Bring on 2021, let's hope it is a better year for everyone within our community. We are back again to finish the year with another jam-packed edition. For 2020, we were delighted to have the opportunity to donate over $18,000 in advertising spaces for small businesses, not-for-profits and community groups. Inside this edition We have so much news to share and so little space to write it. This edition has exciting new sections, including an Arts & Events page with a more extensive artist profile and local farming features. There is also a double-page local Christmas Gift Guide full of local products and services to assist you in shopping local this festive season. Thank you for the feedback we received during our previous edition regarding our trades and services advertising sizes. We listened, and have improved the sizing to make it clearer to read. We have also reformatted our cover page, producing a more distinctive appearance for our readers. We should be easy to find now. Our family once again enjoyed venturing to so many local attractions. Killen Falls is definitely one of my son Bailey's new favourites. It was a quick walk in a pristine rainforest to an impressive waterhole where he was very excited to swim under a waterfall. Whereas my youngest, Brendan, loved our Evans Head adventure, his highlights were swimming in the crystal clear river and being spoilt by the staff at the Hotel Illawong. We are surrounded by such beauty in the Northern Rivers. I hope all our readers get to journey with family and friends around the region this summer and experience our attractions for themselves. Places to explore Killen Falls is located just below the Emigrant Creek dam at Fernleigh and is a spectacular ten-metre waterfall dropping into a large, cool waterhole within a rainforest gully. Ferns and mosses thrive in this damp location, and there is also a natural amphitheatre style cave opening behind the falls, which make a lovely shaded place to relax with family and friends. The sub-tropical rainforest remnant is roughly 2.7 hectares in size and surrounds the waterfall. This particular location remained out of reach for early logging and farming due to its steep and rugged terrain which ensured its preservation thus far. Rous Water, Ballina Shire Council and the Big Scrub Rainforest Land Care Group have all combined their resources and knowledge to rehabilitate the riparian zone of Emigrant Creek and suppress the weeds threatening this valuable rainforest remnant. Parking is available within 500m of the base of the waterfall. There are two beautiful walks that you can do from the Emigrant Creek Dam car park, the Water Walk and the Boodgeragah Walk. The Water Walk is a 200m wheelchair-accessible educational trail displaying many species of flora and fauna that thrive in this protected gully via informative signage along the way. Ballina Shire Council has provided this opportunity for those less physically able to still experience the waterfall; including prams, wheelchairs, walking frames, etc. Taking the Water

Walk pathway will lead you through the recently replanted rainforest from the car park to a fully fenced lookout platform looking out over Emigrant Creek Dam and Killen Falls. The tall and shady rainforest trees, which you walk through, have all been planted since 2003. For those more adept at bushwalking, the Boodgeragah Walk is about 500 metres long and takes you through regenerating rainforest along Emigrant Creek downstream of the dam. The track is quite rough, especially compared with the Water Walk. The trail down to the base of the falls can be slippery at times and is uneven and steep with rocks and tree roots to look out for, so please take care and make use of the handrails where provided. Once at the bottom of the trail, you can explore behind the waterfall in the dark realms of a large cave or relax and keep cool in the beautiful swimming waterhole. The waterhole has some deeper spots closer to the falls; however, jumping from the cliffs or diving in is not ideal as much of the waterhole is shallow around the edges with a rocky bottom. During the walk, our sons, Bailey and Brendan were lucky enough to spot a variety of wildlife. Including bush turkeys and several other bird varieties along with small fish that leapt from the water’s surface, a hungry turtle searching the creek and even a few friendly little eels further downstream.
Killen Falls
When walking and swimming have you ready for a feed, there are some lovely small shaded lawns available near the car park to picnic or play on with the children; a public toilet facility is also located near the car park. At the top of Water Walk, near the lookout, is also a picnic table under the shade of the newly grown rainforest. For those adventurous enough to picnic at the base of Killen Falls, please remember there are no bins, and you are expected to return to the car park with your rubbish and use the bins provided there. Together we can preserve the natural beauty of this area and ensure that the animals and plants living there not only remain but continue to thrive. Future generations will hopefully be lucky enough to explore the cool waters of Killen Falls, and the lush rainforest surrounds. To explore Killen Falls, drive to Tintenbar (North from Ballina, South from Byron Bay) and take the Lennox Head / Teven Tintenbar Highway exit. Next, turn onto Friday Hut Road and continue for about 3km. Then, turn right into Killen Falls Road and the car park is 400 metres further ahead. Please note though that there are Council works planned, and Killen Falls will be CLOSED between 19th October and 13th November 2020 weather permitting. There will be no public access during this time, Ballina Shire Council and Country & Coast Magazine will provide an update once open again so stay connected through our social media platforms for updates.
Probus club activities Celebrating 100 Years! Flowers for Maranoa By Ron Whittaker

