Gerhardt is a sea kayak guide and kayak instructor who has been exploring west coast waters for 20 years. He is a Greenland roller and woodworker who makes skin-on-frame sea kayaks and Greenland kayak paddles. In this one day workshop, students will use hand planes and structured methods to create their own Greenland kayak paddle. A high quality, red cedar, clear, vertical grain paddle blank will be supplied for each student. Some hand tools will be provided.
A unique opportunity for women interested in woodworking in a professional workshop setting. Students will learn how to safely use the woodworking equipment such as table saw, router, planer and jointer. January 21 – March 10 (Saturday morning) 9:00- noon. (Except for February 4th) Course Fee: $170 +HST for members $200.00 plus HST for non members The Saturday morning course starts January 21st and runs through to March 10th - seven sessions in course. There is a minimum of 6 and a maximum of 8 students per class. The small class size offers the students one-on-one instruction from the instructor David Skelhon.

O
ur local governments, through their CVRD Area Agriculture Plan, have set an ambitious goal for local vegetable production. Their target is to have local growers supply 60% of the vegetables eaten in the region. Valley farmers currently supply 7%.
One of the ways our farm tries to help reach this goal is by offering a subscription vegetable program (Community Supported Agriculture or a CSA), in which customers sign-up in advance to receive a weekly share of vegetables throughout the growing season. This arrangement helps farmers match their production to demand, finance their pre-season expenses, and diversify the risk of weather-related crop failures, etc. Customers get convenient access to a diversity of fresh local, organic produce and can support the Valley’s goals for food security by committing to eating locally in-season. A CSA can provide for up to 100% of a family’s vegetable consumption during the season. In the winter, however, it is difficult for a family to source local, organic produce that would provide anywhere near 100% of their vegetable needs, let alone 60%. Makaria Farm’s solution: the Food Security Club – a CSA-like program for vegetables that can be stored or preserved for year-round consumption, including garlic, squash, tomatoes and more. By joining our Food Security Club, we can plan our production and offer wholesale prices for these bulk purchases. Fresh ricotta cheese Parmesan, finely grated if possible Egg, lightly beaten Olive Oil Nutmeg Salt and Pepper Flour (more for rolling) Semolina Flour

1 lb (454 g) 1/4 cup (65 mL) 1 2 Tbsp (25 mL) Pinch 1 cup (250 mL) 1 cup (250 mL)
Method
In a large bowl, combine the ricotta, Parmesan, egg, olive oil and a good grating of nutmeg (about ¼ tsp). Season with salt and pepper and sprinkle 1 cup of flour over the ricotta mixture.Toss lightly with a fork to incorporate the flour. Dust the dough lightly with more flour (to make the surface less sticky) and shape into a ball. On a lightly floured work surfaces roll the dough out to a rope and cut it into one inch pieces. Gently roll the pieces into balls and transfer to a baking sheet covered in semolina flour. Roll in the semolina and allow to rest for at least 1 hour in a fridge. In a large pot of boiling salted water, add the gnudi and cooked for about 5-6 minutes, or until they float to the surface and are cooked through. Drain and immediately add to the sauce (recipe below) or coat with olive oil if you want to wait. Stir gently to coat with the sauce.Toss to warm through and spoon into serving bowls or plates.Top with a sprinkling of fresh parmesan cheese and serve.
Kale and Tomato Sauce
olive oil onion, minced garlic, minced stewed tomatoes lemon, zest kale, trimmed and shredded olives, pitted and mince Salt and pepper
1 Tbsp (15 mL) 1 small 2 Tbsp (25 mL) 2 cups (500 mL) 1 2 cups (500 mL) ½ cup (125 mL)
In a skillet over medium-high heat, add the olive oil and onion. Sauté until the onions begin to soften and add the garlic. Sauté until fragrant, about 2 minutes, then add the tomatoes (crushing each tomato with clean hands). Add the lemon zest and cook the sauce for about 5 minutes or until the liquid is reduced by half. Add the shredded kale and allow to wilt in the sauce, about 2-3 minutes. Add the olives and toss to coat. Season with salt and pepper (keeping in mind the olives are salty!). For extra spice you can add a shot of your favourite hot sauce. Keep warm until the gnudi are cooked.

