THE PSYCHEDELIC PURPLE COLOUR OF THE INK IS A NOD TO THE AESTHETICS OF ROCK MUSIC IN THE SIXTIES

The Montblanc Great Characters Limited Edition collections are known for paying homage to cultural icons that have shaped the world, and who better to inspire the latest edition than The Beatles? The Fab Four – the late John Lennon and George Harrison, along with Paul McCartney and Ringo Starr – had hit after hit with the likes of Hey Jude, Twist and Shout and Let It Be. They were the voice of a generation and the definitive sound of the sixties. Despite the fact that the Liverpool band were together for less than a decade, from 1962 to 1970, their creative legacy lives on more than 50 years later. Their impact can be felt in almost every avenue of contemporary culture, from fashion and music to art and design. Each of Montblanc’s Beatles-inspired pieces pays tribute to a different aspect of that legacy. Great Characters, The Beatles Special Edition writing instrument is inspired by Sgt. Peppers Lonely Hearts Club Band, the award-winning conceptual album released in 1967. The stripes of the cap and barrel, created using a pioneering multicolour lacquering process, references the brightly coloured military uniforms the band wore on the iconic album cover. The cone resembles a button on a mixing table, a detail that has been used to pay homage to the band’s

Visit the Montblanc boutique at The Dubai Mall

recording sessions at Abbey Road studios. Another writing instrument, the meticulously designed Great Characters, The Beatles Limited Edition 1969 uses intricate details that evoke the album Abbey Road. The shape of the cap top mimics a microphone while the metal inlay reads LMW 281F, a reference to the licence plate of the VW that’s pictured on the album cover, the backdrop to the now-iconic image of the band crossing the road. The presence of the Union Jack flag is a nod to the song Her Majesty, one of the tracks on the record. The final writing instrument in the collection is Great Characters, The Beatles Limited Edition 88. It is the glitziest of the three, with a solid gold skeletonised cap and barrel featuring several metal inlays adorned with lacquer, a true feat of contemporary manufacturing. Various symbols of retro pop culture adorn the pen, from the Apple Records logo to the Union Jack. The ʻYeah Yeah Yeah’ on the gold skeletonised cap is both a song lyric and a reference to “Yeah! Yeah! USA!”, the headline printed by the Daily Mirror to announce the arrival of The Beatles in the United States. Beatles fans can complete the set with psychedelic purple ink, a nod to the aesthetics of rock music in the sixties, and a brightly coloured notebook inspired by the Sgt. Pepper's Lonely Hearts Club Band album cover.

State of the art ——

Alserkal Avenue, Dubai’s formative hub for contemporary art, continues to delight the region’s budding art aficionados with an ever-expanding portfolio of creative offerings

Al Quoz, previously thought of as something of a Bermuda Triangle among Dubai dwellers thanks to its maze of indistinct warehouses and similar-looking streets, is now one of the city’s most up-and-coming quarters. A complete contrast to the emirate’s more well known luxury offering, Al Quoz’s charm lies in its back-to-basics approach and hip industrial façades – making it the perfect spot for Alserkal Avenue’s creative vision. The brainchild of Dubai-born Abdelmonem bin Eisa Alserkal, the art district was conceived by combining his passion for the arts and his love of real estate development. Since its humble beginnings in 2007, Alserkal Avenue has, and continues to, expand at an impressive rate and in a number of awe-inspiring ways. Growing with the city’s cultural community, the original layout that once featured 20 warehouses now stretches across 500,000 square feet. Not only is it home to a host of emerging and established galleries, Alserkal Avenue has also become synonymous with homegrown cultural initiatives and inventive public spaces. To further extend its platform, Alserkal Programming was launched in 2015, offering a range of commissions, screenings and talks to upcoming talent. Each year the platform highlights a particular theme, and with the help of artists and professionals, the chosen concept is brought to life through wide-ranging means and perspectives. Concrete, a striking multipurpose venue, is another of Alserkal’s more recent developments. The first building to be completed in the UAE by the Office for Metropolitan Architecture (OMA), Rem Koolhaas, OMA's founder explained: “In Concrete, we are not introducing a new shape but instead were able to infiltrate an existing building with an arts institution. This building is totally produced in Dubai; it is not a foreign ideal, and that I think is significant.” Described as a crossroads of modular design and modern architecture, Concrete brings together a collection of reimagined warehouses that boast multiple configurations – think movable walls and translucent façades that add a new dimension to seamless indoor-outdoor experiences. It’s an exciting progression into adaptive architecture that is a first for the region. 27

