Study shows vaccination impact on covid deaths A study by the Valencian government has indicated that the vaccine has slowed down the sixth wave of covid with 90% fewer deaths. the study also demonstrated that non-immunized people have twice the risk of being hospitalized in an intensive care Unit and that the risk of death is three times greater without inoculation. the study, undertaken by the General directorate of Analysis and Public Policies of the Generalitat Valenciana

showed that vaccination against the coronavirus has reduced the number of hospitalisations and icU admissions by 75% and deaths by 90%. the results of the study were presented to government on Saturday and show that the number of cases requiring hospitalisation has changed dramatically under the vaccine rollout in the community. According to the study, “people with coVid-19 who are not vaccinated or

have incomplete vaccination suffer twice the risk of being hospitalized”. in addition, the risk of death is multiplied by three in the case of unvaccinated patients. Figures were gathered over the summer months when the vaccination programme in the Valencian community was at a very advanced stage. researchers compared figures to an earlier wave of covid, in early 2021, when most people were not yet vaccinated. the main conclusion, said researchers, is that the vaccines are proving to be very effective in terms of the severity of cases. All indicators of ‘severity’, such as hospitalization, icU admission and ultimately, death, show an indisputable decrease. researchers also noted that vaccinated people between 60 and 80 years of age have a risk of death that is 14 times lower than those in the same age group who are not vaccinated. in those over 30 years of age, the risk of hospitalization is 8 times lower for those who have been vaccinated. Given the data, the general director of Analysis and Public Policies of the Valencian Government, Ana berenguer,

remarked that “one of the main conclusions is that vaccines are proving to be very effective in reducing the severity of cases.” “Vaccines are undoubtedly the best tool we have in the fight against covid,” she concluded.

the Stroke Association Spain, located in benijófar, had a successful christmas Fair last week, raising €440 for the charity. there were a wide range of christmas goodies on offer including gifts and festive food and drinks. the charity supports stroke victims, providing a wide range of therapies and services. the 19th annual ‘carols in the Square’ took place on Friday night. Music was provided by the rbL concert band with vocal backing by crescendo choir. Singers Shani ormiston and Lucía performed a number of breathtaking good solo pieces while Stevie Spit got the crowd going and encouraged everyone to flex their festive vocal chords.

Long awaited medal ceremony for Maureen Payne and Stevie Spit

After a long wait due to covid restrictions, two local recipients of the british empire Medal finally got to have their ‘day out’. british Ambassador to Spain hugh elliot, accompanied by the british consul in Alicante, Sarah Jane Morris, visited the costa blanca on thursday to attend two separate presentation ceremonies. the first, in the afternoon, was to Stevie Spit, who was recognised for his many years of charitable work for a number of organisations both in Spain and overseas. Stevie’s event was held at the emerald isle in La Florida and was attended by a whole host of friends and relatives, including his mother Pearl and nephew Jordan who flew in especially for the occasion. Stevie thanked his mum during

his speech, saying that her many years of voluntary work had been an inspiration to him. For his part, the Ambassador praised Stevie’s many charitable acts and said that he was especially impressed by his work in Afghanistan. Many of the charities helped over the years by Stevie were present at the event and once Stevie was presented with his medal, there was thunderous applause. Later, the Ambassador and consul attended another event, this time to present the medal to Maureen Payne. the ceremony, held at restaurante Villasalada in torrevieja, was also attended by the Mayor of torrevieja eduardo dolón, and the councillor for international relations, Gitte Lund. Maureen also received the british empire Medal in

recognition of her charitable work, serving more than a decade as president of Age concern. Maureen came to Spain in 2003 and has been dedicated to all aspects of the Age concern organization ever since and, after a stint as Vice President, she served as President in 2009, a position she continues to hold. Age concern has a team of over 150 volunteers who are dedicated to improving the lives of seniors by making home visits or providing friendship services and organizing free Spanish lessons for the local community. the british empire medal is awarded in recognition of meritorious military or civil service and its recipients are entitled to use the post-nominal letters “beM”.

More than 40 members attended a reindeer drive on Friday at the captains table in Punta Prima. the evening started off well with everyone having a good time. but then, the mild breeze that had prevailed outside decided to turn into a howling gale which, apart from the deafening row caused by the slaps of the canvas sides

of the staff and event organisers, the evening carried on to a pleasant conclusion. it was most certainly an entertaining evening and was accompanied by a good meal. earlier in the week, the U3A president was invited to visit the premises of the Stroke Association at benijofar to have a look at the rowing Machine that had been purchased using donations from torrevieja U3A charity fund. this machine will provide much needed assistance to sufferers of the after effects of a stroke and will make a huge difference.

the San Fulgencio town hall has organised a variety of activities for the christmas holidays. on the weekend of 18 and 19 december, the christmas Fair will begin, with musical performances, workshops and an ice rink. the councillor for culture, Ana María Villena, explained “We have organised activities for all ages at this christmas Fair, which will have all the appropriate health protocols and measures in place.” Specifically, on Saturday 18 december, visitors will be able to enjoy the ice rink, christmas photo call, the performance of the musical group Pin Pan Plum, craft workshops, children’s entertainment and a performance by the ballet and dance group ‘Musical Mecano’. on Sunday 19th there will also be an ice rink, scalextric track, youth and children’s workshops, a theatrical performance of ‘the hunchback of notre dame’. From 24 december onwards there will be a series of activities (pictured). Specifically, the Father christmas parade will take place on the 24th, starting at 17.30 in the town centre and at 18.00 in the urbanisation. on the

30th of december there will be a theatre performance ‘había una vez...’ (once upon a time...) with free admission. the Plaza de la constitución will host the ringing of the bells on 31st december, with a marquee and a performance by the group Amanecer. the three kings parade will take place on the 5th of January, at 17.00 hours in the urbanisation and at 18.00 hours in the town centre. the Mayor said “we have prepared these activities with the aim that the residents of San Fulgencio enjoy themselves, but also with caution as we have to take precautions so that everything goes well.”

