Quoz Arts Fest 2020
Quoz Arts Fest returns to Alserkal Avenue this month on January 24 and 25. The eighth edition of the annual event will once again see the creative community out in full force. The free-to-attend, two-day showcase features a packed line-up of design workshops, music performances, guided walks and interactive installations. Last year’s event focused on sustainability. Under the theme ‘CTRL+ALT+ACTION’, workshops, talks and exhibitions were organised to inspire visitors to embrace change towards a better future. This year, the fair will offer a diverse arts programme under the theme ‘In Search Of...’. Expected to be the largest to date, visitors can enjoy art exhibitions, live music concerts, pop-up performances, international delights served up at the venue’s food trucks, outdoor installations and film screenings.
What you can expect Al Quoz, previously thought of as something of a Bermuda Triangle among Dubai dwellers, thanks to its maze of indistinct warehouses and similar-looking streets, is now one of the city’s most up-and-coming quarters. A complete contrast to the emirate’s more well-known luxury offering, Al Quoz’s charm lies in its back-tobasics approach and industrial façades – making it the perfect neighbourhood for Alserkal Avenue’s creative vision. The brainchild of Dubai-born Abdelmonem bin Eisa Alserkal, the art district was conceived by combining his passion for the arts and his love of real estate development. Since its humble beginnings in 2007, Alserkal Avenue continues to expand at an impressive rate and in a number of awe-inspiring ways. Growing with the city’s cultural community, the original layout that once featured 20 warehouses now stretches across 500,000 square feet. Not only is it home to a host of emerging and established galleries, but Alserkal Avenue has also become synonymous with homegrown cultural initiatives and inventive public spaces. The neighbourhood is now a place where everything from foreign cinema to live music, comedy and painting live harmoniously side by side in a year-round venue for creative buffs. Another popular spot in the neighbourhood is The Fridge, operated as a talent management agency that works with a diverse range of musicians and performers. Concierge meets Tara Young, the resident artistic director of La Perle by Dragone, to talk about the visionary show
Watching La Perle by Dragone is a visual feast, an experience that almost defies explanation – even if you’re running the show from behind the scenes like resident artistic director Tara Young. When the bubbly Broadway alum is asked how she would describe Dubai’s first resident show, she says: “The best way I can put it into words is not to describe the story, but to describe how it makes me feel. I experience huge amounts of joy. I experience sadness and a sense of loss. I feel quite a bit of fear and excitement, too. In the end, what I ultimately feel is a huge sense of celebration, love and unity with all.” It’s a big statement to make but La Perle by Dragone is a big show in every way. The creation of Franco Dragone, the man credited with the meteoric success of Cirque du Soleil, the performance takes place in a striking purpose-built theatre in Al Habtoor City. It’s an impressive 10-storey-high space with a special aqua stage that fills and empties with an estimated 2.7 million litres of water throughout the show, into a pool that forms the centrepiece of the theatre and the basis for some jaw-dropping stunts. The theatre seats 1,300 people and is designed to offer each person an unobstructed view of the action on stage.

“What’s really interesting is that when you watch the show from a different seat, you’ll actually experience it differently,” says Young. “The seating arrangements of the theatre really offer a wealth of different perspectives, both literally and figuratively. That’s really a gift to the audience member. Because with a lot of shows, once you’ve seen them, there’s not really a need to see them again, but La Perle by Dragone is so unique, every time you watch the show, you get something new. “I feel like this show is alive and it’s magical, it has a heartbeat and it’s always changing like heartbeats do. That’s what you get with live theatre and it’s wonderful.”

