So, Covid-19 became the thing that changed how we live and interact in 2020. I can tell you; it was a bit of a struggle to fill our events page this edition. However, as we produce each new publication, I hope to see the return of more of our regions amazing events. It seems strange to launch a new business during such unknown and testing times. However, there was a strong feeling that our area needed a local print resource to support our business community and inform readers of just how much our area has to offer. Country & Coast was founded from the desire to produce a beautiful local printed publication with a platform to provide positive stories of our region. Our magazine creates a space for local businesses, and community groups to advertise in print, fulfilling a niche in the free publication and gloss market. Our stories are written by a diverse group of local contributors who love where they live and want to share that information. The cover of each publication will feature a plant or place in our local area. There is also a digital version available on our website for online viewers near and far.

Inside this edition This edition was so exciting to produce. Particularly, enjoying our time together with a trip to Victoria Park. We loaded up the kids and off we went. Both my sons were excited when we pulled in. It was Brendan's first trip to the park, and what felt like Bailey's 100th. They had a wonderful time together, and Brendan was immersed in every word Bailey had to say. I hope that you will enjoy reading 'Country & Coast' as much as I enjoyed putting it together. Thank you to all the contributors for the edition and to the local businesses that have shown continued support. Our magazine has 32 pages of information to view, our sections including community and business news, trades, home, garden, family, health, fashion, beauty, real estate, classifieds and more. Don't forget to enter our launch competition for your chance to win an accommodation package at the Ramada Ballina Byron. The details are on the back page. Speaking of prizes, we are also running a Fathers Day competition with a family prize pack to Wardell FootGolf to be won, details on page 18.

Places We Love By the year 1900, the rainforest of Far North Coast of NSW had been subjected to almost complete destruction. Victoria Park is one of the last surviving remnants of the original rainforest also known as the Big Scrub or Red Scrub due to the rich volcanic soil. The original rainforest extended across the entire Lismore, Byron Bay, Ballina, and Mullumbimby regions. Victoria Park provides a short rainforest boardwalk and is wheelchair and pram accessible. The walk takes between 15 and 30 minutes to complete unless you loved it so much that a second loop was needed, as our sons, Bailey and Brendan decided. Victoria Park is a lovely place to relax and walk while listening to

Places We Love

birdsong. Today only 11 viable remnants survive which reflect the character of the original rainforest. Half of these are under 37 acres. The Victoria Park Nature Reserve is one of these smaller areas with a portion set aside for the boardwalk. While the remainder of the reserve consists of two small triangular patches of roughly 10 acres where an ongoing regeneration program is conducted jointly by the NPWS and the Richmond River Naturalists' Club. As soon as you enter the shady green cool of the lush rainforest, dappled light filters through the dense canopy. Giant Morton Bay fig trees and majestic black beans tower above while Bangalow palms and ferns grow up from

Victoria Park Nature Reserve below. Despite the small size of the area an unusually wide variety of animals occur in the reserve, and at last count, there were 152 Tree species recorded in this one small reserve.

Take a moment to absorb the serene quiet of the rainforest, and you might catch a glimpse of the shy red-legged pademelon or the colourful wompoo fruit-dove and at least two species of possum. The informative displays show how the Wildjabul people, of the Bundjalung nation, relied on the local plants and animals for food, medicine and ceremonies. You will also learn how the curved sheath of the Bangalow palm was utilised to carry water, and the sap of the strangler fig used to heal wounds.

When thoughts turn to lunch, enjoy a relaxing barbecue at the shaded picnic tables, to a backdrop of lush rainforest. The accessible facilities make the picnic area an ideal spot for older people and groups with plenty of room for the children to run wild in their natural habitat. A perfect spot for a relaxing day out with the family in the Northern Rivers. Please remember to take your rubbish home with you. The route is signposted, and the reserve is most easily accessed via the town of Alstonville then travelling south 7 km along the Wardell Road and turning onto the Rous Mill Road for a further kilometre.

Moving into the Northern Rivers

Get Active with Scouts! Exhibition Update

High profile domestic violence charity RizeUp is on the move, and they’re heading to the Northern Rivers. RizeUp has partnered with the Newcastle Permanent Charitable Foundation to rewrite the future for families in the region who are experiencing domestic and family violence. RizeUp will be establishing a Northern Rivers Hub that will bring communities together, increase volunteering and will make a real, far reaching and practical contribution to the vulnerable families they walk alongside.

Scouts Australia provides fun youth development activities, building resilient and confident boys and girls aged 5 to 25 in the Joey Scout, Cub Scout, Scout, Venturer Scout and Rover Scout Sections. We also welcome adult volunteer Scout Leaders. Scouts has opportunities for the whole family to be involved. Everyone is welcome, and we value the diversity of our members.

