The Dubai World Cup is undoubtedly one of the world’s premier equestrian showcases. At the heart of its pageantry is a celebration of thoroughbreds, who are the true stars of the show. Much like any other athlete, the horses have a rigorous training programme to ready them for the big event. The work begins away from the racetrack, when a close bond is forged between horse and trainer. Finally, the day arrives and as thousands of ticket holders turn out to see the show, the finely tuned animals and their jockeys ride for honours in a thrilling race-day spectacle.

One of the best experiences visitors to Dubai can enjoy is without doubt taking in the spectacular vistas. Our guests don’t need to go too far to see an amazing view. The Beach House is our Mediterranean restaurant located next to the shore with views of the Arabian Gulf and Palm Jumeirah that are particularly breathtaking during sunset. For visitors in the mood to shop, Mall of the Emirates is an excellent choice. From indoor entertainment and exciting eateries to a fantastic selection of international brands, it offers an array of activities under one roof. I recommend Skydive Dubai to guests looking for an adrenalinefilled activitiy. The views of Palm Jumeirah and out towards the desert are sensational. Dubai is steeped in history and there are some fascinating attractions offering a glimpse into the emirate’s past. The Dubai Museum charts the city’s journey from pearl diving port to modern metropolis. Guests can also visit the souks located close to Dubai Creek for unique buys and a slice of local character. Photographic opportunities abound in Dubai. One of my favourite areas to visit and take pictures is Dubai Creek, overlooking where it all began. Dubai Marina and Downtown Dubai are also excellent locations to photograph and capture modern Dubai to contrast just how much the city has changed. Jumeirah Public Beach is another great viewpoint for the iconic Burj Al Arab.

Fashion District A new addition to Dubai’s luxury shopping scene, Fashion District, has opened at Mall of the Emirates. Spread over 5,000 square metres, the chic space is home to over 30 contemporary stores including a number of new-to-Dubai international brands. The district also plays host to several exclusive standalone boutiques such as Halston Heritage (pictured), which is not only the iconic American label’s only UAE store but its second boutique outside of America. Other firsts include French brands Maje and Sandro, Israeli-American designer Elie Tahari, Alice + Olivia, C Wonde and McQ; an edgy urban brand that’s derived from the House of Alexander McQueen. French patisserie Dubai welcomes an elegant new culinary destination this month as world-renowned chef Pierre Gagnaire opens Choix Patisserie & Restaurant at InterContinental Dubai Festival City. Gagnaire brings Michelinstar expertise to this sophisticated space which offers fine French fare with a modern twist. Paired with the patisserie is a selection of high-quality coffees and loose teas to enjoy. The ancient art of calligraphy is still practiced today all over the world. The form native to the UAE is known as Islamic calligraphy and is a beautiful variant that developed alongside the writing of the Qur’an. A reed pen and ink are most often used to create the sweeping characters on treated parchment. Master calligraphers spend many years honing their craft, learning the skills which are handed down from generation to generation. Throughout the UAE stunning examples of Islamic calligraphy can be seen today in mosques and in architecture. A new generation of calligraphers are breathing life into the ancient tradition and their work is regularly showcased at galleries across Dubai such as The Ara Gallery and during this month’s Art Dubai.

Style reins Stand out from the crowd at the society occasion of the year, the Dubai World Cup Words by

As the starting pistol is fired and the gates snap open for horses and jockeys to contest positions, all eyes are on the field but, as cameras flash, the real competition unfolds among the best-dressed racegoers on the sidelines. Each year thousands of immaculate horse racing supporters from across the globe congregate trackside at Meydan Racecourse to watch the greatest names in the sport compete in the Dubai World Cup. As well as supporting their favourite horses, the crème de la crème of high society vie to make a style statement. The sport of racing thoroughbreds has been synonymous with fashion since its inception in 16th century Britain. When England’s Queen Anne founded the famous Ascot Racecourse in 1711, horse racing was considered a sport of the elite and affluent. The annual Royal Ascot race was at first primarily attended by royalty and aristocrats of British society. Considering the pedigree of the guests, a strict dress code was created which remains the exemplar at horse racing events across the globe to this day. Spectators take the opportunity to showcase their status by turning out in the latest couture fashions, transforming the event into a competition of style as well as speed.