The Probus organisation has close to 2000 clubs around Australia, and the Probus Club of Wollongbar is one of some 24 years old. With regular growth of retirees, they have created a group of like-minded older folk able to share life’s experiences and present day activities together for a well deserved and fulfilling retirement.
Zonta is a worldwide service organisation founded in 1919 in the USA working to advance the status of women. Zonta stands for women's rights advocating for equality, education and an end to child marriage and gender-based violence.
For around ten years, the Wollongbar Garden Club has donated bouquets to the aged care residents of Maranoa to share the wonderful flowers of Spring. A beautiful story of community kindness within our region from Lucy Newman.
The Northern Rivers Zonta Club was formed in 1995. On the 16th September, the local club celebrated 100 years of service with a birthday cake at the Alstonville Bowls and Sports Club. Members were delighted to mark the occasion and acknowledge the inspiring and fulfilling projects they have achieved as a club.
It has given the Wollongbar Garden Club members such joy to prepare bouquets. They have received many comments in return informing them how greatly they are appreciated. 2020 has been a challenging year for many of us, and the Garden Club has been in hibernation. So Lucy posed the question; could some of the members do 2 or 3 gift flower jars to be given to the residents so they would not miss out on the joy of Spring? Club member, Lloma had a better idea and quickly offered her larger than average backyard for their outdoor use, along with member, Jan, volunteering to make posy bases.
Wollongbar Probus Club
The club has dynamic monthly meetings full of entertaining and often very educational speakers. Throughout the year they often celebrate member's special birthdays, have open-air picnics, group lunches and breakfasts, visits many local industries and services amid the beautiful places around our marvellous part of the world. Above are some photos of usual activities, including outings, birthday celebrations and typical luncheon experiences. Although the club has been severely curtailed this year due to the threat of COVID-19 infection, they have continued to hold regular committee meetings while upholding strict personal distancing rules. The club has planned two further activities at the local Plateau Bowls and Sports Club that have very clear, safe and disciplined spacing arrangements. Zonta Club
One of their recently completed projects involved the construction and dedication of a memorial garden. Established at the Lismore Crematorium, the touching tribute is for families who experience miscarriage, stillbirth or early pregnancy loss. The project is an extension of The Zonta Room at Lismore Base Hospital for families who experience loss. The local club has continued to fund this indispensable cause since 1998. Currently, they are focused on assisting homeless older women within our region. The club are preparing for future fundraising activities and are sourcing new members to join their worthy cause. Members share a passion for working on local projects for women and girls but also contributing to international projects with Zonta partners such as the United Nations. The club is keen to hear from potential new members who would like to empower women through service and advocacy. The Zonta Club of the Northern Rivers meets the 3rd Wednesday of each month at the Alstonville Bowls and Sports Club. Community Kindness
The club was able to place tables under the trees and ensure Covid isolation rules were practised. Within this delightful setting, with the help and guidance of Lloma and Jan, ten ladies over two mornings used their own equipment and donated flowers to construct 45 posies. The posies were then collected by the Maranoa bus and taken to the reception area for disinfection before distribution. Those who worked on the production had a pleasant time catching up with friends and enjoyed a sense of doing something special for others. A large thank you to Lloma and Jan (pictured above) who made it possible for this activity to occur this year. Contact Country & Coast, to feature in our next kindness column.

The Amusu Theatre Main Street Memories By Catherine Cohen & Lindsey Bidwell
The Amusu Theatre opened in Alstonville on 27th October 1923. The theatre complex was located in Main Street on the eastern side of the Federal Hotel. It consisted of two shops fronting onto Main Street, an entrance between the shops to the theatre hall behind, a three-roomed house and an engine room for producing electricity behind the theatre. It was built by Clarence (Clarrie) Duncan McIntyre, who moved to Alstonville in 1905 to take up the position of Secretary of the Alstonville Butter Factory. For about five years before building the complex, he had been showing movies at various venues, including the Alstonville Showground, Brooklet and Federal. The opening of the theatre was a grand affair. First, there was the official ceremony, at which Councillor J.A. Daley of Tintenbar Shire opened the theatre, and his wife switched on the generator’s electricity for the theatre. (Mains-power electricity would not arrive in Alstonville until 1933.) Also in attendance were representatives from Paramount Pictures, Premiere National Pictures and Australian Films Ltd. A marble plaque was placed in the foyer to mark the occasion. Then the festivities began, with children given a free matinee, ginger beer and cakes. In the evening, there was a Grand Deluxe Movie Program which featured movie star Norma Talmadge in the silent movie “Smilin’ Thru”. In the following days, there was a Grand Amusu Social and a Juvenile Social. A number of elegant functions were held at the Amusu over the years. There were the Grand Alstonville Amusu
Anniversary Ball in 1924, at which the attendees wore glamorous fancy dress, and the Amusu Movie Ball in 1927, at which rainbow-coloured streamers were suspended from a huge electrically illuminated star and a 2,000 candle power electric arc lamp was suspended in the centre, giving the venue a gold appearance.. The Amusu screened the latest movies such as “Pack Up Your Troubles”, starring Laurel and Hardy, “the Idle Class”, starring Charlie Chaplin, and “Dare Devil’s Reward”, starring Tom Mix. It also hosted visiting live entertainment such as Raymond the Escapologist and children’s shows like “Jack and the Beanstalk” and “Puss in Boots”, as well as local entertainment such as the Lismore Methodist Choir, the Lismore Citizens’ Band and a play starring Clarrie McIntyre himself. The theatre was also used for community functions such as meetings, social events and fundraisers held by local businesses, sporting clubs, charitable organisations, churches and schools; cribbage and euchre tournaments; and celebrations of kitchen teas, weddings, golden wedding anniversaries, Empire Day and the switching on of Alstonville’s electricity. In addition, the Amusu was used for formal welcomes to visiting dignitaries such as the Governor General, Lord Stonehaven, and his wife in 1927, and for farewelling those who were leaving the town, including, in 1930, the McIntyre family. At the farewell Councillor Daley, who had opened the theatre, said, “the McIntyres had shown courage in trying to push ahead the town by building the
The Amusu Theatre fine hall in which they were gathered that night.” As was customary in those days, Mr McIntyre was presented with a wallet of notes as a gesture of appreciation, while the Red Cross gave Mrs McIntyre an aluminium kettle. Despite fires in 1928, 1931 and 1933, the Amusu survived until late 1939. There were upgrades with the introduction of sound systems to accommodate the arrival of the Talkies, and the theatre continued being utilised for a wide variety of activities. However, in 1940 the complex was sold and subsequently experienced many ownership changes and uses until it was demolished in the early 1990s whereby the current complex was erected. CURRENT EXHIBITION: “TAS TO REALITY” The latest exhibition at Crawford House Museum is “TAS to Reality”. It’s a display of the major works of Alstonville High School’s Year 12 Technological and Applied Studies students and includes some stunning woodwork and textiles. It runs until December 11th. There are also many interesting household objects dating from the turn of the century to 1960 and local historical items and documents, as well as research facilities for the descendants of Ballina Shire families. And don’t forget - the fascinating books for sale at the museum about Ballina Shire’s history would make perfect Christmas presents! Byron Studios opens new film studios 2020 TAS to Reality Exhibition By Greg Apps
After more than four years in development, Byron Studios has now opened its doors to Australia and the world. This establishes the region as Australia’s most iconic regional hub of expertise and creativity in Film and TV production. As well as film, our facilities provide opportunities for fashion or corporate events and photo, art or music extravaganzas. Dubbed ‘The Utopia Coast’ by Vanity Fair, the subtropical region of the Far North Coast of NSW is generating enormous interest as a filming destination - for Australian productions and projects from international companies. Currently filming in the region are the Netflix series 'Nine Perfect Strangers' starring Nicole Kidman and the Stan TV Series 'Eden'. Supported by Ballina Council, Byron Studios has created Film & TV studio spaces that are shoot ready right now. Four areas totalling nearly 2000 sq m of studio space. Projects have already taken advantage of our green screen facility with short and long term bookings. Construction on a new home – a brand new, purpose built, multi-million dollar world class studio complex will commence shortly to open in 2023. However, spaces are available now. Byron Studios offers a wide range of expertise and facilities including sound