/ Think outside the box

Alserkal Avenue presents so much more than just art in a conventional sense. This is a thriving community that offers something experimental and unexpected at almost every turn. A few of the highlights include CHI-KA, a contemporary space that sells one of a kind hand-crafted kimono-abaya alongside a collection of fine art. There’s Nostalgia Classic Cars, complete with lounge area, library and showroom of vintage cars, a must-visit for petrol heads. While those with a sweet tooth should head to Mirzam where chocolate treats are crafted by using just three ingredients. Adding a completely transparent experience to their chocolate making, you can witness the entire process, from roasting the coco beans to hand wrapping chocolate bars. There is also The Fridge, a talent management agency that works with a diverse range of musicians and performers and regularly hosts shows at its Al Quoz warehouse.

Serving up great food with an offbeat spin is always going to create a buzz. And this is something Alserkal Avenue does with increasing success as cool cafés and eclectic eateries continue to spring up around the urban labyrinth. INKED is certainly one of the most talked about, with the pop-up restaurant actively encouraging diners to get out of their comfort zone, all while sparking social debates and discussions. Some of INKED’s conceptual dining experiences have included having your meal in front of a mirror and the recent Grey Area experience where guests embraced a lackluster world of monotone in which everything from the décor and tableware to the food was presented in shades of grey. A favourite among the hipsters, Hapi is a health hotspot that encourages an ‘eat, move, play’ philosophy by combining trendy food – think acai bowls and organic bone broth – with activities such as parkour and yoga at the venue’s movement facility.

KEY GALLERIES TO VISIT

Quoz Arts Fest, a celebration of Alserkal Avenue’s creative community, returns to Alserkal Avenue on January 26 and 27. The free, two-day event includes artist workshops, performances, guided walks and interactive installations. Then, from March 5 to April 1, the partnership between Alserkal Programming and UAE Unlimited will see the 2018 edition of an exhibition showcasing emerging UAEbased artists at Concrete. Curated by Sharjah-based artist Karim Sultan, this year’s show will focus on the theme of language and its use as medium for communication. Looking ahead, Vilma Jurkute, Alserkal Avenue director, said: “Our mandate has always been to provide a platform for home-grown talent to flourish and we will continue to pursue this through the Alserkal Residency and our community programming. We’ve partnered with a number of not-forprofit initiatives to help extend the art and culture scene beyond the commercial, so that we can provide a holistic art experience for the community in the UAE.”

Defying gravity ———

Concierge meets Tara Young, the resident artistic director of La Perle by Dragone, to talk about the visionary show

Watching La Perle by Dragone is a visual feast, an experience that almost defies explanation – even if you’re running the show from behind the scenes like resident artistic director Tara Young. When the bubbly Broadway alum is asked how she would describe Dubai’s first resident show, she says: “The best way I can put it into words is not to describe the story, but to describe how it makes me feel. I experience huge amounts of joy. I experience sadness and a sense of loss. I feel quite a bit of fear and excitement too. At the end, what I ultimately feel is a huge sense of celebration, love and unity with all.” It’s a big statement to make, but La Perle by Dragone is a big show, in every way. The creation of Franco Dragone, the man credited with the meteoric success of Cirque du Soleil, the performance takes place in a striking purpose-built theatre in Al Habtoor City. It’s an impressive 10 storeys high space with a special aqua-stage that fills and empties, with an estimated 2.7 million litres of water throughout the show, into a pool that forms the centrepiece of the theatre and the basis for some jawdropping stunts. The theatre seats 1,300 people, and is designed to offer each person an unobstructed view of the action on stage. “What’s really interesting is that when you watch the show from a different seat, you’ll actually experience it differently,” says Young. “The seating arrangements of the theatre really offer a wealth of different perspectives, both literally and figuratively. That’s really a gift to the audience member. Because with a lot of shows, once you’ve seen them, there’s not really a need to see them again, but La Perle is so unique, every time you watch the show, you get something new.

