Editor’s note Welcome to this year’s first issue. It’s time for a brand new chapter and we couldn’t be more excited about all that 2019 has in store. The month of January is often a time for resolutions and reflection and in a city as dynamic and exciting as Dubai, these endeavours are all the more exhilarating. As another prosperous year beckons, from a thriving cultural scene to the opening of more record-breaking attractions, there is much for visitors to explore and we look forward to showcasing the best the UAE has to offer. Diving into Dubai’s ever-expanding arts scene, we highlight the city’s budding independent cinema community. Turn to page 30 to learn more. Alserkal’s popular Quoz Art Fest is back and we have all the details on page 34. The weather is perfect for a bit of outdoor exploration and we provide plenty of inspiration on page 38 with a round-up of the UAE’s best island hopping opportunities. Similarly, this month’s photo essay on page 48 highlights the region’s natural beauty, along with its cultural and architectural achievements, as we uncover the seven wonders of the seven emirates. While on page 44, the spotlight shines on the emirates’ growing line-up of international and homegrown sporting events. The focus then shifts back to the city’s penchant for luxury shopping as we chat to co-president of Chopard, Caroline Scheufele, about the bold moves the maison is making in the world of sustainable jewellery on page 58. If the new year has spurred the desire for a wardrobe overhaul, our style edit from page 62 to 67 has you covered – from designer fashion to must-have accessories. Fans of Asian cuisine will be pleased to see this month’s taste section has a distinct eastern influence, as we talk to Mai Phuong, head chef of Waldorf Astoria Dubai Palm Jumeirah’s acclaimed Vietnamese restaurant Lao on page 70. Followed by all the details of our recent visit to the much-loved Karma Kafé on page 73. If the magazine leaves you feeling inspired, book your next experience with us by visiting myconcierge.com.

Montblanc Great Characters James Dean Special Edition notebook and ink

Star appeal —— Montblanc’s new Great Characters Limited Edition collection pays tribute to the rebellious spirit and talent of movie legend James Dean

The Montblanc Great Characters Limited Edition collection is known for paying homage to cultural icons, leaders and thinkers who have shaped the world. It all began in 2009, when the Swiss maison raised the curtain on a new collection of writing instruments with Mahatma Gandhi among the first legendary figures to be immortalised in this form. Over the last decade, Montblanc has celebrated icons like John F. Kennedy, Albert Einstein, Alfred Hitchcock, Andy Warhol, Miles Davis and The Beatles. Recognising their lasting impact on politics and culture, Montblanc seeks to tell the story of the legacy they left behind by honouring different aspects of each character’s contributions, be it within art, science or humanity as a whole. Handmade by master craftsmen and issued in limited edition, these writing instruments are fascinating tributes. And this year, the maison pays tribute to 1950s Hollywood icon James Dean. Known for his leading roles as Cal Trask in East of Eden (1955) and Jett Rink in Giant (1956), Dean quickly gained a reputation as a cult figure, thanks to his remarkable knack for connecting with audiences. It was the character of troubled teenager Jim Starck he portrayed in Rebel without a Cause (1955) that defined his stardom. Sadly, East of Eden was the only film starring Dean that he would see released in his lifetime owing to his untimely death at the age of 24.

James Dean

In 1954, Dean expressed an interest in motor racing and followed his passion, successfully competing in several races. Yet his legacy as a driver was short lived, when in October 1955, he succumbed to a fatal car crash while practising for an upcoming race. Although his time was f leeting, Dean left a lasting impact on his generation and Montblanc honours this legacy with the Montblanc Great Characters James Dean Special Edition. The red precious resin of the cap and barrel of the writing instrument evokes the vibrant colour of the red jacket the star wore in his second film Rebel without a Cause, which was one of the first technicolour productions of its time. Available as a fountain pen, a roller ball and a ballpoint pen, the collection also nods to Dean’s last film Giant with the shape of the ruthenium-coated clip as a reference to the gun that his character Jett Rink carried on his shoulders in one of his most famous scenes. Another legendary scene from East of Eden, Dean’s first-ever movie, is immortalised by the pattern of a dollar bill on the platinum-coated cap top. One of the star’s most famous quotes, “Dream as if you’ll live forever. Live as if you’ll die today”, is engraved on the cap.