stages ranging from 150 to 800sqm, a Green Screen Stage, production offices, edit suites, screening theatre, workshop, warehouses, equipment hire as well as world class post production services (e.g. Cumulus VFX and Elements Post Production). The region offers a wide range of stunning landscapes including beaches, rolling rural vistas, historical towns and structures – and all situated in an ideal climate for filming. With governmentfunded location incentives and regional rebates, the Northern Rivers region is proving to be an ideal place for the film and TV industry seeking a (COVID) safe infrastructure, away from the big cities. With major Film Studios being expensive and booked out, Byron Studios, with its proximity to Ballina, Gold Coast and Brisbane Airports is already taking enquiries and bookings for projects in 2021 and 2022. Crawford House Museum located in Alstonville is currently featuring the Alstonville High School's TAS major works for 2020. So you may ask what is TAS? It stands for Technological and Applied Studies and encompasses all our technology subjects, for example, Food Technology, Timber Technology, Digital Technologies etc. Technology is an integral part of our society and culture. It ensures students will be empowered to create, shape, select and use technology for the improvement of their quality of life. The TAS staff at Alstonville High School believe it is important to establish a special focus in the curriculum for this. For 2020 our classes included Textiles and Design, Industrial Technology Multi-Media, and Industrial Technologies - Timber projects and furniture technologies. Through the study of technology, students develop the capacity for action and a critical appreciation of the process through which technologies evolve and contribute to society. There are opportunities to investigate problems, generate ideas and produce sustainable solutions. Each student has undergone a personal creative journey which has culminated in the thought-provoking major works on display at the museum. As TAS teachers at Alstonville High School, we are proud of their achievements and their efforts. We hope the community come along and share the experience of this exhibition TAS to Reality. The exhibition is available for viewing now until the middle of December every Friday between 10am and 4pm along with Sundays between 1pm and 4pm.

Lennox Head's Classic Beach Pavilion

A fantastic visit this holiday season or a mid-week outing is to journey to the Ballina Naval and Maritime Museum. The fascinating and informative museum, a self-funding not for profit organisation managed by volunteers committed to the goals of the museum.
At the 1922 Lennox Head Estate Auction, foreshore land, Lots 1 to 4, Section 1 (now Lennox Park) sold privately. In 1945, community members successfully requested the then Tintenbar Shire Council to resume those lots for a recreation reserve with a pavilion and other amenities.1
Ballina Naval & Maritime Museum
During 1983 the museum was established by a group of ex-sailors with an interest in preserving our local heritage. Initially, the museum displayed in a small room in the old pilot's cottage, which is now the location of the Ballina Information Centre. However, it quickly outgrew the space and relocated in 1993 to the present position on Regatta Avenue. The museum has a variety of exciting displays designed to inform and educate the local community and tourists visiting our region. The presentation on the Las Balsas expedition is fascinating and the exhibition features one of the three Las Balsas rafts which travelled from Ecuador to Ballina in 1973. The facility hosts the most extensive collection of naval and merchant ships in Australia. The models include ships, galleons, yachts, warships and merchant ships; some are up to 3.5 meters long. The models depict life at sea through reproductions of mess decks and ship's cabins. Other memorabilia at the museum include uniforms, communication devices, medals, badges and illustrations along with a souvenir and gift shop. The Ballina Naval and Maritime Museum mission is to collect, preserve and present the rich maritime heritage of Ballina along with past and present mariners. The museum is open seven days a week from 9am to 4pm and located on Regatta Avenue in Ballina. For further details visit www.ballinamaritimemuseum.org.au
Lennox Head Heritage Committee
The owners were compensated a total of £150 ($300)2 for the four lots. By the early 1950s, Lennox Head boasted a brick and glass tile pavilion. During the past 70 years, meetings, picnics and housie games were held there. It was the favoured spot for fundraising ventures by local groups. Still providing shelter and protection, the pavilion has withstood cyclones and the tornado. In 2011, following community pressure on Ballina Shire Council (Council) not to demolish it as part of a foreshore upgrade, renovations were carried out, and it is ‘now serving the community better than ever’.3 Council’s 2020 Lennox Village Vision plans to update the town centre again propose demolition.4 Many current and former residents and visitors have an attachment to the character pavilion. Macadamia Industry Q & A with local beekeepers By Andrew Leslie

