A MOMENT IN TIME ——— Concierge reveals the creative brilliance of German watchmaking greats, Glashütte Original
At Baselworld 2017, the world’s most prestigious watch and jewellery fair that’s held annually in Switzerland, Glashütte Original once again impressed with a presentation of new timepieces that reflect true artistic skill, technical creativity and, at the same time, tell the story of Saxon watchmaking. Nestled in the Müglitz valley of Eastern Germany is the serene town of Glashütte. Here, at the birthplace of German watchmaking, the population is made up predominantly of skilled artisans who create beautiful timepieces for the country’s greatest watch houses. While competition and brand rivalry outside the Saxon town may be fierce, manufacturers in the watchmaking hamlet sit side by side in peaceful alliance. In the workshops of Glashütte Original, generations of families work alongside each other. Experienced artisans and fresh-faced graduates from Glashütte Original’s school for aspiring watchmakers work in unison, drawing on their strengths to craft some of the finest quality timepieces available. The path for watchmakers and companies in Glashütte hasn’t been easy. The town has found itself in the middle of three wars and a number of political regimes; many of which threatened the survival of the watchmaking trade. After World War II, when a large area of nearby Dresden was destroyed, the watchmakers of Glashütte came together under one company umbrella, GUB (Glashütter

Uhrenbetriebe). When the Berlin Wall, separating East from West Germany fell in 1989, the company was temporarily closed. However, the pride and love for the unique art of German watchmaking endured and, in time, GUB restarted, minus a few brands that separated from the mother company, such as A. Lange & Söhne and Moritz Grossman. Glashütte Original set about rebuilding business and bringing back its craftspeople, rapidly growing the number of workers from 72 to over 500. With the launch in the spring of 2016 of its manufactory Calibre 36 – the heart of the new Senator Excellence line – the Senator Excellence Panorama Date and the Senator Excellence Panorama Date Moon Phase has been stealing the spotlight of late. Every watch in the collection goes through rigorous testing for 24 days – under conditions that are even tougher than those in force for the demanding German Chronometer certification test – while a special engraving on the case back serves as a seal of quality. It’s impressive to note that Glashütte Original produces nearly all its timepieces’ components; essentially everything except leather straps. Within the valley, the brand has two manufactories. It also runs a dial manufactory in Pforzheim in West Germany, which creates intricate dials; each one often going through up to 90 stages before reaching completion. most obvious in Glashütte Original’s Sixties Iconic collection of timepieces that were unveiled earlier this year. The new limitededition Sixties Square chronograph impresses with its domed dial and stunning colours that also give the models their names – forest, ocean, tangerine, fire and graphite. A technique known as dégradé is used for the dials for a mesmerising gradient effect – it involves the manual process of applying a series of lacquer coats after which the dials are heated to burn in the colours. Other standout timepieces produced at the manufactory include new models launched at this year’s Baselworld, such as the landmark Senator Excellence Perpetual Calendar. One of the most desirable complications, the function assures the correct constellation of date, weekday and leap year up to the year 2100AD and complements the exceptional contemporary aesthetics. Every detail is taken care of and is worthy of admiration, from the curve of the moon phase at 8 o’clock to the weekday and month windows presented as in a passe-partout frame. Glashütte Original also unveiled a sporty new version of the Senator Chronograph Panorama Date in stainless steel. Here the deep black dial is set off by high-contrast white print and is enhanced by radiant blue Super-LumiNova, which highlights the white gold hour, minute and stop seconds hands. The refreshed Pavonina collection of ladies’ watches sees an impressive range of colours and dials with a wide variety of decorative