“I feel like this show is alive, and it’s magical, it has a heartbeat, and it’s always changing, like heartbeats do. That’s what you get with live theatre, and it’s wonderful.” Young knows a thing or two about live theatre, having been in the performing arts for most of her life. By the time she was 30, she had already worked on almost a dozen Broadway shows, including a stint with Liza Minnelli in Radio City Music Hall in New York. She later moved to more of a directorial role, eventually working with Franco Dragone in 2014, on a show in China. When it came time for Dragone to bring his vision of Dubai’s unique resident theatre show to life, Young was a natural fit. Today, she oversees a cast of 65 of the world’s best artists, from 23 countries, and is in awe of their skills and dedication. During the course of the show, you’ll see them perform some unbelievable stunts, from aerial tricks on harnesses to gravity-defying acrobatics, with performers even diving into the stage pool from 25 metres high. The show also involves plenty of dance, theatre and even comedy. “These performers work so hard, and they are always trying to improve and get better every day,” says Young. “Each one is always learning new tricks and it’s wonderful to watch. I love seeing someone master a new skill.” She adds: “It’s impossible for me to pick a favourite part of the show, because it changes every day. Sometimes it’s watching someone learn a new trick. Sometimes it’s seeing an audience member react to a scene in a new way.” Ultimately, Young loves to see the effect that La Perle by Dragone has on its audience. “Every day is a surprise, and I never get tired of that. I could never say that I’m bored at my job.”

EXPERIENCE AL QAWASIM CORNICHE Ras Al Khaimah has not one, but two corniches – the old corniche and Al Qawasim Corniche – but it’s the latter that is the most popular. During the cooler months visitors and residents alike can be seen strolling or jogging along the picturesque, palmtree dotted walkways, admiring the views of the city skyline and the lush mangrove forests in the distance, or simply watching the boats sail by.

AL AIN ZOO

While the UAE might be well known for its skyscrapers, luxury hotels and mammoth malls, beneath that glittering faรงade, the region is home to a remarkable array of wildlife. Fortunately, thanks to conservation efforts across the country, there are plenty of opportunities to see wild animals in their natural and specially-made habitats, from the roaming herds of an African-style safari to the indigenous dune-dwelling creatures that populate the desert

Animal lovers are guaranteed a wild time at Al Ain Zoo – not only is it home to a vibrant population of exotic creatures, there are also a number of visitor experiences that allow guests to get close to their favourites. These include feeding the giraffes from a special viewing platform, watching the hippo training sessions, riding a camel and watching a bird of prey show. There’s also the opportunity to take a free 25-minute train trip through the zoo grounds. Along the way you can see many of the 4,000 animals that call Al Ain Zoo home, such as elephants, leopards, monkeys and even penguins. The zoo is one of the longest established wildlife attractions in the UAE – located in Al Ain, known as the Garden City, it was founded in 1968 by the late Sheikh Zayed, with a conservation mission at its heart. In fact, the centre has been integral to the successful conservation of indigenous species such as desert antelopes, gazelles and the Arabian oryx, a once endangered species whose population has been boosted by the zoo’s breeding programme. Al Ain Zoo has expanded with the addition of Al Ain Safari Park. Set over 217 hectares of desert landscape and overseen by a team of knowledgeable Emirati tour guides, it’s the largest man-made safari park in the world. alainzoo.ae

It is no exaggeration to say that Dubai Safari Park was one of the UAE’s most hotly anticipated openings of 2017. The AED1 billion project is one of the biggest wildlife attractions in the UAE, with picturesque grounds covering around 119 hectares and home to around 3,500 animals including lions, tigers and more. The safari park is divided into various ‘villages’ according to theme: an Arabian Village, for example, boasts desert, mountain and meadow landscapes to mimic the region and is populated by indigenous animals, such as Arabian oryx and gazelles. There’s also an African Village, and an Asian Village that’s due to open later in 2018. A highlight of the park is the Safari Drive, where guests board an eco-friendly, air-conditioned bus and travel through the park’s drive-through enclosures, populated by lions, tigers, baboons, hippos and more. Look out for the world’s only drivethrough crocodile exhibit. 5

