rganic whole grains such as wheat, spelt, rye, quinoa, amaranth and millet are loaded with health boosting antioxidants, vitamins and minerals. Cooking grains and adding them to your meals, as an addition to the main or as a delicious side dish is a great way to introduce them into your daily food plan. Add cooked grains to stews and soups, or mix into your favourite salad. Here are three great grains to get you started. Continue reading for basic cooking directions and refer to our chart for the required amount of liquid and cooking time. Spelt – A nutty tasting grain that is very high in protein. Gluten in spelt is easier to digest, so may be acceptable to those with mild sensitivities. Spelt kernels are large, a long soak will speed up the cooking process. Add to your favourite chili recipe as a meat alternative Quinoa – Touted as a superfood, this small seed has become increasingly popular. With a high ratio of protein to
carbohydrate, quinoa is a great way to fill up when you are limiting your portions. A great replacement for rice as a side dish or add to soups during the simmering process.

Millet – High in minerals, millet is a great grain for those who require more magnesium in their diets. Toasting the small kernels before cooking will enhance the flavour. Add cooked millet to your favourite bread or biscuit recipes. Basic Cooking Directions – Rinse and drain the grain kernels. Place in saucepan with the recommended amount of water, broth or stock. Add ½ to 1 teaspoon of salt, if desired. Cover saucepan and bring to a boil. Turn heat low and simmer for required amount of time (refer to cooking chart). Lift lid and check for tenderness, cook for longer or add more liquid, if required. Once fully cooked, allow to rest for 5 minutes before serving. Ingredients 1lb Island Farmhouse Boneless Chicken Thighs 1 Cup Brown Sugar ½ Cup Salt ½ tbsp Pepper 1 Box Cowichan Pasta Gemelli 3 Tablespoons Butter 2 Tablespoons Flour 1 Cup of Milk 1 Cup Parsnip and Buttercup Squash Puree ½ Cup Sharp Cheese (cheddar and/or gouda) ¼ Cup Parmesan Cheese 1 Tablespoon Of Salt

Method Mix brown sugar, salt and pepper together, Cover chicken with mixture and let sit over-night in fridge. Wash cure off chicken and smoke with your favourite wood chips. Finish cooking in the oven. Slice and set aside. Peel parsnip and buttercup squash. Dice into large chunks. Roast in oven with 2 tbsp of butter till tender. Puree with food processor or potato masher to make smooth Cook elbow noodles according to package directions and drain. In a large skillet, melt 2 tablespoon of butter. Add 2 tablespoon of flour and mix until thick and bubbly (but not burned!). Add 1 cup of milk and stir till it begins to bubble again. Add 1 cup veggie puree, and stir till fully smooth and mixed in. Add cheese and mix until smooth. Add salt to taste. Add the cooked macaroni to your thickened cheese sauce and toss in chopped smoked chicken.

There is always a silver lining to adversity, and for Shawnigan that silver lining is the cohesiveness that we have developed as a community.

There are many new and lasting friendships that have developed as we all work together to try to protect our lake and out watershed for future generations. Recently, one of the longest standing goals of the Shawnigan community was achieved with the acquisition of Old Mt Baldy, which is now and forever a protected 250-acre park. The purchase of this park - achieved through fundraising efforts in the community along with the CVRD Shawnigan Parks budget - is a clear statement about what we desire as a community: protection of the beautiful land and lake that is the heart of Shawnigan, and a focus on the exceptional recreational opportunities that we have to offer, including hiking, cycling and swimming.

To take the chill off the winter months. After a hard day have a sip of our wild blackberry. It starts as a port but finishes with a drier richness to it. It has a clean rich blackberry flavour where a plate of cheese works so well with it. n the winter months, I seek out warmth. Saunas, steams, warm baths… Recreation is at a minimum and my body feels the aches deeper and longer. Skin is drier and my favourite yoga poses are the heat generating ones. A new discovery for me, but an Ayurvedic one that has been around since ancient times is an Abhyanga, the Sanskrit word for “oil massage”. A luxurious, blissful, full body experience this soothing warm oil treatment was used in ancient times as a daily ritual for maintaining overall health and well being.