RizeUp provide a practical response that is needed by many vulnerable families pressing the restart button on a life free from violence. When families or single people leave refuge, they are supported into independent accommodation which is empty and without the furnishings needed to sustainably start again. Without beds to sleep on and toys to play with many Mums will return to the place of violence if it means their children will have their bed to sleep on and a blanket to keep them warm. RizeUp and their band of merry altruists prevent this from happening by stepping in at a vital point in the journey from danger to safety. Without ever meeting the families they support, RizeUp works in partnership with specialist domestic violence services to furnish new accommodation with everything needed to turn the house into a home.

What Scouts Do Scouting is all about education for life. Our dynamic, challenging and adventurous program equips young people with life skills, such as teamwork and leadership. It gives them the tools to develop into strong, resilient adults and valuable members of the community. We offer a wide range of opportunities to all our members, including the chance to travel interstate and overseas, earn industry recognised qualifications, and even perform on a professional stage. Explore some of the opportunities we offer on our website: www.scouts.com.au

Rize Up

With one in four Australian women impacted by domestic and family violence, RizeUp believes that systemic change will come through community intervention. Having just surpassed a bittersweet milestone of supporting 1000 families, their practical response and advocacy will make this an organisation you’d love to be a part of. If you’d like to volunteer or donate, please head over to see them at Facebook, Instagram or via their website: www.rizeup.com.au

You can’t go back & change the beginning, but you can start where you are & change the ending. C.S. Lewis

Joan Gandy Meet a Local

Joan Miller was born at the end of 1931 in Shanghai where her father was an officer with the Shanghai Fire Brigade, both parents having been brought up around the English city of Birkenhead. Her father sailed to join the service in 1924 and her mother, when they married, in 1929.

unable to borrow from the bank, so it was a long process – J&J were still putting the finishing touches on the place some 30 years later when they sold. It was very basic to begin with – no linings, windows or mod cons such as hot water, but it was a roof over their heads, even though it did leak at times. Every week they managed to put a few shillings away and buy another length of timber or some other building product. John was a clerk at that stage, so it was a steep learning curve – a 10/6d book called “Build Your Own Home” became their bible. As the family grew so did the house and extensions were added to both the back and the front.

Her childhood was quite different to her Australian peers, but at the time, she did not know any different and thought this was the normal life for everyone. She experienced two Chinese/Japanese wars and the onset of WWII before coming to Sydney with her mother (she was an only child) in 1941 – her Dad went to Singapore as Fire Officer to the British Navy Here they raised a family of three girls and a Dockyard there. After much drama, he joined boy. When the youngest was three, Joan went his little family in 1942. to work at John Fairfax (publishers at that time of The Sydney Morning Herald) and stayed for Joan lived in Manly and Randwick for six over 30 years, witnessing some interesting months before the parents bought a house in times, especially when young Warwick Fairfax Cremorne and that was home until she married made his bid to privatise the company. John Gandy in 1953. Whilst engaged, they built part of a house (two rooms) at Como and The family grew, fled the nest, and as both moved in after they were married. In those days worked in the city they decided to move to the building materials were scarce and because Sydney CBD area where they lived in a small, John was not an ex-serviceman they were but well positioned unit for 15 years, taking

advantage of the many interesting walks and activities of the bustling city. Fifteen years later, in 1998, they joined their eldest daughter and her family, who had come to up to the lovely Northern Rivers region. J&J had always enjoyed travel in both Australia and overseas, and so for four years they did just that until John passed away in 2002. Joan continued with travelling, although these days is limited to “local”, but she has many other interests to fill her days, including keeping up to date with the activities of her ten grandchildren, their partners and her three great-grandchildren. Joan belongs to several organisations such as the Historical Society, Wollongbar Probus, Tibouchina Club, the Uniting Church and its op shop Bargain Basement, Simes Bros coach tours, a couple of craft groups and many of the activities organised at the SDA Retirement Village where she lives. As Joan looks back over her 88 years, she says: “I can indeed quote Albert Facey when I say I have indeed had “A Fortunate Life”.

Update from Kevin Hogan

What to do once you retire?

$23 million for Ballina Airport Upgrade I announced a $10 million grant to widen and strengthen the runway.

printed community news. Thank you Lindsey and welcome Country & Coast Magazine!

One option is to join a local Probus Club!

Over 530,000 passengers came through our airport last year. Every single person who arrives here, especially tourists, support jobs in our wider region. We need and want them to come back post COVID-19.