seems to be a common Iis tdesire that the new year a time for reflection and
renewal. The holidays were great – but the thought of another chocolate bon bon doesn’t have the same attraction it did back in the heady latter days of 2011. To renew my curiosity, I like to start the year with a challenge to myself. Specifically, to learn something new to add to my repertoire of culinary tricks (after all this is how I make my living). In past years it has been mastering homemade miso, making cheese or learning how to make my own mustard. This year I came across a cooking term with initially had me stumped – gnudi. I admit the name sounded good – gnudi. It rolls off the tongue as sensual and delicious at the same time. Somehow in my long career of culinary exploration I had avoiding a gnudi episode in the kitchen. 2012 is the year I change all that. Essentially a gnudi is a pasta-like dumpling that is somewhat similar to a gnocchi (an Italian potato dumpling to the uninitiated). Instead of potato forming the bulk of the dough – the gnudi relies on ricotta cheese. The result is a light and melting pillow that matches well with almost any sauce. Traditionally the dish is served with a nice, simple tomato sauce or dressed with wild mushrooms or
cured meat like prosciutto. A famous restaurant in New York called The Spotted Pig serves their version with browned butter and sage. Further research uncovered the fact that there are two distinct camps for this lovable dumpling, those that incorporate greens (kale, spinach, stinging nettles, etc) and those purists who rely on the ricotta to bring most of the flavour to the party. I noted the ricotta crowd was also divided on the type of ricotta – sheep’s milk for the purists and cow’s milk ricotta for the masses. Armed with this knowledge I headed to the kitchen and whipped up my first batch. It was surprising easy to make and the results were simply incredible. Light pillows of mild cheese that tasted rich and light at the same time. There are many sauces that work with the gnudi. Garlic butter, sautéed mushrooms, bacon and cheese sauces all marry well against the soft background of these wonderful dumplings. I chose to use my favourite winter vegetable, kale mixed in with a batch of frozen stewed tomatoes from our garden. The result was so good I wondered why it took so long to turn me into a gnudist. Spot Prawns 1 lb (454 g) Salt 1 Tbsp (5 mL) Sugar 1 tsp (5 mL) Carrots, peeled and chopped 2 large Celery, chopped 1 stalk Onion, peeled and chopped 1 large Water 8 cups (2 L) Fresh Ginger 4 slices Garlic, chopped 1 head Lemon grass, trimmed and cut in chunks 1 stalk Cilantro (stems and stocks) 1 bunch Lime juice and zest 1 Coconut milk 1 can Cornstarch 2 Tbsp (30 mL) (mixed with equal cold water) Salt and Pepper To taste Fresh Cilantro Leaves (or basil) To Garnish

Method Peel prawns (reserve shells) and place in a shallow metal or glass tray, sprinkle lightly with salt and sugar. Cover with boiling water and let sit for 5 minutes, drain and chill. Place shells on a baking tray and place in a 350 F (180 C) oven. Roast the shells for 15 minutes, or until they have lightly browned. In a stock pot, add a little oil and add the onion, carrot and celery. Saute until they begin to brown, add water and bring to a simmer. Add the prawns shells, ginger slices, lemon grass, cilantro stems, lime juice, zest and coconut milk. Bring to a boil, reduce heat and simmer for 1 hour. Strain soup, check seasoning and adjust with salt and pepper (or hot sauce if you like it spicy). Mix the cornstarch with cold water and slowly whisk into the hot soup. The mixture will thicken as it heats. Before serving stir in the cilantro leaves and cooked prawns. Serve immediately.