WINTER SKIN CARE 101 In our Canadian winter, your skin is exposed to a variety of weather conditions, including frigid temperatures, cold wind, reflected sun, and driving rain. If you travel to warmer climates during our chilly winters, your skin could be exposed to intense heat, drying winds, and bright sun. The basics of skin care however are the same during the summer and winter. IF YOUR SKIN LOOKS GOOD YOU LOOK GOOD. Taking care of your skin on a daily basis is an essential part of your health and well-being. The great news is that good skin care does not need to be complicated or expensive – it just needs to be effective! THE BASICS Skin care should be based on these simple steps: 1. Cleanse /Exfoliate 2. Moisturize 3. Protect 4. Treat THE MORNING CLEANSE EXFOLIATE Do this every morning and use a PH balanced, high quality cleanser (not drying soap).
THE MORNING MOISTURIZE AND PROTECT Do this every morning too! Since there are many different kinds of moisturizers, consider your skin type when choosing a product. In general, if you have rosacea or sensitive dry skin you would want a heavier product. Lighter products are great for normal or oily skin. It is essential that your moisturizer include a sunscreen or sunblock. This helps prevent sun damage and helps maintain a youthful tone and texture. Please note that there is an important difference between sunscreen and sunblock. Sunscreen is a filter only while sunblock (as it’s name implies) is a block. Sunblock typically contains zinc oxide, which prevents most of the damaging UVA and UVB rays from penetrating your skin. So, during the winter or the summer, if the sun is shining, or even managing to filter through the clouds, you need to be using sunblock. THE EVENING CLEANSE / EXFOLIATE AND TREAT Do this every night. Just like in the morning, use a PH balanced high quality cleanser. Bedtime is the best time to use an exfoliating and rejuvenating product to treat your skin
because all the work is done at night while you sleep. The product you require depends on your skin type (normal, rosacea, acne/oily or melasma). Normal skin responds well to alpha hydroxy acids, glycolic, retinol, or retin. Rosacea requires gentler products like mild glycolic or vitamin C serum and cream. Products that contain rosehip and licorice are also gentle on sensitive skin. Acne and oily reacts well to salicyclic acid, retin, benzoyl peroxide and glycolic acid. Melasma is unique type of skin where deep pigment occurs after exposure to sunlight and in response to female hormones. This type of skin, needs retin, hydroquinone, vitamin C, and kojic acid. As you can see, it is important to know your skin type. A knowledgeable skin care professional can help you determine your specific skin type. Having this information could save you spending money on products that are not going to deliver the results you are hoping for.

I
wish for peace and a Happy New Year for all beings in 2016 and beyond. Yet, I know that some years are more difficult than others. Sometimes life is hard and we suffer. But healing is possible and better is always an option. Thankfully there are inspiring stories of people who have overcome. Nelson Mandela and Rick Hansen come to mind. But some of us get stuck. Sadness, anger, grief, or self-loathing colour our lives and become our state of being. It takes over and negatively impacts our health and the people we love. Sometimes we are paralyzed by our emotions or we harmfully act out and regret it later. When it gets to be crazy like this what is always available to us at any moment is a deep breath - specifically a mindful breath into our bodies. Peace activist and Buddhist teacher, Thich Nhat Hanh calls this “coming home” because it brings our minds back to our bodies. When
we mindfully breathe we are able to notice our present state. When there is tension and pain we can breathe into it and hold it with tenderness and compassion. When we exhale we free this tension that keeps us stuck. This simple practice has the power to heal our suffering. Each mindful inhale and exhale fortifies a habit that connects us to our limitless potential for joy and happiness. To practice, breathe deep into your belly and acknowledge your emotion, “I breathe in and acknowledge my judgement”, for example, and then fully exhale, “I breathe out I release my judgement.” Thich Nhat Hanh teaches that “anything embraced by the energy of mindfulness will undergo a transformation”. Practice mindful breathing for a few breaths and then notice if/when there is a shift. Practice for a few days and notice if you are more peaceful. Practice for a few weeks, a few months and notice if you are calmer, healthier or happier. Practice for a year and then notice the quality of your life.