It was very disappointing to see The Northern Star and Ballina Advocate move to online versions only. There are people in our community who still rely on print to receive their news.

The runway will be expanded to 45-metres wide from 30 metres. This means the next generation of planes can use it, which is a must for the viability of the airport. Great to announce this job-creating project, that will benefit our whole region. Thank you Country & Coast Magazine It is fantastic that we now have our very own locally written, locally

Green Innovation Awards

The Green Innovation Awards was launched in 2018 to inspire young people to develop a lifetime passion for green innovation. Over the past three years, Northern Rivers students and teachers have been working hard to come up with their very own green inventions.

Empire Vale Public School ran their school lawnmower on fuel made from cane sugar. The students at St John’s College Woodlawn have created a circular economy by recycling old clothes to make scrunchies. Additionally, primary school students from Wyrallah Road Public School have recycled water from their school bubblers to grown their very own bush tucker garden. These are just a few of the incredible entries in previous years of the program. Founder of the Green Innovation Awards and local chiropractor Dr Bridie Cullinane explains “we wanted to give young people a platform to share their ideas for a greener future and at the same time inspire and develop environmentally-conscious leaders of the future”.

The program is open to Primary Schools, and High Schools from Tweed Heads to Grafton and entries are due on the 23rd September 2020. Students can invent, develop and present ideas for greener living in categories of: • Water management • Waste management • Building and packaging materials • Biofuels and renewable energy • Agriculture This year the Green Innovation Awards has attracted Southern Cross University as major sponsors and hosts of the awards. Finalists will be invited to Southern Cross University at the end of this school year to present their ideas onstage in front of a panel of expert judges, their peers, the media and community and political leaders. Schools who are interested in participating can download an entry kit online. To read more about previous years winning entries or to register and show your school stands for sustainability visit www.greeninnovationswards.com.au

Wollongbar Probus Club

At the new fantastic Ballina Marine Rescue Tower, a group of dedicated life long learners of the Probus Club of Wollongbar had the pleasure of being educated in the wonderful work of the volunteer Ballina Marine Rescue Team. We were delighted to listen and learn from an experienced and well trained radio operator who delivered the technical information in such an interesting and easily understood manner. This marvellous team do the work 24/7, using the most up to date ultra modern radio communication system always on the lookout for any boat crew in trouble, especially watching the condition of the river outlet bar, the state of the weather and the ocean. The view from the tower operations room is truly spectacular. The team have at their fingertips, radio communication with many other

rescue and support services such as local police, ambulance and indeed contact with all areas even Canberra. After trying to absorb the new knowledge, we were treated with a delightful morning tea. All of this service by volunteers, a group of marvellous people. Onto our bus and off we go to the Lennox Bowling Club for what proved to be an extensive menu of wonderfully prepared and cooked meals. They were served from excellent facilities and by friendly and efficient staff. Everyone was duly sated, and it looked like just a little toast for dinner tonight. Following that experience, our bus owner Bill took us on a great tour of the local area around Lennox Head and up into the now vast and rapidly developing estates. After, we journeyed all the way back through East Ballina to our home towns of Alstonville and Wollongbar.

Breastfeeding: Pain Plenty of Options All about bumps birth & beyond

Options in Alstonville

Apart from comical stories of discreetly placed cabbage leaves, or brussels sprouts when desperation strikes, people don’t tend to talk openly about mastitis. The uncomfortable condition plays out in many ways. It can include anything from; flu-like symptoms and red lumpy breasts, to engorged breasts that are hot to touch or generalised aches and pains.

Our business has been in full swing during this pandemic, and we are now catering all kinds of lovely home cooked takeaway meals made fresh daily. We also cater for our elderly local clients with a collect a fresh, wholesome meal service. These meals include silverside with white sauce and seasonal veg, or a speciality roast dinner at a special seniors price.

Nikki Paull is a qualified Lactation Consultant, Child Health Nurse, Orofacial Myology Trained, Midwife and Parenting educator, with over 25 years of experience. When it comes to mastitis, Nikki says her recommendation is to continue breastfeeding, try not to overstimulate the breast by pumping and make sure the baby feeds well on both sides. Keep up food and fluids, rest as much as possible, wear a comfortable bra, and if you have flu-like symptoms, you need to see your GP for at least ten days of antibiotics.

We are also open for limited seating at the moment and ready to serve you a beautiful, tasty meal. Why not enjoy some comfortable relaxation in our cafe courtyard nestled in amongst the town meanderings.