C.L.A.R.O continues to No beach bars for Easter New walk-in vaccination fight for the Coast orihuela council has informed chiringuitos del Sol that it will not be authorised to continue to provide its service on the coast from 1st January, 2022 after the company requested a contract extension. the council has made it clear it will not be granting the extension, despite the fact that it falls within the legal framework of the contract. therefore, the beaches of orihuela costa will not have a beach bar service – nor will they have sunbeds, umbrellas or beach activities at easter, as there is insufficient time to award a new contract. c.L.A.r.o., the political party for orihuela costa since 2006, held its 15th General Assembly recently, its first since 2019. the outgoing executive committee presented a comprehensive report on activities carried out independently and in cooperation with its election partner cambiemos orihuela. the activities covered areas such as Saving cala Mosca from a massive planned urbanisation, aid to the services sector in orihuela costa, a second health centre, urgent improvements in sewage collection and treatment, a new contract for maintenance of all parks and gardens, the reception of urbanisations not yet receiving basic town hall services, improved street cleaning and rubbish removal and in particular safeguards for those living in Pau26 where a revamped centre for employees and vehicles engaged in street cleaning and rubbish removal is planned. c.L.A.r.o. was also active

in seeking the prompt opening of the nearly completed emergency Services centre with a 24 hour municipal police service. it was announced that prior to the municipal elections in May 2023 an extraordinary General Assembly will be held to decide the party’s participation in these elections with the expectation of interest by other parties in c.L.A.r.o’s proven capacity over the past four local elections to be the most voted party in orihuela costa with a solid base of some 1,000 votes each time. Antonio cerdan was voted President of the party in the election of a new 5-person executive committee, with huberto canovas as Secretary General, Alain Lager as treasurer and bob houliston and bob hunkin as members. the new committee maintains the balance of Spanish, british and a Scandinavian member representing the main population groups of orihuela costa

the drop-in Vaccination Point at Zenia boulevard last week was such a success that it will be returning this Saturday, 18th december. the decision was confirmed by the director of the shopping centre, cristina ros, to local media. She explained that after the success of the vaccination point last tuesday, 7th december, during which 945 doses were administered, the Ministry of health will once again install the free, walk-in vaccination point outside the Mango store.

Tree sculpture unveiled in Torrevieja torrevieja’s Plaza Waldo calero (the paved area between the fountain and restaurants behind the ‘hippy market’) has a new installation, unveiled earlier this week. A commemorative sculpture of a tree marks the 50th anniversary of the diego ramírez Pastor prize, an award which has been given every year for the last half century to honour a person or group who has made an outstanding contribution to the town. the striking sculpture was created by sculptor and master smith Alejandro cremades, and is an allegory made of iron and stainless steel measuring 2.8 meters high and 3.7 meters wide. each of its leaves represents one of the winners in the last 50 years. it is a ‘living sculpture’, in that it will be possible to add a leaf with the new winner of each year. he inauguration of the sculpture was attended by the mayor of torrevieja, eduardo dolón; the councillor for

culture, Antonio Quesada; the secretary of the “diego ramírez Pastor” Award, Gema Mateo; the Queen of Salt Victoria Magoñ rodríguez, and her ladies in

waiting Gómez rivero and Marta Mesa Vizcaíno, as well as several of the winners from the last half century of existence of the award.

Potential smoking ban has bars up in arms Seven of the 17 antonomous communities across Spain, including communidad de Valencia, adopted to stop smoking on terraces as part of the battle against the spread of covid. this ‘terrazas Sin humo’ prohibits customers from smoking on the outdoor terraces of bars and restaurants. however, now the national government is drawing up an anti-tobacco law, which would see this measure,

amongst others, permanently introduced across the country. the announcement has already received a sharp backlash from the hospitality industry, which is still struggling from the on-going covid measures. they feel that many holiday–makers chose to come to Spain because they can sit outside and smoke at their table and the weather makes this an enjoyable experience. the president of the hospitality industry of Spain, Jose Yzuel,

called the plan ‘stupid’ and said that business owners should be able to make the choice as to whether not they decide to keep the no smoking rule. the measure to ban smoking on terraces is just one of a raft of rules being considered by the Ministry of health. the plans also include prohibiting smoking in private cars, making tobacco packaging generic, restricting the use of e-cigarettes and raising taxes across all tobacco products.

Alicante researchers turn to crowdfunding for ALS study researchers in Alicante have turned to crowdfunding to save a promising clinical trial for ALS. ALS stands for amyotrophic lateral sclerosis which is a progressive nervous system disease that affects nerve cells in the brain and spinal cord, the General hospital of Alicante and the institute of neurosciences jointly developed the study, which aims to slow the progression of the disease with stem cells. the continuity of the study is currently at risk due to lack of funds the promising clinical trial is testing whether the use of stem cells in patients with Amyotrophic Lateral Sclerosis (ALS) helps to stop the degeneration of the muscles and therefore stops the advance of this devastating disease. the need for funds is so dire that the researchers are going to launch a crowdfunding campaign to raise the 100,000 euros they need to complete the trial. the study started in May and the first 19 patients have already been treated. the initial objective was to apply this therapy to a hundred patients in order to see if there are significant results. the problem “is that we only have funds left to reach 21,” laments Salvador

Martínez, a researcher at the institute of neurosciences and one of those responsible for the trial. Getting the funding to run this trial so far has been quite a challenge, revealed researchers. “two years ago the carlos iii institute financed the project for us, but only half,” explained Salvador Martínez. by cutting costs, it was possible to leave the investigation at 400,000 euros, “but we still lacked 100,000 to

be able to treat the hundred patients we want.” Still, the researchers decided to start the study, hoping to get this missing money from associations or private entities. but throughout these months all efforts have been in vain. “We have been knocking door to door to many places, but we have not obtained more funding.” in this situation, the continuity of the trial is at serious risk. “We

cannot recruit more patients. the trial costs about 1,500 euros per person and although the patients, who come from all over Spain, usually bear all the travel and living expenses, the money is necessary to pay the health personnel who participate in it.” researchers have high hopes for the study. in a previous trial, carried out with 20 patients, intramuscular cell therapy showed an improvement in patients, “but these results must be confirmed with an even larger trial, a phase in which we are now,” added Martínez. As a last ditch effort to save the study, researchers are planning to launch a crowdfunding campaign in order to be able to continue. they explained the need to continue the study because “if it stops, restarting it later would be very difficult.” the trial is a so-called “double blind” trial. of the 100 patients who participate, 80% receive the experimental treatment and 20% a placebo. neither the patient nor the doctor know which patients have received therapy and which have not, so that the improvement they may experience is as objective as possible and not the result of the suggestion of the patient or the researcher.

Archaeological dig at Eras de la Sal unveils elements from 1700s An archaeological excavation of the eras de la Sal in torrevieja has revealed what could be part of the original structure, which dates back to the 1770s. A study of the subsoil of the historical site has uncovered elements that experts believe could be part of the old salt works. Archaeologists have discovered numerous remains of buildings - walls, structures and paving - belonging to the industrial salt storage and transport facility that gave rise to the creation of the city that is now torrevieja at the end of the 18th century. the company Arpa Patrimonio, hired by the town hall, began to undertake archaeological excavation work more than a month ago, during which it has found significant remains in practically all the areas they searched. the firm, specialized in field research, has

not disclosed the full details of what it has discovered but at a later stage, the town hall will reveal the full characteristics of the findings. So far it is believed that the original flooring of the ancient salt works appears to be still intact. Another striking element is found under the area where the local buses usually stop – here, several walls appear to converge at the base of a polygonal structure which could be an old tower or a deposit. it is not yet known if the findings will interfere with the planned works to reform the eras de la Sal into an open air auditorium for the celebration of the world famous habaneras singing contest and a Sea and Salt Museum. Local government, with the support of the Provincial council (Planifica program) and the Generalitat Valenciana, plans

to invest 7 million euros in the transformation of the site. the eras de la Sal has undergone substantial changes throughout its history. the 1829 earthquake caused serious damage to the site. then, between 1955 and 1970 many other parts of the facility disappeared due to abandonment. the local government has allocated 122,000 euros to this archaeological study - by far, the largest expenditure by the public treasury in an archaeological excavation in the history of the city. the excavation and future integration of the archaeological site is a requirement of the Ministry of culture if the municipality wants to receive the funds necessary to build the future Museum of the Sea and Salt on this historic site.