Farmhouse Chicken Legs 4 Back Attached Water 8 Cups Carrots, sliced, 2/3 Cup Onion, diced 1/2 Cup Garlic, minced 1 Tbsp Green Cabbage, diced 1 1/2 Cup Green Beans 1/2 Cup Italian stewed tomatoes ( mashed) 1 Can Basil, dried 1/2 tsp Oregano, dried 1/4 tsp Salt 1/4 tsp Rice or Pasta 1/2 Cup Diced Chicken (saved from making stock)
Method Bring chicken legs in water to a boil and simmer for 1 hour. Remove from water, pull off meat (save in refridgerator for later) and put chicken bones back in the pot and simmer for another hour. Strain and set stock aside. Saute onion, garlic and carrots for 5 minutes add stock, cabbage, beans, stewed tomatoes, basil, oregano, salt and pasta or rice. Bring to a boil, cover and reduce heat to a simmer for 15 mins or until veggies are tender...Enjoy!..

Method 1. Slice one whole cabbage thinly. 2. Chop in cilantro and sprinkle with salt.

Come Journey at the Art House
L
ynn Weaver created MoonDance Dynamic Arts School in 1999. It evolved from Lynn’s love for dance and her desire to share what she had learned: That dance could be about connection, fun, and wellness. So much of what Lynn had encountered in the dance industry was competitive and destructive. Lynn discovered in Cultural Dance, specifically the dances of West Africa, a different way of being that allows our full human potential to flourish through dance. In 2005, Byron (Lynn’s spouse) and Lynn traveled to Guinea and met Alya Gigla Sylla. As founder of Ballet Saamato, the West African dance company MoonDance works with in Guinea, Gigla has helped many street-youth learn discipline and mastery through the traditional arts of Guinea: music, dance, and singing. His choreography carries important social messages, as well as excellence and entertainment. Byron returned home from Guinea with many drums (djembes and doundouns) to make his drumming classes more accessible. Students could then participate without having to have a drum of their own. MoonDance continues to have strong connections to Guinea. Before her next visit to Guinea, Lynn asked Gigla what they
could do to give back for the generosity MoonDance has experienced in Guinea. Gigla suggested a primary school in Kubian, his birth village, where there was no school. The school was built and is now open, and marks the beginning of Matoto Multicultural Arts Society, MoonDance’s sister non-profit organization. MoonDance now has 15 teachers and brings in guest instructors regularly. The calibre of artists coming to the valley is phenomenal. Internationally renowned artists are sharing their talent right here in Shawnigan Lake! For example, MoonDance hosts Denbaya, a West African drum & dance workshop with Naby Camara (Juno awardwinning musician), N’nato Camara, and Manimou Camara (who are not related;Camara is a common last name in Guinea). In January 2011, the Art House opened in Shawnigan Lake Village, the realization of a life-long dream to have a studio space for MoonDance. It is a dance studio and a community space. “The place to move. The place to be moved.” Lynn and her colleagues are celebrating the first anniversary of the opening of the Art House on January 21st, 2:00 p.m. – 4:00pm. Come journey with them!

n epiphany I had a while ago convinced me that art was concerned with ideas, and that craft, on the other hand, was concerned with craftsmanship. Fine craft objects, furthermore, are made by hand in a process where the artisan personally undertakes every step in the process of making every single piece. I now want to suggest further, that all constituent components of the fine craft object must also be hand made by the artisan personally. Suppose this were not the case. Then an imported pendant, strung on a silver plated chain by the “artisan”, might qualify as a fine craft object. Or a chair, bought in pre-cut, pre-sanded and pre-painted pieces, but personally assembled by the “artisan”, might also count as a fine craft object. But such things are not considered fine craft objects. An chair assembled from a kit bought at the store just is not the equal of a Michael Michael Fortune piece. On the flip side, imagine the respect and admiration an artisan would command if she not only made the pendant and its constituent components herself, but mined, refined, assayed and alloyed the silver and prospected for and cut, shaped and polished the gemstones herself too. Imagine further that she also made all her own tools herself and, to top it off, mined and refined the ore to make her tools too. This is perhaps asking a bit too much. I suggest, rather, that the thought experiment above shows that at the very least all constituent components of a fine craft object must be hand made by the artisan personally, and, further, that the raw materials themselves need not be made by the artisan, though the idea of “raw materials” needs further parsing in itself. I am, by now, quite fond of my epiphany and its fallout, and hope my cogitations have provided some thought or at least some entertainment. According to the Chinese lunar calendar we are leaving the Year of the Rabbit and entering the Year of the Dragon on January 23, 2012. Chinese astrology dates back several thousand years. It is closely linked to the Chinese philosophy of the three harmonies (heaven, earth and water) and the five elements (metal, wood, water, fire, earth). The sequence of the twelve animals combined with the five elements completes a sixty-year cycle. In determining the astrological sign of a person one would consider first the animal and then the element. So if someone was born

