Make it Miami! Events Return to Campus Beginning February 11th for many of the Fridays and Mondays through April, Miami will warmly welcome the applicants for the Class of 2026 to campus for tours and presentations to help them finalize their decisions to “Make it Miami” and commit to joining us in the Fall of 2022. It’s an important time for Miami to shine, and Campus Services staff are welcoming the opportunity.
Miami Catering will provide lunches in several locations across campus between the various meetings. These lunches may take place in the Shriver Center, Bell Tower dining room, and/or Marcum, depending on the guest counts at each session. While early sessions will target bringing 600 guests, later sessions may grow beyond that number.
The Marcum Hotel is offering a special rate to bring families to our East Quad property. The convenience and location of staying on campus can’t be beat. Coupled with the staff’s extensive knowledge of campus, a hotel stay with us can be very comforting to families. It’s said that “Once a guest, always a guest” and we want these opportunities early on in a student’s time at Miami.
Beyond the catering staff, all Campus Services employees should look for opportunities to welcome these students and their families. The connections Miami students make with the staff who serve them on a daily basis are an important factor in them feeling at home on our campus. This connection can begin with the early visits of Make it Miami. Say a friendly “Hello” when you see these groups out on campus. They have a big decision to make and your warmth and genuine care will mean a lot to them.

It’s Soup Season!
Incredibly, there are well over 250 varieties of soup enjoyed around the globe. These soups range from being served hot or cold and can play the role of appetizer, entrée, or dessert. And, although there’s a soup for just about every season and occasion, there is little doubt that hot soups are superstars during the chill of winter. Soup has an interesting history (it’s been popular since 20,000 BCE!). But, more to the point, soup is delicious, so let’s get cooking. I hope you like this recipe as much as I do. (Note: I know - it’s loaded with a ton of butterfat! You can slim it down by using margarine and milk. It won’t be quite as scrumptious, but it will still be very good. Just use extra care to prevent the soup from boiling or scorching.)
Black History Month!

Broccoli, Red Pepper, and Cheddar Chowder (Source: Epicurious) Makes about 6 cups or 4 servings • • • • • • • • • • • • •
1 small head broccoli (1/2 pound) 1 large boiling potato (1/2 pound) 1 large onion, chopped 1 red bell pepper, cut into 1/2-inch pieces 1 large garlic clove, finely chopped 2 Tablespoons unsalted butter 1 teaspoon ground cumin 1 teaspoon salt 1/4 teaspoon black pepper 1/2 teaspoon dry mustard 2 Tablespoons all-purpose flour 3/4 cup heavy cream 6 oz sharp cheddar, coarsely grated (1 1/2 cups)
Discard tough lower third of broccoli stem. Peel remaining stem and finely chop. Cut remaining broccoli into very small (1-inch) florets. Cook florets in a large pot of boiling salted water until just tender, 2 to 3 minutes. Transfer with a slotted spoon to a bowl of ice water to stop cooking, then drain. Reserve 3 cups cooking water for chowder. *

Bridget Maney is the newest Marketing Account Manager of Hospitality on the Campus Services team. Her responsibilities include managing all marketing needs for food and beverage dining commons and markets, and event services including catering, conferences, and the Marcum Hotel. She grew up in Oxford and graduated from Miami with a Bachelor of Arts in Professional Writing and a minor in Nutrition. In her free time, she enjoys spending time with her boxer, Ruby, golfing, or walking around town listening to music or podcasts. She is excited to be a part of the team and getting around campus to meet everyone.
Peel potato and cut into 1/2-inch cubes. Cook potato, onion, bell pepper, broccoli stems, and garlic in butter in a 3- to 4-quart heavy pot over moderate heat, stirring occasionally, until onion is softened, 8 to 10 minutes. Add cumin, salt, pepper, and mustard and cook, stirring, 1 minute. Add flour and cook, stirring, 2 minutes. Add reserved cooking water and simmer (partially covered), stirring occasionally, until potatoes are tender, about 10 minutes. Stir in cream and cheese and cook, stirring, until cheese is melted, then season with salt and pepper. Purée about 2 cups of chowder in a blender until smooth (use caution when blending hot liquids) and return to pot. Add florets and cook over moderate heat, stirring occasionally, until heated through, about 2 minutes. *Vegetable or chicken base added to this water takes the flavor up another notch.

Goggin Ice Center Learn to Skate Program Ice Skating is a wonderful sport and recreational activity for friends and family. At Miami, we are blessed to have access to such a beautiful facility such as Goggin Ice Center, right here on campus. If you have never skated, or have kids who are interested in learning how to skate, the Learn to Skate program is a perfect start. All ages and skill levels are welcome to join as they climb from beginner, to more advanced levels before completing the program. Register now for the next session beginning March 1st. Public Skating Did you know there are still public skating sessions on Fridays, Saturdays, and Sundays at Goggin? On Fridays from 12:10-1:10pm they offer 'Healthy Miami Skate' with FREE admission - just show your Miami ID (ending April 22). General public skating sessions are Fridays 8:15-9:15pm and Saturdays & Sundays from 3:00-5:00pm (ending March 20). There will also be a Valentine’s themed skate on Feb 12 from 3-5pm. Bring a loved one and enjoy some time on the ice. Make sure to come out for the last weeks of public skating!

Groundhog’s Day Sale Punxsutawney Phil will be released from his cage on February 2nd. Will he see his shadow? Will there be six more weeks of winter? We will soon find out. What we do know, is that Miami’s official bookstore, Brick and Ivy, will be having a sale either way! You will save 20% on sweatshirts and knitwear if he sees his shadow, or 20% on long sleeve or short sleeved t-shirts if he doesn’t. MiTech Apple Sale Have you been to MiTech yet? MiTech is located in the Shriver Center and offers tech products such as laptops, gaming keyboards, AirPods, and more. They also offer in-person technical support. MiTech is currently running a $25 sale on all Apple computers, now through March. Stop by today to see the new store and opt in on the offers. Check out the new MiTech website! MiTech just launched their new and improved website. The new site highlights all of their great products and services with a sleek and more user-friendly interface. With the help of the Bursar and Payroll offices, they also offer an interest-free loan program to aid any faculty or staff member in the purchasing of personal computers. Rec Center
Do you have a rec membership? If not, did you know that all faculty/staff receive discounted memberships? An annual membership for a staff member is $217/year, which is less than $20 a month. You can even choose a day pass, week pass, or monthly membership. The Rec offers water aerobics classes, group fitness classes, leisure pool access, an indoor track, weight room, and more. If you’ve been thinking about getting into a better routine of health and wellness, take advantage of the discounted rates offered to staff members.