Andrew Leslie is a second-generation macadamia farmer who loves being part of this exciting, everchanging industry. Andrew has shared with us some local macadamia nut history, interesting facts you might be surprised to read and an update on our local industry.
The tasty macadamia is native to the Far North Coast of NSW through to the Northern edges of South East QLD. The first orchard in NSW was established locally at Rous Mill in the late 1800s, four of the original trees remain there today. Some Interesting facts about macadamias: • The macadamia was named after a Scottish born scientist (John Macadam). It was initially commercially advanced in Hawaii then Australia became the industry leader from 1970’s to now. • Australians are the biggest consumer per capita of macadamia kernel. • The macadamia is Australia’s largest exported native horticultural crop. The industry is sustainable as 100% of the macadamia is used. The husk is used for compost, the kernel for consumption and the shell for renewable energy. Macadamia oil is extracted, and cold-pressed from the kernel. Full of beneficial properties the nut is sort after in both the food and the skincare industry. Macadamia oil is among the closest of all botanical oils to human sebum that is naturally found on your body, making it a perfect moisturiser for your skin. • The macadamia tree also aids climate change by sequestration of carbon from the atmosphere and returning it to the soil where it belongs. • Besides tasting good, macadamias are high in monounsaturated fatty acids (approx 85%) and is linked to reducing cholesterol in the blood. The world’s largest macadamia processor is Marquis Macadamias located at Lindendale near Lismore. It is a 100% Australian grower-owned cooperative that employs up to 330 staff at the peak of the season. This edition we placed the spotlight on local beekeepers Robert and Rebecca from wholesale honey business, Ballina Honey. A dynamic and hardworking duo; they both work off the farm jobs alongside working as beekeepers. Enjoying the blend of on and off farm work, Rob is an Electrician and PLC technician, and Bec is a registered nurse. They suggest the combination of work places and lifestyle gives them balance, challenges and rewards. Their lush small 28-acre farm is located at the base of the Uralba Nature Reserve in Pimlico, shared with the couples two young sons, who enjoy having all the green space and animals around them. What attracted you to this region? We moved here in 2009 from Western Australia following the birth of our first son. We wanted to be closer to family support, and there were quite a few family members here, even though Rob comes from Sydney originally and I (Bec) come from the Southern Highlands. Inspiration behind starting your farm? We describe the business as organically growing. Rob had “a few hives” - that’s the way they all start! Soon enough, we had a massive excess of honey hanging around. That led to a market stall and gifting honey all over the place. A lot of the people we gave a jar of honey to then went on to retail it for us. We have been led by the requests of our customers ever since. When people ask us if we have a particular product, we try to make that happen. Rob’s father and grandfather were both beekeepers, and my (Bec) father also had a few hives. We now have more than 20 local retail outlets and sell a lot online with 60% of our business produced through online sales and 40% from wholesale honey. What does your everyday life involve at your farm? Everyday life is a nice mix of hectic and peaceful. Rob tends to manage the online side of the business, running parcels into town, and working in our bottling shed after dinner at night. I (Bec) get the kids off to school, then do the honey deliveries before my afternoon shifts as a nurse a few days a week. We have plenty of those animal related mishaps that others will know all too well; the cattle getting out and eating the whole vegetable garden while we are trying to load honey in the rain or the delivery driver hitting the hives and bee bedlam following! We have other invaluable team members who we could not survive without. Recognising the limitation of the hours in the day is a good lesson and allows us to balance life and work.

What do you love about your farm? We all love the forest and animals on our farm. It’s such a privilege to live on the land with koalas, wallabies, and all the other locals. My (Bec) personal favourite thing is walking through the forest at night in September when the fireflies are around. It’s just pure heaven. Best part of your job? The interaction with customers and tasting so much honey! We really get a kick out of peoples enthusiasm for knowing the origin of their honey and how it is produced. It is lovely that people will travel to visit us and buy our honey. What is the best part about living in our region? The choices we have, to be in the ocean, the city or the bush. Everything we could possibly want is within an hour. It’s clean and green and beautiful, and the general population are appreciative of natural foods and the connection to the producer. Are you involved in any local activities or groups? I (Bec) am involved with Northern Rivers Wildlife Carers and Friends of the Koala. Rob attends gardening workshops and enjoys interacting with the many other beekeepers locally, and the Northern Rivers Amateur Beekeeping Association. Your favourite local shop? My (Bec) favourite shop is Nixon Bulk Foods in Lennox Head and Old Quarter Coffee in Ballina. Rob’s favourite is anything that sells tools or car parts! Advice for others starting in your industry? Anyone starting in wholesale supply should get your branding set across the range before beginning supply if possible. Using a great graphic artist is well worth the cost. With COVID restrictions further lifting, it is great to see activities resuming across the region.
It’s pleasing to see flights from Dubbo and Canberra extended until the end of January 2021. This is a welcome boost for our tourism, travel and hospitality sectors. Our shire has been experiencing strong interest from the film industry, attracted to our beautiful region. Council has recently supported Byron Studios in the use of Alstonville Cultural Centre to further support the growth of this industry in our shire. It is wonderful to see new opportunities that bring a range of economic and social benefits to us all. Nominations are open for the 2021 Ballina Shire Australia Day Awards. We’ve seen some extraordinary efforts of people helping others, particularly in these challenging times. The Awards
program is a perfect way to recognise and promote these efforts. Nominations close Monday 30 November and can be made online at ballina.nsw.gov.au/AustraliaDay It is great to see patrons back at the Alstonville Aquatic Centre. I believe the new amenities and hot outdoor showers have been a huge hit. You can also expect to see works commence on the Wollongbar District Park in the near future. The Coastal Shared Path is fast becoming a popular attraction. With the final section now open at Skennars Head, it directly connects to over 65 kilometres of shared path alongside our scenic waterways. The final leg of the Coastal Recreational Walk from Sharpes Beach to Pat Morton is also progressing well. As we lead into the festive season, on behalf of councillors and staff, please enjoy the warmer months and our shire’s wonderful amenities.

Knowing whether a toxic relationship might escalate, and if, or how, to leave is rarely as straightforward as it seems. The impact of coercive control means we can be left feeling isolated and trapped, with the end of the relationship no guarantee of freedom.
As we look to the Government and services for answers, a study has found that the solution is already in the hands of every Australian (or at least, it could be soon). Funded by the Department of Social Services, the study tracked the impact of a new solution, called the StandbyU Shield, on the safety and wellbeing of 100 families impacted by domestic abuse. The StandbyU Shield brings friends and family together into support networks and provides smartwatches to keep them connected at critical moments. It means help from people who care is always only a push of a button away. The results of the study
were overwhelmingly positive, with 93% of women agreeing it significantly improved their safety and all saying it significantly increased their wellbeing. Chris Boyle, Founder of StandbyU, the charity behind the solution, explains, “What I’ve learnt from 25 years working with impacted families is that real, lasting freedom is found in connection. When we feel connected to people who care, we feel safer and more confident to overcome the fears and threats that confront us.” As one woman explained, “Having the watch has given me lots of strength. Summerland Farm’s $6 million expansion Summerland Farm (House with No Steps) is a wonderful organisation in our region. They came to me a few years ago with a proposal to upgrade their facility at Alstonville. This was to ensure the future of the farm and increase its attractiveness as a tourist destination.

I recently opened the $6 million expansion ($4.5m of this was from a Federal Grant I obtained). This provided employment for 26 people during construction and will create 35 new ongoing full-time jobs. They employ over 100 people in our community with a disability.

