—— For its new TimeWalker collection, Montblanc takes inspiration from the glory days of motor racing, when precision timing meant the difference between victory and defeat. The design of the TimeWalker Chronograph Rally Timer Counter pays tribute to a classic model from the brand’s rich heritage, the Minerva Rally Timer, an iconic example of high-performance time-keeping from racing’s golden era. Minerva played an integral role in the history of precision time keeping, with a reputation built on innovative technology and a notable presence at some of the world’s most renowned sporting events. The TimeWalker collection honours this legacy, whose influences can be seen in the most intricate of details, from the silver-onblack dial that recalls the original model, to the historic Arabic numerals, red accents on the minuteria and trademark Minerva arrow. Each timepiece in the collection has been meticulously crafted and subjected to 500 hours of rigorous quality testing.

EACH TIMEPIECE HAS BEEN METICULOUSLY CR AFTED AND SUBJECTED TO 50 0 HOURS OF RIGOROUS QUALIT Y TESTING Manufactured from the finest satin-finished titanium, the 50 millimetre case has the same dimensions as its predecessor. COLLECTOR’S EDITION ——— Concierge goes behind the scenes with TAG Heuer to explore the world of watch collectors

While time travel belongs firmly in the realm of science fiction rather than reality, a look into the world of TAG Heuer vintage timepieces offers a fascinating glimpse into the past. The luxury Swiss watchmakers boast a rich history that dates back 150 years, and nowhere was this better showcased than during the recent TAG Heuer Globetrotter exhibition. A uniquely ambitious global presentation, and the brainchild of TAG Heuer CEO Jean-Claude Biver, the worldwide event featured 400 curated timepieces displayed in 10 TAG Heuer boutiques across 10 cities, in such diverse locations as Paris, Munich, Tokyo and Dubai. Each location was bestowed with its own theme and the exhibitions featured vintage Heuer models from the manufacture museum in La Chaux-de-Fonds, along with pieces loaned from local private collectors. In recognition of the UAE’s rich maritime history and strong connection with the Arabian Gulf, the theme of the exhibition at the TAG Heuer boutique in The Dubai Mall was sailing and diving. One of the most notable pieces on display was a water-resistant case for a pocket watch, an invention patented by TAG Heuer over a century ago. The brand went on to establish the world’s first chronograph with a dial for regattas and a tide level indicator that sailors were able to read at a glance. Known as the Seafarer or the Maréograph, the watch, which dates back to 1950, was one of the highlights of the Dubai exhibition. “TAG Heuer as a brand is about more than measuring time. It’s about innovation,” explains Nicolas Pic, Brand Director Middle East. “Heuer has always been a pioneer in pushing boundaries, breaking rules and creating new timepieces and technology.” The luxury watch

brand introduced the automatic chronograph to the industry, and was also the first to introduce a Swiss-made, connected smartwatch. While TAG Heuer has a reputation for its innovative technology and avante-garde spirit, it is the timeless quality of the watches that most appeals to Yousef Gargash, an Emirati private collector. Gargash’s own collection began on his 18th birthday when he received a watch as a graduation present. Now 30 years old, he has spent the last five years doing what he calls “solidly collecting”, and while his collection is not comprised exclusively of TAG Heuer timepieces, it is clear that he favours the brand. “Heuer has a very interesting history, especially in comparison to a lot of other watch brands. Despite the fact that the shapes are often quite unusual, it’s a classic gentleman’s watch. “Looking at a Heuer timepiece is like looking at a vintage Jaguar, or Frank Sinatra, or James Bond. It is beautiful, eternally stylish, and it speaks for itself. The quality is exceptional too. When one considers the age of many of the watches on display in the Heuer Globetrotter exhibition, their longevity and durability are truly astonishing.” The maritime theme of Dubai’s Globetrotter exhibition proved serendipitous for British expat and private collector Daniel GambbaJones, whose own collection is predominantly focused on diving watches. Among his timepieces is the TAG Heuer 844 Auto Diver, an icon of the horology world and one of the brand’s first forays into the world of diving watches. With a modest collection, the horology enthusiast seeks out rare watches with a unique narrative. “I like to think there is a little character behind each watch, and a reasoning for every purchase. I’m not a trader or a dealer.