Covid vaccines for children Spain will begin to vaccinate children aged between five and 11 years old against covid-19 from 15th december. the country’s Public health commission has approved the inoculations among the under12s after the Pfizer-biontech vaccine for this age group was approved by the european Medicines Agency. the campaign will begin as soon as the first vials arrive in Spain, something that is due to happen next week. From there, the vaccines will be distributed among the country’s regions, which will be able to begin the vaccination process. in Spain, each of the 17 territories is in charge of its own healthcare systems, vaccination programs and coronavirus restrictions. it is not yet clear whether all regional governments in Spain will follow the same strategy, and whether this will involve GP appointments, mass vaccination in the same way as for adults this year, or whether children will have their injections at school – although as the winter term ends about a week before christmas, it is likely that only the younger age groups would be vaccinated between classes. the health Ministry is expecting to receive 3.2 million doses during december and January, which will be enough to administer a first shot to practically all children in Spain aged between five and 11, who

number 3.3 million. the second dose will be administered eight weeks later. experts believe that the biggest challenge will be convincing adults who refuse to be immunised to go ahead and have their jabs, and that where they are parents or guardians, to persuade them of the need to inoculate their kids. however, dr Ángel hernández-Merino, an expert from the Spanish Paediatrics Association says those adults who are the most reticent – or the most lax – about having vaccines themselves rarely fail to have their children jabbed. Secretary of State for health, Silvia calzón, said the incidence of covid contagion is highest among the non-vaccinated – adults who have not been immunised have a nine times greater mortality risk if they catch the condition, according to the medical community – and that the main age group currently affected by covid are

those who have children in primary school. the under-12s are the only age group not to be included in Spain’s ongoing vaccination campaign, and is also the group with the highest incidence of cases. After children, the groups with the highest incidence rate are the 30- to 50-yearolds, which coincides with the ages of most parents of these youngsters. over nine in 10 adults and children aged 12 and over in Spain have been fully immunised, with older age groups now getting appointments through for their booster jab. but kids who, until now, have been considered too young for the vaccine until conclusive evidence was obtained to show it would be effective and safe for them, are more likely to pass covid to their parents if they catch it, and their parents are more likely to be very ill with it, if they themselves are not immunised.

Spain returns to high-risk Spain is back at a “high risk” level in terms of the transmission of the coronavirus. According to the latest report from the central health Ministry. the 14-day cumulative incidence stands (at time of going to print) at 323 cases per 100,000 inhabitants. this is the first time that the figure has broken the 300-barrier since the ministry and the regional governments agreed on a new, more relaxed traffic light system to measure the impact of the pandemic. this sixth wave of the health crisis in Spain comes after a three-month period when the incidence was at a low- or medium-risk level. the region with the lowest incidence rate is Andalusia at 149. it is at its highest in navarra at 1,036. on Friday, the Valencian region reported 682 new cases in 24-hours with an incidence rateof 364 per 100,000. this is the third time that the

14-day incidence in Spain has passed the 300 mark. during the first wave, in the spring of 2020, the level was not reached due to the very limited testing capacity at the time. during the fourth wave, the incidence reached 235.6, on April 26. the record

was set on 29th January of this year, when the data point hit 899 during the third wave. other indicators, however, such as hospitalisations, are at a much better level than during previous waves thanks to the widespread vaccination coverage. this means that the global risk, taking into account

hospital occupation, is still medium. With more than 90 percent of the target population in Spain vaccinated, experts still predict that this sixth wave will be far less lethal than the others. computer modelling shows that infections will continue to rise for at least a couple of weeks, according to clara Prats, a researcher in computational biology at the catalan Polytechnic University (UPc). “beyond then it’s hard to make predictions,” she admits. the sevenday incidence continues to be considerably higher than half the 14-day indicator, suggesting a clearly rising trend. And this is without counting 6th and 8th december, which were national holidays in Spain and for which cases were not included. the reality of the situation is likely somewhat worse than is being reflected by the health Ministry reports.

Thieves steal Christmas decorations the San Miguel de Salinas city council has told how miserable thieves have stolen part of the decoration of the municipality’s christmas Fair. A spokesman explained that the lollipops which decorated the entrance to the fair have been taken.

the spokesman said: “this type of act makes us all very sad, we do not understand the motive or intention of this type of act.” the town hall is asking residents for help, to bring the culprits to justice. if anyone has information about the stolen

lollipops, they can send them a private message or contact the Local Police in the municipality where any information will be treated in strictest confidence. it is hoped someone will have enough information to recover the stolen items and return them to the christmas market.

GBP / EUR UPdatE GBP it was a more interesting week for sterling than its supporters might have preferred. on tuesday and Wednesday, it was at the back of the field, hit by political controversies and the reintroduction of working from home. on thursday, the pound rebounded to share the lead with the safe-haven Japanese yen. overall, sterling was the week’s weakest performer among the major currencies, falling by an average of 0.8% and losing ground to everything. Sterling had no problem with the UK economic data, at least until today. the purchasing managers’ indices for services and construction were convincingly positive. the services sector saw the “strongest increase in new work since June” while construction enjoyed the “fastest rise in construction output for four months.” the brc said retail sales in november were up by 5% from the same month last year. house prices increased by 8.2% on the year according to halifax, after rising for a fifth successive month, and the ricS house price balance was unchanged at a punchy 71%. the production data for october, released this Friday morning, were much softer than expected.

EURO A slight underperformance by the eUr cost it an average of 0.3% against the major currencies. it was unchanged against the USd and took two thirds of a cent off the GbP. the euro did little to shape its own destiny; its direction was mostly the result of the ebb and flow of risk-appetite, in which context the euro was seen as a relatively safe haven. that changing sentiment was driven, in turn, by the covid omicron narrative and by hopes and fears for the global impact of the imploding chinese property giant evergrande. the eurozone economic data did not make a great deal of difference to the currency, which was just as well because a couple of them looked quite ugly. German factory orders plunged 6.9% in october, supposedly because supply chain delays are discouraging potential buyers who see no point in ordering stuff that will take for ever to arrive. the Sentix index of eurozone investor confidence fell five points to 13.5 as a result of the covid omicron threat. A similar measure from ZeW was less gloomy, with a onepoint improvement to 26.8, though the reading for Germany alone fell two points to 29.9. the services and composite PMis were higher on the month, but not by as much as forecast.