From Dubai’s beginnings as a humble fishing village when divers scoured the sea bed for pearls and cargo-laden dhows criss-crossed the creek, the emirate and the ocean have long been linked. Today as the luxury leisure industry takes the prominent place that trading once occupied, yachting forms a large part of a continued maritime connection. Each year, the Dubai International Boat Show helps to reaffirm the emirate’s status as a key hub for the sailing industry. Ahead of the showcase on March 4 to 8, Concierge looks at the newest vessels available to buy that are causing ripples in the yachting world. Once a year, elite members of the international boating scene flock to Dubai to network with other yacht enthusiasts and explore the latest models and innovations at the Dubai International Boat Show. An important event for both buyers and suppliers, many deals are made, projects launched and relationships built over the course of the five-day event. This year, it is expected to attract more than 26,000 visitors from over 70 countries.

“The show brings together an incredible array of buyers, industry leaders, companies and marine enthusiasts. Exhibitors witness lucrative sales every year, while buyers are able to choose from some of the best boats in the world as myriad global and regional launches take place throughout the show,” says Trixie LohMirmand, senior vice president of Dubai World Trade Centre and one of the event’s organisers. It’s not uncommon to see members of the region’s royal families and high-profile personalities in attendance at the prestigious show, which marks an opportunity to browse some of the most sensational sailing vessels on the planet. There’s also the chance to explore vast exhibition tents or climb aboard the moored yachts and take a look inside. A key attraction at the show is the annual showcase of superyachts. This year’s exhibition will host some of the world’s largest and most innovative vessels, including the 290ft Nirvana constructed by Oceanco,

To ensure a premium purchase during the show, a host of Dubai-based companies both exhibit and broker the many exceptional models for sale at the event.

One of the region’s largest yachting enterprises, Art Marine will be showcasing a number of yachts for sale and has recently partnered with the world-famous Ferretti Group to carry luxury yacht-builder Riva exclusively in the UAE. Making its regional premiere at the exhibition is the Riva 68’ Ego Super. Based on the triple-award-winning vessel 68’ Ego – winner of European Powerboat of the Year and the Millennium Yacht Design Award – this new version encompasses the tradition and elegance of its predecessor but with innovative updates. Renovations include a new layout and design, making space for additional decks, a fresh interior colour scheme of desert sand with dark brown leather furniture and technological enhancements such as an electric

awning to protect guests on the relaxation deck from the sun’s rays. Further improvements include an independent crew cabin and closed cockpit to ensure maximum privacy for guests. Away from the Dubai International Boat Show, Art Marine also offers discerning yacht customers the Ferretti Custom Line with models that range from 97 to 124 foot, as well as CRN, a mega-yacht manufacturer known for its custom designs. Dubai’s Fancy Yachts specialises in brokering deals with both local and international clients and has numerous famous and royal names on its client list, building on a recent resurgence in the yacht market. “Dubai is blessed w it h a wonder f ul 12-month boating season. Most boats are locally built but foreign imports are becoming popular once more. There is a diverse demographics of buyers here, consisting of a variety of nationalities. Most bigger boats are sold from production on an order basis. This means customers can tailor the boat according to their requirements and tastes,” says Fancy Yachts managing director Jyrki Jaamaa. The company also deals in new models from five premium brands, Windy, Marquis, Carver, Jeannea and Prestige, from which two models are presented at the Dubai International Boat Show. The 55-foot Prestige is particularly notable for its high-tech mechanics including the gyroscopic stabiliser, an innovative system to reduce 85 percent of the yacht’s roll, making it a smooth sail when cutting through heavy seas.

As the UAE is home to the world’s tallest building and countless other record-breaking feats, it seems only natural that it has added the world’s largest private yacht to its list of accomplishments. Unveiled in 2013, the 590ft Azzam, owned by Sheikh Khalifa bin Zayed Al Nahyan, ruler of Abu Dhabi and President of the UAE is a veritable floating palace. With a top speed of 31.5 knots, the Azzam is not only the longest, but one of the fastest mega-yachts in the world.