Something Old, Something New t the beginning of this New Year, we are reminded of what we are leaving and what we are entering. This time of year is A like the pause in-between the in breath and the out breath. A time of
quietness to open a door to inner worlds that can guide and protect us on our journeys. Physically, we are time bound creatures but our souls are not limited by time and space. In truth, we are multidimensional beings. Although our science hasn’t caught up yet with the technology that can measure this, we know from many ancient and modern sources that we are larger and greater than we dare to imagine. I write about this now because I meet many people who are dismayed at their current life circumstances. What we are experiencing now is only a tiny slice of our beings. We experience time as a long continuous string from past to present to future. Time is more like a dome or sphere in which we are one lighted bead in a net of meaning, time and space which surround this sphere. When one bead in this dome lights up, then all other parts of the dome also light up. This is why integrity, honesty and a vision of the All is so important in every day life. By living with genuineness, compassion and wisdom here and now, we influence all other times and places where we are also currently living. As the soul matures, both past and future memory becomes available. This is one of the benefits of spiritual practice. Try This! 1. One of the times where past and future memory is made available to us is before waking or falling asleep. Observe your soul as you enter these in-between times. 2. Put a pad of paper beside your bed and tell yourself to remember one thing from the in-between times. This may be an image, a narrative or a feeling. 3. Immediately upon waking, write down the one image that you retrieve from the in-between states. Don’t try to analyse it, just capture the image that has the most emotional charge. 4. Remember that all people, events and environments from the in-between states are aspects of yourself. For example, an old house may represent the ancient quality of your own soul; a young boy may represent something new in your life. 5. Now, contemplate the meaning of this image. You may need some help with this, discuss it with someone you trust, ask the world for help with your interpretation.

Qi Gong in The Winter
I
h winter here, we need to stay warm, healthy, and wellnourished in these dark days, to keep our energy and spirits up until the sap rises within us again in the spring.
Nowadays, more and more people are hearing about Qigong. Qi means energy and Gong means exercise or work. We work to train and develop our internal energy to bring health and well-being to our whole body and mind. Qigong helps us to balance the energy in our internal organs, the most important of which are the kidneys. In Traditional Chinese Medicine, the organs that relate to winter are the kidneys; at this time of year, any extra attention we can give to the kidneys helps us to stay healthy. When we practise Wild Goose Qigong movement, we repeatedly bring the energy, or Qi, back to the Lower Dantian, which is a field of energy inside the body below the navel, connected with the kidneys and is the Centre of our body. Bending from the waist and bending our legs help to strengthen the kidneys. When the kidneys are strong, like a good boss, they in turn help all the other organs to function properly. After practising the movement aspect of Qigong, which creates Qi, we also practise meditation to store the Qi. To have balance, we always need the yang and the yin. The movement is yang, or more external and the meditation is yin, or more internal. Many people find it difficult to meditate, but after practising the relaxing, gentle Qigong movements, that state of an empty, still mind happens more easily and readily. In winter, it is very beneficial to follow nature and allow ourselves to rest more and to enjoy more inward focus. Qigong movement and meditation is perfect for this.