There's also an improved retail experience and a new facility for the macadamia industry. 2020-21 Federal Budget The 2020-21 Federal Budget was recently presented to the Parliament. It is important as it outlines our Economic Recovery Plan. Around 25,990 age pensioners in our region received two support payments of $750 in April and July this year as a stimulus. They will receive a further two $250 payments in December and March. That is $2000 in extra stimulus over 12 months. We will also provide an additional $17.8 billion in personal income tax relief for more than 11 million working Australians. This is about putting more money in your pockets to spend in our small businesses and help create jobs.
Legally and practically, one calendar month minimum is required to organise the formal paperwork. What do you love about your shop? I love the easy-going ambience of the shop and the customers. We are very family-friendly and seeing children get so excited about books and seeing their favourites like Bluey is really fun. What do you love about working in the Northern Rivers? I love the natural beauty of the area we are so lucky to live in and the friendly and casual nature of the people here. Originally a country girl from Inverell, after a short stint living in Sydney, I settled in Ballina. Although I’ve worked the entire time I have lived here, life feels like a permanent holiday. One of my earliest memories is snuggling on my Nanna’s lap aged about three while she read to me. Letting me turn the pages and looking at the pictures together while the adventure unfolded. I still remember the feeling of security, warmth and love, listening to her voice and doing this thing together - storytime. Below we have put together some helpful tips to assist you when making your decision. Skills and qualifications - There is no getting around the fact that experience and training will more than likely deliver if you are after a high standard of quality. Many trades such as plumbing, electrical and building, among others, require a tradesperson to be currently licensed for the work to be undertaken. A tradesperson should be able to provide you with a written quotation of the required work and give advice as to the risks involved if any further charges could be encountered. Punctuality and insurance - The best tradespeople will keep disruption to a minimum by always turning up on time and finishing the job as soon as possible. If an accidental injury or damage to property is encountered, you should feel confident that the person or property will be covered, and that the tradesperson has adequate insurance coverage for the task being performed. Attitude and professionalism - Source a tradesperson who shows respect and personal responsibility for your home just as much as if they were working on their own home. The job-related mess should be cleaned up afterwards, and you should be given the opportunity to check that you are satisfied with the quality before they leave. A tradesperson should understand the customers' demands and research requirements, as opposed to someone that may just offer the lowest price. References - A proven record is a strong reassurance; do they have photos of their previous work? Are they willing to provide any references from previous customers? Remember, the bigger the job, the more research and homework you are expected to undertake.

How to make a small aquaponics system

Aquaponics is a fun way to grow organic, pesticide-free fruit, veggies, herbs and microgreens for your family. Not only do you get the benefits of healthy veggies, but you can also have fresh fish. In this edition, Glenn Baxter from Ebb N Flow Farm will describe how to create a small Chop and Flip aquaponics system of your own, using easy-to-obtain items. Required materials to build your own system • 1 x Flexible pipe or PVC (roughly 3m) • 1 x Freshwater test kit Available from most aquaculture or pet shops. • 1 x Food-grade IBC container IBCs are 1000lt plastic containers that have a cage around them. Make sure you know what was in the IBC before you purchase it. For safety’s sake, purchase a food-grade IBC that only contained food or water. You can find IBC containers easily on websites, along with local rural supply shops. • 1 x Continuous submersible water pump (1,500 - 2,000 litres/hour) Here is a link to a pump that will do the trick: www. aquagardening.com.au/pondmax-ev2-series-powersaver-pump (Country & Coast receives no commission) • 1 x Bell Siphon A bell siphon is a great way to flood and drain your bed without electricity or the need for timers. But guess what? The plants love it, all those little nooks and crannies on the rocks provide a wonderful home for the nitrifying bacteria to colonize and turn that nasty ammonia into tasty nitrates for the plants. • Fish Native fish such as Silver Perch and Jade Perch can be an excellent choice for aquaponics and are goodeating fish as well. To produce the waste you will need for your system, approximately 12 fish will need to grow out to plate size for every IBC grow bed. Plants with a strong track record of success are sugar snap peas, cauliflower, broccoli, tomatoes, cucumbers, eggplant, celery, strawberries and more. However, don’t grow root vegetables in gravel beds. Building your system STEP 1 Remove the IBC bladder from its frame by unscrewing the two top struts of the structure and sliding the bladder out. Using a grinder, cut off the top section of the frame just under the second rung to use for a grow bed. Unscrew the metal base from the remaining structure and flip, reattaching the cut section to the metal base using Tek screws. Measure 350mm down from the top of the bladder, make a mark and using a jigsaw, cut around the bladder at the same height. Point to note: Think about how you will stop sunlight from getting into your tank causing algae (options are painting your tank black or lining with insulation sarking or maybe even timber). two framing rails that you removed previously to the grow bed frame and place smaller grow bed on top of the fish tank. Cut a 32mm hole into your grow bed floor for your bulkhead fitting and bell siphon, making sure that they are accessible later. See an example of this step here, www.youtube.com/watch?v=MCPaeTjGC78 STEP 2 Place the pump into the fish tank and attach the pipe to it. Run the piping up and into the grow bed, as shown in the picture. Make sure you add a tap so that you can regulate the water flow. Placing a T-joiner above the waterline with a second pipe shooting water out across the top of the fish tank is excellent for aeration of the fish tank. However, installing an air pump will also help keep oxygen available for your fish. STEP 3 Fill the grow bed with the clay media you have chosen to a height of 300mm. Fill fish tank to approximately the 600lt mark and start the pump. As the grow-bed is filling, top up the water in the fish tank until both fish tank and grow-bed are at their desired levels (fish tank 600lt, media bed 250lt). Adjust the intake tap on the grow-bed to a flow rate that will allow the bell siphon to flood and drain properly, this takes patience and a little tweaking to achieve. Once the bell siphon is working, you should buy some cheap test plants, as the bacteria in the system has not had time to cultivate yet. It is now time to cycle your system. To cycle your system, you will need to add about 1/2 Tbsp of cloudy ammonia to your water; however, make sure it has no detergents or fragrances added. After a couple of hours, test for ammonia using your freshwater test kit. Keep adding and testing until you reach a level of 2 – 4 ppm. Once the ammonia concentration is steady, you will start testing for nitrites. Once nitrites appear, continue adding ammonia once a day, this will cause the beneficial bacteria to multiply. After a couple more days, start testing daily for Nitrates, this may take up to 2 weeks during summer to complete and longer during winter. Once you have a reading of 5 – 10 ppm for nitrates (this is a low level for nitrates), your cycling is complete, and it is now safe to add your fish to the tank. It could take a few weeks to reach these levels. Once the system has cycled, its recommended to test the water and keep a daily record. Remember, when the fish are big enough and producing enough feed for your system, you can expand by adding another grow-bed. Enjoy creating a healthy, sustainable garden with no chemicals or pesticides. I recommend placing these grow beds out of the direct sun. It is exciting to grow your own produce. This system cycles over and over, with little water loss, except for what your plants will need. You have the grow bed up high, so it’s easy to reach, won’t get run over by the lawnmower, dug up by the dog, eaten by your pets or stepped on by the kids. Most of us have thousands of photos saved on our computers and phones featuring special events, milestones, holidays with family and friends, and so many more beautiful memories. Why not try making some photo books with these wonderful events. There is something special about looking at a coffee table and seeing a personal photo book full of memories.
Summer is an amazing time to be outside. Particularly for those that look forward to the smell of freshly trimmed grass and the beautifully manicured edges that give gardener envy. Here are some helpful ideas for those who enjoy lush green lawn with healthy colour and minimal weed invasions.
How to start There are many different companies to use for printing your photo books. If you are using photos on your phone, there are apps you can download where you can make the book on your phone and send it straight to the printers. Or if you are using the computer, select a printing company that has free software to help you design your photobook. The photobook software is excellent for beginners, with easy to use templates, page layouts and plenty of tutorials. Save time by organising your photos into folders on your computer or in a separate album on your phone. This can help you sort your favourites and narrow down the ones you would like to feature.
• Never mow more than one-third of the length of your grass in one go. This can traumatise your lawn, causing it to become sparse and patchy. You need to keep some length on your lawn as this will be much more comfortable underfoot for family, friends, pets or even all those post Covid-19 restriction BBQs you have been dreaming about.