It took just a year and a half for James Dean to achieve immortality, yet his raw talent has inspired generations The handcrafted, rhodium-coated Au 585 gold nib is engraved with a racing flag and the ring on the barrel provides the geographic position of the James Dean Memorial Junction, which is the site of the fatal car crash that claimed his life. It took just a year and a half for James Dean to achieve immortality, yet his raw talent has inspired generations of actors, musicians and artists, and his legacy continues to live on through Montblanc’s artistry. Discover the collection at Montblanc boutiques at The Dubai Mall and The Galleria on Al Maryah Island 02 6764776.

Lights, camera, action ——

Fans of indie cinema and foreign films are frequenting a growing number of arthouse venues and pop-up screenings as a thriving new scene takes shape in the UAE Words by Olivia Cuthbert

The lights dim to darkness and there’s a gentle shuffle as people settle back in their seats. Heavy red curtains roll back and an expectant quiet fills the room as the screen flickers into life. Cinema Akil, the UAE’s newest arthouse cinema, has only been in its permanent venue for a few months, but already it feels like an institution – somewhere for film fans and culture buffs to appreciate the artistry of movie making in a setting that elevates the ordinary viewing experience and celebrates the cinematic craft. Cinema has always done well in the UAE. Even as streaming services like Netflix challenge its supremacy and lure viewers online, queues still gather outside UAE box offices every time a new blockbuster hits the screen. The Dubai Mall is home to a 26-screen Reel Cinemas, the largest cineplex in the world and the brand’s flagship venue. Guests can select from multiple viewing experiences, including the luxurious Platinum Suites, complete with reclining chairs and a personal butler service to keep the fizzy drinks flowing and popcorn tubs topped up. Competitor Vox Cinemas operates 186 screens in the UAE alone, far outnumbering the 47 it runs in Oman, 30 in Bahrain and 15 in Lebanon. Glamorous red-carpet events, including the Dubai International Film Festival and the Abu Dhabi Film Festival have added to the prestige of cinema in the UAE and raised the profile of a budding local film industry. Productions by Emirati directors have become a regular feature at film festivals, including Sea Shadow by Nawaf Al Janahi, From A to B by Ali F. Mostafa and A Tale of Shadows by Tariq Alkazim. There’s also a growing body of international films being shot in the emirates, including Mission Impossible 6, Star Wars: The Force Awakens, The Kingdom and Furious 7, many of which made use of the country’s spectacular scenery for dramatic desert footage. Even outside the summer months, when air-conditioned movie theatres offer respite from the searing temperatures outside, the appetite for cinema remains high in the UAE. But it’s not all about big-ticket action films and star-studded romcoms. At a growing number of film clubs and arthouse theatres, movie-goers are finding new ways to consume cinema in the emirates – with outdoor screenings, pop-up movie nights and several dedicated venues showcasing alternative productions that cater to a more distinctive demand.

31

12/20/18 4:18 PM

The UAE’s first arthouse cinema Posters outside the new theatre in Dubai’s artsy Alserkal Avenue advertise indie films not normally seen on the big screens in Dubai. Butheina Kazim launched Cinema Akil in 2014 and quickly built a following with pop-up screenings at venues across the emirates, including Third Line Gallery in Dubai’s Al Quoz, Sharjah Art Foundation and Warehouse421 in Abu Dhabi, but it wasn’t until late last year that she set up shop in a permanent theatre. Now, UAE fans of arthouse cinema have a purpose-designed venue for the first time, complete with low-lit lamps and plush upcycled seats that Kazim salvaged from the old Plaza Cinema in Bur Dubai – the emirate’s first standalone screen. The new venue in Alserkal Avenue is a response to the growing demand for a new kind of film experience in the emirates, says Kazim, who aims to diversify the cinema scene and offer audiences access to high-quality productions from different eras while showcasing some of the most exciting new work from upcoming directors around the world. Snacks, always integral to the cinema experience, are served at Project Chaiwala café, where movie-goers can sip steaming chai and tuck into platters of sweet potato masala fries, beef brisket wraps or a healthy mung bean quinoa salad.

