi family, whose ancestors were among the last generation of traditional pearl divers. In the UAE capital, the Abu Dhabi Pearl Journey gives visitors an in-depth look at the history of pearl diving with a unique cultural experience. The company offers guided tours that delve deeper into the practice and sees guests board a traditional boat to embark on a leisurely cruise along the quiet channel lying between mainland Abu Dhabi and Hudayriat Island. As they sail along the waters, the tour guide will regale them with tales of the pearl diving experience. The combination of beautiful local scenery and storytelling makes for a memorable experience and the guide will also demonstrate how to open oysters. Any pearls found can be kept as a souvenir of this culturally enriching journey.

Panerai Submersible Chrono Guillaume Néry Edition Woven basket for collecting pearls
Common threads are woven into the fabric of Panerai’s history and the UAE’s heritage Guillaume Néry
Honouring and preserving the legacy of unsung heroes has always remained at the heart of Panerai’s operations, a philosophy also highlighted with the new Submersible Chrono Guillaume Néry Edition. Reflecting freediver Guillaume Néry’s impressive feats, the Panerai Submersible Chrono Guillaume Néry Edition combines excellent technical performance with a remarkably powerful, sporty appearance. It is, above all, a professional diving watch, water resistant to a depth of about 300 metres and makes for the perfect companion to those looking to explore uncharted territories and discover the secrets of the fascinating world that exists beneath the surface of the sea. Among the many features that make this an exceptional timepiece, the unidirectional rotating bezel is one of the most significant as it accurately displays the duration of the dive. Clarity becomes another priority when divers venture deeper into the waters and thanks to luminous white markers on the timepiece, the dial is legible under all lighting conditions – including complete darkness – and all the elements clearly stand out strongly against the textured shark grey background. This masterpiece is also a precision chronograph with a flyback function that enables perfect synchronisation with an external reference signal. Its P.9100 automatic calibre boasts a power reserve of three days, a movement that was developed in Panerai’s watchmaking manufacture, the Laboratorio di Idee in the Swiss town of Neuchâtel. The timepiece is equally appealing above the water’s surface with its 47mm titanium case which blends perfectly with the blue ceramic bezel, the blue hands and the blue rubber strap. And in yet another nod to Néry’s heroism, the screw back is engraved with the athlete’s signature, the silhouette of a diver with a merman’s fin and the depth of Néry’s final world record – 126 metres. The brand is also offering another limited edition piece with a black DLC titanium case and bezel and a blue-black dial as part of this special collection with 15 pieces only. The fortunate few who acquire this new creation will have the opportunity to participate in an exclusive experience that sees them diving and whale watching in Moorea, French Polynesia with Néry himself.

A golden moment in time
Omega Speedmaster Apollo 11 50th Anniversary MoonshineTM
——
Marking the 50th anniversary of man’s first steps on the moon, Omega has introduced two new limited edition timepieces. President and CEO Raynald Aeschlimann tells us there is a lot more in store
It’s been 50 years since Neil Armstrong and Buzz Aldrin stepped foot on the moon and enraptured the world. Their journey was a great leap forward for mankind and a milestone moment for luxury watchmaker Omega. The Swiss maison’s Speedmaster Professional Chronograph played a special role aboard Apollo 11 as the watch worn by the astronauts. When Armstrong took his first steps on the lunar surface, he left his Speedmaster inside the lunar module as a backup electronic timer. But Aldrin wore his as he ventured out 19 minutes after Armstrong, propelling the timepiece into the annals of watchmaking history. “It was a big moment for us,” says Raynald Aeschlimann, president and chief executive officer, Omega. “Being worn by the astronauts on the first moon landing is an amazing story!” The Speedmaster was originally conceived as a chronograph of choice for motorsports aficionados, but after its lunar debut, the model became universally known and has since been referred to as the ‘moonwatch’. To commemorate the golden anniversary of this out-of-this-world horological moment, the brand raised the curtain on a limited edition Speedmaster in March. Every bit as spectacular as the original moonwatch, the Speedmaster Apollo 11 50th Anniversary MoonshineTM is limited to just 1,014 pieces. Rendered in 18-carat MoonshineTM gold – a unique alloy paler than yellow gold – the watch features a new hand-wound movement fashioned out of modern materials. Design features on the caseback such as the “1969-2019” engraving, a world map that looks down on Cape Canaveral and a domed lunar meteorite representing the moon, pay tribute to its lunar success story. To the watch community, the launch came as no surprise as it was known that 2019 would be a big year for Omega. But it was only recently revealed that the Speedmaster Apollo 11 50th Anniversary MoonshineTM would serve as the opening act to a year of big Speedmaster releases.