THE FUTURE OF LUXURY ——— Concierge meets the man who inked a tattoo on Montblanc and finds out what’s next for the brand Words by Rob Nicholas
“The times they are a-changin,” said Bob Dylan, and the statement is no more apt in 2017 than when it is applied to luxury. Montblanc though has its finger on the pulse and has consistently tapped into evolving customer needs and trends to morph the brand’s reputation for writing instruments to also being a leading watch, jewellery and leather accessories brand, while also championing an important cause. The brand’s latest foray sees it introduce a connected watch and digital augmented paper as new entrants to its product line-up, while the long-standing UNICEF partnership is reflected through the use of the UNICEF blue and six special characters on a variety of special pieces. The characters are written in different languages and are the first letters children learn to write at school. At the helm of the maison’s creative department is Zaim Kamal. He is one of those people that can’t fail to make an impression and Kamal has been conceiving and refining product at Montblanc for the last four years. Rather than take such a revered brand too far out of the box, Kamal has successfully bled around the edges to create fresh appeal. He is the man who introduced tattoos on leather accessories and brought backpacks into a business oriented product line-up, creating a waiting list as well as a fresh approach. Concierge caught up with Kamal in New York when the UNICEF partnership for 2017/18 was announced and he provided some background and context to the collaboration.

“The UNICEF partnership is in its 13th year and this was the first collection I worked on with the design team since I’ve been at the maison. It is also the first time that the UNICEF partnership has been reflected in all of our product categories. It will be represented in store, in windows, through communications and across digital platforms. We have 470 stores and each of them will carry the UNICEF concept to give it a very wide voice around the world,” said Kamal. One of his most celebrated innovations has been to incorporate tattoos in signature leather pieces produced by Montblanc. The concept was introduced in 2015 and created a clamour of interest from brand aficionados as well as drawing in new fans intrigued by the approach. “We have to surprise, we have to disrupt and that’s what I love about the maison,” he explained. “I remember when I first went to the board of directors to propose this and they looked at me and asked, ‘Tattoo and Montblanc?’ They are seldom lost for words, but they had difficulty following that and I said ‘But guys, writing with ink on a surface – who but us?’ And I love the board for this and I love the maison, that they say, okay, go.” The first tattoos were introduced two years ago and when asked why the concept didn’t continue, Kamal explained, “The reality is you can’t mass-produce a hand tattoo. We had just one to two specialists that did everything rather than factories of tattoo artists.

“However, art continues to be a strong feature in our signature pieces. Have you seen the hand painted serpent bag? We took the original steamer bag and found a hand-painter in Florence that created something really unique,” he explained, referring to the 110th anniversary steamer bag introduced in 2016. We asked Kamal what product lines he sees as having the greatest potential for development in the future and his attention immediately turned to the watch division, which has been a modern-day success story for the brand. “The Summit smartwatch created an impulse, meaning that it is a natural progression and has brought about a new field in our product line-up. We now have a whole digital segment that lives partly in leather, partly in watches and partly in writing instruments. “The reason Montblanc has been successful for 110 years is that we have provided our target clients with the tools that they need. People travel a lot, they need to be connected and some have never worn a mechanical watch. We’d like to convince them by wearing it. Summit is made like a mechanical watch, sits in the mechanical case, it has a strap, it has the buckle and interaction is through the crown but it is fully connected through the touch screen. “At the same time, a client who has only worn a mechanical watch and won’t wear a connected watch because he finds it too flimsy or too small can have the familiar gesture on his wrist but with the full connection. We are familiarising someone coming
from the connected world, as well as someone coming from the mechanical world with the same platform, but driven by different desires,” said Kamal. Like any brand looking to the future, Montblanc is looking closely at changing trends and habits, explaining: “We are very focused on the younger generations and understanding what they will be looking for when they are in a position to buy. “When I first suggested introducing a backpack to our product line-up, many people’s first reaction was that this is not business, who will wear it? But when we did, there was immediately a waiting list. People have changed and we have to look towards campus chic. Go to a department store and count the number of sneakers and shoes. Count separates – and count suits. Set amidst the lush greenery of Creek Park, Dubai Dolphinarium has quickly become one of the city’s most popular attractions since opening in 2008. The indoor venue regularly hosts popular aquatic shows that star bottlenose dolphins and trained seals performing a host of astounding tricks such as dancing, juggling and even painting for their trainers. This bond between humans and the incredible creatures has been built over time, and is one that’s incredibly strong. Aside from dolphin and seal shows, Dubai Dolphinarium hosts a number of other highlights including an exotic bird show with over 20 different species, the country’s first mirror maze and, more recently, Dolphin Planet where guests can swim with a dolphin. “It’s a once-in-a-lifetime experience for most people,” explains Jose Huet, a trainer at Dolphin Planet, who joined the team in 2015. “For many people, to touch or swim with a dolphin is a dream and they are often overcome with emotion when it actually comes true at Dolphin Planet. A while back, a little girl who had terminal cancer travelled all the way from London to swim with dolphins here. Her family and friends were watching her swim, living her dream. We arranged everything because we knew how important it was to her and we were all so touched by the experience,” adds Huet. Behind the scenes at Dolphin Planet, there’s a lot to account for and Huet starts his day examining the dolphins and making sure they are in good health – not just physically but also emotionally.