Jaamaa says: “This is an exciting new feature in a yacht and totally changes the whole boating experience. People who have a tendency to become seasick can now enjoy boating in comfort.” The Dubai International Boat Show is a shining example of the yachting industry’s continued resilience. As visitors flock in their thousands to the show, the crowds are testament to the continued interest in yachting as a leisure pursuit. The UAE has become the centre of boat building in the region, this

One of the most important tasks at the Maison is the creation of mock-up pieces. This marks the first moment when the jewellery takes shape and the designer's vision is realised. As one of the first in the Maison to be shown the designer's sketches, the mock-up maker has the initial responsibility for transforming early ideas into a finished prototype. Crafted from rhinestones, paints and tin, the mock-up maker solders and sculpts actual-size models. The designers and master craftsmen then cast an expert eye over the mock-ups to consider any technical issues. Once amendments are made and the designs have been redrawn, the jeweller then sets to work bringing the finished pieces to life. Archived mock-ups are not only a valuable record of jewellery-making excellence at Van Cleef & Arpels, but a lasting legacy that can be revisited time and again by the jeweller

Van Cleef & Arpels has pioneered a host of world firsts. Patented in 1934, the groundbreaking gem-setting procedure Mystery Setting gives stones the impression they are free standing. The task is reserved for only the most accomplished stone cutters who use specialist techniques handed down the generations. A steady hand and keen eye are required as each setting takes many hours to complete. Wires just two-tenths of a millimetre thick form a delicate casing which holds the stone as though suspended in air. The artisan crafts the setting to disguise all traces of his own hand as the stone makes its own striking statement

Sculptors and engravers at Maison Van Cleef & Arpels work for many hours on each piece in an endeavour that requires a great deal of dedication and patience. It can take up to two months to sculpt the intricate elements in a complex work. The engraver sketches the design he is working to and then follows it using cutting and finishing tools, which are characteristically accurate, rugged and sharp. Metal is removed using a burin, a tool that not only cuts but also enables material to be taken away. For jewellery and gold, the cut is always very fine as considerations such as the interplay of light reflections on each surface are taken into account. In this way, a combination of precision skills and patience gives simply stunning results

The sheer scale and scope of the annual festival, now in its sixth year, is impressive enough but the event has a unique significance for those taking part, offering a warm community feel that sees authors returning time and again to enjoy the experience. Held under the patronage of HH Sheikh Mohammed bin Rashid Al Maktoum, UAE Vice President, Prime Minister and Ruler of Dubai, the event runs in partnership with sponsors Emirates airline and Dubai Culture & Arts Authority. This year, the festival’s theme is metamorphosis, reflective of the backdrop of exciting change sweeping the city amid preparations to host Dubai Expo 2020. This notion of change will be incorporated across author workshops, panel discussions and special sessions.

“The theme is very apt for this year as we continue to evolve. Metamorphosis is one of the great motifs that shape story-telling, from the great myths of Ancient Greece, through Dante, Shakespeare, Kafka and to the present day. It also very aptly applies to the way Dubai has transformed itself over the last 30 years or so,” says festival director Isobel Abulhoul, OBE. “Each year our international reputation grows and this has helped us attract our stunning line-up of authors, resulting in a programme that is exciting, enriching and accessible. The success of the film, based on the book, brought Harris worldwide acclaim and her subsequent works, which include Peaches for Monsieur le Curé and The Gospel of Loki have also been bestsellers. “I’ve never been to this festival before, though I’ve heard many good things about it. I’m looking forward to it immensely. There are so many terrific people attending and I long to see a little of Dubai. As a destination for a literary festival, I think it’s great. There is clearly a tremendous interest in literature and the arts in Dubai,” says Harris. “Literary festivals are enormously welcoming and inclusive events. From a writer’s perspective it’s wonderful to meet with and interact with readers. From a reader’s perspective it’s a great opportunity to discover new writers, as well as connecting with those we admire,” she adds. Harris hosts several talks throughout the festival including a joint session with acclaimed science fiction writer Justin

Cronin entitled Creating New Worlds, which explores the challenges writers face when crafting fantasy-based stories. American author Cronin is another festival highlight and his sessions are certain to entertain. Cronin’s captivating series of post-apocalyptic novels are a global success. The Passage and The Twelve are the first books in a trilogy which takes readers into a world where humans do battle with vampires to survive. The third instalment, due later this year, promises to bring a thrilling conclusion to the richly detailed stories. “When the chance came to come to Dubai, I jumped at it. It’s the idea of an international literary canvas that makes the festival so appealing. I can’t wait. A mix of the old world and the new, what is that if not literature?” says Cronin. “One event I want to attend for sure is the Orwell Lecture: Journalism in Dangerous Times. Orwell is an important writer for me. I wrote my college thesis on him, tracing