“THE KEY TO OUR SUCCESS AND OUR IDENTIT Y IS BEING VERY CONNECTED TO A MODERN AUDIENCE WHILE CELEBR ATING PAST COLLECTIONS AND THE COMPANY’S HISTORY”

Although I call these watches ‘investments’ in front of my wife,” he jokes, “the reality is that they’re not going anywhere. I’ve never sold any of my Heuer watches and I have no intention to do so. I don’t buy watches for their monetary value. It’s nice to think that you’re making a purchase that will not lose its value, but that is not my real motivation. I wear all of my watches, and each time I do, it fills me with joy and excitement. I am not a collector for investment, I collect them for pleasure.” A former engineer by trade, every purchase that Gambba-Jones makes is thoroughly researched, and timepieces are chosen for their narrative and their rarity, rather than their monetary value. He also helps his friends in finding rare watches for themselves, a process he describes as a “treasure hunt”. For Gargash, collecting watches is a hobby, an artform and an investment all in one. With over 30 watches in his private collection (and the latest TAG Heuer Autavia on his wrist during the exhibition), he states: “I could never choose my favourite. Picking a favourite watch would be like picking a favourite child - impossible. “I develop an attachment to these watches, even the ones that I buy as an investment, so selling them is always hard. Collecting watches is a wonderful hobby, but it’s painful at times, especially when I part with three or four pieces in order to be able to afford one ‘Holy Grail’ watch.” His collection is kept in the storage equivalent of a

nuclear bunker, he adds. “If there was a nuclear holocaust, I would not survive, but my watches would live on.” The Heuer Globetrotter exhibition was an opportunity for Gargash and Gambba-Jones, as well as other collectors worldwide, to bring their private collections out into the open and, as Pic describes, make the luxury brand visible and accessible to a wider audience. “It is amazing to showcase the rich heritage of the watchmaker. Heuer was founded in 1860 by Edouard Heuer, and today his grandson Jack Heuer is still the honorary chairman of the brand, so we have generations of watchmaking expertise. “At the end of the year, we will celebrate Jack Heuer’s 85th birthday by launching a limited special edition of the Autavia, paying tribute to his contribution to the company and the family heritage. “The key to our success and our identity is successfully being very innovative and connected to a modern audience while celebrating past collections and the history of the company itself.” —— Discover the latest TAG Heuer collections at the brand’s boutique in Abu Dhabi Mall. A LASTING LEGACY ——— Having shaped horological history, revered watchmaker A. Lange & Söhne continues to innovate with the pioneering LANGE 1 family of timepieces

The A. Lange & Söhne story starts almost 200 years ago when talented clockmaker Adolph Lange opened the Lange & Cie. manufactory in the heart of Saxony. The landmark moment would forever put the small town of Glashütte on the map as the birthplace of German watchmaking. Since then the company he founded, A. Lange & Söhne, has led the way with timepieces that are technically brilliant and beautifully crafted, assuring its place as one of the world’s most respected watchmakers. Over the decades A. Lange & Söhne has introduced a host of horological icons, but perhaps the greatest of the manufactory’s successes is the LANGE 1 family of timepieces. The LANGE 1 was born out of Adolph Lange’s original dream to craft the world’s finest watches. It was a vision shared by his great-grandson Walter Lange who brought his passion and fresh outlook to the manufactory in 1990. Four years later, and the LANGE 1 marked the pinnacle of that exciting new direction.

The LANGE 1 brought something completely new to the industry, presenting for the very first time a revolutionary new way of arranging the dial. The first watch with an outsize date display and an off-centre dial for hours and minutes, the asymmetric design was inspired by the famed Five-Minute Clock at the Dresden Semper Opera house where, for 175 years, the clock above the stage showed time in a unique double aperture.