Young knows a thing or two about live theatre, having been in the performing arts for most of her life. By the time she was 30, she had already worked on almost a dozen Broadway shows including a stint with Liza Minnelli in Radio City Music Hall in New York. She later moved to more of a directorial role, eventually working with Franco Dragone in 2014 on a show in China. When it came time for Dragone to bring his vision of Dubai’s unique resident theatre show to life, Young was a natural fit. Today, she oversees a cast of 65 of the world’s best artists from 23 countries and is in awe of their skills and dedication. During the course of the show, you’ll see them perform some unbelievable stunts, from aerial tricks on harnesses to gravity-defying acrobatics with performers even diving into the stage pool from 25 metres high. The show also involves plenty of dance, theatre and even comedy. “These performers work so hard and they are always trying to improve and get better every day,” says Young. She adds: “It’s impossible for me to pick a favourite part of the show because it changes every day. Sometimes it’s watching someone learn a new trick. Sometimes it’s seeing an audience member react to a scene in a new way.” Ultimately, Young loves to see the effect that La Perle by Dragone has on its audience. “Every day is a surprise and I never get tired of that. I could never say that I’m bored at my job.”

The emirate will pull out all the stops with the launch of new architectural wonders The icon stands tall at a record height of 250 metres on the manmade island of Bluewaters and is already more than 80 metres taller than the current record holder, the High Roller in Las Vegas. It is also almost double the height of The London Eye, which stands at just 135 metres. Meanwhile, on Sheikh Zayed Road, the on-going construction of what looks like a giant eye has already caught the world’s attention. Set to open later this year, the Museum of the Future will serve as a hub for innovation and a testbed for emerging technologies. Upon completion, the sleek and stylish structure will stand encased in stainless steel and adorned with Arabic calligraphy. But the experiences waiting inside will be far from a typical visit to the museum. Three of the seven floors of the museum will be dedicated to immersive experiences that will showcase life in the future with a focus on several sectors, including government services, healthcare and food security. In keeping with the need of our times, the severity of climate change will feature heavily, with displays highlighting what the world might look like if carbon emissions are not curbed.
A short drive from the museum, the Mohammed bin Rashid Library in Al Mamzar is almost complete, and when it opens its doors, it will become the biggest library in the region with over 4.5 million books. The sevenstorey structure is equally remarkable. Its design resembles an open book sitting on a traditional lectern which holds the Quran. Across the creek, the Dubai Creek Tower will see the city defeat its own world record of being home to the world’s tallest building – Burj Khalifa. The star attraction of the six-kilometre-long Dubai Creek Harbour project, which is also expected to complete in 2020, the tower will feature the world’s highest observation deck offering 360-degree views of the landscape. Designed by renowned Spanish architect Santiago Calatrava, its structure is inf luenced by the natural forms of the lily and evokes the shape of a minaret, a distinctive architectural feature in Islamic culture. Further down to the city’s historic quarters, Deira District will add 40 kilometres to Dubai’s coastline, including 21 kilometres of beachfront. Comprising four man-made islands, it will be home to several hotels, resorts, residential communities, a shopping mall and a large amphitheatre that will accommodate 30,000 people. With glorious views across the city, the location is set to become the newest must-visit destination in Dubai. The development will also house the world’s largest night market with the Deira Islands Night Souk. Visitors can wander the maze of streets with more than 5,300 quayside shops, restaurants and cafés to choose from when it opens. The space will stretch 1.9 kilometres along the waterfront and will evoke the setting of a contemporary take on a traditional Arabian souk, offering a blend of old and new. Another mega-development, already in its soft opening phase, Jewel of the Creek brings a new experience in entertainment to the city as a one-stop shop for everything from dining to retail. Located between Al Maktoum and Floating bridges, the Jewel of the Creek project sprawls over 125,675 square metres. It includes hotels and residential towers, in addition to a man-made lake, a waterfront promenade and marina for 65 berths.