Cultural exchange Indie screenings have been part of a behind-the-scenes cultural community for some time in the UAE, but in previous years, not everyone knew where to look. Ossama El Shammaa, cultural events manager at Alliance Française in Dubai, believes there is a mounting demand for more independent movie screenings in the UAE. “They offer a real social experience and cultural exchange where filmgoers can mingle and talk about different movies, have cinema debates after the show and meet with movie directors.” This intimate experience is all part of the indie cinema scene appeal, which attracts like-minded film fans keen to participate in industry dialogue. In March, Alliance Française will host the Women Film Festival featuring productions by female film directors followed by post-performance discussions. The centre recently revamped its cinema hall and hosts regular screenings on Tuesday and Saturday evenings featuring new and classic French films for Dubai’s multinational community. Francophiles can also take advantage of special showings by La Comedie Francaise and Opera de Paris. 32

Creative collaborations With an increasing number of arts venues offering a variety of settings for screenings across the UAE, film fans are finding new spaces to host pop-up cinema nights or movie clubs on a regular basis. Mohammad Khawaja set up Cinema Space in 2014 to share restored classics and contemporary world cinema with his community. The focus is on rare and remarkable films that have been revived to “highlight the need to preserve our world’s shared cinema heritage,” he says.

The events take place on Mondays and Saturdays at Manarat Al Saadiyat in Abu Dhabi and attendance is free. Audiences are drawn by the “strong sense of community” and unique opportunities to discover the power of visual storytelling from cultures around the world. Also, on Saadiyat Island, two of the emirate’s leading universities recently came together to showcase a contemporary Arab cinema series. Cinema NA, a collaboration between Paris-Sorbonne University Abu Dhabi and NYU Abu Dhabi, screened films including Hedi by Mohamed Ben Attia and Wajib by Annemarie Jacir, followed by Q&A sessions with the writers and directors. Back in Dubai, Cinema Akil is partnering with Alserkal Avenue to present a programme of public, openair, film screenings at The Yard. On the agenda is Wild Relatives by director Jumana Manna, exploring the relocation of an agricultural research centre from war-torn Aleppo to the Bekka Valley in Lebanon, dramatising the laborious work of migrant women tasked with re-planting seeds. In an ever-changing world, this type of cinema has a unique capacity to reflect the transformations going on around. “It allows audiences to empathise with the lives, hopes, dreams and realities of people across the world that they might otherwise never know except through films,” says Khawaja. “It’s also key to building bridges between cultures.” For more information:  cinemaakil.com  afdubai.org  cinemaspace-abudhabi.splashthat.com The Yard, Alserkal Avenue

Quoz Arts Fest 2018

Art for all ——— Mark your calendars for Quoz Arts Fest 2019, which returns to Alserkal Avenue on January 25 and 26 with activities for visitors of all ages

Tucked away in Dubai’s Al Quoz district is a buzzing hub making waves across the region for its unique approach to art and culture. Since its humble beginnings, Alserkal Avenue has been steadily expanding and broadening its reach to the region’s creative community in a number of awe-inspiring ways. In fact, this artistic haven has played a significant role in transforming the industrial quarters of Al Quoz. What was previously known as a maze of indistinct warehouses and similar-looking streets is now one of the city’s up-and-coming neighbourhoods and a hotspot for creative inspiration. To further extend its platform and bring the region’s art community together, Alserkal Avenue has, over the years, launched and hosted a number of diverse programmes, including art fairs, live performances, screenings, workshops, lectures, tours, culinary experiences and markets. Celebrating art in unconventional ways is one of its key concepts. And among all the exciting events that take place throughout the

It’s not on the island itself where the charm lies but rather the view of it from the shore that makes this one a treat. Named after the famous cartoon dog its shape resembles, Snoopy Island juts out of the Indian Ocean, a few hundred metres from Fujairah’s sandy shores. The rock’s prominent silhouette aside, the waters surrounding the island are teeming with interesting species of marine life, making it a great spot for snorkelling as you discover bright corals and shoals of colourful fish. It’s said, you’re more likely to spot a shark around Snoopy Island than Shark Island itself! BEST WAY TO GET THERE: Charter a private boat to get to Snoopy Island or if you’re feeling adventurous enjoy a swim from the shores of Al Aqah. Al Futaisi Island