Travel & Family Photo Books There are so many options when creating photo books; a travel book cherishing adventures or a family book full of special events and heartwarming memories. Tip: Add extra spaces for scanned tickets, postcards, invitations, etc., to accompany your photo, or leave spaces when designing your pages to glue in special items.
Grandparent Memory Book Coming up to Christmas, why not try making some of the books suggested above for loved ones. A great DIY project where you can also involve your kids. Grandparents love to get memory books, and these make a great gift. A special touch could be creating a book on all of their children or grandchildren, and have each person write or type a special message into the book. Tip: Include a family tree drawing as a unique element of the book; you could do this yourself or get the kids to create one.
There are so many varieties of photobooks, why not try to create one for yourself. Choose your photo book type, it could be a travel, family, wedding, newborn, adoption, business, pet, bedtime stories, drawings, portfolio, cooking or gift book, and then just go for it. You never know what you may create and if you have found your new much-loved hobby.

• A small change in habits can bring large rewards. Another advantage of a slightly longer lawn is there are fewer voids for weeds to establish themselves in. This reduces the time and effort of removing these weeds or the cost and hazards associated with mainstream weed control chemicals. • A longer lawn means more water savings. A little extra length to your lawn also provides a bit of shade for the soil underneath. This means it won’t dry out as fast and you’ll need to water it less, which is far better for the environment and will leave your lawn more tolerant of occasions when water restrictions may be in place. • Try to water your lawn a little longer and early in the morning but not as often. This will provide the roots with deeper moisture which in turn promotes the deeper growth of your lawn’s roots. Watering early in the morning will increase the moisture content of the soil before the day gets hot, while reducing the chances of the lawn browning off or developing fungal problems. • Fertilise early on in summer. Increases in constant sunlight throughout the day during summer can be a bit of a drain on you and your lawn. Fertilise early in summer and resist the urge to trim your lawn back to its roots, this will reduce the stress your lawn goes through. The Ballina Shire Council recently announced the opening of the exciting new coastal pathway between Skennars Head and Pat Morton Lookout at Lennox Head. This is the final section of the coastal shared path and completes Ballina's 65 km's of shared path network, allowing pedestrians and cyclists to travel safely between Lennox Head and Ballina. 'This is a tremendous recreational asset for the whole region. It will encourage locals and visitors to explore the beautiful Ballina Shire. Whether they choose to walk, run, cycle, scooter or skate, they can do so safely all the way from West Ballina to Lennox Head village if they choose too,' said Mayor David Wright. 'People enjoy the relaxed lifestyle the Northern Rivers is so well known for with easy access to the coast and hinterland. The coastal shared path connects our communities, provides an easy and safe commute between home and work along pristine coastline and through littoral rainforest. It doesn't get much better than that,' added Mayor Wright. Funding for the final section of the shared path is thanks to $880,000 from the NSW Government's Stronger Country Communities Fund and $880,000 from the Federal Government's Regional Jobs and Investment Package. I know what you are thinking... and yes it is nearly Christmas time! What about something different for gifting to family and friends this year, like these DIY boxes? These Christmas gift boxes are relatively easy to create and a great activity to do with the kids this school holiday period. Last year, I decided to give family members gift hampers instead of individual gifts. Each box contained local products, such as nuts, sauces, oils, chocolates, skincare and platters along with gift certificates for local experiences like picnics at Summerland Farm, coffee shop, movie or beauty vouchers. I found it so much more special, creating a list with my eldest son Bailey of what he thought his extended family would like to try. Particularly, experiences his grandparents could go and do as a couple. It made a really unique gift that also supported our local small businesses. You can include your own ideas, and maybe pick up a few products from our Christmas Gift Guide. Start by collecting boxes with different sizes; they can be any type. Cardboard boxes also work, as your kids can colour them in or draw their own designs on them. We collected stacks of matching boxes, one or two boxes for the reindeers and three for the snowman. There are many designs to choose from online, select a type your kids would like to stick on the boxes and print away, or have them printed somewhere locally. Once they are printed, cut them out ready for decorating. Now your kids are ready to glue or sticky tape each item onto the boxes. Ingredients (Salmon Bowl): 2 x 150g Salmon Fillets 1 Cup Cooked Rice 1 Cup Bean Sprouts 1 Cup Baby Spinach 1 Carrot 1 Lebanese Cucumber 1 Radish 100g Snow Peas 1 Tsp Toasted Sesame Seeds 2 Spring Onions 1 Tsp Water
Instructions Preheat the oven to 200 OC (180 OC fan-forced) and line a baking tray with baking paper. Place a small saucepan on medium heat and mix together the Tamari, dry sherry, honey, ginger, garlic, brown sugar and sesame oil. In a separate bowl, mix the water and cornflour together. Pour the mixture into the saucepan and vigorously stir as the mixture will begin to thicken. Reduce to low heat and continue to stir for 2 minutes until the sauce consistency is thick. Set aside 1 tablespoon of the sauce and save the remaining for serving. Brush the salmon fillets with the sauce mixture, then place them skin side down on the baking tray. Bake in the oven for 15 minutes or until the salmon is mostly cooked. Remove the salmon from the oven and allow to rest for 5 minutes. Dispose of the skin While the salmon is cooking, prepare all the salad bowl ingredients. Trim the snow peas, slice radish and spring onions then grate the carrot. Remove the seeds from the cucumber, halve and slice. Bring a small saucepan of lightly salted water to boil. Add the snow peas, carrots and bean sprouts, then cook for 1 minute, drain and set aside. In a small bowl, mix the bean sprouts with the reserved sauce and 1 teaspoon of water. Serve the salmon on rice with the prepared vegetables. Drizzle salmon with remaining teriyaki sauce from pan. Sprinkle on top sesame seeds and spring onion.