A tribute to the past —— Harking back to its seafaring heritage, Parisian watch maison Breguet raises the curtain on a new maritime collection
Few can rival the watchmaking heritage of the house of Breguet. One of the most impactful horological brands, its founder Abraham-Louis Breguet made his mark through innovative designs, which have now become an enduring legacy of style and practicality. In the 18th and 19th centuries, Breguet pioneered many of the techniques still used in watchmaking today. The brand’s inventions, such as the shock protection system – popularly known as the parechute – and the tourbillon, propelled the French house into the annals of watchmaking history. The story began in 1775, when the master watchmaker opened his first workshop in Paris. Thanks to his unique expertise, his splendid creations quickly caught the attention of Parisian high society and the French Royal Court. The maison’s pieces were savoured by French general Napoleon Bonaparte, who had several Breguet watches in his private collection, serving the dual purpose of practicality while on his military campaigns as well as a show of wealth and refinement among his aristocratic peers. Breguet’s collections also became a favourite among the likes of King Louis XVI and Queen Marie Antoinette. One of Breguet’s most famous pocket watches of all time, the Grand Complication, was commissioned for Queen Marie Antoinette by a secret admirer. It was ordered to incorporate the fullest range of horological expertise possible with no expense spared. An extravagance of the highest level, the order stipulated that wherever possible, gold should replace other metals and that auxiliary mechanisms should be as numerous and varied as possible. So complex, it took a total of 44 years to complete and sadly, outlived its creator and the queen herself, for whom it was made.

Although she did not live to see the piece, it was a work of art in its own right. The automatic pocket watch was wound by a platinum oscillating weight and equipped with a minute repeater, a perpetual calendar displaying the day of the week, date, month and leap-year cycle, equation of time, power reserve display, metal thermometer, independent central second hand for a stopwatch function and a small second hand. The turn of the 18th century was a rich time for navy seafaring. The wealth and security of a nation largely came to be linked to its marine power. When John Harrison invented the chronometer in 1761, Breguet understood its importance as an indispensable tool for oceanic exploration as it could determine the position of ships at sea. He, therefore, spent most of the brand’s formative years on developing and fine-tuning these instruments, resulting in Breguet’s 1815 appointment as the official chronometer supplier to the French Royal Navy. But it was not only the chronometer that won him the most prestigious title to which a French horologist could only aspire to at that time. Many of the most important facets of modern horology were either invented or heavily influenced by Breguet himself, who some even call the Leonardo Da Vinci of watchmaking. From the equation of time and the minute repeater to the ‘perpetuelle’ watch, which would wind itself without the aid of a key or any other external tool, there were several significant contributions inspired by this man’s genius.