Modern cctV systems can be monitored through mobile phone apps which allows people to view live footage of their house from anywhere they have internet coverage. Some systems provide motion detection so when movement is detected, an alert can be sent to a phone. Privacy laws in Spain are very restrictive. by law you cannot

record anyone’s property or the occupants of another property. When figuring out where you can point your cctV cameras, you must ensure signs are visible by everyone who can be seen by them. For example, if a camera is pointing outside of your property, then those it may capture should be able to see the signs. For maximum download speed buy a 5G compatible Smartphone. if you need 2 mobile phone numbers buy a dual SiM phone. buy a phone large enough to be able to easily read the text and purchase a cover that has front protection. Demands for VAT reduction in the fight against period poverty electoral coalition compromís has presented an amendment to the state budget to reduce vat on period products to 4%. the move is one of over 300 proposed amendments to the General State budget (PGe) presented by compromís, now under debate. According to compromís, period poverty is a real issue in terms of gender inequality that derives from economic poverty. it is estimated that around 21% of women in Spain are in a vulnerable economic situation and, therefore, more than 3 million women of childbearing age in Spain have difficulty accessing adequate menstrual hygiene products. Women spend an average of 40 years menstruating, once a month – 480 times in a lifetime. Although products such as tampons and pads are ‘essential products’, since their use is unavoidable, in Spain they are not considered as such. A reduced VAt rate of 10% is applied to these products, instead of applying the superreduced VAt of 4% which would categorise them as basic necessities. Lack of access to products has preventable physical and psychological consequences. the most disadvantaged sectors of society are those that are most exposed to period poverty and the resulting issues.

Kenya in 2004 already eliminated taxes on menstrual hygiene products. the Scottish Government unanimously approved free access to menstrual hygiene products in 2020. in 2015 canada did the same. colombia, india, Malaysia, South Africa, rwanda, ireland and england also apply a series of different measures to reduce period poverty. Specifically, in ireland and the canary islands, menstrual hygiene products are not subject to any tax. however, while products such as Viagra are taxed at 4%, menstrual hygiene products,

which are mandatory for women’s health, are still taxed at the higher 10% rate. According to proposals tabled by compromís, taxing menstrual hygiene products at the superreduced rate of 4% is a matter of health and social justice. Senator carles Mulet, representing Valencia in Spain’s Senate, revealed that it is difficult for amendments to the PGe to be passed “given the urgency with which all the laws are addressed in the upper house where they almost never accept any modification” but despite this, said that his party compromís will continue to fight until this VAt reduction becomes possible.

Christmas spending steams ahead households in Spain plan to spend on average 20 percent more on christmas this year and eight in 10 will be shelling out the same or more than they did in 2020, according to recent figures. only 21 percent expect to spend less than they did they year before, compared with 59 percent who made this decision in 2020. A typical resident or family unit will be parting with around €531 for the festive season, the cetelem observatory – the trading name for bnP Paribas Personal Finance - reveals in its latest report. this represents 20 percent more than last year, and 11 percent more than in precovid times. three in 10 expect christmas to cost them between €400 and €1,000, compared with about a quarter who planned this level of outlay in 2020, whilst 38 percent intend to spend under €200, compared with 43% who set themselves this budget limit last year. And 8 percent of those questioned will be parting with over €1,000 for the holidays. A total of 23 percent plan to spend more on christmas 2021 than they did for 2020 – only 8 percent said a year ago they would be spending more on the festive season than they had in

2019. Surveys using the same methodology found that the number expecting to put more money towards the forthcoming christmas than they had in the preceding year was 20 percent in pre-pandemic times, meaning budgets have increased despite covid. the cetelem observatory found that 56 percent plan to spend the same on christmas 2021 as they did on christmas 2020, whilst a year ago, only a third expected to shell out the same amount as they had for christmas 2019. Last year’s respondents who intended to reduce their christmas budget from 2019 totalled 59 percent, prior to the pandemic, around 28 percent said their 2019 festive pot was smaller than that of 2018. Yet for christmas 2 0 2 1 , only 21 percent

have planned to cut their spending on the festive period – fewer than before covid. overall, the most frequent response displayed an intention to put aside the same amount of cash for christmas 2021 as for christmas 2020, although among those who did not fall into this category, the number planning to spend more was higher this year and the total budgeting less was lower. of those who say their christmas spending in 2021 will be lower than that of 2020, between seven in 10 and threequarters admitted the effects of the pandemic on their household finances was the main reason. but this is still a vast improvement on a year ago – ahead of christmas 2020, the cetelem observatory found that 94 percent of those households which had tightened their festive belts had decided to do so because of the covid crisis making their financial situation worse.

tourism leaders in Spain have expressed fury at the “unacceptable scenes” at major Spanish airports, which have left visitors to Spain experiencing chaotic queues. they are now calling on the Spanish Government to act urgently. Spain’s Airlines Association (ALA) has urged the Ministry of the interior to hire more border staff at Spanish airports. the tourism leaders fear the chaotic scenes will put british holidaymakers off visiting Spain. the ALA said the opening up of Spain to key tourist markets, including the UK, had unleashed airport “chaos”. it said thousands of passengers had missed their flights due to a massive queue at Madrid airport. other airports affected include: Alicante, Malaga, barcelona, Palma de Mallorca, ibiza and Gran canaria.

ALA President Javier Gándara said: “the reopening of Spain to international tourism, added to other factors such as the new migratory measures with the United Kingdom after brexit, are the causes of a significant saturation of controls in our country, requiring a longer registration time at the border.” Since brexit, british tourists need their passport stamped each time they enter and exit the Schengen Zone, including Spain. british people are only allowed to visit Spain for 90 days out of every 180 under new brexit laws. it is thought that the new legislation has led to an increase in queues at Spanish border controls. Gándara said: “the congestion at airports is a great detriment to passengers, both national and international, in the form of delays or loss of

flights or connections in the country and an added difficulty to the operation of airlines, already complex due to the pandemic, projecting a terrible international image of Spain. “Spain cannot now allow itself a congestion of its airports. At a key moment for the tourism sector such as christmas and with the sights set on summer, it is imperative to improve passport controls, since the current situation is a grievance for passengers, for airline operations and for the image of Spain abroad. “As we warned a few months ago, not adopting the pertinent measures has caused significant damage due to the reactivation of international tourism and the reopening of routes that were paused due to the pandemic, as was the case in the United States.”