Now privately owned by Sheikh Hamad bin Hamdan al Nahyan, archaeological finds prove the island was once a quaint village settlement dating back several hundreds of years. Wells, forts, a mosque and graveyard are still preserved on the site and it is believed that Al Futaisi Island once supplied sweet water and stones to build homes and forts for the people of Abu Dhabi. Another historical highlight is the Arabian Fort, an ancient structure fashioned out of conventional mud bricks. History and culture buffs are sure to love this one. Soak in this rich heritage with a day trip and you’ll also find that the island is home to diverse flora and fauna including free galloping gazelles. Sightings of migratory birds and flamingoes are quite common, while dolphins and an occasional visit from the endangered Green Sea turtle bear testimony to the island’s rich aquatic life. Gaining ground —— With regional competitions growing in size and world-class events being staged across the country, the sporting scene throughout the UAE is well and truly thriving

At a time when desert dunes dominated the terrain and mass investment had yet to transform the nation, there were just a handful of sports that flourished in the UAE. Falconry and camel racing were both an integral part of Arab culture and had taken place for centuries, but it was not until the late 1980s, when the country began to invest in its future and welcome visitors from around the world, that the sporting landscape underwent a monumental change. Beginning life as a modest venue with limited seating, Sharjah Cricket Stadium was one of the first major sporting facilities to open in the country in 1982. Just two years on, it would host a one-day international between Pakistan and Sri Lanka as cricket began to grow in popularity throughout the emirates. Then, in 1988, Emirates Golf Club would bring the first grass golf course to the Middle East and, just one year later, would attract the European Tour’s leading lights for the inaugural Dubai Desert Classic. Fast forward nearly three decades and the UAE is now famed for hosting an array of international tournaments and attracting world-class talent across numerous sports. Abu Dhabi is home to the season-closing Formula One race, Sharjah regularly hosts test match cricket and Dubai has established itself as the most popular stop on the Rugby Sevens world tour. Tournaments are held throughout the year, even during the extreme heat of the summer, thanks to the first-class indoor facilities, but it is throughout January and February that the events come thick and fast as a range of sports make use of the ideal cooler climate.

The action gets underway on January 5 with the start of the AFC Asian Cup. Held every four years, the high-profile football tournament will see 24 teams compete, with 51 games being played in eight stadiums across the four host cities of Abu Dhabi, Al Ain, Dubai and Sharjah. It’s a rare chance for those in the UAE to watch the best talent in Asia. Previously Japan has triumphed on four occasions, while Australia, the reigning champions, overcame South Korea to win the title for the first time in 2015. Playing on home soil, the UAE team will be hoping they can reach their second final (which will be played on February 1) and will be looking to Ali Mabkhout to lead the way after star player Omar Abdulrahman was ruled out of the tournament with a knee injury. Also taking place in January are two European Tour events, the Abu Dhabi HSBC Championship taking place from January 16 to 19 and the Omega Dubai Desert Classic running from January 24 to 27. Part of the Desert Swing, these two high-profile golf tournaments regularly attract the world’s leading players, with the likes of Tiger Woods, Sergio Garcia and Rickie Fowler all playing in recent years. In 2018, Tommy Fleetwood cinched victory in the capital and China’s Li Haotong claimed the title in Dubai, with four-time major champion Rory McIlroy coming up short on both occasions as he finished third and second respectively. This year, world number 3 Dustin Johnson will be aiming to claim the Falcon Trophy when he returns to Abu Dhabi Golf Club, while Ryder Cup stars Henrik Stenson and Ian Poulter will be in action at Emirates Golf Club.

The Standard Chartered Dubai Marathon saw just 48 runners finish the first ever race in 1998, but now attracts more than 30,000 participants and thousands of supporters. Last year Ethiopia’s Mosinet Geremew won with a course record of 2h:04m:00s to claim the US$200,000 first prize, while this year Olympic silver medalist Feyisa Lilesa will make a welcome return to the Middle East when he joins the elite line-up for the 2019 edition of the race.