Breguet also helmed the creation of the brand’s moon tip watch hands, now recognised as the Breguet hands. At the time, the hands of a watch were often short, broad and heavily decorated, making it difficult to read the dial. To begin with, he used gold hands until about 1783. Then, he invented a type of hand that was refreshingly new. Made of gold or blue steel and resembling a hollow apple or crescent moon, the ends of the hands were cut out in eccentric fashion. Its elegance was well received and the new shape became an immediate success. In the decades that followed, Breguet became a horological authority amongst geometers, astronomers and seafarers, known for accurately calculating longitudes at sea. In 1840, a Breguet instrument became the first timepiece to reach the Antarctic on the expedition led by French explorer Jules Dumont d’Urville. Subsequently, the brand designed a number of outstanding marine chronometers. They were mounted on special mahogany or walnut wood boxes and featured a gimbal suspension system that kept them levelled. Today, traces of the distinctive look of the watchmaker’s early maritime instruments can still be found in the newly launched, appropriately named Marine by Breguet collection. Every piece nods towards the inextricable link the house shares with the seafaring world, which has been a constant theme for nearly two centuries. There’s always something exciting cooking up at Fairmont Dubai. Nestled in the heart of the emirate’s bustling Trade Centre district, the hotel is home to an array of culinary concepts championing flavours from around the world. From dining in pitch dark settings at Noire, where you can rely only on the senses of smell and taste, to steakhouse specialities at The Exchange Grill, every taste is catered for. Working behind the scenes to deliver a great culinary experience is sous chef Abdallah Alsallak. With 10 years of experience at the age of 27, he’s one of the city’s youngest chefs to carve a name on Dubai’s dining scene. Read on as he discusses inspirations, new menus and culinary philosophies. How did you discover your passion for cooking? “I come from a large Jordanian family, where we all enjoy cooking. In fact, three of my uncles were chefs, but my earliest memories in the kitchen are with my mother. She taught me how to cook. Hailing from the region, Middle Eastern cuisine was her speciality and she frequently made spinach pie, kibbeh and hot mezze. That’s how I developed a keen interest in Arabic food. Eventually, at all our family gatherings, I was made responsible for everything traditional on the table, from mezze to mixed grills.” So did you always know you wanted to pursue cooking? “With so many chefs in the family, during the summer holidays, I had the chance to train at the finest hotels and restaurants in Amman from a very young age. This inspired me to pursue my interests. The more I practised, the more I wanted to learn about different cuisines. This brought me to Dubai, where I’ve been fortunate to work with a multicultural team, developing my skills and gaining invaluable experience along the way.” You’re one of Dubai’s youngest renowned chefs at 27 with 10 years of experience under your belt. How does that feel? “I do feel very proud of myself, but the achievements haven’t come easily. It’s all a result of 14 to 16-hour workdays to learn as much as possible and develop my skills further. But at the end of the day, it doesn’t matter whether one is an 18-year-old high school graduate or an experienced sous chef with a 10-year career behind him. There is always something new to learn and improve upon every day.” How do your Jordanian roots influence your culinary style? “While creating a menu or a new dish, I always turn to the traditional cooking techniques that I learnt from my mother. Using fresh, local ingredients to keep it authentic is very important. It helps to give every dish that homemade touch.”

“All our efforts are currently geared towards developing a range of healthy recipes” With tough competition on Dubai’s dining scene, do you think the sheer variety of international cuisines often overshadows local specialities? “Middle Eastern food in its nature is fresh, wholesome and rich in flavour. As Dubai is a multicultural hub, I’ve found that visitors are keen to try authentic specialities, especially if it’s their first time in the city. Therefore, despite the inf lux of international cuisines, I am confident that Arabic food will always be cherished and enjoyed by residents and tourists alike.” So how does Fairmont Dubai stand out from the crowd with its culinary offering? “Since Fairmont Dubai opened in 2002, it has carved a niche for itself in the emirate, thanks to its diverse food and beverage offering. We have 12 distinct venues at the hotel and what sets us apart is our ability to keep enhancing the experience for every guest. We’ve always aimed to create a sense of belonging for our guests and we’ve achieved this by making the quality of our dishes, and the dining experience in general, a top priority.” What does a typical day at the hotel look like for you? “My day usually begins at 7:30am. I lead a team of 30 chefs and my first task is to ensure that there is sufficient manpower in place to accomplish everything on our agenda. The key is to plan the day in a way that ensures that the most urgent work gets done first. Part of my responsibility is to also make sure that all food items in the inventory, including fruits, vegetables and condiments, are fresh. I am tasked with cooking speciality dishes and creating unique items to pique diners’ curiosities and keep them returning to our outlets. I am also responsible for developing new menus and choosing ingredients depending on their seasonal availability.”

What inspires the culinary philosophy at Fairmont Dubai? “Teamwork is the key to success. Not only are we able to do a lot more when we work together as a team, but we can also achieve greater success and better results. Great chefs are the ones who share their knowledge and coach their teams. A few decades ago, it was common amongst chefs to protect their methods and recipes from others. Today, we know that an important part of our job is to share our knowledge and take on the role of a mentor, helping others develop their own careers.” It’s the New Year. Healthy eating is on almost everybody’s list of resolutions. How do you stay on top of this trend? “This year, our priority is to include a lot more healthy ingredients to the dishes that we prepare. All our efforts are currently geared towards developing a range of healthy recipes, which taste great, are visually appealing and pack a lot of nutrition. We are also crafting a new and healthier menu for coffee breaks, including gluten-free and vegan items. In line with the growing trend of plant-based eating, we have also launched a new plant-based burger called the beyond burger, which is available in two of our restaurants and our guests already love it. While a tuk-tuk will take you around in 20 minutes, the most interesting way to explore is either on foot or by bicycle, pounding around the uneven roads, running up the hills between sites and exploring the lesser trodden paths.