DBIA: What do you like best about grooming dogs? Shiela: I like seeing all the different personalities and spending time with them. DBIA: What is the most challenging part of dog grooming? Shiela: Bathing a dog that does not like water!
DBIA: What is your favourite kind of dog and why? Shiela: I like the small lap dogs because they are so easy to take around. My own dog is a long-haired Chihuahua crossed with a Yorkie. Her name is Taya and she comes to work with me every day.
DBIA: Any funny grooming stories to share? Shiela: I wear one of those white paper masks when I blow-dry the dogs to protect myself from the dander, and one little dog somehow managed to grab it with his paw, pull it back with the elastic straps stretched out then let it go. It was pretty funny when it snapped back. DBIA: What do you like best about your downtown location? Shiela: That it is located in an interesting and unique building in a unique area of Duncan. computer on while you are using it - not only do you save power by shutting down or putting your computer on stand-by mode when not using it, but you also stop the airflow (and thus the dirtflow) through it. Of course, no matter how careful you are, your computer will get dusty and you will want to clean it. If you have a notebook, you’ll notice that there is a small fan on the bottom usually near the back. You can use canned compressed air (about $10 a can) to blow out the dust. You should do this while the computer is powered off. You can use the compressed air to clean the keyboard and also the notebook’s screen (the same method as if you were cleaning a pair of expensive sunglasses).

n this day and age nearly all homes and businesses have a computer or two that are often used for several hours each day. While most of us are familiar with how to use a computer, we tend to forget that they are machines and require maintenance to keep them running in good order. Computers are air-cooled and the air in your house circulates through them to keep the components cool. If you see dust around your house, you can be assured that there is going to be plenty of it inside your computer as well. It is essential to provide proper cooling to the circuitry as overheating may make your computer unstable and even permanently damage the components. Your primary defense should be keeping the area (and air) around your computer clean. Also, you should only have the

It may seem a daunting task at first, but if you take a good look you’ll probably see that all you have to do is remove a few screws to open the cover. Do not disconnect anything inside, just walk outside with your computer and blow out the dust accumulations you see. Generally if the inside looks clean, it is clean.

ast month, the Cowichan Valley welcomed the first Syrian family to our community. It is the start of an anticipated wave of refugees to arrive in our community over the next several months. The Cowichan Intercultural Society (CIS) is leading the community’s response to settling and integrating Cowichan’s newest residents. We have seen an overwhelming outpouring of support in this community, including lots of questions, such as “how can I help?” We’ve come up with a list of suggestions for you! What We Offer: The Cowichan Intercultural Society offers a variety of free professional services to newcomers to Canada. This includes English lessons, settlement counselling, facilitated networking and mentoring, employment related services, and referrals (ex. translations, trauma support and health care). The Sanskrit language is considered to be the language of the Chakras - the energy centres within the body. Each Chakra vibrates at a different frequency and is related to different organs and glands in the body as well as different psychological traits. Sound and thought are of course vibration so when we chant Sanskrit mantras, we are stimulating the chakras which in turn creates healing effects on the physical, emotional, mental, and energy bodies. It is like we are giving our body a massage from the inside out, bringing benefits that include deepened breathing, increased oxygen levels in the body, improved blood and lymph circulation and increased prana (life force energy) that can be used for rejuvenation of the organs, glands, and cells. Chanting also calms the emotions, helps to silence subconcious mind chatter and eliminates negative thought patterns. Like a stone thrown into a pool of water, the sound vibrations create ripples that continue to circle outwards from the centre point. This rippling action begins within our own being and continues outward into the world. When we chant mantras, especially traditional mantras called maha mantras (great mantras) that have been chanted for thousands of years, we connect with the vibration of the chant that is part of the cosmic weave of the universe.
Tapping into this energy strengthens the effects of the mantra for ourselves, as well as adds to this unviversal energy. When we chant with others, this energy is amplified even more. Though you may see translations of mantras, the meaning really comes through the japa (repetition) as you begin to experience the effects of the mantra firsthand. These effects are strenthened when we hold a specific intention while chanting a mantra One way to work with mantras for healing is a 21 day mantra practice. With this practice, you work with a specific mantra to support your intention for healing, chanting the mantra as many times as possible every day for 21 days. Chant the mantra as you move through your daily activities, and also consider setting aside a specific time each day to sit in stillness and repeat the mantra. Be sure to hold your intention in your awareness as you chant. Overtime the mantras we work with become part of our own energy field. The more we practice a mantra, the more likely it is to pop into our heads in times of need, like a dear friend who just happens to call out of the blue when we are having a challenging time. One Year Down And Ready For More!
his past spring the Cowichan Green Community (CGC) embarked upon an exciting new project, the Cowichan Agriculture Training (CAT) program, with the aim to build the capacity of local agriculture in our community. Though the issues with our current food system are multifaceted, one area that is clearly lacking support is foundational level training for folks interested in working in the agricultural sector, particularly small to mid-scale agricultural systems geared to meet local market demands. The program is a Project Based Labour Market Training initiative funded by the Province of British Columbia through the Ministry of Social Development and Social Innovation. Partnering with Global Vocational Services, our local WorkBC agency, we were able to recruit eight eligible and interested participants. These participants receive a living allowance as well and a broad range of learning opportunities and a variety of sector related certifications. We also partnered with farms in the area who had expressed interest in hosting participants for their farm placement component of the training. This program has so much potential. Training more