Omega Speedmaster Apollo 11 50th Anniversary Limited Edition
Following its golden sibling, the Speedmaster Apollo 11 50th Anniversary Limited Edition was unveiled last month. Yet another remarkable feat of engineering, the model is created in stainless steel with a black ceramic bezel ring and limited to 6,969 pieces. Honouring the Apollo 11 mission, the digits “11” feature in 18-carat MoonshineTM gold at 11 o’clock, while the subdial at 9 o’clock shows Buzz Aldrin climbing out of the lunar module onto the surface of the moon. The inner caseback shows an astronaut’s laser-engraved footprint on the lunar surface with an engraving of Armstrong’s legendary quote: “That’s one small step for man. One giant leap for mankind.” Taking a cue from the Speedmaster’s legacy, it seems that there will be a lot more in store for the remainder of the year. Aeschlimann says: “We’ve got some great exhibitions planned and, of course, a few more lunar-inspired products to unveil. There will be some big events and plenty of marketing, which I hope will remind people of Omega’s unrivalled moon heritage.” But as the brand continues to look back on its decades-old lunar legacy, Aeschlimann has his sights firmly set on the future with a forward-thinking approach that will ensure many more decades of success for the storied brand. “We’ve come off the back of a very strong 2018, when sales performed exceptionally well. The first quarter of 2019 has been equally positive and we’re confident for another good year ahead. We are focused on bringing ourselves much closer to consumers through more e-commerce and online sales and we’re developing more and more products with the industry’s highest standards of design and technology. Combining that with a robust marketing plan, I’m confident for what’s to come.” With its roots firmly steeped in Swiss watchmaking heritage, you’d be forgiven for thinking that keeping things strictly traditional is the norm. But playing it safe has never been part of the brand’s DNA and Omega isn’t shying away from embracing a modern approach to connecting with the customer. The brand delivered some groundbreaking firsts since Aeschlimann took over the reins in 2016 such as the #SpeedyTuesday initiative, which saw Omega sell all 2,012 limited-edition pieces of the Speedmaster Professional online through the brand’s Instagram page.

“The growth of digital is one of Omega’s biggest focuses. We first began our e-commerce in the USA. It instantly connected us with consumers all over the country. Now, with that experience and knowledge, we’re planning to bring it into even more markets. For me, I just love the close relationship it creates between Omega and its customers. Furthermore, it allows us to be creative and pioneering.” Unlike its contemporaries, Omega has also employed an allinclusive approach when it comes to targeting the right audience. And with millennial model of the moment Kaia Gerber, daughter of Omega ambassador Cindy Crawford, the new face of the brand, it is clear that this new generation of watch enthusiasts is front of mind. “These are our core customers of the future. We want to build relationships right now and establish Omega in their world. You can’t always rely on tradition, you have to grow and adapt and I think Omega is doing that well. The development of our digital platforms is bringing us much closer to young consumers than ever before – and often more so than our competitors.” So while 2019 will continue to see the brand expand its digital footprint, while also shedding a light on its lunar legacy, Aeschlimann believes there’s still a lot more to achieve. “So long as Omega is worn by aspiring individuals, there are no limits to where our watches can go. Of course, we’re still building strong relationships in sport, entertainment, exploration and social causes – so we’re always seeking new opportunities to strengthen our support. Don’t forget, Omega watches are still officially worn in space and in the ocean today, so who knows what tomorrow will bring.”