Bearing all the hallmarks of a classic A. Lange & Sรถhne timepiece, the new LANGE 1 also boasted a three-day movement and a three-quarter plate. An instant hit with the watch world, LANGE 1 achieved the perfect balance between technical innovation and a stunning yet simple aesthetic. Building on the overwhelming success of the original LANGE 1, a family of 15 watches grew up around it in the years that followed.

A special edition in 1998, the LANGE 1A, presented an elegant take on the original with hands and appliques in solid gold, set against an exquisite guilloched dial. To mark the millennium, the LANGE 1 Tourbillon drew inspiration from the Centennial Tourbillon showcased at the Paris Universal Exposition in 1900. New for this year, a striking deep-blue solid silver dial and exquisite white-gold case adds an elegant update.

25

CONC_AUH_OCT17_SHOP_PHOTOESSAY_A Lange & Sohne_MD.indd 25

9/25/17 5:16 PM

Another highlight came in 2002 with the LANGE 1 Moon Phase, a triumph in accurately charting the movements of the moon, the display only deviates from the true lunar cycle every 122.6 years. Adding a stand out astronomical complication, this year’s LANGE 1 Moon Phase update once again introduces an innovative new dial. Perfectly mirroring lunar movements, a solid-gold moon orbits in the foreground, while behind it a disc performs one revolution every 24 hours, showing the times of day with either a bright blue hue for day time, or a dark blue tone complete with laser-cut stars for night. The exceptional piece is also available in a choice of white gold and black, pink gold and argenté or platinum and rhodié case and dial combinations.

Adding even more to the artful aesthetic is the Little LANGE 1 Moon Phase, also released earlier this year. The perfectly formed piece is 1.7 millimetres smaller than the LANGE 1 Moon Phase but is every bit as impressive. An elegant silver guilloched dial is brilliantly contrasted by the pink gold case and accented by its white alligator leather strap. The silver lunar disc sits behind a golden moon to represent lunar movements with pinpoint accuracy, while the hand-finished movement can be appreciated through the sapphire-crystal case back.

As LANGE 1 continues to lead watchmaking innovations more than 20 years on, the iconic model mirrors the trajectory of A. Lange & Sรถhne, as the firm Adolph Lange built continues to chart a course for the industry to follow. The latest A. Lange & Sรถhne models are available across the UAE, including at Al Manara International Jewellery, at The Galleria on Al Maryah Island. Contact: 02 6743444 Visit: alange-soehne.com 27

ONE OF A KIND ——— A visit to the David Morris boutique in Abu Dhabi promises a very special experience

Most of the people who step through the doors at David Morris in Abu Dhabi already know exactly what they are looking for. They come with a longheld appreciation for the revered London brand, charmed by the company’s unique approach to craftsmanship and design. Whether seeking out the latest collection, a David Morris classic or something customised for a special occasion, the service and the space are sure to impress. “David Morris is one of the best known names in the world when it comes to jewellery and our clients already have very high expectations when they visit the boutique. They know what to expect from branches we have all over the world, and are confident in both our service and our collections,” says Marianne Fakhoury, David Morris Abu Dhabi boutique manager. From royalty to local VIPs, the boutique caters to the capital’s elite, offering a host of extra-special services from collection viewings at home, to gifts for clients on special occasions and dinner invites. Fakhoury explains: “We like our clients to feel at home here, giving the best service we can. Most of our clients come by appointment, as most are regulars. They are our top VIP clients, who come from very influential and sometimes royal families. “For the royal family, we take the jewellery to the palace so that they can choose what they want. An assistant usually gets in touch first to tell us what they are looking for and whether or not the piece is for a special occasion. Once the princess chooses what she’d like, we come back to the boutique where