Five Easy Steps
CLEANSING ROUTINE: Clear away the old and dead skin by cleansing. Twice a week try to use either a soft brush, skin scrub, exfoliating scrub or salicylic acid wash to help brighten up your skin. This can clear blocked pores allowing serums, moisturisers and lotions to be absorbed deeper into the skin. If you have sensitive skin that becomes irritated, then exfoliate just once per week. CLEANSER TYPE: With the weather warming up, try to switch from a cream-based cleanser to a gel variety. Gel cleansers are generally much lighter on your skin yet still effective. If you have skin that tends to be oilier than others, try a foam cleanser. Make a conscious effort to wash your face both in the morning and evening. When spending longer outside in the warmer months, you are exposed to more possibly harmful pollutants in the air which can attach themselves to make-up and moisturisers during the day and exacerbate your skin's signs of aging. Heavy creams contain lipids that can cause clogged pores and pimples in more humid months. Instead, try serums, lotions or hydrating gels, which are all lighter on your skin. SUNSCREEN: Wear a good quality broad spectrum sunscreen of SPF 30+ or higher on all exposed skin. Don't forget about hands, feet, ears, and lips. A surprising number of skin cancer cases occur behind the ears and on other areas that you may miss when applying sunscreen. Remember, sunscreen needs to be re-applied at least every 2 hours. So make sure to pack extra sunscreen for longer summer days outdoors. It is also a great idea to set an alarm to remind you to reapply sunscreen. SUN SMART: Consider covering up with clothing which provides better protection from the sun’s harmful rays. If you’re working or exercising outside, then wear sunprotective clothing. Look for a clothing tag with a high ultraviolet protection factor (UPF 50+) rating to be sure. Be wary of clouds sunburn can still occur on cloudy days. Clouds only block about 20 per cent of the sun’s UV rays. Apply sunscreen as you would on sunny days. DIET: Eat for sun protection. Although not a fantastic choice for skincare alone, studies show that certain foods may offer an extra level of UV protection and may reduce the risk of skin cancer. Foods high in antioxidants such as colourful fruits and vegetables, like cherries, citrus fruits and pomegranates are good performers in studies so far. Other promising ingredients are Swiss brown mushrooms, green tea, nuts, Greek yoghurt with live active probiotic cultures, kombucha, and oily fish (such as salmon).

Go solo or get a group together and start exploring our great outdoors. It’s a great way to gain an appreciation of your local (or not so local) area and spend quality time with family or friends. That’s true now more than ever. Advancements in camping technology combined with fewer opportunities to travel overseas or interstate mean there has never been a better time to go on a road trip. Here are some tips to make your next camping adventure more enjoyable, particularly if you are a first-timer. • Check your existing gear as soon as possible. If it hasn’t seen the light of day for a few years, it is best to ensure it is still in working order. A rat may have fancied your tent as a cosy little nest, or your gas bottle may be past its use by date. • Make a list of essential items and make sure to buy them well in advance of your departure date. Stock availability or other supply issues should not be allowed to ruin an otherwise excellent adventure. Only purchase quality equipment with good guarantees and after sales service. Cheap gear can be a false economy and just end up as landfill. If you buy online, consider how much it might cost in both time and money to post it back if there is a problem. • Become familiar with your equipment, including your tent, bedding, and cooking arrangements. If you have never camped before, have a practice night out in the backyard so you can get an idea of what is needed and what isn’t. Don’t forget to make sure everything fits in your vehicle. • Consider carefully the luxuries you can’t do without when you choose where to stay. Do you need electricity, a park with kids’ entertainment, or bathroom facilities? Would you prefer to be close to town, so there are places to eat and buy supplies? If you don’t need any of these things, then the peaceful surrounds of a National Park may be more your cup of tea. • Don’t underestimate the importance of light. Arrive at your campsite with enough time to set up your tent in daylight. Think about what you may need to illuminate the campsite at night. It’s no fun tripping over tent ropes or branches, and how do you prepare a meal while holding a torch? My family has been fortunate enough to have had overseas holidays, but our best memories are from the adventures when we went camping. Put your feet up, go exploring, fish, swim, make new friends… you are guaranteed a good time. Suburb Profile What a beautiful day out! There is nothing quite like packing the car to go off on an adventure. Somewhere to explore, go for a swim and relax with great food. Evans Head can provide just such a trip. Evans Head is surrounded by untouched national parks and a stunning coastline; perfect for a swim, surf, dropping in a line or going for a bushwalk. Roughly 30 minutes drive from the Ballina Shire, on our journey, we stopped at the Broadwater Inland Lookout. A short 10-minute walk amongst coastal banksia, bottle brush, eucalyptus and wattle trees. The lookout provides 180-degree views of the headlands and national parks along with the opportunity for bird and whale watching. Next, we ventured up to Razorback Lookout located 45 metres above sea level. The lookout provides breathtaking panoramic views of the seaside and Evans Head township. After some exploring along the coast, we decided to cool off with a swim in the Evans Head river. Such a beautiful location, easy to park, find a special spot to play and build some sandcastles. After the kids were worn out, it was the perfect time to go check out the shops, one asleep in the pram and the other too tired to talk... I won't lie, that is a welcomed break in our household. We popped into a variety of interesting shops; my personal favourites were Beachside Bargains and Sand and Stone in the Evans Head Newsagency. Both stores offer a range of homewares, decor, gifts, artwork and more. A visit to Evans Head isn't complete without stopping for a meal at the Hotel Illawong. Situated in the heart of the vibrant town centre, their team prides themselves on offering friendly service and quality food. There are spacious dining areas and a beer garden along with live music every weekend, providing
a relaxed atmosphere and a fun outing for the whole family. There is also a children's play area, which we, of course, sat right next to, so we were set for a great night. The meals and service were exceptional, and the kids were thrilled with their meals, which of course came with bonus ice cream. During our visit, we popped in for some Q&A with head chef, Scott Boulton. An Evans Head local with a fantastic sense of humour, Scott has worked at the Hotel Illawong for over five years. Why do you love being a chef? I love the pressure and stress that comes with being in a commercial kitchen. It is very enthralling, and being able to train and teach apprentices then let them create dishes is fantastic. The best thing about working at the Hotel Illawong? We have an amazing and caring team here at the Hotel. Everyone helps out and goes above and beyond to try to deliver the best they can. Our staff catch-ups are pretty good too haha. What is your most memorable achievement? The highlight of my career would be cooking for bigname celebrities back when I was younger. These celebrities included Elton John, Lady Gaga, Marco Pierre White and George Michael. They were great to cook for and had some very unusual requests. A chefs role would have evolved during the past year; what changes have you implemented for these challenging times? During this pandemic, our team have tried to do whatever we could to stay open and provide a service for the locals. Whether it was our home delivery service for food and drinks or special dining options during stringent social laws, we tried to adapt as best we could.