The secret lies in the sauce —— Concierge joins Pierre Gagnaire behind the scenes at Pierre’s Bistro & Bar to see the master chef in action and learn more about the recipe behind his success
Offering a refreshed take on the complete French dining experience, Pierre’s Bistro & Bar in Dubai Festival City has been taking the emirate by storm since it opened early last year. The refreshed take on French cuisine and the quirky, colourful interiors that invite diners to enjoy a more casual approach than typical fine dining, has clearly resonated with the market. But what diners don’t typically see is the work and preparation that goes into the plated dishes that arrive on their tables. It’s a pity as witnessing Pierre Gagnaire cast his magic in the kitchen is poetry in motion. With three Michelin stars to his name, a host of celebrated restaurants around the globe and a career that spans more than 40 years, there remains no stopping this master chef. The venue recently celebrated its first birthday and the chef was in town to launch the restaurant’s new menu to mark the occasion, which is when we caught up with him. You’re one of the world’s best chefs… tell us how it all began? “I worked! It all started in the ‘80s, when I decided I wanted to find a new and creative way to put the spotlight on fine French cuisine. But then it was no longer only work, it became a project of life – combining taste with emotions to deliver extraordinary experiences.” It takes some of the world’s best chefs a lifetime to win a single Michelin star. You’ve won three. How does it feel? “It’s like a jewel that you must work hard to keep. It’s not your property once you win it, you have to consistently prove you are worthy of it. That being said, a chef shouldn’t only work towards awards. Staying true to your own style and keeping it authentic is equally important as this is what keeps your diners happy.” Pierre’s Bistro & Bar recently celebrated its first birthday. Tell us more about the celebrations at the venue? “We changed the menu for the season with more focus on fresh vegetables such as asparagus and peas. We have also added a few interesting seafood dishes to the menu with the turbot now in season and we’re certain our diners are going to love it. With Dubai enjoying a central location, you get perfect produce from all around the world and I’m very happy with the quality of the product found here. We build our menu with these items as the base. In fact, here in Dubai, you will also find ingredients imported from France, which you cannot easily find in France itself.” Any signature dishes on the menu? “Our signature is that we have no signature – and our diners love us for that. Although sometimes, it can pose a challenge because people fall in love with a certain dish, come back for it and we don’t have it anymore. We have maintained a few successful dishes on the
Pierre’s Bistro & Bar
“The chef ’s spirit inspires the culinary philosophy of any restaurant combined with the energy of the location” menu such as the tuna tataki with crispy rice; black garlic with mushrooms; and the calamari, but we don’t call these our signatures as there are slight changes in the ingredients with each passing season – even if it’s subtle and in the garnish only. But at the end of the day, there is a signature style that we adhere to.” Tell us more about your culinary philosophy. “I’ve always believed that the chef’s spirit inspires the culinary philosophy of any restaurant combined with the energy of the location. The philosophy at Pierre’s Bistro & Bar varies in character from my restaurants in other destinations. Although the personality of the chef remains at the core, the setting and the recipes are different everywhere. For us, it is all about casual food with a strong French character and that Dubai touch, simply because we cater to a multicultural audience. Our menu changes three to four times a year in accordance with the season and you’ll find everything from curries to ginger-infused Eastern specialities and local treats with dates. And that’s what the crowd loves.”

You’ve opened numerous restaurants around the world and with all the management it takes, do you still find the time to simply cook? “At the heart of every new project is my desire to keep cooking. Of course, it’s different when you own the restaurant, but the story begins in the kitchen. I try my best to spend time in the kitchen every day. It’s very important to me as it helps me stay focused. I am not a businessman, I am a chef and I want to stay a chef – that’s the key to success.”
Cacio e pepe tortellini
What do you have to say about the dining scene in Dubai and how does it compare to anywhere else in the world? “Dubai is the new world. Here, you meet people from all over the globe that you wouldn’t ordinarily get the chance to meet elsewhere. People come here to live and to work and with so many ethnicities comes the opportunity to present a variety of cuisines to a diverse set of audiences.” Pierre’s Bistro & Bar
What’s your take on French fusion food? Does it fit your style? “Fusion is confusion. It’s important to stay true to your roots and keep the authenticity of your art alive. In fact, when I began working, I felt the world was my oven. But I’m French and I didn’t try to look outside. I’m very focused on my speciality.” When it comes to French food, what can make or break a dish? “The secret lies in the sauce. It’s what gives you a final product you can be proud of. In France, we are lucky because we have it all – the sea, the mountains, the countryside – and the inspiration comes from everywhere. And when you tap into this inspiration, you can guarantee success.” Any tips for up and coming chefs? “To be yourself and to work with honesty. One shouldn’t copy someone else’s style. If you copy, you’ve lost. You must be yourself.” When you’re not behind the scenes in the kitchen, what keeps you busy? “I give interviews. Jokes aside, I like spending time with family, listening to music and reading. I always have a book in my bag. It’s a simple life.”

With Dubai’s culinary scene continuing to evolve at a rapid pace, there has become a growing need for restaurants to change with the times and separate themselves from the competition. This is especially true for the many steakhouses that can be found throughout the emirate. While there will always be demand for the finest cuts of beef, presenting a more varied offering will help stand out from the crowd. And that is exactly what The Exchange Grill has achieved with its impressive new menu from executive chef Ronald Epie. Recently appointed to the position, the experienced Frenchman has introduced some Gallic flair into the restaurant’s kitchen. Housed in Fairmont Dubai, The Exchange Grill has carved out a reputation as one of the finest steakhouses in the city and an excellent selection of beef remains on the menu. There is premium gold Angus, Wagyu striploin and a succulent Kobe rib-eye. But now there is far greater variety, with dishes inspired, and ingredients sourced, from all corners of the world.
This is clear when our starters arrive at the table, the most eye-catching of which is the foie gras tempura, caramelised with a port wine sauce reduction. A dish that helped Epie’s father claim a Michelin star almost 40 years ago, it is presented in the shape of a large snail’s shell that cracks easily with a tap of the fork. This then reveals the huge helping of the French delicacy that is delicate, buttery and extremely rich. To complement the flavour, we selected the burrata and pomegranate. A great option for vegetarians, it is served with cherry tomatoes, basil, rocket leaves and a rather surprising element of green grapes. These provide a burst of flavour that goes well with the generous helping of cheese that requires you arrive with a serious appetite. When it comes to the main courses, we once again decide to sample the newest creations and seafood is the order of the evening. Despite being titled grilled jumbo scallops, the plate arrives with several plump molluscs beneath a bed of fennel salad with slow-cooked onion, ginger and turmeric. This is ringed by a foamy coconut jus that lifts the flavour of the scallops so that they are the star of the dish.