we package and gift wrap the piece, before sending it back to the palace. “We enjoy looking after top clients, but really, all of our clients are VIPs, as soon as someone enters the boutique, we treat them as a VIP.” Some of the most popular David Morris collections include recent launch Miss Daisy and the brand’s signature Rose-Cut line. The now iconic collection was born after managing director Jeremy Morris came across a unique diamond shaped like a rose petal during his travels in the Indian subcontinent. Soon after, the Rose-Cut diamond band was created, followed by a collection of elegant jewellery which launched in 1990. “David Morris is one of the few houses to specialise in Rose-Cut diamonds. Now it’s becoming popular, but it’s known as a David Morris signature,” says Fakhoury. She adds: “The Rose-Cut collection is the most special of all the David Morris collections because the design is different. The diamond is round cut with micro-set diamonds around it, and the diamond has 24 facets which is quite unusual. It’s a more romantic, antique style. “Rose-Cut is one of our most popular collections precisely because it’s so unique, the pieces are handmade and very special.” It’s exactly that one-of-a-kind appeal that has ensured David Morris a loyal following of women who are looking for something truly different. “If you can’t find it just anywhere, you know that it’s David Morris. The David Morris woman

is very feminine and elegant. We don’t have a lot of collections, pieces are made in limited quantities and some of the high-jewellery collections have just one piece – this is why they are so unique. “From diamonds to sapphires and emeralds, the stones themselves set the brand apart. We use the best quality stones from all over the world, looking for rarity and clarity, as well as for the brightest and best colours. This is what we send to our clients and they expect that we have the best stones in the world,” says Fakhoury. To make the pieces even more special, David Morris also offers clients customisation services ranging from adapting existing designs, to creating a brand new piece. Fakhoury explains: “Most often, our clients are looking to adapt an existing piece, by adding more stones or fancy diamonds, for example. “We send the requests to the team in London, who then give us drawings of possible designs for the client to choose from. It can then take up to a month for the piece to be finalised, depending on the types of stones requested. “It’s also possible to create entirely new pieces with high-jewellery customisation, adding another level to the unique feeling a woman has when wearing a David Morris piece.” —— To discover more, visit the boutique at The Galleria on Al Maryah Island. WORK OF ART ——— Louvre Abu Dhabi opens its doors to the public next month, marking a new chapter for the Middle East’s thriving art scene

An architectural marvel 10 years in the making, Louvre Abu Dhabi is already a landmark in its own right. Set to welcome eager visitors from November 11, the launch is a major step forward for arts and culture in the region. The story starts in 2007, when the governments of the UAE and France came together to establish the world’s first Louvre museum outside Paris. What has emerged in the years since is a spectacular space that bridges east and west, combining the UAE’s vision of cultural progress with France’s artistic expertise. On display within the Louvre Abu Dhabi’s magnificent surrounds on Saadiyat Island will be more than 600 artworks, spanning the entirety of human existence from the third millennium BCE through to the present time. This astounding collection of prehistoric objects, artefacts from the Medieval ages and contemporary pieces will be exhibited alongside 300 works on loan from 13 leading French museums. And while one can spend hours marvelling at each piece, the remarkable structure of the space itself demands equal attention. Manuel Rabaté, Director of Louvre Abu Dhabi, says: “Louvre Abu Dhabi’s ground-breaking architecture complements a presentation of exceptional treasures that represent a snapshot of humanity’s creativity, and paves the way for new discussions.” The brainchild of French architect Jean Nouvel, the museum was designed to mirror an Arabian medina. Inspired by Arabic architecture, the Pritzker Prize-winning architect envisioned a museum city with a maze of narrow passages under an expansive dome. Visitors can walk through each of the 55 detached buildings, 23 of which are devoted to art galleries, as well as the promenades for mesmerising

views of the water and the capital’s skyline. The museum’s stunning silvery dome, inspired by a traditional cupola, is the centrepiece of Nouvel’s vision. Spanning 180 metres in diameter, the structure is supported by four hidden piers to create an illusion of weightlessness. Eight layers of 7,850 stars in various sizes and angles are superimposed in a complex, geometric pattern. This creates the effect of light trickling down to the exhibits below. The galleries at Louvre Abu Dhabi narrate an inspiring tale of humanity through the ages in a series of 12 immersive chapters. The journey begins in the ‘Great Vestibule’, where important themes such as maternity and funerary practices are introduced. Further through the maze of galleries, visitors will discover the development of civilisation through various themes that showcase the earliest village settlements, the rise of great powers, divine representations, expeditions through unknown lands and the dawn of globalisation. Displays include the Bactrian Princess created in Central Asia, the sarcophagus of Princess Henuttawy, a Decadrachm coin of Syracuse signed by