Some of your recommended dishes when visiting? Something that is never allowed to come off our menu is our cheeseburger with local butchers beef, Australian pickles and plenty of cheese. It’s a crowd favourite! Why do you love living in Evans Head? “Heavens Head” is an amazing place to live and play. Without the hustle of Byron or Lennox, you can really enjoy the local shops and drinking holes along with the river and little surf spots. Any hidden gems for our readers to find? Kylie Paisley Pencil Drawings
Kylie Paisley is a local illustrator creating beautiful, highly detailed greeting cards and prints. She lives in the Northern Rivers with her husband and two sons. Her talent is undoubtedly demonstrated in the ability to utilise Prismacolor pencils, creating stunning life-like art pieces. Your childhood and current family life? I grew up in the Northern Rivers and was extremely lucky as a young girl to have parents that loved to spend a lot of time camping, exploring and being out in nature. I found school difficult and instead spent a lot of time drawing. At the age of 15, I left school to start work as a veterinary nurse and still work at that same veterinary clinic today. I live in the local area with my husband and our two young boys. Once my boys were old enough, and I could find a little time to focus on what I really love, I started to draw again. I guess the drawings are a vision of my own personal, realistic reconstruction.
Where do your ideas begin for each piece? I often see something that I just love; then I gather many photographs and where possible have a physical subject such as botanicals so I can try to match the correct colours. When starting a drawing it has to feel right, never rushed, so I can enjoy the moment. What artistic tool is essential, and is there something you can’t live without in your studio? I love to use 425gsm HP 100% cotton paper. It's important to have a strong pencil sharpener as I am forever sharpening pencils, a firm rubber and never forget a good cup of coffee!
Can you tell our readers about Prismacolor pencils? Prismacolor is a brand of artist pencils created with high-grade pigments and a soft thick wax-based core for superior blending, shading and rich colour laydown.
Any advice for our readers Don't be afraid to start all over again if you're not happy with how the drawing is progressing; I often redo drawings just so that I can be proud to share my work. Never make it a job or put too much pressure on yourself as your mood will always come through the drawing just let it come naturally. Experiment! Just do what feels right for you. I feel like my technique is forever changing with each drawing.
The best part of your job? Being able to share my love of drawing with the world, along with inspiring others, is the best part. Drawing brings me great joy, and I hope that my art can help to remind us all to fall in love with the world every day.

Q & A with Annette Olofson

Annette Olofson is a talented textile artist who uses her beautiful weaving loom to create stunning, high-quality scarves, shawls, table runners and placements. Each product is unique, with the colours hand-dyed and produced from the best quality wool, cashmere silks, cotton, linen, alpaca and baby camel. Annette shares her studio in Uralba with her husband James, a glass artist creating platters, bowls and unique art pieces. A remarkably paired artistic duo, Annette also contributes to the design and colours of fused glass art. Tell us about your background? I grew up in Scandinavia where the hand-making of textiles has been preserved and my family was involved in fashion and design. I learnt these skills from an early age. Later, I trained with some of the world's best loom weavers. What does your everyday life involve? My day starts by creating the design of a piece and choosing the yarn. Then I may dye it to a colour that I need. Next starts the warping of the loom and the long process of weaving. At the end, various hand-finishing methods are used to create the quality. Where do you draw inspiration? My previous work as a beauty therapist allowed me to help people to feel special. I always wove in my spare time alongside this career and then went full time. It’s a similar inspiration now with quality scarves and shawls. They can make someone feel warm and cozy in the spring,

autumn and winter. Or someone can accessorise with a beautiful woven scarf, and it turns the look into “stunning”. The best part of your job? I feel privileged to be able to create things that others see as beautiful and continue to make them feel special. I love the fact I can start just from different types of yarns, and at the end, it is this amazing piece of fashion. What would be your dream project? To exhibit my huge wall hangings again in a major gallery so more people can enjoy them. The reaction is so strong that I would like to let others see them. Any advice for our readers considering weaving? Start with a table loom and get a few lessons. From that, you can work out whether you enjoy it because it is a very complex form of art and takes a long time to perfect. However, you will be weaving quite quickly.