33 Years Helping Suffering Alcoholics In Costa Blanca South the english speaking group of Alcoholics Anonymous in torrevieja celebrated its 33rd birthday on 6th September 2021.

the group here started in 1988, initially with meeting in the church at La Siesta. the founding member, who was then in her early months of sobriety, often sat alone waiting for others to come along which they eventually did, usually visitors from the UK and ireland. She still lives on the costa blanca, although not here in torrevieja, and remains in the fellowship. her continuing sobriety is just one example of how the program of AA works for those with a genuine desire to stop drinking and who are willing to work its universal 12 step programme of recovery. Meetings were transferred to a room behind the main church in torrevieja where they continued for more than 15 years. these now take place at the russian church at calle San Miguel Salinas 2, between the beach and Salud at Acequion. continuing the traditions of the Fellowship founded in the USA in 1935, Alcoholics Anonymous in torrevieja has expanded dramatically over the number of years. having had

just a single english speaking group meeting every Wednesday evening for fourteen years, there are now seven meetings in the town and surrounding urbanisations and others in nearby ciudad Quesada, Mazarron and two in Los Alcazares.

over the course of 33 years since the meetings started here, many already sober alcoholics have moved permanently to the area bringing with them their AA experience of living life without the need to drink, one day at a time, and sharing this with newcomers - that is ,how AA works. they have been joined by a growing number who have found freedom from their obsession for alcohol for the first time by attending AA meetings in torrevieja and working the famous twelve step programme of the Fellowship. Members stories which will be published in this newspaper over the next couple of weeks, the varying depths to which alcoholics sink before surrendering and seeking help. there is no need for an alcoholic to end their drinking ¨career¨ alone, destitute or institutionalised, but it can happen!, unless they recognise earlier that they have become or are clearly becoming, a slave to drink. over the years local newspapers have reported the deaths of ex-pats evidently as a result of

prolonged alcohol abuse, further evidence of the need for a strong AA presence within the english speaking community in the area. Many members first come along to AA as a result fo persistent pressure from their partners, family or friends. Perhaps it is not the best motive for going to an AA meeting, but by identifying with all or part of the

Expats lead charity volunteering Spain’s former king More than 2.7 million residents in Spain carry out volunteer work of some description, with three in 10 of them aged from 14 to 35 inclusive – in total, 6.4 percent of teenagers and adults in the country give up some of their time regularly for unpaid charitable, social and humanitarian efforts. Of course, the expat communities have always led the way, with kindhearted Brits spending their retirement in the sun volunteering for everything from working in charity shops to helping at animal shelters, and organising fund-raisers for children’s shelters, the homeless, the disabled, for cancer research and care, and numerous other causes. Long-standing charities here in the Southern Costa Blanca include: HELP Vega Baja, which people in hospital, provides home care and loan of equipment; MABS and AACC which are anti-cancer charities and Help at Home. There are of course many more with local residents raising money for local good causes some amassing up to €40,000 or €50,000 a year for poverty relief, children’s homes and homeless shelters in their towns – and a high number of expat-run animal sanctuaries on the Costas and their wider provinces have their own charity shop and run events ranging from fêtes to fashion shows throughout the year to fund pet food and veterinary care. The expat enthusiasm for volunteering isn’t only prevalent in the British, there is a wonderful international mix across all expat nationalities an volunteering forges friendships across language barriers.

Spain’s former king Juan Carlos I is seeking immunity from the English courts after his ex-lover accused him of spying on and harassing her, a London court was told. Danish businesswoman Corinna zu Sayn-Wittgenstein-Sayn is seeking civil personal injury damages claim against the ex-monarch at the High Court. However, 83-year-old Juan Carlos, who ruled from 1975 until his abdication in 2014, denies wrongdoing and argues that as a Spanish royal, English courts have no jurisdiction. Court documents claimed that the pair were in an “intimate romantic relationship” between 2004 and 2009 and that the royal showered her with gifts, even after they broke up. But the situation turned sour when she declined to rekindle the relationship, leading him to pursue “a pattern of conduct amounting to harassment”, it was alleged. The 57-year-old claimant alleged she was threatened, had her overseas properties broken into, and that the now Abu Dhabi-based former king “demanded the return of gifts”. “Further acts of covert and overt surveillance, causing distress and anxiety” included “trespass and criminal damage” to her home in rural central England. Gunshots were fired at and damaged

security cameras at the front gate of the property, she alleged, accusing the former king of being angry at her refusals. Lawyers for zu Sayn-WittgensteinSayn submitted that he had relinquished his status as sovereign or head of state when he abdicated, and as such was not entitled to immunity. He could also not claim protection by being a dependent of his son, the current king Felipe VI, lawyer Jonathan Caplan said, and appeared to be trying to “frustrate” proceedings. Daniel Bethlehem, representing Juan Carlos, said his client rejected the accusations of wrongdoing “in the strongest of terms”.

Food habits to ditch We all have some eating habits that are at best unhelpful or unhealthy, and at worst offensive. From peeling a banana the hard way to inadvertently committing a cultural culinary faux pas, it’s easier to slip up than you might think. Hitting the bread If you’re watching your waistline, an overflowing bread basket can be one temptation too far. A good idea is to go with a bread or a starter, but not both. Using chopsticks with Thai food Here’s how not to be culturally insensitive with Thai food: if you’re following traditional customs, almost all Thai dishes should be eaten with a fork and spoon, not chopsticks. Two out of three young people with weight problems are bullied Obesity and bullying often go hand in hand. So much so that two out of three minors who have problems with their weight admit that they have been made fun of by their classmates or other children at school. According to many national and international studies, much of the bullying comes through social networks or mobile messaging apps.

The first step “has been to acquire some tests that, based on certain scales, allow us to make more objective diagnoses, because so far we are guided by what the kids tell us in the consultation, but it is necessary to objectify it.”

A common trait that almost all of these children share is low self-esteem, says Nso, “they think they won’t be able to get out of this cycle.” The problem of bullying in these situations is more intense the older the child is and it is more frequent in boys than in girls, explained the pediatrician. “In some cases it affects 70% of patients, depending on their age and sex, but in general it can be said that more than half of adolescents with obesity suffer from this problem”

However, once I got older, things changed and I decided that I no longer wanted to spend time

with obnoxious members of my immediate family, who amongst other bad behaviour, thought it was ok to leave everyone waiting, and turn up three hours late for lunch at my parents’ house - not once, but two years in a row. Since then, my husband and I have chosen to be by ourselves, first having made sure we spent an entire day on Christmas Eve with my mom and dad. So, Christmas for us is not about extended family, however I appreciate that some families do love each

other, and want to be together. But if you are alone, there’s lots you can do to keep busy. In the run up to Christmas there is still plenty going on that we can attend safely. Changes to Traffic Hidden Vehicle Laws in 2022