The Green Planet is the first ever indoor rainforest to be built in the Middle East. Located in City Walk, at the heart of this fivestorey building is the world’s largest man-made, life-sustaining tree. Around this impressive centrepiece discover a miniature rainforest with more than 3,000 animals including exotic birds, reptiles, sloths and even monkeys. The temperature and humidity levels are controlled to mimic the environment of a real rainforest and ensure that the exotic flora and fauna are able to thrive. The fact that it’s a man-made environment doesn’t detract at all from the experience of seeing these exotic species up close. On-site biologists and expertly trained ground staff are there to help visitors learn more about the wildlife and even get closer to the animals, whether that means watching feeding time at the freshwater tank or meeting the resident sloths. thegreenplanetdubai.com

With giraffes, gazelles and even cheetahs roaming across its wild natural landscape, Sir Bani Yas Island feels less like the UAE and more like a slice of Africa. That’s all thanks to the Arabian Wildlife Park, a 1,400-hectare nature reserve that takes up more than half the island, and is home to over 10,000 animals. The island was established as a nature reserve in 1971 by the late UAE President Sheikh Zayed bin Sultan Al Nahyan in a bid to protect wildlife, particularly those native to the region. Today, visitors get to enjoy the thrilling experience of seeing these animals in the wild, including species such as Arabian oryx, flamingoes and even a small family of hyenas. The island, which can also be reached via seaplane, is located off the coast of Abu Dhabi and if you're looking for the best way to get close to the animals, book a Nature and Wildlife drive through with one of the hotels. Alternatively, the island can also be explored on foot, on mountain bikes and even on horseback. sirbaniyasisland.com

Now in its 22nd season, Global Village once again welcomes the world to Dubai and its unique shopping, dining, entertainment and funfair destination. From Indian pashminas to Yemeni honey, there’s plenty of exotic souvenirs at every turn. Head for the hills ——

It takes just over an hour to drive from Dubai or Abu Dhabi to Ras Al Khaimah, but entering the UAE’s northernmost emirate can feel as though you’ve stepped into another world. Gone are the superlative skyscrapers and megamalls of the larger, glitzier emirates, replaced instead by historic sites, sweeping mountain ranges, rolling desert dunes and miles of golden sand coast. And dotted throughout you'll also find luxury hotels and family-friendly beach resorts. With its multifaceted appeal as a place for both a luxury break and an active getaway, it is little wonder really that recent years have seen the emirate become an increasingly popular destination for the UAE’s weekend warriors. Ras Al Khaimah is home to a diverse landscape, boasting miles and miles of desert dunes, an ocean teeming with sealife and rugged mountain ranges and wadis that beg to be explored, whether on foot, four wheels or even four legs if you opt for a camel trek or horse riding tour. As such, it’s a veritable playground for nature lovers, especially during the cooler winter months.

For those in search of an adrenaline-packed afternoon, the via ferrata is a must-try. One of Ras Al Khaimah’s most popular activities, this four-hour adventure begins at the foot of the imposing Jebel Jais, the highest mountain in the UAE. Participants follow a via ferrata – Italian for ‘iron road’ – a protected climbing route of cables that traverses the face of the mountain. The one kilometre route is interspersed with heart-pumping ziplines, the largest of which is around 300 metres long. It’s an unforgettable way to experience the emirate’s spectacular mountain ranges. Ras Al Khaimah is home to an array of fascinating historical sites, such as the recently restored Mohammed bin Salim Mosque, thought to date back to the 18th century. Even more impressive is Dhayah Fort, the site of a battle between the British troops and local tribes in the early 1800s. Today, visitors who climb the steep staircase of the fort are rewarded with incredible views of the surrounding date plantations and the Hajar Mountains.