Moving into February the action shows no signs of slowing down with cricket, tennis and cycling all taking centre stage. Taking place from February 14 to March 17, the fourth edition of the Pakistan Super League will see six teams competing for the coveted title. Featuring some of the world’s best Twenty 20 players, the likes of Shahid Afridi, Shane Watson and Mohammed Hafeez will all be in action, with games played in Sharjah, Dubai and Abu Dhabi. The Dubai Duty Free Tennis Championships will also return as the leading players on both the ATP and WTA Tour battle for the crown. Played from February 17 and March 2, all-time great Roger Federer holds the record for the most titles, with seven in total, while last year Spain’s Roberto Bautista Agut triumphed in impressive fashion. Played at the Dubai Duty Free Tennis Stadium in Irish Village, the popular tournament provides fans with a chance to see the best players on the men’s and women’s tour, with the likes of Andy Murray, Novak Djokovic, Venus Williams and Caroline Wozniacki all lifting the title in the last six years. Finally, the UAE Tour, a brand new event, will take place from February 24 to March 2 with the world’s leading road cyclists descending on the emirates for a gruelling week of racing. Starting in Abu Dhabi and working its way through all of the seven emirates before its conclusion in Dubai, the UAE Tour will include two mountain stages, a coast-to-coast stage and a team time-trial. The cycling extravaganza will be the only World Tour race in the Middle East and is expected to attract top-class riders such as Marcel Kittel, Peter Sagan and Mark Cavendish. What’s more, a four-race series for amateur riders will coincide with the event and provide a chance for enthusiasts to emulate their heroes by tackling four challenging races.

Luxury with heart ——

We catch up with Chopard co-president, Caroline Scheufele, to discuss the bold moves the maison is making in the world of sustainable luxury Sustainable luxury has become one of the most hotly discussed topics in today’s high-end sector. With customers paying far more attention to the origin and the processes involved in manufacturing the goods they purchase, unnecessary and unethical extravagance is rightly being called out for its irresponsibility rather than its opulence. And someone who truly understands the changing perception of luxury, is Caroline Scheufele. “Social responsibility is at the core of our maison” she says proudly. “For us it encompasses a dual objective: pursuing benefits for the business and for society. Today, the ultimate luxury is responsible luxury.” Caroline, along with her brother Karl-Friedrich Scheufele, are co-presidents of Swiss watchmaker and jeweller Chopard. Although the brand’s watchmaking legacy dates back to 1860, it was in 1963, when the Scheufele family acquired the company from Paul-Andre Chopard, that its fortunes really changed. “Chopard is an independent, family-owned maison, and this is clearly one of our main strengths. It is in many ways a blessing as the flexibility means we can adapt quickly to different situations,” reveals Caroline as she explains how the family dynamic works. “I share an office with my brother Karl-Friedrich and we enjoy making decisions together and working as a team, this is why we always find a solution even at the most challenging times. And our approach is always guided by a concern for details and excellence.” It is this united approach that Caroline insists is one of the main reasons Chopard has been able to take such an ambitious stand on the subject of sustainability. “As a family run company, ethics have always been an important part of our philosophy. Our Journey to Sustainable Luxury project, that we launched in 2013, has a direct impact on the lives of those within the artisan mining community. Being in a profitable business and practising good stewardship of environmental and social justice is essential. And I sincerely hope that more companies from our industry will join us in this movement and effort towards sustainable luxury by putting ethics at the heart of aesthetics.”

“Women have many different personalities and preferences, and Chopard proposes creations and models for each one of them” Caroline tells us that it was a chance meeting with Livia Firth, founder and creative director of Eco Age, and wife of actor Colin Firth, at the 2012 Academy Awards that led her to further investigate the issues of sustainability. “Livia asked, where does our gold come from? I immediately replied ‘from the bank’. But her question was much deeper than that and to me it highlighted the many humanitarian concerns. “When you learn that there are millions of men, women and children digging up gold from the valleys and hills, often working in unsafe conditions and unable to get a fair price for their work, you’d better do something about it. Personally, I was shocked. From that point on, I was determined to embark on a mission to change not only Chopard as a company and brand but also the entire industry.” Today Chopard is the largest buyer of fairmined gold and since July 2018 the maison has committed to only use 100 percent ethical gold when it comes to producing its jewellery and timepieces. Defined as gold that has been acquired from responsible sources, this 100 percent ethical classification also meets international best practice environmental and social standards. Alongside her quest to pioneer Chopard’s standards of sustainability, there’s plenty more the effervescent co-president has made her mark on. For example, it was Caroline who was responsible for Chopard’s venture into the world of haute jewellery. In 1985, she created a sketch of the maison’s now iconic Happy Clown – a golden clown shaped