“Along with antibiotics, the option of a specific breastfeeding probiotic is also available, which I can order as a lethecin tablets, for support to help get rid of the mastitis. Other options, are to try ultrasound treatment by specialised physiotherapist, or cold laser treatment by a Chiropractor, Osteopath or Craniosacral. Recurrent infections can turn into a breast abscess, which needs to be treated by a breast surgeon and can take a long time to recover from.” Nikki said. Nikki’s service focuses on providing support for families experiencing difficulties with breast or bottle feeding, care and management, and other issues such as attachment, positioning, under or oversupply of milk, small or premature babies, slow weight gain, use of lactation aids, settling and return to work strategies.

Enjoy delicious cafe-style food and beverages with a variety of options. For breakfast; enjoy muesli with natural yoghurt, fruit and honey, or a hot breakfast of bacon and free-range eggs on Turkish. Wholesome Drop

Hello everyone!

My name is Bec, and I manage an awesome essential oils business with doTERRA called ‘Wholesome Drop’. I’m a midwife, home business owner and live in Wollongbar with my husband and 2-year-old son. I was introduced to doTERRA while searching for something to support my son and I in the postnatal period. He needed digestive support, and I needed emotional/hormone support. I finally tried some, and they worked incredibly! I quickly fell in love with the oils, products and the company. I naturally started telling everyone how amazing they were, so it was an easy decision to dive in and build a business. I absolutely love using my passion for these oils to help others find natural solutions for whatever they need support with, whether that be a physical or emotional need. It’s an empowering feeling to have these tools on hand at all times to support a healthy and happy home. If you want to know more about essential oils or doTERRA I’d love to help. You can find me at @wholesomedrop on Facebook and Instagram or by email on wholesomedrop@hotmail.com Contact Country & Coast Magazine, if you would like to feature as our homebased business profile next issue.

A Mother's Day to Remember!

A Thriving Retirement Community

For years the lead up to Mother’s Day has proceeded like clockwork at Alstonville Florist. Kerry Thomson, partner and business manager, is a planner – so determining how much product to buy, people to staff, what to promote and when, was a straight forward process: review previous years’ sales, make plans for this year, update and repeat. This year that playbook was out the window. The biggest challenge was uncertainty! We had no idea what demand would be, and we weren’t sure what we’d have to sell. Lots of flowers are imported from overseas, and this supply had stopped.

In the heart of Alstonville, Maranoa Village is a thriving Retirement Community. When Pam and Alan Brown felt encumbered by the maintenance at their family home, they decided it was time to downsize. “We had a fairly big garden and lawn, and I was getting a bit sick of having to tend to the garden, and my husband doing the lawns all the time,” said Pam. “We started thinking maybe we could downsize, maybe it’s time, you know.”

By early May Alstonville Florist had received triple the anticipated number of Mother’s Day orders. Our flower wholesalers had cancelled our flower orders and advised they would send us what they could. Travel restrictions also meant several of our usual Mother’s Day team could not work. And yes, there were many 2 am moments pondering what to do. It was a difficult decision, but the order book was closed on the Friday morning before Mother’s Day. This is usually one of the biggest days of our year. However, there were already more than double the anticipated

orders, and every box of flowers delivered to us held surprises! Thanks to the wonderful efforts of our Australian flower growers, our team's amazing commitment and the five delivery crews working on Sunday, all orders were delivered, and there was a collective sigh of exhaustion, and one small bucket of flowers left. Sunday afternoon, there was time to reflect on the incredible power of flowers. They have an immediate impact on happiness. Every delivery, there were smiles, tears, laughs… but no hugs. Mums were simply overjoyed to know that the most important people in their world were sending them beautiful flowers and their love. A huge thank you to our customers and their families, and our sincere apology to anyone who was not able to place an order. We hope we can contribute a small part to all your special moments, big or small, in the years to come. Your friendship and business mean a lot to us. That’s when Pam and Alan heard about the opportunity of brand new retirement villas at BaptistCare’s Maranoa Village, a small but thriving community just a short stroll from Alstonville’s town centre and decided to make the move. “We’re very happy. It’s the best thing we ever did. We very much maintain our freedom,” said Pam. “The villas really are beautiful. We have a nice outlook and a bit of a garden I can put a few things in.” Long-time resident Doug Sutherland moved to Maranoa Village 14 years ago, leaving his family’s farm in the hands of his son and grandson, marking four generations working on the land. It’s the convenient and relaxed lifestyle at Maranoa that Doug loves. “You can walk to everything. I bought a new car in 2006 and it only has a few thousand kilometres on it." Construction has just begun on the second stage of brand new retirement villas at Maranoa Village, featuring 15 beautiful 2 and 3 bedroom units, complete with all the gardening and maintenance taken care of. I love my shop Describe DJM Jewellers in 5 words... Honest, reputable, family, professional, handcrafted What was the inspiration behind DJM? We are very inspired by the stories that our customers bring with their jewellery. When we are repairing an heirloom, we hear how it was passed down for generations. When we are designing an engagement ring, we hear about how the love birds met and when we are remodelling some older pieces into something new, we hear how loved ones have left us too soon. We turn people’s stories into a tangible memory. How did the idea for DJM Jewellers begin? The family business of Diamond Jewellery Manufacturers began in 1981. The original owners, David and Mikael wanted to bring their quality fine jewellery skills to the Northern Rivers. David’s son Andrew has continued the family business since 2015. In a rapidly changing world of with massed produced jewellery, DJM quickly became the place to go for unique handcrafted jewellery. What is the best part of your job? The best part of the job is definitely seeing the reactions on our client's faces. When they come in and open that box which holds an idea, a dream and memory, and they see it come to life. Sometimes we get hugs, sometimes we get tears of joy, but we always get a heartfelt smile that lets us know we have done well.