Leola brings over 40 years of experience and instruction in weaving, spinning and textile art. She has studied traditional Swedish weaving, linen weaving and flax preparation, as well as natural and chemical dyeing and tapestry. “My instruction is about building the student’s confidence and nurturing their artistic exploration. This summer, constituents started calling my office to say that they were having trouble getting through to Service Canada, sometimes waiting 15 minutes or more to talk to an agent. Often, people would give up and hang up. New Democrats have uncovered that a whopping 25% of Employment Insurance-related calls to Service Canada are abandoned because callers can’t contact anyone. Half of all Canada Pension Plan-related calls don’t even get an automated message. In other words government services set up to help the most vulnerable Canadians are instead abandoning them in their time of need. What’s even worse is the reason: the Conservatives have slashed 1,000 processing agent jobs at Service Canada—leaving call centres unable to cope. That means that people are waiting well beyond the legislated 28 days to receive their EI cheques.And it isn’t just people who’ve lost their jobs – we’re also hearing from mothers going on maternity leave and people caring for ill relatives that they’ve had to wait for their cheques as well. If you are having difficulty getting through to Service Canada, try calling the Office of Client Satisfaction at 1-866-506-6806.And as always, my office is here to help when you have exhausted all other avenues.

Her partner Doug Marsh, carpenter and artist, is producing the smart meter stoppers in the form of colorful wooden “rings” that secure the meter to the house without interfering with the ability for BC Hydro staff to take their readings. This creative act of “non-violent, non-cooperation” will deter BC Hydro and Corix workers from changing the meter and it will give a determined group of people the time needed to take legal action. If this is the coldest winter in years, then I can’t wait until summer! Winter building can often be a slow process on the Island and often not as productive as our clients would like to finance. However, this fall and early winter has proved that obstacle barely existed. This is also helped by some of the new technologies in materials being offered on the market. A new addition, are the ‘Pink’ joists being offered by Pacific Building Systems. These are engineered treated ‘I’ joists that are treated for bugs, fire and mold/algae. xperts in different fields will make their predictions but an astrologer will look at the chart of Canada. “Chart of Canada?” you ask. Yes, indeed. This is an astrological chart based on the birthday
of Canada, July 1, 1867, which, according to an eye witness was completed at 12:05 p.m. (This was 91 years after the US Declaration of Independence in 1776, and two years after Lincoln was assassinated.) One can look at the chart of a country in the same way one can look at the chart of a person. Canada’s chart reveals a compassionate, caring country, eager to please and loath to offend. (Yup, Mr. Nice Guy: the reputation we have traditionally held in the world.) But as each year goes by -- tick-tock, tick-tock -- our charts change by one degree per year. This is why even though our essential character remains the same, with the passage of time, our style changes. Tips from the Pro’s
T
o start the new year off right I’ve polled my staff and gathered some of their favorite “tricks of the trade” to pass along to you.
- There is a tendency to get distracted when cleaning your own home by the things you come across or you find yourself beginning to sort and organize instead of clean. To be more productive in less time, set a time limit for a particular cleaning task or room and use a caddy or bucket to carry your supplies in to save trips running back and forth. - Stainless or chrome bathroom fixtures - use a microfiber cloth and hot water, ring the cloth out, the taps and should still be hot and will just evaporate the water off leaving taps and faucet looking polished. - Stuck on food in the microwave - put a microwave safe mug of water inside and run it on high for 1 minute. The steam will loosen baked on food particles, wipe clean. - Stainless steel appliances – a dap of plain mineral oil on a dry microfiber cloth gets those sticky prints off, be sure to wipe in the direction of the grain. - Crumbs stuck between the stovetop and counter – that little space that holds last weekend’s toast crumbs and pancake batter drips can be tough to pry food out of with a butter knife. If you have an electric range take the elements and drip bowls out and you’ll find your stovetop lifts straight up allowing access to that tricky little space. While your drip bowls are out, soak them in hot water with a splash of citrus. - Ring around the toilette – a wet pumice stone rubs those mineral stains right out of porcelain toilette bowls. - Streak-free wood floors – the key is using really hot water with a damp, not wet, mop pad and be sure to mop in the direction the boards run.