pendant with a tummy full of moving diamonds, that would go on to be a precursor to Chopard’s extremely popular Happy Diamonds collection. “It was as a surprise that my father decided to produce just one piece from my sketch. It was a great success and that’s how jewellery creation began at Chopard. “Another creation that I am proud of is the Happy Sport, which celebrated its 25th anniversary last year. Back in 1993, Happy Sport became the first watch daring enough to combine the most precious of stones, diamonds, with the most unexpected material – stainless steel. Today the combination seems totally appropriate and many sporty watches are now quite conceivably entirely gem-set.” As a keen film enthusiast, Caroline has also been influential in bringing about Chopard’s partnership with the Cannes Film Festival. In 1997 she met with Pierre Viot, the festival’s then-president, who invited her to redesign the Cannes Film Festival emblem, its famous Palme d’Or. “I instantaneously said yes. It was a challenge that I took up with great enthusiasm and the new Palme

d’Or was unveiled a year later at the closing ceremony of the 1998 Cannes Film Festival. I’m happy to say since 2014, as part of our Journey to Sustainable Luxury project, the emblem has been crafted using fairmined gold.” Chopard’s notable designs and connection with the film industry has, of course, made the brand a frontrunner for high-profile events. And when it comes to offering some of the most spectacular jewellery pieces, the Red Carpet Collection is in a league of its own. Talking us through her creative motivation for the current collection, Caroline says: “Like my dad and my grandfathers who used to crisscross the globe with trunks full of precious merchandise, I spent my year travelling around the world searching for inspiration. This collection hints toward oriental colour combinations and forms such as those found in the orchid earrings, the secret opal timepiece and the feathered choker necklace.” While collections like this aptly hint that the Chopard woman is one who likes the finer things in life, Caroline is keen to add that she is also very versatile and multifaceted. “Women have many different personalities and preferences, and Chopard proposes creations and models for each one of them. “Chopard is for the ‘women of the world’, not for a specific type. My jewels and watches have been worn by famous and elegant women around the globe, but I like to think that they can span generations.” Enthusiastic about the year ahead, Caroline insists we’ll have to wait for Baselworld 2019 for a sneak peek of any new pieces, although she excitedly adds: “The big reveal will be during Cannes Film Festival and I can promise you it will be colourful and full of surprises.”

Taste of Vietnam ———

Mai Phuong, chef de cuisine at Lao, Waldorf Astoria Dubai Palm Jumeirah, tells us what it takes to stand out on Dubai’s competitive Asian dining scene The last decade has seen Vietnamese food take the culinary world by storm. Insanely delicious, it’s hard to imagine that most of these signature favourites have such simple recipes. When it comes to Vietnamese cuisine, it’s not about complex flavour combinations, but fresh ingredients that come together to create unforgettable dishes. Of course, much of the charm still lies in the skilled hands working behind the scenes, much like in the kitchens at Waldorf Astoria Dubai Palm Jumeirah’s Lao, where chef de cuisine Mai Phuong heads up a team eager to dish out a memorable dining experience. 1

Tell us about your journey as a chef. How did it all begin? “Becoming a chef was a natural choice for me. My mother had a popular restaurant in Hanoi for more than 20 years and I spent my time in the kitchen learning and helping her. My love for travel took me to Germany, where I worked in a restaurant and upon returning to Vietnam, I met chef Didier Corlou who mentored me, passing on his knowledge and passion for Vietnamese cuisine. Working with him for seven years provided an excellent opportunity to learn and develop my skills.” What was your first big break in the culinary world? “A few years ago, chef Corlou offered me an exciting opportunity to take up the role of chef de cuisine at Le Danang Restaurant in Bangkok. Although hesitant at first, the support of my family and my passion took me on this new adventure.” Who has been your biggest influence? “During my career, I’ve had the chance to study under many great chefs, who’ve each inspired me in their own way. But the biggest influence in my life remains my father, who always told me: ‘Just put your heart in your cooking’.” What is it like working in the kitchens at Lao? “I dedicate all my passion to Lao and often consider it my own restaurant. The team and their enthusiasm is what makes it successful. With most of them being Vietnamese, we are able to create a truly authentic dining experience for our guests.”