A desert safari offers another way to explore the natural riches of Ras Al Khaimah. Many hotels and tour companies offer packages that include dune drives, camel trekking, falconry and a feast of Middle Eastern dishes. The tranquillity of the dunes is best enjoyed in late afternoon, as the sun begins to set and the stars come out. For the ultimate UAE staycation, the Waldorf Astoria Ras Al Khaimah brings a touch of old school New York elegance to the emirate. With the backdrop of the Hajar Mountains and a pristine private beach overlooking the Arabian Gulf, the five-star property makes the most of the UAE landscape with plenty of nods to its Manhattan predecessor. Lexington Grill, one of nine food outlets, is a steakhouse named after a New York street, while Peacock Alley is the place to go to try an authentic Waldorf Salad. Like its New York counterpart, the latter, its signature lobby lounge, features an elaborate public clock as its centrepiece. The bespoke design by Smith of Derby includes the five daily prayer times of Islam as a reflection of the Arabic region. However, it’s the accommodation that’s the real draw here – 346 rooms and suites in total, occupying a minimum of 56 square metres each (many are larger), with floor to ceiling windows and spacious terraces for admiring the views of the golf course, or the Gulf, below you. Each features fresh white linens and refined touches: huge marble bath tubs, rain showers, dressing rooms and the ultra-luxurious dressing gowns. Those who venture out to explore the property will find plenty of highlights including a family-friendly pool, relaxed beachside restaurant Azure and the Waldorf Astoria Spa, which has a calming, ocean-inspired atmosphere and boasts a relaxation lounge, hydro bath, herbal spa and more.

The wadi offers shelter from the elements, while the flat wadi floor makes the perfect base for camping

In contrast to the Waldorf Astoria's modern luxury, the landscape also lends itself to outdoor adventures. Al Wadi Nature Reserve, for example, is a wonderful stretch of protected landscape. It’s home to the Al Wadi Equestrian Club, which boasts a stable full of a Arabian horses and offers horse riding treks through the reserve. From experienced equestrians to novice riders, everyone is catered for, and the expert guides will lead you through the maze of ghaf trees and sand dunes. Keep an eye out for roaming wild animals such as Arabian oryx and gazelles. Wadi Showka is a popular location among the UAE’s fitness communities for hiking, mountain biking and trail running, with miles of four-wheel tracks that are easy to follow. The walls of the wadi offer shelter from the elements, while the flat wadi floor makes the perfect base for campers to pitch their tents. It's a far cry from a five-star hotel, but the tranquil surroundings and starry skies make for an unforgettable experience.

Moments in time ——

Concierge chats to Louis Moinet CEO Jean-Marie Schaller about building on the watch brand’s groundbreaking legacy

It’s not often a brand can lay claim to rewriting history, yet that is exactly the change in narrative that occurred when it was discovered that in fact Louis Moinet had invented the first chronograph in 1816. Previously the general consensus had been that the invention originally dated back to 1822 when Nicolas Rieussec had filed the first chronograph patent. This theory however was officially debunked in March 2013 when it was proved the honour belonged to Louis Moinet and his compteur de tierces. Moinet, who, Jean-Marie Schaller rightfully describes, as a “master watchmaker” was born in Bourges in 1768 and spent much of his adult life devoted to the art of watchmaking. Among his many professional achievements Moinet served as the president of the Chronometry Society of Paris, published over two decades of work in his magnum opus ‘Le Traité d'Horlogerie’ in 1848 and enjoyed the acclaim of being watchmaker for the Tsar of Russia, Napoleon, Thomas Jefferson and King George IV of England.

Louis Moinet's drive and spirit of inventiveness now lives on in Jean-Marie Schaller. Born in the picturesque Canton of Jura in Switzerland, Schaller proudly quips that his birthplace meant he was destined for a life in watchmaking, and in 2008 he happily cemented this fate by founding Les Ateliers of Louis Moinet. Combining his passion for watches and immense respect for the horological legend, Schaller explains: “Louis Moinet’s values appeal to connoisseurs, watch collectors and stylish people. They are all watch lovers, and want to express their own personality by choosing a watch of character. “Each watch tells a story. For instance, the counters of the Geograph Rainforest timepiece are crafted in a fossilised palm-tree, originating from South-East Asia, that is 70 million years old. Today the sale of each of these watches contributes to the Pulau Banding foundation, which serves to protect the oldest rainforest in the world. Our creative process is not only to manufacture beautiful watches, but also to have a resonance with the unique history and concepts of Louis Moinet.” Schaller has successfully revived the name of Louis Moinet while astounding the horological world with a collection of exceptional timepieces. Talking through some of the maison’s most noted pieces, he says: “Louis Moinet has always had a focus on art and design. Every year, innovative new products are emblematic of these values. The first ever watch featuring a moon meteorite was presented in 2009, followed by Memoris, the first chronograph with fully a visible mechanism in 2015. Another of our recent creations is the Space Mystery which had only been available for a few months, and is now sold out. It features a wonderfully unique technology - a satellite tourbillon, coupled with a mysterious Magic Blue dial - and a meteorite containing amino acids. The Treasures of the World is yet another striking collection, its designs feature extra-terrestrial elements, rare fossils and natural stones.” 6

