Michigan State Visit

// FOOD & BEVERAGE U P DAT E In early March, Joanna Saba, the Campus Registered Dietitian, and Maddie Paul, Campus Services Marketing Account Manager, headed up to Michigan State University to tour their allergen-free dining commons and attend a Plant-Based Protein Symposium. Joanna and Maddie were able to meet with the Dining team at MSU to discuss how they went about getting allergen-free certification, how they handle dining accommodations, and how they educate their customers on allergen information. As Miami F&B strives to create new, exciting ways to serve the dining accommodated student and guest population, it is important to see how others are doing it successfully and share our successes as well. The Miami Food & Beverage team is also considering the latest in dining trends as they begin creating menus for the Fall Semester. One of the largest trends in food & beverage is the integration of plant-based proteins into menus and market items. During the symposium, Joanna and Maddie were able to learn more about plant-based protein options along with new interesting ways to serve them. A few of the fun ideas were butternut squash wellington, toasted lentils for a salad topping, and mushroom burger patties.

The sentiment lately is that "Hero's don't all wear capes." Many of Miami's hero's work in Campus Services. We are service providers in this department and so many staff have stepped up to ensure that we continue to take care of our students and guests who remain on campus. Many of you are working in areas within Campus Services that you have never worked before. You are hero's. Shout out to the Campus Services Center for working with our students, living in the residence halls. They were able to efficiently accommodate students to move out quickly and safely under very unique circumstances. The Campus Services Center has coordinated with Student Life to also make comfortable living arrangements for those students who are unable to return home through the remainder of the semester.

It was a unique and safe solution to ensure that all students could still eat on campus. Great job everyone! We still have several students living in residence halls who are not able to return home. On campus dining will be exclusively at Pulley Diner. Students will be able to use a buffet meal swipe for 'to go' Pulley meals until the end of the semester.

NACUFS Awards Competition // FO O D & BE VE RAG E U P DAT E Campus Services continues to participate in the annual NACUFS awards competition. This year we will be entering a new submission based on the renovated Market Street at MacCracken. Working with the dietitians, Chef Loprete, and the marketing team we have put together a sleek book outlining some of the improvements made to the space. We are entering under the Retail/Marketplace category for the 2020 Loyal E. Horton Dining Award. The submission guidelines are very precise and we have spent months pouring over details to make sure we are hitting all the requirements. There is a section focused on the menu that Chef and the dietitians worked on. Here they chose specific

One section focuses on the over facility design and we were able to show what a dramatic overhaul of the space has happened since it closed in 2018. We also had an entire section to focus on the work the marketing team has done to reimagine the old logo and make the space pop. Finally there was an opportunity to highlight the local food section of the market and all the development that went into that alcove. Fingers crossed for the national submission!