Diamond Jewellery Manufacturers

What do you love about DJM Jewellers? We love our work space. We love that when a customer enters, they can see us actually working away at our benches. We complete all our work onsite. We are quite old fashioned in our manufacturing, and we love that we are keeping an old trade very much alive. What do you think you bring to the town? Since moving to Alstonville in 2017, we feel we have upheld the Alstonville values of honesty, integrity, respect and professionalism. We might be a small town but every business you walk into here you will be shown the same values, and we feel we exemplify these. Something the community might not know about DJM Jewellers? People might not know that each of the jewellers in DJM are second generation jewellers, and there is a collective knowledge of over 100 years. What are some emerging trends? We are definitely seeing a lot more Australian sapphires and coloured stones being used for dress rings. What products can we find in store? When you visit DJM, you will notice our frequently changing stock. Some of these items include; pendants, earring, necklaces, rings and pins. We also have a range of gift packs to make purchasing that special item for someone you love easier.

Most popular product? We have a small retail space which is continuously changing, so it is hard to choose a favourite product. I think it is safe to say our unique hand made pieces are our favourite as they are one of a kind. What services do you provide? DJM Jewellers provides various jewellery services. Most importantly is our custom made jewellery service. With great time, care and precision involved in creating your dream piece of jewellery, we guarantee you will be more than satisfied with our results. Also popular is our repairs and restoration services. This includes restringing of beaded and pearl necklaces, or we can remodel, rework and redesign any piece of jewellery which you bring to us in need of maintenance. Any tips for our readers? Make sure you get your claws checked every six months. They do wear, and it is cheaper to fix a claw then to buy a new stone and do not throw out any of your broken gold pieces. We can melt the gold down and use it to make a ring or bangle. Diamond Jewellery Manufacturers Shop 4, 75 Main Street, Alstonville 02 6628 3547 djmjewellers@gmail.com www.djmjewellers.com.au

Creative Community

Locals supporting locals

Plateau Bowls has been very creative during isolation and renovations, running a 'photo with the bowl' competition.

We are Brendon and Natasha; both of us were born & grew up in the Northern Rivers and are raising our three children here as well.

On the long weekend, the local community joined in the fun, trying to create the best picture with the new Bowls out the front of the club. The winner will be chosen by the Alstonville Plateau Sports Club and announced during their reopening in July. Thank you to everyone who has joined in on the fun, there are certainly a lot of creative entries!

We started running Village Fresh Fruit and Veg in November 2018, when Phil and Joy (Brendon’s parents) decided it was time to retire from owning the shop for 6.5 years. We are not new to fruit and veg, we have owned PJs Fruit and Veg in Lismore for nearly 12 years.

Alstonville Plateau Sports

The club is holding this competition open until the end of August, so get your entries in now by adding them to their facebook page post. Keep up to date with the Plateau Bowls events by visiting their website or joining their facebook page. (View advertisement, p. 16)

Village Fruit & Veg

Our motto is locals supporting locals, and we strive to get the freshest produce from our local farmers throughout the year. We value our relationships with our farmers, so much so we can often visit their farms with our kids. Having a great connection with the farmer means that we can access fruit and veg that come straight from the farm to our shop, which means there is less mileage and remains at its freshest when it arrives in store. We stock a lot of local products - jams, coffees, honey, chocolates, dairy, soap, olives and much more. We have also just put in a Kombucha on-tap machine. Our customers are loving it, as it is very refreshing and also great for your gut health. When you shop at Village Fresh Fruit & Veg, you are not only helping support our shop but our staff, the local businesses and the amazing local farmers.