Themes of rarity and uniqueness have always been at the core of the Louis Moinet philosophy As Schaller reminds us, “you have to think of Louis Moinet more in terms of culture than a commercial brand” and nowhere is this more evident than in the maison’s commitment to crafting the extraordinary. Themes of rarity and uniqueness have always been at the core of the Louis Moinet philosophy and this is something Schaller continues to hold dear. “We look for the unusual. Our world is made of three values: high watchmaking, art and astronomy. Our creations are made for modern people but at the same time they carry the roots of the Louis Moinet name. Our idea is to create new emotions based on a legacy.” Building on Louis Moinet’s affection for astronomy, the Metropolis, crafted for the 2017 Only Watch auction, is a daring design that sports a gold-plated dial on which the moon's illuminated face is portrayed. It also achieves another first in terms of aesthetics as the timepiece’s face is first gilded and then hand-punched to form lunar ‘craters’. To then complete the metaphor, the ateliers of Louis Moinet have filled these craters with genuine fragments of lunar meteorites. Close to its edge, between 8 o’clock and 11

o’clock, the piece reveals its beating heart, the LM31 caliber - an in-house movement. This dial, according to the brand, is and will remain the only one of its kind in the world. Noting the importance of its Middle East clientele, Schaller goes on to explain: “This region is one of our most important and beloved markets. Of course we make a living selling our watches, but more important than that, we have so many friends in the Middle East. We learn from them, exchange and develop new ideas.” Linking back to the astrolabe, one of the Islamic world’s most significant astronomical developments, Schaller is eager to mention the Astrolabe Tourbillon. “Based on the design of the most beautiful historical astrolabe, the Al Sarraj, this exclusive timepiece comes with a hand-made version of the Al Sarraj astrolabe which can not be found anywhere else.” Looking ahead, Schaller enthuses; “Les Ateliers Louis Moinet will have a very prosperous 2018. We are working on some very special concepts, a mixture of art and high technology and I can’t wait to present them.” Discover the latest collections at the Damas Les Exclusives boutique at The Dubai Mall,

For the first time, Montblanc has crafted a whole collection in vegetable tanned leather treated in the great Tuscan tradition to give each piece its rich dark brown aging patina and worn-in charm. The retro-style Single Gusset Briefcase features a two-buckle closure and adjustable shoulder strap.

With its earthy desert hues the design of the new 1926 Montblanc Heritage Collection evokes the vintage elegance of rustic safari travel and the eager exploration of distant lands and cultures.

The 1926 Montblanc Heritage Collection is characterised by the beauty of its organically treated leather, returning to one of the oldest and most intricate tanning processes. Enhancing the look, touch and smell of the leather, the use of vegetable tannins extracted from bark and other plant tissues preserve the natural appearance of the leather. And with the passing of time, the changing colour only enhances the vintage look of each piece.

The design codes of 1926 Montblanc Heritage have been applied to small leather goods including wallets, credit card holders and business card holders. The dark brown leather contrasts with a vibrant red Maasai tribe-inspired lining found inside these accessories. For the intrepid traveller, the collection includes a Passport Holder, a Multi-currency Pouch for storing up to four currencies in four zipped compartments and a key fob for carrying multiple keys. A fine stationary collection has also been given the Heritage treatment with a notebook handcrafted in the finest leather featuring gold cut paper edges inspired by antiqued gold fittings.

Marc Abed ———

Zaya Nurai Island's culinary director talks epicurean passions and how he stays ahead of the game