After working its way between the Congress of Deputies and the Senate, the latest changes to traffic law have finally been approved. The last stagewill be publication in the Official State Gazette (BOE), which will give notice that these changes will come into force three months after the publication date, therefore likely to be in March 2022, with the new regulations and sanctions, according to the General Directorate of Traffic, seeking to reduce the accident rate on the road and strengthen road safety. Mobile phone: a change to the law makes simply holding a mobile phone an offence, even if you are not using it or using, penalised with the increased loss of six points instead of three. The financial penalty remains at 200 euro. Safety systems: travelling without wearing a seat belt, helmet or child restraint system will entail a four-point penalty. Radar detector: its mere presence inside the vehicle will be subject to a fine and will result in the loss of three points. Throwing objects on the road: throwing any object that could cause fires or accidents will result in the loss of six points. Overtaking on conventional roads: the 20 kilometre per hour margin that allowed cars and motorcycles to exceed the speed limit of the road to overtake other vehicles disappears. Overtaking cyclists: carrying out this manoeuvre putting them in danger, hindering them or without leaving the

minimum distance of 1.5 metres will lead to the loss of 6 points, increased from 4. Personal mobility vehicles: users of these means of transport will have to be equipped with a helmet and will not be able to drive on the pavement or on other pedestrian areas. Minors who use them, in addition, will have to respect the zero-alcohol rate. Breathalyser for passenger transport: as of July 6, 2022, all vehicles for passenger transport must be equipped with an anti-start breathalyser. Recovery of points: from now on, the time that must pass without committing infractions to recover the initial balance of 12 points will be two years (if all the points have not been lost). To this it must be added that two points can be added with the safe driving courses certified by the DGT. A recent survey reveals that a staggering 42% of used car buyers don’t know who legally owns a car that has finance owing on it. The truth is that a vehicle with outstanding finance belongs to the finance house, which has the legal right to repossess that vehicle at anytime, without warning; 1 in 4 cars checked by HPI are subject to outstanding finance. Nearly a quarter of those surveyed (23%) assumed the car belongs to the person named on the vehicle’s Log Book, highlighting the extent of misconception amongst consumers. The good news for consumers buying from a dealer is, that if they later discover the vehicle is on finance and repossessed, they will be protected by Innocent Purchaser Protection (IPP) and will be able to get back their money and buy another car. HPI recommends that you always conduct a vehicle history check BEFORE you buy, it will tell you if the car has outstanding finance against it and enables you to ensure that the finance agreement is concluded before you complete the purchase.

In Spain, similar checks can be conducted through the website of the traffic department, the DGT, via www. dgt.es. On the front page of the website, under “Trámites”, you will see a link that reads “Informe del Vehículo”. There are many other useful links too, all which are worthwhile looking into, but it is this “Vehicle report” that we are concentrating on here. The vehicle registry in Spain is managed by the DGT, but the information contained in the database is available to members of the public who have a legitimate reason for requesting the data. If you know the vehicle number plate or chassis number, you can find out such details as the vehicle Ownership, specifications, number of previous owners, administrative status and ITV expiration date. Your identification by means of a digital certificate needs to be provided in order to obtain the information on record; this might prove a hurdle to non-Spanish speakers, but on on-line translator such as Google can help with most of the content. There is a small administration fee for obtaining the information, which can be paid for by credit or debit card. Although that fee is considerably lower than the financial risk of purchasing a car that has a dubious history or has sanctions in place against it.

How long does it take to cook a steak? Do you salt it? Do you put a chicken in a cold or a hot oven? Who has all the answers? Long years of cooking experience have taught me how to get a nice meal on the table and to deal with the hassle to avoid a lastminute panic. Holiday entertaining of family and friends at home should be a relaxed informal event. However, work needs to be done in advance! First of all, and this is the very key to success, is to master plan ahead as much as you can. Sit down and write out your entire menu starting with welcoming drinks to coffee at the end. Question: will there be help from others or are you “it” by yourself? If time will be in short supply simply cut the workload by buying hors d’oeuvres as a starter. Same for dessert, f.i. choose a good quality ice cream you can serve in stemmed wine glasses, topped with fresh fruit and cream. A golden rule: keep things simple. As for welcoming drinks, there is no need to match the Hilton bar by overstocking but mix a sangria or a punch. Browse through holiday menus in cookbooks to find something festive that appeals to all. Limit accompaniments to a few dishes of olives, pretzels and various nuts (I abhor salty chips and the like). This will be plenty before a large meal. December is winter time, consider a nice soup as a first course. Prepare it at least a day ahead, most improve in taste as well. As for your main meal, select recipes with which you are quite familiar. Do not fall into a trap to try out something entirely new you never made before (I did – disaster). Ideally it should be something you can work on the day before that needs just reheating like all stews or braised meats. Otherwise have meats which sear fast or can be grilled such as chicken, veal slices, fillets of fish or beef. Stir fry is good but cutting up all ingredients is time consuming and do this way ahead to be kept in your fridge in zippered bags. If “going Italian”, always well liked, assemble a lasagna or a baked pasta dish in the morning of the day needed, just keep covered in a cold spot. Beware not to have 2 dishes for your oven at the same time requiring different temperatures. Salads are not difficult, greens can be

washed beforehand and kept in plastic bags refrigerated. Same for homemade dressing in a jar. Write out your recipes on cards you can clip (magnet) on metal so not to have cookbooks lying open to get fingered and splattered on when cooking. Always set your dinner table the day before with pretty linen and napkins – include festive decorations such as candles or other. This may be the time to find, depending on how many guests you serve: do you really have enough glasses, plates and cutlery? Of course, you would want to spend as much time as possible rather with your invites than in your kitchen. The following tips may help: even if your kitchen is not small it is much easier to work with uncluttered countertops for more workspace. Collect beforehand what you don’t need in a box and temporarily move it elsewhere. Very practical is to arrange a table on which you lay out all you need handy for your work: serving plates, dishes, boards, knives, scissors, large forks, spoons, foil, paper towels, scrapers, openers etc. Arrange spices and herbs together to avoid to hunt for them through your cupboards later on. Perhaps you want to move chairs out, unless helpful (rare) you don’t want an audience. Lastly about washing up. All restaurants use so-called bus tubs to collect the dirty dishes, glasses, cutlery etc. There will be loads. Do not stack your sink and the counter tops when they spill into your kitchen but rather use large laundry baskets or cartons with high sides for that purpose. Simply put them on the floor and sort it later. Tie a large-size garbage bag to a drawer handle to collect all throwaway stuff. Have a truck load of clean dish towels ready! A professional tip for an overcrowded refrigerator: you can create another shelf by sliding a serving tray that fits on same size tins under each corner. If you have a balcony or patio dispose of bulky stuff on a table outside, be sure it cannot be inspected by any nearby dogs or cats.... Do have fun, Bon Appetit and Happy Holidays! Well, they say the top teams get those big decisions, don’t they? The top three teams in the Premier League won their matches courtesy of penalties - and so did Manchester United. West Ham, good but not good quite enough to be considered in that group, weren’t given theirs - and you could pretty much guarantee they’d have got it had they been one of City, Liverpool or Chelsea. Let’s be clear here - Salah made a bit of a muppet of Tyrone Mings and no matter what Stevie G thinks, that one was a pen. Admittedly, Villa probably should have had one too after Alisson pawed at Danny Ings’ shins after a bit of a cock-up in the Liverpool backline. But City’s against Wolves? Never in a million years. The ball hits Moutinho in the armpit first before just about touching the area of the shoulder that the Premier League have gone to great lengths to explain equals ‘not handball’. Still, it helped Raheem Sterling get his 100th Premier League goal so it doesn’t really matter, right? The lack of a Wolves response also saw Ederson notch up his 100th clean sheet for City - hardly surprising given the daftest of ways Raul Jiminez found to get two yellows in the space of 30 seconds. Given how much football he missed when his cheekbone and skull got rearranged against Arsenal, you’d have thought he might have had a little more sense. Could the Leeds and Marcelo Bielsa love-in be coming to an end? Quite possibly, though the Argentine footballguru was not helped by a shocker of a decision to give Chelsea their second, and ultimately winning, spot-kick. Rudiger, a big strong central defender, fell as if he had been kneecapped and, again, it was hard to argue ‘clear and obvious error’ once the decision had been made - in the same