A strong Arabic contingent features a stellar line-up of authors and poets. Mohammed Achaari is a Moroccan writer and politician who has published collections of short stories, poetry and a novel. His work has been translated into French, Spanish, Russian and Dutch and in 2011, Achaari was awarded the Arabic Booker Prize for The Arch and the Butterfly, which tells the compelling story of a left-wing Moroccan writer. Also appearing is Kuwaiti novelist and journalist Saud Alsanaousi whose novel The Prisoner of Mirrors won several plaudits. Arabic poetry is represented with sessions from Khalid Albudoor, an Emirati modernist poet and co-founder of the Emirati Writers’ Union. Remembering his early inspirations in the UAE, Albudoor says: “My father was one of the few lucky people to have studied at the Al Ahmadiya School in Dubai in 1930. I observed him reading books on a daily basis. I was particularly attracted to Arabic poetry so I started writing and that was my joy. “I’m looking forward to this year’s festival, especially the night of poetry in the desert where I will present poems linked to the desert.” Khulood Al Mu’alla, a respected Emirati writer who became the first poet from the Gulf to win the Buland Al Haidari Award for Young Arab Poets also forms part of the vibrant poetry line-up.

T he 2014 festival includes a v ibrant programme for children. Eoin Colfer and Francesca Simon will elaborate on the misdemeanors of Artemis Fowl and Horrid Henry while author of Young Bond, Charlie Higson will engage older children and young adults. Politicians and journalists are also set to regale festival audiences with tales of extraordinary experiences in war zones and world politics. Among the insights will be those from British journalist, writer and broadcaster John McCarthy who was held hostage in Lebanon for five years. British journalist

Taking place alongside the packed author programme is a series of special events. A returning highlight is the prestigious Orwell Lecture. Flagship session, the prestigious Orwell lecture, commemorates literary giant George Orwell and this year is given by BBC Middle East editor Jeremy Bowen, a journalist who has reported from 18 wars over 25 years. Desert Stanzas makes a return for a night of music, poetry and traditional Arab dining in the desert. While the popular Murder Mystery Dinner, hosted by Dubai Drama Group, is this year based around the metamorphosis theme and will see guests and authors unravel clues. New for 2014 is Friday Rhythms, an evening of poetry and rock music. Dr Salah Al Qassim, adviser to Dubai Culture & Arts Authority, says: “The sixth edition of the LitFest will once again reinforce Dubai’s credentials as a world-class events destination.”

The Middle East’s art scene has been flourishing in recent years, with creative outposts popping up across the region as artists gain insight, a newfound respect and perhaps most important of all, an expressive connection to history. A tangible and vibrant artistic freshness is sweeping Dubai in particular, unlocking a cavalcade of notable new talent fired up with an unprecedented urgency to create. As the city is galvanised by preparations for events such as Dubai Expo 2020, the cultural landscape is set to transform further. Galleries are already opening up the city map, fuelled in the main by a desire to educate and change the game. It’s a potent mix and a thrilling setting for Art Dubai to launch what promises to be its most influential edition yet. Now firmly established as a portal to a new era of creators, the fair is also a hub for international movers and shakers to take part in and experience the region’s artistic weight. The show’s eighth edition boasts more than 80 galleries from 35 countries. Around 500 artists will pack out three distinct gallery programmes when the fair runs from March 19 to 22 at Madinat Jumeirah. Art Dubai fair director Antonia Carver believes that, in terms of content, the show is extending its reach not only through history but geography, while promoting quality and a distinct curatorial approach. Key to its success is its structure as a fair of discovery and diversity that brings together the most influential regional and global galleries to rub shoulders and create sparks.