Beef tartare
Similarly, the Atlantic cod ‘Asian style’ also places the emphasis firmly on the cooking of the seafood. The often simply prepared fish is elevated, thanks to being marinated in soy and mirin, giving it a far more complex flavour. It is served with salt crusted celeriac, mousseline root vegetables and a black sesame dressing, proving that ingredients from different continents can pair perfectly. Despite steak not appearing on our plates throughout the evening, our appetite had been well and truly satisfied. Yet, having seen the dessert menu, we were tempted to try one more course. Fortunately, the molten chocolate sphere is the perfect dish for sharing – it also brings a sense of theatre to the dining table. Delivered to the table, the waiter then pours hot chocolate sauce over the sphere which somehow defies logic by holding firm before finally collapsing to reveal a smaller sphere of yoghurt vanilla ice cream with raspberry jelly. Each mouthful is exceedingly decadent and the chocolate has that perfect sheen that proves it has been expertly tempered. The perfect end to a memorable meal, we just have time for a digestif from the restaurant’s substantial drinks menu to conclude the evening. We settle for a Fairmont Old Fashioned as we finally have the chance to appreciate the stylish and comfortable surroundings. Huge leather chairs and clean, crisp table cloths give the restaurant the look of a fine-dining establishment. There is also an intimate feel, thanks to the tables being well separated, meaning it is the perfect place to celebrate a special occasion. While many diners will undoubtedly still descend on The Exchange Grill to sample the steak, those who choose to try the new dishes on the menu will be in for a very pleasant surprise.

The Dubai-based artist shines a light on expat life in the region through her artistic creations. Read on to discover how the emirate inspires her work
Dubai offers a lifestyle that’s surely one of the best in the world. There are plenty of professional opportunities, great travel options and the diversity in population really shines through. There’s cultural acceptance no matter where you come from. As a designer, I was keen to further explore my creative streak and through my art, I was able to find a niche in a market that allowed me to leave the 9-5 lifestyle behind to follow my dreams and live by my passions. I wanted to create souvenirs with a deeper insight into life in Dubai, which expats could take away as fond memories. Connecting with the different people living here and exploring local places makes it possible to spot quirks about expat life that everyone can relate to. This is what my work is about – a satirical reflection of the city through the eyes of the privileged expat. The sheer array of things to do in Dubai serves as an inspiration to my work. I am very lucky to live near Kite Beach and one of my favourite ways to spend my free time is kayaking or paddleboarding through the waters, followed by breakfast at a beachside café. Lately, I have also been cycling everywhere and this slower mode of transport allows me to really take in the city and appreciate my surroundings. My latest favourite dining venue in Dubai is 21 Grams. It’s a cosy urban Balkan bistro on Jumeirah Beach Road with simple, wholesome food and a charming setting. I also enjoy reading on the beach, visiting Cinema Akil for its showcase of indie films, attending art exhibitions, music events, workshops and talks and also hosting barbecues when the weather permits. When friends visit, we charter a yacht for a few hours as it’s a great excuse to get everyone together to view Dubai’s skyline from the shore. For a complete picture of the city, it is important to explore both sides – old and new. Once you’ve had your fill of the shiny architectural structures further south, take an abra across Dubai Creek, get hassled at the souks, wander through Al Fahidi Historical District and soak up the amazing Emirati flavours at Arabian Teahouse. Don’t forget to also make the most of the city’s calendar of cultural events, you’ll be surprised with what is going on if you look beneath the surface.

There’s also so much to explore in each of the other emirates. I often take my pop-up stall to Abu Dhabi. I love the change from Dubai, life is a lot more laid back in the capital. It’s also a great place for music, from classical music performances in Emirates Palace Abu Dhabi and shows at NYU Abu Dhabi to massive international acts at the du Arena. For art lovers, there’s, of course, Louvre Abu Dhabi. Ras Al Khaimah is amazing for the adventure seeker. I’ve gone on a few hikes, scrambled up a mountain and experienced the world’s longest zip line. Next year, I am also hoping to hike with the charity Gulf for Good. Fujairah is always great for a luxury resort break. Snorkelling around Snoopy Island is a wonderful experience. I have fond memories of setting up camp on the shore and sleeping under the stars while thrill seekers careered around on their quad bikes. Musandam and Khasab are also my all-time favourite local getaways. One of the best ways to explore this charming locale is to hire a dhow for the weekend and go cruising down the Omani coast.