Situated off the coast of Saadiyat Island in the capital, Zaya Nurai Island has so much more to offer than its slice-of-paradise vibe. Tucked away in different corners of the property are six vibrant dining venues which offer everything from Mexican cuisine to Levantine seafood, alongside splendid panoramas of the Arabian Gulf. Ensuring the scene is set for a memorable dining experience, talented chef Marc Abed takes to the kitchens to experiment with diverse flavours and crafting the perfect meal. How did you discover your passion for cooking? “My grandfather was a renowned restaurateur in the 1960s and he passed down his legacy to his son. With a chef for a father, cooking was always a big part of my life. I loved spending time at the family restaurant, where I also enjoyed the privilege of witnessing all of the chefs in action. Dining together as a family was also a daily ritual that instilled in me a curiosity for the culinary arts.” How did your passion bring you to Zaya Nurai Island? “My travels around the world, as well as my work in Brazil, have inspired me to create my own brand of food and the island presented just the opportunity for me to make a difference. Zaya Nurai Island's culinary philosophy also appealed to me. It’s all about a zest for magic, as well as absolute harmony.” How does working on one of the world's most exotic islands influence your craft? “The island fills me with positive vibes and provides a sense of relaxation. The serenity and natural beauty of this place are a constant source of inspiration for me. It feels like a mix of being on vacation and at work. I spent my first two years at the hotel living on the island, which was great as it allowed me to establish a well-structured department from scratch. After that, I decided to relocate to Abu Dhabi city in order to keep a closer eye on food trends dominating the capital’s dining scene. But the plus side to living in the city definitely has to be that I get to ride a speedboat to work every day.” Can you walk us through a typical day on the island? “As culinary director, I start my day visiting all the outlets and ensuring that the kitchens are functional. This includes making sure that the products are properly purchased as per my requirements. I believe that the key to success is the happiness and comfort of my team. That is why I spend a considerable amount of time communicating with them. I also like to use my spare time to research and create new recipes, as well as experimenting with new ideas, to keep up with the UAE's highly competitive market.”

Which restaurant is your favourite on the island? “It's Frangipani. The venue is an international restaurant where I have the chance to serve a sample from every culture I have experienced. In fact, I recently took a trip to Japan and earned a Professional Edo Sushi Certificate, which helped me apply time-tested techniques and introduce sushi to Frangipani. And among all the dishes available here, I have a special fondness for 'gankun', a type of sushi featuring an explosion of flavours that balance Japanese and French hints. I always recommend the dish to every guest.” What do you love the most about working in the UAE and cooking for a multicultural audience? “For me, food is the best ambassador of cultures. And the UAE is a melting pot that contains a colourful diversity of people. I truly enjoy introducing my guests to different cultures with my palate of international flavours.” Are there any culinary techniques you swear by? “Profound product knowledge and a respect for classic culinary techniques is always the way to go.” Any go-to dish at the end of every work day? “Nothing beats the comforting taste of a buttery toasted sandwich with cheese and goose ham.” 02 5066222 or

Raising the steaks ——

Eager to try some of the best cuts in town, we head over to trendy new chophouse STK JBR The Walk to see what all the buzz is about

Flourishing, thriving and words similar to this are often used to describe Dubai’s dining scene. In fact, with so many new international and homegrown concepts springing up across the city, keeping track of it all can be a little overwhelming. So much so that news of another steakhouse arrival, in this instance Stateside export STK, may well have missed your radar. However, if that’s the case, we suggest you remedy it, immediately. It’s been just over a decade since the original STK Downtown opened its doors in New York City’s trendy Meatpacking District, and since then venues have popped up across the US along with global ventures reaching as far as London, Puerto Rico, Milan and now Dubai. Set within Rixos Premium Dubai, another newcomer on the emirate’s hospitality scene, STK JBR The Walk is a fitting tribute to the brand’s sister venues. The décor is cool and contemporary; think plush ivory leather booths, hints of natural woods, neon typography signs, funky art prints and a futuristically curved ceiling feature. Oh and did we mention there’s several purpose-built dancing platforms behind some of the tables? You'll soon discover that these mini stages, which diners are actively encouraged to use as a dance floor, are among the many details that separate STK from your average steakhouse outing. We visited on a Saturday evening, just a couple nights after the official launch, and spotted a good mix of couples and groups, with the venue easily lending itself to a variety of occasions, be it date night, a birthday bash or simply a weeknight supper.