“People always wonder about my job and what being a dolphin trainer involves. It’s not like a normal job as dealing with animals makes each day completely different. Every morning we begin with routine examinations. We need to check everything from the dolphins’ eyes and mouths to their bodies, as well as breathing levels to see if they are okay. We sometimes collect samples for testing, if necessary. Whether it’s something big or small, we keep track of it all. “A huge part of being a trainer is staying on top of all these medical aspects and monitoring their wellbeing. That’s the priority. After that, it depends on what the dolphins will be doing. So say, for example, if they are going to be interacting with people, you have to observe how they move and if they are careful with their movements around people. For the shows, the dolphins perform tricks so the trainers have to make sure they exercise to stay fit. You give the dolphins what they want, whether it’s food or special attention, to reinforce a desired behaviour and then build on that relationship,” explains Huet. Huet is one of five trainers at Dubai Dolphinarium where there’s a real family atmosphere amongst the team. “I remember looking out of the plane and seeing Dubai for the very first time – it looked completely different from Mexico. Then on my first day at Dubai Dolphinarium, I was walking around and it was all so new but then, when I smelt the familiar scent of salt water, it was like I was coming home.” Huet makes training dolphins look incredibly easy, interacting with them at Dolphin Planet with natural ease. He grew up surrounded by animals and distinctly remembers the first experience that ignited his interest in marine life.

I don’t remember all the details but I can recall the emotions I felt while there. The experience sparked my curiosity because I wanted to know everything I could about him – what orcas liked and thought, and what they did,” explains Huet. While he went on to study photography at university, he took up a job at Vallarta & Cabo Adventures, photographing the animals and trainers. The role involved closely observing their interactions and, after a couple of years, he switched roles to become a trainer himself. “One of the hardest steps for a trainer is learning to communicate with an animal that doesn’t ‘speak’ in the conventional sense. Dolphins cannot hear like we do, so we communicate through observing their body language and using hand signals and body gestures. “Dolphins are not the only aquatic animal I’ve worked with. I have also spent time working with sea lions, sharks and others in the past. Sometimes people who start out as a trainer are able to understand that connection between humans and dolphins and sometimes they don’t, but once they can, it really does open a whole new door. For me it was a little bit easier because, when I was a photographer, I already spent time in and around the environment and observed it all. I was also very lucky to have great mentors in my life.” From witnessing dolphins give birth to watching calves grow and adjust in their environment, Huet has many career highlights to be proud of. His enthusiasm for his profession shows no signs of fading, especially as he holds dolphins in such high regard. “While dolphins are universally regarded as very intelligent creatures and are known to have friendly personalities, it’s magnificent to see just how close they can be to people and the bonds that they can form, and this is immediately apparent to every visitor at Dolphin Planet in Dubai Dolphinarium. To me, the personalities and behaviour of dolphins is simply amazing.”