Floating village on Tonle Sap lake
We set out on our morning adventure at 5am to beat the daunting crowds. Against the backdrop of the rising sun and the pinkorange sky, the silhouetted temples looked sublime. We covered around 17 kilometres through the complex, visiting the major temples that sit on this UNESCO World Heritage Site. The temples of Angkor Wat, Angkor Thom and Ta Prohm, made famous by the movie Tomb Raider, are popular among tourists, but they are just a handful among more than 70 others dotted around the old city. Many are tucked away on hilltops with ancient carvings, sculptures and spectacular views. As these are lesser explored, they make for wonderful spots to find tranquillity away from the crowds. If you’re not sure where to begin, Siem Reap expatriate Jay Sapphire, an Australian runner in the region, organises private trips and offers some fascinating local insights not available elsewhere. Our second day in Cambodia took us to one of the smallest floating villages in the country. With just 300 homes in Mechrey, it offers calm amidst the chaos of Siem Reap and showcases the unique way of life that prevails in these water communities. Our local tour guides suggested a kayaking expedition through the village for an up-close glimpse into this neighbourhood that highlights the simplicity of life on the water.
It was fascinating to learn how those living on the lake build their own mobile raft homes with bamboo and oil barrels, and rely on solar-powered car batteries for electricity. During the dry season, they move upstream and return back by monsoon. Once we cleared the village, we headed towards the north of Tonle Sap lake that opens out to an expanse of green. The lake is truly magnificent and extraordinarily peaceful, providing a magical experience for those looking to get in sync with nature. It’s also remarkably calm so it makes for the perfect place to kayak without battling currents. Closer to sundown, we hopped onto a local dhow boat in the village with our tour guide, where snacks and drinks were served at sunset. It’s amazing how even on rainy days in Siem Reap, watching the sunset is awe-inspiring. When in Cambodia, it’s worth waking up before sunrise to catch some of the city’s most impressive sites. The following morning at 5am, we started on our cycles to see lotus f lower fields dotted around the surrounding villages.

Beginning our journey from the nearest hilltop to catch the sun creeping up from below the horizon, we watched the sleepy town come to life. Then, continuing on our journey, we rode close to 24 kilometres for roughly an hour to get to the magnificent lotus fields. The ride, which was mostly through f lat terrain, unlike other villages along Cambodia’s tired roads, was a wonderful way to experience life away from the buzz. If you prefer something closer to the city, several lotus farms are operational and you’ll also find lotus ponds near Angkor. Besides being simply beautiful, the flower also has a special meaning for the Cambodian people and is considered sacred. According to locals, it symbolises enlightenment, purity and creativity. The next stop on our packed itinerary involved a bit of retail therapy in Kandal Village. With its busy winding streets and French colonial-inspired architecture, it has become Siem Reap’s boutique capital. A beautiful place to wander with plenty of stops to refuel with local treats at quaint cafés, the town is dotted with around 30 shops, selling everything from handcrafted jewellery to spices. The once-sleepy town is now slowly gaining international recognition as a hub for homegrown designers and artisans. Designer Sirivan Chak-Dumas runs her own clothing boutique, Maison Sirivan, in Kandal Village. She is one of several Cambodian designers who trained in France and has now returned to help promote the local market.
Many others are also supporting local enterprise. The Soieries du Mekong has around 70 rural Cambodian women who use traditional looming techniques to weave silk scarves in a process that takes more than 16 hours. Each weaver’s portrait appears on the tag. Other favourites include Garden of Desire, a beautiful jewellery boutique owned by designer Ly Pisith, who uses local sandstone as the basis of his collection. There is a burgeoning art scene in Siem Reap, a total 180-degree shift from the harsh times of the Khmer Rouge rule, when art, music and performance were banned. We had the chance to check out Tribe by the river (which also doubles as a café), Open Studio Cambodia, Theam’s House, Mirage Contemporary Art Space and Batia Sarem Gallery. Expressions of colour and culture abound in the galleries, with everything from paintings to sculpture, modern art to high tech installations. The performing arts are also slowly gaining impetus on Cambodia’s creative scene. Siem Reap’s answer to Cirque du Soleil, Phare Ponleu Selpak is so much more than a conventional circus. While the emphasis is on entertainment, every production highlights a subtle yet striking social message and makes for a must-see when in the city. This humble 450-seat big top started as a few plastic seats in a small corner of Siem Reap. Today, it is one of the most popular tourist attractions in town.