Home Organisation

Meal Prep

If you are like me and during isolation decided which cupboards needed organisation, then you should like these DIY labels. The food storage labels above were created using simple clear packaging tape.

While we are on the subject of home organisation, another solution to my household chaos of late has been by learning more about meal prep. Through scheduling meals, I can plan meals and bulk cooking using the same ingredients, therefore reducing weekly food waste and cost.

These days, backyard vegetable gardens are becoming increasingly popular. However, as people get older, gardening can often become a problem. If you would like to continue or start gardening, there are many solutions.

With meal prep, the approach is to organise a bulk cooking schedule. This is where you bulk cook delicious, homemade food ready to have as work lunches or available as dinner meals. This reduces the stress of deciding what to cook each night, and the cooking rush after a busy day. Benefits include eating healthier and saving money from reducing wastes or purchasing less takeaway. All you need is to do some planning and schedule time to cook in bulk. When starting out, choose one-pot recipes to utilise your time more efficiently.

A straightforward option would be to install a raised garden for vegetables, fruits and flowers. Another option is to establish a vertical garden wall; these are becoming popular in unit complexes. Other helpful and easy to maintain ideas include; a long plastic container which could sit on the windowsill, pots with wheels or hanging baskets.

DIY Labeling

Step 1: Step 2: Step 3: Step 4: Step 4: Step 5:

List out the labels you would like in a word document or similar. Print out your labels on a sheet of paper using a laser printer. Cut out your labels and stick clear masking tape over the text. With a ruler or similar object, rub over the tape where it touches the label to remove any excess bubbles. Put the label into warm water for 1 minute, then carefully rub the paper off the tape while submerged. This should leave the letters stuck to the tape without the paper backing creating a clear label. Lay the label with the sticky side up on paper towel until the water has dried. The tape will not be sticky while wet. Once the label has dried, it should be sticky again and ready to be placed onto your chosen container.

Similarly, the labels below were created by designing the required labels, and having them printed on 'sticky prints'. Many places print these online. I ordered these for a $1 each during one of BigW's online sales. They are great as you can remove them with ease and put them on different containers when needed. The toy bins, in particular, have been amazing for keeping our house organised. Kids simply go and pick which bucket to play with, pack them up and slide back in when finished.

Gardening Tips July & August Simple Ideas

Meal prep types Full meal: You cook an entire meal to store in the freezer. Such as; lasagnas, curries, or pasta bakes. Batch cooking: Making multiple meals, then portioning into single-serving containers and store them. Such as big pots of soup, mashed sweet potatoes/pumpkin, fried cauliflower rice, slices, bliss balls or savoury muffins. Ingredient prep: For anyone who likes to cook and serve food all at once. Simply prep parts of recipes by chopping and storing vegetables, mixing spices or marinating meat in advance to save time when you are ready to cook. Speaking of meal prep, the below noodle vegetable bites recipe has been a perfect addition to my prepping list and a great lunchbox filler for the kids.

Noodle Vegetable Bites

These are nutritious, tasty, and easy to bake with the kids during the school holidays, ready to freeze and use as a lunchbox filler when school returns. Also great for the little ones when you are on the go. Best of all, you can change the ingredients to use your leftover vegetables. This recipe is versatile; you can make 24 muffins, or 12 muffins and a loaf.

Ingredients: 2 Packets Wholegrain Chicken MAGGI Noodles 1 Large zucchini (grated) 1 Large carrot (grated) 1 Onion (finely chopped)

2 Small mushrooms (chopped) 1 Can (300g) corn kernels 5 Eggs (whisked and blended) 200g Shaved ham/salami (chopped) 1 Cup self-raising flour, sifted

1 Cup grated tasty cheese or dairy-free cheese 1 Tsp garlic (minced) 1 Tbsp vegetable oil

Instructions 1. Preheat oven to 180°C, 170°C for fan-forced and prepare muffin tray and loaf pan, if required. 2. Prepare the Wholegrain Chicken MAGGI Noodles as per pack instructions, I cooked mine with the flavouring sachet, but you can choose to reserve it and mix in during step 4. Drain noodles and add to a large mixing bowl. 3. In a separate mixing bowl mix eggs and flour, whisking together until the mixture is smooth. 4. In the large mixing bowl with the noodles mix in and combine zucchini, carrot, onion, mushrooms, corn, ham, cheese, garlic and oil. 5. Spoon mixture into the muffin pan, filling each space 3/4 full. The remaining mixture can be used to create additional muffin bites or instead pour into a loaf pan to create a slice. 6. Place in the oven and bake for 30 minutes or until golden and cooked. 7. Once out of the oven, set aside to rest for 5 minutes. Then, transfer to a wire rack to cool. 8. Serve warm, or once cooled, place in the freezer for up to 3 months.