“Over the past eight years, Art Dubai has evolved into an extraordinarily dynamic art fair,” Carver says. “Our roots are in the growing local UAE arts scene, leveraging Dubai’s position as a global hub, linking Africa, the Middle East and Asia. Participating galleries are spread across Contemporary, Modern and our Markercurated programme, which focuses each on works connected to a particular theme or area. Visitors will be able to make connections between artists and art movements like never before.” An exciting new development for visitors to the fair this year is the launch of Art Dubai Modern, a series of solo and two-person booth exhibitions and research projects devoted to modern masters from the Middle East and South Asia. The incisive programme was developed with a group of eminent historians and curators which includes prominent art historian Savita Apte, curator Catherine David, Lebanese curator and researcher Kristine Khouri and American art historian Nada Shabout. 2

Artists exhibiting work in the inaugural edition of Art Dubai Modern include Lebanese artist Nabil Nahas. Working in the abstract, Nahas’ paintings make use of geometric motifs, bold hues and decorative patterns inspired by Islamic art. Another highlight of Art Dubai Modern is works by the late Iranian illustrator and cartoonist Ardeshir Mohasses, considered a cult figure among Iran’s artistic community. His illustrations are known for a unique blend of humor and social commentary. As ever, contemporary art is an important part of Art Dubai. First-time galleries joining the fray include Baró Galeria in São Paulo,

Athens’ The Breeder, Gladstone Gallery in New York, Galerie Greta Meert from Brussels, Turin’s Galleria Franco Noero and 313 Art Project in Seoul. Stand-out pieces within the contemporary art selection to look forward to include the haunting work from acclaimed Palestinian artist Sama Alshaibi that showcases a stunning series of photographic pieces which most often deal with conf lict as the primary subject. There’s plenty of returning international galleries set to make further impressions too, with prominent names including Athr Gallery in Jeddah, Galerie Chantal Crousel in Paris

and Victoria Miro in London. Meanwhile, some of the successful Dubai galleries represented include The Third Line, Grey Noise and innovative exhibition space Tashkeel. Adding to the eclectic mix is Marker, a charming event within the fair which focuses on a particular theme or place. This year, the theme is Central Asia and the Caucasus. Curated by The Third Line Gallery’s collective Slavs and Tatars, the programme spans art, projects, research and educational initiatives. Marker sees artists present in a collective exhibition of portraiture that includes ‘faces, places and traces’ from mid-20 th century paintings to contemporary drawings and sculptures. Taking the form of a tea salon, the idea is to encourage discussion and interaction with art and artists. “Marker promises to be very exciting, with a fresh exhibition format and work rarely seen on the international stage,” explains Carver. For the annual Art Dubai Projects, a series of artists has been invited to create works that engage audiences by commenting on the fair

and its environment. The programme includes established and upcoming talent from across the Middle East, North Africa and Asia. This edition’s stars include Tunisia’s fresco innovator Nadia Ayari, the UAE’s Sara Al Haddad who works on interior architecture and Maitha Demithan, also from the UAE, who uses scanography to document encounters in a series of innovative installations, video and transfers on cloth. For Carver, the Global Art Forum is another feature set to catch the eye. A curated, themed conference, it incorporates elements such as live 7

talks, commissioned research and projects. New for this year, assembled speakers and projects will consider the theme ‘Meanwhile... History’, to look at turning points in history that shifted our understanding of the world. At the core of the fair is Art Dubai’s commitment to stoking and nurturing the local scene. “We’re a kind of catalyst for local development. Dubai has grown from around 10 galleries to more than 40 in just a few years,” says Carver. “The fair has itself become a meeting point for international curators and collectors – the site and point in the year at which they devote themselves to engaging in the Middle East (and increasingly Asia, and Africa). This is the time when local audiences see an overview of the most dynamic international galleries, artists, foremost thinkers and speakers,” she adds. “We feel privileged to be a part of such a fastgrowing, vital scene, making such an impact. There is so much potential.” Among Dubai’s homegrown galleries attesting to the enduring power of Art Dubai is The Third Line. “Art Dubai is peppered with memorable moments, from early mornings to late night. Between the long hours of work and networking, there are moments of inspiration and sometimes just good fun,” says The Third Line’s Saira Ansari. he ran a patisserie business for Albert and Michel Roux before launching his own café, cake emporium and cookery school. Lanlard recently joined forces with luxurious Dubai hotel Jumeirah Zabeel Saray to craft a delicious Ottoman-inspired afternoon tea menu. Top-class chef Jean-Christophe Novelli also headlines the festival bill. The French celebrity cook is widely credited with inspiring a generation of cooks and his fine-dining restaurants boast multiple Michelin stars.