the artist Euainetos and ceramic works that depict trade during the Medieval and Modern periods. Sacred texts from universal religions are featured in a dedicated gallery which include a leaf from the Blue Quran, Buddhist and Taoist manuscripts, a Gothic Bible and a Pentateuch. Some of the artworks on loan from France include Leonardo da Vinci’s La Belle Ferronnière, Vincent van Gogh’s Self-portrait Autumn 1887, Globe by Vincenzo Coronelli, Jacques-Louis David’s Napoleon Crossing the Alps and Standing Woman II by Alberto Giacometti. Among the Louvre Abu Dhabi’s site-specific works are three engraved stone walls created by American artist Jenny Holzer citing historical texts, as well as a wall of porcelain tiles with hand-drawn concentric circles from the fingerprint of the UAE’s founding father Sheikh Zayed. Elsewhere, Leaves of Light by Italian artist Giuseppe Penone features a bronze tree with mirrors that reflect the ‘rain of light’ illusion produced by the dome. As an inaugural special, an exhibition titled, From One Louvre to Another: opening a museum for everyone will launch on December 21, tracing the history of the Musée du Louvre in France through 145 artworks depicting the development of the Parisian icon we know today.

In a city like Dubai, with its desert skyscrapers, dancing fountains and indoor ski slopes, one could easily become immune to the many superlative attractions. However, few visitors could fail to be impressed by The Green Planet – an indoor rainforest that’s home to 3,000 tropical plants and animals hailing from as far afield as the jungles of South-east Asia and South America. Step inside the building and you will be greeted by multiple layers of habitat mimicking the ecosystem of a true rainforest, including a leafy, sun-drenched canopy that’s home to a colourful population of exotic birds. It’s clear that a huge amount of work has gone into the construction, from the well-maintained heat and humidity levels to the dramatic centrepiece: a huge, man-made yet life-sustaining tree, reaching five storeys from floor to ceiling, and the largest of its kind in the world. “The Green Planet was created to transport people into the very heart of a tropical rainforest,” says Jean Marc Bled, general manager of Leisure and Entertainment for Meraas Holding, who operate the venue. “By giving them such a unique and immersive experience, we hope to showcase science in action and instil a sense of appreciation among visitors – helping them to understand our ecosystem better in order to preserve it.” Bringing the rainforest to the desert was no small feat; every element had to be taken into consideration, with nothing left to chance. “Meraas contracted some of the best companies in the