Home & Garden

Whichever option you choose, there are many benefits from starting your garden. These include health benefits from relaxation and reduced stress and the advantage of fragrances and colour filling your yard. Lastly, financial gain from sourcing your produce in your own backyard. Now all you need to do is select what to grow to suit our climate, and current season.

What to plant? The following should grow well if planted between Feb and Sept: • Broccoli • Lettuce • Onions • Peas • Carrots • Cabbage • Kale • Leeks • Brussels Sprouts

Grilled Chicken Fajita Salad

Tender and juicy chicken thighs grilled in a lime marinade. Served with creamy avocado slices, grilled onion and capsicum, and succulent chicken pieces as a salad or one fajita wraps, this recipe is always a crowd-pleaser. This recipe is a favourite in my household and was adapted from Karina at Cafedelites original recipe.

Ingredients (Salad):

4 Chicken thighs (skin removed) 1/2 Yellow capsicums (sliced) 1/2 Red capsicums (sliced) 1/2 Red onion (sliced) 5 Cups cos lettuce leaves 2 Avocados, sliced Extra coriander (to garnish) Fajita wraps (optional) Sour cream (optional, to serve)

Ingredients (Marinade):

100ml Freshly squeezed lime juice 2 Tbsps olive oil 2 Tbsps Coriander (chopped) 2 Cloves garlic (crushed) 2 Tsps brown sugar 1/2 Tsp ground Cumin 1 Tsp salt 1 Tsp Red Chill Flakes (optional)

Whisk marinade ingredients together to combine. Pour half the marinade into a shallow dish to marinade the chicken fillets for two hours, if time allows. Refrigerate the reserved untouched marinade to use as a dressing. Heat about one teaspoon of oil in a grill pan or skillet over medium-high heat and grill chicken fillets on each side until golden, crispy and cooked through. (Grill in batches to prevent excess water being released.) Once chicken is cooked, set aside and allow to rest. Once the chicken is removed, in the same pan, fry capsicums and onion strips until cooked to your liking. Remove from pan. Add the remaining marinade to the pan and heat; this will then become the salad dressing. To Serve: Slice chicken into strips and prepare the salad with leaves, avocado slices, capsicums, onion strips and chicken. Drizzle with remaining marinade/dressing. Garnish with extra optional coriander and sour cream. Serve as a salad or with fajita wraps.

Is your desk causing you headaches?

Alstonville Osteopathy

By the end of the day at the desk, do you find yourself suffering from headaches? If yes, then you are not alone! The World Health Organisation states “tension headaches as the most common primary headache” with some studies having estimated chronic tension headaches to affect around 1 in 30 adults. There are several causes for tension headaches such as poor desk setup or poor breathing patterns, along with emotional stressors and hormonal or vascular changes.

What to do? Regular stretches and activity are essential to maintain neck mobility, as a large contributor of headaches can result from strain and restriction to the upper neck area and associated nerve supply. It is important when using a monitor that your eye line falls in the top 1/3rd of the screen. The monitor should be directly in front, at approximately arm’s length away. The keyboard should sit approximately

10-25cm from the edge of the desk and mouse adjacent to this. All other desk accessories should all be within arm’s reach balanced on either side. Footrests and stand up desks are fantastic for efficient ergonomics, stand up desk addons such as the Varidesk at our reception are perfect. At Alstonville Osteopathy, our osteopaths are university qualified practitioners who regularly assess, diagnose and treat headaches. We also do site visits for workplace ergonomic assessments and can offer advice for keeping those pesky headaches at bay, including stretches and take-home exercises or refer you to one of our experienced massage therapists or exercise physiologist. We are open 6 days a week and located in both Alstonville & Goonellabah. Always seek the advice of your primary health care provider such as your GP or osteopath if your headaches persist or get worse. Grant Sinclair | B Sc. M Osteo. | Osteopath

Lymphatic Toning for Immune Health

Our human lymphatic system is a network of vessels that are considered to be part of both the immune and circulatory systems. Lymphatic vessels carry fluid and various substances from our tissues back into our bloodstream. Lymphatic vessels pick up debris and bacteria and bring them back to Lymph nodes - those lumps you may feel in your neck or groin when unwell - for processing and inactivation. Unlike blood which is pumped by the heart, lymph fluid moves by muscular contraction and movement. We may assist the movement of lymph by engaging in regular gentle exercise, massage, avoiding potentially lymphatic clogging foods and by dry skin brushing. Dry skin brushing prior to showering, using a natural bristle brush is an easy way to gently exfoliate dry winter skin, increase circulation and to stimulate the movement of lymph within our body, thus powering up our bodies scavenging ability. Many who regularly dry skin brush also report a decrease in cellulite in various areas of the body.