way there was no chance of it being overturned if that had not been given in the first place. This was the third penalty of the match - fortunately (or not, as the case maybe) there were no complaints with the other two. Up at Carrow Road, Dean Smith called it “the softest of soft” but that’s what happens if you are Norwich and you are playing against the big boys. Cristiano Ronaldo felt Max Aarons’ hand on his shoulder for a millisecond and that is all it took for decks to be hit, whistles to be blown and fingers pointing to spots. Ronaldo, of course, needed no second invitation to bail United out once again. As previously mentioned, West Ham will know they are truly a top-four side when they get their fair share of tight calls go their way. Their trip to Burnley was as dull as it was cold but the only hot point was when Craig Dawson was felled by Dwight McNeil in the area. If you want ‘clear and obvious’ this was a pretty suspicious candidate and you have to believe that Craig Dawson, as classic a centre-half as there appears to be left in the game, wouldn’t know how to ‘initiate contact’ even if he was told to. Things don’t really go your way either when you are Newcastle United and let’s put karma to one side. Playing a Leicester side without several players available and Jamie Vardy keeping warm on the bench, they will have felt this was a chance to gather a little more momentum. That feeling didn’t last long as another penalty was given, prompting a Geordie breakdown not seen since Keegan picked up the mic back in the 90s. Abbey Anglers On Tuesday the 7th of December we fished the annual Christmas Fur & Feather match at the El Bosquet Complex.

In second place was the old maestro Lenny Bolton. Fishing peg 8 he caught carp steadily on the pole and maggot for what would normally be a winning weight of 25.92kg.

25 anglers took part on what turned out to be a nice sunny day with a light breeze and temperatures approaching 20 degrees.

In third place and also on the same section was Tony Felstead on peg 10. Tony fished maggot or pellet for 18.96kg.

The match was virtually won at the draw bag when venue expert and all-round good guy, Neil McBernie drew peg 16. This is the end peg on the new wide section next to the boat and can be very prolific. After two hours and with little or no fish Neil was beginning to doubt himself somewhat. The next 4 hours turned out to be fantastic for him and he took carp after carp on maggot on the far bank and finished up with a magnificent weight of 55.700kg that’s nearly 123lbs in old money.

The pairs event was obviously won by Neil and his luck partner Jim Rouse with 57.42kg. After the match we had a splendid buffet at Café Uno in Catral, where the prizes were given out. christmas dinner around the world No matter where in the world you are, Christmas is about more than tradition and family – it’s also about food. But what is actually served for Christmas dinner varies by country – with commonplace turkeys rarely having a place on the table outside of the UK or US. From Puerto Rican eggnog served in coconut shells to the Swedish egg-andanchovy mixture gubbröra, traditional Christmas dishes from around the world provide an insight into the various ways that people celebrate and indulge on the holiday.... Sweden In Sweden, the Swedish julbord or “Christmas table” usually begins with cold fish dishes, then meats, hot food, and dessert. In most instances, the table features a Christmas ham, boiled then glazed with eggs, breadcrumbs and mustard – and served cold. Apart from the centrepiece, Swedish Christmas dinner usually includes meatballs, lutfisk, a potato and fish dish, and pork sausage. The traditional drink is Glögg, a mulled wine, which is drunk before or after the meal. Puerto Rico In Puerto Rico, the national dish and meat component of the meal is a roast suckling pig known as lechón. The process is quite arduous and requires at least two people turning and watching the pig – often beginning at two in the morning so it is ready in time for Christmas dinner. Morcilla or blood

sausage is also served, as are pasteles or meat pastries. For dessert, tembleque, a coconutbased pudding is perfect when paired with coquito, a Puerto Rican spin on eggnog made with condensed milk, coconut milk and rum.

Japan Christmas in Japan revolves around fried chicken – with KFC experiencing its busiest time of the year! The tradition began in 1974 when the chicken brand created an advertising campaign called “Kentucky for Christmas” and it became popular. Most families have to place their Christmas orders weeks in advance to secure their fried chicken meals. In addition, traditional Japanese Christmas also sees Christmas cake eaten, especially strawberry shortcake. Hot sake is also served on the holiday to wash down the meal. Portugal To celebrate the holiday in Portugal, most people eat variations of codfish and boiled potatoes. However, it is the variety of desserts and pastries that take centre stage. There are two types of Christmas cake, Bolo Rei, a nut- and fruit-filled concoction and Bolo Rainha, a variation with no candied fruit, as well as filhoses, fried dough covered in cinnamon and sugar, and Broa, small sweets made from egg yolk and sweet potato.

Eastern Europe Lithuania, Poland and Ukraine all offer variations on an intricate 12dish Christmas Eve feast. Meat, eggs and milk are all kept off the table by the regulations of the Nativity Fast practised by the Orthodox and Eastern Catholic churches, and while this fast is not so strictly observed as it once was, one can expect to see an array of pescatarian and grain-based dishes laid out on the table. The fish dishes usually involve herring, carp or pike, and mushrooms also frequently appear. Beverages such as dried fruit compote or cranberry kisiel are also common. Germany Christmas in Germany is observed with a dinner involving duck, goose, rabbit or a roast, and sides such as potato and red cabbage dumplings. For dessert, Stollen, a fruit bread of nuts, spices and dried fruit topped with powdered sugar is a traditional favourite, in addition to gingerbread houses, called pfefferkuchenhaus. As for beverages, Feuerzangenbowle or “fire tong” punch, a hot mulled wine and rum beverage is popular, as is regular mulled wine, called Glühwein.

Norway On Christmas Eve, the most popular dish in Norway is roasted pork served with sauerkraut and boiled potatoes. Whole, steamed sheep’s head is also on the menu, with the ear and eye meant to be eaten first while the brain is taken out and served boiled or fried.

For dessert, Multekrem is made by mixing cloudberries with whipped cream and sugar.