Novelli became a personal chef to the Rothschild family at the age of just 20, following a spell as a bakery worker. He moved to Britain during the 1980s where he earned his cooking stripes working in a series of renowned establishments such as the Four Seasons Hotel in London. He founded Maison Novelli in London in 1996 and went on to open a string of successful venues there and in France and South Africa. Welcoming the exciting line-up for this year’s edition of the gourmet food festival, Chris Fountain, from the team which organises Taste of Dubai, says: “The festival has evolved over the years from being just a food festival to a social must-attend event that not only celebrates food and drink, but also offers all-round entertainment for each and every visitor who attends. In the stars Dubai’s Michelin-starred restaurant chefs discuss fine fare, standing out in the crowd and the future of the city’s culinary scene Words by

In 1900, two French brothers, André and Edouard Michelin, wrote a manual for their clients detailing where best to take a rest stop and indulge in top-quality cuisine when on the road. Fast forward 114 years and the tyre manufacturers’ annual Michelin Red Guide attains a global reach with editions across the world that are famed for setting the gold standard of gastronomic establishments. Year after year the publication awards the finest restaurants in the form of Michelin stars. Just as an Oscar is considered to be the highest honour for actors and filmmakers, the presentation of a Michelin star to a restaurant can have profound effects on the careers and lives of the chefs who earn them. Granting stars is a lengthy and comprehensive process whereby highly qualified inspectors conduct covert reviews of a broad range of establishments. A variety of factors are considered including quality of cuisine, mastery of f lavours, cooking technique, value for money and consistency. After deliberation, between one and three stars are awarded to restaurants deemed worthy. However, unlike an Oscar statuette, a star can also be taken away. For dedicated chefs, this translates into a commitment to the highest standards in order to uphold the prestigious award. In Dubai, there is a host of restaurants under the tutelage of chefs who have earned the sought-after accolade for their establishments. Concierge explores these elite dining destinations and gleans a fascinating insight from some of the chefs who have earned the respect of Michelin judges.

Dubai does not as yet have its own Michelin guide system to rate restaurants but the city has instead adopted a slew of top tier chefs from across the globe. From world-famous celebrity chefs such as Gary Rhodes and Marco Pierre White to gourmet legends like Vineet Bhatia, the first Indian chef to have received a star for his restaurant, the emirate attracts culinary masters from all fields. With so much choice, pushing boundaries is the key to standing out. Bhatia made local history when he opened Indego by Vineet at Grosvenor House, the first fine-dining Indian restaurant in a five-star hotel in the UAE. “When we opened it was quite odd because it had never been done before. You could get good Indian food in Karama and Bur Dubai but not in five-star hotels. At first, everybody questioned me and said there’s no demand but it’s been eight and a half years now and it has done extremely well,” says Bhatia. His restaurant has in many ways set the benchmark for top-quality Indian cuisine in the city. The accomplished chef achieves this by experimenting with cutting-edge innovations, such as the 10-spoon taster platter which is currently under trial in Dubai, while maintaining his signature tenacity of flavours, textures and colours.

He adds: “I’ve always been very stubborn and have chosen the unbeaten path. You have to remember as a chef that you are feeding people’s egos and palettes and guests have to leave with some memories of your food. If you can give that, it will click with them and they come back.” Bhatia developed this confidence, in part, after his restaurants in London and Geneva were awarded two Michelin stars. He says: “Once you receive an award, you see a certain

kind of acceptance, internationally. You are recognised for creating cuisine of a certain level which is refined, sophisticated, very well crafted and presented while keeping the substance intact. It really gives you a boost as a chef to push further and put food on a plate that other chefs would be scared to because you’ve already proved yourself.” Examples he gives include adding chocolate to savoury dishes and serving an olive chicken tikka dish with olive sorbet, rather than traditional chutneys or sauces, to create a juxtaposition between hot and cold tastes. While Bhatia flies the flag for Indian cuisine, Pierre Gagnaire is at the forefront of French fare that is, in his own words “facing tomorrow but respectful of yesterday”. Gagnaire has opened two culinary venues in the city