Effective products and cleaning supplies are such a benefit. I know I’ve touted the merits of microfiber in the past, but they are so good it’s worth repeating. Invest in good quality microfiber cleaning cloths and a mopping system. Pay up for good ones, they will last a long time and won’t be a frustration to use. Our favorite cleaner is an organic concentrated orange cleaner, available under various labels. Investing in Local Vision s it just me, or does the stock market not feel like the best Idistant place to build my nest egg? Besides feeling unstable, it feels and detached from my life and values. Our family tried the “socially responsible investment” route, trusting our broker to screen out particularly evil investments, but we still found our money ending up in big oil, big corporations, big anything that were a long way from where we live and what we believe. Thankfully, OUR Ecovillage in Shawnigan Lake is filling the void with an “Ethical Investment Mortgage.” If I had any RRSPs or cash to my name, I would roll them over into their newly created “syndicated mortgage”. My money would be safe with land-backed security, administered through Concentra Financial, and would earn a competitive interest. They pay the fees, and I can withdraw my investment when needed. More importantly, I would know my money was supporting something local that I believe in. I could personally visit or participate in OUR Ecovillage’s many natural building, sustainable agriculture, and community living courses and events. I could speak to some of the 10,000 people who go through there annually to have their eyes opened and lives changed. My retirement funds would be safely waiting for when I need them, and also actively helping an organization I believe in --- right now, right here in the valley. The “Protect OUR Ecovillage” campaign goal of $400,000 by March 1st consolidates the current line of credit and personal loans that have financed the infrastructure development for 10 years. Many local residents are already familiar with the building at what VOICE reader Zane Parker calls “the old school”. In an email to this column, Zane notes that to the dismay of the community, the school was closed in 2007, but after a lot of work it is now being restored and reopened through Cowichan Station Area Association (CSAA) with a lot of community support and a grant from Canadian Heritage. “The CSAA wants The Hub to be a vibrant, active space for local and regional use.” With this in mind, the auditorium and some meeting rooms will be open for public use and rental beginning in February 2012. the upcoming ORCA Invitational competition to be held at the newly renovated gymnastics center in the Island Savings Center on January 21st and 22nd. Duncan Level 3 and Level 4 gymnasts, fresh off their success at the BC Winter Trials will lead a team anxious to show their ascending position on the Vancouver Island stage. More than 100 athletes are already registered for the inaugural event of 2012. As an added incentive this year, three coaches from Vancouver will be bringing their gymnasts for the first time including Olympic Medalist Ekaterina Lohoznyuk, who took
two silver and one bronze at the 2000 Games in Sydney as a 17 year-old competing for Russia. Lohoznyuk will be bringing competitive gymnasts from the prominent Omega club to compete against Duncan’s best. This past summer the training facility was substantially renovated providing the club with more usable training area, foam pits and other equipment upgrades. “The improvements made to the facility will help our program continue to grow in quantity and quality,” remarked head competitive coach Olga Matagonova. “The girls love the extra aerial practice they get using the foam pits and they are anxiously looking forward to demonstrating their new skills in competition.” Duncan is rapidly becoming a gymnastic center of excellence under the watchful eye of Matagonova and her coaching staff, which includes two other accomplished Russian coaches and former athletes. “This season is shaping up to be the best ever for our club and we are looking forward to showcasing our abilities in front of the Vancouver Island community,” remarked a rarely satisfied, yet often proud head coach.

In his recent UK lecture, eminent British psychiatrist Ian McGilchrist and medical science is all resonating increasingly with the wisdom of the human heart. Simply put, we are deeply, inextricably connected - our personal wellbeing is bound up with that of the entire community of life. In a culture that emphasizes and rewards speed, numbers, and relentless efficiency, McGilchrist continued, we’re coerced into performing more like machines than the thinking, feeling, experiential creatures we’ve evolved to be. Many argue that this way of being is necessary for progress and development, but as we ‘progress’ and ‘develop’ so rapidly, we might pause for a moment to ask ourselves: are we happier? Sadly, levels of personal contentment have been declining steadily for the past sixty years, even as our average level of affluence has risen dramatically. Time and again, we see that happiness is less about things and more about relationships – with each other, the natural world, our imagination, and our sense of the sacred and beautiful. This was brilliantly illustrated at a recent Cowichan screening of the new documentary, The Economics of Happiness. Afterwards, many stayed for a community discussion of the issues it raised: what is happiness and how is it cultivated? How does our way of life foster or hinder our individual and collective joy? Transitioning in the new year – from a heavily-polluting, fossil-fuel dependant economy to one based on lowered consumption, clean energy, and rich community life – isn’t just about carbon.