70

CONC_UAE_JAN19_CHEF_INTERVIEW.indd 70

What is the primary philosophy followed at Lao? “It’s all about heartfelt cooking. This is what I tell my team every day before we begin daily operations. We also use freshly sourced ingredients from our organic gardens, as well as local suppliers. The key is fusing traditional cooking techniques with modern presentations.”

2

“The dishes we offer promote Vietnamese food as one of the healthiest cuisines in the world” Considering the competition in the UAE when it comes to Asian cuisine, how does Lao stay ahead of the game? “We are one of the most authentic Vietnamese restaurants in Dubai. The dishes we offer promote Vietnamese food as one of the healthiest cuisines in the world. We do not use too much oil and spice. In fact, the focus is on fresh herbs and vegetables and our guests love this. We can also personalise dishes according to their preferences because it’s all about creating unforgettable experiences that will remain with them for a lifetime.” 3

What is the best part about being a chef? “The act of cooking and presenting food feels like creating art and sharing it with the world. At Waldorf Astoria Dubai Palm Jumeirah, I launched a bespoke cooking class, which is tailored to every participant’s preferences. It’s an interactive and intimate experience that begins at our hotel’s organic gardens, where we pick out fresh ingredients. We then head to the kitchen at Lao, where we cook authentic Vietnamese dishes such as sea bass and grilled banana. We’ve always received a positive response from our guests and this makes me feel very happy and rewarded.” What would you consider the best meal you’ve ever had? “The best meal I’ve ever had was fried spring rolls cooked by my children on their first visit to Dubai to celebrate Tet, which is the Vietnamese New Year. The intimate family atmosphere made the whole experience a memorable moment and this is the very feeling we strive to create for guests visiting Lao.” When you’re not behind the scenes at Lao, do you enjoy cooking at home? What’s your go-to dish? “I enjoy cooking for my loved ones at home, which often brings me to the local markets in search of fresh vegetables and meat. I love cooking rice, boiled vegetables and stewed meat with eggs, which is a traditional Vietnamese dish and a favourite of my family.” For reservations or more information  04 8182222 or  dxbpd.restaurants@waldorfastoria.com

Venue with a view —— On our recent visit to Karma Kafé, we discovered why this award-winning hotspot is more than just Asian dining at its best but also one of the top spots in Souk Al Bahar for mesmerising views of The Dubai Fountain

The spectacular sight of The Dubai Fountain against the backdrop of the majestic Burj Khalifa never gets old. There’s something incredibly spellbinding about watching the fountains dance to different rhythms and you can easily spend an entire evening taking it all in. And we believe one of the best ways to do so, is booking an outdoor table at Souk Al Bahar hotspot Karma Kafé. This pan-Asian restaurant makes the most of its location, offering magical views of several Dubai icons. Karma Kafé’s interiors is equally inviting, with an expansive bar taking centre stage. Dark, sleek touches in the décor are instantly attention-grabbing and add to the venue’s charm – think deep red walls, plush black leather booths, teak furniture and low-intensity mood lighting. You’ll also find artistic elements scattered throughout the venue, from gilded Chinese symbols and birdcages to a majestic Buddha statue, they all nod to its Asian roots. Be it date night or an evening with friends, Karma Kafé’s chic ambience lends itself to every occasion. And considering, the restaurant is only a stone’s throw away from The Dubai Mall, there’s a constant buzz in the air no matter when you visit. When it comes to Far East dining in the city, the options could easily overwhelm even the most discerning diner. Yet when nothing less than extraordinary will do, Karma Kafé proves itself as the obvious choice for a memorable night out. Karma Kafé