With so much to offer, it’s easy to understand why a trip here should be savoured The performers come from a multidisciplinary arts school, which was started in the wake of the civil war to offer art therapy to war victims. The young circus artists perform daredevil stunts, from aerial feats to acrobatics, across four shows performed in rotation. Give yourself time before or after the show to browse the boutique which supports its artists and others in the community, and spend some time in the garden to enjoy a bite to eat. The stunning scenery aside, what makes a trip to Cambodia an experience of a lifetime is the friendly local encounters. And during our last morning, we had the chance to learn more about life in Cambodia at Tang Mouy Coffee. The café started as a humble street hut on Makara Road back in 1986, and has become the go-to spot for coffee lovers in the city. Owner Tang visits the café every morning at 4am to roast the beans on the fire himself and to chat with customers. Gathered from Cambodia’s Mondulikri Mountains, Laos and Vietnam, the coffee gets its robust flavour from Tang’s very own roasting method. He explained the intricate process to us, highlighting that just a few seconds’ delay can ruin the whole batch. He roasts more than a tonne of coffee beans every month, and luckily, you can buy your own to take some home with you, either already grounded or as whole beans. When in Siem Reap, make the café a must-visit on your list, where you can pull up a seat opposite the temple and watch the world go by.

Whenever I go to a new place, a certain kind of anxiety kicks in, especially when I travel alone. But Dubai has been different. I haven’t had this feeling here because the people are so helpful, going out of their way to assist this Dubai newbie. I visited the emirate for a brief period in the past but only this time have I had the chance to truly take it all in. I simply love how so many nationalities blend beautifully together. Since I started at Q’s Bar and Lounge, Palazzo Versace Dubai as the newest resident singer, I’ve met several people from around the world. It’s incredible how music brings everyone together. I feel fortunate to entertain crowds who come from all over for a fun night out. Music has always been part of my DNA. I was born into a family of musicians in Tenerife, Spain and spent my childhood singing with my father and my brothers. I studied jazz for 11 years and have had the chance to work with some of the world’s greatest performers, playing at the biggest house music festivals. It was while performing at one such festival that I got offered a three-month residency at Q’s Bar and Lounge in Dubai from Quincy Jones’ production team. I immediately said yes. It is a great opportunity to be performing at this splendid venue and showcasing my talent. I was surprised to see how receptive people are to Latin jazz, which is the genre we’re playing at Q’s. People love good quality music and they appreciate our creative renditions. It’s so amazing to see them applaud, cheer, dance and sing along. I’m equally excited about the chance I’ve been given to experience a whole new culture in Dubai, especially during the city’s ideal winter weather. My free time sees me out and about in Dubai exploring the city’s many attractions, including Burj Khalifa, Dubai Marina, Old Dubai, Dubai Creek, the souks, the beaches and Dubai Frame. But there’s still a lot more on my list. I can’t wait to visit the other emirates. I’ve heard that Fujairah and Ras Al Khaimah have some of the country’s most beautiful beaches.