CONC_AUH_OCT17_EXPERIENCE_PHOTOESSAY_Green planet_TS_SS.indd 40

world for this unique project,” says Bled. One of the most challenging aspects of the project was building the man-made tree. “Creating the raw structure was a complicated geometric exercise that required our team of architects, engineers and habitat designers working closely with the horticulturalist to ensure the correct angle and orientation for every single branch. The process was a very delicate balancing act; we used 3D modelling software systems to develop a series of branch knuckles, each with its own specific geometry for its location on the tree. It all came back to mapping the solar gain within the environment, even considering the angle of the sun as it changes from season to season.” Visitors begin their journey on the ‘flooded floor’, a room that mimics the flooded rivers and streams of a typical rainforest using water tanks filled with freshwater species of fish, including catfish and stingray (on some days, you can even spot the biome’s biologists diving into the tanks to hand feed the animals). From there, you will be guided to the top floor, namely, the canopy, before beginning your descent via a winding path alongside its periphery, meeting the forest’s resident tropical animals and their handlers along the way. Each visit to The Green Planet is unique. Because it’s such a natural environment, it follows the same rhythms as a real rainforest - the animals that are most visible in the morning are different from the species that come alive as the sun sets. can be found throughout the centre, ready to answer any questions and even facilitate interaction between visitors and the animals. For biologist Sarah Stevens, working at The Green Planet is a dream come true. “In other wildlife facilities, your focus is quite singular, but here, everyone gets involved in all aspects of the biome - you might spend your morning diving in the fish tank and your afternoon handling the snakes or feeding the sloths. That’s what makes the job so interesting and fun, because no two days are ever the same. It’s hard work at times, but you can’t have a bad day when you’re constantly surrounded by animals.” Make no mistake, the animals are the biggest draw. Some of the notable species include a large-billed toucan, colourful chameleons and a beautiful pair of highly intelligent bright blue macaws. Some of the smaller exhibitions are equally fascinating, from the rainbow-coloured snakes to the butterfly display, where you can see the evolution from caterpillar to chrysalis to butterfly in real time. The two resident sloths are the centre’s sleepy celebrities. This pair of crowd-pleasers that can most often be seen draped from a tree branch, hanging off the railings and usually catching forty winks. The sloths spend an average of 17 hours a day asleep, so visitors might not see them at their liveliest. Most recently, and to coincide with the centre’s first birthday, the rainforest welcomed two new residents: a pair of Tamarin monkeys, housed in the brand new monkey enclosure. And there are plans underway to expand the rainforest population even further.

Each animal receives an impeccable level of care that ranges from being hand-fed by the biologists to participating in detailed training programmes to ensure they are being intellectually stimulated, and to help them become at ease with human interaction. Both the animals and their handlers undergo rigorous training to ensure the safety of both, as well as that of their visitors. Stevens describes the animals as ‘ambassadors’ for their species; they bridge the gap between their own exotic homelands and their adopted home in Dubai, introducing visitors of all ages to an unfamiliar ecosystem in order to communicate the message of conservation and encourage a sense of global awareness. The Green Planet is entirely eco-friendly, with carefully monitored water sources and timed lighting systems to minimise waste. The building has received the global LEED certification (Leadership in Energy and Environmental Design) and is fully compliant with Dubai Municipality Green Building Regulations and Specifications. The temperature and humidity levels are carefully monitored to ensure that the exotic flora and fauna can thrive at all hours of the day. Visitors will soon be able to experience the centre after dark too. “We will soon be launching a unique experience allowing our guests to camp in The Green Planet overnight,” says Bled. “This will include a personal guided tour and campfire stories. It will truly be a one-of-a-kind experience.” —— For more information, visit thegreenplanetdubai.com

The restaurant combines a stellar location and flavourful cuisine, creating an unforgettable evening for guests. The fantastic outdoor terrace, tucked away in an olive grove, is the perfect spot to marvel at the majestic Sheikh Zayed Grand Mosque. On par with its magnificent surroundings, is Li Jiang’s incredible choice of dishes. Often gracing the list of the city’s must-try restaurants, Sontaya is worth a visit for its picturesque setting alone. Located in the sprawling The St. Regis Saadiyat Island Resort, the venue is set amongst a series of floating pavilions with glass walls, where diners can sit back and take in views of the pristine Saadiyat beach ahead. Dining at Sontaya - which means sunset in Thai - is an experience that is best enjoyed at sundown, when golden chandeliers and flickering floor lanterns illuminate the surroundings, adding to the restaurant’s romantic vibe. Just as impressive is Sontaya’s eclectic menu of Southeast Asian dishes. —— With its glittering waterfront location boasting impressive views of Al Maryah Island, Finz at Beach Rotana Abu Dhabi sets the scene for a memorable meal. It’s the ideal spot to escape from the bustle of the city, thanks to its scenic locale by the water that is reminiscent of a laid-back joint on an exotic island. With temperatures starting to drop in the city, grab a table on the spacious terrace for a round of pre-dinner drinks. When the aromatic fragrances emanating from the restaurant prove too hard to resist, diners can choose from a diverse menu of tasty seafood dishes infused with a Mediterranean touch. While there are plenty of options to pique your interest, we’d recommend the oven baked black cod, served with your choice of steamed brown rice, Tunisian couscous, or fries. As well as the day’s fresh catch prepared to your liking, Finz offers a fine range of hand-shucked oysters. The elaborate stand of chilled seafood on ice is another worthy indulgence and is piled high with Maine lobster, king crab legs, oysters, tiger prawns, lobster and scallop ceviche, marinated tuna tartar and mussels. The vegetarian biryani with raita and cataplana featuring a rich fish broth are other standout choices.