12-spiced crispy calamari

Executive assistant chef Eric Jung

With an extensive and enticing menu, the venue takes you on a culinary journey across Asia offering some show-stopping highlights along the way – think everything from sushi, sashimi and maki rolls to crispy duck and classic wok dishes. Finding ourselves spoilt for choice during our visit, we allow our server to call the shots for the evening, eager to try the most recommended items on the menu. The first to arrive on our table is the Asian chicken salad. A delectable blend of five-spiced grilled chicken, Chinese cabbage, red cabbage and green beans topped with a tangy sesame mustard dressing, the dish is a great choice if you’re looking to keep things light without compromising on flavour. Next up is the Philadelphia maki rolls – a classic blend of smoked salmon, cucumber, avocado and cream cheese – you can taste the creaminess in every bite.

There’s something incredibly spellbinding about watching the fountains dance

Karma Kafé terrace

Whether you’re a fan of heat or not, the 12-spiced crispy calamari is a real treat. And feel free to ask your server to go easy on the chillies if you’re not feeling too adventurous. Served with coriander, mustard aioli and topped with red and green chillies, the freshness and flavour of the calamari is spot on and easily the highlight of our evening. Now if there’s one thing you ought to know before your visit, it’s that Karma Kafé believes in generous portions, so by the time we get to our mains, we decide sharing may be the best way to go. We opted for the USDA prime striploin. Seared to a perfect crisp on the outside and juicy on the inside, the dish is served with garlic cream and truffle

The venue takes you on a culinary journey across Asia, offering some showstopping highlights miso, which further enhances the flavour of the tender meat. For sides, we stick with classic mashed potatoes, flavoured with miso for that Asian twist and irresistible roasted sweet potatoes, finished with truffle. Karma Kafé also adds a spin to their dessert menu by infusing a bit of Asian culinary magic into traditional sweet treats. We find ourselves tempted by the lemongrass crème brûlée and our meal truly couldn’t have ended on a better note. Comforting hints of lemongrass add a wonderful freshness and fragrance. We savour every bite, lingering to enjoy The Dubai Fountain show. Philadelphia maki rolls

Book your paramotor flight now with Skydive Dubai via myconcierge.com for AED1,050. Departing from Dubai Marina, your pilot gradually ascends over the landscape, all the way up to 500 metres in this part kite, part jet, part parachute-like flying machine, that offers amazing views across JBR and Palm Jumeirah. myco.ae/paramotor

Dubai… where do I even begin? Futuristic and fast-paced, I think it’s the most exciting city for anyone to make a life in. Thanks to the many opportunities the emirates provide, I was able to take my passion for jewellery design to the next level and build my own business from scratch. Known for its love of fashion and design, Dubai has helped me stay up to date with the latest trends – offering plenty of inspiration for my collections of beaded bracelets and necklaces. But there’s so much more this city has to offer. It’s a wonderful melting pot, where you get to engage with people from different cultural backgrounds and mindsets. It broadens your view and gives you a whole new perspective on life. It’s such a great learning experience. The more I interact with people around me, the more it inspires my work. The city is booming, constantly adapting itself to western inf luences, while also maintaining its ethnic identity. And this dynamic backdrop offers plenty to explore, whether you’re a resident or visitor. The weather in Dubai at this time of year is perfect to go out and about discovering the city. From the huge malls to the many international restaurants, you will never run out of options for things to do. One of my favourite winter activities is strolling along the city’s many beachfront areas. Not only do you get to enjoy the beautiful view, but these hotspots are also packed with entertainment. The new La Mer seaside destination, for instance, makes for a wonderful day out with friends and family, offering plenty of shopping and dining options along the shore. With the number of islands dotted along the Arabian Gulf, there are plenty of beachside getaway destinations to enjoy, too. I recently visited Zaya Nurai Island in Abu Dhabi and it was an absolute dream. Talk about luxury by the beach! The number of options to dine out can easily overwhelm even the most selective foodie but for me Italian restaurants Roberto’s in DIFC and Luigia in Rixos Premium Dubai remain my favourites. Both have a splendid selection of dishes. And while it’s tough to run out of things to do in Dubai (there is never a dull day), one of the most important things I suggest to everyone who visits, is to try and connect with the locals and truly understand the history and heritage of the UAE.