folks in agriculture benefits both the individual and the community. Studies show that we are rapidly losing these skills in our communities as the average age for farmers is over 50, and there has been a steady decrease over the past few decades in new folks coming into the sector. It’s so important to support and nurture those with an interest in farming because we all need to eat, and it’s foolhardy to be completely reliant on imported foods! ogs use their tails for balance and communicating. They are used as rudders and private part covers. There are breeds of dogs that have their tails docked for aesthetic reasons, (originally for safety reasons) and these dogs have a hard time expressing themselves fully to their species. Some breeds of dogs are born with shorted/deformed tails and they can have their own health issues and special needs. A dog wagging her tail is not necessarily expressing friendliness, the whole body stance and facial expression needs to be considered before
the tail can be taken as the friendly indicator. A wagging tail is sharing the dog’s scent with you. She may be saying “stay away, you’re frightening me”. Other dogs can smell her fear and will respond appropriately. The dog’s butt is a huge source of information for other dogs. They have a scent gland on the outside of the tail and two more inside the anus itself. Other dogs learn about health, sex, age, and much more I’m sure from these glands. A wagging tail is simply a way of sharing the information. The tail may wag at full mast over the back indicating high arousal or it may wag level with the ground as a friendly hello to friends. A tail may also flick tightly between the legs to indicate submission. We have also learned that a happy dog will wag more to the right and an uncertain dog will wag slightly to the left. Watch your dog’s tail as she trots, plays, approaches new things. There is a lot being said and it is a language you can learn. Winter Care for Homeless Cats
Y
ou have seen them all over the Valley – homeless cats. By the dumpsters, in the fields in farm country, crossing roads at night, in parking lots behind apartment buildings, are all places homeless cats will be seen looking for food and shelter in a tough world. You hear them at night, fighting for territory and food and breeding rights. Add some winter weather to that life and it is no wonder these cats die so young, from injuries, disease and starvation. 80% of their kittens will die in the first year. The survivors will have a lifespan of maybe 3 years, compared to 12 to 15 years for a domestic cat. There is a way to give these cats a long and healthy life. Feed them. Every day. In the same place. At the same time. Half a cup of dry food every day will keep one of these cats healthy. Add a supply of clean water. Now add a shelter. Make a feral cat shelter (Google it) and place it somewhere protected from dogs and “your” cats will soon find it. Put in some catnip to encourage them. They will be able to stay dry and warm in the worst weather and avoid hypothermia.
If you are already feeding cats (bless you!) you might be able to tell if they have already been fixed. Many ferals have the tip of one ear trimmed off when they are fixed, so they do not get trapped again, taken to the vet and sedated, only to find they are already fixed. Most cats fixed locally, ear tipped or not, will have a tattoo in one ear, proof that he or she is already fixed. Unless those cats are sick or injured all they will need is food, water, and shelter to be able to live a long healthy life. Once your cats have learned that dinner is coming regularly they will stay around and wait for it. Now it becomes possible to catch those cats. Call your local feral cat rescue – in the Valley that is Cowichan Cat Rescue – to arrange for those cats to be trapped and fixed at the first sign of warmer Spring weather, before the first Spring kittens get born. You can now congratulate yourself for saving these defenseless homeless cats and kittens from untold suffering!