—— Located on the top floor of Le Royal Meridien Abu Dhabi, Stratos offers a culinary experience like no other, and that’s before guests even look at the menu. It’s the only revolving eatery and lounge in Abu Dhabi where you can soak up 360-degree views of the capital’s twinkling lights stretching as far as the eye can see. Don’t worry about motion sickness, as you’ll barely feel a thing. The refined interiors, featuring black and gold tones, and expansive glass windows, match the sleek service from the courteous staff. For starters, opt for the Scottish smoked salmon or the parmesan gnocchi, before moving on to heartier mains – the wagyu tenderloin and Dover sole with nut brown lemon butter are worth the trip alone. While Stratos may resemble an upscale private members’ club, thanks to its moody lighting, high-top tables and plush leather sofas, the reality is that the restaurant is easily accessible. HIGH STANDARDS ——— Quality is key for Jumeirah at Etihad Towers executive sous chef Nidal Daou

Towering over Abu Dhabi Corniche, Jumeirah at Etihad Towers is one of the capital’s most prestigious properties. Culinary excellence is at the heart of the five-star experience here and an impressive offering includes everything from contemporary Japanese at Tori No Su and authentic Italian at BiCE, to steakhouse favourites in a sky-high setting at Ray’s Grill. Tasked with helping to ensure the smooth running of it all is executive sous chef Nidal Daou whose experiences around the region have shaped his passion for cooking. “I studied in Beirut and went on to work in Cairo and Bahrain, before moving to the UAE. I wanted to develop my career outside of Lebanon, because it’s always good to broaden your horizons. “What I love about working in the UAE is that I come into contact with so many different nationalities and that offers a unique opportunity to learn about different cuisines,” Daou says. The talented chef joined Jumeirah at Etihad Towers in 2011 as executive oriental chef at award-winning Lebanese restaurant Li Beirut, before quickly rising to his current role overseeing the property’s 11 bars and restaurants. “I work alongside the executive chef developing menus, recipes and ideas. I look after the operations of all the restaurants at the hotel, under the guidance of the executive chef. My main task is to make sure that we set a high standard,” says Daou. With the bar set so high, maintaining the quality the hotel is known for, while standing out on the capital’s thriving dining scene, underpin the plan going forward. Daou explains: “It’s all about the dining experience. We offer different concepts and that’s what makes us stand out. When guests come to the hotel, there is so much for them to choose from, we also stand out for the quality of our ingredients. “At our Japanese restaurant for example, most of our items are from Japan and for our Lebanese restaurant, we source everything from Lebanon. At our steakhouse, we use different qualities of meat, from wagyu, prime and Italian beef to Argentinian cuts. Whenever it’s a seasonal item, we focus on those dishes. Now that it’s truffle season in Europe – we run truffle promotions at our Italian restaurant showcasing white and black truffles.”