In 2018 the idea was born to start our own walking group in conjunction with The Heart Foundation, with the vision to increase the physical activity, strengthen social connections, and improve the mental & physical health of those in our community. The benefits of walking are all too well known, from increased energy, reduced risk of heart disease, weight management, and so much more.

Since this time we have had a great response from a variety of community members. We are so proud of the diversity within the group and being able to cater for different levels of physical activity based on the mix of people each week. As our team leaders are also health professionals, it is a safe environment for which people can restart gentle exercise after post-operative rehab, and those with health conditions such as diabetes or asthma can feel secure in exercising as part of a group. We also have some fairly fit members that love the opportunity to challenge us to really get the heart pumping for a good cardio workout! Our group meets each Sunday Morning at 9am outside the Post Office at the Alstonville Plaza (weather permitting) and will be resuming 5th July 2020 after the current COVID-19 break. For more information or to join, please contact Catherine or Natalie at TerryWhite Chemmart Alstonville 66280444.

Topics covered in the course include: Bee biology, natural beekeeping philosophy, different hive types, sourcing bees, taking care of the hive, harvesting, environment, pest and diseases. Countryside Stalls

A Country Getaway

During this edition, we had a wonderful time exploring the countryside towards Wardell and around Rous. Why not take a scenic drive to discover these beautiful areas. Along the way, why not visit the numerous roadside stalls offering a wide range of local products from flowers, fruits and vegetables to eggs, nuts and honey. Although the stalls will change as the products come in and out of season, below we created a list of some of the items we found on our journey.

Celebrating over 17 years of being a family owned and operated business, Owen and Aria Woodhead continue to welcome visitors to Alstonville Country Cottages (located just behind the historic Alstonville Cemetery).

Wardell Road Flowers, lemons, mandarins, limes, tomato chill relish, pecans, bananas, pumpkins, free-range eggs, manure and honey

Suburb Profile Wardell is a small village that many do not realise has a connection with the hilltop village of Alstonville, as some people may not know Wardell shares the 2477 postcode. Currently located on the Pacific Highway, South of Ballina, Wardell also provides access to Alstonville and Lismore via Meerschaum Vale, a leisurely scenic drive through the hills and valleys. Wardell in the 1850s was a riverside settlement for the cedar getters but was known then as Blackwater. The name Wardell was eventually used as the suitable timber trees thinned out and the lands around the immediate area were cleared for livestock and sugarcane. Sugarcane is still the primary industry; however, there is much more on offer worthy of mentioning. Wardell offers more than just a quiet place to relax on the river bank or a place for those looking for a day out. There are great places to have a picnic under the shady Moreton Bay figs; and you can also visit the Wardell Pub, or take a walk to the family-friendly park with a covered picnic table, BBQ and toilet facilities. The Wardell Pie Shop has pies which have earned the legendary status given to them over the years; they have a delicious menu of amazing pies with all your classics along with a few unique flavours full of filling and buttery, flaky pastry. We, of course, had to sample them to be sure, and they were terrific. There is a local post office nearby as well as Simply Fashion and Beauty. A boutique clothing

store and beauty salon able to provide stylish and affordable clothing and accessories, and a range of beauty services.

The contact details for the businesses and clubs mentioned throughtout this article are listed below:

Not far from the central area of town, you can visit the Wardell Sport and Recreation Club for a round of golf or a lovely meal with friends and family. The Wardell Angling Club is also a must for anyone keen on wetting a line, whether you enjoy fishing from the bank or along the picturesque jetty on either side of the river. On the Southside of Wardell, you can also launch your boat off the ramp and have the cleaning tables at your disposal on return.

Directly south of the Wardell Bridge, River Drive takes the scenic route through the cane fields along the banks of the Richmond River. River Drive also provides access to Empirevale, Patches Beach and South Ballina. Other places worth stopping in for are Oldboy’s Flowers down Wardell Road or take your family, friends or the whole workplace to a friendly or competitive round of footgolf (think of golf with no sticks or soccer on a golf course). Either way, make sure you have a go it is great fun, and almost anyone can join in. On your return from Wardell, why not take the scenic route through the beautiful area of Meerschaum Vale. As you drive along, numerous roadside stalls are offering a variety of local products for you to take home. Read more about the Countryside Stalls in our article on page 24.