Alpha Awry: Parenting Upside Down When I was a new parent, I was eager to do ‘the right thing.’ I read books by parenting gurus who advocated giving lots of choices. In my zealot fashion, I took this to the extreme and gave my daughter choices about everything. Should we go home for lunch or stay at the beach? Do you want yogourt for breakfast or cereal? All this choice did awaken my daughter’s preferences, so that even when I didn’t ask her, she was sure to let me know what she did, and what she didn’t want. All of this ‘wanting’ can make for a very demanding child and a harried parent. Many parents today are consulting their child’s preferences, and many children are telling their parents what to do, whether they’re asked for their opinion or not. We are raising a generation of alpha children,
who are bossy, controlling, prescriptive and demanding. These kids are very difficult to parent and to teach. Raising an alpha child can be a very exhausting endeavor. And while the child seems to be in charge, they are often very anxious, very frustrated, sometimes aggressive, and highly resistant to direction and guidance. Thankfully, when we regain our rightful position as the warm, caring provider they need, often the alpha instincts melt and we can once again have a child who will follow our lead and rest in our care. It is also one of the many ways that the curriculum is brought through hands on experience, allowing their whole body to absorb the material being taught. Students through the grades are asked to hone their skills with knitting needles, crochet hooks, and sewing needles. Because the students are always working with natural fibres and materials that are of the earth, they also have the opportunity to experience, in a tactile way, the energies of a lamb’s wool, the silkiness of cotton, the warmth of fibres and fabric. Other aspects of the curriculum include carding, spinning and weaving wool, along with growing flowers and plants in the school gardens for dyeing the wool. These tasks allow the students to experience the cyclical and connected nature of the handwork activities with the materials being used. The handwork projects in the Waldorf Curriculum are formative, and are geared to meet the child at every age, bringing forth just the right amount of challenge and complexity. Children learn to bring concentration, care and beauty to their work. An impatient child may see right before their eyes the mistakes that are a result of rushing through, and a child that is sluggish may find themselves internally awaked and excited by the results of their own two hand’s good work. Through these projects students master counting, tracking, addition, subtraction, use of fractions, following and designing patterns, as well as understanding the origins of the materials being used. Knitting And Handwork In The Waldorf School Kitting and handwork are age old activities that predate the distractions of modern life such as computers, television, and electronic devices. Braiding weaving and knotting with yarns, strings and ropes are seen in all cultures around the world. Having the ability to knit, darn, sew and felt were, (and in some places continue to be) a part of the daily tasks, a way to make and mend clothing and textiles, as well as a way to pass the time. Perhaps little did our ancestors know how much they were also building brain capacity, insulating and strengthening right/left brain neurological pathways, as well as increasing their dexterity and ability for problem solving when they took to this daily work. In the Waldorf Curriculum, handwork is a fundamental and important part of integrating many subjects of study including history, mathematics, creative problem solving, and geometry. Handwork is a practical art that enlivens and awakens the tactile senses, and which gives us an experience of form and shaping. Within the context of what, and how we teach handwork at the Waldorf School, students experience the manifestation of an important internal journey,
completed works of art, which then also serve practically in their lives. From soft woolen animal toys, to flute cases, crayon pouches, pencil cases, hats, socks, and dolls.