MAPLE-LEMON GLAZED SALMON

CHOPPED SALAD

While the steaks are obviously the menu's star attraction, there really is something for everyone. From the Raw Bar (we’ve heard the Tuna Tataki is already a hit with the city’s foodies) to the fragrant passion fruit miso black cod. There’s plenty that immediately catches the eye, so we’re grateful to Milena, our bubbly waitress who easily reels off STK’s signature dishes and best hits. We’re told no visit would be complete without the famed Lil’ Brgs, so we opted for these tasty sliders along with a generous portion of the chopped salad – a vibrant tangle of cucumber radicchio, corn, radish, avocado, chickpeas and creamy oregano. Onto our eagerly anticipated mains, STK proudly serves a range of USDA prime cuts and diners can choose from small, medium and large sizes before requesting their desired topping – which are varying levels of decadence – think poached lobster tail, foie gras and bacon and blue cheese. Plump, flavoursome and a breeze to slice, when our steaks arrive they certainly live up to the hype. The sides meanwhile are just as indulgent as the toppings. There’s the gooey, delicious mac n’ cheese and crunchy Parmesan truffle chips which we happily munch on while dipping our spot-on medium-rare fillet steak into the restaurant’s special STK Bold sauce.

NEW YORK CHEESE CAKE

From the chef

“STK is a fantastic, international steakhouse with a sleek, modern twist. Here it is all about the steak - delicious tenderloin, rib eye, tomahawk! In my opinion it’s the best restaurant to hit the Middle East and a dining experience Dubai has been waiting for. The food, atmosphere and vibe is all on point. Working with the brand in London gave me a wealth of inspiration to bring this new concept to Dubai and although it can be a challenge out here to create something unique, STK has successfully done just that by bringing an edge to traditional dining.”

– Head chef, Kay Gottlober

When we spot the traditional New York cheesecake there’s no way we can pass it up

Psst...

We’ve also heard that the second STK in Dubai

While we could have easily just stuck to the carnivorous offerings we were just as happy when the roasted salmon recommendation arrived. Served with a maple-lemon glaze, haricot vert and celery root puree, it’s an absolute dream. At this stage it’s questionable whether we have left enough room to share a dessert, but when we spot the traditional New York cheesecake there’s no way we can pass it up. Beautifully adorned with bright berries, cookies, mango salsa and a dollop of mango sorbet, which f lawlessly offsets the creaminess of the cheesecake, it was the perfect end to a gorgeous rendition of STK’s best hits. The idea behind every STK venue is that it’s a place not only to visit for a great meal but to stay for a great night out. And we can certainly see it living up to this reputation.

is set to open later this year at Address Downtown. This second venue promises a garden terrace with spectacular views of The Dubai Fountain and Burj Khalifa.

Reema Al Banna

The fashion designer and founder of Reemami tells Concierge what makes life great in Dubai and shares insider tips on the best things to experience in the city

There are many reasons to fall in love with a city like Dubai, but the one thing that stands out is the diverse backgrounds people come from. You get to meet people from all over the world, discover different cultures and learn so much from each other. Having been born and raised in the city, I consider myself fortunate to have watched the UAE develop right before my eyes. The country is hungry for new talent and in turn, it offers opportunities for people looking to explore their passion. In fact, it was witnessing the city develop in new and creative ways that inspired a sense of design in me. After studying architecture and graphic design, I found my calling as a fashion designer. And within a short span of time, by 2009, my ready-to-wear contemporary fashion label Reemami was born. As the first of its kind in the region, the brand is celebrated for its signature architectural and experimental cuts, playful concepts as well as handillustrated graphics. But when I'm not busy coming up with new designs. I also enjoy getting active in the city. I simply love the beach life in the UAE. There's so much to do, even if it’s just a scenic jog along the shore. One of my favourite pastimes is stand-up paddleboarding. I also recently travelled to Zaya Nurai Island in Abu Dhabi and I would definitely recommend this magical locale as a getaway destination to anyone visiting the UAE or residing here. When it comes to food, there’s so much to experiment with. Tomo at Raff les Dubai has the best sushi while Coya or Lima Dubai are great for Peruvian cuisine. The options for regional fare are endless as every Arabic restaurant has something unique to offer. One of the best ways to take in Dubai’s buzzing vibe is renting a bicycle for a trip around Downtown Dubai or Jumeirah Beach Road. A desert safari is also a great way to get a sense of the local culture. Those looking to soak up the city’s glitz and glamour can head to the malls for some retail therapy. I personally love shopping at Mall of the Emirates for the sheer array of brands housed under one roof. And considering the number of events the city hosts, there's something for everyone to look forward to, especially during the winter, when the emirate transforms into a playground for those looking to explore the very best Dubai has to offer.