at InterContinental Dubai Festival City. Reflets par Pierre Gagnaire is a fine-dining restaurant while newly opened Choix Patisseries & Restaurant Par Pierre Gagnaire is the celebrated chef’s first standalone pastry shop. In the early 1990s, Gagnaire’s St. Etiennebased restaurant was awarded three Michelin stars, the highest prize in the Michelin rating system. “The impact of the Michelin Guide is very important and inevitably creates a healthy competition. The three stars I received in 1993 were the proof of the quality of my work. To have three stars and to keep them is key to promoting our credibility on the international side,” says Gagnaire. Describing the French restaurant’s spirit as rustic but chic, Gagnaire attributes his success to an uncontrollable curiosity for new ingredients and a zest for exploration, combined with a carefully selected team of talented and experienced people. Alléno’s first glimpse into the world of cooking came while watching his grandmother in the kitchen, who created innovative dishes such as ‘chicken in a bottle’, a tricky variation on a galantine whereby the bird is deboned and stuffed inside a bottle. Alléno often recreates stand-out dishes such as this on his menus, which are always customised to the market and changed four times a year. In addition, each of his restaurants features two signature concepts: a communal table where guests can pre-order menus tailored to their tastes and a sumptuous pastry library where diners can choose from an exceptional dessert

selection. “With STAY, I wanted to get rid of the gastronomic and service complexity to create a contemporary restaurant in a trendy and cosy environment. The food is then a creative interpretation of my cuisine; refined, ingenious and mastered,” explains Alléno. Speaking of his Michelin accomplishments, he adds: “This third Michelin star is a tremendous responsibility and it is now up to me to make it shine. More than ever, I want to progress and perfect my work to offer clients consistency and a true gastronomic signature. I want to affirm this through a cuisine that is forever more rigorous, finer and more creative and to pass on this quest for excellence in order to represent and promote French gastronomy.” The introduction of a Dubai Michelin star classification system has long been rumoured

but as yet remains unconfirmed. There’s no doubt that if it were to be established, it would encourage greater competition and change the face of the industry. Among chefs, opinion is mixed. However, most agree the culinary scene in the emirates has witnessed incredible growth in the past decade. Bhatia says: “I think it will come eventually. If you asked me the same question five years back, I would have said no. You can probably eat in Dubai as well as you could in New York or London or Tokyo. It’s not quite the same level but it’s very high and I think in a year or two it will get better and better.”

Stop by the gold, spice and perfume souks for some traditional treasures before leaving this vibrant area.

I was born and raised in Dubai and I love how vibrant the city is; there is always something interesting to do. A gourmet meal in Burj Khalifa is undoubtedly one of the best ways to appreciate one of the city’s most unique aspects. Fine-dining restaurant At.mosphere, located in the tallest building in the world, offers sensational views of the futuristic scene below while in the distance the Arabian Gulf and desert are the backdrop. Shopping is one of my favourite things to do and here in Dubai, there is plenty of choice. The Dubai Mall, the world’s largest mall, has an incredible selection of designer stores and labels. For something a little different, I enjoy shopping at Jumeirah Zabeel Saray on Palm Jumeirah. It is a beautiful resort where you can find an array of luxury stores. Its Avenue of Indulgence boasts high-end brands offering a selection of gifts, accessories and jewellery to buy. When I have guests to stay, taking them to Burj Khalifa and to The Dubai Fountain show is at the top of my list. A visit to Burj Al Arab is also an unforgettable experience with world-class restaurants to choose from and sensational views to enjoy. Moving away from the city, a desert safari is a fantastic adventure among the majestic dunes. Global Village is another memorable day out for

For a slice of Dubai’s history and culture, the Heritage Village is worth a visit. The interesting displays tell the story of Dubai’s journey from small fishing port to bustling metropolis. Some of the best restaurants in the city can be found at One&Only The Palm, which is located on Palm Jumeirah. With stunning views out to the Arabian Gulf and set in lush green gardens, a meal here is a must. Among the restaurants to try, 101 Dining Lounge and Bar is my favourite. It is perched at the end of the resort’s private marina and is easily one of the city’s most chic spots. This is my favourite place to unwind with friends in the bar or enjoy delicious Mediterranean-style food and the sensational Gulf views.