The same meticulous planning that goes into sourcing ingredients is part of the process for finalising new menus and creating new dishes for each restaurant. A rigorous series of tests are also in place to make sure dishes pass a very high standard before making it to the table. “In every restaurant the chef de cuisine is responsible for creating the menu. It then takes a minimum of between one and two months to introduce the dishes to the outlet. We do the first presentation with the chef, we give our comments, and then we do a second presentation if there’s anything to alter. The process takes about two to three rounds before we approve the dishes. It’s important that we ensure the menu meets guests’ expectations, that it is diverse and that there are plenty of choices,” says Daou. Of all the restaurants at the hotel, Daou still has a special affection for Li Beirut, where guests can expect a delicious array of freshly cooked dishes. He says: “Li Beirut is special because of the focus on fresh produce and quality, almost everything is made in house. For example, our pomegranate juice is made here and takes 24 hours to produce. Our team also makes our hot mezze, which includes kebbeh, sambusek and fatayer. “Li Beirut is a fantastic choice for a romantic meal, it’s an atmospheric restaurant where guests will definitely enjoy an unforgettable experience.” Looking to the future for both the hotel’s culinary offering, and the capital’s ever evolving dining scene, Daou predicts great things ahead. He says: “I have seen a lot of change here on Abu Dhabi’s restaurant scene, there is a lot more competition, which is why the dining experience keeps getting better. “The dining scene has changed for the better. The fact that chefs from Michelin-starred restaurants come to the capital every year is testament to this. I can see a big future for the dining scene here, and in a few years time, I can see us going international. I foresee Abu Dhabi will be considered an international dining destination in the not-too-distant future.” —— To book a table at Jumeirah at Etihad Towers, call 02 8115666 or visit jumeirah.com

ASK THE CONCIERGE

Sundar Subramaniam, chief concierge at Danat Al Ain Resort, offers his top tourist recommendations for a visit to Abu Dhabi

1

Abu Dhabi offers a fantastic selection of unforgettable experiences guaranteed to impress both visitors and residents. From cultural venues and historical sites to wildlife attractions, theme parks and pristine beaches, the emirate has it all. A fantastic choice for families, Abu Dhabi also has the added advantage of being one of the safest cities in the world. With cooler climes now upon us, it’s a great time to get out there and explore it all. One of my top recommendations is a day trip to Jebel Hafeet, the highest peak in Abu Dhabi and the second highest in the UAE. As you drive through winding roads to reach the top of the mountain, soak up incredible views of Al Ain’s lush greenery. While you’re in the area, don’t miss out on a visit to Al Ain Camel Market - it’s a great opportunity to see these fascinating animals up close. Wildlife lovers will also enjoy a visit to Al Ain Zoo where a sprawling green space is home to thousands of animals including giraffe, tigers and rhinos. Another great stop is Abu Dhabi Falcon Hospital, which is a great place to learn about the country’s national bird.

IF YOU’D PREFER TO SAVOUR THE CULINARY DELIGHTS OF NORTH INDIAN CUISINE, MY RECOMMENDATION IS TO ENJOY A MEAL AT TANJORE IN DANAT AL AIN RESORT

Abu Dhabi’s famed natural mangrove forests make up a significant stretch of its coastline, to explore this stunning natural attraction, head out on a kayaking tour. It’s a great activity for the entire family. Key attractions that should also be high on your list include Emirates Palace, a luxurious hotel with opulent interiors lit up by more than 1,000 chandeliers, and Sheikh Zayed Grand Mosque, one of the city’s most picturesque landmarks. To learn all about the story of this architectural marvel and the faith at the heart of it, sign up for one of the daily guided tours. For those with an adventurous side, Ferrari World Abu Dhabi with its exhilarating rides will certainly get your adrenaline pumping. An evening desert safari is another excursion that’s not to be missed to experience the grandeur of the desert dunes before a wonderful dinner under the stars. Abu Dhabi is also an excellent retail destination and shoppers will find everything from designer labels to niche boutiques peppered across the city. I highly recommend The Galleria on Al Maryah Island. You’ll be spoiled for choice with the luxury brands here, such as Dolce & Gabbana, Jimmy Choo and Michael Kors. Alternatively, you can head to Al Wahda Mall, one of the city’s largest shopping spaces where there is a great selection of boutiques, entertainment and dining. Lastly, don’t leave Abu Dhabi without trying the excellent Arabic cuisine at restaurants across the city. Or, if you’d prefer to savour the culinary delights of North Indian cuisine, my recommendation is to enjoy a meal at Tanjore in Danat Al Ain Resort, where exceptional service completes the fine-dining experience. 3