An institution in its own right, Crowne Plaza Dubai has long been a cherished sight on the city’s skyline. Our Italian trattoria Al Fresco offers authentic fare, while our French wine bar Oscar’s Vine Society is truly a hidden gem among the wine bars in Dubai, offering delicious French bistro bites and 120 different grapes from all over the world.” Chef Herbault worked at other leading locations including France and Bora Bora before moving to Dubai, a city that greatly adds to his expertise. “Dubai gives me the opportunity of managing teams with a huge number of different nationalities, which is a great experience. But of course, being such a glamorous metropolis, the emirate also attracts celebrities from all over the world and I have had the pleasure to cook for some of them. These are definitely memories for life,” adds Herbault, who says he was inspired by his father to take up the profession. “My dad was a chef as well, and had his own restaurant until recently. When I was a child, I went to the restaurant every day and helped with preparations. I started with simple things like the mise en place but I also loved talking with guests who were curious to see a little boy roaming around in the kitchen. The smells, the atmosphere and the smile on people’s faces as they enjoyed the food was so exciting for me. I never considered any other career than being a chef.”

At Crowne Plaza Dubai, Herbault’s days start early in the morning and involve planning for the day ahead, attending meetings and discussing operations. Menus also change at least twice a year in every outlet too, in addition to seasonal promotions being regularly unveiled. “I have my own style and remain convinced that sticking to authenticity and traditional recipes will always last longer than any trend. However, it is interesting to see the creativity and change in culinary concepts in Dubai, and there are ideas that are worth developing further in my own culinary repertoire. “We try our best to source local produce wherever possible. Lettuce, okra, spinach or watermelon are some of the products we buy from local suppliers. However due to the size of the property we have to additionally source from overseas. Products like truffles, olive oils, certain cheeses and other specific items are not available in the UAE and have to be imported from their countries of origin. We only work with trusted suppliers,” says Herbault. Every restaurant at Crowne Plaza Dubai boasts its own signature highlights as Herbault points out, including the fantastic lion king roll at Sakura, French cold cut platter at Oscar’s Vine Society, crispy duck at Trader Vic’s, succulent Picanha cut at Chamas Churrascaria and Bar, chicken katsu curry at Wagamama and so much more. Herbault is also enthusiastic about the brand new menu at Al Fresco, which features his latest culinary pièce de résistance. “If guests had time to eat just one dish at the hotel, it would have to be Al Fresco’s cacciucco alla livornese con pane all’Aglio e capperi, a rustic and delicious fish stew with tomato and basil broth, served with fresh garlic bread. It’s a kind of bouillabaisse but, of course, Italian style. —— One of Dubai’s more exciting arrivals, Vesna at Conrad Dubai, certainly brings something unique to the table as it takes a fine-dining approach to Slavic cuisine. Drawing inspiration from across Eastern Europe, the menu is a melting pot of flavours and influences with starters and soups including teschin yazik, aubergine caviar with Georgian spices and speciality borsch with a pinch of Indian spices to give it a contemporary twist. The mains are, as you’d expect, rich, hearty and full of flavour. From the slow-cooked sturgeon fillet with horseradish and beetroot sauce, to the black Angus beef stroganoff and chakhokhbili – a Georgian lamb favourite – diners can expect robust dishes presented in an impressively sophisticated manner. Dreamy desserts of honey cake, crêpes and an oh-so-pretty pavlova aren’t to be overlooked either. See dhows (traditional boats) ply their trade along the waters while early morning visitors will see fishermen at work on the river banks. Also in this part of the city is Dubai Museum, which makes for a fascinating day out with interactive displays and exhibits charting the emirate’s history from its pearl diving days. Dubai may be famous for its glitz and glamour, but the real heart of the city will always will be the creek. Its historic waters were once vital to the emirate’s economy, sustaining pearl diving and fishing. Today, the atmospheric area is the place to go for a glimpse into the past, and is home to Dubai Museum, as well as the gold, spice and textile souks. Before leaving this part of town, a trip across the creek on a traditional abra boat is a must. Of course, no experience of Dubai would be complete without exploring its many modern attractions, and one of the most impressive new additions is Dubai Opera. Nestled right next to Burj Khalifa, the venue is itself an amazing sight with a design inspired by the curves of a dhow. Explore towers, arches, bridges and even a stone wishing well as you make your way through the stores. After a busy day exploring the city, settle down to a meal at Pierchic, in Jumeirah Al Qasr, which is one of the city’s best restaurants for seafood and sensational Arabian Gulf views. Or tuck into tasty Middle Eastern fare at Tabule restaurant at Roda Al Murooj. 3