America In America, Christmas dinner resembles Thanksgiving – there is turkey or ham, stuffing, mashed potatoes and gravy. For Jewish people living in America, the tradition is to eat Chinese food – with most Chinese restaurants open on the holiday. Greenland In a heart-warming tradition, men serve the women throughout the Christmas meal in Greenland. The meal consists of mattak, strips of whale blubber encased in whale fat, and “kiviak,” a dish of flesh from auks buried in whole sealskin for several months and served once it begins to decompose. A popular dessert is Christmas porridge served with butter and topped with cinnamon and sugar. Jamaica In Jamaica, Christmas dinner is usually prepared the night before, and includes fruits, sorrel, meat and punch. For dinner, the main may be anything from turkey to curry goat or stewed oxtail. Britain Christmas dinner in Britain isn’t complete without turkey, roast potatoes, Brussel sprouts, parsnips, pigs in blankets, stuffing, gravy, and cranberry sauce. Christmas pudding tops off the end of the feast and

there are often mince pies with coffee or tea. And Christmas dinner wouldn’t be complete without mulled wine, although a sparkling wine or champagne is also a popular choice for many Britons. Spain Many Spanish have their main celebratory meal on Christmas Eve, while another special meal is eaten on Three Kings’ Day, on 6th January. Entremeses are like an appetiser plate, and are often served at the start of the Christmas or Christmas Eve meal. The plate may contain charcuterie such as ham, chorizo, morcilla (black pudding) and local cheeses such as Manchego. Seafood plays a big part in a Spanish Christmas meal, and is often served as the main course instead turkey. Lobster and prawns are particularly popular, as is a seafood soup or stew as a starter. Cochinillo or roast suckling pig or roast lamb is another favourite Christmas meal in many parts of Spain. It is cooked until the skin is brown and crispy, and is often cooked on a bed of onions and potatoes. The Roscón de Reyes is the Spanish version of a Christmas cake. Essentially it is a sweet bread ring topped with pieces of candied fruit and sometimes filled with whipped cream. While it’s eaten for the whole Christmas period, it’s traditionally consumed on Three Kings’ Day. No Spanish Christmas meal would be complete without a glass of Cava, the Spanish version of French Champagne.

NEXT LEVEL SALMON EN CROÛTE

Ingredients For the cure 50g flaky sea salt 25g demerara sugar 2 x 500g skinless, boneless salmon fillets For the en croûte 75g watercress, chopped 200g cream cheese 2 tbsp fresh dill sprigs, chopped 1 lemon, zested and juiced Pinch smoked salt (optional) 500g block all-butter puff pastry Flour, for dusting 2 eggs, yolks only, beaten For the pickle (optional) 1 cucumber, peeled, halved, deseeded and sliced 1 red onion, finely sliced 100ml cider vinegar 1 tbsp sugar

HAM & CHEESE CROQUETAS

Ingredients 25g butter ½ small onion, finely chopped 50g plain flour 250ml milk 140g sliced smoked ham, diced 50g mature cheddar, coarsely grated 50g gruyère, finely grated 1 tsp Dijon mustard 2 tbsp double cream For the coating 2 large eggs 50g plain flour 140g fine dried breadcrumbs sunflower oil, for deep frying For the tomato chilli jam 300g ripe tomatoes, roughly chopped 1 long red chilli, finely chopped (deseeded if you don’t like it too hot) 1 small red onion, finely chopped

Method STEP 1 The day before you want to assemble the en croûte, mix the salt and sugar in a bowl. Scatter half of the mix over a tray, then lay one of the salmon fillets on top, skinned-side down, and scatter with more of the salt mix. Lay the second fillet on top, skinnedside up, and sprinkle over the rest of the salt mix. Cover, then place another tray on top. Weigh the tray down with a couple of tins and put in the fridge for up to 48 hrs, or for at least 12 hrs (the longer you leave it, the firmer the salmon will be). STEP 2 When you’re ready to assemble the en croûte, unwrap the salmon fillets, rinse them in cold water and dry with kitchen paper, then set aside. Put the watercress, cream cheese, dill, lemon zest and juice, smoked salt (if using) and a generous grinding of pepper into a bowl and mix well, then set aside. STEP 3 Line a baking tray with parchment. Roll out half of the pastry on a lightly floured surface so it’s 2.5cm larger in diameter than the salmon fillet, then drape it over the lined baking tray. Place one of 4 large garlic cloves, crushed 100g demerara sugar 100ml red wine vinegar Method STEP 1 To make the croquetas, melt the butter in a medium saucepan and gently fry the onion for 3 mins or until lightly coloured. Stir in the flour and cook for 30 secs. Gradually add the milk, stirring constantly, and cook over a low heat for 5 mins until thick and glossy. Stir in the ham, cheese, mustard and cream, and season to taste. Cook for 1 min more until the cheese melts, stirring constantly. STEP 2 Pour into a bowl and cover the surface with cling film to stop a skin forming. Leave to cool, then chill for 4 hrs or overnight - the mixture needs to be very stiff to form the croquetas. Take heaped teaspoons of the mixture and, with wet hands, roll into 24 small oval shapes and put on a tray. Beat the eggs in a shallow bowl, put the flour on a plate and half of the breadcrumbs in a bowl.

the fillets on the pastry, skinned-side down, and spread with the cream cheese mix, then lay the second fillet on top, skinned-side up. Brush the edge of the pastry with a little of the beaten yolk. Roll out the rest of the pastry to fit, then drape it over the salmon and tuck it in at the sides. Trim the edges and crimp or press with a fork to seal. Brush with more beaten yolk, then put the en croûte in the fridge for 30 mins before using a spoon to create a scalelike effect along the top of the pastry. Chill for up to 24 hrs or for at least another 30 mins. STEP 4 Heat oven to 220C/200C fan/gas 7. Bake for 20 mins, then glaze with the remaining yolk. Lower the heat to 180C/160C fan/gas 4 and bake for 20 mins more, then remove and leave to stand for 10 mins. STEP 5 To make the pickle, put the cucumber and onion in a bowl. Tip the vinegar, sugar and a pinch of salt into a pan and bring to the boil. Once the sugar has dissolved, pour over the veg, toss well and set aside. Can be made up to two days ahead and kept in the fridge. Slice the en croûte into six portions and serve with the pickled veg on the side. STEP 3 Roll each of the croquetas lightly in flour, then in egg before coating in breadcrumbs. Place on a baking tray lined with baking parchment. Use the remaining breadcrumbs to top up the bowl halfway through the coating process. Chill for 30 mins (or to freeze, see tip, below left). STEP 4 Meanwhile, make the tomato chilli jam. Put all the ingredients in a large saucepan and bring to a gentle simmer. Cover loosely with a lit and cook for 50 mins - 1 hr, stirring occasionally, until thick and glossy. Leave to cool before serving. STEP 5 Fill a large saucepan one-third full with the sunflower oil and heat to 180C (or heat the oil in an electric deep-fat fryer). Do not overheat and do not leave hot oil unattended. Using a metal slotted spoon, lower 6 croquets into the oil and cook for 1.5 mins or until golden brown. Transfer to a baking tray lined with kitchen paper to absorb excess oil, and continue cooking the rest. Serve with the chilli jam for dipping.
